SERVINGS: 6 INGREDIENTS • 3

large sweet potatoes, peeled and diced

• 1 litre

chicken or vegetable broth (low in sodium)

• 2

carrots, sliced

• 2 tbsp

grated ginger

• 2

apples

• 1/2 cup

milk

• 1

onion, chopped

• 1 pinch

cayenne pepper

• 2

cloves garlic, minced

• Salt and pepper to taste

• 1 tbsp

olive oil

INSTRUCTIONS 1. In a large saucepan, cook sweet potatoes, carrots, apples, onion and garlic in olive oil. Stir in broth, bring to a boil. Cover and simmer for 15 minutes. 2. Add the ginger and continue cooking until sweet potatoes are tender, add milk. Puree with a blender. 3. Return mixture to saucepan. Add cayenne and salt and pepper to taste. BON APPÉTIT!
