QUINOA SALAD WITH ALMONDS , FETA AND SUMMER VEGETABLES A HEALTHY AND DELICIOUS SUMMER SALAD! Did you know that... Quinoa contains complete proteins beacuse it has the perfect balance of all nine amino acids essential for human nutrition. This type of complete protein is rarely found in plant foods, though common in meats. Quinoa also offers a good dose of fiber and iron.


PREPERATION TIME: 15 min COOKING TIME: 15 min SERVINGS: 6 INGREDIENTS

DRESSING

• 250 ml

Quinoa

• 30 ml

White wine vinegar

• 500 ml

Vegetable broth

• ½ lime

Le jus seulement

• 85 g

Feta cheese, cubed

• 125 ml

Roasted almonds, sliced

• 60 ml + 15 ml

Olive oil

• 250 ml

Cherry tomatoes, halved

• 15 ml

Fresh chives, chopped

• 1 petit

Red pepper, seeded and diced

• 15 ml

Fresh basil, minced

• 1 petit

Zucchini, peeled and diced

• 2

Green onions, diced

• Salt and pepper

INSTRUCTIONS 1. 1. Basil and chive dressing: Mix vinegar and lime juice in a small bowl. Gradually add olive oil with a whisk until the mixture is smooth. Add the chives and basil and stir. Season with salt and pepper as needed. 2. 2. Place the quinoa in a medium saucepan and rinse with water. Drain the water. Add broth and cook over high heat. 3. 3. Bring to a boil, then reduce heat and simmer uncovered, until the liquid is absorbed (about 15 minutes). 4. 4. Allow to cool and mix gently with feta, almonds, vegetables and dressing. Serve.
