Preparation •
Slice the vegetables into pieces of 3-inch length, and boil them till half cooked. Soak the tamarind in little water. Pressure cook the dhoor daal for 10 minutes. Allow it to cool, and then mix it in a mixer. Keep the mix aside. Take the tomatoes, grind them in a mixer, and strain the juice in a strainer. Repeat the procedure 2 times, until the pulp is totally extracted.

Mix together this tomato juice and the grinded daal. Add salt, turmeric powder, red chili powder. Take a pressure cooker, heat oil add mustard seeds, jeera, methi , asafetida, grated ginger, curry leaves. Add the besan flour. Keep the gas on low flame, continuously stirring the besan flour until it becomes golden brown in color.

Add the prepared tomato juice mix to the besan flour. Put the gas on high flame. Allow the kadhi to get 2 – 3 boils. Then, turn the flame low. Keep stirring on low flame, so that the kadhi does not stick to the sides of the cooker. Add the boiled vegetables to it.

Let the kadhi cook for around 30-40 minutes. Add the tamarind water, and garnish with coriander and mint. Turn the gas on high flame, remain for 5 minutes and switch it off. Remove from fire and serve with rice.
