ye Magazine is 16 years old! In human years this is young – for a magazine this is a long time! This morning I was treated to a La Prairie facial at Face Facts one of the few salons that has been around for 30 years and the only salon that has La Prairie in New Zealand. Whilst lying on the heated bed with my face being delightfully massaged with such a luxurious product I thought about the last 16 years of Eye Magazine and how much I have loved every issue we have ever done. I have met some amazing clients along the way and many of them I have become good friends with. It is hard to believe we have been putting Eye Magazine together for so long. Each issue is always a new project and we seem to have a never ending list of exciting things to profile. This issue we showcase an amazing family company – Gull, it always makes me feel proud when families work so hard and develop such successful brands. We also profile some beautiful Italian families and how they have integrated into the New Zealand way of life and brought their culture to us. wner Felicity Menzies puts a lot of time and effort into selecting the most stunning gowns and offering extremely friendly and efficient service, helping to ease the process of choosing a dress for nervous brides. We caught up with Felicity to learn more about her passion behind her store. What made you want to start your own bridal store? I have always wanted to own and run my own business and even when I was working full time for other people, I always had some sort of project on the side – a market stall selling my own clothes, baking, cake decorating, painting - so it was only a matter of time before I had a business of my own that I could work at full time. I like to think that this all began when I was 5 at my elder brother’s high school gala. I had some pocket money to spend and no sooner had we arrived and I had spotted my item to purchase, a chapel length veil! My brother was not happy about having his sister walk around for the rest of the day wearing the veil. I was over the moon!

I love to sew and create; this is my main passion behind owning my own bridal store. And of course as my name means ‘happiness’ I LOVE to make people feel special and happy! A lot of places charge for initial consultations. Why do you choose to offer free consultations? I think this is a no-brainer. I wouldn’t feel comfortable asking for money for a service that I believe should just be a part of the experience of selecting your dream wedding gown. I am also very upfront with prices. They are listed on my website and are clearly shown in the showroom. I have standard fitting fees as well so each of my brides knows exactly what they will have to pay. I love to be able to spend genuine time with my brides without them feeling any pressure. This is not the sort of decision you should make knowing that you have a limited number of gowns to try on and worrying about how much is it costing you. Although our consultations are free we offer our brides a one on one service where we will offer as much or as little advice as the bride wants.
How do you select the designers that you stock and what do you look for in dresses? Firstly, I look for reliable designers that can deliver consistently and on time. Not all designers cover all of the designs I feel I need to have in store which is why I have a range. I look for good quality fabric, suitable structure and boning, colours, detail and a mixture of modern and traditional styles. I love very feminine designs and fabrics and I have to be careful I don’t end up with a whole boutique of the same dresses! What are the latest styles and trends for weddings in 2012? There is still a strong trend for accents of colour, particularly black, on wedding gowns which I think looks very striking. Organza is right up there in terms of fabric and gaining more and more interest is lace. This has always been a popular choice for brides but every day I am asked for lace gowns. Second Time Round with Aurora Bridal It seems like everyone has an opinion on second weddings. “You shouldn’t wear white” or “You shouldn’t have such a fancy second wedding” It can always be difficult planning a wedding, let alone the second one, but don’t worry Avril from Aurora Bridal is here to help. 1. What is the main point of difference your customers tend to sway towards with a second wedding? A second (or third…) wedding can bring a bride closer to being in touch with her true “self”. That of course means many different things to different women, but essentially she wants to convey her own “self expression”, through choosing a location, a style, theme, colour etc… that “feels right: for her. The previous wedding is often more about other people, especially her family’s wishes, and perhaps, over time she has developed her preference to a greater degree, and feels secure “being herself”. 2. What do you offer to clients when they come to visit you and try on gowns? I have been involved in bridal fashion since opening our first bridal salon in the 1980’s. Aurora Bridal is our third store and I personally bring over 30 years of experience working with women, to every consultation I do! I know from the moment I meet a bride what shape and style can enhance her figure, but I think my most important contribution to our relationship is that I encourage each person to explore their “vision” for their wedding day. This is a very personal experience, and is client-driven. Trying on styles and colours not previously considered, can be very illuminating, and can lead to a bridal style never dreamed of previously – very exciting! 3. What wedding dress style, do you feel, will always remain classic? Wedding gowns tend to be influenced by current fashion trends inevitably, however there are some “classical” styles that get re-invented each decade. One of the most flattering for any woman is the fitted basque waist bodice, with fullness in the skirt. These days the length of the bodice varies, but defining a woman’s shape to it’s maximum advantage is definitely the goal. 28

What colour and style of dress is most popular with a second wedding? That question is like asking “How Long is a piece of string?” As I always tell my brides – “There are no rules.” The goal is for every bride no matter her age or how many marriages are behind her, to look, feel and be her most special. Sometimes that means stepping outside her comfort zone. As we rarely tend to dress-up for special occasions these days, we’re usually unsure how we should “look” and that is where the advice of a professional can be so helpful. 29

Jenny has over 25 years of international experience working in the appearance treatment industry, having trained in Paris and Los Angeles, and owned and operated clinics in these cities, Kuala Lumpur and Macau.. She teaches us about her anti-aging business, which has now been operating in New Zealand for eleven years.

Eye Magazine caught up with Angela Sorenson, the Manager of Design Online. How long has Design Online been around? We have been operating as an online store for about three years now but have only recently opened up our warehouse showroom to the public. Being an online store do you get many visitors? We are amazed how much foot traffic we get for an online store,
especially seeing as we are at the end of a cul de sac. We expected to get the majority of people calling in on Saturday & Sunday while visiting the Parnell French markets but this is not the case. We get a lot more during the week which surprised and pleased us. We are becoming a destination store. How would you describe your clients? They range from the young and computer savvy wanting Aeron chairs & quirky gifts like the “Teapots� Romeo the cat lamp to our more discerning clients, including many clients from rural New Zealand, who would not get a chance to visit our showroom.

What is the latest trend? This is what I love about Design Online, we are not limited to any trend or style in particular, as long it is great design, authentic (not a copy) we will sell it. There are new products arriving all the time. I feel like a kid in a candy store. We have an incredible range of accessories ranging from the classic ceramics from Bitossi, Alexander Girard Dolls and Eames house bird from Vitra right through to our latest offering of quirky teapot designs from Germany. Some of the new lines that we have introduced this year are the sofa & sofa beds from Futura. Futura specialise in seating that morphs
into beds & chaises without looking like the traditional sofa bed. One of my favourites is the Le Vele Video which starts off looking like a two seater sofa, they can be pulled apart to look like two armchairs and then can be adjusted into chaises with a table in between. It can be further adjusted to become two single beds or pushed back together to become a double bed. It’s fantastic. My other favourite is the Kite, this is a modular design with a gloss lacquer base, the seats can be swivelled & adjusted to form interesting sleeping arrangements. Gull – A Family Affair In 1976, after more than 30 years in the building industry, Fred Rae came across an opportunity to invest his capital in a fledgling Perth service station business. It was a humble beginning for the company that would become Gull Petroleum. Over the next few years, Fred realised that there was even better opportunity if the company was managed as a family business. In 1984, Fred invited his son, Neil, and son-in-law Ian, to join him. Neil commenced as a director in 1984 taking over the operational side of the business. Neil could see how Gull could grow and become even more efficient, while still offering great service. In 2003, after serving as Executive Director for many years, Neil was appointed Chairman. In 2007, Neil became inaugural chairman of the Biofuels Association of Australia, where he helped create a sustainable and economically viable Australian biofuels industry, consistent with community interests and environmental standards. Son-in-law, Ian Green, had previously held senior accounting and management positions within the building and transport industries. In 1984, he was appointed to the board as Finance Director, and later appointed Deputy Chairman. Ian’s industry experience in service station retailing and development, fuel supply and terminalling operations was an invaluable asset in establishing Gull Petroleum’s New Zealand operations. Facilitating the success of the family-owned company has been a specialised and loyal team dedicated to offering motorists a real choice in a competitive market. In New Zealand the team consists of 12 employees led by Dave Bodger, who has had a wealth of experience in the fuel industry prior to being appointed General Manager of Gull New Zealand, and Ulrik Olsen, Business Development & Marketing Manager who has been with the company for 14 years and has broad experience in many management roles. “Developing such an excellent and highly valued small team in New Zealand has proven to be the key to our success”, says Neil Rae. Taking Wings By the 1990’s, Gull Petroleum W.A. had grown so much their supplier, BP, was unable to meet their fuel needs. In keeping with Gull’s feet on the ground philosophy, the Gull team decided to tackle the issue by building their own import fuel terminal. Gull Petroleum’s new self-sufficiency led to greater growth, profitability and an extension into convenience retailing. By the late 1990’s, the company was well established and looking to stretch its wings. New Zealand was a logical step as there were no independent networks, but a lot of independent sites. Free from the massive marketing budgets and overheads of the big oil companies, the Gull team knew they could make these smaller sites work. In 1998, Gull began building a state of the art fuel terminal in Mt Maunganui. Tanks were floated down from Marsden Pt. 400 km away – a feat the opposition said was “impossible.” When Gull began supplying their retail network, the price of petrol was brought down by 20 cents per litre. Beyond Discounted Fuel In late 2010, Gull sold its 34 year old Aussie business to a private equity company, choosing to focus on the growth of its New Zealand business and keeping the local fuel market competitive. Gull NZ’s independence has made them a competitive player in an over9

pumped market. Well recognised as a leader in low fuel prices, whilst delivering high quality products, the company is much loved by Kiwis looking to alleviate the increasing burden of living costs. The company uses technical innovation to increase customer savings in every way they can. The introduction of unmanned service stations cut the cost of labour and saved customers money and time, just by using Eftpos at the pump. The first to introduce bio-diesel and bio-ethanol, and the first to offer low sulphur diesel ahead of regulation, Gull NZ has consistently been at the forefront of any new initiative in the sector. Gull continues to lead New Zealand as an environmentally conscious oil company. It even practices vapour recovery at most of its retail sites – again well ahead of regulation. In simple terms, vapour recovery works a little like this: “When the truck comes to fill the service station tanks, which are full of fumes, we don’t push the dirty, contaminated air through a pipe up into the atmosphere, which is common practice,” says Gull Business Development Manager, Ulrik Olsen. “Instead, we create a closed loop between the truck and the tank so that the fumes go into the truck to be taken to a safe place. We don’t have to do it but we do it anyway. It is really a good neighbourly thing to do”. Gull’s premium fuel is called Gull Force 10, and is 98 octane. Instead of importing already made 98 Octane as separate product, Gull blends 95 octane with ethanol – which, on its own, is a whopping 113 octane – to achieve the required 98. Further, strengthening the company’s ties with its new home, Gull sources the majority of its ethanol from Fonterra, having fostered a relationship with New Zealand’s dairy giant. The ethanol is sustainably produced from a by-

Last year, Gull NZ announced the construction of a new ten million litre fuel tank at their Mt Maunganui storage facility, which is operated by Terminals (N.Z.) Limited (TNZ), a member of the Gull group of companies. The new tank brings TNZ’s total storage capacity to 88 million litres. “Modern, economic, state of the art storage enables Gull to keep pump prices low and discount even further when we can, and we’re currently the only ones who consistently give Kiwi motorists that choice,” says Gull General Manager, Dave Bodger. “Gull’s investment is a vote in favour of the future of the New Zealand service station industry. While major oil companies are constantly evaluating their presence in this market, Gull views both New Zealand and Tauranga as a stable and reliable market to continue invest in.” Again in keeping with company philosophy, Gull NZ recently partnered with another family owned enterprise, South Island convenience grocery chain, Night ‘n Day, opening 21 new stores.“ Like Gull, Night ‘n Day is a family-owned company that has the freedom to manage its stores in a way that suits the local community,” explains Bodger.
Flying Into The Future Gull NZ reached a milestone this July when it opened its 50th service station in Matamata. To mark the special event, locals were treated to a 50 cent per litre discount across the fuel range for a two hour period. The celebrations kicked off in grand style with a live band rocking out on the petrol station rooftop, speeches by Matamata Mayor, Hugh Vercoe and Mr Bodger. Community group performances and giveaways kept locals entertained throughout the event. The 50th site cemented the family-owned fuel retailer as a key player in the petroleum market. “We’re no longer the new kid on the block and we are here to stay. We’ve been here 14 years; our critics said we wouldn’t last a year,” says Olsen. “Over and above value for money when filling up, is the fact that our customers can always pick up the phone and ring me or someone at the office. It’s no coincidence that cooking shows dominate our television screens at the moment, they have inspired us to get back in the kitchen and create, share our passion with other foodies, and has re-ignited the trend of home entertaining. he dining room is a place where family and friends gather together to talk and eat. Nowadays it is very rare to find separate dining rooms as most spaces are integrated kitchen/dining or dining/living spaces. This being a reflection of our busy, modern lifestyles and the changing trend in how we entertain.
Dining In Style Table and chairs should always be centre point of the dining room, so it is crucial to figure out the maximum size of the dining table. Take into consideration the amount of space that is taken up by the dining room chairs and ensure that it is easy to move around the outside of the chairs while people are still seated at the table. Remembering that people will often sit for an hour to eat dinner and relax, comfortable chairs are paramount. Guests might be seated for an entire evening talking, drinking wine and eating. It is not essential to have matching table and chairs. An eclectic mix can give the room charisma and offer an opportunity to showcase your individual identity. There is a huge array of options to choose from. When deciding, it is really a question of selecting the right style, shape and level of comfort as well as colour and texture Setting The Mood Lighting is an incredibly important feature in any dining room. I always recommend controllable lighting because it enables you to choose a particular mood and set the perfect ambience for different types of entertaining. It can be really nice to repeat a series of identical pendants or shades over the dining table. This gives the table setting structure. Look at where your lights are sitting. It can be quite effective to have pendants hanging low and close to the surface. It gives a wonderful ambiance and works as an aesthetic table feature or centrepiece. Artwork is a fabulous way for us to express our personalities. The dining room is a fantastic place to display photographs, sculptures or paintings and it gives the room character and soul. Stylish Storage When designing your dining room, it is important to consider how you want the room to work for you. It has to suit how you live and use the space. Determine the kind of storage that suits your lifestyle. It might be a freestanding sideboard or an entire wall of shelving to display treasures or beautiful crockery. TIPS WHEN RENOVATING YOUR DREAM KITCHEN 1. Renovating can be a costly and inconvenient business. Before you launch into renovations, take time to consider whether the expense and disruption is justified. 2. Experience has shown that most people keep a kitchen for approximately 15-20 years. That’s why it pays to carefully consider your needs and wants before you venture out to buy a kitchen. When planning for your dream kitchen it’s a good idea to consider the size of your household, lifestyle, cooking habits and kitchen functionality. 3. Whether you need a designer to design and draw up plans really depends on the extent of work being done. Major renovations involving moving walls around, adding new rooms or having a new kitchen put in will benefit from the design expertise of an architect, architectural designer or architectural draughtsperson. Their ideas can help to maximise floor space, aspect to the sun, and flow. 4. When selecting the floor plan for your kitchen, there are 6 basic kitchen layouts to consider: Galley Kitchen - A walk-through kitchen design, featuring cabinets on two sides. The Galley design or corridor kitchen is common in many apartments and open-plan layouts. L Kitchen - One line of cabinets placed around a corner. Single Line Kitchen - In this layout the sink, cooking range and refrigerator are placed in a single line. Island Kitchen - Adding an island is the most common way to achieve multiple work centres in a kitchen. An island suits many modern house styles where there is enough space and can provide several small work stations along its perimeter 5. The layout of the kitchen space is not the only thing to consider. You should also take into consideration important aspects such as, connection requirements (electricity, water etc.), dimensions and sill height of window and kitchen area (length, width and height of room). 6. And finally the budget, the word everyone hates! But of course a very necessary part of the whole process. hotovoltaic (PV) panels positioned on a roof generate clean electricity by converting sunlight to electricity. PV is different to solar hot water systems which are also mounted on rooftops, but use the heat from the sun to provide hot water for household uses. During daylight hours, the PV panels produce a DC current, this runs through an inverter that converts the current into AC electricity. It is then suitable for electrical appliances and export to the main electricity grid. One of the first questions people have is around the potential savings they can expect. While the economics of a PV system will be different for every site and is dependent on a number of different variables, most customers can expect a return on investment in the range of 6% to 10% per year, as well as an increase in the capital value of their property. Site-specific variables that need to be considered when determining the savings made with a PV system start with the size and cost of the actual PV system. Then the anticipated annual energy yield; which is dependent on your climate, the roof orientation and inclination, along with any potential shading that may be present on the site(shading on an PV array can severely impact its performance). What electricity price you currently pay for imported electricity and then the price paid to you from your electricity retailer for exported electricity that the PV system generates (this is usually called the feedin tariff)
And lastly, your household electricity demand profile. That’s how much electricity you use in your home and when you are using it. The key is to use as much of the solar generated electricity as possible. This reduces the amount of electricity you need to buy from your electricity retailer. Given that a PV system only generates during the day, this could mean running appliances such as the washing machine, dishwasher, and hot water cylinder during the day. Finding the Perfect Architect for You Emily Andrews
in residential architecture, and their work ranges from new houses to alterations and additions to existing houses. Once you’ve done some research, it might be a good idea to meet with several practices to discuss your project and, on a basic level, find out whether you get on with a particular architect. Building projects can be intense and a successful outcome usually depends on a good relationship between client and architect. Clients must have confidence that they’re being listened to and understood. Clients should be assertive. They should ask questions of a prospective architect: Is what they want to do possible with their site or existing house? Can it be done within their budget? Who at the architecture practice will be working on the project? At what stages of the design process can a client intervene? Clients should also be realistic, and be prepared to take expert advice. Architects, are among other things, editors of wish lists and auditors of expectations. Most building projects involve compromise; the quantity of space has to be balanced against the quality of space. But however much space is provided, the point about engaging an architect is that the space you’re paying for is shaped just for you. Patrick Reynolds

Where should you start when looking for an architect? A personal recommendation is one route, and perhaps the most reassuring. But even then, it pays to do some research. New Zealand has quite a few magazines devoted to residential architecture, and they’re available in public libraries as well as newsagents and book shops. There are examples of architects’ work on the website of the New Zealand Institute of Architects (www.nzia.co.nz) and another NZIA site (www.architecturenz.net) has a directory of architectural practices which can be searched by location and project type, and which has links to the practices’ own websites. You can find out whether architects are properly qualified – that is, registered as architects – by checking on the website of the New Zealand Registered Architects Board, www.nzrab.org.nz. The New Zealand Institute of Architects also has a website, www. talktoanarchitect.co.nz, which sets out to demystify the architectural process. On this site, you’ll find straightforward and accessible information about architects and working with architects – what to expect from an architect, how to brief an architect, and the role of the client. Kids are well catered for with a children’s menu and a dedicated play area, and the whole place has very easy access, a boon for the elderly. Apart from the extensive menu and cabinet selection, there is a wonderful range of frozen gourmet meals – we will definitely be back when we need a delicious quick meal to throw in the oven!

Choosing the Right Spa Three things to consider
Insulation There are many ways to insulate a spa. Insulation is very important as it determines how much a spa will cost to operate. The simplest and most common method is to spray a layer of foam onto the spa shell. This system is cheap and easy for the manufacturer; however, it rarely provides what we believe to be adequate levels of insulation. We recommend that one of the following methods is used:
sheet becomes very thin – in some places less than 1mm thick. As a result, the acrylic must be strengthened using fiberglass. Because acrylic has a very smooth surface, the first layer of fiberglass must use a special vinyl ester resin, which actually melts itself into the back of the acrylic. If this resin is not used, your spa can delaminate over time. Equally important is that the resins are oven cured. If this step is missed, once again, the spa may delaminate.
Perimeter insulation Under this system, the cabinet of the spa is insulated instead of the shell. This ensures that excess heat from the pumps and other equipment is trapped around the spa shell, reducing heating costs. This system has the added advantage of providing noise reduction meaning a quiet nights sleep and happy neighbors.
Filtration There are basically three different methods of running the filtration in a spa. • The simplest method is to use a one-speed pump, which filters, heats and drives the water to the jets. This system uses the highest amount of power. • The second system employs a two-speed pump, which uses the pump’s lower speed to filter and heat, and the high speed to drive water to the jets. This system uses less power than a single speed pump. • The best system uses a dedicated one-speed pump to drive the jets and a smaller circulation pump to heat and filter. Not only does this method use the lowest amount of power for the highest amount of filtration, but it also provides virtually silent running in heating and filtering modes.
Full foam insulation Full foam insulation is generally considered to be the best insulation system available. Using this method, the entire cavity between the spa shell and the cabinet is filled with foam giving unsurpassed heat retention properties. Born in Massa Lubrense – a paradise in the province of Naples - his earliest memories comprise of delicious cheeses and prosciutto from the Parma markets. When he arrived in New Zealand in 1991, he instantly fell in love with our beautiful country, but soon missed his favourite Italian delicacies. So, in 2002, he opened La Bella Italia with the aim of offering New Zealanders the foods and flavours of his homeland. The secret spread

He holds the title of Cavaliere and is always actively involved with organising the Italian Festival in New Zealand. Brotherly Love Two brothers have drawn on their rich cultural heritage to create a superb restaurant celebrating all things Italian.
F
ood, family and fresh ingredients are the quintessential flavours of Italy. Fratelli, which translates as ‘brothers’, is a restaurant born out of a desire to combine these elements and introduce the beauty of Italian cooking to Wellington diners. Located in the heart of Wellington’s entertainment district, the stylish and cosy restaurant offers a semi-formal dining experience and fresh, modern Italian cuisine. In 2009, the Petagna brothers saw that a lack of good Italian restaurants in the capital city provided the perfect opportunity to pool their talents. Older brother Ferdi brought 10 years of professional hospitality experience in front house to the table, while younger brother, Carlo brought the sales background
that gave the business its legs. “It’s about food and family,” says Ferdi. “That’s why Carlos and I are here together. We’re not just business partners. We wanted to carry on the family heritage and do the things our grandparents used to do.” The brothers are second generation Italian. Both sets of grandparents emigrated from the small Italian village of Massalubrense, near Sorrento, and settled in the Italian fishing settlement of Island Bay, 58
in Wellington. Living in a new country meant recreating their Italian traditions anew. “There was no mozzarella, no ricotta, when they arrived in New Zealand,” says Ferdi. “They had to make their own cheeses from scratch.” The new immigrants built big glasshouses in their backyards to cultivate the fresh vegetables so important to Italian cuisine. To this day, Ferdi and Carlos’ grandparents grow their own acid free Italian tomatoes to make their traditional homemade tomato sauce.
The brothers have kept the family recipe very much alive and every morning the rich sauce begins its slow simmer on the restaurant stove. “Our sauce takes 9 hours to make,” says Ferdi. “The secret to a really good sauce is that the longer you leave it, the better it is.” The restaurant focuses on the concept of Fresh Italian, which is about marrying the authentic flavours of old, traditional Italy with new, modern ideas. Freshness is a byword.

To showcase the best of New Zealand’s seasonal ingredients, the whole menu changes about 6 times a year. In addition, Fratelli loves to treat diners to daily specials that highlight New Zealand’s more fleeting seasonal delights. This spring, the restaurant looks forward to lots of freshly caught seafood and authentic Italian dishes like lightly battered zucchini flowers stuffed with creamy goats cheese, and anchovy crusted spring lamb on a bed of light and tender gnocchi. Fratelli specializes in delicious, authentic pizzas served piping hot from the restaurant’s wood-fired oven. While crucial to achieving perfect pizza, the traditional oven is also an essential tool in other areas of Italian cuisine. The restaurant uses it to smoke fresh fish, salmon and brisket, and to roast plump, succulent mussels. A predominantly Italian wine list completes the true Italian dining experience, offering diners a wide array of fine Italian reds, whites and bubbles. A small selection of exceptionally nice, boutique New Zealand wines adds a touch of Kiwi flavour. When did you come to New Zealand and where is your family from in Italy? I sailed from Naples, my home town in Italy in 1989 and arrived in New Zealand in 1991. When did you start your Waiheke project and how does your Italian background influence you in your design and cuisine? I did start to materialise what has been in my bucket list for a while in 2008 and the essence of Italy is in everything I do from design to cuisine. What would you see as the most loved Italian item on your menu for Kiwis? My freshly made filled ravioli pasta

rom humble beginnings in 2000, a small red caravan parked on the side of Kennedy Road in Napier, Thai Chef’s has established itself as one of New Zealand’s most precious Thai restaurants. With speciality dishes like ‘Chicken Erection’, ‘Naughty Pig’, ‘Sexy Little Duck’ and ‘The Three Alcoholics’, you can presume there is quite a bit of humour that goes into creating the Thai Chef’s menu, but when it comes to creating and cooking their cuisine, it is a very serious matter. “Our restaurants use the complete real Thai recipes that do not cut corners or save on cost,” says Natttachai Changrattanachaichok, also known affectionately as Chang. “We are one of only a few Thai restaurants that have received the precious Thai Select Premium Award from the Royal Thai Government, and it is this label that bestows the authenticity of Thai cuisine.” In 2005 Thai Chef’s had a surprise visit from the Thai Ambassador to New Zealand, His Excellency Norachit Singhasanee. He gave Chang and the team a big thumb ups for their exotic, authentic Thai cuisine

Nevis Bluff Goes Country

hirty lucky participants from 16 Restaurants based in Sydney, Auckland and Wellington recently enjoyed Central Otago hospitality courtesy of a local company with a difference. Nevis Bluff Wines, named after its birthplace in the Gibbston Valley, produces premium Pinot Noir and Pinot Gris but has an unusual marketing angle - it doesn’t sell its wine in wine shops or supermarkets. New Zealand Marketing Manager, Julia Spark explains that due to Nevis Bluff’s strategy of only making wine in the years when medal quality wine can be assured, the Company can only supply key restaurants and online sales. “Central Otago has an unforgiving climate and while this means great wines can be produced in some years, in wet or unseasonal seasons the grapes simply do not reach the balance of brix and acidity required for great wines,” comments Julia. “We have a grape selection philosophy of keeping the best grapes and selling the rest to less demanding producers which precluded some Nevis varieties in 2005 and 2007”. Consequently there is generally not sufficient production for mass marketing. Available at many upscale Auckland, Wellington and Sydney restaurants the company annually rewards its most loyal customers with a weekend of interaction, education and relaxation. Staying at the upscale Hotel St Moritz in late October, a cruise on
Lake Wakatipu aboard the super launch Pacific Jemm ensured guests got to know each other as they discussed current trading conditions. The next day, the group travelled in convoy down to Bannockburn and over into the magnificentNevis Valley when 72-year old Lex McLean, whose family have lived on and off in the Nevis since his grandmother first arrived in 1867, came along as tour guide. Lex pointed out pioneering and gold mining relics and all present were moved when viewing Grandma’s grave (died 1904), in the old cemetery. This is “big sky” country and one of Godzones vast undiscovered treasures that impresses all visitors, especially when accompanied by a picnic lunch beside the Nevis River whilst enjoying a tipple of great Nevis Bluff wine. Back to Queenstown late afternoon for a vertical tasting and gala degustation dinner, matched with a variety of Nevis Bluff wines and its winemaker Dean Shaw as dinner speaker. 60 Seconds with a Celeb Franko How did you first become involved in music and what age did you start? My mother was a classically trained pianist and both my parents had great taste in music. They would take me to amazing concerts like The Rolling Stones, Elton John, Bon Jovi etc from a really early age, actually my first ever concert was Poison in 88’! Dad knew three chords on the guitar and he taught me those… hooked. Who do you regard as your role models? What have been your biggest inspirations? I admire those who were/are the biggest in music. Michael Jackson, Guns n Roses, Metallica etc, they all wanted to be the best & achieved that. I actually love the ones who speak out about what they truly believe in the most too, sometimes to their own detriment but it is so freeing saying your core truth. What has been the best part about being in the NZ Music Industry? Playing live. Performing face to face in front of your fans and pursuing the quest to win over new ones. Nothing beats having a song that you’ve written sung back to you by a complete stranger. Biggest highlight of 2012? Was opening for LA Rockers Steel Panther at The Powerstation a few weeks ago combined with hearing that my album debuted at number #11 on the NZ Music Charts. It’s so satisfying seeing something that you’ve worked so hard at and for so long start to grow and become recognised. If you had to choose an alternative career, what would it be? I reckon’ owning my own bar in the Caribbean somewhere where it’s summer all year round, pouring the odd cocktail and hosting

in March so if we get that then I want to turn that opportunity into a US Tour, so fingers crossed that all comes together! What TV show can’t you miss? here are not that many people with whom you can be friends. I had a brief foray into living in provincial NZ and found that out of a population of about 3,000, there were about 10 people with whom I could have been friends. Impediments are many and varied: someone is religious, for example. “I took the kids to church on Sunday” – feet, do your stuff. There are social differences, although I can skull Lion Red if the occasion demands. There are economic differences. There are people whom you hate just by looking at them; how that happens, I don’t know, but there’s just something about them that makes your skin crawl (a likely reason for my abysmal failure at attracting girlfriends at school). It gets worse: even if I could find my 10 or so possible friends, you can bet that a fair proportion of them would not want me as a friend because they’d hate me on sight or I’d have offended them in one or more ways which are entirely natural to me. Then, if you’re a couple, one of a couple might hate one of the other couple etc and, all of a sudden, 10 out of 3,000 is looking highly ambitious. I hope you don’t mind but I feel I must digress to my just-used singular verb: “10 out of 3,000 is looking … .” Is it acceptable or not? I’m really saying “a group of 10 …”, am I not? Who knows? I’m uncertain (although slightly cocky but there you go) but at least I’m thinking about it. Another reason why I might not want someone for a friend is if that person has a cavalier attitude to grammatical standards; how could I love someone who misuses “disinterested”? Or who says “Nothink”? (I started the sentence with “Or”, by the way, for effect, alright???) (The two extra question marks were for effect also). I suppose you’re dying to hear how provincial NZ and I came to blows? Well, while trying to fit in, I attended the opening night of the squash club, which doubled as a stag-do for one of the members (“Warning, Will Robinson!”). I turned up in white overalls, ready for action, and was pitted against the local vet in the drinking races. There were unjustified cries of “spillage” from the locals, determined to sort out the vet and me, which necessitated a re-run. I thought it best to make room, so I barfed over the balcony onto the paddocks below in order to compete at my best – perfectly acceptable behaviour in the circumstances. On the Monday, my employer observed that it was inappropriate for someone in my position to have done such a thing; I’d resigned by lunchtime. Anyway, the point of all this is to observe that it doesn’t take much for someone to disqualify himself or herself from the category of “possible friend”. So, to the gym, where I explore the many and varied
ways for someone to become disqualified as a possible (from a bloke’s perspective). Disqualification risks: 1. Inside the changing room, he’s on his mobile yapping away and sounding business-important. It’s a double fault if he gives the caller a bollocking for all to hear. 2. He takes his mobile into the gym itself and keeps looking at it. 3. The odd grunt at the end of a set of exercises, as you struggle to complete, is perfectly acceptable, but do not come into the changing room while I’m there and exhale, grunt or pose just to show how hard your workout was. Sitting down and shutting-up works for me. 4. Mr Floppy – look, it’s clear some guys are inordinately proud of their hardware but it embarrasses most of the room if someone: a. Stands there, stark bollocky, facing into the middle of the room, with Mr Floppy for all to see and admire. b. Walks to and from the shower with a towel over his shoulder with no attempt whatsoever to cover up (I’m only saying this for effect) “God’s gift to womankind”. c. Comes back from the shower and: i. While facing the rest of us, gives that magnificent weapon a jolly good towelling, so much so that you’re thinking “Snakes on a Plane”; or ii. Stands in front of the mirror, stark bollocky, while he does his hair, applies lotions or, sometimes, simply admires the vision. Add a bonus point in the hatred stakes if the owner of the world’s greatest Schlange actually applies lotions etc to it. iii. Is an undeniable ginge – sorry but that’s the way it is. 5. Self-admiration – it is a discrete offence to have a taut body and to stand there for the purpose of letting punes such as myself feel inadequate. 6.
