Local Knowledge Advantage Our cover on Bacolod’s Masskara Festival, taking place next month, is a visual reminder that you still have ample time to plan your trip. Not only is the festival one of the country’s best, but the Negrense, as the local people are broadly referred to, are well-known for their sense of style which visitors will find among others, evident in their handicrafts and cuisine. We have an interview with chef JP Anglo who shares insider knowledge like a home where traditional Spanish cuisine is served. Indeed, Bacolod, like their famous festival, has many masks. You have to discover what lies beneath. While you are in the region, consider taking a sea ferry from Bacolod to our other feature, Iloilo. Its centuries-old churches and cuisine like pancit molo (pork wonton soup) are quite well-known but not many are aware that you can tour a colonial mansion that serves hot chocolate, drive to highlands encrusted with pine trees and waterfalls, and go spelunking in 34 caves in a national park. Let’s start with the ice cream sandwich. For most of us, this means vanilla ice cream in between two wafers. But have you ever tried it topped with bacon or potato chips? Or infused with flavors like calamansi (Philippine lime)? If you’re up to get creative, here are ice cream sandwich recipes reinvented by the chefs of the San Miguel Pure Foods Culinary Center. COFFEE PEANUT BUTTER ICE CREAM SANDWICH Ingredients: 10 pcs. Graham crackers 1 cup peanut butter 10 scoops Magnolia Ice Cream Best of the Philippines Coffee Crumble: 2 cups potato chips, semi-crushed Procedure: 1) Arrange 5 pieces of graham crackers on a tray. 2) Spread peanut butter on one side of the cracker. 3) Put 2 scoops of ice cream on each cracker. Sandwich this with another cracker then roll in potato chips. 4) Consume immediately. Makes 5 servings.
ICE CREAM CRINKLE SANDWICH WITH CANDIED BACON Ingredients: 6 scoops Magnolia Ice Cream Best of the Philippines Caramel Cashew Fudge 12 pcs. crinkles For the candied bacon: 1 (250 g) pack Purefoods Honeycured Bacon, chopped 1/4 cup brown sugar Procedure: 1) Sandwich a scoop of ice cream between 2 pieces of crinkles. Store in the freezer. 2) To make candied bacon: Cook bacon in pan over medium heat. Add sugar and mix. Allow to caramelize. Transfer bacon to a plate and let it cool completely. 3) Roll each ice cream sandwich on candied bacon. 4) Consume immediately. Makes 6 servings. Press gently. 3) Roll each side of the ice cream sandwich on coconut flakes. 4) Consume immediately. Makes 4 servings. The 22-year-old beauty is a natural dancer and has an eye for photography. With these talents, she hopes to make a difference. Humpfner is also a Mass Communications student from University of Wuzburg Germany and

China’s Under-the-Radar City A weekend guide to getting to know Guangzhou. By Marco Torres

eijing took center stage during the 2008 Olympics. Shanghai had the world’s eyes during the 2010 World Expo. Guangzhou, China’s third largest city, is no longer playing third fiddle. As it showed in the last Asian Games, it is more than ready for the world. Guangzhou offers a myriad of possibilities—from culture to shopping— but it is ultimately the place to enjoy Chinese food. There are more restaurants per capita here than any other place in the Middle Kingdom. DAY 1 Morning If you didn’t get a free map at the airport,

take one from your hotel. Mark down all the places you plan to visit and have your concierge write them down in Chinese. Very few people speak English here. Guangzhou offers great deals for the budget-conscious. Many 5-star hotels are just US$100 a night, but cheaper options still abound. Try Guangdong Victory Hotel in Shamian Island, or Guangzhou Baiyun Hotel in Yuexiu District (RMB400 or $65 per night). Start off by getting a taste of the local culture. Head to the Yuexiu Park and strike a pose with the Five Ram sculpture, the city’s main symbol. Stroll around the grounds to see Zhenhai Tower and the ancient Ming Dynasty City Wall. Zhenhai 34
Tower, built in 1380, currently functions as the Guangzhou Museum. It has beautiful views at the top (RMB10/$1.65). Cross over to the Mausoleum of the Nanyue King. This Qing dynasty tomb has over 2000-year-old relics that were not discovered until 1983. Further south is the Temple of the Six Banyan Trees, which dates back to the sixth century. It houses the 17-story Flowering Pagoda. Afternoon Have a hearty lunch of dim sum. Panxi Restaurant on Longjin Road is not too far. Many consider this garden-inspired restaurant the best in the city. From old Guangzhou, step into the mod-

Stroll along Huacheng Park (Flower City Square) in Zhujiang New Town, which has some of the world’s newest architectural wonders, including the Guangzhou IFC, the Guangzhou Opera House, and the Provincial Museum. The intergalactic-looking Guangzhou Opera House is among the world’s top 60 most visited landmarks. Catch a performance or join one of its weekend tours to see its interiors (RMB50/$8.10). Now, if you’re feeling adventurous, scale the Canton Tower, the world’s second tallest tower—RMB150 ($24.25) gets you all the way to the top. Aside from marveling at Guangzhou’s cityscape from the observatory, there are activities for daredevils: the Bubble Tram, a transparent carriage slowly circling the tower; the Sky Drop, a quick, over-a-second, 30-meter fall; and the Spider Walk, an open-air staircase towering many meters above ground. For the less extreme, you can have coffee or dine in one of its two revolving restaurants. And to celebrate the tower’s inclusion in the latest Transformers movie, statues of Optimus Prime and Bumble Bee, too, will be
on display until September 30. If you don’t feel like the climb, opt to be enthralled by the world-class Chimelong Circus instead, which has a 5 p.m. Saturday matinee (RMB350/$56.70). Evening You haven’t really been to Guangzhou until you’ve cruised the Pearl River Delta. View Guangzhou’s historical and new architectural marvels in their shiniest moment. Get a ticket on the top deck for best views (RMB48– 88/$7.75–14.25; www. chinadiscover.net). For dinner, Lei Garden at the IFC, Zhujiang New Town, has some of the best Cantonese seafood. Festival Preview: Bacolod’s Masskara Next month, the city will be bathed in a sea of colors and smiling faces.
F
or such a colorful and vibrant festival, MassKara has unexpected beginnings from a low point in the city’s history. It was the 1970s and Bacolod’s sugar industry was crashing. It didn’t help that a ship carrying many locals also sank during that time. The local government, together with civic groups, seeing that there’s nowhere else to go but up, organized a festival that would raise the local’s spirits. That was the birth of the MassKara Festival, whose name literally means “a multitude of faces.” Since then, the city has risen from the troubled times and the annual MassKara Festival has continued to be one of the Philippines’ most anticipated festivals. This coming October, Bacolod is dishing out another series of exciting events for the festival. Here are the highlights: MassKara by the Sea (October 12; 6:30p.m.), which will take place at the pier, will showcase boats decked

and lit with masks. A street dancing competition (October 17 to 18) among schools and barangays (villages) will include drumbeaters this year. Meanwhile, head over to MassKaraLand where the entire Lacson Tourism Strip will be closed from October 16 to 19 for nonstop parties. Whatever your taste, you can choose among five to seven stages each featuring a different music genre. If you want to see embellished floats, catch the Charter Day Parade on October 19. The electric dance parade on the evening of October 19 is also worth checking out—floats and dancers,
dressed in lit up costumes, will parade down Lacson Strip, Mardi Gras-style. Other activities will keep the Philippine spirit of bayanihan (brotherhood) alive, such as sports festivals and medical missions. And to spread the fun, the local government will bring a taste of the MassKara Festival to other rural areas for locals who won’t be able to travel to the city. These 10 randomly chosen areas will be given a festive show just for one night, ringing true to Masskara as a celebration for “a multitude of faces.” n

WHAT IS YOUR FONDEST MEMORY OF FOOD IN BACOLOD? When my lolo (grandfather) was alive, he used to take my cousins and me to the beach for Bisaya lechon manok (native roast chicken) and sisi (baby oysters). Also in my lola’s (grandmother) house. My aunt who lived there was a really good Chinese cook, and she was always making dishes for special occasions. It didn’t matter if the meals were simple or special. It’s always about the memories you create when you’re with people. For me, it was my family. WHICH PLACES WOULD YOU TAKE YOUR FRIENDS TO IN BACOLOD? Some people would probably take guests to the Gaston Mansion or The Ruins, but I would take them to Claudia Schulze’s house (by invitation only). They still cook in the old Spanish way. They have really good callos, which they call “pata con garbanzos (stewed pork knuckles with
chickpeas),” and since they own their own cattle and meat shop, Sant Jordi Meats, they always have a lot of beef. Secondly, I would bring them to Hinigaran City, which is 40 minutes away from [Bacolod], for the best pork chop from Kalan-an sa Higad Dalan. They only marinate it with salt, pepper, soy sauce, calamansi juice, and a little MSG, but since their meat is fresh, it’s so delicious! I always drive out there whenever I go home. DO YOU HAVE A FAVORITE PLACE IN BACOLOD THAT’S NOT TYPICALLY A TOURIST DESTINATION? Louisa’s Fried Chicken on Narra St. It’s a hole-in-the-wall and they only have six items on the menu. A Chinese family owns and runs it. In fact, they’re the ones behind the counter and sometimes serving you.

WHERE SHOULD TRAVELERS GO TO EXPERIENCE THE NIGHTLIFE IN BACOLOD?
There’s Art District in the Lopues Mandalagan area. It’s a bunch of little bars with pocket sections, so you get to mingle with everyone in that pocket and it becomes one big party. Secondly, Mu Shu. Our cocktails and bar chow are what separate us from the other bars. We’ve been having DJ events and band nights since 2007. It’s the place where everyone knows everyone’s name. IT’S BEEN SAID THAT BACOLOD HAS THE BEST CUISINE IN THE COUNTRY. WHERE DO YOU ATTRIBUTE THIS? Bacolod is only one of the best cuisines in the country; it probably is in the South, but North? Pampanga hails supreme! The sugar industry in Bacolod is what most Spaniards stayed [longer] for in Negros, and in turn, Bacolod’s food became grand and elaborate because of the Spanish influences, which can be still be seen in its cuisine and culture. WHAT SOUVENIRS WOULD YOU GIVE FROM BACOLOD? Indulge in Traditional Hot Chocolate at a Colonial Mansion Imagine yourself as a 19th-century merchant at Camiña Balay nga Bato, a wellpreserved ancestral mansion established in 1860. You’ll get a dose of fine colonial history and architecture and a delectable Ilonggo merienda (local light meal). The two-story colonial balay nga bato (stone house) was built by Fernando Avanceña, a businessman who grew wealthy
from farming and textile weaving. The house’s first floor was once an almacen (warehouse) and weaving area that produced colorful patadyong (loose cotton skirts). On the second level you’ll find unique details like a massive, Japanese-style main door, a stamped tin ceiling, and floral motif transoms. The tour ends at the dining room with the in-house specialty, authentic tsokolate espresso—a thick and creamy chocolate drink—stirred with a wooden whisk in a cast-iron pot, then gingerly poured into a demitasse, where biscocho (baked bread) or mamon tostado (toasted sponge cake) are dipped. You can also try locally sourced snacks like kutsinta (sticky rice cake) and pancit molo, a pork wonton soup that originated from the neighboring district. HOW TO GET HERE

Go on a Caving Expedition For spelunking adventures, head to the 854-hectare Bulabog Puti-an National Park in the municipality of Dingle. This forest reserve is littered with limestone outcrops and cave systems that are home to long-tailed macaques, junglefowls, endemic snails, and several bat species. You will be accompanied by a park ranger in this expedition, where a 40-year-old mining trail flanked by towering century-old dao (Pacific walnut) trees will lead you to the caves. Among the 34 caves in the nature preserve, only a dozen or so have been explored, and even fewer are open to tourists. The most visited caves are Maestranza, Tuko, and Guizo. A hideout for Ilonggo guerillas during the Philippine-American War, Maestranza Cave was the headquarters and ammunition factory of Francisco Jalandoni,

The most exciting experience in Bulabog Puti-an, however, would be exploring Guizo Cave, the largest cave system in the park. It harbors impressive limestone formations like the smallish Tuko Cave and a thriving ecosystem including giant crickets and—hold on to your buddy—an endemic species of orange dwarf tarantula. This

s quick and easy as taking a jeepney ride, it takes only 15 minutes—and only Php14—for a pumpboat to whisk you away from the downtown sprawl of Iloilo to the pastoral pleasures of Guimaras. Wedged between Panay and Negros, the roughhewn island province offers farm-fresh delights and hidden beachside retreats—ripe and ready to be relished. Most visitors gravitate to Alubihod Beach, a 200-meter-long pocket of white sand shared only by three budget-friendly resorts in Barangay Poblacion, Nueva Valencia—the “tourism capital of Guimaras”—located 30 minutes south of Jordan Wharf, the gateway to the province. If you’re not too keen on mingling with the weekender crowds, there’s Jannah Glycel Beach House, an intimate residence and restaurant set in its own tiny cove just next door. While

HOW TO GET THERE Pumpboats frequently travel between Ortiz Wharf or Parola Wharf, Iloilo City Proper, and Jordan Wharf, Guimaras, from 5 a.m. to 6 p.m. Travel time is 15 minutes (Php14 per person). Boats can be chartered for Php500 each way. The Guest Assistance Center at Jordan Wharf can provide tourist information and arrange transportation around the island. Contact the provincial tourism office at +63 33 581 2021. From Jordan Wharf, Nueva Valencia can be reached in 30 minutes by jeepney for only Php25 per person. Before Guimaras was widely known as a beach destination, the island was synonymous to its premium mangoes. More than 5,200 hectares of the island— which is roughly shaped like its iconic fruit—are planted with mango trees. While not officially the world’s sweetest (that coveted Guinness World Record title still belongs to the mangoes of Zambales), locals swear by the superior quality of its homegrown produce, including agriculturist Rhod Orquia of the National Mango Research and Development Center (NMRDC) in Barangay San Miguel, Jordan, the best place to learn about the island’s world-class mango industry. Bred for overseas markets by the NMRDC, the fragrant, golden-yellow fruits are prized for their large size and exceptional sweetness, owing to the limerich earth that provides excellent drainage. “The less water in the soil, the sweeter the mangoes,” Rhod exclaims. Photographing Heritage Working on a project on Philippine churches, renowned French photographer Ferrante Ferranti share insights on his craft. By Isabel Templo Photos by Ferrante Ferranti

I
f photography were a language, Ferrante Ferranti would no doubt be a poet. He literally writes with light, using good composition and symbols to produce images that evoke emotion. Each photo is a moment in time captured skillfully and artfully. A photographer is like a messenger, Ferrante explains: “He brings a testimony of a very special moment—and every moment is unique.” The lens is merely an objective instrument with which a photographer can capture a subjective reality, he adds. Ferrante’s photographs focus on cultural patrimony or heritage. For 30 years, he has traveled to different countries to capture symbols and their meanings in old churches and ruins. He has written a number of books, including L’Esprit des Ruines (The Spirit of Ruins). “Since I was 15 years old, I’ve really been passionate about ruins and old civilizations. For me, ruins are a lecture of the past,” Ferrante says. Last June, Ferrante visited the Philippines to photograph the Baroque churches on the UNESCO World Heritage List. He also visited some of the churches in Cebu, Bohol, and Samar affected by the earthquake and Typhoon Yolanda. A graduate of architecture, Ferrante was saddened by the destruction of the churches in Bohol and Samar. “If you see a ruin of the 18th century, you can call it poetic or nostalgic. But [with these churches], it has just happened,” he says. “You have to think, what can we do?” With climate change, Ferrante says people are now beginning to realize its impact on heritage structures.
Ferrante—who shoots in both digital and film, and prefers the 6 x 6 format—says it’s important to remember the function of the structure when shooting architecture. The façade of an old church, he points out, was built that way to bring people inside the church to be evangelized. When this function is lost, as in the case of ruins, Ferrante says there is a new notion: the spirit of the place. This may not be seen, but can be felt and captured in photography through symbols and the people who go there. n Ferrante’s visit to the Philippines was part of a project to raise awareness on its UNESCO-inscribed churches and on how climate change impacts heritage. Ferrante’s photos of these churches will be exhibited at the National Museum of the Philippines on February 2015. The project is organized by the Alliance Française de Manille, Embassy of France to the Philippines, the National Museum, Department of Tourism, Tourism Promotions Board, National Commission for Culture and the Arts, and the Catholic Bishops Conference of the Philippines.

elcome to South Cotabato, which has earned the name “Land of Dreamweavers” for two reasons. Here, indigenous T’boli weavers derive the inspiration for their designs through their dreams. These master weavers translate messages from their Fu Dalu, the spirit guardian of the abaca fiber, into the warp and weft of their t’nalak cloth. Through these tapestries, the story of the T’boli people—their traditions and beliefs—is passed down to generations. It’s not just the T’bolis who place a premium on dreams. Thousands of people have come from various parts of the Philippines to settle in this province, hoping to carve out new lives. Until the early 20th century, South Cotabato was sparsely populated, mainly by ethnic Muslim Maguindanao and indigenous T’boli and B’laan people. Surrounded by mountains, it remained largely unaffected by external influences. (Even typhoons avoid South Cotabato.) Immigrants from other Philippine regions began arriving around the 1930s. Their interaction with the indigenous people resulted in an eclectic cultural mélange. As a province, South Cotabato is young and in the raw. Riding down the clean, wide highway, one will see the verdant fields guarded by the stately Mount Matutum. Native huts ornamented by

flora, and cattle grazing by the roadside make for an idyllic landscape. Lining the highway are stalls of mangoes, lanzones, pineapples, bananas, and more, as well as ubiquitous amounts of flowers. New businesses are springing up, following the trail of SouthCot’s largest industrial partner, Dole Food Company. Pristine natural features and biodiversity attract eco-tourists. Amateur ornithologists and avian photographers go to Mount Matutum and Lake Sebu, home to various migratory and indigenous wild birds, and the Philippine eagle. Native fauna, like the tarsier, live in its primordial forests. The Linan Forest houses the Tarsier Conservation Sanctuary and a series of waterfalls fit for campers and trekkers. Lake Sebu boasts its own stunning waterfalls and springs. Those who want an aerial view of its forest canopy, snaking river system, and seven waterfalls can see them via zipline. For more adrenaline, there’s also a bungee 70
trampoline, zorbing, and numerous cave formations and mountain peaks for exploring. You will also discover interesting fare in the rich T’boli culture, with its famed t’nalak weavers, brass makers, dancers, and kubing (bamboo jaw harp) players. Then there are the ethnic Maguindanaos and their resonant kulintangs (horizontally laid gongs). Those willing to rough it up can find lodging at Lemobung Resort in Lake Sebu for as low as Php60 a night. Another option is The Farm at Carpenter Hill with private villas for Php3,500 a night; individual rooms facing an indoor garden with koi ponds; or dorm-like rooms for families.
