Method: Fill a tumbler or tall glass with ice. Add vodka, sugar syrup and orange juice to the glass. Top up with ginger beer so glass is ž full. Pour in berry syrup so that it sinks to the bottom of the glass. Garnish with an edible flower. Put 5 drops of chocolate bitters over the flower and top of the drink.

NEW WORLD EASTRIDGE’S BUTCHER KNOWS BEST
Zak Grammer from New World Eastridge was born and bred into butchery. From the tender age of five years old, Zak would visit his Father’s butchery on Sundays. By the time he was 13 years old, he was working alongside him during the Christmas rush.
I
t wasn’t until he was 17 years old did Zak begin his apprenticeship and his Dad started teaching him his tried and tested methods. After completing a butchery apprenticeship, the family butchery was sold and Zak spent three years at one of the busiest Mad Butcher Stores in New Zealand. Kym Samuels, New World Eastridge explains why they have brought Zak on board. “We wanted someone with global experience who was able to bring knowledge on the latest trends to keep our butchery current,” explains Kym. “Zak fits this bill as a young, dynamic and visionary who is able to take our butchery to the next level.” Soon afterwards, Zak set off for London, soon working for a well known Family Butchery, H. G Walters in Baron Court. It was here that his real passion for meat and food started, by learning the traditional art of butchery using a chopper and handsaw. He also discovered the importance
of certain breeds of beef, lamb and pork to some of London’s top restaurants and the use of more unusual secondary cuts of meat such as bavette and onglet. After spending two years there, Zak moved on Barbecoa Butchery run by Jamie Oliver and Adam Perry Lang (winner of reality TV series ‘BBQ Pitmasters’). Zak was responsible for ageing four tonnes of beef, for at least 35 days on the bone at one time. This honed his skills for ‘low and slow’, smoke and fire as well as the art of dry aged beef. Zak has also lead a live demonstration at Meatstock - an Australasian music and meat festival that features barbers, butchers and barbecue wars. Back home in New Zealand, Zak brings a wide range of skills to Eastridge New World. Armed with all his knowledge from overseas and three years experience as the Manager at Neat Meat Ponsonby, Zak is able to provide advice for all customers and chefs seeking quality cuts of meat.

Turkey Sauce • • • • • • • •
1 litre beefstock (fresh) jelly 300 mls Rosso Vermouth (or sherry) 135g Cranberry Jelly 2 T chopped fresh tarragon ½ T freshly grated orange peel ½ tsp freshly ground black pepper 2 cloves finely chopped garlic 4 T tomato paste
Put all ingredients into a pot. Bring to a boil. Reduce heat and simmer to reduce by one third. Taste for salt. If not to required thickness, mix a little cornstarch with red wine and thicken. If beefstock is not of good taste you may add a little enhancer (powdered stock), be aware of the saltiness!
Kumara Mint Currant Cous Cous Stuffing • • • • • • • • • • •
1/3 c (70mls) olive oil 2 c (350g) fine diced onions Grated (fine) zest of 2 lemons 2 T chopped preserved lemons 2 bay leaves 4 c (900mls) chicken stock (or vegetable) 80g butter 500g cous cous (or Israeli cous cous or Corn cous cous) ½ c chopped parsley ½ c chopped mint ½ c (75g) grated kumara
Place oil, onion, currants, lemon zest, preserved lemon, bay leaf and kumara in a pot. Saute for 15 minutes without browning. In another pot heat stock and butter to just boiling point. Stir the cous cous into oil and currant mix. Add stock and butter. Bring to a boil, stirring constantly. Place a lid on pot and let stand for 10 minutes. Stir in mint and parsley when cool.

Oyster&Chop Oyster&Chop is now a Viaduct Harbour staple and Auckland’s new home of the best oysters in town. With up to 10 varieties at any one time, there are more choices at O’n’C than anywhere else. Our summer favourite is green apple, wasabi granita served natural in the half shell. But there are plenty of cooked versions to choose from too, including our new fines herbes crumb and old favourites Kilpatrick and tempura with miso mayo. Our oyster happy hour, each day between 4 and 7pm, is now a favourite after-work treat. Paris Butter Paris Butter opened in early 2016 with a roar and has fast become the local dining and social Herne Bay hotspot. Known for its fresh take on Classic French cuisine, Executive Chef Nick Honeyman has created a bistro menu that has been praised by Viva as a “gallantly Gallic sensation”, while another review described it as “damn near irresistible” and “a knock out”. Andiamo has established itself as one of Auckland’s finest restaurants. Located on the vibrant Jervois Road in suburban Herne Bay Auckland, expectations are always exceeded when it comes to their delicious cuisine. At La Fourchette we offer the full French gastronomic experience throughout the day. Whether it’s a beautifully cooked breakfast, lunch or dinner, La Fourchette’s menu is aimed to please. From 8am our Chef Pâtissier provides freshly baked breads and pâtisseries - ideal for lunch on the run or a picnic on the nearby beach. They also have a good selection of pastries which are baked fresh in our patisserie oven throughout the day. Customers are encouraged to phone ahead to reserve a fresh batch of croissants or pain au chocolat, or what takes your fancy. For summer, their Head Chef has designed a menu using only the freshest ingrédients and sourced free range produce where possible. Saigon Auckland is home to an array of incredible Asian restaurants and Kingsland is no exception. Saigon Cafe on New North Rd. is a testament to the beautiful food of Vietnam.Once you enter, you instantly feel the authenticity of this newly refurbished Vietnamese restaurant. The food is fantastic - a fusion of North and South Vietnamese traditional flavours that includes the ever popular main of Bun Cha, a dessert of Lychee Panna Cotta and a refreshing drink of Lemon Grass Mojito. These flavours are just the beginning of what is offered in this unique space. Restaurant owner Tommy Pham and his chefs are all Vietnamese, and incredibly skilled at what they do. “One of the things that gives our dishes that authentic feel is the fact that many of them are chargrilled,” explains Tommy. The sense of stepping into Saigon is also evident in two stunning paintings covering the walls of the restaurant. Recent work of local artist Lucy Davidson creates an unique ambiance. The first painting, executed in black and white, depicts an old street in Hanoi. The second painting provides a striking contrast to the street scene, and is a reminder to viewers that the cuisine they are enjoying originates from an area rich in resourcefulness. Tommy is thrilled with the atmosphere it provides, which he notes remind him of the home he left in 2001. Along with his dedicated team, Tommy is delighted to be able to introduce the magic of Vietnam to his Auckland customers. HOW GOOD IS YOUR TABLE ETIQUETTE? If first dates and The Bachelor have taught us anything, it’s how not to act when out at dinner. With Christmas fast approaching and many family and business dinners up ahead, it’s important to know the do’s and don’ts of dining out.
When it comes to dining etiquette, many are unaware of the basics. Here are a few of our table etiquette tips to help you make a good impression for your next night out. SEATING
DURING DINNER
Generally, the host will have a particular seating arrangement in mind. As such, allow him or her to direct you to your seat. If at a restaurant, wait until the guest of honour has received the best seat at the table - usually the one with the back of the chair to the wall.
Proper etiquette dictates that food should be passed to the right. Hold the dish whilst serving or place on the table if it is too heavy. If you are pausing during the meal, place your utensils on your plate near the center and have them slightly angled in an inverted V.
EATING When dining with a small group, wait until everyone has been served before starting to eat. If it is a business or a formal occasion, do the same or begin when the host requests you do so.
AFTER THE MEAL Your host will signal when it is time to leave, ensure your cutlery is close together on your plate. Always make a point to thank your host for having you before leaving.
