Essential Ingredients Oats Onion Green Chilies Carrot Potato Capsicum French Beans Green peas Tomato Ginger Garlic paste Garam Masala Turmeric Powder Mustard seeds Split Bengal Gram Cumin seeds Asafetida Fresh Coriander leaves Oil Curry Leaves Lemon juice Salt
: 1 cup, dry and roasted for 2 mins : 1, finely chopped : 2, halves : 1 medium, peeled and chopped in small dices : 1 medium, peeled and chopped in small dices : 1 medium, chopped into small pieces : 3-4 chopped : ½ cup : 1, finely chopped : 1 tsp : 1 tsp : ½ tsp : ½ tsp : 1 tsp : ½ tsp : A pinch : 2 tsp, finely chopped : 1 -2 tsp : 1 sprig : 1 tsp : To taste
Preparation
Heat 1 tsp oil in non-stick pan, add the mustard seeds. When it starts to splutter, add the Bengal gram and cumin seeds and sauté till fragrant. Add asafetida, finely chopped onions, chilies and curry leaves and saute for a minute. Add ginger garlic paste , chopped carrots, potatoes, capsicum, beans, peas and saute for another 5 mins on medium flame. Place a lid on the pan and cook for 7 mins till the vegetables become soft. Add chopped tomatoes and cook for 5 mins. Add the turmeric powder and Garam masala and mix. Add salt to taste. Add 3 cups of water and bring to boil. Add the oats to it and mix. Cook on low flame for 3 mins. Turn of the flame and add lemon juice and mix. Garnish with fresh coriander leaves in a serving bowl.
