he holidays are upon us and it’s time to think about our families, barbeques, sea, salt and suntans! I love summer; it’s the most special season! This issue we want to give you tips to have a healthy summer with your friends and family, it’s so easy over Christmas to indulge, we drink too much, we eat too much and then suffer the consequences in February. We all do it, it’s like we think we deserve it from working hard all year but you can find a healthy balance. Small changes make big differences! See our good living feature on pages 59 to 70, healthy organic eating, lots of fresh vegetables and fruit, a little exercise, then you will really enjoy that glass of champagne and slice of cake! On our Cover is the beautiful super model Kylie Bax and the fabulously famous Colin Mathura-Jeffree, shot at Alexandra Park. Race Nights are a favourite summer activity of mine, in fact Alexandra Park holds race meetings most Friday nights throughout the year, but summer time is especially wonderful with day light savings to see you into the last race. This is a must to do with your friends! We are very excited about the 2014 BMW NZ Polo Open that kicks off early next year; our flip cover showcases some handsome polo players relaxing on a gorgeous Camilla Rug from Designer Rugs. Read all about what to wear and how to behave at the polo on pages 12 to 17. So in order to look the part, have a look through our tips and tricks. Shoes -You may be standing on grass all day. So unless you want to spend the day sinking in the ground, forget about stilettos and opt for heeled wedges, glamorous flats or sandals. When choosing footwear make sure it is comfortable. Dress - Clothing really depends on the weather, but Polo Matches tend to be a little windy. Stay away from short dresses, as you want to avoid showing anything that does not need to be seen. Kaftans are often a crowd favourite; why not pair this with a sophisticated pair of pants or tights. The rule to remember whilst choosing an outfit is ‘If you’d wear it to a nightclub, don’t wear it to the Polo or the races’. nterislander Summer Festival is a quintessential Kiwi day at the races with live music, free kids entertainment and good ol’ country racing action to enjoy with friends and family! Over forty sensational events will take place at some of the most picturesque racecourses nationwide from Boxing Day 2013 until 8 February 2014. Interislander Summer Festival will bring a celebration of summer to town – providing a great way to catch up with everyone in a fun and relaxed environment. Family picnics, deck chairs, shorts, jandals and chilly bins – it’s a classic Kiwi summer’s day out. There’s something on-course for everyone to enjoy – kids will be spoilt for choice with all day entertainment and on-track events between races, leaving mum and dad free to kick back, relax, enjoy the atmosphere, local food and a chance to study the raceform. And this year something unique for the Canterbury Jockey Club as they conduct their January raceday at Ashburton in the heart of rural Canterbury. Marketing Manager Chris Rowe says their Riccarton Park course is unavailable due to reparation work so the Club has embraced this opportunity. “We have a significant race on the programme so finding a way run the day was important and the Summer Festival concept should be ideal for Ashburton as well”. The Club has undertaken several initiatives to make it easy for Christchurch people to attend. “We have an overnight package at $129 which includes bus and accommodation plus a day trip option at $39, something to make the ‘away trip’ a bit special”, says Rowe.

eauty Guru and Musician Petra Rijnbeek sat down with Eye Magazine to tell us about her latest television venture with YES SHOP on Sky TV Channel 23. Petra, please tell us about your latest role with YES SHOP on Sky TV. YES SHOP on Sky Channel 23 was the vision of New Zealand television producer legend Alistair Duff. He wanted to provide everyday New Zealanders with a range of affordable lifestyle products. He identified that many lifestyle products in New Zealand come with a hefty pricetag and has sought to provide a solution with YES SHOP. The YES SHOP is very much a kiwi community based show that has been designed especially for New Zealanders. A huge part of the show’s success stems from its partnership with well established and reputable KD Media Ltd which owns six of the top performing

shopping channels around the world. Another key point is that the YES SHOP has its own warehouse filled with its own stock, so products can be supplied immediately to customers. The YES SHOP set is located in Central Auckland with a beautiful fresh set. We have seven presenters who each bring their individual television presenting skills to the table. I’m absolutely thrilled to be working alongside the other six presenters MarnieOberer, Mike Puru, Tracey Donaldson, Karen Teague, Richard Lambert and S J Lee. I’m often referred to as the ‘Beauty Guru’ because of my 20+ years experience in hairdressing, styling & makeup, and because of my role as Creative Director with L’Oreal for nearly a decade. On the YES SHOP I have a large focus on beauty products which are sourced from places such as Switzerland, Sweden, Korea and also New Zealand, but I’m also involved in the cooking side as well which I love. Cooking has always been a passion of mine and I love
discovering the new and exciting kitchen products! Petra, you are also a well regarded New Zealand musician. Please tell us where we can find you at the moment. I have always loved music and for many years had the dream to sing. At the age of 30 I made the decision to turn my dream into reality and embark on a career in music. I sing each week at Marvel Grill Restaurant in Auckland’s popular Wynyard Quarter. On Friday nights, the music is fun, dancing and pop style, while Sunday afternoons it’s more of a jazz, blues, soul style. I also sing regularly at private functions, weddings, concerts and product launches. Highlights have been singing at the Atamira festival at The Cloud and writing the song for the Max Fashions campaign. I’ve also had the pleasure of singing with Joe Cocker and opening for Renee Geyer this year.
You are well known for your signature vocals. What inspires you to sing? And what can New Zealanders expect from you over the next 12 months. Wow, that’ flattering. I do think it’s my tone that sets me apart but there is so much talent in NZ it’s hard to stand out when your not the standard NZ sound but I keep plugging away. I have managed to make a small mark in the world of Jazz and Blues. Live music is back in vogue so its a good time for the industry. And I hope to have something very special to share with New Zealand soon – the release of my first solo album – my best story ever! You have done a remarkable job of tackling FMS (Fibromyalgia) while achieving all you do, tell us more about your maintenance of FMS. I was pushing my body to the point of destruction, so after a very enjoyable and rewarding career in the beauty game I knew I needed to slow down. Although there is no cure for FMS, there are things you can do to alleviate symptoms and live a better quality life despite the chronic pain and fatigue including rest, boundaries and doing what you love. I visited a life changing Usana Health Retreat called Sanoviv in Mexico, where I was fortunate enough to meet Dr Myron Wentz of Usana and Denise King (Martin Luther King’s daughter). The trip represented a period of healing for me and I gained many skills to manage my FMS. I still have many difficult days but I have learnt to accept the ups and downs of the condition and now embrace the beauty of having more space in my life. Eye Magazine talks to the ‘Mr Yellow Tree’ Singer and Songwriter.
H
e performed at the 30th, then again at the 35th so it was only natural that Auckland singer Phil Madsen was chosen to perform at the now famous Antoine’s 40th Anniversary Celebration, held recently at Shed 10. He wowed the crowd with a musical tribute, performing hits from the 70’s, 80’s, 90’s and today. He wrote and produced the four part show that had guests dancing in their seats and calling out for more. It was a class act that people are still talking about. Recognised for his impressive vocal range, and having recently won ‘Top Male Vocalist’ at the New Zealand Variety Artist Awards, Phil has performed at some of the most auspicious events in the country - from private functions for the rich and famous, to concerts with top New Zealand orchestras. He’s been a regular star at Coca-Cola Christmas in the Park and brought the house down at Sky City Starlight Symphony with his performance of Queen’s ‘Bohemian Rhapsody.’ The second youngest in a musical family of eight, Phil has been performing since the age of four. He’s shared the stage with some of the biggest names in the business including Air Supply, Cher, David Copperfield, Hank Marvin, Hootie & The Blowfish and The Pointer Sisters - and the list goes on. Phil’s self-produced first album ‘Mr Yellow Tree’ was released in 2011, and the selection of original tracks reflects his melodic, upbeat take on life and showcases his impressive diversity as a singer-songwriter. His single ‘Dancing on the Moon’ was a finalist at the Apra Silver Scroll awards. Last year Phil released an animated music video for ‘Dancing on the Moon’ which received over 100,000 views, and was selected by Air New Zealand to feature on their inflight entertainment selection. “Air New Zealand loved the video the first time I showed them and were the first in the world to screen it. It was a proud moment,” says Phil. “The song got a second life with the release

of the video and seemed to resonate with both young and old. The views just kept climbing.” So what does the next twelve months hold? Phil will be busy performing at shows throughout New Zealand, and has several overseas bookings, but will still find time to support his favourite charities, as well as squeeze in some writing and studio time. How do you save yourself from eating the bad carbs after a night drinking? I just want to feel good every day so I attempt to drink way less than the old days but a great lunchtime cure is good old sweetcorn during summer, which is hard to beat, and a lot better for you than the bad stuff. What inspired you to dedicate your supermarket and your life to healthy, organic food? People have got to realise life is not a dress rehearsal. You are quite simply what you eat. Cancer is increasing everyday and there are so many chemicals allowed in food. We have to wake up and say no to all this crap. If you don’t spend the money now on good food you will spend it later on hospital bills. The human body is an amazing machine but like every machine you need to put good fuel in it to get maximum life out of it. Don’t get too technical will all the science just eat large volumes of good fresh organic fruits and vegetables and let your body’s immune, blood and enzyme systems do the rest to restore your body to maximum

vitality. Good fresh organic produce preferably eaten raw everyday is amazing for you. If you are sick and tired of being sick and tired try it for a week. You won’t believe the results. What is the 5 top healthy items you will have in your fridge or cupboard over summer? Look, I am pretty simple. I’ll make sure to have lots of organic salads and vegetables. I make sure to have organic meat for my friends because they love it and good pasta is a must. We drink fresh mint tea from the garden and also have been known to have the odd wine and beer. We heard you have a super juicer. What do you juice? I have the Norwalk Juicer and it’s a beast of a machine. It weighs in at a beefy 16 kg and it has a 1.5-ton press that gently extracts all the minerals out of the juice pulp and also gives you a high fibre but pulp free juice. I juice silver beat, spinach, green peppers and granny smith apples together as my green juice. Also, carrot and granny smith is really great too. If you had to pick one food item only to eat for the rest of your life what would it be? Probably apples. YUM! What will you be promoting in store over summer? Hopefully organic watermelons, capsicums and blueberries. Our Cos lettuces and our avocados are to die for too! At the end of the day I want New Zealand to be totally organic so I will do everything in my power to push organics like giving the growers more money but keeping my prices down. Merry Christmas.

What Does ‘Toning Up’ Actually Mean? By Melissa-Anne Smit from 101 Fitness Tone up (adverb) to make or become more vigorous, healthy, exercise tones up the muscles.
I
often hear: “I don’t want to build muscle I just want to tone up”. Interesting that the dictionary says to “become more vigorous”. Clients often tell me: “I don’t want to bulk-up, I just want to tone-up”. I even remember myself saying this years ago – but do we really know what we mean? So what is toning? For women, toning up is what naturally happens to our bodies when we incorporate a muscle building or 25 minute resistance session into our fitness regime. Toning can only happen if we build the muscle first – this new muscles will then start using the excess fat fuel (because muscles burn more calories) and the layer of fat will slowly disappear from our bodies. This will then bring the defined muscle to the surface giving us a tones physique. There is no
need to strip away the fat layer if there is no toned muscle underneath. Some women have more muscle tone than others, and everyone will build tone muscle to what their bodies are naturally programmed for, given the right exercise. So next time you think “I want to tone up for summer”, I hope you’ll remember that you are actually saying “I want less body fat and more lean muscle underneath” – and that you don’t get that by swinging light weights around for hours – you need something vigorous that will build muscle. We have to effectively condition our muscles through resistance training. For men exactly the same applies – you’ll just build bigger muscles because of your testosterone levels which allow you to stimulate more muscle growth than women. So, toning up can only happen if we build muscle below our layer of fat. The toning
up bit happens as the end result of muscle building up and fat burning down. Toned arms and abs appear when the excess layer of fat has started to disappear and the muscle definition comes to surface. I have a friend who always says, that if something doesn’t go your way - there must be something better around the corner. Over the years, I’ve adopted this mantra, and found that for the most part – there usually is something better around the corner! The concept relates to being in the flow of life. When we’re in the correct flow, we’re able to move through life gracefully, accepting events that take place around us and ceasing the need to control every minute detail of our lives. Psychologist Mihaly Csikszentmihalyi has written the popular classic book ‘Flow – The Psychology of Optimal Experience’ and while the book may seem a little dry in places it does record a number of famous investigations of “optimal experience”. key point to take home, is that what makes any experience genuinely satisfying - is a state of consciousness called flow. And so rather than REACTING to outside events, we can instead train ourselves to INTERPRET outside events, gaining greater control of our inner experiences and an improved quality of life. I’m pleased to report that I’m now spending less time on social media and while I had to lock my sons’ MacBook Pro in a cupboard, he’s spending less time on Minecraft battling terrible things in The Nether. N
orthland boy Paul Jeeves of Bayleys in the North knows Real Estate like the back of his hand. He has built a career on doing what he loves and found success on an international scale. But this Northland boy knows exactly where home is and nothing beats a backyard like his. Eye Magazine caught up with property expert Paul to find out what there is to know about Real Estate in the North. When did you first become involved in real estate? I have been involved with the real estate and the construction industry all my life. I grew up in a Residential construction family and was closely involved from the age of 15. Are you a local Northland boy? I am a fourth generation Northlander on both sides of the family tree. My wife and two of my three children were also born in Northland. I grew up with Northland as my backyard and Northland has always been the place that I call home. How has the Northland market changed over the last two years? The Real Estate market in Northland has been one of gradual improvement over the past couple of years. The current Real Estate
climate in the Far North is one of optimism, which has become evident with the increased volume of sales across the region. Because of the diversity of markets in the Far North the increased sales has been marginal in some regions (Paihia, Kaitaia) and more significant in other regions (Kerikeri, Mangonui). The market improvement can be attributed to a number of factors including confidence in the economy and the effects of the Christchurch and Auckland markets, however one of the biggest factors is that the Far North offers value for money. You have had some impressive overseas success overseeing multi-billion dollar projects in Dubai and Ireland and the US. How was that experience for you? Rewarding. I have been very fortunate to have had these opportunities and it has always been my philosophy to take the most from every experience. Having the opportunity to live and work in Europe, the Middle East and the United States has afforded me the chance to grow personally and to gain perspective. I try to build on each experience and take those lessons forward and hopefully add value to each new endeavour. What brought you back to Northland? When all is said and done there is no place

like home. Northland and New Zealand offers a beauty, a temperament and a lifestyle that cannot be found anywhere else in the world. iving in Whangarei all his life and having previous generations who were some of the original early settlers in the Whangarei District, David Sinclair stands for the Northland Regional Council. Also managing director of two companies, Killer Prawn Restaurant and McMorrissey’s Irish Pub, David provides a younger, fresher and more enthusiastic outlook on issues within the area and is committed to ensuring the growth of Northland whilst protecting its environment. Eye Magazine recently got the chance to have a chat with David Sinclair himself. How are you enjoying your role? I was initially taken by surprise at the amount of reading required and the multitude of words it takes to state the obvious, however, having settled in I am now beginning to enjoy my new role and have every confidence that I will be able to fulfill my ambitions and be a positive influence on proceedings within the Northland Regional Council. When did you decide you wanted to run for council? 6 years ago I campaigned to be elected

to the Whangarei District Council and was not successful. This year I decided that a position within the Northland Regional Council would enable me more scope to become involved with regional economic development, it would also enable me to assist in environmental issues and help maintain standards. If you could describe Whangarei in one sentence, what would you say? Whangarei, I love it here! What do you love about Whangarei and its surroundings? The coast, the many beautiful, picturesque beaches, hills covered in native bush and walking/running tracks in abundance. How do you maintain being a councillor and managing director of the Killer Prawn Restaurant and McMorrissey’s Irish Pub? I have great staff, many of whom have been on the team for over 12 years. Whilst settling into my council role has required a number of sacrifices, both on my part and theirs, I have the utmost confidence that we can settle into this new challenge without
compromising either role. I’ve found that my time is not my own as much. What is the best piece of advice you have been given? Never answer a complex media question outright, rather, take the opportunity to call them back with the answer after you’ve “done your homework”. Secondly, a phrase from a poem my parents gave me on my 21st birthday by Rudyard Kipling: “If you can talk with crowds, keep your virtue, or walk with Kings – nor lose the common touch”.

Fisher’s Paradise ‘Fish for the people’ in Aotearoa

ack in 1926 renowned American author and angler Zane Grey waxed lyrical about the saltwater and freshwater game fishing he experienced in New Zealand, writing “Tales of an Angler’s El Dorado” to document his adventures here. Eighty-odd years later, New Zealand remains an angler’s paradise with worldclass saltwater and freshwater fishing. Recreational fishing is hugely popular in New Zealand with over 800,000 Kiwis fishing for food and fun every year. Fishing’s a big part of our lifestyle, often a family affair, and participation levels are growing. Even New Zealand’s most populous city boasts superb snapper fishing right on its doorstep, contributing towards Auckland being named one of the world’s ‘most liveable cities’. Many popular marine species can be taken from the shore, or from small boats and kayaks. Larger craft are able to venture further offshore and include charter boats that offer visitors and locals

a cost-effective way to catch a feed of fish. Sea fishing licences are not required, but regional catch and size limits are enforced. Visitors come from all over the globe to sample New Zealand’s deep-sea and inshore fisheries, as well as it’s trout fishing, regarded by many as the best of its type in the world. For most Kiwi anglers – and many visiting fishers – snapper is the number one target. In the north of the North Island it is an iconic catch. Snapper grow to at least 15kg, but any fish approaching 9.1kg (the old 20 pounds) is considered a trophy. Many such fish are taken every year, even in the Hauraki Gulf, with a third of the New Zealand’s population living around its shores, where fishing pressure is relatively high. Other important recreational species include record-size kingfish (up to 50kgplus), blue cod, tarakihi, kahawai, trevally, John dory, hapuku and bass, flatfish, sharks, various tuna species and four billfish species.
Most of New Zealand’s popular recreational fish species are managed for sustainability, so the quality of fishing, if not quite what it was in Zane Grey’s day, remains mostly good. However, commercial overfishing, population pressure, land use changes and access and environmental issues pose growing threats to the future wellbeing of our fisheries. Funded by donations, recreational angling watchdog and advocacy group LegaSea, the public outreach arm of the New Zealand Sport Fishing Council, is committed to its goal of abundant fisheries and a healthy marine environment. LegaSea supports and promotes the interests of non-commercial fishers for the conservative management of New Zealand’s precious fisheries resources, to ensure there are abundant fisheries for future generations of Kiwis. LegaSea has advocated on behalf of ordinary New Zealanders whenever a public fishery was in danger, including during the recent furore over proposed changes to recreational bag and size limits for snapper in the Bay of Plenty and east coasts of Auckland and Northland, which resulted in 47,000 public submissions to the Ministry of Primary Industries. A Day Out with Ultimate Charters By John Eichelsheim
I
recently joined Ultimate Charters’ skipper Alex Mahon and a group of enthusiastic anglers aboard the 9.1m aluminium sportfisher Red Skin for a six-hour charter chasing snapper, kingfish and kahawai amongst the work-ups beyond Tititiri Matangi Island. Red Skin is one of the newest additions to the Ultimate Charters fleet. She’s based at Pier Z in Westhaven, Auckland and with a 325hp diesel engine, she is a fast boat purchased specifically with trips of this nature in mind. Red Skin can fish a maximum of eight anglers, plus crew, but more usually sets out with a skipper and four to six anglers. Lower numbers ensure uncrowded fishing and more individual attention from the crew. Fishing tuition is a big part of the experience, explains Alex, who loves introducing anglers to lure fishing, an important aspect of fishing work-ups out in the Hauraki Gulf. “Many of our customers have never tried soft baits or Jitterbugs [heavy metal jigs with octopus skirts and assist hooks], but a few minutes of coaching and the right gear quickly sees them into fish,” said Alex. Ultimate Charters can supply all the gear if required, as well as bait, and Red Skin was well provided with good-quality fishing tackle
and a selection of lures in hot colours. Our crew included a father and son team of regular charter fishers trying workup fishing for the first time. They were keen to learn about Jitterbugs and to their credit stuck with lures throughout the day, despite unusually challenging fishing. Like me, the rest of the crew had brought their own gear, but with our commitment to fish lures in the work-ups, the bait-fishing gear was stowed in favour of the boat’s good quality lure-fishing tackle. Alex kept us supplied with Jitterbug lures fresh from their packets, changing sizes and colours until we found the ones that worked best. Work-up fishing is exciting! On a good day gannets rain from the sky like missiles, shearwaters flutter, splash and dive, dolphins smash into bait schools and whales often make an appearance. Under the sea’s surface lies the reason for all that frantic activity: huge schools of anchovies and pilchards pushed to the surface by voracious snapper, kahawai, kingfish and other predators. Sharks and dolphins often get in on the act as well. It’s a fisherperson’s paradise and one of the best ways to experience it is to take a charter with an experienced skipper like Alex. While work-up fishing can be spectacular, it can also change from day to day. One day

the fishing can be superb and the next it can be tough going and unfortunately for us, we struck it on a tough day. Fishing the day before had been great, with huge workups and hundreds of boats, including Red Skin, taking advantage of the fishy bounty. A day later our charter found workups too, but they were short-lived, sporadic and spread over a large area, so Alex had to work extra-hard to put us onto fish. So that’s what he did, repositioning the boat regularly and chasing down the most promising activity. And the hard work paid off as one by one we put fish in the bin. The highlights included a personal-best snapper for one of the crew and a good-sized kingfish that joined snapper and kahawai in the icebox. Six hours flies by when you’re having fun and our charter was over all too soon. The fishing hadn’t been easy, but getting out wide chasing work-ups is an experience in itself and by the end of the trip we’d caught some quality fish. No-one would go hungry.

W
hat is it about blokes and toilet cleanliness? I am reminded of an old joke which was a sign by a urinal: “Stand closer; it is shorter than you think”. Where I work, on a brand new day, when the cleaners have been in overnight, there are days when it’s a complete mess after about 11 o’clock. I’m not talking about the odd flick-induced urine equivalent of blood spatter; there are Kermadec Trench deep pools of urine on the floor and you need waders (remember galoshes?). That’s when it gets really awkward. You know at golf, when you’re putting and you stand awkwardly to avoid standing on some guy’s line (and you miss the putt and swear that you’ll never do it again)? It’s like that in men’s toilets a lot of the time; you have to place your feet carefully to avoid collecting waste product and traipsing it all through the office carpet when you return to your toiling. It’s even more problematic when the only dry area is all on one side of the urinal, so you have to stand side on to the wall, which is all well and good until someone comes through the door and wonders why you’re showing him a profile of Mr Floppy. One cause of the problems (Lake Taupo in the toilet and unwashed hands) is that a lot of blokes would like to think they can achieve an empty bladder from what you might call: a “hands-off approach” in which the evacuation is completed without contact between hands

and brains. First of all, what happens when you put a fire hose on the ground and turn the tap on? Exactly. Secondly, a consequence of the hands-off approach is that many a bloke will fold up his tent and walk out without feeling the need to introduce cleansing water to the hand or hands (the plural for the members of the West Indian cricket team, mon …. aaaaaaarf). I’m sorry but, in my book, such an approach doesn’t relieve blokes (aaaarf) of the risk of urine contamination and consequent need to wash their hands. If the floor of the office urinal is anything to consider, that yellow stuff flies everywhere and I just don’t see how you can say, with the necessary certainty, that there was no risk of spillage onto your hands. STOP PRESS – it’s just occurred to me: canny readers will have realised that I must be talking about those who have been circumcised since (I think) the “others” can’t possibly adopt a hands-off approach … can they? Look, let’s leave this detour on the foreskin effect on urination on the basis that, Jewish or not, you should wash your hands after doing no. 1’s - don’t be lazy. That’s bad enough but it gets worse, so much worse. I’m talking about the guys who come out of the cubicles and don’t wash their hands. Remember Jerry Seinfeld when the chef came out of cubicle, adjusted his collar and said to Jerry that he was going to cook his meal, before walking off without washing his hands? Well, there was a guy on my floor who, after a cubicle visit, would turn the tap on at a slow dribble, flash 2 fingers under the dribble and consider his hands washed. You can guess that he certainly didn’t wash his hands after no.1s. It was as a result of that last guy (and the ensuing dirty door handles) that we developed what is called the “H Manoeuvre” (and, most certainly, would never shake his hand). This is a sacred rite in our office but, for the sake of humanity, I am passing it on. On a visit to the urinal, the following is the accepted and acceptable practice: 1. The door to the toilet on entry must not be touched by any part of the hand which could come into contact with Mr F. Pull your sleeve down over your hand, if necessary. 2. Since so many users never flush the
urinal, it is quite necessary for some to double flush, so, using your index finger knuckle, push the flush button upon first confronting the urinal. 3. Do your very best to piddle in the urinal and not at the urinal. 4. Zip up, with usual degree of care. 5. You may push the flush button with any part of your hand since, after all, your hand is going to be cleansed soon. Out, damned spot … 6. Tap on. Your hands can’t get any dirtier, so use what you like to turn it on and enjoy this moment of freedom. 7. Soap on hands is mandatory. A good lather like a brain surgeon before an operation is desirable. 8. Hands under water. It is imperative, to be able to assert a full H manoeuvre (if challenged), that, while you wash off the soap, your hands stay under the water for the entire first verse of “Happy birthday” – you may hum under your breath. 9. Paper towels – 3 is an appropriate number but this recommendation is subject to point 10. 10. Hands should be quite dry. 11. Using paper towels, grasp door handle and, as you open the door, you should be considerate to others and use the paper towels to give the toilet door a bit of a clean. 12. Hold door open with foot and drop paper towels into the rubbish bin, which you have placed beside the door for just this reason. Since I’m thinking about toilet matters, there is an unwritten rule needing recording on the subject of cubicle courtesy. If you are sitting on the dunny and you hear someone come in, just sit there quietly until the interloper has had the chance to get out of Dodge. “Hold all tickets”. Don’t start farting or grunting. Certainly, do not start dropping a load because we’re all going to get embarrassed. The sound of toilet paper across hairy bottom is also a bit of a no-no. Since anyone worth his salt is going to try to get out as fast as possible (in case you start breaking the unwritten law), just sit there quietly until you hear the door close. Alright?

Where would you take your wife for a romantic getaway? Queenstown is a magical place and we love to visit it when we can. What’s your favourite NZ restaurant? I always prefer my wife’s home cooked meals to any restaurant! She is a marvelous cook! Also, our friend Margaret from Waiheke makes the best pork roast I have ever tried! I took Lindsey Proctor over for a roast and he was too embarrassed to ask for seconds – then he was kicking himself later as it was so yummy! When did you decide that you wanted to be a butcher? When I left school there wasn’t many opportunities for ‘not smart’ people. I had

to get a job and being a butcher was it! I’ve worked my way up and loved every second of it, success and fame hasn’t changed me. I overheard a friend talking about me the other day, he said “I’ve known Peter for over 40 years and he is still exactly the same bloody idiot that I first met all those years ago”…what a lovely compliment! Who do you regard as your role models? I’ve never had a role model, I’ve based my work ethic off my parents who have a good, honest work ethic and are just great people. What is the best advise you have been given? Tim Bickerstaff told me when I first started advertising on radio, “Don’t get your head up your ass. I’m still the star of the show”. If you were prime minister for the day what would be the first thing you would change? I would make it compulsory for every school in New Zealand to make Rugby league available for all students to play Who is the most interesting person you have met and why? Over my career I have got to meet so many
wonderful people. Earlier this year I got to meet the legend himself Andre Agassi. I spent some time with him and later that evening Andre had to make a speech; it started like this, “I love coming to New Zealand…... (long pause) and f#@K I love that mad butcher!” More recently I got to meet some inspiring young New Zealanders called Liam and Bradley, both battling cancer. They are both in recovery now and I was very proud to meet them! If you had to choose an alternative career what would it be? I am happy as a sand boy with what I’ve chosen for my life. It has been an education and a privilege to do what I do. I’ve met some amazing people and made wonderful life long friends. Highlight of your year so far? This year I was lucky enough to be able to take my two daughters, my granddaughter and my beautiful wife to Europe for five weeks, We got to spend some real quality time together and make some memories to last a life time. Where do you want to be in 5 years time? Alive! I just got out of hospital last week and want to make the most of life!

t doesn’t get any more exclusive, glamorous and entertaining than the finals day of the BMW Polo Open 2014, in the picturesque small-town of Clevedon, just out of Auckland. Polo is known as the sport of kings and New Zealand’s event is no less prestigious, with the who’s who of society, the most luxurious of brands, majestic pure bred ponies and of course teams of fit, strong and successful polo players. Doing a bit of research on how a game of polo works is key to making the most of your day. People live for this sort of competition, so faces get serious when the riders come out. In a nutshell, a game of polo is played by two teams of four players. It is broken into chukkas which are about six minutes long and there can be up to eight chukkas per game. The aim is to score goals by hitting the white ball with a mallet in between the two goal posts at the end of the triple-rugby-sized field. Not as easy as it sounds when galloping horses are in the mix.
Players are ranked for skill and range between negative two-goal (the lowest competitive ranking) and 10-goal (New Zealand’s highest is 8-goal player John-Paul Clarkin). Professional players often change ponies in between each chukka as it’s very tiring for the animals. It is a high-intensity, high-skill and high-calibre game and you won’t see anything like it anywhere else. What a way to spend a day! How to Book... Polo Essentials... What to wear... A day at the polo is a classy affair and deciding what to wear is more important than you may realise. The dress code is very sophisticated, and not at all trashy. Short or tight skirts and fascinators are a no-no and because you’re on grass, stilettos are impossible. The best advice is to start from the feet up. For ladies, a flat sandal, espadrille or chunky wedge in a block colour is a great place to begin. Comfortable shoes are essential as a large part of the day will be spent standing on grass or a paddock of sorts watching the games. You’ll also be stomping the divots at some stage, so you’ll need a good chunky sole. The dress or skirt should be longer than mid-thigh and think big fun florals and prints, something that will make you stand out from the crowd. Natural fibres like silk, linen or cotton help too as breathable fabric is ideal for the heat. Think tasteful and chic fitted shifts, check out Ted Baker for some great styles, and remember if you would wear it out to a bar or club on Saturday night, don’t wear it to the polo. Moving upwards again, keep your fascinators for the races; instead opt for big hats that keep the sun out and the style in, or a fun unique headpiece by the likes of New Zealand Milliner Natalie Chan. Straw boaters and wide-brimmed straw hats also work well. Keep accessories to a minimum and aim for bold block colours that match with your outfit, in bracelets and chunky necklaces, or some beautiful colourful jewels from the likes of Orsini. A hold-all bag is essential for the day out, as it will need to have everything in it from sunblock to a cardigan/shawl if the weather changes. Think a classic leather shoulder bag from Coach, nothing too glitzy or over the top. Overall, aim for simple sophistication with a touch of fashionable flair. For the lads... For the gentlemen, a good pair of jeans, moleskins, cotton chinos or Bermuda shorts are suitable for the bottom

half. For the top, a crisp and well ironed cotton or linen shirt in light colours will work well, as well as polo tees with collars. Aim for the Rodd & Gunn look and if you’re in need of some help, they’re the place to go for quality advice and clothes. On the feet go for leather boots, loafers, or canvas boat shoes, but no winkle pickers, sports shoes or jandals please. Sunglasses and a hat are essential. Expect to see... A glass of water between each drink is the best way to keep a hangover at bay and also to avoid getting too tipsy. Have a bottle of chilled Perrier on hand to help with that. For those partial to a celebratory glass of bubbles on such an occasion, you can’t go past the iconic yellow and delicious flavour from a classy stem of Veuve Clicquot. A classic cocktail is a must for the polo sidelines as well, and you don’t get much more English country manor style than a glass of well mixed Pimms with fresh fruit to satisfy your taste buds. And for the lads who are more inclined for an ice-cold beer, Heineken is the drink of choice. Associated with elite sports world-wide, there’s nothing quite like one to quench your thirst. What to drive... For those who think it might be safer to trust someone else to drive them home than take the risk themselves, there will be buses to and from Auckland city centre on the day of the finals. For the others of you who are more inclined to arrive in style, a BMW is the car of choice. kid but was a bit overwhelmed by the whole thing. After my second child I returned to the family farm near Clevedon, and found a whole lot of great, down-to-earth people out here. I realised that the polo was a sport that had so much potential in the New Zealand market and needed someone to get behind it. That was me, and I’ve been involved for three years now. Have you ever played polo? I decided to try my hand as an adult last year for the winter season with a couple of other girls for the Maiden’s League. It was great fun and I loved it. New Zealand is one of the very few places around the world where this sport is accessible to the public.

Having worked around the world on luxury yachts, and as a top magazine sales person in New Zealand, taking the polo on board was the next big task for her. We talked to her about the polo on the day of the cover photo shoot... How did you get into Polo? I fell in love with the romance of it at a young age. I started riding at the age of four years old, and gave polo a go once when I was
What are you most looking forward to about the polo this year? Watching it all come together is going to be really exciting. This project has a personality that lives and breathes for me - I often refer to it as my third child. I can taste, feel and touch it, so it’s nice for other people to get involved with the sport even if it’s only for one day. Why should people come to watch? There are some great people watching on the day and then of course there are the horses (not to mention the riders!). There was the usual exciting buzz to their chic Takapuna showroom enhanced by the thought of Christmas and holidays around the corner. This quarter Trinity showcases a range of leading edge finishes and product options for the home which ooze luxury and glamour. This isn’t about making a quick seasonal change to the home, but rather about making long term design decisions. On trend is understated sparkles, metallics and rich precious metals translated into hard surfaces which can be used in bathrooms and kitchens. Metallics have been around for many years, but it’s new to see to create spaces with richness and texture and that play with light. There are now a number of interesting and innovative products and materials available for hard surfaces. Trinity is excited about a new Laminex product – Laminam. This is a super thin 3.5mm ceramic slab. It
comes in sheet sizes which can be cut and configured to fit your space. Its being used for beautiful finishes in showers, bathrooms, splashbacks and kitchen island fronts. t’s the show that’s got it all – bright lights, big stars, fireworks and dancing girls, boy bands and Santa Claus – and since 1994 it’s been a highlight on the Kiwi Christmas calendar, regularly attracting massive crowds to the Auckland Domain to celebrate the start of the festive season at the popular free outdoor event. From an idea presented to Coca-Cola 19 years ago to the iconic event Kiwis now know, love and recognise as the “happiest night of the year”, Coca-Cola Christmas in the Park has now achieved the status of the “must do” show. From Hayley Westenra to Midnight Youth, Op Shop to Hollie Smith, Coca-Cola Christmas in the Park gathers some of the most talented, most popular and most able to belt out Christmas carols, popular favourites and current hits to the biggest audience in the nation – via the live shows and TV3’s top rating 90 minute special. Reflecting on the last twenty years event producer John Searle recalls countless highlights including the arrival of Santa by flying fox, by sailboat, by fire engine, in a giant waka, on a tractor and via many other

There’s been giant bouncing balls and vintage bi-planes, snowfalls, dancing dogs and tissue artists. The stage is now double the size of the original and at 22mtrs high, one of the biggest Christmas trees in the land, complete with jumbo decorations, is assembled at every show by a giant crane. Each year the crowds are awed by the spectacular fireworks that light up the sky as the stage fills with the entire cast performing their final numbers, usually a medley of hits guaranteed to have the audience on their feet cheering for more. And then it’s all over for another year. But during that time auditions are held, contracts are signed, the programme is designed and cast, costumes created and once again

All the World’s a Stage A childhood influenced by the performing arts and a creative family is behind award-winning designer Hilary Skinner’s lifelong love of fabrics.

I
t was a childhood exposed to costumes and stage sets, and memories of her father’s paint effects in her childhood home, that award-winning interior designer Hilary Skinner credits for her lifelong passion for fabric and a design career spanning 30-years. “I was brought up in a home where interior design was always considered. I recall my father creating paint effects when I was quite young and my mother used many wonderful fabrics in all the houses we lived in,” explains Hilary. “We were involved in the performing arts and so costume and stage sets also raised my level of awareness.” Hilary sources many of the fabrics she uses from Atelier Textiles – New Zealand’s leading boutique importer of the world’s finest luxury furnishings. Owner of Atelier, Rebecca Bowering has been in the business for 17 years and works closely with Hilary to bring the magic of fabrics to transform a space

design philosophies, some of which have been a source of inspiration. “I’ve loved the work of Madeleine Castaing, whose use of exotic patterns and brilliant colour is both brave and magical and Andree Putman is to be admired for her wonderful sense of simplicity. The work of both these women is certainly eclectic and that’s something that resonates with me.” Her all-time favourite fabrics come from the furnishing house of Rubelli. A career highlight so far has been visiting the Rubelli showroom on the Grand Canal in Venice and having the opportunity to explore its rich array of sophisticated fabrics. Hilary’s connection to Atelier has also enabled her to meet designer Dominque Kieffer, whose fabric is now under the umbrella of Rubelli and whose organic linens and cottons are among Hilary’s favourite materials with which to work. A room she designed for an Auckland client has reinforced her credentials as one
of the country’s best interior designers. This year Hilary won the inaugural New Zealand House & Garden Interior of the Year prize for a Devonport living room she transformed using textiles designed by brands proudly stocked by Atelier. The sofas in the room were loose covered in Dominque Kieffer linen and in the same home Hilary designed a study and upholstered the walls using Jim Thompson silk. “The room was soft and beautiful by day but took on a whole new, breathtaking ambience at night,” says Hilary. “The luxurious use of textiles far transcends any effect that can be achieved by using either wallpaper or paint.” She’s pleased more New Zealanders are waking up to the benefits of using luxury fabrics in their design projects. “Many people find textiles rather expensive, which they can be, but they are often a work of art in themselves. I think

Many countries now have legislation in place regarding strict controls around the legality of imported wood which is a milestone to stop exploiting environmentally valuable forests like the virgin tropical rainforests of places like South America and Africa. Such statutes were implemented in Europe in March 2013, Australia in October 2013 and are currently in place in Japan. New Zealand is going through the process at the moment, as is China. There’s no doubt this will be the way of the future as the health of the world’s forests are purported to have a direct correlation to global warming. In answer to the problem of sourcing high quality eco-responsible wood, Verda has developed a number of pre-finished outdoor products engineered with Radiata pine from plantation forests in New Zealand. The products provide superior performance and weathering characteristics, and come with great environmental credentials - perfect for high quality outdoor applications. The key point to take home is that this wood comes from plantation forest, and not rainforest. The

s the Wynyard Quarter grows ever popular, the most recent new comer, Baduzzi has made itself right at home. The Sicilian word for ‘meatballs’, Baduzzi is the latest collaboration between Michael Dearth and executive chef Ben Bayly, also of The Grove fame. The inspiration comes from Michael’s Italian-American childhood and the pair cleverly capture the essence of a restaurant inspired by family and tradition. Bringing their obvious passion for great food, wine and company to the forefront they create an unpretentious, friendly dining experience. Eye Magazine got a chance to talk to Michael and Ben about summer and some of their favourite things. What will you be cooking this summer on the BBQ? Michael: In summer, friends are always coming and going and bbq’s create a great platform to enjoy a meal with friends, as you can create something from absolutely anything; steaks, chicken, lamb, even sardines.

This is actually the birth of inspiration and the secret of Baduzzi – we imported a Spanish wood fire grill bbq specially and it’s truly a one of a kind piece of equipment. Ben: I’m a huge fan of the big green egg bbq; it’s a ceramic, charcoal bbq so it gets really hot really quick. This summer it’s all about charcoal and some of my favourite meals are super simple, lamb lollipops or slow bbq chicken. What was your favourite meal that your parents cooked for you? Michael: My mother always had a pot of sauce going on the stove, with home made sausages or meatballs always on the go. I come from a big litter so it was “eat or be eaten, where we had what we liked to call the “meatball confessions” – an audit on how many meatballs you’d eaten. Ben: There’s one meal that I always have whenever I go back home, my father makes Weiner Schnitzel crumbed veil with lots of lemon. He pairs it with broccoli, cauliflower and cheese sauce with a pedestrian mash with peas and butter.
If you had to pick one item of the Baduzzi menu as your favourite, what would it be and what wine would you match it with? Michael: I’d pick the eggplant parmesana, my mother’s recipe which is always a reminder of home. I’d pair it with a wine from Sicily; Cos Pithos Rosso – Which is aged in clay amphora and made using 4th generation wine-making techniques Ben: Our Beetroot tagliatelli with fried paua, smoky bacon and quails eggs. I’d match it with a Peregrine Pinot Noir. What wine should we drink over the summer? Michael: I like the weird and wonderful, especially since there are so many varieties of wine available. For example, if you travelled from the North to the South of Italy you could go through an entire year sampling a different type of wine everyday and you would sill not get through all the types of native bottles/wines. I love trying new wines and getting out of that comfort zone and this is one of our main jobs at Baduzzi, to try and
get people to try different culinary wines. Ben: My favourite type of wine is Mcon Lugny Saint Pierne, a white Bourgogne and it goes with seafood, chicken and crustaceans, perfect for summer. What are some quick and easy summer cooking tips? Michael: In summer you don’t want to be spending a lot of time in the kitchen, so I believe it’s all about early preparation and working smarter not harder. I always have a bag of prawns in my freezer, as you can do so many things with Prawns – I could cut them up really fine, mix with some sweet corn, cilantro and chili and I have easy prawn burgers. For dessert you could peel a pineapple back team it with some vanilla pods, making for an easy dessert. I also love to put stone fruits on the bbq as it picks up the flavours of the bbq really nicely. Ben: Something I created recently was what I called smoky banana bread; I made a banana cake in a loaf tin, popped it in the bbq with the lid down and let it cook while I ate the rest of the food I’d prepared. t is said that perfume and music evoke memories and they do but I believe the same can be said for wine (as long as not too much of the lovely elixir is imbibed!) I can track my bubble drinking history back through time. The seventies (yes I’m old) there was Montana Pearl, Blue Nun and Cold Duck… memories of boyfriends, parties and sometimes hangovers. I moved on to imported South African bubbles which were for romantic dinners – until there was an embargo and it couldn’t be purchased in New Zealand. Many cases of French Champagne at my sisters wedding and yes I do remember the wedding. One of the best weddings I have been to! Not forgetting my wedding, and of course the Christmas holiday season. What would any celebration be without bubbles? I have in the past thought of low alcohol wine in the same light as decaffeinated coffee, I didn’t really see the point of it. More recently I have come to really appreciate this as an option. t is said that building a house involves making around 35,000 decisions. Given that, you have to ask what deserves priority and factor in many variables, realising that without clear direction a design process can easily veer off track. When you meet David Ponting, you quickly catch a dose of the passion he has for working with clients to shape those priorities into truly exceptional homes. Design Director of Ponting Fitzgerald, David allows clients to become the art director in an architectural exploration knowing they have full control. “They realise we’re not self-possessed artists, we’re simply the creative team in partnership with them.” What gets David excited is the energy of the client and the character of the land. “My agenda is to get people to engage with why they brought it, be it the history, landscape or view – and ensure the outcome immerses the client amongst the most poignant elements of that environment.” He is currently seeing his latest Central
Otago project come to life within the stunning Bendemeer development. His client had “looked at everything and left no stone unturned” in her search for a suitable location for her new home. “When she discovered Bendemeer she was excited to find land with such raw Central Otago character and undulating topography,” he says. Covenants at the exclusive 130 hectare property, near Lake Hayes, are quite unique and less restrictive than the most of the Wakatipu Basin. “Bendemeer is a beautiful environment and there is an extra layer of design flexibility allowed through its resource consent which is not as constrained as other areas around Queenstown,” says David. “The site is just so raw and rugged and yet uplifting, with a jagged horizon that demands respect,” he says. With an inspired brief of ‘let the land speak’, he spent two days onsite with the client discussing how the contemporary house would engage with the land. “Together we wanted the house to reflect the elements

of land and sky, resulting in splitting the house into two forms: one buried in ground, the other skimming above it.” David imagined the house representing two gliders, one grounded, the other in flight - frozen in the motion of transition, a dual expression connecting both air and earth. “Obviously there were the pragmatic elements like excavation, structural efficiency and insulation; that there were secure private areas and sun filled spaces that engaged with the sky and alpine peaks. There is also a garage/workshop burrowed into a hill and completely covered by grass,” he says. “This makes the house a sculptural form with functional elements buried behind it, so well hidden your focus is left with how the architecture melds with the sweeping wind or craggy rocks.” A reflecting pond surrounding the house also mirrors the stunning mountain views, reinforcing the respect for the horizon. “We received overwhelming approval for our project, living proof that the
Bendemeer covenants work well. The Latest from Man O’War Vineyards

ye Magazine has the pleasure of catching up with Head Winemaker, Duncan McTavish of Man O’ War Vineyards on Waiheke Island. Duncan who is also CEO of the Vineyard has been running the operation for 5 years now and brings a wealth of industry knowledge to the position. He’s only ever worked with wine and studied wine-making exclusively at Lincoln University. Man O’ War Vineyard is nestled on the shores of Man O’ War Bay at Waiheke and extends across more 175 acres, with over 76 separate vineyards. This is a large operation that is responsible for a third of the island’s wine production and covers approximately one fifth of the island. The vineyard is also part of a four thousand acre farm with sheep and cows. Man O’ War Vineyard has been around since the late 90s but has recently gained a keen reputation for its Syrahs and Chardonnays, most notably their
Dreadnought Syrah and Valhalla Chardonnay. Duncan tells us that ‘chardonnay’ as a variety has come back into vogue in recent times and that their Valhalla is on its way to becoming an iconic New Zealand wine. These days people visit the vineyard asking for wines by name rather than by variety. Duncan tells us, “people are much more open to exploring new wines today.” When asked what drives Duncan each day, he told Eye that he thrives on the challenge of creating something new on an annual basis. No two years are the same and so there’s not a single successful formula to apply. It’s about continually increasing your knowledge base, with a good broad overview of growing and seasons. You need to understand the impact of weather, how the fruit responds, the influence this has on wine-making and then have the skills to know a good wine. Duncan tells us that the glamorous industry is also filled with interesting characters…
2014 looks to be another exciting year for Man O’ War with a string of great vintages and the release of a number of new wines. In particular, look out for some new Syrahs that are set to hit the market. Man O’ War has had an amazing spring and are looking forward to a hot dry summer ahead. 2014 also sees the second year of their new Homestead Tasting Room which lies just metres away from the shores of Man O’ War Bay. There is no doubt, this is a special spot. Over the summer months, it’s not unusual for there to be 500 boats anchored at the sheltered Bay, which is ever popular with the local boating community. At the time of writing, they have just won the elite ‘Australasian Leading Villa Resort’ award (World Travel Awards – International awards event). They are about to attend the prestigious travel award ceremony in Australia. In the 2012 World Travel Awards, they won New Zealand’s Leading Resort. They’ve also been awarded numerous awards and certificates for excellence including many Travel Magazine awards. General Manager Callum is passionate about his role at the helm of this leading resort. He studied with the Swiss Hotel Association’s International College of Hotel Management in Adelaide, where he gained his double diploma in international hotel management and diploma cullinare d’Hotelier Le Cordon Bleu. He has worked in many prestigious hotels around the world including the Savoy in London and the Hyatt group. He met his wife, Derrin Farnell, while working at the Solitaire Lodge in Lake Tarawera. Derrin also works with Eagles Nest, employed as the resort’s exclusive personal trainer. Callum has a background in national Jet Ski racing with international aspirations on the horizon, but Derrin too is a star in her own right, having previously won New Zealand personal trainer of the year. She has gained a reputation as a top trainer at the resort and international guest’s book consecutively just to spend time with her. She will work

in with guests home trainers, preparing ongoing fitness programmes for them following their vacation. So, what does Callum see on the horizon for the world-class New Zealand resort? Well, at the time of writing, Callum is preparing for another busy year of travel ahead, promoting Eagles Nest at international trade events. He says that meeting with key agents in their markets, plays an important role in the promoting of the business. Key emerging markets at the moment are Russia, Dubai and China with the USA continuing to provide a steady flow of guests to the resort. Callum says that when overseas, he is selling New Zealand as a destination, the Bay of Islands as a region, and Eagles Nest as a property. Eye Magazine asked Callum his ‘pick’ from the wide range of activities available at the resort. After all, this is New Zealand’s marine playground! There are adventure sports, horse trekking, cycling, golf, fishing and many more activities to choose from! Callum’s pick was a combination of activities; start your day with a personal chef prepared breakfast before boarding your own private helicopter for the day. The initial flight is from one of Eagles Nest’s three helipads up to the Cape Reinga region via Northland’s spectacular harbours such as the Whangaroa Harbour and the Rangaunui Harbour. Guests will also pass across some beautiful beaches such as Coopers Beach,
Doubtless Bay and the famous Ninety Mile Beach where guests have the option of landing and exploring by quad bike. From here, guests are flown up to Cape Reinga for a private tour taking in the lighthouse, Tapotupotu Bay and the Te Paki stream with its giant sand dunes. A spectacular gourmet picnic lunch is served and those feeling adventurous can sled down the dunes. The flight back takes in Parengarenga Harbour and Great Exhibition Bay where guests have the option to land and take a swim or simply stroll along the spectacular beach. From here, guests are flown to one of the inner islands where they are met by the spectacular 50 foot sailing catamaran “Cool Change”.
