We are off on a well earned Christmas break for a few weeks - and will be back with our January issue, perhaps a few pounds heavier and ready for all those good intentions of the new year. We will be bringing you a detox special just incase you did over indulge or just want to start the new year on a healthy path. On a more somber note spare a thought this Christmas for any elderly neighbours living on their own and try and take the time to visit them to make sure they are ok. Cantabria

The tiny autonomous region of Cantabria in northern Spain is one of the Iberian Peninsula’s hidden jewels, largely overlooked by the mass market tourist industry. Most British holidaymakers arriving by ferry at the Cantabrian capital of Santander only catch a glimpse of this gorgeous region through the car window as they pass through en route to one of the costas. It’s true you can’t count on Cantabria if endless days of summer sun are your top priority as the weather here is as unpredictable as it is in the UK. The Cantabrian climate supports a breath-taking array of landscapes ranging from spectacular mountains bedecked with flowerfilled meadows to lush green valleys and dense forests which provide a safe haven for some of the country’s few remaining wild wolves and bears. Take time out to explore the many delights of

Cantabria and you’ll soon see why the Spanish royals chose Santander as their summer retreat in the early part of the 20 th century. The region boasts some superb beaches which never suffer the over-crowding of Spain’s eastern and southern coastlines. Visit one of the highest mountains in Europe, the Picos de Europa, which soars at more than 7,500 feet at its rugged peak, and only a three-hour drive from Santander. Along the way there are numerous villages to visit, breathtaking gorges to see and tiny inns at which to dine. This area is one of the best places in Spain for hiking, climbing and various other outdoor pursuits. And for those more interested in history and culture, Cantabria is a treasure trove of medieval villages, ancient monuments, grandiose architectural gems and well-preserved prehistoric cave paintings. Lovers of nature, wildlife and adventure sports come from all four corners of the globe to spend a week or two in the Picos de Europa national park which includes the highest peaks in the Cantabrian mountains, interspersed with dramatic canyons and long, narrow gorges. The rivers abound with salmon and trout; wild cats, chamois and red deer roam the mountainsides while eagles and goshawks rule the skies. continued on page 8

Torre del Friero, Picos de Europa

The park is home to two glacial lakes and some of Spain’s deepest caves. Near the enchanting ancient village of Potes you’ll find the 6 th century Sanctuary of St Toribio the reputed home of the largest remnant of the cross on which Jesus died. One of the region’s most precious assets is the Altamira Cave, to the west of Santander, where huge multi-coloured paintings dating back 15,000 years adorn the ceiling. Access to the cave is severely restricted these days but you can see a recreation of the paintings at the national museum in the nearby village of Santillana del Mar. The village is well worth a visit in its own right as it’s one of the best preserved medieval towns in Spain. The Cabarceno Nature Reserve, ten minutes drive from Santander, is one of Cantabria’s top visitor attractions with its safari park where endangered exotic creatures from five continents roam semi-wild. The park is home to more than 500 species including elephants, leopards, bears, lions and kangaroos.

Santander, the capital of Spain’s Cantabria region in northern Spain, is blessed with a physical beauty. The beautiful Spanish town

provides a great base for touring the highest points of Europe. The city’s location, sandwiched between the mountains and the sea, forced it to develop in a peculiarly elongated manner along the northern rim of the bay which opens out to the Cantabrian Sea. There are two distinct sections to the city - the busy commercial centre where you’ll find the majority of shops, historic buildings and tourist attractions, and the beach resort of El Sardinero which is home to the city’s classiest suburbs, the former royal palace and the casino. City lovers interested in history, architecture, culture or simply the discovery of what lies beyond the harbour of one of Spain’s major ports will not be disappointed in Santander. With many historical buildings in the city such as the Catedral, the Palacio de Pronillo and the Edificio del Banco de Espana as well as many galleries and museums, such as the Galeria El Cantil, the Museo Taurino and the Museo de Bellas Artes, even the most seasoned traveler will be spoilt for choice. Unfortunately, Santander is missing a very old portion of town. Due to a fire in 1941, the town lost much of its city center and with it an ancient heritage. continued on page 10

The Bay of Biscay, where Santander is situated, is undoubtedly one of the city’s most recognizable icons. Its calm water changes color depending on the wind, creating a kind of magical element. The bay takes visitors to the Barrio Pesquero a fisherman’s area lined with gritty taverns and earthy restaurants. Farther along is a street called the Paseo de Pereda, locale of Pereda Gardens, known as the “lungs of the city.” Reina Victoria - Santander’s main avenue and among the most beautiful maritime avenues in Spain, takes visitors to the Magdalena Peninsula, home to the English-style Magdalena Royal Palace. For the more adventurous, the best way to get an orientation of the city is to board one of the bay’s sightseeing motorboats and take a trip to the lighthouse of Cabo Mayor, located on high, steep cliffs. The bay also hosts The International Festival Hall of Santander, a modern, box-like building that has the capacity to drop a wall and open itself to the bay for performances held under the stars. Some of Spain’s most talked-about sites are on Santander’s doorstep. For instance, Bilbao, in the Basque region - take a day trip to the Guggenheim Museum in Bilbao and sample the tapas called pintxos. Discover why King Alfonso XIII chose this part of the Cantabrian coast as his summer retreat in the early part of the 20th century. Many fine buildings sprung up to accommodate the needs of the aristocracy and court officials who followed the king and his queen, Victoria Eugenia, wherever they went including an impressive casino and the Gran Hotel. Or simply enjoy the many modern day tourist attractions which include two zoos, a planetarium, several good museums and a dynamic arts centre which hosts various cultural events throughout the year and is the venue for Santander’s major international festival in August.

Castilla-La Mancha

Castilla-La Mancha encompasses the vast plains of central Spain – a land of fairytale castles, wine and the famous windmills immortalised in Miguel Cervantes’ Don Quixote (the best selling book of all time after the bible). It’s the producer of Spain’s best cheese, Manchego, and it’s a region which boasts the world’s biggest vineyard. To date Castilla La Mancha has remained virtually untouched by tourism, attracting only a sprinkling of Don Quixote devotees and “cultural tourists” keen for a glimpse of the real Spain away from the crowded costas.

Changes to Castilla La Mancha

But all that’s about to change with the announcement that this sleepy section of central Spain is to be the new home of a Las Vegas style gambling and leisure complex. It’s one of the most ambitious projects of its kind that Europe has ever seen and it has put the world spotlight firmly on a previously overlooked region which, until now, had only a 400-year-old novel as its major claim to fame. Construction work on the project was due to start towards the end of 2006 in the province of Ciudad Real, 190 kilometres south of Madrid. It will include a 50,000 square foot casino, a luxury hotel with 850 rooms, a 30,000 square foot spa centre, a shopping mall and a 3,000 seat theatre. Due for completion in 2008, the scheme is the brainchild of American entertainment giants Harrah’s who operate several luxurious gambling centres in Las Vegas including Caesar’s Palace which is probably the most prestigious casino resort in the world. So if you want a taste of that magical “Man from La Mancha” country where most foreign tourists fear to tread, you’d better get there fairly quickly! Two new motorways and a planned international airport are included in the project which looks set to propel Castilla-La Mancha into the ranks of Europe’s top entertainment centres. Meanwhile this autonomous region of Spain offers a number of rather less glitzy attractions for the first time visitor to explore. Don Quixote fans will want to see the huge windmills of Consuegra (the “giants” against which Cervantes’ hero went into battle) and Dulcinea’s House in the village of Toboso (Dulcinea was the object or Quixote’s platonic love). In the villager of Esquivias you can visit the well-preserved 16th century house where Cervantes is believed to have written part of his masterpiece. The region is littered with ancient castles, many of them dating back to the days of Moorish domination.

Toledo - The former capital of Spain and now the regional capital, has been declared a World Heritage Site by UNESCO. The place is a spell-binding concoction of grandiose medieval buildings, Moorish mosques, winding cobbled streets and ancient city walls. The city was the spiritual home of the famous Greek-born painter El Greco and the modest 16 th century house where he lived has now been turned into a museum of his work. Sunshine Magazine 11

- This enchanting medieval city, declared Patrimony of Humanity by UNESCO, is surrounded by landscapes of incredible beauty. Among the town’s most remarkable sights are the famous “Hanging Houses”, the Gothic cathedral and the Museum of Abstract Art. In its surroundings there are several fantastic natural preserves, among them Ciudad Encantada, the “enchanted city”, where erosion has created most bizarre forms.

- Major attractions are the Mudejar style church Santa Maria la Mayor, the 15th century palace Duque del Infantado, the Moorish town-walls and bridge over Henares river, from 10th century. In the province of Guadalajara the medieval town Siguenza, with its great fortress and cathedral, is worth a visit.

Turkey with all the trimmings Roast Turkey

Serves 10 For when only a turkey will do at Christmas, try this recipe. The ricotta/cream cheese keeps the turkey moist 115g / 402 ricotta or cream cheese 115g / 402 unsalted butter, softened 1 tbsp chives, snipped 1 tbsp flat-leaf parsley, chopped 2 tsp tarragon, chopped 1 tsp chopped chervil, chopped 1/4 tsp sea salt 1/2 tsp ground black pepper 6.3kg / I4lb fresh turkey, room temperature 1/2 lemon 1/2 onion 3 garlic cloves 1 sprig thyme 1 sprig rosemary Extra butter, for greasing foil Combine the ricotta and butter with the herbs, salt and pepper. Gently ease the skin away from the flesh at both ends of the turkey by carefully inserting your fingers between the skin and the flesh. Push the butter mixture under the skin easing it over the whole bird - be careful not to puncture the skin. Put the lemon, onion, garlic and herbs in the cavity of the turkey. Lay a large sheet of turkey foil over a

baking tray lengthways, leaving enough at each end to wrap over the turkey, lightly butter the foil. Repeat this exercise with another sheet, this time across the roasting tray. Lightly butter once again. Put the turkey breast side up in the centre of the foil. Wrap the turkey completely in foil. Put in a pre-heated 230ºC/450°F/gas 8 oven and roast for 20 minutes. Reduce the heat to 200°C/400°F/gas 6 and cook for a further two hours. For the last 20-30 minutes, fold back the foil to allow the turkey to brown, baste occasionally using the juices from the pan. Make sure the ends of the drumsticks are still covered. Check with a meat thermometer to see if the turkey is cooked by pushing it through the thickest part of the thigh; if it registers 70°C/150°F, the turkey is cooked. Remove from the oven and allow to rest in a warm place for the juices to settle and to make carving easier. Tip away the fat from the roasting tray and use the meat juices that remain as the base for your gravy. Serve with all the trimmings.

Perfect Roast Potatoes

Serves four-six 1.3kg / 3lb floury potatoes e.g. Kind Edwards (preferably all similar in size) Dripping, goose or duck fat, for basting About 2 heaped tbsp plain flour Salt and freshly ground black pepper 1/2 tsp soft thyme leaves, optional A few whole unpeeled garlic cloves, optional Pre-heat the oven to 200°C/400°F/gas 6. Peel the potatoes and cut into large, even-sized pieces. Put them in a pan of cold salted water and bring to the boil. Simmer for 10 minutes, then drain and return to the pan for a minute or so to dry out. Pre-heat a large roasting tin with 1cm (1/2in) deep dripping, goose or duck fat for a few minutes, until just smoking. Put the flour in a small bowl, season generously and add soft thyme leaves, if using. Put the potatoes in a colander and toss them in a handful of the seasoned flour. You’ll need to do this quite vigorously so the edges start to break up slightly. Arrange the potatoes, flat-side down in the hot fat and baste the tops, adding the garlic cloves at this point for a different dimension, if liked. Position in the oven and cook for 20 minutes before turning the potatoes over. Cook for a further 20 minutes, then pour off the majority of the fat. Cook for a final 20 minutes until crispy around the edges and a lovely golden brown.

Cumberland Sauce

Makes 850ml / 1 1/2pt This traditional English sauce goes well with cold cuts of meat too. It can be made ahead which improves the taste 4 blood oranges or oranges 2 lemons 3 shallots, finely diced 450g / 1lb redcurrant jelly 90ml / 3fl oz port 90ml / 3fl oz red wine 1 tbsp Dijon mustard 1/2 cinnamon stick 1/2 tsp ground ginger Salt and ground black pepper Peel the oranges and lemons with a potato peeler, cut the peel into juliennes. Blanch the peel and shallots in boiling water for five minutes, drain and set aside. Melt the redcurrant with the port and wine over a medium heat. Fold in the shallots, citrus rind, mustard, cinnamon and ground ginger and stir to combine. Cook over a medium heat for 15-20 minutes. Season to taste. Pour into sterilised jars and seal, this will keep for a few weeks.

Glazed Parsnips, Carrots and Shallots

Serves six Glistening, glossy vegetables are a must on the Christmas table and these are so easy to do, it’s a synch 450g / 1lb parsnips, peeled and cut into 5cm / 2in batons 450g / 1lb carrots, peeled and cut into 5cm / 2in batons 6 shallots, peeled 1 tsp thyme, chopped 3 tbsp olive oil 3 tbsp liquid honey 1 tbsp balsamic vinegar Salt and ground black pepper 2 tbsp parsley, chopped Pre-heat the oven to 190ºC/375ºF /gas 5. Put the parsnips, carrots, shallots and thyme in a bowl and toss with the olive oil. Put in a tray and pop in the oven, cook for 45 minutes, stirring from time to time. 15 minutes before the end of cooking, toss the vegetables with the honey and vinegar, season with salt and ground black pepper and return to the oven to finish cooking, turning from time to time. Just before serving, toss with the parsley.

Christmas Brussels

Serves eight-ten 675g / 1 1/2lb Brussels sprouts, trimmed 115g / 4oz unsalted butter 115g / 4oz smoked streaky bacon, cut into small batons 1 onion, finely chopped 1 tsp fennel seeds Crated rind of 1 organic orange 1 tsp soft thyme leaves 200g / 7oz ready cooked chestnuts, halved Salt and ground black pepper Cook the Brussels sprouts in boiling salted water for six minutes and drain. Heat the butter in a frying pan, add the bacon and cook over a medium heat until the bacon starts to turn colour. Add the onion, fennel seeds, orange rind and thyme and cook until the onions start to colour, about eight-ten minutes. Add the drained sprouts and chestnuts and fry until the sprouts start to turn golden and have a wonderful crusty exterior. Season to taste.

Put the segments from 3 oranges into a large jug and gently pound with a rolling pin. Add 400ml gin, 100ml lemon juice, 100ml sugar syrup, then top up with soda water and ice.

Christmas Champagne Kir Royale

If Champagne doesnâ&#x20AC;&#x2122;t appeal, use white wine instead for a standard Kir 1 part blackberry syrup 4-6 parts Champagne, to taste Mix and stir, pour into a Champagne flute.

Pretty Woman

Remember when Richard Gere told Julia Roberts that strawberries bring out the taste of Champagne? This is taking it one step further... 4 strawberries, destalked Champagne, to top Juice three strawberries, pour into a Champagne flute, top with the Champagne and stir. Garnish with the remaining strawberry.

Spice Route

Caramelise a wedge of orange on both sides on a hot griddle pan. Pour 5ml sugar syrup and 2 dashes of orange bitters in a large tumbler. Add 2 ice cubes and stir with a cinnamon stick for 10 seconds. Add 25ml tequila, stir. Add 20ml Kaklua and stir. Squeeze the caramelised range into the drink and drop into the galss.

1ooml / 3 1/2fl oz pineapple juice Juice of one mango, juiced in a blender 1ooml / 3 1/2fl oz lychee juice Ideally, juice your own fruit for extra flavour and purity or buy ready-made if time is short. Not all juicers can juice mangos as theyâ&#x20AC;&#x2122;re too fibrous so remove the flesh and destone, cut the flesh into chunks and blend with the other juices. Chill and serve.

Serves two 2 lemons 30oml / 1/2 pt water 1-2 tsp sugar, to taste i can Tango, orange-flavoured Slices of orange Squeeze the lemons into the glass of water, add the sugar and stir. Pour into a jug with the Tango and slices of orange, mix and pour into tall glasses. For an extra lemony flavour, try lemon-flavoured pop instead.

Kennellys Football Team Help support your local football team: Many people coming to Spain want to support a local football team and get involved in the local community. In the past we have had the choice of Mazarrón, Totana and Murcia teams but now that has changed as there is now a local football team on Camposol who are playing in a Spanish league. The Kennellys Bar on Camposol has an adult team made up of English players of varying abilities and with ages ranging from 16yrs to 52yrs!

princess named Pea. Despereaux’s interaction with a human thoroughly outrages the mouse community and he is sent to the dungeon, which is filled with rats. He meets the jailer, Gregory, who offers to save him in exchange for being told a story. Meanwhile, a servant girl, Miggery Sow (“Mig” for short), sees Princess Pea riding by on horseback. This gives Mig hope. Mig has ended up at the palace after being traded into bondage by her father in exchange for a hen, a handful of cigars, and a blood red tablecloth. Mig is set to work in the castle dungeons, where she meets Roscuro. She tells him that her greatest wish is to become a princess. Roscuro manipulates Mig into kidnapping Princess Pea, so that she will remain in the dark forever. The rats capture Princess Pea, and in attempting to save her, Despereaux has his tail chopped off.

Emma Watson The Tale of Despereaux is an upcoming computeranimated film directed by Sam Fell and Rob Stevenhagen. Based on the 2003 fantasy book of the same name by Kate DiCamillo, the movie is narrated by Sigourney Weaver and stars Matthew Broderick and Emma Watson. Slated for a December 19, 2008 release by Universal Studios, the film is rated G by the MPAA and was sent by Universal Pictures as a contender for the possibilty of being nominated for the Oscar for Best Animated Feature.

The Story:

The eponymous hero of the story is Despereaux, a tiny, sickly mouse with massive ears. He is born with his eyes open and, unlike his fellow mice, he is fond of music and honey. As such, he is unpopular and shunned by many of those around him. His name means “despair.”

Determined to rescue his beloved princess, Despereaux goes to the Threadmaster, who gives him a spool of thread to lead him back into the dungeons. Despereaux saves the princess and Roscuro’s tail is cut off. Despereaux and Pea remain close friends.

Hermione’s all grown up...Smart too! Emma Watson was born 15th April 1990, in Paris, France, daughter of Jacqueline Luesby and Chris Watson, English lawyers. Emma has one French grandmother, and lived in Paris until the age of five, before she moved with her mother and younger brother, Alex, to Oxfordshire, England, following her parents’ divorce. From the age of six, Emma expressed a desire to become an actress. By 10, she had starred in school plays, including Arthur: The Young Years and The Happy Prince. She had never acted professionally before the Harry Potter series. “I had no idea of the scale of the film”, she said in a 2007 interview with Parade magazine; “[if I had] I would have been completely overwhelmed”. In 1999, casting began for Harry Potter and the Philosopher’s Stone. Of importance to the casting directors were the lead role of Harry Potter and the two supporting roles of Hermione Granger and Ron Weasley, Harry’s two friends. Casting agents found Emma through her Oxford theatre teacher, and producers were impressed by her confidence. After eight auditions, producer David Heyman told Emma and fellow applicants Daniel Radcliffe and Rupert Grint that they had been cast, respectively, as Hermione Granger, Harry Potter and Ron Weasley. Emma’s debut as Hermione came in 2001 with Harry Potter and the Philosopher’s Stone. The film broke records for openingday sales and opening weekend takings and was the highest-grossing film of 2001. Emma was nominated for five awards for her performance in Philosopher’s Stone, winning the Young Artist Award for Leading Young Actress. A year later, Emma again starred as Hermione in Harry Potter and the Chamber of Secrets, the second installment of the series. Though the film received mixed reviews because of its pace and direction, critics were positive about the performances. The Los Angeles Times said Emma and her peers had matured between films, while The Times criticised director

Chris Columbus for “under-employing” Emma’s hugely popular character. Emma received an Otto Award from the German magazine Die Welt for her performance. In 2004, Harry Potter and the Prisoner of Azkaban was released. Emma was appreciative of the more assertive role Hermione played, calling her character “charismatic” and “a fantastic role to play”. Although critics turned away from Radcliffe’s acting talent, labelling him wooden, Emma continued to be praised; The New York Times lauded her performance, saying “Luckily Mr. Radcliffe’s blandness is offset by Ms. Watson’s spiky impatience. Harry may show off his expanding wizardly skills ... but Hermione ... earns the loudest applause with a decidedly unmagical punch to Draco Malfoy’s deserving nose”. Although Prisoner of Azkaban remains the lowest-grossing Harry Potter film as of January 2008, Emma’s personal performance won her two Otto Awards and the Child Performance of the Year award from Total Film. With Harry Potter and the Goblet of Fire (2005), both Emma and the Harry Potter film series reached new milestones. The film set records for a Harry Potter opening weekend both in the US and UK. Critics praised the increasing maturity of Emma and her teenage co-stars; the New York Times called her performance “touchingly earnest”. For Emma, much of the humour of the film sprang from the tension among the three lead characters as they matured. She said, “I loved all the arguing ... I think it’s much more realistic that they would argue and that there would be problems.” Nominated for three awards for Goblet of Fire, she won a bronze Otto Award and later that year, became the youngest person to appear on the cover of Teen Vogue. 2006 found Emma playing Hermione in The Queen’s Handbag, a special mini-episode of Harry Potter in celebration of Queen Elizabeth II’s 80th birthday.

Emma stars in the animated film The Tale of Despereaux, released this month. She is the voice of the character Princess Pea in the film, a children’s comedy which also stars Matthew Broderick and Tracey Ullman. In June 2008, Watson signed a contract, reported to be worth £3 million, to advertise with Chanel, a prominent French fashion house. She will become the public face of Coco Mademoiselle, one of the label’s perfumes, replacing Keira Knightley. Despite rumours that she had refused the final two Harry Potter installments, Emma did sign for the sixth and seventh films in March 2007.

The fifth film in the Harry Potter franchise, 2007’s Harry Potter and the Order of the Phoenix, was a financial success, setting a record worldwide, opening-weekend gross of $332.7 million. Emma won the inaugural National Movie Award for Best Female Performance. As the fame of the actress and the series continued, Emma and fellow Harry Potter co-stars Daniel Radcliffe and Rupert Grint left imprints of their hands, feet, and wands in front of Grauman’s Chinese Theater in Hollywood on 9 July 2007. Emma’s first non-Harry Potter role was in the 2007 TV film Ballet Shoes, as Pauline Fossil.She said of the project, “I was all set to go back to school after finishing Harry Potter but couldn’t resist Ballet

She explained the decision was tough as filming would continue to dominate her life for three to four years, but in the end “the pluses outweighed the minuses”. Filming for Harry Potter and the HalfBlood Prince, the sixth film, began in late 2007. Although Radcliffe and Grint have confirmed their commitment to acting, Emma has expressed uncertainty about her future. Speaking to Newsweek in 2006, she said, “Daniel and Rupert seem so sure ... I love to perform, but there are so many other things I love doing.” Emma’s extended family has grown as her divorced parents both have children by new partners. Her father has identical twin girls, Nina and Lucy, and a four-year old son, Toby. Her mother’s partner has two sons (Emma’s stepbrothers). Emma’s full brother, Alexander, has appeared as an extra in two Harry Potter films, and her half-sisters were cast as the young Pauline Fossil in the BBC’s Ballet Shoes adaptation. After moving to Oxford with her mother and brother, Watson attended The Dragon School, an independent preparatory school, until June 2003 and then moved to Headington School, an independent school for girls, also in Oxford. While on film sets, Emma and her peers were tutored for up to five hours a day; despite the focus on filming she maintained high academic standards. In June 2006, Emma took GCSE examinations in 10 subjects, achieving eight A* and two A grades; she was a target of friendly ridicule on the Harry Potter set because of her straight-A exam results. The following year, she received four A grades in her AS levels (advanced level examinations) in English, Geography, Art, and History of Art. Emma’s work in the Harry Potter series has brought her more than £10 million, and she has acknowledged she will never have to work for money. However, she has declined to quit school to become a full-time actress, saying “People can’t understand why I don’t want to ... but school life keeps me in touch with my friends. It keeps me in touch with reality”. She has been positive about working as a child actress, saying her parents and colleagues helped make her experience happy. Emma enjoys a close friendship with her fellow Harry Potter stars Daniel Radcliffe and Rupert Grint, describing them as a “unique support system” for the stresses of film work. Watson lists her interests as dancing, singing, field hockey, tennis, art, fly fishing, and donates to WTT (Wild Trout Trust). She describes herself as “a bit of a feminist”, and admires fellow actors Johnny Depp and Julia Roberts.
