FROM THE COO’S DESK Dear SpiceJet customer, On August 24, that is three days ago as I write this, Kiruba Shankar, a passenger who had flown SG622 from Kolkata to Chennai, wrote this on his Facebook page. It went viral within 24 hours with over 12,000 likes, 800 comments, and 1,300 shares: “On SpiceJet flight SG622 from Kolkata to Chennai on the evening of August 24th, I witnessed something remarkable. I was absorbed in reading a magazine when suddenly, I saw an air-hostess run across the aisle. Then very quickly, I saw all the 6 air-hostesses rush to a passenger about 10 rows in front of me. The gentleman had severe shivering and could not even speak. So bad was the shivering that it looked like he was having an uncontrollable fit. The air-hostesses quickly swung into action. While one of the air-hostesses closed the air vents, the other quickly collected their own uniform jackets and covered the shivering passenger. One went on to phone the pilots in the cockpit and update them on the emergency situation. One other air-hostess, made a public announcement asking if any of the passengers were a doctor. There was a doctor on board and he quickly swung into action. Two other air-hostesses got him a bottle of water to drink and did cold towel treatment to this forehead. The crew raised the in-cabin temperature to a level that there was practically no chillness. It started to get a little uncomfortable but not a single passenger complained. The crew messaged the on-ground staff and arranged for medical staff to be ready. They picked up the contact number of his brother in Chennai and phoned him in advance to tell him of his condition. I will never forget how alert and sincere all the 6 air-hostesses were. After the plane landed, many of the passengers, as they were disembarking, showed their appreciation towards the crew.” What strikes me is that while the overwhelming reaction was supportive and positive, there were a number of people who assumed this was some kind of cheap PR or a marketing gimmick. There were others who said that this was nothing special, crew are trained and paid to do this. The first group is completely wrong -- this was no marketing gimmick, we, at SpiceJet, only got to know about the post when it started to go viral and someone forwarded it to us. The second group is right, crew are trained to handle this, incidents like this happen more often than we realise, across all airlines, and most crew on any airline would react the same way. But it does not detract from the compassion and humanity that goes into this kind of response, that comes from within, from the culture, from the heart. MOT AIMING TO IMPROVE THE TOURISM SITES 18
To attract more tourists to the country, the Ministry of Tourism has embarked on a programme ‘Campaign Clean India’, to improve the cleanliness and hygiene of its tourism sites and the safety of tourists, especially female travellers. This nationwide programme aims to sensitise all sections of society on the importance of cleanliness and hygiene in public places, particularly monuments
and tourist destinations. For this initiative, the ministry will provide financial support for infrastructure development, including new hygiene facilities such as rubbish bins and sewerage. The ministry is in talks with private and public sector enterprises to include the scheme as part of their CSR initiatives.
KOCHI HAS THE WORLD’S FIRST SOLAR-RUN AIRPORT
Kochi airport has become the first in India to be operated entirely using solar power. The new 12 MWp solar power plant is estimated to generate about 50,000 units of electricity daily. This will make the facility ‘absolutely power neutral’. Over the next 25 years, this green power project will avoid carbon dioxide emissions from coal fired power plants by more than three lakh tons, which is equivalent to planting 30 lakh trees or not driving 750 million miles. A recent survey by Skyscanner, revealed that 54% of Indian travellers prefer flat discounts when it comes to travel bookings. The survey studied the booking habits and preferences of Indian travellers. It highlighted that 38% seek flexibility of cancellation and rescheduling of their flights, while 37% hunt for packaged deals and offers. The survey revealed that while 45% of Indians prefer to make their travel booking on PCs, increasingly more travellers are booking through apps via

their mobile and tablet devices (27%), followed by mobile web (13%). The survey also witnessed a changing trend among Indian travellers when it comes to payment methods. It has been found that credit cards (49%) and debit cards (32%) are the most preferred modes of payment by travellers. Over 30% of Indian travellers prefer completing their transaction through Internet banking, while a small percentage (5%) of respondents favour PayPal as a mode of payment.

Turkey’s two culturally and historically significant provinces have recently been awarded the UNESCO World Heritage status at the 38thWorld Heritage Committee meeting in Doha. he city became the capital of Mewar after the sack of Chittorgarh in 1567 and is still dominated by the City Palace, which is one of the largest palaces in Rajasthan. The palace complex is occupied by descendants of the Gohilot Sisodia Rajput dynasty that came to Mewar from Vallabhipur in Gujarat, establishing their rule at Nagda near Udaipur. Apart from its palaces, cultural and scenic attractions, Udaipur is also known for its luxurious hotels and resorts, contemporary cafés and theme restaurants. Most of the palaces, historical temples, heritage hotels and markets are located in the old city beside the Pichola lake, while the newer side of the city has gardens, craft centres and new resorts.

Millets of Mewar near the gate is the place for a healthy breakfast or for something more traditional, head to Queen Café near Chand Pol. Head to Bagore-ki-Haveli near Gangaur Ghat, the residence of the prime minister of Mewar in the late-1700s. The section of the haveli converted into the West Zone Culture Centre’s museum exhibits ghagra cholis and other textiles, musical instruments, cooking equipment, arts, handicrafts, a collection of puppets that show a royal court, and other artefacts. Take a coffee break at Café Edelweiss, a short walk up the hill from Gangaur Ghat for some desserts and baked snacks. 10.30 AM: CITY PALACE City Palace is a complex of palaces built in different periods but with similar looking cupolas, balconies and brackets that make it look like a single façade. Here you can see excellent examples of Mewar’s art like beautiful frescoes, striking

marble reliefs, carved arches, marble pools, red and silver glass inlays, fretwork windows, outstanding miniature paintings among others. A section of the museum is dedicated to Maharana Pratap.
One can walk to Fatehprakash Palace with its enormous Durbar hall that has a collection of princely portraits, weapons and massive chandeliers. Keep an eye out for the crystal furniture and artefacts made in England during the 1880s including a crystal bed, chairs, tables, lamps, hookahs, etc. 1 PM: GAWK AT VINTAGE CARS Garden Hotel houses an automobile museum called the Vintage and Classic Car Collection. The garages exhibit more than 20 automobiles, most of them in working condition and still used by the descendants of the Maharanas who brought them to Udaipur, and even the original Burmah Shell fuel station. Among the highlights of the museum are the 1920s Rolls Royce custom-made for a polio-affected ruler, the award winning 1924 Rolls-Royce 20HP and the pair of 1938 Cadillac cars, one of which was a zanana vehicle in which

the Maharani and princesses could travel in purdah. After a tour, lunch at the Garden Hotel Restaurant which serves Rajasthani vegetarian thalis. 3 PM: SHOPPING IN OLD CITY The Clock Tower, called Ghantaghar, marks the entrance to the markets. Walk around Bapu Bazaar, Hathipol and other areas to look for laheriya tie-dye stoles, pieces and sarees, meenakari enamel work, silver jewellery, woodcrafts and inlaid marble pieces. Closer to the palace, you will find miniature paintings, pichwai (religious paintings) and folk arts. Try local snacks like pyaz-kikachori near Jagdish Chowk.

5 PM: EXPLORE LAKE PICHOLA Walk down to the jetty at the south end of City Palace for a boat ride. The circuit takes about 45 minutes and offers good views of the palace complex, lakeside havelis and the Lake Palace Hotel and Jag Mandir. One could also visit the 17th century Jag Mandir that has lush gardens and inlaid marble chambers. On returning to the jetty, enjoy the sunset at the Terrace Restaurant. 7 PM: DINNER@HAVELI Catch an evening cultural programme of folk music and dance

For a superb panorama of the lake complex of Udaipur, comprising Pichola and Fatehsagar connected by Rangsagar and Swaroopsagar, drive up to Fatehgarh, now a resort located on a hill. Over lunch on the terrace of this resort, one can see the cityscape with the lakes in the centre and the amphitheater like setting of Aravalli hills encircling Udaipur. 3 PM: A PUPPET SHOW Drive along the lakefront to the 18th century gardens called Saheliyon ki Bari which has striking fountains and elephant statues. The Bharatiya Lok Kala Mandal near the Chetak Circle is a museum of folk culture with a collection of masks, musical instruments, puppets and folk art. You can watch puppet shows that are staged here, and stay on for a cultural evening. Chetak Circle also has emporia for Rajasthan’s handicrafts. As Udaipur is surrounded by marble mines, you can buy marble crafts here. 7 PM: SOUND & LIGHT SHOW Drive to the City Palace where a sound-and-light show is held every evening. The narration of the show explains highlights of the history of Mewar Princely State from the sixth century to present times. Deepa Krishnan from Magic Tours of India, created the first pan-Indian guided walks and tours company. One of the major objectives was to create a company that is socially responsible. Deepa explains, “We

What started in May 2010 has expanded brilliantly, and the

The Pune Heritage Walk started in October 2012 as a part of Virasat Pune initiative of Janwani - a Punebased NGO. Prajakta Panshikar, Deputy Director, Heritage Conservation and Management, Janwani, shares, “It is a professional platform that brings like-minded people to imagine, innovate and inspire ideas for cultural enhancement. Our festival themed walks have been around for a long time, such as ‘Pre and during Durga Puja’, Ramadan, ‘Dusshera & Ramleela Walks’ and Christmas Walk among others. Special walking tours that offer both historical facts and regional folk-lore and interesting experiences have nurtured a resurgence in general interest towards India’s heritage and history. INTACH or the Indian National Trust for Art and Culture Heritage was founded in 1984 in New Delhi to spread awareness about India’s cultural heritage. An active member of the group, K Mohan adds. “INTACH has been doing a great job for kids. It has its own wing to cater to the school children and spread awareness.” Such walks help people to understand history. Prajakta informs, “History is best learnt at the place where it happened. The schools have grasped the idea of heritage walk much before others.” She further opines, “An important aspect of the walk is that it contributes to nation building as it binds people’s histories, and at the end of the walk, the participants feel very proud about their city, country and its legacy.”

Kerala palace in Tamil Nadu, surprised? Padmanabhapuram Palace is located in Padmanabhapuram Fort in Kanyakumari district, Tamil Nadu, but the palace and its surroundings are owned and governed by the Kerala State. The place called Padmanabhapuram was the capital city of the erstwhile Travancore kingdom. At a distance of about 60 km from Thiruvananthapuram and around 20 km from Nagercoil, this palace is located against the backdrop of the Veli Hills that form a part of the Western Ghats.
The palace was built by Iravi Varma Kulasekhara Perumal, the ruler of Travancore in 1601 AD. It was also called Kalkulam Palace It’s said that after the Kulachal war in 1741, the King Marthandavarma rebuilt this palace to its current state. The palace is made of wood with the traditional building methods that we call Taccusastra (science of taccu or carpentry).

There is no spectacle of pomp and show about the palace. It looks understated and does not have the regular opulent look as we see in most palaces in India. Spread across some 6.5 acres of area, there are around 14 palaces that have stood the testimony of time and still enthrall its visitors replete with intricate rosewood carvings, windows with coloured mica and carved ceilings with around 90 different floral designs. As you enter the palace complex, the first structure is Poomukham with images of horse riders on both sides of the entrance, showcasing exquisite wood carvings. It was here that the erstwhile king used to entertain his special guests. The wooden ceilings are ornamented
with almost 90 lotus medallions carved onto the structure and each flower is different from the other. Among the rare features of the palace are a chair presented to the former king by Chinese merchants and Onavillu presented as a tribute by landlords and chieftains of different clans during the festival of Onam. Adjacent to this structure is the Manimalika (Clock Tower) that is believed to be some 200 years old. The tower contains a rather unique clock as its movement is regulated by two weights made

up of disc-shaped blocks, that is raised every week by a 1.5 meter pendulum. Mantrasala, the king’s Council Chamber and Uttupura, the Dining Hall, are other parts of this structure. Next structure is Thaikkottaram (Mother’s Palace). Built of finely decorated and carved wooden pillars, the structures display the local indigenous style of wood carving. Another structure famous for its architecture, breathtaking beauty and exquisite carvings is Navarathri Mandapam, built by King Marthandavarma in 1744 AD. The place speaks of the rich cultural and artistic tradition. Next to this mandapam is the Saraswati temple where the stone sculptures on the pillars display the sheer skills of the local artisans. EXCELLENT CRAFTMANSHIP There is a long corridor bordered with small balconies on the sides called Ambari Mukhappu (bay window). This was built for the kings to view chariot races during festivals and to appear before the public on special occasions. Ambari is actually the seat put on elephant’s back for safaris. The building was constructed based on the shape and structure of an ambari. This is a perfect example of craftsmanship of Travancore. As you move along the corridor, you will witness fine lattice work on the sides of the pathway.

he ubiquitous cast iron pillar box – manufactured by Thomas Suttie & Sons Co. of Greenock, Sheffield, England in 1840 – came to India in the middle of the 19th century (1856-57).
And since then it has been a rare example of a piece of objet d’art which perhaps more than any other object helps create a quintessential landscape once ruled by the British
Design of letter boxes had undergone a series of changes to adapt to the need and climatic condition of places they were planted. Victorian crown type was followed by Lotus type, also known as Penfold letter box, named after its designer. In 1872, John Tilley decided to change its previous hexagonal shape, as designed by Penfold. It was in 1879 when the cylindrical pillar with increased capacity came into use in India.

Since time immemorial, these letter boxes of different shapes, sizes and colours have not only been serving the need and convenience of public at large, but also have become an epitome of endurance. It can be found at the corners where lanes meet together, in front of the school and college buildings, beside the booking counters at railway stations, even at the centre of a bustling Bazaar – at any public place. Be it a heavy gale or a torrential rain or the glare of the scorching sun; the cheerful red splashes stand the test of time.

Historians have it that the authority of the state planted 10 Victorian crown type letter boxes (out of 50 boxes that arrived initially at Calcutta port) at different locations in the city: at the meeting point of Wellesley Street and Royd Street; Jorasanko, Baug Bazar, Bhowanipore (then Bhobaneypore), Kidderpore, Bowbazar near the entrance of Fish Market (known as Mechua Patty); Dharmatala Street near Napith Bazar; Loudon Street, Cornwallis Street, opposite Maniktallah Street and at Hatkhola.

Post box is a harbinger of emotions. Older it is, heavier is the nostalgia English, illustrated by Paresh Maity in Kolkata in 2011. Once my granny mentioned that a post box is stuffed with emotions. “You rest your ear on its wall and you will hear a mixed symphony of agony and ecstasy.” She said. At that age I couldn’t really understand this, but realised its meaning much later that a post box is a harbinger of emotions. It has many a tale to tell. Older it is, heavier is the nostalgia.
THE DECLINE
The importance of a post box gained over almost 150 years, began waning from the late 1980s, as the Tsunami of information technology – cellular communication and internet system – caused an inevitable shift to email
from the traditional letter resulting in shifting attention to post boxes in the country (5,90,952 in 2003 to 5,73,749 in 2011). “It might so happen that the next generation shall find them only as a museum piece,” Dipok De, the famous philatelist of the country, expresses his concern. De’s concern cannot be ignored especially when we find so many post boxes on the street, poorly painted, splattered with commercial handbills and fitted with loosely hung collection plates. Thankfully though, a few people who still prefer handwritten letters justify the existence of letter box, and that perhaps heals the wound it suffers and reminds the pillar box of its sturdiness to defy the ravages of time. Five years since her debut film, Shraddha Kapoor has been creating waves with her performances, be it acting, dancing or singing, and is currently Bollywood’s rising diva. WO RDS|A ARTI KAP UR S I NGH

hen it comes to Bollywood journeys, Shraddha Kapoor is riding an airplane! While her acting debut Teen Patti didn't exactly set the cash registers ringing, she has shone opposite top actors such as Ben Kingsley and Amitabh Bachchan.
She also took a brave decision after annulling her three-film contract with Yash Raj Films when her second film, Luv Ka The End didn't do well and she rejected Aurangzeb. And the film that she chose instead was Aashiqui 2 - a project that won her close to a dozen awards and a permanent place in the hearts of fans.
“Aashiqui 2 changed my life. Suddenly, wherever I went, people were screaming Aarohi's name. It was the most amazing compliment,” says the 27-year-old actor. Shraddha reunited with her Aashiqui director Mohit Suri for her next biggie, Ek Villain. But what made her the talk of tinseltown was not just her acting, but her talent for singing. She was all over the airwaves with Galliyan. As Pandharinath Kolhapure’s granddaughter, cousin to the Mangeshkar sisters, singing was a huge deal for Shraddha. “As a kid, I would pretend to sing into the mic by holding my mother's hairbrush. Mom and my maasi (actor Padmini Kolhapure) have done playback and sung internationally as well. So singing was something I always wanted to do," reveals Shraddha.

Reminiscing about how her dream came true, Shraddha says, “When I asked Mohit to allow me to sing in Aashiqui 2, he refused saying the notes were too high. And then suddenly during Ek

Villain, he asked me to come to the recording studio and lo and behold, I am behind the mic singing! The best thing was that Ankit Tiwari did not allow my voice to be mixed so what you hear in Galliyan is my raw voice.” Since then, Shraddha Kapoor has been on a streak of hits, whether it was Vishal Bhardwaj's critically acclaimed Haider, set in the turbulence of Kashmir or Remo D'Souza's ABCD 2, where Shraddha got to put on her dancing shoes. “For me, dancing is therapeutic. Nobody was offering me any naachgaana films. I did that Dance Basanti song in Ungli because I am crazy about dancing,” says Shraddha, adding with a tinkly laugh, “And also to impress Karan Johar enough to cast me in a Dharma movie!”
DANCE IS MY PASSION
Talking about ABCD 2, Shraddha says, “I was waiting for this kind of an opportunity - a full-fledged dance role. And to be honest, I was nervous about it too - but only enough to make me want to take up the challenge. This was not just a dance film, but the real journey of a group of people from Nallasopara to Vegas - of making it big and realising their dreams. I had literally pined for a chance to dance on screen. And now, I have danced as much in this film as others would have in about five of them!” Ever-ready to push the envelope, Shraddha says, “Whether a film is a hit or not comes later. My thirst to do something I have not done before is what makes me decide in favour of or against a film.” She is currently doing several look tests for Baaghi, opposite Tiger Shroff and has also signed on as a singer in a sequel to the 2008 hit Rock On!!, co starring Purab Kohli, Farhan Akhtar and Arjun Rampal. “I had the most amazing time in Hong Kong where I was holidaying recently, but now it is back to serious work.

I come out as a shy, nervous person and a little out of place because I need time and space to become comfortable with someone,” confesses Shraddha, also adding, “And strangely, I love the promotional aspect of films - simply because it is one way to get instant feedback and criticism too.”

Highlighting the importance of her upbringing, Shraddha acknowledges her parents' efforts
Shraddha is a tea addict 2 but to watch her weight, she chooses green tea. Shraddha was dejected when she was replaced by Kalki Koechlin in My Friend 3 Pinto as she was really keen to work with Sanjay Leela Bhansali. Her favourite film is Pyaasa and her dream role is 4 Gulabo's character essayed by Waheeda Rehman. Food wise, she pigs out on 5 sushi and claims she can have it for all her meals. Her first movie was offered when she was 16 years old, 6 by none other than Salman Khan who saw her English play in Boston University. The otherwise delicate7 looking Shraddha has played soccer & handball during her school days.
and says, “My mother should be given total credit that I don't have my head in the sky. I still go all googly-eyed with the regular girlie stuff - clothes, trinkets, makeup, etc. My dad wants to constantly pamper me and I have a constant friction with my parents on that, as I like to make it on my own. My dad is protective on a personal level, but professionally he gives me all the space. Both my parents instilled this 'value everything' code in both mine and my brother's heads.” Keeping it real, she often rustles up her favourite Marathi-style mutton curry, sans help and from scratch, and is an able assistant to her gardener. She can also bake a rather 'mean chocolate cake' for her mother. So what is it that she would most like to be known for? “For walking my talk - in every way and doing it sincerely,” comes the reply.

S
umac is a flowering plant in the genus Rhus. They are shrubs and small trees with spirally arranged leaves. Its flowers are in dense panicles or spikes, with five petals. The fruits form dense clusters of reddish drupes called sumac bobs. They vary in colour from brick red to dark purple, depending on where the shrub is grown. The dried drupes are ground to produce a tangy purple spice.
An essential ingredient in Arabic cooking, Sumac is preferred to lemon for sourness and astringency Many other varieties of sumac occur in temperate regions of the world. The spice was long used in Europe to add tartness to many dishes until the Romans introduced lemons to the area.
CULINARY USAGE
Sumac is widely used as a spice in Middle Eastern and Mediterranean cooking. It's used in everything from dry rubs, marinades, and dressing. But its best use is in being sprinkled over food before serving. ○ Sumac can be best used when sprinkled on fish, chicken, over salad dressings, rice pilaf, or over raw onions to add a tart flavour. ○ Flakes from the berry are a lovely,

Chickpea salad with Sumac

Ingredient s 2 cups uncooked chickpeas 4 garlic cloves, smashed Salt and freshly ground black pepper 1 large sliced onion (finely chopped) 1 tablespoon sumac 1 teaspoon chilli powder 1 teaspoon salt 1 bunch Italian parsley (finely chopped) 2 tablespoons olive oil 5 to 6 sprigs of fresh mint Method Soak chickpeas in water overnight. Drain the soaked chickpeas. Cover with fresh water and cook them in the pressure cooker for about 40 minutes with garlic cloves, pepper and a few pinches of salt. When cooked, spread on a large baking sheet to cool. Stir the chopped onions in the sumac, chilli powder, and salt. Add the chickpeas and chopped parsley to the onions. Just before serving, finely chop the mint leaves and sprinkle over the salad.

The juice is popular in salad dressings and marinades and the powdered form is used in stews and vegetable and chicken casseroles. ○ It's great over vegetables, grilled lamb, chicken and fish. Ground sumac also makes a nice, flavourful topping on dips like hummus. ○ In Persian (Iranian) cuisine, sumac is added to rice or kabob. In Turkish cuisine, for example, it is added to salad-servings of kebabs and lahmacun. ○ Along with sesame seeds and dried thyme, it's one of the main ingredients in the spice mix za'atar, which is used to flavour meat and vegetables, or mixed with oil to make a paste that's spread on bread before baking. ○ In North America, different varieties of Sumac (Rhus
Sumac can be best used when sprinkled over fish, chicken, dressings & rice pilaf glabra and Rhus typhina) are used to make a beverage termed ‘sumac-ade’, ‘Indian lemonade’ or ‘rhus juice’. This drink is made by soaking the drupes in cool water, rubbing them to extract the essence, straining the liquid through a cotton cloth and sweetening it.

hether it is cooking on slow heat for a long duration, or covering the meat with wet clay while cooking or creating a khad or a pit, to cook meat and vegetables, some chefs are going all out to revive these traditional methods of cooking, even in an age when time is premium.
Chefs are realising that a lot of flavour is lost when some dishes are cooked using modern day cooking methods and appliances “The method of cooking enhances the flavour and taste of a dish,” states Hermann Grossbichler, Executive Chef, Grand Hyatt Mumbai. A dal made in a microwave might be edible, but when it is cooked in a heavy-bottom container with ingredients simmered to perfection, it is delightful, he opines. The same holds true for wheat balls (baati in Rajasthan) cooked in an earthen tandoor vs the new age gas tandoor. Raan (baby lamb leg), a Mughlai dish famed for its taste and flavours owing to slow cooking, is another example. RECIPE OF RAAN By Chef Hermann Grossbichler, Executive Chef, Grand Hyatt Mumbai

Ingredients Baby lamb leg 750 gm Red chilli paste 25gm Malt vinegar 10ml Ginger garlic paste 15gm Ghee 30ml Lamb stock 150ml Red chili powder 5gm Cinnamon sticks 5 gm Cardamom 3 gm Shahi jeera 1gm Bay leaves 1gm Salt as per taste Garam masala 4 gm Green cardamom powder 2 gm Cumin powder 5 gm Chopped coriander 5 gm Lemon juice 5ml Method: Clean the leg and remove extra fat. Make deep incisions and marinate with ginger garlic paste, malt vinegar, salt & lemon juice. Take a handi, add ghee, add whole garam masala. Place the marinated raan and sear the meat. Add lamb stock and powdered spices. Seal the handi and cook on slow flame till the meat becomes tender. Remove from the handi and skewer meat. Finish in a tandoor. Garnish with chopped coriander.

Most chefs are clear about the fact that the Indian tandoor can never be done away with because of the flavour, texture and tenderness it imparts to meat. No short cuts here. Korma is a popular Mughlai dish traditionally prepared in a pot over a low fire, with charcoal on the lid to provide all-round heat. An amalgamation of spices combined with yoghurt, kept below curdling temperature, are incorporated slowly with the meat juices. Chefs
fastidious about authenticity stick to this method even today. Chef Mukhtar Qureshi of Neel, Mumbai still prepares the Taar korma (a Rampuri speciality of dumcooked lamb tempered with spices), using the traditional method. There can be no other way to get the same flavours, according to him. Most of these traditional methods of cooking are labour-intensive, but the nuanced flavours they impart are unparalleled. A good Laal Maas, the legendary dish from Rajasthan, takes anywhere from 3 to 6 hours to cook. Of course chefs in hotels can’t dig a pit, so instead, they cook the food over low heat in ovens or on burning charcoal, ensuring that the taste and flavours are not compromised.

It is with this endeavour to revive the methods used in the Mughal era cuisines that Dr Izzat Husain along with Sandeep Kalra, Executive Chef, Trident Gurgaon, recently curated a festival called Rivaayat which means tradition, at Saffron. Shammi shikampuri kebab, Murgh musheer musallam, Saffron ki dal and Warqi paratha, were some of the dishes that were cooked using traditional techniques. In Goa, many homes and some chefs still prefer to cook mackerel in paddy hay for the best smoked flavours. A pile of hay is set on fire and the mackerel, rubbed with lime and salt is then placed. It is then again covered with a layer of hay. And it’s not as if only meat needs to be cooked traditionally.

Vegetables like Bharwan Mirch, Bharwan aloo or Bikaneri khichdi too are cooked in a khad or pit, while desserts like Shahi tukra and Tar halwa can be prepared traditionally on a slow flame, if one is keen to get the flavours right. Equally important is the use of the right vessels. Urlis (heavy brass vessels) are used to cook many of these traditional dishes. Atish Ramachandran, Sous Chef, Taj Coromandel, Chennai, prefers to use traditional utensils. For Kerala fish curry, he uses an earthenware pot and few of his Awadhi dishes are cooked in copper lagans. “In our kitchen, we have the traditional coal tandoor and a newly built wood-fire range which are used for making dum biryanis, pulaos and dals. The thick base of the copper lagan allows the gravies to cook without sticking to the base, because of even heat distribution, which, in turn, allows the dish to cook for a longer time and helps in bringing out the flavour of the meat or the vegetable,” he avers. Traditional cooking practices are the heart of Indian cuisine. Although forgotten with the advent of modernisation, chefs are now revisiting these techniques.

You can opt for flowering Roses, Petunias, Anthuriums, Orchids and rare plants that can grow alongside green climbers and creepers. Though these do not come cheap and require a little extra care in selecting container, soil and effort, they are worth the effort. You can begin with any old metal/wood furniture and recycle this! Navjyoti India Foundation (NIF) is known worldwide for its commitment to work with marginalised sections of society and to help them attain a dignified quality life.

ounded in the year 1988, with an approach of welfare policing, the motto of Navjyoti Foundation was ‘Helping the helpless’ wherein the objective of crime prevention was achieved through treating the problem of drugs.
Soon the organisation adopted a holistic approach to promote community development and address the issue of crime prevention Under this, education projects, healthcare projects, vocational training, women empowerment projects, community participation projects, etc., were initiated in 1994. When the projects started showing impact and beneficiaries became more empowered through grassroot development – the bottom’s up approach was adopted in order to elicit greater participation of the community in needs’ assessment and proposing interventions. Presently, the motto of the organisation is ‘Towards self reliance’.
CHALLENGES & STRATEGIES
1. As the project expanded in scale, sustaining the project with localised resources was a challenge. Gradually, a multipronged approach in resource raising was adopted so that a project has a right blend of support from individuals as well as volunteers and partners for linkages.
2. Since service delivery in the project was never directed to provide material support such as cash, food and other supplies as against many other organisations in the area, initially retaining beneficiaries in the programme for long term-was a challenge. Sustained efforts in sensitisation and participation in programme planning resulted in getting the desired response. 3. It took sometime in getting the desired impact on the beneficiaries as planned. Sustained efforts in upgrading the quality of processes, service delivery, constant revisit to lessons learnt in the field and implementing them to strengthen services, resulted in overcoming the challenge. 4. Data management and documentation posed another challenge. A lot of important

100 data could not be archived due to lack of focus on importance of data management. Extensive investment in capacity building and orientation of the team on data management to upgrade their competence are being taken up on regular basis. 5. Lack of documentation of processes and procedures, lessons and good practices initially made it difficult to share the programmes for replication. A well structured process manual, procedure manual and quality manual have now been compiled for larger sharing.

Right education with the right opportunities at the right time is the focus of this project. The 3S Model (Shiksha, Sanskaar & Skills) of education project provides transformative value-based education and skills to children and youth so that sustained community development initiatives are led by themselves leading to their character building, employability, leadership and eventually self reliance. Community Development Program includes women empowerment programme, family counseling and environment interventions. The programme believes in creating sustainable livelihoods and reaches out to more than 1,500 women through self help groups and more than 40 villages in Sohna Block.

Effective August 29, SpiceJet introduced three new flights and 137 new connections to its network between cities currently served by the airline. NEW FLIGHTS ADDED TO WINTER SCHEDULE, EFFECTIVE OCT 25 SpiceJet has introduced daily direct flights between Goa and Ahmedabad. The airline has also increased flights between Mumbai and Ahmedabad (second flight added), Mumbai and Chennai (second flight added), Delhi and Ahmedabad (second flight added), Delhi and Chennai (third flight added), Chennai and Madurai (third flight added), Mumbai and Goa (third flight added), Kochi and Hyderabad (twice daily), Chennai and Coimbatore (twice daily). The airline has also increased flights between Delhi and Goa by adding a third flight on every Saturday. A fun-loving and jovial person, SpiceJet’s Parul Chawla believes in facing each day as it comes.
A
cabin crew with SpiceJet for four years, Parul has nurtured and accomplished her childhood dream of flying high. Born and brought up in Sri Ganganagar in Rajasthan, this small town is a no flying zone as it is only 14 km from the Indo-Pak border. “Whenever I got a chance to visit a metro city, the only thing which fascinated me was the airplane flying over my head. I’d love to watch the take off and landings for hours and since a young age, I was determined to join the aviation industry,” she explains.

She belongs to a closely knit family of six members. Daughter of working parents, a businessman and a government employee, she is the youngest and has two elder sisters and one elder brother. “I was always loved and pampered by my family,” she adds with a smile.

As a child, Parul was a free bird and now she misses her childhood days. “I did my schooling from Bihani Children Academy and graduation from AV Jain college. Homework and exams were never a burden for me. I lived my school days as if there was no tomorrow,” she adds. Apart from being a bright student, Parul is also a state-level chess player. For her the best part of living in Sri Ganganagar was that every single festival was celebrated with equal zeal. She says, “For the people of a town, festival is merely a reason to unite them together as a big family.”

Being a foodie, she likes South Indian and Chinese cuisines, and loves spending time with friends at Hauz Khas Village and Khan Market in Delhi, and Cyberhub in Gurgaon. She equally loves to cook, and again South Indian cuisine is her forté. A person who gets along with people easily, Parul’s friendly nature and pleasing smile makes her a suitable candidate for the service industry. She loves the work environment at SpiceJet adding, “It is the only airline that initiates everything and the rest has to follow. The way the airline treats its employees is remarkable.”
