have always been fascinated by big trucks, yet slightly scared when they pull up on both sides of my Audi on the motorway! Big trucks are nearly the price of a small house nowadays, they are automatic, computerised and normally have two or three drivers who work them all day and all night. Nothing happens in this world without a truck – your groceries, your carpet, your furniture; even the cars we drive are delivered by them. The truck on our cover is a Kenworth, part of the Pyramid Trucking fleet owned by Paul Chappel. His company has been delivering across New Zealand for many years and we are proud to have them on our cover in an odd mix of ultimate style and state of the art machinery. Read about them on pages 16 to 19. This issue we discovered Pukekohe, our fastest growing city and a beautiful place to visit. With new developments popping up, new homeowners moving in and new shops lining the main streets, it is obvious how things have changed. This area has always been the vegetable garden of Auckland, but now it has come of age and is fast becoming a trendy fashionable area with cafes, markets and great restaurants. Check out all of the great places Pukekohe has on offer on pages 72 to 86. Spring is finally upon us and it’s the season that brides spend preparing for their summer weddings. I love showcasing weddings, everything is always so pretty. On pages 48 to 66 we give you some seasonal wedding inspiration. Also in this issue all the girls in our office tried the new Vidal Sassoon You Curl – a cutting edge piece of equipment but so easy to use, you can curl your own hair within five minutes! This greatly desired magical object has been given our stamp of approval. Where Style Meets Cartage

ye Magazine caught up with Director Paul Chappel of Pyramid Trucking to learn more about his highly specialised business. Paul set up the successful cartage business in 1995 based upon some serious industry knowledge and experience. The business specialises in the transport of animal products, dangerous goods and palletised freight. And while the nature of the business may not seem glamorous, Pyramid Trucking is a well-oiled machine providing services for many leading North Island meat companies and tanneries. Paul explains that the specialist freight moving is not a simple business. It must meet accreditation and regulations from

many Government organisations. Depots must have ecologically-sound truck and bin washing equipment, and trucks and trailers have each been specially designed for the cartage of animal products. Time sensitive products are our forte. Paul runs a consistently new fleet of 25 trucks which he upgrades on a regular basis for optimum performance. Pyramid Trucking is proud of the modern and immaculate fleet. Paul states “we have a great team with experienced staff who take pride in our Company and our fleet”. All trucks are fitted with International Telematics’ GPS systems so that product can be tracked and traced at any given time. Paul

tells us “at Pyramid Trucking we believe this technology will be the key to reducing our carbon foot print and fuel usage, which is not only good for the Company but also the environment.” Covering the central North Island, Pyramid Trucking has five depots in: Auckland, Te Aroha, Te Kuiti, Tauranga and Napier. It’s head depot, dangerous goods storage facility and offices are based in Wiri, Auckland. They have a reputation for always being sparkling spick and span. Pyramid Trucking holds accreditation with organisations such as ACC, Ministry of Primary Industries, HSNO, New Zealand Customs and work with National Road Carriers, New Zealand Meat Industry, New


Zealand Pet Food Association, LASRA and the EMA. Being aligned with all these organisations helps Pyramid Trucking stay ahead of the game. Eye Magazine was interested to learn about the evolvement of the business. The story starts with Paul when he was just eighteen years old. Paul gained his truck driver’s license and started driving for his parent’s family business Chappel Carriers, out of Te Aroha. Soon after, he became Transport Manager. His parents, Barry and Suzanne, had set up Chappel Carriers to cart hides and skins as they were in the business of trading them and couldn’t find anyone to freight for them. Chappel Carriers grew quickly and continued

on until the mid 1990s when it was sold to Transport Investments. When a customer later needed a specific truck for carting specific product, it opened the door to Paul setting up his own business and Pyramid Trucking was born. Paul tells us “There has been no looking back ever since. The business really started very naturally.” Paul also bought back Chappel Carries from TIL in 1999. Pyramid Trucking’s strategy over the years has been to grow slowly and steadily, being very careful not to over capitalise too soon with too many trucks. Each truck carries a serious investment. And while the products being carted are ‘messy’ by nature, Pyramid Trucking adds a touch of glamour to trucking

industry. Drivers have each been individually picked for their specialist skills and friendly natures. Paul says “We have a great team of drivers who are all very self-sufficient. They are also each fitted with personal cell phones (rather than RTs) so they can always be contacted quickly and nothing left to doubt. This allows greater flexibility and with their phones in their pockets, drivers can be alerted of any necessary changes immediately.” They are also all fully trained and licensed holding Dangerous Goods licenses, Forklift licenses and are OSH approved to operate forklift machinery. Pyramid Trucking depends heavily on suppliers such as Southpac Trucks, BNZ,

International Telematics, Transvisual and Fruehauf Trailers. These Companies are extremely reliable suppliers and without their constant service, our business would not run smoothly and would have an effect on the service we offer to our customers. Paul’s right hand man is Neil Stockley who has been around trucking all his life and worked closely with Paul for many years. Neil is Pyramid Trucking’s Operations Manager and oversees all areas of the business. “He is an extremely valuable member of our team” says Paul. The business is a close knit family affair with Paul’s sister, Cindy, who holds working as Office Manager at the Wiri Head Office. Wife Jodene is the Compliance Specialist, ensuring that the business is always in compliance with the regulatory and legislative

side of things. Graham and Clinton are also valuable team members handling dispatch. Paul says “We also have many drivers who have been with Pyramid Trucking for years and we rely heavily on their competence working with the animal by-products. It really is a team effort by all accounts”. And what does Paul see for the future of the industry and this highly specialised cartage business? Eye Magazine posed the following questions to Paul to get a better idea of what makes him tick. What excites and motivates you about working in this specialised business of cartage? I enjoy being involved in a partnership with our customers and the opportunity to promote both businesses means it is

an exciting and interesting industry to be involved with. What trends do you see taking place in the industry? We are seeing many company mergers/ acquisitions due to increased compliance and operation costs. Strategic partnerships with like-minded carriers. What new things do you see on the horizon for Pyramid Trucking? reedom of expression and authenticity encapsulate the exciting New Zealand Repertoire brand. The successful pure Kiwi business was established some years ago by three women who are the very best of friends and each bring different strengths to the table. The result is a business that is well rounded and based upon strong values. It is about enabling New Zealand women to dress confidently for the many different roles they fulfill each day. The directors of Repertoire – Lee, Debi and Meghan, are all extremely passionate about fashion and the business. Their vision was to create a place they would love coming to every day, a place that was joyful and happy. They each love what they do and have a deep respect for one another. This transcends directly into the Repertoire stores where staff members equally love working with the brand and its customers. The Repertoire environment is beautiful

and caring, a place of escapism, a place where the worries of a day can fall away for a short while. Each and every staff member is passionate about what they do. Meghan is an internationally trained stylist and she travels extensively across the 6 different North Island stores. Customers can book appointments with her and she will educate them on the correct clothing for their body shape. She will assist with base wardrobe planning and the addition of consecutive pieces. The premise is that each piece must earn the right to be in a wardrobe. Garments are beautiful, feminine and fluid but also ‘bullet proof’ in a practical sense to carry you through the day. Repertoire are proud to say their seamstresses are all based in New Zealand. They are artisans and most operate in small workrooms or on their own. They are also Repertoire customers themselves so they understand the brand well. Each garment is made uniquely and individually in the New

Zealand context with a true local spirit. Spring and summer with Repertoire are set to inspire with ‘freedom of expression’ being the theme. There is lots of excitement around colour, with cyrese pinks, tangerine oranges, poppy reds and lemoncello yellows. The bright colours and strong prints are always grounded with traditional neutral shades forming the base of the collections. The horizon is bright and exciting for Repertoire as at the time of writing, they are on the verge of expanding into the South Island to open their seventh store in Christchurch. In addition, their website has recently been completely updated with online shopping, social media and a fashion blog featuring the latest trends all available. copsychology is a relatively new field of psychology that studies the relationship between humans and nature. When we think of our own childhoods, we often have fond memories of spending hours outdoors exploring our natural environments. More often that not, these days we spend more time indoors engaging with various screens, smartphones, laptops, WIIs, Xbox and flat screen TVs. The temptation to engage with the fast world of the internet and social media is too great. The result is that people have become more wrapped up in themselves and their worlds, rather than seeing themselves in the wider perspective of their natural environment and community. Today’s children are often shuttled from one planned activity to another without the same required skills for independent play and outdoor exploration. With most people living and dwelling in cities today, a more concerted effort must be made to ‘escape’ to nature. Ecopsychology directs us to spend more time outdoors with nature, where we can experience a greater sense of happiness, wellbeing and completeness. Senses are heightened which can contribute to a greater sense of identity. And broader perspectives can be gained, allowing for positive contemplation over the

ye Magazine caught up with Sheryn Murphy, owner of the busy women’s Configure Express gym located in the hip suburb of Ponsonby, Auckland. Configure Express has more than 30 gyms nationwide that cater specifically for women. The Ponsonby gym was the first to be established, recently celebrating 10 years of being in business. Owner, Sheryn, is passionate about the services her gym offers for women. She says, “Women are time poor and we cater specifically for them with short classes, easy parking, a relaxed environment and great facilities for post workout. Women’s confidence levels are increased in our environment. They can relax and be themselves, and our programmes/classes are specific to them”. Sheryn herself has a diverse background. She initially came from a banking background of customer service and sales pre children. She then went back to study in 2004, gaining a Diploma in Travel and Tourism at AUT in Auckland. She worked part-time for Tourism Auckland in the Viaduct for over a year, then Office Manager/Customer Service for a small business in Mt Wellington for 5 years before purchasing Configure Express with her partner Rodger. Women can enjoy the great views down Ponsonby Road while working out on the cross trainers and treadmills. Also popular are the many different classes on offer. Pilates and Yoga are favourites of members as is the new Em-Power class on a Monday morning taught by Emma. Members receive regular ‘6 weekly’ wellbeing assessments for goal setting and motivation. Their personal measurements are taken including weight, body mass index and height, and then specific goals are discussed. A trainer will then work with the client to achieve their fitness goals in the time frame they choose. The gym offers excellent cardio, circuit and resistance training areas. THE WOOING TREE Family owned vineyard, The Wooing Tree, is situated in the heart of Central Otago, next to the quaint town of Cromwell. Owners Stephen and Thea Farquharson and Stephen’s sister and brother-in-law, Jane and Geoff, purchased the vineyard whilst they were overseas and had no idea of its rich history. Unbeknownst to them, there was a particularly significant tree on the land, which was lovingly titled the Wooing Tree and it had long been a popular place for locals to woo their lovers. With impending development to the vineyard meaning many of the trees were to be removed, locals flooded in with campaign and support to save the historic tree, with a poetry competition and even stories in local newspapers. orking with flowers has been Heather McCall’s passion since she was a young girl. Naturally talented, she has created a successful florist business specialising in designing distinctive wedding arrangements. Heather’s first experience with flowers was at her local country flower show when, at the age of five and encouraged by her mother, she entered a buttonhole and a corsage. To her delight, she received two first placings and from then on flowers and Heather have been inseparable. Eye Magazine had the pleasure of sitting down with Rachael to learn more about her business and what is happening with Interiors at the moment. Rachael, what aspects of Interiors does your business cover? I am best known for my ability with colour and furnishings; window treatments, furniture and accessories. I routinely work alongside leading architects, kitchen and bathroom designers to specify materials so cohesion is achieved within the entire interior and exterior scheme. What trends are you seeing at the moment in Interiors? What is on-trend for spring and summer? At any given time there are multiple trends showing favour. Three of the more popular are as follows: Glamour – the use of dark moody tones en masse; velvet matts contrasted with high gloss and metallic (bronze and gold). Large

scale design. Luxurious materials such as honed marble, leather, European designed and manufactured furniture, lighting and appliances. Possible inclusion of strong clear colours such as emerald green, blues, golds and purple. Cape Cod Style – light weathered tones for walls and floors, use of natural materials (timber and marble for example), texture as opposed to smooth gloss finishes, rattan, aged leather, tumbled linen. Vintage and rustic furniture and casual elegance. Kiwiana – modern antique furniture from the 1950s and 1960s, formica and chrome, collectables and crown lynn, NZ art and sculpture, pale mint green, aqua and lemon colours. What advice do you have for Purchasers and Vendors at the moment? The reality of the market today is that there is a shortage of listings. However, the

bottom line is that property will never be as cheap as it is now. It will continue to go up. For people looking to sell, you have a chance of achieving a great result in today’s market, but make sure you don’t fall for an inflated appraisal price! Research different sales methods. Whilst auctions are popular at the moment, the results vary and there are other ways to sell. The key is finding an agent you can build a relationship with and who is passionate about your needs.

Trinity Interior Design Right on Trend for Spring Project by Trinity Interior Design

A

t the beginning of spring, Owner and Director Nicole McKenzie of Trinity Interior Design, Designer Catherine Huckerby, and Eye Magazine sat down together over elderflower sodas at the Trinity Showroom in Takapuna to discuss what’s on-trend for spring and summer! The major theme this season, carrying through the entire home, is the use of block colour in bright and bold shades. Interior trends flow through from fashion off the catwalks and this is certainly true for spring and summer. Many people love using colour in the home but are unsure exactly how to go about it. This season there are two main options for injecting colour into a room. The first and safest method is to use tonal colours; ie. complimentary colours from the same colour group. The second method is to use clashing colours. It really depends on how bold you want to be, explains Interior Designer Catherine. Specific colours for spring are neon brights coming straight from the European runway. Look for strong limes, bright yellows and tangerines. Aqua and emerald are also on-trend for spring and work really well for colour blocking. Grey is the strongest neutral colour at the moment and makes a great combination with lime green! When applying strong colour to walls, use high pigmented paints that have unique depth of colour. Porter’s Paints offer a wonderful selection in punchy colours which will translate to a deep vibrancy of colour within the room.

The best starting point is to look at a room as a whole, and plan where to place your block colour. A traditional method of injecting colour is to paint a feature wall but colour can also be applied in more creative ways such as small blocks of colour between bookshelves, on a door, and hanging fabric on the wall. Colour can also be used with bright upholstery on chairs and through rugs. For a more seasonal approach, look to place colour with cushions, lampshades, vases and fresh flowers which offers a more economical approach, especially if you are wanting to change the colour and tones on a regular basis. Catherine explains that bright colours work best when placed around other neutral pieces and shades, and work particularly well with whites and grey. Another hot new trend for spring is the use of abstract and geometric fabrics. They can be bold enough to stand in a room alone with simple neutral colours, or they can be used to complement bold prints and colours. You can clash different patterned fabric together using small and large scale designs but keep the colour tones similar. Or juxtapose graphic pattern fabrics on traditional frame chairs. Designers Guild fabrics from the United Kingdom are very popular at the moment, as are vintage patchwork rugs from Artisan. Nicole explains that many suppliers are providing product with colour and being quite bold about it. This is also flowing through to soft furnishings with geometric fabrics and artwork. iles have been used for centuries as a decorative surface, both inside and outside buildings. Porcelain tiles have some key differences from normal glazed ceramic tiles. Manufactured in Italy, Laminam has all the traditional strength and durability of a high quality porcelain tile. Ambiance Interiors With Company Director Andrew Price

E

ye Magazine decided to head away from Newmarket’s high street to discover Ambiance Interiors tucked around the corner at 16 Railway Street. Located in a quieter part of town, it has developed a reputation as one of New Zealand’s top interior design stores. This is clearly a destination showroom that is worth visiting. Located inside a New York loft style building, you are instantly greeted by the eclectic array of interior products as you enter from the street. With dedicated showroom parking, this is designer shopping made easy. Andrew Price, opened Ambiance Interiors back in 1988. He now works with customers and interior designers alike all over the country having become a ‘Go To’ person for

interiors. Located upstairs from Ambiance, is Diva International. Diva compliments Ambiance with a trade and wholesale library of fabric samples, wallpapers, trims and more lighting. Customers can have furniture custom made in fabric from Diva, upstairs. Sofas and cabinetry are made exclusively for Ambiance in Auckland or from their European design house associates in Europe. Andrew chose to move into Interiors after spending time in Europe. He found there were limited interior choices compared to overseas so was inspired to set up shop himself. Together with Julie and Gail, the team of three, now regularly visit trade shows in Paris and London to keep ahead of interiors and bring new ranges back to New Zealand.

Eye Magazine asked Andrew to tell us about what’s on trend at the moment. With a bit of coaxing, we learnt that New Zealanders continue to play it safe with lots of neutral earthy palettes. Andrew mentioned lovely leather, raw oak and plain linens as popular textures. Ambiance has traditionally stocked many French country interior pieces, but has moved more into contemporary classic pieces in recent times. Without wanting to give away too many of the business’s secrets, Andrew explains that many design ideas and trends come out of Spain and Holland. Paris is still the design capital of the world, but tends to be more traditional. The Spanish and Dutch take traditions and give them a modern twist –


stronger classic elements with clean lines. This seems to work well for New Zealand with its many coastal areas, especially. They have stronger palettes of colour that are very real. Asked about new products for Spring and Summer, Andrew explains that Ambiance will shortly be unloading two new container of interior products from Europe, products that have already been successfully product tested in New Zealand. hen it comes to orchids, Charles Timm knows his stuff. Nestled in behind the trees on his gorgeous Kerikeri property, sits a half-acre greenhouse and an endless assortment of breathtaking orchids. Editor Vanessa Green called in to get the skinny on orchids from the orchid king himself. How did you get into Orchid growing? I moved to New Zealand with a degree in Botany in 2003 and in order to obtain my residency I had to invest in a horticulture business. I have a love for growing so I decided to build an orchid business. What is your favourite colour? Definitely a new chocolate variety that I have, followed by a particularly amazing burgundy! What is the most popular colour and how do you find exciting new colours? My market is primarily the United States. The favourite colours there are browns,

oranges, reds and green with a red lip. Japan loves pastel colours. This diverse collection of dark colours is all the rage in the US and so this business is a boost for NZ exports. Many of my collection have been brought in as tissue culture from Australia. How long does an Orchid take to grow and when is the optimum picking month? Everything is very dependent on the variety. Orchids can be grown from tissue culture, back bulbs or splitting. If one purchases an agar jar of young orchids these will often take three to four years to reach flowering size. Splitting of larger plants will generally result in a small crop in year one and then normal cropping from year two and three onwards. When splitting, the old pseudobulbs may be used to produce more plants. These take about three years to generate a good-sized flowering plant. I grow intermediates, which tend to flower from May until October. The peak of the season is midJune until mid-August.

How long can cut orchids last and can I grow them easily in my own garden? Cymbidium orchids are an amazing cut flower and if purchased fresh and not kept too hot they can last up to six weeks. The intermediates are not as large as the standard varieties and tend to have significantly more blooms. Many florists favour these. Plants definitely make an attractive addition to a garden if kept in dappled shade, well fed and are never allowed to sit with wet feet. Cymbidiums hate being too wet and love ventilation. Many orchids live on trees and rocks and have a layer of velamen around the roots, which acts like super-absorbent blotting paper to take advantage of moisture and food as it becomes available. pring is the perfect time to get your garden ready for outdoor entertaining so why not join the latest trend and use your vertical spaces to add a stunning display to a boring wall. Give your fruit trees and roses a spray to prevent fungal disease and if you have a worm farm, dose your plants with worm tea and you will be well rewarded in the months to come. hill reds, choose low alcohol rieslings and add ice and a slice to bubbles, writes Joelle Thomson. Someone famous but anonymous once said be careful what you wish for, in case it comes true. In my case, a wish just did. This year the biggest wine company in New Zealand added riesling to its low alcohol, low calorie wine range, Flight. There’s nothing flighty these wines. Chief winemaker Patrick Materman says riesling is the perfect fit for Brancott Estate Flight wines. It retains an intense taste, even with reduced alcohol. Most wine is 12.5% to 14.5% in alcohol. By making riesling with less than 10%, Materman is following the trail of the best German winemakers, who have always made low alcohol riesling – and theirs are among the great wines of the world. A Touch of Austria in Marlborough Grüner Veltliner Wine Clive Jones, Nautilus Winemaker and Mike Collins, Nautilus Viticulturalist.

G

rüner Veltliner, also known as Gruner, GruVee or simply GV, is the latest wine variety on everyone’s lips. Popular amongst New Zealand consumers and winemakers alike, it is the most prized varietal and signature white wine grape in Austria. These days, it features on every respected restaurant wine list around the world. Grüner represents 50% of the new varietals planted in New Zealand over the last few years, with 80% of this having been planted in Marlborough where growing conditions favour the grape. Winemakers have shown a keen interest in the varietal and it has been described by industry leaders as ‘the way forward’. Renowned wine expert Jancis Robinson says of Gruner: “As a confirmed Riesling enthusiast, I was slow to recognise Grüner Veltliner’s charms. For a long time I thought of it as a poor second to the great Riesling in Austria’s wine lexicon. It took one of several significant blind tastings staged by Munich dentist and fine wine merchant Jan Paulson of www. rare-wine.com to convince me that Grüner Veltliner was truly a great grape variety. It was

an audacious exercise. In each case a panel of renowned wine tasters was invited to taste a range of top Austrian Grüner Veltliners mixed, in flights arranged by age, with top Chardonnay-based wines made around the world. Best of all, we in London were allowed to choose the opposition, so it included such names as Montrachet, Corton Charlemagne, Leflaive and Ramonet. After the tasting I could hardly believe the results: seven of the top 10 places had been taken by Austrian wines, some Chardonnays but mainly Grüner Veltliners - but this was a result that replicated similar ones in the other, similar tastings.” It is early days for the new varietal in New Zealand, but it is set to start popping up on the country’s best restaurant lists. The variety shows exciting promise with attractive aromatics of white flower, spice and sometimes white pepper. The palate has a nice crunchy/chalky acidity which is quite different in style to a Sauvignon Blanc. f you like fantastic food and good old fashioned service from happy staff, you’ve probably come to the right place – The Blue Elephant Thai Restaurant. It can be a little hard to find as it is down a right of way at 237 Parnell Road, but we think once you have been once, the directions will become firmly fixed in your mind. This little boutique restaurant started on the back of the 2009 Wall Street crash, but that didn’t stop its rapid rise in popularity with Parnell businesses, residents and neighbors alike. It is also becoming a must visit for local and overseas tourists, who find it through the many nice reviews available on the internet. The restaurant is a great business meeting place for lunches from Tuesdays to Fridays. The Thai cuisine is authentic, yet innovative with loads of fresh herbs and vegetables. The wine list is constantly being updated and has plenty of variety to suit most tastes at very competitive prices. Open 7 nights, bookings are becoming

more and more essential as this restaurant becomes ever more popular. Inside the restaurant, seating is around 40 comfortably, in a lovely relaxing atmosphere. Auckland’s Own ‘Real Food’ Joint

A

uckland finally has a “Real Food” joint... All of those interested in the “Paleo”, “Primal” or “Raw Food” diets take note. Real Food is simply a diet void of refined sugar and grain, but more importantly packed full of nutrients. At Wilder and Hunt it’s all about convenience and health. The mastermind behind the whole thing, Amy Gibson, became fed-up with the lack of nutritious convenience food on offer at mainstream outlets. The subtle upsurge of chemicals used these days for increased flavour, as well as food production en masse, has moved us further away from food in its natural form - i.e. the whole foods; fruit, vegetables, meat, nuts and seeds - towards a diet of processed fast food and sugary snacks. This is not surprising considering convenience has been placed on a pedestal in our fastpaced, and often stressful, lives. Work, family, kids, cleaning, dinner… it’s all a bit much (if not on the mind then definitely on the body). Stress can inadvertently trigger dry hair, dull eyes, hair loss, and haggard skin. These are all reasons why Wilder and Hunt are set on providing ‘real food’ offering nutrient dense, no grain, no sugar, no artificial anything… breakfast, lunch, snacks and take-home meals. The ethos underpinning Wilder and Hunt recognises that human beings have a genetic make-up that demands a plantbased and high fat/protein diet for good health. Good fats used to enhance the metabolism at Wilder and Hunt include coconut oil, eggs, bacon, avocado, coconut flour, and paleo chocolate for sweet treats. Remarkably, Wilder and Hunt’s sweet treats - red velvet cupcakes, carrot cakes, ‘rawky’ road, hello polly slice, and chocolate brownie - are all sweetened with date paste made on site, pure maple, or raw honey. ratelli means two brothers; Ferdi and Carlo Petagna have proved themselves to be a highly successful duo with their Wellington restaurant Fratelli. Fratelli is located in the centre of Wellington’s dining district and has plenty of loyal longstanding customers, most nights you will see it pumping with people enjoying themselves. We caught up with “the duo” to find out all the goss! What is your favourite weekend meal? Ferdi : A good quality cooked breakfast from one of Wellington’s great cafes. I have my favourites that make their own potato cake, own bread and use quality cured bacon and sausages. And it has to accompany a good strong locally roasted coffee. Carlo: I too like a good brunch meal, an eggs Montréal with fresh baked cibatta loaf and house hot smoked salmon fillet –the real

stuff. We never have or cook brunch food in an Italian restaurant that specialises in dinner so weekends are perfect for us to enjoy a brunch meal. What is your favourite dish from the Fratelli menu? Ferdi: That is a really tough question! The menu changes a lot and I always like everything but at the moment the slow braised lamb shoulder stuffed with anchovies, pine nuts and olives then wrapped in house made pastry and baked is pretty awesome, rich, tasty and delicious. Carlo: For me it’s always the Pizza, we are lucky enough to have a true wood fired oven (one of only three in the CBD) and you can’t beat a good fluffy pizza dough made with fresh yeast and topped with a thick rich Napolitano Tomato Sauce and fresh Bocconcini cheese, - simple but when done right it’s utter perfection.

What is your favourite dish that your Mama cooks for you? Ferdi: Probably not our Mum’s dish but definitely our Grandmothers staple dish of pasta with home made tomato salsa and pork meatballs. We are lucky enough to still have all four grandparents and to this day they still grow their own tomatoes in their glass houses and each year spend two days cooking massive amounts of tomatoes and preserving their own salsa in glass bottles. You can’t beat pasta sauce made from freshly grown Italian tomatoes and when it’s with Nonna’s pork meatballs its classic Napolitano fare on a plate. Carlo: For me it’s our Grandmothers home made mozzarella. They make it once a week and it’s soft, milky and fresh. On occasion we make it for the restaurant but the amount of milk needed and time to make just a few small balls is unfortunately


not feasible for everyday use so it becomes a treat. What makes a perfect dough for pizza? Carlo: Fresh yeast plays a big part and most people over look it. A good quality pizza flour is also useful, we are lucky now that in NZ there a few imported specialist flour types around so look out for a specialised pizza flour then just the usual olive oil, warm water, sugar and some salt. Do you make your own pasta? Ferdi: Definitely. One of the key reasons we started Fratelli was the lack of fresh pasta around in Wellington restaurants, even a lot of the Italian restaurants weren’t making a range of fresh pasta so we have always made our own pasta and also our own homemade Gnocchi, we always will.

Where do you see Fratelli in five years? Carlo: Still going as strong as it is today and probably with a couple of ‘brothers’ operating around other parts of Wellington as part of the Fratelli Family. How long have you been in business and have you fulfilled your dream with Fratelli? Ferdi: Four and a half years and we have succeeded with Fratelli but not completed the whole picture yet. We have always had a dream of continuing to grow the Fratelli family and want to give Wellington more fresh pasta eateries and possibly even good quality take home Italian meals. Divine Dantes

A

s a boy in England, Kevin Morris was a fussy eater. “But when we visited my Italian mother’s family in Genoa my grandfather Dante would make this amazing pizza and I would eat tonnes of it,” he says. Whenever he was back in the UK, Kevin toyed with the idea of becoming a pizzaiolo, but it wasn’t until he came to New Zealand 14 years ago that he opened Dante’s pizza in Kumeu, gaining a stellar reputation. Before being invited to relocate to Ponsonby Central last November, Dante’s had won the Metro Awards Best Pizza a whopping 5 years in a row, and is already shortlisted for the same award this year. All because you can’t get better than a Dante’s Margherita – it is accredited by the Associazione Verace Pizza Napoletana. Like champagne from France, a true Margherita is backed by European law, so you can’t claim to be selling one unless you have their tick of approval. To gain the endorsement, Morris spent a year applying and three months in Naples proving he could make an approved product. Dante’s dough is made using just flour, salt, water and yeast, then rested and chilled for a minimum of four days, so the gluten in the base breaks down. “Then you get very soft dough that even celiacs can eat,” says Morris. The dough is then hand stretched to order, dressed with crushed campaigna tomatoes and mozzarella from Naples (accreditation requires ingredients to come from that region), alongside other locally sourced fresh ingredients, before being fired at 450°for 90 seconds. “You have never tried anything like it,” says Morris. “It would get a Michelin star if they had a pizza category!” Perhaps they shall create one just for him? 60 Seconds with a Celeb Alisa Keall-Grant from The Block NZ Have you enjoyed being part of The Block NZ? I never know how to answer this question, because The Block NZ is such a mix of emotions! At times you look around at the house you’ve created and you feel a massive high, other times you feel physically, emotionally and mentally drained (not to mention sleep deprived!) so it feels a bit torturous. But on the whole, if I had to go back I would definitely do it all over again – it’s been a once in a lifetime experience! Your most memorable moment on The Block NZ so far? My most memorable moment was hearing “Tools Down!” at the end of the master bedroom and ensuite week. It was a huge moment for us, because it signalled the completion of the entire inside of the house! We never knew if we’d make it that far and at times it felt like we would never finish, so that was a big moment. I was excited to do something that didn’t involve painting all night, as well! Who is you favourite and least favourite competing teams? It sounds cheesy but I adore them all. They’ve all got their own quirks and were great support throughout the show. The boys were a great reminder not to take life – or the competition – too seriously, they always helped me pull my head out of getting too emotionally involved. Loz was awesome for a cuddle in the middle of the muddy driveway when we were both feeling a bit over it all, and Alice....you have to smile at Alice. How anyone in their right mind can stay so positive through an experience like The Block NZ beats me – but more power to her!! Have you always been interested in interior design? For me, the interior design aspects took a bit of a back seat to the actual renovations. I knew going in that we weren’t going to be the most stylish couple on The Block NZ, and we weren’t by a long shot! I was initially more interested in the building, painting and finishing side of the renovation – but

Where would you take Koan for a romantic getaway? I would take Koan to the Queenstown lakes area. He LOVES it down there, and it’s nice to get away from the hustle and bustle of the city. Romance for us is usually quite adventurous – more hiking / snowboarding / four wheel driving / rafting than baths and candle lit dinners. Is that wedding bells we can hear? Not unless you can hear into the distant future!! Me and Ko are a team and will be together forever (mind the cheesiness!) but neither of us feel the need to rush into marriage. We’re just happy to enjoy each step of our relationship and take our time with it – there’s plenty of time for marriage later!

I enjoyed the chance to do some interior design on a big scale! At our own house we tend to have hand-me-down furniture, so to go out and pick a whole room’s worth of furniture, art and décor was a fun experience and not one I’ve had before. Would you pursue a career in property development? Koan and I are both really interested in the property market and property development. We love doing up houses – particularly very old houses – and we’ll definitely be looking to do more of that in future! If we can make a career out of it at some point, I think we’ll definitely give it a shot! What do you think of NZ women having cosmetic surgery? I have no problem with women having cosmetic surgery. I have friends who’ve had their noses done, and have gained a huge amount of confidence, self love and happiness from it. That’s not to say we shouldn’t all be happy in our own skin as we are, but I wouldn’t judge anyone for doing something that they believe will make them feel better about themselves – and I think a lot of the time, women do it for themselves rather than for impressing anyone else. Having said that, I think it’s important that they don’t overdo it and end up looking fake, with additions or subtractions that don’t suit their face or body shape.

What’s your favourite NZ restaurant ? I really love Aubergine in Takapuna. I haven’t been there in a while (there’s not much time for meals out when you’re on The Block NZ), but I used to love going there on a Saturday afternoon for a steak sandwich or their awesome chicken kebabs. Best followed by a walk down Takapuna beach! Highlight of your year so far? Two highlights – the first was finding out that we got on The Block NZ! When Mark showed up at our door – it was the strangest feeling. Knowing that life was about to dramatically change! I enjoy having new experiences and this definitely qualified! The other was finding out that Koan and me are going to be an aunty and uncle next year!! Where do you want to be in 5 years time? I have this old-fashioned dream that we’ll be living on a beautiful old villa with wraparound porches in the country. We’ll have around 10 acres of land, covered in fruit orchards, vege patches, a chicken coop, a couple of lambs and a stream. I’d love to try being semi self sufficient – I just love the simple things in life, it’s what makes me happiest :) Might be more of a 10 year plan... but we’ll aim for 5!
