The conservative Gulf kingdom currently does not issue tourist visas to travellers. “The monthlong visa can also be used for tourism. What changed is that we’re now moving to Islamic history sites to revive those to make them more presentable and to create museums and experiences,” Prince Al Saud said.

iyadh is vast and sprawling, to say the least. A country known more for its oil reserves, it also has mesmerizing landscapes and an engaging history. Few cities in the world have changed so much as Riyadh, the capital of Saudi Arabia, in the last few decades. What was just a small town with barely 20,000 inhabitants at the beginning of 20th century, today boasts of one of the most modern infrastructure in West Asia and is beaming with about 6 million inhabitants. Capital of a country that is also the birth place of world’s second largest religion Islam, Riyadh is probably the best place in the world to get a feel of conventional Islam vis-à-vis modern day technology and eastern influence. Riyadh’s unique character also stems from the fact that the city is home to a large number, about one-third, immigrant population, mainly from the countries in Indian subcontinent, West Asia, North Africa as well as from Europe and America.

Riyadh boasts of modern infrastructure, business districts, renowned international hotel brands and houses within its vicinity. For those looking at further exploring Riyadh, there is a wide display of history and culture, art, artifacts, heritage and natural beauty. Even as one arrives at the state-of-the-art Riyadh airport, all roads seem to lead towards the Kingdom Centre. Visibly the most prominent landscape, the Kingdom Tower stands tall, right at the centre of the wide expanding city. Billed as Riyadh's most stunning piece of modern architecture, at 305m the Kingdom Centre is the second tallest building in Saudi Arabia and quite a sight, especially when lit up at night. The Skyscraper offers a breathtaking 360 degree panoramic view of the city. It was voted “Skyscraper of the Year” in 2002. The centre hosts a three-story shopping mall, with one floor reserved for women, but the main reason to visit is the 99th-floor Skybridge connecting the two peaks at a height of 300m.
Museum & Palaces Amongst a number of museums that Saudi Arabia has, National Museum in Riyadh stands out. The National Museum is generally the first stop for tourists. The museum houses a fascinating display of invaluable antiques, rare manuscripts, art and artifacts of past and present. It offers insight highlighting the prominent properties of each province around the KSA. In addition, the Museum contains

history and culture of Saudi Arabia, it is time for a palace tour and Riyadh has quite a few to boast. The Masmak Palace is a stronglyprotected castle with thick walls, located in the old quarter of the Riyadh City Centre. n a country like India where step-wells are no longer in common use, a visit to the Raniki-vav at Patan is a remarkable experience. The highest level of the ‘vav’, as step-wells in Gujarat are known, is punctuated by broken pillars. These are reminiscent of Patan’s glorious past as the capital of the region, at a time when Ahmedabad and Gandhinagar did not even exist. Descending the broad flight of steps that goes into the subterranean depths of the vav is surreal. Both side-walls of the well are June 2013 40 www.spiceroutemag.com
extensively decorated with rock cut depictions of Hindu iconography. The incarnations of Lord Vishnu are a popular theme. As one goes down the steps, the divine figures seem to come alive when observed with peripheral vision, standing still in their niches when a visitor turns his gaze on them directly. The atmosphere changes a wee bit at every step. The air is heavier and a bit moist as one slips into the lower levels. The light thins out and the rock cuts come to life again, hidden in shadows neglected by the sun-god. The stepped corridor through which a person goes to the well shaft broadens after

Patan was called Anahilvada and was founded around 746 AD by the first ruler of the Chavada dynasty the first landing only to narrow towards the end. A final set of five stairs lead to a ledge that runs along the rim of the well. The ledge is embellished by sculpted niches. Sound at the depth of the vav is conspicuous by its complete absence. The atmosphere has a silence that has to be experienced to be believed, broken only if a party of noisy tourists were to arrive. This quality of the place is best appreciated by local students, some of whom are occasionally seen here, absorbed in their notes.
Of legends & more The structure has an interesting past. It is believed to have been constructed under the patronage of Udayamati, queen of Bhimadeva. The ‘Rani’ in the name is drawn from this royal patron. Patan was once called Anahilvada and was founded around 746 AD by the first ruler of the Chavada dynasty. About 200 years later, power passed from the Chavadas to the Solankis. Bhimadeva is believed to have been the first truly powerful ruler of this dynasty. The Rani-ki-vav dates back to the last quarter of the 11th century.
The present town of Patan is slightly to the south of the old capital which was around the area of the step-well. Nearby is the Sahasralinga Talav, an ancient reservoir named after a set of Shiv lingas that are believed to have existed along its banks. The talav was once a water tank of immense size, going by the extent of the ruins that are observed here. The place also has the ruins of a Shiva temple. One interesting anecdote associated with the place is that the Mughal emperor Akbar’s tutor Bairam Khan was murdered after returning from boating in the tank. The Patan of old is believed to have lain on the southern bank of the Saraswati River,

the flooding of which gradually covered the vav with mud. The place was virtually hidden from view with only the back wall of the wellshaft and a few pillars in front being visible. Excavations began in 1958 and over years, the true magnificence of the vav was revealed. Once more, after centuries, the work of the Solankis put Patan on the map.
Wonderful Weaves But Patan’s heritage is not just in its buildings. A very significant aspect is its living heritage, in the form of the Patola form of saree-weaving. The name Patola could possibly have been a derivative of the Sanskrit word ‘Pattakula’ which means silk fabric. The exclusivity of this weave is that the inner and outer sides of the saree are equally beautiful. This ancient art at work produces 5-6 inches of material in a day. The Salvi community, who follow the Jain faith, are the hub of the saree-making. Flowers, leaves, animals, birds and women have all seen use as motifs on the sarees. According to

local tradition, the design of a Patola saree is repeated once in over a century, making the sarees truly rare and precious. The original community of weavers has thinned over time, just as the art form has become more famous. Food for thought for an intrepid traveler! hotels catering to all budgets and the two places can be done in a daytrip, with Adalaj thrown in for good measure.
On the way back from Patan to Ahmedabad a visitor can drop in at Modhera. Inside a charming tree-lined garden is a magnificent Sun Temple, which forms the backdrop to a celebrated dance festival every year. Dating back to 1026 AD, it is another product of the great period of building which marked the reign of Bhimadeva. Though the entire complex appears littered with ruins, the main shrine is a compact set comprising three parts. Most significant is the sanctum sanctorum, the main idol in which was destroyed during a raid by Islamic invaders. Then there is the Sabha Mandap, where 52 intricately carved pillars depict stories from Hindu mythology. But the most magnificent structure to a layperson is undoubtedly the large, rectangular water tank known as the Surya Kund. Within the tank are 108 smaller shrines, each one with a delicate carving of its own. Many are still intact, having managed to defy the destroyers over time. People from various parts of Gujarat June 2013 44 www.spiceroutemag.com
flock to the temple, coming as gawking tourists but leaving as amazed pilgrims. That is the effect Modhera tends to have. Closer to Ahmedabad is the tiny village of Adalaj. The sole purpose of its existence seems to be another step-well, which rivals the Rani-ki-vav in embellishment. Some visitors think of the Rudabai vav, to call the stepwell by its proper name, to be the finest of its kind in Gujarat. It is a close call between the two vavs and very often, a fairly subjective one. The builders at Adalaj used fighting elephants as a decorative motif on the walls and pillars right from the beginning of the steps down till the lower levels. Built by royals and rich merchants, the many vav of Gujarat also served the local populace a great deal. Alleviating their condition at times of water shortage in this largely arid region, serving as a place of shelter during heat and rain and also serving as places for social communes, most vavs remained in use till the British era. The British were petrified of the guinea worm, a waterborne parasite and were determined not to use the water for drinking and hence closed them all. In today’s era of chronic water shortages, the wisdom of the ages that went into vav-building, may need to be revisited.

o, you’ve decided to do a quick lunch, comments Susantha with a disapproving nod, as he greets us. Have we? I looked questioningly at the travel passionate middle aged man who was helping us around Colombo, a place that mixed breath-taking coastal setting with a trendy cosmopolitan culture like the perfect cocktail‌ our home for the next three days. My friends and I had spent the morning rather lazily and June 2013 46 www.spiceroutemag.com
were in danger of being left with insufficient time for the Colombo museum, so we had decided to cut lunch down by an hour, but then during my trip I realized if there was ever a contrast to European up tightness, it was this. Unhurried lunches, affable strangers, welcoming restaurant owners-which other city in this part of the world can claim any of those, leave alone all together?

So after a relaxed lunch of ‘Fried Fish’, ‘sole fish curry’, ‘Hoppers’ and absolutely fresh ‘coconut water’ we headed to the Colombo museum. Set amidst tall blooming trees in Campbell Park on the northern edge of Colombo’s Cinnamon Gardens district, is this grand colonial building with a sedate, old world Italianate charm. One can find here skeletons that are aged around 3000BC, jewels from the British, Portuguese and Dutch rule, historical treasures, such as archaic palm leaf manuscripts, antique porcelain, rock sculptures from ancient cities, royal regalia, an excellent collection of demon masks and a ton of old weapons from all the different eras too. Do remember that the museum is shut on Fridays.

We took the tuk-tuk down to the Ocean front, a place that houses the popularly known ‘Galle Face Green’ or ‘The Esplanade’ defined by a promenade lined with palm tree, little cafes and eateries, which won’t stun you immediately, its beauty seeps into your mind and makes a place there forever. There was some murmur about visiting the Church, some about going shopping, 10 minutes away, but in the end we decided on just chilling by the sea and watching families playing sports and flying kites, health enthusiasts taking their daily evening walks. Around the corner from Galle Face is a relaxed grazing ground for the city’s café and bar society that it almost resembles Las Vegas if I may add replete with casinos. So needless to add we found a little watering hole and hung out their listening to music and having fun, before calling it a day! The next morning as we are still discussing the Esplanade when Susantha stops suddenly and a little walk brings us to Beira Lake, I am in heaven maybe? We walked by the stretch of this rather picturesque lake and I didn’t seem to care that the land is dusty beneath my feet, because the ‘GangaRamaya Temple’ stood majestically in front of me. Not to be missed here are the ‘Viharaya’ i.e. the temple, the ‘chetiya’ aka pagoda, ‘boditree’, ‘vihara’,

‘mandairaya’, ‘simamalaka’ and the relic chamber. Interestingly it has been actively involved in establishing the Buddhist temple in Staten Island and the Buddhist centre in New York in the United States as well as the Birmingham Buddhist vihara in the United Kingdom and the Buddhist centre in Tanzania. Next on our list was the ‘Dipaduttaramaya’ which is the oldest Buddhist temple built in 1806 and it also depicts murals painted by Buddhist monks in 1890. Moved on to ‘Wolvendaal Church’ oldest Dutch church still in use, whose floor tiles, made from tombstones formerly in the Dutch church in the Fort, were brought here in 1813.
TASTE OF COLOMBO Our feet, a wee bit tired from all the walking, we stopped by at ‘Raja Bojun’ for its scrumptious buffet which runs the gamut from string hoppers, red rice to fish curry and Watalapam (a dessert made with milk,
eggs and jaggery and steamed). Sitting through a traditional meal is one of the essential experiences here, seeing as food is so important that even office goers take a two hour lunch break. Somehow we just lingered longer over the same amount of food; waiters seemed in no hurry to whisk us out. Nothing can be more important than enjoying one’s meal, they think in Colombo, and they do so correctly, I feel.
SHOPPING Those on a shopping vacation will be absolutely amazed with the abundance of bargains the city offers. Colombo boasts everything from top designer brands to exquisite handcrafted gifts at unbelievable prices. Must buys being Ceylon tea, branded clothes (they are absolutely inexpensive out here) and awesome jewellery especially the blue Sapphire from ‘strings and threads’ at Crescat or the ‘Colombo Jewellery stores’ at Alfred House gardens. I would highly June 2013
recommend ‘Odel’ the at Alexandra place, the city’s most acclaimed commercial Center. If you are a local art and handicraft lover then ‘Lakpahana’ it is, with a collection of almost ten thousand locally made products that are economically priced. Crowds flock to the ‘House of Fashion’ on 28 Duplication Road, for imported items and clothes at low prices. One of the fashion factory maker hubs of the world, it is no surprise that Colombo is known for its excellent shopping at affordable rates! Later that night, I walked like a solitary reaper by the sea. The sea raucous, yet soothing, a few night strollers along the path gave me a sense of comfort against the aggressive waters. As I walked back for the night, I realised that I had come upon an exceptional place, Colombo is as gorgeous as Phuket but not so tourist infested, it’s as wild as Philippines’ but yet much more refined.

rguably, it is the most visited city of India for hosting the iconic Sikh shrine of the Golden Temple, the historical Jallianwala Bagh and witnessing lowering of flags ceremony at dusk at the Wagah border. Here’s not one place worth giving a skip. Excitement was at its peak when I boarded the Shatabdi Express from Delhi to Amritsar. It felt more like the city was calling me because the trip was completely unplanned but the June 2013 54 www.spiceroutemag.com
happenings were still so smooth. I reached Amritsar in the afternoon and after a quick wash I was ready to explore the vibrant small town. Abode to one million people, Amritsar is more rural than city, with vast farmlands even as most of the activities are centred around the Golden temple.
Date with history In 1574, this city was founded by fourth Sikh guru, Guru Ram Das. A small pond was

enlarged and further excavated to present day’s large Sarovar. From this pool, the city got its name, as the water of this large pool is considered very sacred, like nectar, Amrit. Legend also goes that long ago, the present city of Amritsar was a dense forest with a pool in it and Lord Rama had fought a battle with his sons, Luv and Kush at this place in which the father’s whole army was destroyed. At the same time, a jug of nectar descended from heaven to restore the soldiers to life. Thus the name given, Amritsar. I decided to go to the Jallianawala Bagh first as there was still some time for the lowering of flags ceremony at the India-Pakistan border while it was very hot to visit the golden temple. This bagh is a memorial for the people

who were brutally killed by Brigadier General Reginald Dyer’s 80 armed soldiers in a large peaceful gathering on April 13, 1919, which was a Baisakhi day. The crowd had assembled to protest the infamous Rowlatt Act passed by the British Government a month ago. More than 1500 people died of bullet wounds, stampede or jumping into the solitary well in the Bagh. Later this ground was purchased from its owner to build a memorial with the help of public donation. The walls of the monument still bear the bullet marks and a well-preserved well takes you back on that fateful day. The museum inside has framed pictures depicting the happenings of the massacre and I was flabbergasted to know how people were surrounded inside the Bagh and British soldiers massacred the innocent peiople blocking the only narrow gate and spraying bullets until they ran out of the ammunition.
As I came out I felt much calmer and realized the city was also calmer than most Indian cities with few hawkers and beggars. Also there are more cycle-rickshaws than noisy auto-rickshaws.
Border visit Visit to Amritsar remains incomplete without a visit to Wagah border. Actually, the border on the Indian side is called Attari and the same on the Pakistani side is called Wagah. The Wagah border, often called the “Berlin Wall of Asia”, is a ceremonial border between India and Pakistan, where each evening there is a retreat ceremony called ‘lowering of the flags’, which is being held since 1959. Everyday there is an energetic parade by the Border Security Force of India and the Pakistan Rangers soldiers. It may appear slightly aggressive and even hostile to some but in fact the paraders are imitating the pride and anger of a Cockerel. It is a sight to watch when the jawans from both sides Clockwise from left: Bullet marks on the walls of the Bagh; Visitors at Jallianwala Bagh; Vistors having a look at the Martyr’s well

march to the respective gates with their legs almost reaching their shoulders. As the sun sets, the iron gates at the border are opened and the two flags are lowered simultaneously. The flags are folded and the ceremony ends with a retreat that involves a brusque handshake between soldiers from either side, followed by the closing of the gates again. On the Indian side a huge crowd had gathered to specially witness this daily ritual and thankfully I was in the front row to be able to have a clear view while on the opposite side I could see very few people sitting in the gallery to watch the act. Amidst the heavy patriotic fervour the programme started just before sunset. Patriotic songs were being played and the people cheered loudly at every movement of our security forces. It was a spectacular show indeed.
- Harmandir Sahib is located. The temple is connected through a causeway from the shore. At the shore end, there is an entrance gate called ‘Darshani Deorhi’. It is said that the construction of the temple started in 1574 and completed during the fifth guru, Guru Arjan Dev in 1604. All the gold and exquisite marble work was conducted under Maharaja Ranjit Singh and was completed in 1830. Guru Granth Sahibwhich was declared as eternal Guru by Guru Gobind Singh, is placed inside the temple and worshipped with utmost reverence. I was told that this Sikh shrine attracts more visitors than the Taj Mahal with more than 100,000 visitors on week days alone and is the most popular destination for Non-resident Indians (NRI) in the whole of India. The city
After a packed day’s schedule, I needed a good night’s sleep so that I was fresh for my next stop – the famous Swarnamandir or The Golden Temple. This is holiest of the holy shrine for the Sikhs and the temple complex is very huge encircled by long buildings. Inside there is the Amritsar, the large ‘pool of nectar’, in the middle of which the sanctum sanctorum
also houses the Sikh temporal and political authority, Akal Takht, as well as the Sikh Parliament. Langar is served 24/7 at the Golden Temple for everyone and not to miss is the desi ghee kada parshad that you get after you pay your respect at the Harminder Sahib.
Food paradise Now was the time for some shopping and then some good food which the city is famous for. At lunch time, I was more interested in trying the typical Amritsari plate than fancy food. So I went to the Bhrawan da Dhaba for Amitsari paratha, dal makhni, kadaipaneer and lachchedar paratha. Going by the tradition of the city, Lassi is served in huge tumblers with a generous quantity of malai in it and one can’t afford to miss this on their visit to Amritsar. You cannot possibly leave Amritsar without picking up some lip-smacking Amritsari papads and wadiyans and a variety of pickles, jams and jellies that are made by the rural women here. You could carry these back home for your relatives and friends. The traditional Phulkari work and sandalwood carvings are also some of the famous things in Amritsar that are found in Kapra Market.

Traditionally, people bring water from the river of their region in clay pots and immerse them into the Sindhu River, thereby merging the river water with other waters of the land. The festival commences with Buddhist prayers by senior Lamas. A series of cultural programmes and performances by artistes from various parts of the country follows. Many sightseeing tours including the ‘Sindhu Yatra’ are also organised during this time.

Power of
parsley
Parsley is a storehouse of nutrients that the health conscious foodies are yet to discover. WO R DS

hough rich in nutrition and packed with immense healing properties, Parsley is one herb which has not found its right place yet. Ironically, parsley remains as a ‘decorative garnish’ only, that too at high-end restaurants. But there is hope as the new-age health conscious generation is waking up to the multiple benefits of parsley.
Unique tale A friend of mine once told me that she rarely bought parsley because she didn’t know what to do with it. But, I guess that’s the case with most of us I think. For long, parsley has been June 2013 68 www.spiceroutemag.com
only used to pretty-up-a-dish, however, a little research will tell you that there are numerous dishes where parsley can be used. Dating back to the history of this herb, it is a known fact that parsley has a prestigious lineage. If research is to be believed, in the ancient times the Greeks held parsley as a sacred herb that would be used to adorn the victors from the frequently held athletic contests. Moreover, this herb would also be used for decorating the tombs of the deceased. It was rather the Romans who started the practice of using parsley as a garnishing probably in the Middle Ages in Europe. Infact, there are a few
Spice Trail
Parsley’s volatile oils have been shown to inhibit tumour formation in animals historians who actually credit Charlemagne with its popularization since he had it grown on his estates. Now that is a royal connection for sure!
A healthy option Native to the Mediterranean region of Southern Europe, this herb actually was cultivated for more than 2,000 years but it is a fact that parsley was initially used as medicine even before it made it to the culinary spread. It not only tastes good but also has a high nutritious content and is revered for its healing properties. There are two most popular types of parsley such as curly parsley and the Italian flat leaf parsley, each containing amazing amounts of health boosting properties. What makes them different from each other is the fact that the Italian variety has a rather strong fragrance and is actually less bitter to taste in comparison to the curly variety. Apart from a refreshing green colour, parsley is packed with antioxidants and offers a number of health benefits too. Firstly, parsley is a good source of folic acid which in fact not many people know is one of the most important sources of vitamin B. Also, this herb is rich in vitamin C which is known to provide one with protection against inflammatory polyarthritis, which is a form of rheumatoid arthritis involving two or more joints.
A multifaceted herb The fact that parsley contains two types of unusual components, help it to provide unique
health benefits. The first type is volatile oil components including myristicin, limonene, eugenol, and alpha-thujene and the second type is flavonoids that includes apiin, apigenin, crisoeriol, and luteolin. It has been revealed from studies that parsley’s volatile oils, more specifically the myristicin have been shown to inhibit tumour formation in animal, especially in the lungs. In fact, Myristicin can actually activate the enzyme glutathione-S-transferase, which helps to attach the molecule glutathione to oxidized molecules that would otherwise do damage in the body. So this activity of parsley’s volatile oils makes it come across useful as a “chemoprotective” food. This is a particular kind that helps to neutralize various types of carcinogens, some like the benzopyrenes that are caused by cigarette smoking and charcoal grill smoking. But since too much of anything is bad so consumption of parsley should be avoided in excess, especially by pregnant women.
Smart storage One must always opt for the fresh parsley that is deep green in colour and looks and feels crisp in texture. In fact, you should rather avoid the dried ones which are wilted or yellow, over-mature or damaged. A plastic bag will help you to store the freshness of parsley kept in the refrigerator. Although curly leaf parsley will retain most of its flavour, it has a tendency to lose its crispness when preserved in refrigerator. When June 2013 70 www.spiceroutemag.com
it comes to dealing with the flat leaf parsley, you can easily dry it by spreading it across a clean kitchen cloth and drying it. Once dried, it should be kept in a tightly sealed container in a cool, dark and dry place and taken out for some quick, exotic garnishing.
Tast y quickie You can serve this green parsley soup hot for a quick lunch or dinner. Ingredients 2 cups finely chopped fresh parsley 4 cups vegetable or chicken stock 2 cups of water 3 leeks, white and pale green parts only, sliced lengthwise, cleaned, sliced crosswise into 1/4-inch slices 1 tablespoon lemon juice 2 Tbsp butter and olive oil Pepper and salt to taste Method: In an open vessel, heat butter over a medium flame. Next, add the chopped leeks into it and cover it for a minute. Let them cook till the mixture turns soft. Now add the olive oil, and blend in the stock and water. Stir in the salt, pepper and lemon juice. Let the mixture boil for the next 10 minutes. Add the parsley to the soup mixture and blend it in smoothly. You can add a dollop of extra butter on top and enjoy with a crisp bread toast.

Cold soups are easy to prepare and without any heat source, so can be made anywhere to the illusion of coolness. A quick way to get soup very cold is to pour it into the ice tray of the refrigerator. Watch it carefully from time to time so that it does not freeze. When it is just at the point of forming ice crystals, or in the case of jellied soup, take out the tray, and let it stand in the refrigerator until you are ready to serve the soup in cups or plates. Soups chilled in this way are really cold and also do not have the chance to absorb the odours of other foods in the refrigerator while in the lukewarm stage. “Cold soups are quick and easy to prepare, and most don’t require a heat source for their
preparation. Equipped with a food processor or blender you can make a cold soup in as little as 10 minutes,” says Vimal Vikraman, executive chef, Grand Mercure, Bangalore.

Did you know? “Soup is an iconic winter dish, but if you love spooning, you needn’t limit your enjoyment of soup to the cold months. Just as hot soup warms cold bellies in winter, so do cool soups soothe hot and bothered bodies in summer. Cold soups serves as an excellent beverage in the summer months as it provides the much needed fluids in our system. But it is also important to note what ingredients we use while making a cold soup as the strength of the soup depends on what we add in it. Fresh seasonal vegetables and fruits rich in proteins are suggested to be used and products with high calorie content are advised to be avoided,” informs Dr. Rekha Sharma, president of Indian Dietetic Association. e save the sweetest and the best for the end- be it a sweet dish that you'd want to wrap up your meal with or the best part of a story that hooks you to the end. The tradition of closing your meal on a sweet note is age4old but isn't too sweet too boring at times? A recent advertisement of a bitter chocolate brand somehow sums up how we are moving ahead of the 'too sweet to be true' concept and want some masala in not just life but also our sweet nothings. And that is what is kicking these chefs to innovate and get spices into our sweet dishes which results in a heady mix. June 2013 78 www.spiceroutemag.com
ADD A T WIST If you have always associated five-spice powder, chilli flakes and black pepper to the main course of your meal, then surprise yourself as these are now slowly but strongly making their way into the final course too. Chef Negi of The Lodhi admits, "As a chef I love using spices in my desserts because they can add piquancy to the taste of desserts, ice creams and sorbets. For example we use fresh grounded black pepper with strawberries, the pepper brings out the full flavour of strawberries while cloves partners wonderfully in sweet or savoury dishes.

Chillies are now being used in desserts to tickle the taste buds of consumers PERFECT MIX Hook yourself to read about how these spices are now active ingredients for your desserts. Anise: The small seeds of anise add a licorice flavoring to cookies, cakes and breads, like in Anise Biscotti and Anise Mousse served with tropical fruit. Cloves: With a pungent and sweet flavor, clove often emerges during the winters. It adds flavour to spice cakes, cookies, quick breads, and fruit pies. Fennel Seeds: Offering a slight licorice flavor, fennel seeds are a favorite for Scandinavian bakers who add the spice to their cakes, cookies, and breads. Ginger: Adding aroma and tang to desserts, ginger is a versatile spice that is used to flavor cakes, cookies, custard, and fruit pies. Cakes and cookies blossom when crystallized and preserved ginger is added. Rosemary: Its savory resinous flavor and aroma adds perfect flavour to apricot sorbet Tarragon: This French "king of herbs" spices up lemon tarts but care must be taken as it can overshadow other flavours in a dish. Basil: With a list of medicinal benefits it forms a delicious blend with pineapple, especially in fresh leaf.
Desserts are an area where one can be as enterprising since they are all about the harmony of taste, flavour and appearance. Spices like cardamom, cinnamon and saffron have always enhanced the sweetness, aroma and lend the dish a unique taste. Spiced desserts are not just exciting to taste but also have their own goodness. Since India is home to a wonderful array of regional spices and herbs, the use of some spices is largely done to cure health ailments and maintain body temperature with that of the season. Saffron is known to warm the body in winters while a cinnamon is supposed to cool it when the temperatures are high. But the use of freshly ground or whole spices like cinnamon, star anise, nutmeg, black peppercorns, chilli, with infusions of spices has developed more recently in a perceived move from artificial essences and flavours. A chocolate cake with the five-spice powder - a mixture of five spices including Szechwan pepper, star anise, fennel seed, clove and cinnamon used primarily in Chinese cuisine but also used in other Asian cookery makes for a great combination and balances out the chocolate with familiar Asian flavours and adds a twist to it, says Chef Kalyan, Pastry Chef LikeThatOnly, Bangalore. He adds, "We are inspired by spices from the Orient and thus the five spice powder combines fantastically with our desserts. In the Kaffir Lime Crème Brulee; the cinnamon crumble plays perfect foil to the June 2013 80 www.spiceroutemag.com
lime notes of the crème brulee while adding textures which balance crunchy and creaminess and not compromising on the integrity of the crème brulee itself.” When everyone is looking for something extra and something out of the box, adding chillies to drinks and especially sweet dishes is catching up quite a lot. “Though it is still in the experimental stage but a lot of chefs do try their hand at mixing chillies in desserts to tickle the taste buds of the consumers now and again,” explains Chef Bonnety, Executive Patisserie Chef at ITC Grand Chola. He concludes, "But such spices do demand caution and innovative mindsets as it may easily overpower the sweetness."

man’ is anything to go by, he surely knows how to doge the competition in tinsel town and woo the audience. Do you enjoy travelling and name some great places that you have been to? Yes of course, I love travelling. In fact I believe that there is a difference between a ‘tourist’ and a ‘traveller’. While a tourist is rather detached from the place he or she is travelling, a traveller on the other hand is more involved. So I consider myself to be the latter as I love to soak in the experience of being at a place and live up every moment of it. So far, I have not really travelled much except a few places like New York, Manhattan, UK, Pakistan and the likes. But I do intend to travel more in future. Do you prefer to travel alone or with company? I am planning to take a trip all by myself to Japan (may be). Otherwise, I am usually accompanied by my family, my wife Tahira or my friends. My next movie is produced by Yash Raj Films ( YRF). It is a romantic comedy in which I have Sonam Kapoor and Rishi kapoor as my co-stars. All that I can share at this point of time is that the subject is based on recession. Having crooned runaway hits, are you also going to sing for your YRF movie? Yes, as of now I am definitely going to lend my voice to one song in this movie. It seems like I have too many passions but acting and singing are surely my favourites and I will contine doing both!

hectic trans-continental itinerary for a corporate high-flyer or a chilled out Caribbean cruise vacation for a retiree, skin care concerns all travellers. The regular office goers do not have it easy either. Also while on a holiday, when you are spending most of the time outdoor, it helps to take extra care of your skin. However, as all woes have an answer, there are some easy tips to make your skin feel better even after long flights crossing geographical boundaries. What is important is to follow these quick and doable tips and allow your skin June 2013 94 www.spiceroutemag.com
and body both to relax in adverse situations.
Be hydrated Water is the essential ingredient for life. Nothing beats it when it comes to hydration – something that your body needs quite a lot during summer. Make sure to always have a bottle of water in your handbag. Nutritious liquids like fruit juices, buttermilk, lime water and any other naturally cooling drinks are very good for summer. They replenish the body, give it essential vitamins and are very tasty.

Protect your skin with scarves, stoles and umbrellas when going out in the sun Stick with the foods you know and eat on a regular basis. This is not the best season to be experimenting with food. Nothing ruins travel plans like an upset stomach and no one enjoys rushing to the washroom every five minutes. Fruit salads with juicy fruits like watermelons, musk melons and cucumbers make for a very fulfilling and beneficial snack during summer. Eat plenty of fruits and give your skin the vitamins it needs.
Saving the skin Sunscreens are literally your summer body armour. NEVER leave home without them. Put on a sunscreen 10 minutes before heading out to let your skin absorb it completely. A sunscreen with an SPF between 20 and 35 gives
ideal protection. Replenish your skin with it after every two hours or so. An afternoon sun is the most dangerous thing you can expose your skin to. So, if you’re venturing out in the afternoon, then give yourself maximum protection. Protect your skin with scarves, stoles and umbrellas. Travelling means dealing with dust, dirt and impurities. Clean your face with wipes containing cleansing properties.
Hair & heat Perspiration can potentially damage your hair a lot. Sweat makes hair all sticky and dirty. Here are some suggestions you could keep in mind to help your hair from damaging. Firstly, clean your hair every alternate day or so. Secondly, it is important to know your hair type and choose June 2013 96 www.spiceroutemag.com
your shampoos and conditioners accordingly. Thirdly, cover your hair and protect it from direct sunlight always. Lastly, choose to go with a compact hairstyle like braids or ponytails to avoid any perspiration damage.
Protection Tea contains tannin which helps in reducing dark circles and swelling, therefore put cool tea bags over your eyes to relax them. Dark circles can also be reduced by applying AHA enriched cream in a clockwise motion with the index finger. Shades are an essential part of any traveller’s kit. Use them to shield your eyes from direct sunlight. (The writer is a well known beauty consultant)

lowing skin comes free of charge to you. Plain water does it effectively. Water works much like oil in a machine; keeping it running smooth. Although all fluids add toward the daily total, consuming plain water is most beneficial. The effect of water is immediate, say overnight. Your skin not only glows but you also feel a lot better after having a glass of water. Your wrinkles will seem less pronounced and your body will work more effectively as the waste and toxins are washed away. This is what this free of cost renewable source of energy does to us.

Wonders of water In order to remain healthy and in full bloom, your every skin cell needs water. It is counted among the most essential nutrients of our body without which our body can’t survive. It is a true fact that we can go a long time without food but can’t go a few hours without water. It is the main secret behind anyone’s glowing skin. A skin care product cannot do magic for your skin if your water intake is not sufficient and according to your body. “Drinking plenty of water helps eliminate the toxins by flushing it out via urination as well as perspiration. Drinking insufficient quantity of water every
day can result in related conditions like constipation, acne, and repeated urinary tract infections. Water also helps in controlling the hunger pangs, thereby controls the craving for food in between meals. All of these in turn reflect in good health as well as nourished skin,” says Dr. Jamuna Pai, Cosmetologist, Blush Clinic, Mumbai.

So, how much water should one drink to extract the maximum benefits? Drinking water only when you feel thirsty is usually not enough. By the time your brain signals your body to trigger a thirst response, you have already gone into slight dehydration.

turnover rate and the bottom line is that your body’s natural moisture will be lost making your skin dry and flaky. So drink plenty of water to avoid skin drying and this will ultimately help you in making your skin healthier and glowing as ever.
Dr. Navin Taneja, Director of the National Skin Centre points out, “Experts recommend 2.5 litres a day, that is about 6–8 glasses, but it depends upon the age of the person and also upon the weight and height.” He further asserts, “Healthy adults, of ideal body weight need about three liters of water a day for

avoid drinking water during and half an hour before and after the meals. If you think about it, it’s only logical to not dilute one’s digestive juices by drinking water along with meals!
Goodbye Wrinkles As we age, the importance of drinking adequate water increases even more. The first signs of ageing are seen as fine lines and wrinkles appear on the face. Dehydration is the major cause of ageing skin. When toxins are deposited in the skin cells, creases on the skin form faster and also rob the skin of its collagen. Loss of hydration in the skin shows in all sorts of ways – dryness, tightness, flakiness. Pure water helps to fight anti-oxidants that degenerate the blood cells and therefore the quality of the skin.

men and about 2.2 liters (about 8 glasses) for women. For overweight people add one extra glass of water for every 7-10 kilograms weight above ideal.” But friends drinking plenty of water does not require going overboard. Too much of a good thing can turn out to be harmful as well. As in everything else, drinking water in moderation, and as per your daily requirement is the key to good health. Drinking water excessively results in water intoxication. “Water is very important for hydration but there are some water based food items also that can hydrate the skin in summer such as Cucumber, coconut water, water melon, green salads, apples, grapes, berries and carrots,” informs Dr.Taneja. Instead of following myths and fads it is good to follow age –old rules. One such is to June 2013 104 www.spiceroutemag.com
“You’ll look younger when your skin is properly hydrated. Water helps to replenish skin tissues, moisturizes skin and increases skin elasticity. Dry skin has less resilience and is more prone to wrinkling,” states Nagendra Pal Singh (Director & Co-founder of Aaranyaa). Water from within the body actually affects the skin far more than water from outside. But products and treatments also result in hydrating the skin. Nagendra Pal Singh, highlights his brand’s USP, “Aaranyaa products are natural and contains almost 55-90% water. Being lighter in texture, they get absorbed in the skin very quickly and hydrate from within. All products are made using organic actives, which get dispersed very easily in water hence difference in skin tone can be observed after one or two applications.” Asserting on this topic Monisha Gupta, The Metropolitan Hotel & Spa updates us on some water based treatments one can indulge in. “Water therapy in a spa is a good option for cooling your body in the scorching summer heat. Hydrothearpy helps to warm-up your skin and open the pores. Plunge pool is the next step after hydrotherapy to cool down the skin.” So, while we wish for ‘Longer Lasting Youth’, remember: before grabbing that next cup of coffee or gulping down an ‘energy drink’, go for a big glass of water. But be warned – wrinkles once formed do not disappear by drinking more water. Drinking water is a preventive measure and not a cure!

informs Tushar Vashisht, Cofounder & CEO of HealthifyMe. He further informs us about the key challenges they faced while developing these Apps, “Firstly, Fitness is all about what you consume and what you burn. So you have to cater to both food and fitness. Take food for instance, we had to hand curate Indian foods - a laborious task, since unlike USDA, Indian foods and raw ingredients' nutrition value are not easily available. We had to create a strong digital (perhaps the most comprehensive Indian foods data ever made) and go further from there. Secondly, given that many of our target customers in India aren't typing savvy, we had to innovate. Our premium customers get to take photos of what they have eaten and we convert that into nutritional content.” Smartphones are here to stay and with these health and fitness smartphone apps they can make your workout more convenient, interesting, and productive. ave you ever wondered what a gift is all about? It is defined as something that can make a person happier. But let’s face it that in our part of the world, gifts are random, recycled and almost predictable. So it becomes an ‘effort’ on the part of the giver to look for new ideas every time and that in turn translates into lack of surprise on the part of the receiver. However, things are changing fast and people June 2013 120 www.spiceroutemag.com
today are moving towards customised gifting, which is a joy for the receiver.
Signature st yle gifts Today, individuality is what helps a person stand out in the crowd, whether it is through one’s clothing, make-up, personality or social skills. Since we live in a materialistic world, a gift can change the equation you share with a

person for the better or worse. Not so much from the point of view of the price tag, but the thought that has gone into the selection. So like home-fashion or car graphics, the concept of customized gifting goes on to reveal your signature style. Generally women seem to have a better edge over the men in most cases, when it comes to gifting. But then who actually has the time to stress over what to buy and where? Of course, now there are online stores selling products that are just a click away but they may or may not turn out to be as great when actually delivered. So thanks to the new-age retailers who can bail you out of this situation
with customized gifting options. There’s a host of them to opt for, across all occasions.
Pampering ideas While memories are intangible, a photograph can capture the moments forever and freeze them in time. Simply framing a photograph and gifting it is passé, now you can do much more with the latest lazer technology in place. So get that old photograph splashed across a T-shirt, pillow covers, embossed on a coffee mug or even a plate, a bunch of them printed as a calendar and see what a difference it will make to the emotional quotient! It is innovative as well as highly personalized and that is what really counts. Rashid Sheik, sales person at the Gemini Photo Studio & Stores shares, “ We get people from all age groups flocking to our store with their photo ablum to get their gifts designed. For t-shirts we charge `550 and for mugs it varies from `250 to 300. It takes only a day to put them together, exactly the way our clients desire. ”
Foolproof options If you do not really know the person well and cannot decide what to gift, then you must opt for foolproof options. It is a kind of universal truth that flowers and chocolates can be gifted to any one, of any age and for any occasion. But June 2013 122 www.spiceroutemag.com

Aesthetically packed useful gift makes sense as one can utilize the content and retain the packaging too
just a random selection of flowers and a regular pack of chocolates can come across as very ‘off the shelf ’ and rather uncouth! A smart packaging always makes things more attractive with all the pun intended! I love chocolates and would love to believe that everybody else also possesses such a sweet tooth. But picking up a bar of chocolate or a few mix and match, even wrapped together with a gift paper can appear quite childish. They work best with kids who cannot wait to tear off the wrapper and get to the content, but for an adult it needs to be better curated. So a nicely put together gift hamper works the best. There is no fun in picking up a gift that misses your signature style or that personal touch. Amit Thakur, Sales executive of Cocoa Trees outlet says, “We allow our clients to pick and mix the products to create their customized hampers. In fact, we do pack in products like a purse or a tie along with chocolates, cookies or fruit juices if they want as a unique hamper. So they can be as creative as possible with what all they want to put forward as a gift. There are add-ons like interesting wrappers, ribbons, bows, toys, artificial flowers that we use to decorate them. It hardly takes 10 minutes and there is a specialized staff to take care of this department.”
Better when useful In India gifting a ‘show piece’ is a popular thing to do but it is as lifeless as it sounds. So just June 2013 124 www.spiceroutemag.com
grabbing a nice looking artifact can do little for a person who does not really care much about art. Also, every house has its own ambiance, so you cannot have a painting, a vase, a Buddha statue randomly popping up in the living room if it does not go with the rest of the home décor. Rather an aesthetically packed, useful gift makes more sense as one can utilize the content and retain the packaging as well. It literally goes like the phrase ‘Eating the cake and having it too!’ I was very excited when a new friend gifted me a box of Basilur Tea out of the blue. There was really no occasion as such and I initially thought it was a book! It was actually the innovative packaging that excited me even if I do not love drinking tea. So the premium tea packs went to my mom in the pantry while the metallic case in the form of a hard bound book with exotic embellishments found its place on my office desk. It not only adds beauty to the otherwise corporate set up but also comes useful for tugging in pens and stationery. So the point is that though my friend did not imagine what I might have done with the gift, the smart retailer already had a customized option that would go a long way to be useful and how! So there is no special tip about gifting apart from the fact that no matter how you go about selecting a gift, what will really make an impression on the receiver is your personal touch. So let your imagination help you customize the gift for the special one!

Like Aditi, another grandchild found something unusual in his grandfather’s old cupboard. A glimpse of an old romance captured in nothing but four negatives cut-up June 2013 128 www.spiceroutemag.com

Jason Scott Tilley, had seen many pictures taken by his grandfather, Bert Scott who was born in Bangalore in 1915 and worked as photographer with a national daily newspaper, but he had seen nothing like these negatives. Jason admits, “I don’t think my grandfather would have wanted anyone to find these negatives. They were secret of his adult life and he kept them very safe”. Few years after his grandfather’s death Jason found these images. With the help of Bert’s photograph’s and a faded scribble on an old photo album, he

solved this riddle named Margurite Mumford. Mumford was a student of Lawrence Memorial Royal Military School (now called The Lawrence School) in Ooty, where Bert’s dad owned a summer house. From the amount of pictures that he found, Tilley knows how much Margurite must have meant to his granddad.

The Scotts left the country during the troubled times of the partition. It was after lot of research that Jason finally got in touch with Margurite’s daughter Alecia, he found that now Margurite was 96-years-old and lived in an old age home in New Zealand.
Collector's diary Sometimes an old photograph can speak more than a well written page of a personal diary. It can account stories that are often forgotten with time. A photograph is not just anecdote of someone’s personal history. Anusha Yadav proves this notion very well. A photographer, Anusha started the Indian Memory Project to make an online archive of visual and oralhistory that traces personal history of the Indian subcontinent, its people and cultures.
Save your treasures
On her fascination with old photograph’s she elaborates, “While growing-up every image had me pause, a story about it became irrefutable to my imagination. I would find myself time travelling; imagining myself in the subjects’ place and time”. The Indian Memory Project bring out some of the most fascinating stories of Indian diaspora, of a time that was quite recently hidden in some wooden boxes.
Keep Away - For longterm stability, store your photographs in specially designed storage materials. Keep them away from bright light, extreme humidity and fluctuating temperatures. Organising- A collection of loose images need to be organised first. Black paper photo album or magnetic photo albums are not safe options. Instead, look for products made of polypropylene labeled archival safe.
Taking in account the importance of old Indian photographs, Piyal Kundu, a graphic designer by profession started with his blog oldindianphotos.in. “When I started browsing digital archives, I couldn’t find a single website dedicated to just Indian history. However, he clarifies I am not a collector of original vintage photographs. I started this blog to properly document these images for archival and educational purpose” says Piyal. Today his blog has more than 2,000 vintage photographs going back to 1850. This visual database is a dreamland for all the history lovers.
Touch - Avoid touching the image, finger oils can attract dirt to collect and may provide for mole spores. Try wearing light cotton gloves. Beyond Repair - Incase of very old photographs that are beyond repair, consult an expert. Look for a conservator, you can start by visiting a nearby museum.
It’s time to open those rickety cupboards and take out old photo albums. Who knows, what you may find in there! June 2013 130 www.spiceroutemag.com

lobally, kidney disease is the third biggest killer after cancer and cardiac ailments and in India alone more than 200,000 people suffer from kidney failures per year. Yet there is not much awareness among the masses about the same. People today are partying with all kinds of junk food, marketed food and preserved foods which are high on salt content while maintaining an air-conditioned lifestyle so June 2013 132 www.spiceroutemag.com
that not a droplet of sweat (body’s major salt flushing mechanism) shines on their forehead, rues Dr. Rajan Ravichandran, one of the top nephrologists of the country, who has made it his life-mission to educate the people about kidney diseases.
Spreading awareness It is a painful life when one’s kidneys are unfit

to process daily body waste. Issues range from difficulty in passing urine to puffiness around the eyes, feet and hands. Multiple award winner Dr Ravichandran insists it is imperative to cut down on our daily salt intake and wage a war against the disease. His organisation ‘Sapiens Health Foundation’ (SHF) is chiefly working towards educating the youth about prevention of the disease and spreading awareness to fight the disease by its early detection because “a kidney can function normally until it’s damaged 90 per cent”. Started in 1997, the modus operandi of Sapiens Health Foundation is to help people go through the complete treatment. Since kidney treatments are very expensive and in many cases people have to discontinue treatment mid-way because neither the government or private hospitals can help with money for the treatment. At this stage, the SHF pitches in and
provide them money for drugs or dialysis or whatever is their need. Research shows diabetes is the commonest cause after high blood pressure for increased kidney disease cases. In almost 40 per cent of adult Indian population these ailments are not detected. A large number is not even aware that they are suffering from kidney disease, while in other countries rate of detection is high. “It’s a big myth that the cases of hypertension are increasing only because of growing stress level, instead it is the high salt intake (found in fast and preserved food) which is creating much of the problems. Salt in our foods needs to be cut down drastically. Sadly, there are no symptoms for chronic kidney diseases until the organ has sustained 90 per cent damage. Kidneys can still keep functioning as normally as ever,” reveals Dr Ravichandran. June 2013 134 www.spiceroutemag.com
“Anything between 3-5 gms per day of salt is sufficient for a person but we consume around 10-15 gms per day. Earlier, when there were no air-conditioners we would sweat a lot and that is why pickled food and a bit of high salt was important for people in tropical countries like ours to keep the blood pressure normal. For instance, pickles and salt roti are staple for a labourer, otherwise he will faint. But for those sitting in air-conditioned rooms don’t sweat - so their body’s salt excreting mechanism in not fully functional and pressure is on kidneys, he says.
Early detection But is there no way to detect kidney disease early? And Dr Ravichandran, who is also a guest faculty at the IIT, Chennai, replies in a big aye. “Yes, we can. It is important for everyone to get screened for albumin in urine and that is the only way we can detect an abnormal kidney functioning at an early stage.” “Such test should be an annual affair and even children should undergo this test. There is also a home monitoring detection kit, which is in a strip form and we provide it with colour code for the results. It was developed by IIT, Chennai three years back. But it is not available in open market,” he says. Mere controlling of salt consumption has a major part in protecting our kidneys as high

salt consumption is the reason for high BP which then impacts kidneys but there are other factors too. Such as long term medication, especially painkillers and antibiotics. “Any kind of painkillers, if taken for a long time or very frequently, can damage kidneys. This advise is not restricted only to allopathy medicines but also traditional form of medicines like ayurveda and homeopathy. Such as for example, there is a treatment for baldness in homeopathy which has a lot of mercury in it because one of the side effects of this heavy metal is growing hair. So one has to be very conscious,” explains Dr Ravichandran.
Help in need Asked what was the inspiring force behind the foundation and Dr Ravichandran has an honest answer. “One of my patients, who I cured of a rare disease, gave me the idea. Earlier, I would donate money for a cancer foundation but after this suggestion, with an initial deposit of Rs 3.50 lakh we stated this foundation in which we help the patients monetarily and also primarily educate people on how they could prevent kidney diseases”. However, there is no concentrated effort to raising funds as many rich patients or their
We help the patients monetarily and primarily educate people on how to prevent kidney diseases relatives donate money when they are happy after being treated. Sometimes even if a patient is not cured, his/her relatives give donations out of empathy and sympathy. “Around 15 years back, one of my patients died but today his relative still believes in giving donation to our foundation. So it’s more by word of mouth that we receive donations. “Earlier, we had also thought of opening a hospital for needy but acquiring land is very difficult and also very expensive. So now our main focus is on educating people, especially the younger population. I give a lot of lectures in colleges, show them documentaries, go to Rotary Clubs and other social gatherings. We also distribute brochures on kidney diseases. We also operate two websites –www.sugarbp. org and www.sapiensfoundation.com,” he said. Worldwide, Japan has the best system as
they annually screen children in school for albumin after they recorded high number of kidney diseases due to some allergy. Even USA has woken up to this problem and government has ordered to cut down the salt contents to 1/3 in all preserved foods which will also save their billions of dollars. However, Dr Ravichandran rues the misplaced priorities and laid back attitude of government authorities in the Indian health sectors . “Our government needs to wake up and enact a law for specifying the salt content in the preserved food. There are other specification but not about salt. There is no special proramme for preventing kidney disease. We also need another salt-satyagrah in India for at least 5-6 cases per 100,000 are detected at late stage while the number of cases with early stage disease may be much higher than this.”
Keep in Mind In almost 40 per cent of adult Indian population kidney ailments are not detected. Body needs 3-5 gms of salt per day but we consume around 10-15 gms per day. Screening for albumin in urine is the only way to detect an abnormal kidney functioning. A group of active enthusiats on World Kidney day

“The visually impaired too should have the opportunity to be a part of sporting glory”, says Samarthanam Founder and National Award winner G.K. Mahantesh emphatically. Mahantesh and his team have actively promoted sports for the visually impaired over the last decade, as a rightful pursuit and as a platform for their physical and social development. Mahantesh’s contribution to sports for the differently-abled was recognised with the the NDTV Spirit of Sport Award for 2011, in the Against the Odds - Lifetime Achievement category.
It was a game among equals. Thirty six matches were played at two grounds exclusively identified for its excellent facilities which made it possible for these visually impaired participants to play in ease. BCCI (Indian Cricket Board) qualified umpires and scorer were part of the initiative and the tournament was very well received with great support from sponsors and media persons alike. All these went a long way in giving the well-deserved recognition for blind cricket. All efforts paid off when India lifted the winning trophy at the end of the tournament. Players were felicitated by the chief ministers of state and the Honorable President of India, for this feat, however this form of the sport needs more appreciation and recognition, which they rightly deserved. Promoting sports for the differentlyabled is not a new ballgame for Samarthanam. June 2013 140 www.spiceroutemag.com
Samarthanam athletes took home seven medals at the 17th National Sports Meet for the Blind (2010). Samarthanam hosted the FIDE rating National Open Chess Tournament for the Blind 2012 and funded the Indian blind cricket team’s tour of England. The Indian team, in collaboration with Samarthanam, also travelled to Pakistan to play the Indo-Pak series.
Success stories Sports and sportsmanship always has the power to make one reach the stars and here too. Samarthanam has seen many lives change with sports. teamwork, fitness, strategic planning, competitiveness and sportsman spirit, have found place. The focus is on their skills and not their disability. When Girisha Hosanagara Nagarajegowda won the silver medal at the 2012 London Paralympics, everyone at Samarthanam rejoiced. Girisha says, “I had no money, no rewards, no job, and not one person to support me. I enrolled myself for BPO training with Samarthanam and was pushed to restart my sports training.” Sixteen years ago, Mr. G.K. Mahantesh believed there can be outstanding achievers among the differently-abled if they have faith in their abilities and a chance to prove their worth. This conviction was what drove him to
use the `45,000 that he received as an M.Phil. scholarship ago, to establish Samarthanam (Sanskrit for ‘empowerment ‘), a not-for-profit organisation that provides opportunities to the differently-abled and economically underprivileged. Today, the team works to deliver 250,000 mid-day meals a month. Five thousand children have been educated in Samarthanam’s schools, and over three thousand government school students are beneficiaries of the Library programme. These, and other services, are provided free of cost. Samarthanam strives to create opportunities and drive change. Several innovative projects have been launched and successfully implemented. ealty markets across the country have grown by leaps and bounds. Southern India has for long been the silent crusader, building and strengthening its real estate development as one of the most sought after destinations in the country. So much so that cities such as Hyderabad, Bangalore, and Chennai have attained a place on the global real estate map, a status that was limited just to Mumbai and Delhi in the past.

There is an increase in the new opportunities which are created by the influx of large scale domestic and foreign players. These factors have led to a rapid growth of the real estate sector in all the cities. Further this has also transformed the real estate sector into a lucrative investment opportunity. This has attracted venture capital and diversified sources of funding in addition to providing new opportunities for new construction technologies and

others. The IT sector, which churns out huge power jobs for educated Indians, is the reason behind the real estate boom in South India. These jobs are indirectly helping the Indian real estate by taking it to new heights of prosperity. For companies that are looking for offshore business, India has become a favourable investment destination due to low cost of labour. In Chennai, Hyderabad and Bangalore, areas such as Oragadam, OMR, Porur, Tellapuur, Miyapur, Shamshabad, Kutatpally, Punjagutta, Jubilee Hills, Whitefield, Sarajapur Road, Kannakapura Road and Banerghatta Road have come up as lucrative real estate deals.

OFFICE & RETAIL SPACE While South Indian cities constitute nearly 45% of the country’s office space, the stock of 140 million sq. ft in these cities is projected to grow at a CAGR of 8% for the period 2012 - 2016, lower than the projected national growth of 11%. This implies that the southern cities, particularly Hyderabad and Bangalore, are relatively rationalised in terms of medium term supply of office space, and the cities have chosen a strategy of pursuing selective quality developments over rapid expansion. So far we have successfully completed 14 million sq. ft. of plotted development and 3 million sq ft of Villas & Apartments. Presently we have 5 ongoing projects covering 3.4 million sq ft of plotted developments and 2.1 million sq ft of Villas & Apartments. This year we look forward to launch another 80 acre development on Chikbalapur Road and are looking at some options on Hoskote road as well. What is Concorde Group’s differentiating factor and how do you reach out? In Concorde Group, we don’t believe in charging the consumers the unjustified brand premium which is a deflection from the market price. In

most cases brand premium is 1 to 2 years of price appreciation, a burden that most real estate developers charge the consumer. Around 50% of our customers are overseas, online and social media play a strong role in developing and maintaining relationships with our consumers. How do you see the next decade for real estate industry? We foresee a lot of saturation in the industry, with more standardized practice, transparency and professionalism. The prices will appreciate steadily with shorter cycles of volatility. We hope the government sees the possibility of growing the cities vertically which in turn reaps in a bucket load of benefits, in terms of Government expenditure, infrastructure quality, security, transportation, water & electricity lines, and connectivity. What is your advice to people who want to invest in property? One should pick up a property in prelaunch with a reputed builder with good on-time delivery record. In the Bangalore market such investment should fetch around 35 - 40% IRR on your equity in a 2.5 to 3 year period. Hot locations in Bangalore are Sarjapur Road, Whitefiled, Kanakapura Road, Electronic City and of course North Bangalore.

Advent of mega industries like ONGC-MRPL, the emergence of IT and BPO sector and the city’s steady rise as a hub of education and healthcare have changed its economic profile. As a result the real estate sector has been a riding on a boom for the last decade. The increase in the number of affluent families has pushed up the need for quality housing and the most attractive options in luxury apartment projects have come from Land Trades, the city’s leading builders and developers. Established in the year 1992, Land Trades has completed 16 projects with 379 flats aggregating to 54,3855 SFT area. Presently, it has three projects on hand with 378 flats in 64,0850 SFT area. South India’s residential market has been an ardent follower of the ‘affordability’ mantra, with more than 80% of the new launches in the past two years being priced under `4,000 per sq. ft. As a result, the residential markets of South Indian cities have remained resilient in the past few quarters, relative to the significant decline recorded in the sales volume of Mumbai and NCR-Delhi . Affordable housing

A
great house is every persons dream. However, many a times one has to make a compromise keeping in mind the cost factor while buying one’s house. Not any more. Sowparnika Projects, the champions in affordable housing sector, offers the best in the most competitive rates.
FDI of upto 51.0% will boost the retail real estate market POLICY Firstly, the much-debated policy on FDI into the multi-brand retail sector was finally implemented in September 2012. The policy now permits FDI of up to 51.0% into this sector, which is likely to boost the retail real estate market with the entry of international products, practices and technologies into India. Back-end retail infrastructure such as logistics and warehousing will receive a significant boost from this policy, as 50% of the total FDI into the retail sector is directed at these segments. Secondly, The Government of India has deferred the implementation of DTC from 2014 to 2015, which gives occupiers more time to capitalize on their expansion decisions while carefully negotiating with developers. Thirdly, the delay in the implementation of DTC has resulted in a good portion of the office space demand for IT SEZs to spill over from 2013 to 2014. With the demand for IT SEZ space to remain healthy in the next 12-18 months, we expect the developers of IT SEZs to focus on execution and completion of projects for the duration, to ensure ready supply to match the immediately upcoming demand. The focus of Indian real estate is shifting from Tier I to Tier II cities, and the southern region is also embracing the same, with secondary hubs developing in Kochi, Coimbatore, Vishakhapatnam and Mysore, that are persistently striving for higher milestones.
Sowparnika Projects started with 30,000 sq.ft and moved up to 200,000 sq.ft by 2009. From 2010 onwards, we have moved up the ladder and are currently executing over a million sq.ft of projects in Bangalore, Trivandrum and Coimbatore. Expansion plans in the 3 states of Karnataka, Tamil Nadu and Kerala are going strong besides becoming a pan India player in the affordable segment. Along with all the above growth and expansion plans, Sowparnika is intent on driving the lean six sigma culture with cost, time and quality as the prime features of any projects. The demand for quality yet affordable living space is on the rise, considering the increase in number of nuclear families. We are in the process of launching low cost 2BHK houses in the `10-15 Lakh price range for the growing lower and lower middle class populace of Bangalore. Our endeavour towards affordable housing are also supported by

Principal on the housing loan is an eligible deduction for the purpose of Sec 80C too. If the residential property is a long term capital asset and that the capital gains are invested in purchase or construction of a residential house within three years of sale (Sec 54 EC of Income Tax Act), exemption from capital gains is granted. Changing demographics also support the affordable real estate market in India. With more than 2 million square foot of affordable yet aesthetic living spaces already constructed, 2 million+ sq ft of projects under development, on-time delivery every single time, and the quality of construction has made Sowparnika a brand to be relied upon for sound real estate investments. With emphasis on providing affordable living conditions to the masses, we are constantly moving forward. The success of these endeavours have been recognized and rewarded by LIC HFL, NDTV Profit and ET Now in 2012 and 2013. “ We pride ourselves of having a multitude of satisfied clients who will look at a repeat purchase because of our professional approach, quality construction and value for their investment ,” For details of our projects, visit our website www.sowparnikaprojects.com.

Can Cooler/Warmer Ever thought of having a contraption that could keep your Coke chilled quite like a fridge but squat squarely right on your desktop? And drawing power from your laptop or computer’s USB port for this task? Yeah, while this clever contraption can hold only one can or glass at a time, it needs only 5 volts of power to keep it humming and weighs just over 460gms. And oh, flip a switch on a chilly day and the playand-play gizmo keeps your coffee warm as well. You can plonk cans, glasses as well as bottles into it to cool down or heat up, as you please.
Necktie Cooler Pin

Wearing a necktie in the heat of summer can be quite gruesome. But it is an occupational hazard that you need to endure if the demands of propriety in your job require it. So what can’t be endured has to be cured with a work around like this Necktie Cooler Pin. Tucked under this ordinary tie-pin is a battery-powered fan. If you’re seated at your workstation in front of your computer you can get rid of the battery attachment and plug in a USB cable to keep the fan under your chin whirring. reativity lies at the heart of every individual, what is needed is the urge or willingness to indulge it further. And what better time can it be than the long vacations when children are home for over a month. There is too much time at hand. Plus the weather outside is very hot to prevent us from moving out. In a scenario like this it makes perfect sense to engage children in useful and productive work. I have seen my little one proudly showing me a paper mache tree that they have made while I was away at work. At times they have made an elephant or a huge football by way of Origami. I feel like a proud mom. It’s another story that the mess left by them leaves me gasping for breath, with newspapers, fevicol, water colours and paints strewn all over the place. Come to think about it positively - a child learns so many things while working on the creation of a craft or an artwork - patience, discipline, concentrated attention, systemic approach, aligned thinking. As a parent it should be our duty to inculcate this habit among our children also because a lot of stuff that lies waste in our house can be creatively designed to make useful things. There are Eco Clubs in schools that play an important role in creating environmental awareness. These clubs are the means by which students can be empowered to participate and take up meaningful environmental activities and projects. Many programmes and projects are formed and combined together to make a framework of Eco club. Preparation of eco-

Let’s run through some activities that children can indulge in during their summer vacations. Brooch ribbon necklace Treat your friends and family (and yourself ) to jewellery that shimmers with style. Start with a handful of inexpensive costume pieces brooches and earrings with openwork designs - and give them a new-old coppery patina using spray paint. Then link them together and add pretty pink ribbon. No one will guess you didn’t break the bank. You’ll need • Costume brooches (we used 6, about 2 inches wide) or earrings (we used about 5 pairs, 3/4 inch to 1 1/2 inches wide) with openwork designs. • Wire cutters • Sandpaper
• • • • • •
Clear nail polish (optional) Copper spray paint Paper towels 1/4-inch jump rings Needle-nose pliers 1 1/2-inch-wide silk ribbon, cut into two 24-inch lengths
Teacup lights Every household has old cups which have given way to new ones or have just been left behind while others from the set have been all broken. Most of the time we are at a loss as to what can be done with such pieces. Antique tea cups still make sweet gifts when fitted with candles.
For an antique look, coat pieces with spray paint, then quickly rub off most of the paint with a paper towel. Let dry.
You’ll need • Nested pans • Partially burned candles • Candy or candle thermometer • Tongs • New wicking • Teacups • Wick sustainers • Wooden skewers
Using jump rings (metal rings that open and close) and pliers, connect pieces in a pleasing order. Attach a ring at each end: Thread each ribbon halfway through the end rings; knot each ribbon at ring if desired. Tie behind neck to flaunt your creation.
How to make In a small pan set over a larger pan of simmering water, melt down old candles; clip the thermometer to the upper pot, and keep temperature at 185 degrees. Remove old wicks with tongs.
How to make Snap off brooch or earring backs using wire cutters, and sand down any sharp bits so they won’t catch on clothing. For extra protection, apply clear nail polish to the area; let dry.

a 2-by-2-inch square of female Velcro to the centre of each end of the towel. (Be sure to sew the Velcro to the side that has the label, which will be the inside of the bag.) Attach the Velcro to the ribbon: Cut the ribbon to the appropriate length (for a handtowel-size bag, cut 1 yard). Sew a 2-by-2-inch square of male Velcro to each end of ribbon. Fold over the ends of the ribbon, and fold over again, creating two folds. Hold the ribbon in place using a binder clip, and tuck the Velcro under the fold. (Folding the ribbon over protects it from fraying and creates a neater line.) Once the Velcro is secured in place, sew each side of the Velcro onto the ribbon.
