Chicken Pasta with Vegetables
Ingredients:
(serves 1) A delicious dinner that’s full • ¼ cup wholemeal pasta of goodness. • ¼ zucchini, grated • 1 handful frozen peas • ¼ capsicum Contains: • ¼ red onion • 3 mushrooms • 80g shredded chicken • ½ TBSP crème fraiche • 1 tsp sweet chilli • 1 small handful mozzarella • Olive oil DIFFICULTY RATING Based per serve 1. Begin boiling pasta 2. Fry the onion, mushroom, capsicum and zucchini on medium heat 3. Add the cooked pasta 4. Add the frozen peas, shredded chicken, crème fraiche, sweet chilli sauce and mozzarella cheese until all are combined and warm 5. Serve warm or store in fridge for up to 3 days.
