Autonomous Communities of Spain
We continue our series with a look at Extremadura and Galicia Spain is divided in 17 parts called autonomous communities. Spain has fifty smaller parts called provinces.
Extremadura
Extremadura is far removed from Spain’s crowded costas – both in terms of kilometres and character. It’s one of the country’s most sparsely populated regions, roughly the size of Belgium, and its distance from the coast has kept mass tourism at bay. Relatively few tourists, Spanish or foreign, venture to this western region of the Iberian Peninsula sandwiched between Portugal and the central plains of La Mancha. It has little appeal for the package holidaymaker but for anyone seeking a real “Spanish experience” off the beaten track Extremadura offers an unforgettable journey of discovery. It’s an unspoilt land of lush forests, majestic mountains and vast agricultural plains peppered with towns and hamlets seemingly frozen in time. With its wealth of World Heritage sites and protected nature reserves teeming with wildlife, Extremadura is a place which beckons history buffs, explorers and the curious wanderer

determined to dig deeper into Spain beyond the golden sands of the Costa del Sol. The region is divided into the two provinces of Caceres in the north and Badajoz in the south. The fascinating Roman city of Merida is the regional capital though Badajoz is the biggest city in terms of inhabitants. A visit to both is a must for those interested in the rich history and culture of a region once regarded as a great prize by the Roman empire as well as by Moorish sultans and Christian conquistadors. Evidence of Extremadura’s turbulent past oozes out of the walls of countless castles, palaces, medieval monuments and awesome aqueducts which have weathered the many man-made and heaven sent storms of centuries. Merida is home to some of the world’s most important Roman remains including a magnificent bridge with 64 granite arches (the longest bridge ever built in Spain by the Romans). Other must-see sights include the fivemile aqueduct, the amphitheatre and the theatre where summer plays are still staged, more than 2,000 years after it was constructed under the orders of the Roman general Agrippa. The beautiful walled city of Badajoz, near the Portuguese border, is also well worth a visit with its mighty Arab citadel and wealth of museums and historic sites. Extremadura’s many other

The Sky Above Trujillo, Extremadura historic treasures include the walled city of Caceres, founded by the Romans in 34 BC, and nearby Trujillo with its Moorish castle, glorious central square and monument to its famous son Francisco Pizarro, who conquered Peru. Beyond the fortified walls of these historic cities you’ll find vast tracts of unspoilt countryside which attracts flocks of bird lovers from all over Europe and beyond. One of the most extraordinary sights in the whole of Spain is that of the region’s large population of storks which build their huge nests on top of everything from palaces and telegraph poles to church spires and convent roofs. The region is believed to be home to more than 11,000 storks along with many rare and protected bird species which flourish in Extremadura’s nature reserves. Monfrague National Park is one of the important raptor reserves in Europe and is the best place in Spain to go for a glimpse of black vultures and the rare Spanish Imperial eagle. The park is a hikers’ paradise and has been declared a protected zone by UNESCO because of its rare flora and fauna, including the endangered Iberian lynx.
Galicia
Gorgeous Galicia in the far north west corner of Spain is one of the country’s greenest, loveliest and most unusual regions. It boasts one of the longest and most unspoilt coastlines of any Spanish region, offers some of the finest seafood in Europe and is home to what is probably

the world’s best known walk – the hallowed Santiago Way. The people of Galicia are proud to speak their own language which is more akin to Portuguese than it is to the main Castilian language (Castellano). And they safeguard their ancient culture and heritage which binds them more closely in many ways to their fellow Celtic “nations” such as Ireland and Cornwall than to neighbouring Spanish regions. Galicia is a land of rolling mists, green hills and an abiding belief in witchcraft and Celtic folklore – all a far cry from the sunny Spain known to millions of foreign package holidaymakers. Low key tourism has started to develop here in recent years but despite Galicia’s wealth of glorious beaches, the holiday hordes have largely been kept at bay because the sea’s too cold and the weather’s too unpredictable. This relatively little known corner of the Iberian Peninsula attracts history and culture buffs, bird watchers, water sports enthusiasts and Spanish holidaymakers keen to escape the crowds and blistering summer heat of the southern and eastern costas. Walkers and cyclists from all over the world make the Galician capital, Santiago de Compostela, their destination when they embark on the famous “Camino de Santiago” trodden by pilgrims for more than 1,000 years. The city is teeming with places of historic interest including the world’s oldest hotel – the Hostal Tres Reyes Catolicos which was originally a pilgrims’ hospital and

Monfrague National Park is now one of the most exclusive hotels in the government owned chain of Spanish Paradors. Other historic towns in the region include La Coruña, where you’ll find the world’s oldest working lighthouse – the Tower of Hercules which overlooks the meeting point of the Atlantic Ocean and Cantabrian Sea. This was the departure point for the ill-fated Spanish Armada which set sail for England in 1588 and was repulsed by Sir Francis Drake’s navy. The old quarter of Lugo, to the south east of La Coruña, is completely encircled by defence walls built by the Romans 1,700 years ago. And in the town of Ourense you can visit the Roman spa baths, where the water is a constant 70 degrees centigrade all year round. Exploring Galicia’s 200 kilometre coastline is an absolute delight if you’re not in any particular hurry and you’re the sort of person who abhors the over development of the cluttered holiday costas. There are magnificent long, sandy stretches which are never over-crowded (even in high season), Norwegian-style fjords and sheltered inlets with shallow lagoons for safe and relatively warm bathing. The coastline is peppered with pretty fishing ports and superb fish restaurants offering the sumptuous fresh seafood for which the region is so famous. Local delicacies include the rather gruesome-looking “goose barnacles” known as percebes of which Hollywood actor/director Woody Allen is said to have remarked: “How can anything so ugly be so delicious?.” Many a foreign

visitor bold enough to try one has concluded that the taste of these particular barnacles is quite as gruesome as their appearance!
El Camino de Santiago
If you visit Galicia you will see countless people walking towards Santiago, often with backpacks and hikers attire. Many of these travellers also carry a long staff with a shell attached to the handle and look some what dishevelled. These people are holy pilgrims making the centuries old pilgrimage known as “el Camino de Santiago” (the way of St. James). These pilgrims, usually Catholics, travel to Santiago from all over the world.It is the route, or routes, that they follow that are known as “El Camino” and the oldest one starts in France some 900km (650 miles) from its ultimate destination. The serious pilgrims, who walk the entire route, can expect a journey of approximately one months duration, with the added bonus of very sore feet. Many do however claim to have a revelation on achieving their goal and there is often much camaraderie between fellow travellers. The objective of the “el Camino de Santiago” pilgrimage is to reach the large cathedral at Santiago de Compostela and visit the shrine of the apostle whose tomb rests there. Over the years however two other rituals have evolved. One is the touching of the statue of St. James behind the main altar, for which there is normally a long queue and a significant wait. The

Santiago de Compostela In the early days of the pilgrimage, the pilgrims would depart from their own homes and take whatever course was the least hazardous, but today whilst the same holds true, there are a number of designated routes which most pilgrims elect to follow. For the successful “perigrins” (as they are called in Spain) there is also a register that is signed at the walk’s completion at the pilgrims office in Santiago. On completion of the pilgrimage and arrival at the Cathedral for mid day mass, the travellers can expect a service steeped in history and tradition as well as religion. Amongst other things a massive incense burner called a “botafumeiro” is swung above the heads of worshippers in Santiago’s cathedral transept filling the building with incense and creating an ambience that has barely changed over the centuries. . Recognising the traditionally dressed pilgrim is easy as most walk with a long crooked staff topped with a clam shell. These large scallop shells adorn not just the staffs of the pilgrims, but also appear in image form on buildings, gates and other structures and are a bit of a mystery. They are actually called the “Saint Jacob’s Shell” (Viera in Spanish) and their contents are a culinary delicacy throughout Spain. Records of their existence and connection to both Santiago and the pilgrimage date back to the 11th century, but the reason behind their significance has been lost. One suggestion,

which seems highly plausible, is that the shell could have been used by a traveller as a scoop for water or a small food dish. The shells are large and hard and also have a semi serrated edge, so they may well have functioned as some kind of universal tool. In 2003 the British art critic, Brian Sewell, had his rather unreligious Camino pilgrimage from France to Santiago broadcast on British TV. Prawn Cakes with Sweet Chilli Dip Preparation time: 10 minutes Cooking time: 10 minutes Serves: 4
Method
Place the prawns in the bowl of a food processor and blend until minced. Place in another bowl. Add the deseeded and finely chopped chilli, the ginger, coriander and lime juice. Mix together. Form into 12 little patty shapes, pressing together firmly. Heat the oil and gently cook the prawn cakes for a few minutes each side, until lightly golden and piping hot. Serve with lime wedges and sweet chilli sauce for dipping.

Ingredients: 300g (10 1/2oz) peeled frozen prawns, defrosted and drained 1/2 – 1 large red chilli 5ml (1tsp) root ginger, finely grated 15ml (1tbsp) fresh coriander, finely chopped juice of 1/2 lime 10ml (2tsp) sunflower oil 30ml (2tbsp) sweet chilli sauce
Cook’s tip Make the prawn cakes up to the end of step 2. Place on a baking sheet, covered, in the fridge. This helps firm them up and leaves only the quick cooking to do when your guests arrive.

Vegetable Chili (for those chilly evenings) Preparation time: 15 minutes Cooking time: 15 minutes Serves: 2
Method
Heat the oil in a large saucepan and fry the onion, carrot, courgette and chilli powder for 3–4 minutes. Add the remaining ingredients and bring to the boil. Simmer gently for 10 minutes or until vegetables are tender. Serve with freshly cooked long grain rice. Ideal to freeze: simply defrost in a saucepan with a little splash of water.

Ingredients: 2.5ml (1/2tsp) vegetable oil 1 onion, chopped 1 carrot, diced 1 courgette, diced 10ml (2tsp) mild chilli powder 100g (3 1/2oz) canned sweetcorn, drained 410g can red kidney beans, drained and rinsed 400g can chopped tomatoes 1 chicken stock cube
Cook’s tip Double up the ingredients and freeze portions for when you are really feeling lazy.
