Belgian Modernism. OTM, one of India’s leading travel show recorded an all-time high attendance this year. The show was held in Delhi in mid February after a grand success in Mumbai which saw 13,000 plus visitors in three days. The Delhi event saw the participation of 400 exhibitors from 13 countries apart from India. The largest international participation was from Sri Lanka and China, the Partner countries of OTM Delhi 2013, with large international presence also from Canada, Philippines and Bangladesh. Other international participants included Dubai, Indonesia, Mexico, Tanzania, Thailand, Turkey, Zambia and many others.

4. Water drawing festival Omizutori in Japan This March, get set and enjoy Omizutori, a festival that goes back 1,000 years. If you happen to be in Japan in the month of March, make sure you reach Todai-ji Temple where Buddhist priests draw up healing waters and run about with huge pine torches. Priests at Todai-ji Temple confess their sins before the eleven-faced Kannon enshrined in Nigatsudo Hall, and also pray for world peace and a harvest for 14 consecutive days. During this period, an event known as Otaimatsu is worth seeing. The Omizutori, the highlight of this event, is performed early on the morning of the 13th. Water which only springs forth in front of the temple building on this very day is drawn up and offered to the Buddhist deities. The event starts from March 1 at Todai-ji temple, Zoshi-cho, Nara City, Japan.

Monaco aims at environmental protection Ushering in the new era of responsible environmental protection, the Principality of Monaco is taking all the appropriate steps to initiate and establish green tourism in the country. The Principality was recently honoured with the much reverred ‘Ray of the Day’ title by Climate Action Network (CAN), a no profit organization which raises awareness among the participants of climate change conferences. The title is rarely awarded by this organization and only to select countries for their exemplary campaigns in support of the climate. Given the context, Monaco received the “Ray of the Day” for the announcement to reduce the Principality’s emissions of green house gases by 30% in 2020.

6. Glenn Mcgrath to be immortalized in wax, soon Australians have chosen Glenn McGrath as the next Aussie sporting star to be immortalised in wax at Madame Tussauds Sydney. A tense six week voting period saw the top spot change hands a few times, with cricket superstar McGrath being the final victor. McGrath met with a team of sculptors from the UK who took over 250 different measurements along with exact colour matches of his eyes, skin tone and hair to make the final figure. McGrath also had to hold his chosen pose for approximately three hours for precise measurements. The team will take a further 800 hours to create and perfect the bowler’s figure. “I have achieved many milestones in my cricket career but being approached by Madame Tussauds Sydney was a first. I am overwhelmed that the nation has chosen me.”

8 8.Bodh Mahotsava celebrated in Bihar Bihar chief minister Nitish Kumar recently inaugurated the three-day Bodh Mahotsava at Kalchakra ground, around 100 meters north-west of the world heritage Mahabodhi Mahavihara. Chanting of sutras by Buddhist monks marked the opening of Bodh Mahotsava. Artists from Vietnam, Srilanka, Laos and Bhutan presented fascinating performance. Meanwhile, in his address the chief minister said that to invite more tourists to Gaya and Bodhgaya there should be regular domestic as well as international flights operating from the Gaya international airport.

Poised against the snow-clad Dhauladhar ranges, being lively yet tranquil, this hill resort is a perfect holiday getaway for Delhiites. I will never forget my first view of the principal township of Kangra district. I had taken an evening bus from Delhi. Early in the morning as I disembarked from the bus, Dharamshala beckoned with its wide spread of
the dense pine and deodar forests. The roads were completely deserted, perhaps it being the morning. But at other times of the day, the streets were strewn with more tourists than locals who were mostly Tibetans. The town is divided into two distinct and widely separated sections, Upper and Lower Dharamshala, which differ almost a thousand metres in height. Dharamshala

rose to international fame after it became a temporary headquarter of its celebrity resident His Holiness the Dalai Lama in 1959-60. The Upper Dharamshala is also called Mcleodganj. There is also a large Tibetan community who have made this place their home as the Tibetan Government in exile has set its head quarters here for over three decades. Situated at 9 km from Dharamshala, Mcleodganj is often called the Little Lhasa.
Mist y Mcleodganj The lush green of Dharamshala is contrasted by the fiery red of the Tibetan lamas in the Mcleodganj. The impressive monastery of Dalai Lama has larger than life images of the Buddha, Padmasambhava and Avaloktwshwara. The large Tibetan community and the presence of traditional architectural designs drawn from Tibet have enhanced the mystical beauty of the area. The Tibetian Institute of Performing Arts is just a kilometer away and organises a 10-day festival from the second Saturday of April.
I stayed in Dharamshala, which is a busy commercial centre in the lap of nature, and witnessed the night life of Mcleodganj which retains a British flavour and colonial lifestyle perhaps because of the influx of foreign tourists more than the Indian nationals. Currently, it is a very popular hang-out for foreigners and students of Buddhism. It is also becoming a popular jaunt for international as well as domestic budget tourists and is on way to becoming a backpacker ghetto. Though Dharamshala has its attractions, too many

people may rob you from the feeling of calm and tranquility. The Dalai Lama frequents the place and meeting him can be one of the high points of your trip to Mcleodganj. Every year in February-March for 10-days or so, and occasionally at other times, the Dalai Lama holds public lectures. Registration at the Tibetan Branch Security Office (near Hotel Tibet) is necessary. It was indeed a divine experience to visit the monastery in Mcleodganj which was so sprawling and crowded and still peaceful inside. I spent around two hours there without realizing how much time I spent there. I had planned to partake my dinner at a Tibetan restaurant but I was a bit late after leaving the monastery and then having feel of the locales hereafter. Mcleod Ganj is small enough to be navigated on foot. Negotiating through the Mcleodganj roads which were flanked by small-time shops and filled with the presence of Buddhist lamas, I reached a late night pub. It offered a perfect ambience, food, service and timings from the foreigners’ point of view. The youth mixed with the gypsy crowd would forget itself in the pop music and dance on the theque.
Food-lover's paradise The next day I decided to materialize my plan to eat food at a Tibetan restaurant and I had sumptuous piping hot momos, stew and rice. I summed it up with tea which really was the best bet so far here. I also bought some thangka paintings, T-shirts and some silver jewellery with Buddhist motifs. The stuff was a real good buy as I have not found anything comparable in Delhi or even in Leh. March 2013 36 www.spiceroutemag.com
Dharamsala unplugged Dharamsala can be approached by air from Gaggal airport, at 14 km distance.
Pathankot, the nearest broad gauge railway station is 85 km away. The toy train station is 17 km at Kangra.
For local handicrafts visit Kotwali Bazar, Tibetan handicrafts and carpets are available at Mcleodganj. There is also a Kangra Art Museum which displays arts, crafts and rich past, artifacts that date back to the 5th century. It includes a gallery of Kangra’s famous miniature painting and a representative collection of sculptures, pottery and anthropological items. Shamianas and dresses used by local royalty, old carved doors, jails, lintels and pandals are also on display Coins, jewelry and manuscripts also makes a part of the treasure trove. The charming church of St. John in the wilderness is situated here and this is the final resting place of Lord Elgin, a British Viceroy of India during the 19th century. Numerous ancient temples like Jwalamukhi, Brijeshwari and Chamunda lie on the plains below Dharamshala. Another major attraction here is the international cricket stadium, where I had covered an India-South Africa match which ended with no result like many other matches here, thanks to the rains which would not let the covers to be lifted for long while the outfield was mostly slushy. Although in winters, the temperature can drop to freezing point, during summers, the climate is mild and make it a great trekking stretch. The snowline is perhaps more easily accessible at Dharamshala than at any other hill resort and it is possible to make a day’s trek to a snow-point after an early morning’s start. Between May and October, the Dhauladhar ranges offer an enormous variety of trekking and rock climbing options while the 20 km stretch of the river Beas between Nadaun and Pong Dam offers ample opportunities in angling for Mahaseer.

o a casual visitor who has wandered from Chennai to Mahabalipuram, the town by the sea comes as a shock to the system. A person comes prepared for the Shore Temple, alive to stories of its antiquity and magnificence. But what he is absolutely unprepared for is the wealth of heritage that dots every bit of this tiny place, making the temple just one among many attractions the place holds.

The Shore Temple seems to shimmer like a mirage, rising from a confluence of blue where the sky meets the sea. When viewed at first light, the temple seems to be grey in colour from a distance, turning almost golden up close. As the sun gradually comes up, the temple’s silhouette against the glowing eastern sky gives it an alien feel in this otherwise nondescript Tamil village. shrine against any intruder. Closer though, the figures are shadows of what they once were, their sharp features being reduced to mere outlines. The temple is covered with rock cuts, a celebration of Hindu mythology by artists given the freedom to create a shrine whose glory would last long after its patron-builders have faded. As a person wanders through Mahabalipuram’s lanes and moves towards the sculpture-covered hills inland from the Shore Temple, a wealth of heritage presents itself. The heritage in the village can broadly be classified into five categories, cut out of solid rock or rathas, caves with sculpted remains called mandapas, temples such as the Shore Temple, sculpted scenes on the sides of hills and a fifth category that comprises isolated rock cuts.
History in stone Pride of place after the Shore Temple goes to the five rathas named after the Pandavas. The Draupadi-ratha, Arjuna-ratha, Bhima-ratha, Dharmaraja-ratha and Nakul-Sahadeva-ratha together constitute the earliest form of such

architecture observed in India. The lifelike carvings on the rathas give them an energy of form lacking in today’s temples. It does not take much effort to imagine these chariots coming to life and rushing into battle with the Kauravas. The sculpture that leaves visitors awestruck when they enter Mahabalipuram is the giant open-air relief called ‘Arjuna’s Penance’. This is more true of casual tourists who come seeking the Shore Temple. They are stunned by a massive rock on the side of a hill, every inch of whose surface is covered with carvings. The carving has been done on two large boulders with a fissure in between. The theme is taken from the Mahabharata in which Arjuna performs a severe penance to please Shiva to receive the Pashupata weapon from him. In this depiction of the epic scene, various Gods, celestial beings, wise sages and even animals

are watching Arjuna. The mythological hero occupies a tiny space, albeit central, in the massive creation. His thin, ascetic figure stands on one leg in prayer as the universe watches. The magic of the sculpture’s hands is such that even after centuries, the figure of Arjuna is filled with an austerity that only severe penance can bring. Near this bas-relief is another iconic sculpture inside a cave. Titled Krishna’s mandapa, a long feature which has a depiction of Krishna lifting the Govardhan mountain as its highlight. The feature has several

other elements, including an image believed to be that of Balarama with his arm around another person. Cattle form an integral part of this picture with one image showing a cow being milked. Krishna’s name recurs, this time in conjunction with a huge boulder spectacularly balanced on the edge of another rock. This boulder is called ‘Krishna’s Butterball’, perhaps named after the same mythological incident of Krishna lifting the Govardhan. Mahabalipuram throws up surprises of this sort virtually at every corner a visitor turns. It is as if a group of artisans were given an open canvas and they allowed their minds and hands to run riot. The result are fabulous rock cuts such as those seen in the Trimurti Cave, the Varaha Mandapa, the Mahisasura Mardini Cave and the Olakkannishvara Temple. The Varaha Mandapa, to speak of one example, has as many as four magnificent rock-cut panels, each with life-size figures. The iconography here depicts a giant Varaha lifting Bhumidevi on one side, another has Lakshmi seated on a lotus,

The creation of most of Mahabalipuram’s monuments is credited to the Pallava ruler Narasimhavarman 1 (630-670 AD) and over time, these were added to by other rulers of the dynasty. The place was once an important seaport dating back to the beginning of the Christian era. What was once a hub of merchant and building activity is now content with tourist traffic. ‘Mahabs’, as the young Chennaiite calls the place, needs to be explored at leisure for a traveller to find the hidden treasures.

hile travelling from Ramnagar to Dhikala in Jim Corbett National Park, Uttarakhand, one usually overlooks the part of the road beyond Garjia Temple which in the recent years has been made as an accessible interface on the side of the road beside a gorge. Ranikhet or Bhartrojkhan circuit stop by this temple for the aarti. As you cross the noisy bridge on the gorge, the road immediately becomes steep and curvy. A kilometre beyond and the road lands into a flat terrain and then bifurcates. It is here that Sunderkhal starts.

Sunderkhal is a charming little village on the outskirts of Jim Corbett National Park. Flanked by River Kosi on one side and the hills of Corbett on the other, it normally gets overlooked by tourists zipping from Ramnagar to Dhangarhi - the main entry point to the world famous national park. But even those who stop here remain blissfully unaware of Sunderkhal’s scary secret. It was a winter evening many years ago, when I crossed Ramnagar and reached Ringora where I stopped by to have tea at my old friend Bacchi Singh’s dhaba. It was well past midnight. I honked and yelled but he did not open the door, so I parked my Maruti van on the roadside in front of the dhaba and decided to spend the night on the rear seat of the van.
Wilderness unmatched The next morning I woke up to the curious faces of villagers peering through my car window. I walked into Bacchi’s thatched roof dhaba for tea only to be told, “Saab! Do not go to the jungle. There is a man-eater lurking around now a days.” It is from here that the
story of the man eating tiger begins. “Only a few days ago a 25-year old young man riding a horse was killed by a tiger. The tiger knocked down both the horse and the rider. The man’s partly-eaten body was discovered a day later.” I also heard the story of a local native Laxmi. Sometime ago her daughter-in-law was killed

by the tiger when she went to collect firewood across Kosi at Sunderkhal. Only her clothes and slippers could be recovered. Sunderkhal and the area around had always been the favourite hunting ground for man-eaters. The man-eater was exterminated by Thakur Dutt, nicknamed the ‘Mini Corbett’ near Laxmi’s thatched hut. But like the mythical Hydra, another killer tiger emerges on the scene after the last one is killed or captured. Jim Corbett in his famous book ‘The Maneaters of Kumaon’ gives a vivid description of Mohan,

the man-eater which operated in the same area at the turn of the last century.
Tiger trail Once again on a stopover to Corbett, I reached Ringoda in the dead of night. I stopped to call Bacchi Singh. But the answer I got from behind the door of his thatched hut was shocking, that Bacchi has been untraceable for over a year. I learnt later that Bachhi had gone into the forest and vanished without a trace. Now, his old wife makes tea on the choolah, waiting for Bacchi to return. The five months between September 2010 and February 2011 saw seven men and women of the area falling victim to a particular man-eating tiger. Though the animal was shot down by the forest authorities on the outskirts of Sunderkhal in February itself, fear refuses to leave the village. Even a cheetal call would send villagers running indoors. In fact, the villagers laid a virtual siege on the office of Corbett authorities at Ramnagar several times during January 2011.
The pull of Corbett remains as intense as ever, but over the years my responsibilities as the CMD of Raheja Developers kept my visits to Corbett limited and I could not really follow the Sunderkhal man-eaters for some time. However when many human killings, in a span of a few months shook me, I picked up my Forester again in January to follow the man-eater. Starting at past 8 p.m from New Delhi, I reached Sunderkhal around 2.30 am and sat with the forest guards around a campfire - their guns with safety latches down. Intermittently taking a round in my Forester, I tried to get a glimpse of the maneater or any other evidences. I tried to understand the behaviour of a maneater for the rest of the night. I was told that all the clues pointed that the animal was a male. The Sunderkhal tiger made its last kill in the afternoon of January 25, 2011. A youth, Pooran Chand, parked his scooter besides the road to relieve himself and a piercing cry is what the people heard from him last. The forest officials shot the tiger while it was still beside the partly eaten body of Pooran Chand. However, it is an interesting fact that no tiger is born a man-eater but it is because of our own folly that it starts preying on humans. encroached by human settlements. Tigers and elephants have to cross Sunderkhal to get to the other side of the Kosi river and reach the Ramnagar Forest Division. No doubt we require a holistic approach. Something which would leave the tourists happy while providing enough breathing space to the tigers. If only we look carefully at relocating the village with adequate compensation to the villagers and leaving the home to its original residents. Holi Spring truly is that time of the year when life itself is in full bloom. One of the biggest festivals of India, the Holi celebrations begin with a bonfire ritual called ‘Holika Dahan’. Children enjoy by playing with gulaal, throwing water-filled balloons and splash everybody with colourful water using their water gun ‘Pichkari’ the next day. The merriment continues with eating delicacies like gujia, puran poli, malpuas and drinking bhang. The most popular Holi is celebrated in Braj bhoomi which includes Mathura, Vrindavan, Gokul, Nandgaon, Phalen and Barsana. Devotional religious songs and people dipped in stunning colours make for a delightful spectacle. If you are strong enough to enjoy being beaten up then visit Barsana for its unique way
of celebrating Holi. Popularly known as lath maar holi, the men of Nandgao raid Barsana and seek to smear their victory over the temple of Radhika by placing their flag over it. On the other hand the women of Barsana try to stop these men in achieving their goal by beating them up with long bamboo sticks. These men are not allowed to hit back women but can only keep them off by sprinkling colours on them. In Manipur the festivities continue for six days starting on the full moon day of Phalguna. It may also be noted that the traditional and the centuries old Yaosang festival of Manipur amalgamated with Holi with the introduction of Vaishnavism in the eighteenth century. The next day boys make groups and play Holi with girls. In the Krishna temples, the devotees dress themselves in the traditional white and yellow turbans and sing devotional songs while playing gulaal with each other in front of the temple. On the last day of the festival, devotees take out procession towards the main Krishna temple, few kilometres away from the state capital Imphal. Here too, devotees perform cultural activities and celebrate. A special Manipuri dance, called ‘Thabal Chongba’ is also associated with this festival. Thabal, means moonlight and Chongba means dance. Though earlier only drum or dholak, was allowed to be used for this special dance, now modern musical instruments are also used. When: March 27 Where: All over India

Nat yanjali Festival The ancient Nataraja temple of Chidambaram pays special tribute to Lord Nataraja - the dancing Shiva. The Natyanjali festival dedicated to the Lord Shiva, is celebrated every year for five days in the temple premise during February-March. Lord Nataraja (Shiva) according to Hindu mythology is the cosmic dancer. Natyanjali festival opens on the auspicious occasion of the Maha Shivaratri day and of course in the right kind of venue - the ‘Prakara’ of the Chidambaram temple. The magnificent temple dedicated to Lord Shiva, built a thousand years ago, provides a beautiful backdrop for the event. During this time leading dancers from all parts of India congregate and dance in the temple as an offering to Nataraja. The setting is truly divine - Chidambaram’s gold-roofed temple, with pillars depicting Lord Nataraja in 108 poses from Bharatanatyam - Tamil Nadu’s classical dance. Jointly organised by the Department of Tourism, Government of Tamil Nadu and the Natyanjali Trust, Chidambaram, the festival is designed to promote a universal message of

Elephant Festival Come March, the Pink City breaks into an exultant celebration of life, a pre-Holi bash which centres around the elephant. They have always been a carrier of royalty in Indian culture and so the festival was initiated keeping in mind the tourists coming to the city. Organised every year by the Rajasthan Tourism Development Corporation, the festival is held at the Chaugan stadium, Jaipur. The day-long Elephant Festival starts with a traditional procession; while musicians play folk tunes and dancers whirl in a flurry of colours, richly caparisoned elephants march along in a parade. This is followed by a ‘best decorated elephant’ competition, games of elephant polo, elephant races, a special ‘elephant decoration’ exhibition, and a tug-of-war between humans and an elephant. Elephants, all in elegant attire, loaded with glitter and gold, fascinate the audience with their grand processions and decorated trunks and tusks. evil’s dung’, ‘stinking gum’, ‘food of the gods’, ‘giant fennel’ and ‘ting’ can get intriguing but that is how the spice ‘hing’ is usually referred as. This unique herb is rather a pungent secretion that might even come across as unpleasant to smell in its raw form. But the fact that once it gets blended into any preparation at the frying stage, it adds a flavour to savour for sure!
Unique qualit y Every spice has unique properties which makes it stand out and hing is no different. To begin with, it has a very strong aroma specially in its uncooked state, which can in fact almost overpower all the other spices if not used cautiously. It is the presence of sulphur compounds that characterizes the unmatchable taste of this herb mostly. So hing needs to be stored in airtight containers only. Not many people know that hing comes in two different varieties such as - Hing Kabuli Sufaid (Milky white asafetida) and Hing Lal (Red asafetida). While the white or pale variety is water soluble, the dark or black variety is however oil soluble. But then those who are not comfortable with the rather wild aroma of hing can opt for this spice mixed with starch and gum in a rather compounded asafetida form. Tracing the origin The scientific name asafetida (Ferula assafoetida), alternative spelling asafetida is actually the dried latex or the gum oleoresin that is extracted from the living underground rhizome or tap root of several species of the perennial herb Ferula. As far as the location of origin is concerned, the specie hing is distributed from across the Mediterranean region up to Central Asia. Back home in India, it is grown in Kashmir and in some parts of Punjab as well. In fact, in the northern state of Jammu in India, hing is used as a medicine for flatulence and constipation by almost more than half of its population. But the import of this rather exotic and wild spice comes from Afghanistan and Iran.
Enjoy its multiple benefits Interestingly, it is true that once hing is heated over the flame in oil or ghee, there is a pleasant smell that it generates, that too of a milder nature and can be compared to that of sautéed onion and garlic. In fact, due to this uniqueness, hing is usually preferred in every recipe by the Jains and the Vaishnavs who usually do nor have onions or garlic in their food due to their religious practices. Hing is also extensively used for flavouring curries and sauces since the ancient times. Due to its antibiotic properties, hing has high medicinal value as well. This spice is usually used as a digestive aid, in food as a condiment as well as in pickle preparations due to its pungent aroma. In fact, Hing actually qualifies as a powerful antispasmodic that can help in getting rid of regular cold and cough as well as asthma to some extent. This herb is believed to offer relief from intestinal colic and uterine spasms as well. It nourishes the nervous tissue that may have been affected by stagnation of high Vata, sciatica, paralysis and epilepsy.

Ingredients Five big potatoes 2 table spoons each of red chilli powder, cumin powder, pepper and salt One cup of mustard oil ½ table spoon of hing ½ table spoon ginger and garlic paste
• Add red chilli powder, cumin powder, pepper and salt into the oil. Avoid turmeric to keep the colour white. (It won’t take away from the spicy taste even if you add turmeric.) • Now add the potato pieces to the hot mixture in the vessel and stir fry them for 5 minutes. Add the ginger and garlic paste if you like their pungent smell.
Preparation method: • Wash the raw potatoes in running tap water to make sure they are free from any mud on the skin. Boil the potatoes with the skin on, in an open vessel.
• Finally add two to three drops of hing into the preparation and cover the vessel. Let the potatoes cook for 2 minutes and then check if the preparation has gone dry or not.
• Make sure that they are not over boiled before you peel them. Chop them into small cubes.
• Make sure to sprinkle water on the lid of the vessel to keep the mixture inside from drying up completely and getting charred.
• Take an open aluminum vessel to heat mustard oil over a medium flame.

Be it your home breakfast table or a resort buffet table, from journeys on trains to little packs in airplanes with just the right dollop for your bread roll, jams have always taken center stage and add the right amount of sweetness to complete your meal.

From toppings on ice creams to dessert sauces, the possibilities are endless when it comes to using these little pots of heaven Sweet nothings Over the years, in my culinary expedition’s world over, jams or jellies have been discovered in every possible taste imaginable. On home ground, from the Kumaon region of the Himalayas, in a tiny village, a facility run by women farmers by the name of Mahila Umang produce the finest variety of jams and jellies from the fruits of the region. Plums, apples, pears, guava and orange are juiced fresh and processed with a natural preservative that is sugar to make exotic jams which taste as good over bread as by themselves. Painstakingly preserved and well packaged to beat any commercial brand hollow, these jams sweeten your palate with a hint of mountain air. The key is to preserve it as naturally as possible. This can be achieved using the least amount of preservatives and relying on traditional methods of preserving fruits such
as sugars, citric acid (which is found in lemon juice) and slow cooking over low heat for natural release of fruit juices. “The key to a good jam is the freshest fruit and intentionally hand picked the best from the lot,” says Moshe Shek, owner and chef par excellence of his namesake restaurants and cafes spread over Mumbai, the city that never sleeps. Moshe has developed over a dozen varieties of gourmet jams which are a combination of fruits and flavours which compliment each other. When you skim through his shelves at his cafes in Juhu, Bandra, Cuffe Parade and Goregaon you will find the regal orange and saffron jam, a Christmas jam which is flavoured using apple and cinnamon and last but not the least a fragrant watermelon and rose jam which is a personal favorite. He believes in using local ingredients as much as possible and seasonally prepares an Indian gooseberry jam, which is quite a treat considering it’s made out of a fruit synonymous with Indians. Changing trends Keep an eye open the next time you are travelling out of the country. Most custom duties at airports display an array of jams unheard of. I have picked up jellied cranberry from USA to tip over a roast and coffee flavoured jelly which adds that extra edge to your milkshakes. Red wine jam, a popular alcoholic version gives your toast a heady touch while a jam which is an innovation in alcohol infusions is the Glenfiddich jam, a sharp avatar of the world’s favorite single malt. If you think picking up all these jams would restrict your meals to bread, butter and jam through many months, you are mistaken. Jams, jellies and preserves have many uses

Keep stirring the mix every 10 minutes. Ensure you stir softly with a wooden spoon since you don’t want to break up the strawberries. The strawberries should have shrunk and the mix turned into a deep red colour which sticks to the spoon after about an hour in total. Remove from heat, stir in the lemon juice. Spoon into washed and dry jam jars and cool before serving. Refrigerate up to several weeks.

You can use them to sweeten marinades for pot roasts or chicken, or shake them up with your favourite cocktails should you be missing fresh fruits or fruit juices. The next time you bake a simple sponge cake, slice it in half, layer half a cup of your favourite fruit flavour jam on the bottom half and sandwich with the top half, proceed to ice the cake with icing as usual for that extra element of surprise when cut into. So the next time you reach out to flavour something which requires a fruit or sugar, reach out to your jam bottle. Jams are relatively easy to stir up in your own kitchen. Many recipes complicate the process by adding unnatural preservatives to lengthen shelf life. All you need is a few common ingredients and the right cooking method to make your little jar of sweet fruit preserve. Jam making relies on pectin a jelling agent to preserve the fruit and give it texture. As long as you are using fresh fruit and sugar the reaction with the right temperature releases natural pectin to convert most fruits into jam. Here is a recipe of a popular
strawberry jam but with a fiery twist. Stir this up and you have your own gourmet version to bottle and enjoy.
Strawberry Spice Jam Ingredients: 250 gms Fresh strawberries ½ cup Castor sugar 1 tablespoon Lemon juice 1 large dried Red chili Makes one cup Method Wash the strawberries well, towel dry and cut off the green tops. Any bruised or soft areas on the berries should be sliced off. Slit and de-seed the chillies. Cut into ¼ inch pieces. Place the whole strawberries with the chilies and sugar in a heavy bottomed non-stick vessel. Keep over a high flame and stir well till the sugar melts and starts to bubble. shok K Banker is not a new name in the literary world. Those who love mythological epics vouch for his contemporary style of writing. No wonder he has published his work in several genres, including multi-
volume mythological novels, contemporary fiction to the worlds of cross-genre works. Who is real Ashok, a writer, a mythologist or a common man with common ideas?
Definitely not a mythologist! My mythological re-tellings were a wonderful journey through our great puranas but they form only a fraction of my writing output. I am first and foremost a partner to Bithika, my life partner for 32

years, then a parent to our two grown children: Ayush, 24, and Yashka, 20. I am a humourist because humour and wit is the strongest part of my personality and I’m rarely without a smile, a quip or a joke.

How would you explain about yourself to those who don’t know you personally? I am honest and straight forward to a fault, traits which make it difficult for many people to accept me because I demand and expect the best in everyone. I love children, animals, nature, literature, music, art and beauty. What are your views on world harmony? To me, there is only one culture, one race, one religion, one nationality, one group, and we are part of it, human and animal, male or female. All violence is a crime, no exceptions, no excuses. There is no such thing as Absolute Good or Absolute Evil. All acts are natural except when they cause harm to others.
TV series. I’m not a native Indianlanguage speaker as my mothertongue is English and my family is British-Sri Lankan and Goan Christian but my wife is Hindu and through her, Bollywood music and cinema and Hindu culture is a part of my life. Authors these days go for aggressive marketing to promote their books, your take on the same? I believe that aggressive marketing that seduces, coaxes or tries to convince anyone to buy or consume a product or service is a form of violence. This is why I have tried to avoid promoting or marketing my books except as support offered to my publishers
Tell us about your childhood, family, life spent in school and college? I grew up in a British Sri Lankan Goan Anglo-Indian Christian household. We spoke only English. The music, the movies, the conversations, the books, were all in English. It was similar to most Goan Christian households in India. The house was full of foreign products, everybody used the proper knives and forks to eat meals, we ate the kind of food I read about in the Enid Blyton stories scones, pork pie, stew. I couldn’t speak a word of Hindi but knew Farsi and Urdu and even some Yiddish (because I went to a Jewish school). My friends were mostly Pakistani, Iranian, Parsi, Israeli. At home we followed all the Christian, Muslim and Jewish festivals but none of the Hindu ones. How did love for Hinduism bloom in your life? It was only when I was 17 and fell in love with a Hindu girl that I began to be exposed to Hindu
Your favourites when it comes to books and films? My favourite reading genre is romance. My favourite movie genre is comedy. My favourite viewing is American cable drama March 2013 74 www.spiceroutemag.com
and Indian culture more. Yet, the irony was that even though I was not a Hindu and had rarely even stepped into a temple, I had read and re-read the Ramayana, Bhagwad Gita, Mahabharata and even all the Vedas by the time I was nine years old. All my knowledge of the epics came from actually reading the source works. I was constantly amazed at how most Hindus didn’t know the actual stories or epics of their own culture: most had either never read their texts or only read children’s abridged versions by Munshi Premchand and other authors apart from comic books. When did you realise the inner calling of being an author, the circumstances and incidents that drew you towards writing? To me, the greatness of the culture lay entirely in those great epic works. I kept returning to them over and again as I began writing at the age of 9 and in my teens, when I began writing my first novels and started finding success as an essayist, poet and short fiction writer, it was the epic form that constantly attracted me. To me, reading or writing came as naturally as breathing.

Though I am not a Hindu, I had read the Ramayana, Bhagwad Gita, Mahabharata and all the Vedas by the time I was nine years old What inspired you to pen down books on Indian mythology - inspiration, people who inspired you or the tales from your life ? The source works themselves. They had never been retold in the modern English idiom. These great stories, in fact the greatest stories in the world, yet all we have are abridged children’s versions or comic book versions. Someone had to reclaim them to their original greatness. I made my humble attempts purely out of love for the epic form of storytelling, a form which was all but forgotten in our modern fastpaced quick-read era. The prime characters of your books have already been heard of, and people look up to them on different situations. How differently did you visualise these characters? Like Krishna? Not differently, just in greater depth, detail and with an empathy that enables you to know what they (might have) felt, thought, said, intended. The main motivation I have for re-telling these tales is not to tell the story, which, as you rightly pointed out, is already known, but to help us understand why those events happened, why they said or did what they did. This is the entire purpose of all writing, even reportage. To answer the question, ‘But why?’ How do you define spirituality? Are you
spiritual at heart? To me, religion or spirituality is between a person and their God or themselves. Spirituality is of the spirit, so how can it be viewed publicly? I am so completely at one with my own spirit as well as with the spirit of all deities of all faiths and the universe itself, that I don’t feel the need to keep demonstrating it or showing it publicly. One book that is really close to your heart and why? Any blank book in which nothing has yet been written. Because as a writer, I love the empty page and project all my hopes, dreams and aspirations upon it.

I have no interest in seeing any of my books adapted by Bollywood, regardless of the producers, the stars or the budget. From time to time, a few Hollywood movie studios have optioned the rights to some of my books, paid me very well for them, but the projects are yet to materialize. Your favourite travel destination in India and abroad? I love any Indian place with ancient ruins. I feel a great sense of excitement and discovery when I visit ruins. To begin with, I was born on a Monday which is believed to be the day of Lord Shiva. Also, my mother is a great devotee of Lord Shiva, so I feel it was a great opportunity for me to be a part of this initiative. Are you a spiritual person? I respect all religions but I would say that at this point of my life I feel very liberated. I have done all that - going to temples and church and praying and asking for boon, but with time I feel one becomes more matured. So, have you been a great reader always? Yes, I love reading books and have a huge collection of over 2,500 books in my house. As a child I started reading both Hindi and English non-fictions, books on history, general knowledge, metaphysics and so on. Also, some two decades back I had developed a keen interest in
books related to astrology and palmistry. I would apply those theories on my friends and they loved my predictions. So what is keeping you busy these days? I am enjoying my ‘me-time’ rather than getting exhausted. In fact I am making an effort to stay fit and eat healthy. Since my mom has been keeping unwell of late, I have been busy taking care of her too. With so many new singers coming up in Bollywood, do you feel a sense of competition? I started performing on stage
since the age of 5, so now it is time that I relax a bit. I do not want to become a machine recording 10 songs a day. I am content in my own space and definitely do not want to stress myself by keeping a tab on other people’s work. In fact, I am friends with many of the so called ‘rivals’ from the industry with whom I party hard. We drink, joke around and laugh instead of discussing work. Do you enjoy travelling? Yes, I love travelling and thanks to my work, I get to travel around the world. But trekking is my passion and I do it whenever I can manage some time.

Which is your favourite destination? Leh and Ladakh as well as Uttaranchal feature as my favourite destinations, when it comes to travelling. I have gone on treks to Uttaranchal , stayed in tents and spent time under trees. It all has been an awesome experience put together! What does Sonu Nigam have in store for the audience? As of now, I have sung the track Ranjha Jogi for Zila Ghaziabad and Har ek friend for the upcoming movie Chashme Buddoor. I am sure the audience will enjoy them.

The fitness trainers of Bollywood hunks like Shahrukh Khan, Amir Khan, Hrithik Roshan or Hollywood divas such as Halle Berry or Jessica Alba, share the toil they take to give the stars perfectly sculpted bodies. And the best part is that - with sweat and dedication, even you can flaunt a fab ab and amazing lean muscles within a few months for sure. Satyajit Chourasia, is the celebrity trainer who helped Amir Khan transform himself in Ghajni with a beefed up body. From the host of celebrities on his clientele, Hrithik Roshan probably has the most desirable body if one has to go by the number of fan following. But sharing some secrets, Chourasia says, “Hrithik is not genetically blessed and has had a lot of issues and fractures all over his body. But what has helped him to sculpt his ravishing body is his dedication and consistency. So nobody can be too busy to find time for exercising on a daily basis.” As a simple tip he suggests that one can take out at least 5 minutes in a day’s time, to do simple floor exercises in any corner of the room or office. To begin with, simple squats and planks can help one to burn a lot of fat and then the time span can be increased to 10 minutes and so on.
Take your pick These days there are many forms of exercising that one can opt for. One can also mix and match fun activities with the use of interesting equipment. Celeb trainer Prashant Sawant shares, “To train Shahrukh Khan for Jab Tak Hai Jaan we used ViPR ( Vitality, Performance and Reconditioning) tool that gave him a quick total body work out and helped him to burn fat faster. He was so excited about this new form that he bought his personal ViPR kit as an extension of his fitness equipment. In fact, the celebs are always eager to try out new forms of staying fit that certainly keeps them going.” There are some people who barter exercise with dieting. So since they work-out here and there, they do not pay much heed to the yo-yo diet and munch on whatever they fancy. International fitness trainer Ramona Braganza who has trained the likes of Halle Berry and Jessica Alba emphasizes, “Your diet is equally important. So not knowing how many calories a day you are taking as compared to how much you should be ideally having, is not a good idea.”

In fact, I always suggest my clients to work out when they are not in a rush and the mind is calm. For Ajay Devgn it works best in the mornings to exercise while for Shahrukh it’s late nights. Some people listen to music to calm their minds while exercising, SRK mostly does without music.” Ramona shares, “I have trained Jessica Alba for more than 12 years and Halle Berry more than 3 years. In fact, when they got pregnant, I was training them upto 6 months into their pregnancies and later for them to get back into shape. While Jessica was in her 20s and Halle in her 40s, it was not a big challenge for either of them. It is about having a positive attitude in life and not giving up because you are of a certain age.”

And working out at least 3 to 5 days a week will help you get there and maintain it for the future. If you thought morning alone is the best time to exercise, then the truth is that you can hit the gym anytime. Chourasia points out, “It is important to sweat it out on the treadmill and at times a bit extra when you go easy on your diet. Honestly a palm size serving of anything is fine but you need the alcohol flow under control. People in the West party hard but they have lean bodies as they make sure to burn it out at the gym and go fresh to office the next day.” Like food, the body needs good rest as well. So sleeping for at least seven hours is recommended. As far as smoking is concerned, Sawant shares, “Smoking does make a person tired and thus affects the performance level. Since the lungs get affected over a period of time, it is best to keep it under control. rom outside, the room has the look of a quaint old attic and not that of a newage art gallery. Enter its small interiors, and a pleasantly heady smell of spices gives a welcome pierce to your nose. For a couple of seconds, the visitor may forget that the venue is that of a contemporary art show, leave alone its historical slant and momentous significance. Well, this is only just one of the several novelties at the Kochi-Muziris Biennale.

‘spice speaker sound system’. Dylan Martorell’s intelligent and interesting installation uses the frequencies of sub-bass to generate specific clouds of mixed spice. The Scottish artist who lives in Australia has built his work seasoned with a local masala that includes fenugreek, turmeric, ginger and cinnamon. “Never knew pungency (in any smell) can be this fascinating,” shrugs Briton Michelangelo Bendandi of the Kochi Biennale Foundation (KBF), after coming out of the young Martorell’s section at Fort Kochi’s Aspinwall House, the main venue of the pioneering three-month festival that is slated to conclude this March 13. Such is the sylvan nature of the sprawling heritage building that is Aspinwall by the seaside that the visit might naturally think of Kerala’s spices - something that has given the country’s slender southern strip a global flavour for long. The biennale is definitely much beyond being a refreshing celebration of its commercial glory of the yore. In fact, it is more about the state’s contemporary artistic contributions, even while taking a peek at its rich heritage and striving for a grand link between the two points in time. That is clear from the very name of the latest edition to the biennale editions on the planet.
Amalgam of cultures For the first time, two places are hosting the same extravaganza that is meant to be held every second year. As a fast-developing coastal metropolis in the developing world, Kochi should be a familiar word for globe-trotters, but what exactly is Muziris? Actually, Muziris - an Arabic-laced pronunciation of ‘Muchiri’ in local Malayalam language - used to be even more cosmopolitan than present-day Kochi. That, for almost one-and-a-half millennia, until a suspected tsunami washed away much of that port-city in 1341, leading to the formation of Kochi as a natural harbour, 30 km south of it. The KBF brilliantly sought to connect Kerala’s update on art and presenting a platform to unveil the heritage backing of the state. Result was a splendid set of installations stemming from this historical perspective. A couple of such works of art sharing the same hall at the British-era Aspinwall House can best epitomize this pattern. The 162-year-old

Veteran artist Gulam Mohammed Sheikh of western India’s art city of Baroda in Gujarat notes with a smirk, “Kochi has opened its ‘godowns’ to showcase many images of the region’s less-popular history.” That apart, contemporary art has an omnipresent quality at the biennale. As if to promote its ‘impulsive’ quality, the organisers are entertaining ‘unscheduled’ arts at the various venues. Free-spiritedness on the part of visiting artists and the organisers has led to the coming up on certain ‘unscheduled’ frescoes and installations at the biennale. For instance, quite a few painters and students from within India and abroad came to the city as curious visitors at the biennale, but ended up doing a wall painting (even on the street fences) or installations in the open.

government’s benefit. Indeed, past experiences show that biennale cities of the world have shown making a giant leap forward in terms of monetary influx besides finding a new stamp on the international tourist map. “The eventual result of our endeavour won’t be any different,” says KBF president Bose Krishnamachari, a co-curator of the biennale. “The veterans in the field of visual art in Kerala couldn’t perhaps digest a young generation initiating a paradigm-altering event like the biennale. But then, we went on with what we had planned,” he said. Sure, success tastes sweeter after bouts of challenges.

or Indian cinemagoers, their brush with Chhau may have been the scene from Anurag Basu’s movie Barfi in which Ranbir Kapoor is seen wearing a Chhau mask and pulling a rickshaw that makes you laugh. But in reality Chhau is much more entertaining than just putting on a mask.
Colourful transformation In villages of Odisha, Jharkhand and West Bengal, the Chhau dancers transform to Mahishasura, Ganesha or may be Duryodhana as they put on colourful and resplendent masks and dance vigorously to the beating of traditional Indian drums such as Dhol, Dhumba, Nagara, Dhansa and Chadchadi. They

either depict village life or epic battle of demon Mahishasura with Goddess Durga in all their vigour. Some even impersonate animal, bird, hunter, rainbow, night or flower. Be it some village festival or some cultural event, the war cries of chhau dancers electrify the atmosphere with their lyrical movements like few other dance form. Though initially practiced as a folk dance form in Odisha, Jharkhand and West Bengal, Chhau is now a well-respected and popular dance form of India. Some say Chhau is believed to have found its origin from ‘Chhaya’ (the shadow) while others say the name may have originated from the practice March 2013 98 www.spiceroutemag.com
of dancers performing while wearing masks (also known as Chhau). A few others say the word Chhau has been derived from the word ‘Chhauni’(military camp) as Chhau was performed to entertain the Oriya warriors inside the camp. Chhau was a dance formed, founded and sustained mainly by the royal family of Seraikella though it was practiced by Mayurbhanj in Orissa and Purulia of West Bengal. With royal patronage, Chhau dance flourished and other kings borrowed the idea. Chhau travelled to Mayurbhanj when an aide of Mayurbhanj king Maharaja Krushna Chandra Bhanja Deo (1868-1882) saw the Sareikela

Chhau draws substantially from the Ramayana, the Mahabharata and from folk and tribal elements up the dance. When the Mayurbhanj king died in 1912, in the condolence letter, George-V wrote: “The Queen and I are grieved to hear the death of Maharaja of Mayurbhanj. Giving hope The organisation increases employment and quality of life for persons with disability (PwD) in India by offering affordable vocational education and job placement services for jobseekers and corporations. It also runs a suite of revenue-generating programs that reduce prejudice against disability and help families, colleagues and communities engaged with PwD as equals. “Of the 70 million PwD living in India, many are socially isolated and economically marginalized. Most working-age PwD are highly dependent on their families, those few who have jobs are often underemployed at low wages,” informs v-shesh co-founder P Rajasekharan. “We seek a world where people with disabilities can reach their full potential by finding meaningful employment,” he adds. What is unique or rather innovative about the v-shesh - for profit concept is that unlike other charity-based initiatives in the field of disability, it treats PwD as customers and not beneficiaries so as to protect their self-esteem and dignity which would help them gel into the mainstream easily. “By charging our disabled students an affordable fee, we encourage them to demand a high-quality service, and we give them the dignity of being treated as valued customers. We also integrate PwD into our broader vocational training program (we have graduated over 1,000 students in total over the past 12 months) so disabled clients do not feel stigmatized or pitiable,” says Rajasekharan.

early in life, growing elderly populations and violent civil conflicts. Even malnutrition and drinking bad water can rob people of their sight. Earthquakes and other natural disasters take their toll. HIV/AIDS, measles, polio, traffic accidents, work injuries, discarded explosives, mothers who abuse drugs during pregnancy - all can ravage people’s hearing and their intellectual and emotional senses and wreck limbs and bodies, relegating millions to the margins of society. The results can be devastating, both to the individuals and to national economies. So unless disabled people are brought into the development mainstream, it will be impossible to cut poverty. Addressing disability is a significant part of reducing poverty. Bringing disabled people out of the corners and back alleys of society, and empowering them to thrive in the bustling center of national life, will do much to improve the lives of many from among the poorest of the poor around the world. Nearly 95 per cent of the people who develop a fatal cardiovascular disease have at least one of the major lifestyle disorders such as diabetes, hypertension and obesity. All these disorders are interlinked and lead to developing nasty complications involving almost all parts of body. A person suffers from diabetes (defined as fasting blood sugar > 126mg/dl or random blood sugar > 200mg/dl) when the person’s body fails to control the glucose (sugar) content in the body. Around 80 per cent of diabetes is attributable to excess weight. Around 26 per cent of obese people experience high blood pressure levels. High blood pressure or hypertension (defined as a blood pressure = 140/90 mmHg or more) is an extremely common co-morbid condition in diabetes, affecting 20–60 per cent of people with diabetes, depending on obesity, ethnicity, and age. The main symptoms of heart attack include • pain or discomfort in the chest area that doesn’t go away; • the pain may spread to the left or right arm, or may spread to the neck and jaw; • you may sense sickness or short of breath.

Not all heart attacks begin with the sudden, crushing that many people depict when they think of a heart attack. The symptoms may begin slowly, causing mild pain and discomfort and even they can occur at rest or while a person is active. If you suspect that a person has suffered an episode of heart attack call for the emergency medical help line and ensures the person is supported until medical care is provided. The patient should be shifted to the hospital at the earliest time (within 1 h) since the onset of the incident because the earlier the medical assistance, the lesser the damage to the heart. The treatment options include primary angioplasty (a procedure to re-open the blocked vessel), which is a gold standard treatment or thrombolysis (bursting the clot using medicines).

besan or can use separately. Flame of the Forest, known as tesu and palash in Indian launguages, is a great source of wonderful yellow colour. These flowers can be soaked overnight in water and can also be boiled to obtain a fragrant yellowish orange coloured water. Indian legends believe, Lord Krishna used Tesu flowers to play Holi. To make garden fresh green colour, you can use henna powder with equal quantity of any flour. Dry henna will not leave any colour on your face and can be brushed off easily. You can also make wet green colour by mixing henna powder, paste of spinach, coriander or mint in one litre of water. Acquire beautiful red colour by using red sandalwood powder, which is immensely beneficial for the skin. This can easily be used as red gulal. If you want more options, you can choose to dry red hibiscus flowers in shade and then grind it. You can also use pomegranate peels or lime powder boiled in water to make wet red colour.

A shock which saves life
V
inod Rai is a 40-year-old businessman who had a very active lifestyle. He was physically fit and used to get a health check-up every year. One afternoon, he felt a sudden pounding in his chest and then he fainted. Investigations did not reveal anything amiss. After a few days, the episode again repeated and he was a worried man. He again went for a checkup to his cardiologist and was put on a Event Recording system. The event recorder picked up disturbances in his ECG rhythm when he had the next episode. Dr Balbir Singh, Chairman of Pacing and Electrophysiology group in the Medanta Hospital, who treats Mr Rai diagnosed him with Spontaneous Sustained Ventricular Tachycardia. This
is a condition in which the ventricular rate (the pumping rate of the 2 lower chambers of the 4 chambered human heart) goes high even under normal conditions. (Under normal conditions, the human heart beats at 70 to 80 beats per minute). When this heart rate goes beyond 180 beats per minute, then the heart is said to be in Ventricular Tachycardia. When this tachycardia lasts for more than 7 seconds then it is said to be a sustained tachycardia. While Ventricular Tachycardias are not fatal, some times, if left untreated, the patient can end up with Ventricular Fibrillations. And when Ventricular Fibrillation does not stop within minutes then the patient could die and the cause of death is known as Sudden Cardiac

Arrest. Sudden cardiac arrest (SCA) is a major health problem. According to the American Heart Association, SCA affects approximately 450,000 people each year in the United States. While Indian statistics are not available, a simple extrapolation of US statistics indicates that more than 13 lakh Indian dies of SCA every year in India. It is for such condition that Dr Singh has come up with a wonder cure, an implantable cardioverterdefibrillator (ICD), which are popularly known as ‘an emergency room in the chest’. When first introduced in the mid-1980s, ICDs did almost exactly what the emergency squad does when it treats a victim of the Sudden Death Syndrome or Sudden Cardiac Arrest. It administered intense electrical shocks to stop ventricular fibrillation. If successful, the shock stopped the heart and allowed it to quickly resume a normal rhythm. Today, ICDs do much more and have been proven to be 99 per cent effective in treating dangerous ventricular arrhythmias. Modern defibrillators continuously monitor the electrical conduction system of the heart, watching for dangerous acceleration patterns and delivering electrical therapy when needed that may range from a steady impulse much like a cardiac pacemaker’s to a full, lifesaving shock. Dr Balbir Singh has successfully implanted more than 1000 ICDs and believes this is a miracle for patients with heart disorder. He can be contacted on his email: drbalbirs@gmail.com.

We need to improve our state run schools like in the West where most of the children go to state run schools.” The other speakers stressed that education today should aim at giving opportunities to an individual so that they can progress in the way that they want to.
