Tradition says the longer the dragon, the greater the luck for the area. The Chinese dragon is also said
to bring great power, dignity and wisdom. If that’s the case, Markham may be on track to become one of the luckiest cities in the world. Next month, Markham will
vie for the title of city to host the world’s longest dancing dragon. And that’s a monster of a task. Markham’s dragon will stretch about 5.2 kilometres. The dragon will come alive with the help of
more than 6,000 dancers. The dragon, currently being manufactured in China, is a gift from the mayor of Zhongshan, See DRAGON, page 24.

Markham city employees can say goodbye to extra paid vacation days at the end of the year. Prior to breaking for the summer, city council — discussed in an in-camera meeting — quietly disbanded the longtime tradition of awarding Mayor’s Days, three paid holiday days in addition to the Christmas and New Year’s statutory vacation days. The news has now been made official as staff members were sent a confidential memo explaining there will be no extra three days off with pay at the end of the year.
Policy item The issue comes up each year, deputy mayor and Regional Councillor Jack Heath said. Rather than make a last-minute decision at year’s end, council opted for a full staff report looking at holiday practices of other municipalities. “I personally wanted the matter dealt with as a policy item in the mid-year, not under the rushof-the-moment in early December,” Mr. Heath said in an e-mail. “Personnel policies should be developed with careful consideration.” The staff report presented in an in-camera meeting, looked at other holiday policies. The art of tasting should apply to more than what’s on the grill during a back yard barbecue gathering. Just ask Markham connoisseur Dean Christofilos, who has been in the wine, spirits and beer industry for 23 years, with numerous certificates and training in hospitality and tourism. “In today’s rule, we drink what we like,” Mr. Christofilos said. “I taste one thing, you may taste something else.” While there is still the general rule of thumb that white meats and seafood go with white wine and red meats go with red wine, Mr. Christofilos encourages people to be openminded when it comes to trying new drinks, especially when invited to a back yard barbecue. “When it’s free, you should be all over tasting different things,” said the self-proclaimed “seasonal drinker”, who is the GTA representative for Coyote’s Run Estate Winery in St. David’s village in Niagara-onthe-Lake. “I enjoy and respect what I drink,” said Mr. Christofilos, who says there are a lot of great Ontario wines and beers available. “If I want a beer and it’s warm, I’ll put ice cubes in. If you are cracking open a $90 bottle of wine, treat it as such. It’s about the experience of the moment.” If you are hosting a back yard

Dean Christofilos of Markham recommends York Region and Ontario wines and beers for any type of barbecue and other drinks to suit any tastes. barbecue, Mr. Christofilos suggested offering a few whites and a few reds to let your guests mix and match according to their preferences. “There are no hard and fast rules when it comes to pairing wines with your grilled foods, just generalities that can get you going,” he said. “Ultimately, it is your palate that you are seeking to please by the winepairing.” If you are a guest at a barbecue and are unsure of what to bring, Mr. Christofilos said a safe wine would be unoaked chardonnay. “You still have the characteristics of buttery, creamy and well-balanced on the tongue, but you don’t have an oak feeling,” he said. Another safe option is pinot noir, which is a food-friendly pairing wine, Mr. Christofilos said. “It fits a food chart whether it’s
grilled fish or a big, fat meaty burger,” he said. In addition to wines and beers, always have non-alcoholic options for non-drinkers and to be a responsible host, Mr. Christofilos said. “Typically, it’s one drink per hour or follow it with water,” he said. Before you serve your guests, Mr. Christofilos said it’s worth investing time to find out some of the untold stories behind the bottles. For example, there are actually coyotes on the Coyote’s Run Estate Winery, where each grape is hand-picked, but that’s something you’d likely only learn if you visited the winery or talked to somebody there. “Once you meet the people with passion, it tastes different,” Mr. Christofilos said. “It enhances the taste. It’s a talking point and it adds credibility.”

Readers share recipes Thanks to reader Cosimina GattoFruitman, who responded to last week’s article by Michael Hayakawa on how to barbecue fish. She writes: Here’s my ‘go-to’ recipe for fish. You can also use salmon or halibut fillets. It makes a quick dinner any weeknight! (Serves 4). 2 tbsp. Soy Sauce 2 tbsp. Rice Wine Vinegar 1 tbsp. Liquid Honey 1 tbsp. Fresh Ginger, finely minced 2 cloves Garlic, finely minced 1 tsp. Kosher Salt 1/2 tsp. Ground Black Pepper 1.5 lb. Trout fillet (2 x 345g each fillet) 2 tbsp. Sesame Seeds 4 tbsp. Fresh Cilantro, finely chopped Oil for bbq grill Vegetable spray
Mix together soy, vinegar, honey, ginger, garlic, salt and pepper in a large glass baking dish. Add the trout flesh side down and let marinate for a min. Keep 30 minutes or up to 2 hours in the refrigerator. Preheat barbecue grill on high. Clean and oil grill. Spray skin side of trout well and place trout flesh side up on a barbecue grill and sprinkle with sesame seeds. Close the lid and grill trout for approx. 8 - 10 minutes in total (10 minutes per 1” thickness). Remove from grill to a serving platter and sprinkle with fresh cilantro. Serve with a mixture of stir fried baby bok choy and shitake mushrooms along with a side serving of brown rice. Do you have a barbecue secret to share? There’s an old joke that you shouldn’t leave your car unlocked this time of year, lest it be filled with some garden-grower’s unwanted zucchini. As far as troubles go, having too much homegrown zucchini isn’t really so bad, especially if you take part in this weekend’s Zucchini Palooza and come home with a wagonload of ideas for this prolific green veggie. Saturday’s event, hosted by Seeds for Change in partnership with York Region Food Network, includes a bus tour of local community vegetable gardens wrapped up with an open house at Markham Community Garden where a local chef shares a bounty of ways to enjoy the zucchini harvest. Organizer Lynne Koss hopes the event will spread the word that veggie gardening is good for the body, soul and community spirit. The tour will showcase three gardens in Markham — the small Ladybug Treat Garden at Stately Way, (a townhome complex with a children’s committee and retirees of many different cultures gardening together), the Markham Legacy Organic Garden, ending up at the Food Network’s community garden in the old village of Markham.
Donated by former councillor That property was donated by John Webster, former city councillor and Markham’s town crier, and holds more than 85 plots with an additional one set to be dug this weekend as part of the group’s challenge to add 2,015 new gardens by 2015. Mr. Webster will bring his barbecue out to the field where Isabel Woo, sous chef at Fire & Ice restaurant, will demonstrate ways to prepare the ubiquitous zucchini. “Community gardens are just fantastic,” said Mr. Webster. “With the new urbanism, people don’t have back yards to grow things in,” and for seniors and new Canadians, he said, that can be very important. “What’s also neat is people who would never have met, from different corners of Markham, are meeting and exchanging gardening techniques. New Canadians, who grow veggies we’re not accustomed to, are sharing ideas and sharing cultures. It’s sharing at the grassroots level — or plants-root level.” Markham resident Wendy Wise said she spends many relaxing afternoons in her Markham community garden plot chatting with fellow gardeners and making new friends. “The garden brings the community together. Gardeners share their expertise and often help out one another, whether it’s helping with the watering or pulling a few weeds now and again.” With zucchini season in full swing, chef Woo plans to demonstrate popular uses including grilled sandwiches, stir fries and side dishes. “Other than the popular go-to, the kebab, the texture of zucchini lends itself very well to raw also,” she said. “One of the dishes I will be making will be a zucchini and shrimp timbale with yogurt cream. Loaded with a confetti of crunchy and bright vegetables, it will serve as a wonderful appetizer at your next dinner party.”

B-ball net ban out of bounds
You see them on quiet cul-desacs (no one wants to use the term dead-end streets anymore) or little crescents and side streets where the vehicular traffic is almost strictly local and the occupancy of the homes includes young people of high school age or younger. They are the “portable” basketball nets that sit in driveways or, in many cases, at the edge of the roadway, giving young people ample pavement — much more than the tiny modern driveway — on which to play some pickup three-on-three or just shoot solo baskets to pass the time. Problem is that for the nets to be safe and not a tipping hazard, the homeowner typically needs to fill the base of the apparatus with water or sand — making the net virtually immovable between uses. Now residents of at least one Markham street say they have been put on notice by bylaw enforcement officers that nets that sit too close to the curb are on city property. They’ve been told the structures present a hazard to vehicles and that, if the nets aren’t removed when not in use, the city will remove them. Heavy-handed overreaction, some might say? And not practical, consid-
ering the weighted base holding the nets in place? It turns out other Ontario municipalities have grappled with the same concerns over the years. In fact these “boulevard bylaws” are fairly common across the province, including clauses that restrict sports equipment, tall plants, frontyard gardens and more. What’s not as clear is whether or not cities ever try to enforce these bylaws, except in extreme cases where there is an obvious risk to vehicles or the public. It’s disappointing to hear even one street, let alone the entire community, may be subjected to a curbside basketball net ban. Many studies tell us, as parents will confirm, that we are facing an epidemic of youth inactivity spawned by the lure of YouTube videos, Internet gaming, iPods, iPads and cellphones. (If humans continue to evolve based on survival of the fittest, one can imagine a future species of humans with very long thumbs — all the better to work a game console with.) If there are young people outdoors shooting hoops, we should be celebrating that fact, not trying to make life difficult for them.
Confused by food labels? There’s an app for that

ife has never been more of a balancing act than it is today. Time is often at a premium. Grocery shopping can be a hurried chore and despite good intentions, often we don’t read labels carefully to make the most healthy food choices. Food labels have become notorious for misleading and confusing consumers. Meaningless claims can be manipulated to sound enticing. Ingredients can be declared by names we don’t recognize and nutrition information can be provided based on a serving size that we deem unrealistic. Thankfully, there are apps that can help you navigate grocery aisles — even when faced with time constraints. But which one should you choose? Look for Canadian content: Look for apps that have a Canadian focus or include information about ingredients, claims and nutrition facts tables found on Canadian labels. If you are unsure if Canadian content is included, seek clarification from the company that created the app. Take extra care when apps include product-specific allergy information. It

Consider the source: Look for apps that have been created by creditable companies, associations or individuals and that reference official government regulations.
If you do not recognize the source, go to its website for more information. Look for a quick rating system: While shopping, you can use apps to help navigate food labels quickly. Look for apps that incorporate a speedy safety rating system for ingredients such as colour-coded happy and sad faces or check and x marks. Commonly, these apps also contain detailed information about ingredients such as potential health effects, their function in food and if they are derived from animal, plant, synthetic or genetically modified sources. Personalize for efficiency: The large volume of information in some generic apps may make them too cumbersome to navigate while shopping. Take the time to look for apps that allow you to add personal settings. For example, if you are a vegetarian, some apps will allow you to filter and search ingredients based on this requirement. Personalizing an app before shopping will help with efficiency at the store. Consider ease of navigation: If you do not consider yourself to be “tech savvy” look for an app that you can
navigate easily. Before purchasing, check an apps’ website for an explanation of how it works. Also check out customer reviews of apps you are considering. Luckily, apps are typically affordable and sometimes free, so you may want to consider downloading a few to find the one that is right for you. The easier it is to navigate, the better the chances you will use it. Don’t have a smartphone or tablet? Don’t despair. Carry a book about food labels or a food additive dictionary when shopping for food. Again, look for Canadian content, creditable sources and ease of use. Empower yourself with the information you need to make healthy and informed food choices. “Basically, what we do in Markham is special,” Mr. Heath said. “We have very good staff. But it was time to bring this practice to a close.” But those days will be missed by the city’s union employees. “We serve the public,” city employee and acting president for the Canadian Union of Public Employees for the 905 area, Guila Cukier said. “We look forward to those days to spend some time with our families.” Mayor’s Days are not part of union employees’ contracts, Ms Cukier added.
“Those are not vital to our contract,” she said. “We understand the city’s move.” In recent years, the city has received flack from residents, calling Mayor’s Days an added expense taxpayers don’t need. But the extra vacation days didn’t have a dollar amount attached, Mr. Heath said. “There wasn’t a cash bonus,” he said. “We weren’t giving money away. Instead, those days cut into productivity. We were getting less production for the same salary.” Last year, about 1,000 city employees received the three extra days off with pay during the holidays. That was a tradition the city said was started more than two decades ago by former mayor Tony Roman.

The Central Local Health Integration Network hired five new telemedicine nurses to provide you easier access to physician specialists. The new nurses are stationed in Southlake Regional Health Centre in Newmarket, Markham Stouffville Hospital and the Canadian Mental Health Association - York Region and Toronto branches. The new hires are part of the expanded care delivery available at more than 68 sites across the Central LHIN. Telemedicine is a form of telehealth, with live, two-way videoconferencing at the hospital sites, Markham Stouffville Hospital clinical telemedicine professional practice leader Ann Marie Havery said.
The Skype-like service is part of the Ontario Telemedicine Network and is equipped with the latest technology for virtual patient consultations, assessments, training and knowledge exchange, including a hand-held camera that can zoom in on a patient’s wound, Ms Havery said. “It can save time, costs and travel and it reduces the stress of patients,” she added. Ms Havery’s first telemedicine patient at Markham Stouffville Hospital was an elderly lady who needed to see a physician specialist in downtown Toronto, but had no reasonable means of transportation. That was the case for Sutton resident Norm Charles, who has been using telemedicine for some time. Mr. Charles goes to Southlake Regional Health Centre about once a month and was there last to see his neuropsychiatrist in Toronto for severe migraines. “It saves me four hours and $50 a (trip),” Mr. Charles said of telemedicine. “It’s quite handy for me.” It’s also easier to talk to his doctors via video, Mr. Charles said, noting it’s less intimidating. To provide telemedicine access for resident clinical appointments, specialist care and staff education, Southlake has partnered with six Central LHIN long-term care homes: Aurora Resthaven, Cedarvale Lodge, Good Samaritan Nursing Home, King City Lodge Nursing Home, River Glen Haven Nursing Home and Southlake Village. Eight of the 12 long-term care homes in the catchment area of Southlake and Stevenson Memorial Hospital in Alliston are equipped for telemedicine service.

The City of Markham has undertaken a Class Environmental Assessment (EA) to identify the location and design concept of an interconnected Multi-Use Path (MUP) in the Rouge River Valley area, from 16th Avenue through Toogood Pond to the Milne Dam Conservation Park to Bob Hunter Memorial Park as indicated in the figure to the right. The need for this study was identified in previously approved City studies, such as the City of Markham’s Cycling, Pathways and Trails Master Plans, and the Cycling Pathways and Trails 5-Year Implementation Plan. These plans recognize active recreation and active transportation as essential components for fostering environmental sustainability and the health and wellbeing of residents, and promoting the development of a more comprehensive and interconnected pedestrian and cycling network in Markham.
A number of young people from Markham are set to compete in the Canadian National Exhibition’s 26th Annual Rising Star Talent Competition. This CNE attraction will feature comedians, dancers, singers, ventriloquists and more. Competing age groups are separated into two divisions, youth aged 6-12 and juniors aged 13-21. Out of 150 contestants in total, several Markham residents have made it as vocal competitors. From the youth division are Rahul Vivekanandan, Rebecca Dunby and Alyssa Datu. Those competing in the juniors include Nicole Jaskot, Nicole Lazarovski, Lauren Del
Rio, Marina Agostino, Mary Christidis and Arabella Dunzi. Preliminary rounds will take place from Aug. 17 to 26 and semi-finals from Aug. 27 to 31. The performances will be at 7 p.m. each day. A panel of judges will select the few to proceed to the finals on Sept. 2. The top three finalists will win cash prizes, while the first place winner gets the chance to represent the CNE at the Canadian Youth Talent Competition in Winnipeg in November. The Royal Canadian Air Cadets welcome youth age 12 to 19 to their program focusing on citizenship, leadership and fitness. Not only is this an honour of monstrous proportions, there is also a colossal price tag. The total cost is in the area of $100,000, Mr. Ho said. That includes shipping, storage, Guinness World Record officials and world record registration. But the city has managed to leverage sponsorships for that. The city is looking for about 6,000 volunteers to help dance the 5.3 km long dragon. Since each piece of the dragon is on a stake, there will be three dancing shifts of about 2,000 volunteers. While the city is still working out date and location specifics, the city will link its dancing dragon spectacular with the Chinese moon festival that usually takes place in late September, Mr. Ho said. The organizing committee is asking volunteers and others in the community to consider donating $1 to help cover the costs of recruiting Guinness World Record officials. Better now than later. In the case of Michelle Li, a stomach virus she incurred last week was far better timing than if it took place when she takes to the court at the Wembley Arena to compete for Canada in the women’s singles and doubles’ badminton competition when the 2012 Summer Olympics in London, England commence. Ranked as Canada’s top women’s singles’ badminton player, the 20-year-old Markham resident and former Richmond Hill High School graduate was exposed to a stomach virus while at a pre-Games training camp in Derby, England July 19. Li wasn’t the only player to take ill. Also inflicted by the virus was Li’s double’s partner Alexandra Bruce of Toronto. Fortunately, Li and Bruce were making their way to a full recovery after being treated by a local doctor and the Canadian Olympic medical team and were expected to return to training early this week, the Canadian Olympic Committee reported. All precautions have been taken to prevent any further spread of the virus. The athletes did not participate in a previously scheduled friendly exhibition match against Great Britain over the weekend. The team will remain in Derby, England to train in preparation for the Olympics and were expected to return to London Tuesday as planned. — Michael Hayakawa
LUNCH WITH A SKUNK? Surprisingly, a grizzly bear only allows one other animal to eat at his table. Not by invitation particularly, but because of the bear’s wise assessment of circumstances, he will share his dinner with a skunk. A grizzly is powerful enough to overcome most other animals. So why does it allow such a small, weak creature to eat beside him? Of course the answer is simple. Mr. Grizzly knows the high cost of forcing a skunk away. And this certainly wouldn’t bother the skunk. There’s a good illustration here for us. Some of us may be eating with a skunk at our table. This may or may not be an actual person beside us, but it’s some issue of bitterness or unforgiveness that we are afraid to get rid of or deal with. Far too many people pay a high price for holding resentment against someone else. Like the skunk, the other person may be happily unaware of our resentment over what they did. Continuing to carry an offense will hurt us more than the offender. The poison of bitterness and unforgiveness can make us ill emotionally, spiritually and perhaps even physically. When we find ourselves or a friend in this kind of situation, it’s wise to heed the words and example of Jesus. His guidance is that we should talk things over with the offending party in order to restore the relationship (Matthew 18:15-22). This is also why He encouraged us to keep a close relationship with our Heavenly Father by asking Him to “forgive us our trespasses as we forgive those who trespass against us” (6:12). The Unionville Spartans mite under-10 girls’ softball team captured the bronze medal in a tournament in Brampton with a 15-0 win over Kingston in the consolation final Sunday. Anchoring the Spartans’ win was nine-yearold pitcher Sabine Leyds, who tossed a no hitter. The Spartans opened the tournament by facing the top two teams and were defeated by Whitby 12-3 and Vaughan 10-7. The Spartans rebounded to defeat Stouffville 14-8, earning a berth in the bronze medal tilt. Anchoring the Spartans’ offence were Kaitlyn Moore, Leyds and Hannah Bilen, who each belted home runs. Along with Leyds, Moore put fourth a strong effort on the rubber. The Spartans received timely defense from catcher Kiele Wong. Other players contributing to the club’s succeess included Rebecca Woo, Victoria Diamond, MacKenzie Dryburgh, Cassidy Wensley, Ambika Sharma, Claire Liew and Nicole Ward.

SPORTS Rugby men tie, lose The Markham Irish Canadian Rugby Club men’s firsts overcame a 10-point deficit and scored a try with no time remaining to salvage a 27-27 tie against the Oakville Crusaders in Ontario Rugby Union Marshall Division action in Oakville Saturday. John Thompson, Ken VanAllen, Keiram Moloney and Andrew Carr each recorded one try for Markham, now 3-4-1 on the season. Connor Fitzsimmons kicked two converts and a penalty goal. In the men’s seconds match, Oakville emerged with a 56-10 win. Atique Wasim and Eamon Moloughney each scored one try for Markham, now 2-6. In a women’s under-18 match, Markham received four tries from CharityWilliams in a 27-27 tie against the Toronto Saracens. Frederique Rajotte also had a try and Alana Pescador kicked a convert.

However the Mariners lost their next two outings Saturday and were sent packing from the doubleelimination competition. Facing the Newmarket Hawks in their second game, the Mariners fell 4-3. Mike Arsenault was the losing pitcher for the Mariners. The Mariners then played host Etobicoke and suffered an 8-5 defeat.
The Markham Mariners got off to a good start when they took part in the 2012 Hap Walters Central Ontario Baseball Association Tournament in Etobicoke, defeating the Niagara Metros 7-4 in their opening game Friday.
Steve Horsley suffered the loss for the Mariners. Brad Binns picked up the win over Niagara while Mark Lindquist earned the save.

It is with profound sadness that family and friends part with Russell Charles Urquhart B.Ed, M.Ed. from cancer at Mackenzie Richmond Hill Hospital on Monday, July 23, 2012. Russell is now in the arms of his beloved wife Lucille Reta Urquhart (nee Harvey), who passed away five years ago. Also known as 'Bud', he is brother to Louis, Glen, Hazel and Ivan Urquhart. Left to mourn this independent, humorous, hard-working and protective father, are his children: Roderick Urquhart (Aase), Adrienne Urquhart, Tracy Campbell (Richard) and beloved granddaughters Taryn and Marley Campbell. Russ, a retired public school principal with York County Board of Education, was very active right until his last days. Having served in the Royal Canadian Corps. of Signals, he joined the 16th AAOR and was stationed in both England and Europe during the Second World War. A voracious reader, having read many books about the war, he regaled all around with his spirited storytelling. The family would like to thank the caring staff of CCAC, Mackenzie Health and Veterans Affairs Canada. An informal Celebration of Life for his family to receive friends and relatives will be held Wednesday, August 1st from 2-4 p.m. at The Royal Canadian Legion, Branch 385, 105 Industrial Pkwy N. in Aurora, ON.
