With our Connecting India programme taking off in a big way, you now get connections to several Tier-2 cities. We have started daily return flights from Chennai to Tiruchirapalli, Vijayawada, Coimbatore and Madurai with ATR 72, in addition to direct flights from Mumbai and Hyderabad to Shirdi. We have linked Amritsar to Nanded in Maharashtra and Delhi to Imphal. We have also connected Bengaluru to Guwahati with a direct flight four times a week and have started operations on Bikaner-Jaipur-Bikaner and Jammu-Bhatinda-Jammu sectors by ATR. Delhi has also been connected to Pathankot and Durgapur. Pasighat in Arunachal Pradesh has been connected to Guwahati by ATR aircraft. PROFITABLE ROUTES In November 2015, Air India commenced the DelhiSan Francisco (SFO) flight over the Atlantic Ocean. Ajay Agarwal, Flight Ajay Agarwal Operations, undertook the arduous task of studying and analysing the routes, which enabled him to evolve a route over the Pacific Ocean to SFO. This heralded an era where the duration of the flight was reduced by two hours leading to substantial savings in fuel consumption. This pioneering work led to the longest ever flight undertaken in the world. Puneet Kataria, Flight Operations, based at JFK airport, has also played an active role in providing inputs

concerning airports in the US. The quest for further improvement led Agarwal to discover a route through Northern Russia via Alaska to SFO, which further reduced travel time by an hour. With less flying time, Air India will save about ` 4 lakh per flight on this new route. This will fetch an annual savings of approximately ` 18 crore to the airline. Agarwal and his team are exploring new vistas on this route and other routes on the Air India network. Continuous research in flight planning by him ensures taking full advantage of airspace and air traffic management. A lot of factors like wind, weather conditions, air traffic congestions, aircraft performance and flying zones are carefully studied before finalising flight paths. They have done Air India proud.

TOUCH THE SKY Gourabmoy Das, a senior cabin crew and cabin supervisor from Delhi, has been flying the B 787 and A 320 fleet. He has been involved in charity activities in India and abroad. MOS INAUGURATES AIESL-BOEING AME APPRENTICESHIP PROGRAMME Air India Engineering Services Limited (AIESL) and Boeing launched a first-ofits-kind one-year accelerated aircraft maintenance engineering (AME) apprenticeship programme on June 14, 2018, at Air India’s engineering facility in Mumbai. Inaugurating the event, Hon’ble Minister of State for Civil Aviation Mr Jayant Sinha said, “Hands-on experience on an aircraft, and a state-of-the-art classroom with a world-class curriculum will help AMEs.” The programme offers advanced training aids along with a customised curriculum created by experts to skill the AMEs. Highly-qualified Air India instructors will conduct the training. Hands-on exposure to an actual Boeing aircraft will hone

their skills, preparing them for a career in India’s growing aerospace ecosystem. The programme, which was announced by AIESL and Boeing in 2017 to meet the need for trained AMEs, received an overwhelming response. “Boeing is proud to be a partner in this initiative in one of the fastest-growing civil aviation markets in the world,” said Marc Allen, president, Boeing International. “Our partnership with Boeing brings together a best-in-class curriculum and training aids to create a stronger pool of skilled AMEs,” said HR Jagannath, CEO, AIESL. Classes for the first batch will begin in August 2018.

The services provided by Air India were excellent. I have to say that before our journey, we were skeptical about the experience, but the airline and its staff surpassed all expectations. Both dinner and breakfast were good, there was ample leg space and comfortable seats! Moreover, nine seats in the Economy Class ensured that everyone in our group had a pleasant journey. The airfare was also less as compared to other airlines; that, too, at a time when Europe was attracting lots of tourists. This application measures the data speed experience of a user and sends the results to the Telecom Regulatory Authority of India (TRAI). In case of poor experience, users are requested to register a complaint with their network service providers. It requires Android 4.3 and up.

BHIM

There is always something poignant about the journey of a river as it empties itself into the ocean - and I was on a boat, experiencing the moment, near a remote coastal hamlet in Kerala called Poovar, listening to the murmurings of River Neyyar as it joined the Arabian Sea. Poovar, tucked away in the tip of Kerala, barely 30 km from the state capital Thiruvananthapuram, is one of the state’s best-kept secrets. Kerala may be synonymous with backwaters but there are several

destinations hidden away inside dense forests or in villages by the sea that offer unique experiences. And I had taken a road trip to explore a few of them. As we reached Poovar, I noticed that celebrations were in the air, as Onam was just around the corner. The few homestays and resorts dotting the green hamlet were in a festive mood. One family even invited me to return the week after, during Onam, to try sadya, the traditional vegetarian feast served during the festival.

The tranquil backwater cruises in Kerala are a unique experience, be it short ones in small boats, which meander through canals and lakes, or longer stays on luxurious houseboats. The backwater regions of Kerala, running parallel to the Arabian Sea, are one of the most popular tourist destinations in India. Alleppey, or Alappuzha, is especially popular for its houseboat cruises.

Flanked by the towering Western Ghats on the west, Poovar is a true tropical paradise with swaying palms and a long stretch of golden beach. Enjoy Ayurvedic massages, a walk by the sea, a cruise down the palmfringed emerald backwaters or just lose yourself in the moment.

After a river cruise on a boat and lunch, we left for Kochi, stopping at small hamlets along the way. There was a general buzz, as the snake boat races were around the corner too, in Alleppey or Alappuzha. But our destination was Thattekad, a remote patch of dense forest located by the Periyar river. It was a long (270km) drive, and it was dark when we arrived. The moon shone through the fog that had enveloped the sky as I reached my homestay, located right at the heart of the forest, near the Salim Ali Bird Sanctuary (constituted in 1983). Thattekad is a patch of evergreen forest on the banks of the river, lined with rubber plantations. It is the haunt of wild elephants and home to over 250 species of birds. I had read about this verdant jungle, around 60 km from Kochi, while researching the native birds of the Western Ghats.

Thattekad is around 44 km from Kochi airport and can be reached by taxi.

As dawn broke and the first rays of the sun lit the landscape, I marvelled at the curtain of mist lifting from the river, revealing emerald-tinged waters. My morning walk took me across a rubber plantation, where workers

were extracting latex from the trees. A crested goshawk looked down from its perch and a pair of Malabar hornbills wished me good morning. Malabar is a common prefix here: Malabar grey hornbills, Malabar trogon and Malabar parakeets, among others. My host and birding guide Girish helped me spot yellow-browed bulbuls, white-bellied treepies, orioles, leaf birds, sun birds, Asian fairy bluebirds, racket-tailed drongos and white-bellied blue flycatchers as well, flitting around in brilliant shades. In the evening, Girish guided me into the heart of the jungle for a tryst with the nocturnal birds. On the way, we stopped at Bhoothathankettu dam. It is said that the natural fortification of hills and forests that guard the place were built by bhoothams (spirits/ghosts) but abandoned by them before com-

pletion. Bhoothathankettu is considered to be the gateway to the Western Ghats and is an excellent base camp for trekking, wild safari, boat rides and fishing. As we stood by the river with Girish trying to look for the elusive Sri Lankan frogmouth - a nocturnal bird highly adept at camouflaging itself - darkness descended all around and enveloped the forest behind us. Soon, we spotted a couple of the rare birds sitting still on a nearby branch, with their wide, gaping mouths and eyes staring right into ours. As we walked back to the homestay, meandering through the forest with the moon for company, I wondered about exploring many more such secrets. On second thought, maybe they are better off lost to civilisation!

Ezhikkara

A remote hamlet surrounded by languid backwaters and lush green groves, and dotted with temples... if this is what you have been looking for, head to Ezhikkara, a dreamy Kerala village near Kochi. Famous for the farming of pokkali rice, a rare salineand-flood-resistant variety, and fresh water prawn farms, Ezhikkara is off the tourist grid. With a few homestays offering lodging, expect to spend tranquil days here, exploring nature and cruising along the backwaters in small boats.

Ezhikkara is around 30 km from Kochi. You can hire a taxi or take a train to Alwaye (Aluva), 14 km away, and then take a bus.

Athirappally (Athirappalli) falls GETTING THERE

The Athirapally falls is about 75 km from Kochi. There are buses that take you to the falls, or you can hire a taxi.

A trip to Kerala is not complete without a glimpse of the Athirappally (Athirappalli) falls, popularly known as India’s Niagara. I had heard a lot, but nothing could have prepared me for the roar of the cascade as the Chalakudy river plunged 80 feet into a cloud of milky white foam. Surrounded by dense forests, the Athirappally (Athirappalli) falls is best experienced in monsoon. The surrounding forest is also home to several species of rare birds. Researchers have spotted four endangered species of the hornbill here, the only place where they thrive in the Western Ghats.

What’s the right weight?

The correct weight for your body depends on your Body Mass Index (BMI), which is your weight in kilogramme divided twice with your height in metre. For example, if you weigh 70 kg and are 1.75 metre tall, divide 70 with 1.75 and then divide the answer again with 1.75. The answer will be 22.8. That is your BMI. BMI is not dependent on sex or age and it’s a good surrogate measure of body fat in adults. Higher the BMI, greater the body fat and greater the health risk from obesity. While Western standards recommend 20 to 25 BMI as ‘good’, for Asians, including Indians, opinions differ. Experts in the country say that, for Indians, 20 to 23 is

good BMI. BMI between 23.1 and 25 falls in the overweight category and above 25 is obese. If your BMI is too low (less than 18), it is also linked with health risks. Several websites can calculate your BMI after you feed in your weight and height.

Which is the best diet plan?

Extensive worldwide research says that the type of diet does not matter in weight loss. But what does is compliance with the diet. During dieting, your weight loss happens due to loss of fat and muscle mass. Fat loss is desirable; muscle loss is not. The type of diet and exercise plan you follow can impact how much of the weight lost is due to fat and muscles. Usually, diets that are extremely low in calories or proteins will result in a large proportion of muscle loss. So, choose a balanced diet that you will be able to follow for a long period of time. But avoid the crazy ones. If something sounds too good to be true, it probably is!

There is a very strong link between weight loss and sleep. Inadequate or poor quality sleep contributes to weight gain. So, get enough sleep at night, especially when you are travelling.

So, instead of debating the amount to lose, or setting up a target that may leave you frustrated, begin with an achievable goal and adjust it as you go along.

Does exercising help?

Strictly speaking, you can lose weight without exercising. But exercising is good for most of us, whether one is trying to lose weight or not. While trying to

lose weight, the best exercise to follow is slow, and level walking or swimming, which will burn calories and also speed up the process. It will reduce loss of muscle as well, thereby decreasing the tendency to regain weight. Other exercises such as weight training, running, jogging, skipping should be kept for the second phase, when you have lost weight and when your heart, back, hip joints, or knee and ankle joints are not taxed due to excess kilogrammes. And for maintaining the fat loss, just keep exercising. So if you were walking about 10,000 steps a day for weight loss, try to increase it to 12,000 or 15,000 steps a day during weight maintenance. This e-commerce portal supports craftswomen in the drought-prone area of Mithapur, Gujarat, by training them in appliqué, zardozi, mirror work and chikankari embroideries. Started in 2015, the Okhai website offers handcrafted apparel and lifestyle products created by these artisans. What began as a small selfhelp group with a bunch of women from the Rabari tribe of the Mithapur district is now an apparel enterprise run by hundreds of local women in the region. Interestingly, the website also lets customers interact with the artisans, which in turn encourages the latter. ttarakhand has seen a dramatic shift in the development of the state, socially as well as economically, thanks to its dynamic chief minister Trivendra Singh Rawat who has completed a successful one year in office. He is widely respected for his organisational skills within the Bharatiya Janata Party (BJP). This has been evident in one-year tenure in the state. His commitments and self-belief have helped in transforming the state through a series of people-friendly policies and initiatives. The simple mantra of his government has been ‘Reform, Perform and Transform’.

ALL-WEATHER ROADS Trivendra Singh Rawat’s government is committed towards transforming the state’s look by developing world-class infrastructure. The government has sanctioned `13,000 crore under Bharatmala Project for the construction of a bypass and ring road in Haridwar, Rudrapur, Dehradun and Haldwani. The railway budget of Uttarakhand has risen to `1,490 crore, which is 695 per cent more in comparison to 2013-14. In the past one year, 1,754 km of roads and 57 new bridges have been constructed; 83 villages and 198 settlements with population of over 250 each have been connected with roads and bridges. The Uttarakhand govern-

ment has resolved to complete work on the 899-km all-weather Char Dham road by March 2019. It comprises expanding the existing road and building new tunnels by cutting mountains. RISHIKESH-KARANPRAYAG RAIL LINE Work on the ambitious 125-km Rishikesh-Karnaprayag railway line has been started in the state of Uttarakhand. This line will pass through five districts: Dehradun, Tehri, Pauri, Chamoli and Rudraprayag; and will also cover the pilgrimage towns of Devprayag, Srinagar, Rudraprayag and Gauchar. A total of 16 bridges will be constructed on the Rishikesh-Karnprayag route. Out of the 125-km length of the railway line, 105 km will pass through tunnels. On completion of the project, one will be able to reach Karnaprayag in Chamoli district from Rishikesh in just one-anda-half hours. SKILL DEVELOPMENT Uttarakhand Skill Development Mission (UKSDM) has been providing free skill development training to youth from urban and rural sectors of all 13 districts of the state with an aim to address the challenges of unemployment in the

SWACHH UTTARAKHAND Rural Uttarakhand has become the fourth open-defecation-free (ODF) state under the Swachh Bharat Mission Gramin. The state government has taken various steps towards Swachh Bharat that has led the Indian government to declare Uttarakhand as a state with ‘Best Practices’ being implemented towards the cleanliness drive. The state is working towards a target of making 92 urban units as ODF by this year. Under the urban cleanliness programme, district magistrates have been designated to monitor the progress of the cleanliness drive.

NAMAMI GANGE PROGRAMME Under the ‘Namami Gange’ project, the Central government is extending all possible support to the state government. Recently, Uttarkashi, Dehradun, Kedarnath and Shri Kot have also been included in this project. As part of the project, the foundation stones for 34 projects in Haridwar, worth a total of `918.94 crore, were laid and dedicated to the public.

FROM DEV BHOOMI TO YOG BHOOMI The fourth edition of the International Day of Yoga was held in Uttarakhand with Prime Minister Narendra Modi performing yoga in front of 60,000 people. The Prime Minister reminded everyone that Uttarakhand has been a centre of yoga for centuries as high mountains and cool breeze inspire all to perform yoga.

To attract visitors, 13 new districts are being promoted as new destinations with adequate infrastructure facilities. An international convention centre with world-class amenities is being set up in Rishikesh to lure business visitors. To provide an exhilarating experience of the natural beauty of the state, all tourist destinations are being connected with rope-ways.

TOURISM Described as ‘Simply Heaven’, the state has always been a preferred destination for tourists. After the setback of 2013, the government has been successful in attracting 24 lakh pilgrims for the Char Dham Yatra. Shri Kedarnath is getting a new look at an expense of `100 crore for its reconstruction, and a sum of `40 crore has been sanctioned for development activities in Shri Badrinath.

ECO-TOURISM AND ADVENTURE TOURISM The government is focusing on promoting and developing adventure tourism and epic tourism. As part of epic tourism, the state will highlight the legends of the epics - the Mahabharata and the Ramayana - by developing the tourist circuit. Also, with the help of the Ministry of Tourism, India through the ‘Swadesh Darshan’ scheme, Tehri lake is being developed as an adventure hub.

The Parsis, it is said, take their food very seriously. From ceremonially balancing babies on laddoos (an Indian dessert) when they first learn to sit, to the clarion call of “jamva chaloji [let’s eat]” at weddings - eating and drinking are intertwined with Parsi culture at every step. The sweetest culinary lore is also among the oldest, tracing its roots back to the time when the Parsis had arrived in Gujarat from Iran. The lore, called Qissa-e-Sanjan, narrates how a local king from the port city of Sanjan in Gujarat sent a glassful of milk to the Parsis, indicating that his kingdom did not have space to accommodate them, just like the full glass. The Parsis added sugar to the milk, indicating how they would blend into the local community and sweeten it!

Thus started the Parsi tradition of adopting Indian ways of living – from wearing the saree to speaking the dialect. However, the maximum amalgamation happened in cuisine. The first few ingredients that were adopted were local products – spices and coconut. The Parsis took to coconut like bees to honey, adding it in chutneys (the famous green coconut chutney used in patra ni macchi), curries, vegetable dishes and even desserts like kopra pak (a sweetmeat made of coconut). The Parsi kitchen is headed by a woman with an extremely well-stocked and welllabelled pantry. In the spice box, other than the regular staples like turmeric,

red chilli and cumin powder, you will also find home-ground mixes, like the famous dhansak masala (a mix of coriander, cumin and 10 other spices) and the commonly thrown in sambhar masala. The latter is not the one generally found in most South Indian kitchens, but a special one pronounced as sam-bhaar. These two are used in dishes like sali marghi (a chicken dish), sali ma gos (a mutton recipe), patia (made with shrimps) and even a simple dal (pulses). While the older generation still grinds these spices at home, they are also available in shops. In Mumbai, most Parsis flock to M Motilal Masalawala at Grant Road to stock up their pantries. Other special spices that you’d spot in the refrigerator include marchu-lasan (a red paste of garlic,

red chillies and cumin seeds) and lellulasan (a green-hued paste of garlic, green chillies and cumin seeds), to be used in a variety of curries. The kitchen will also have bottles of sugarcane vinegar, manufactured by EF Kolah in Navsari, Gujarat; jars of jaggery; sali (potato matchsticks) and salty potato wafers. Also found are dry fruits such as charoli or chironji (Buchanania lanzan), almond (sometimes slivered and fried), dried coconut flakes and, not to forget, the humble but popular egg! You may also spot home-made apple and brinjal chutney and some boomla (Bombay duck), a type of fish! The author is a renowned chef and the views expressed in the article are her own

METHOD • In a pan, add the milk and sugar. Let it heat • In another pan, pour ghee and then add semolina. Make sure the semolina doesn’t turn brown, just a light almond colour. This will take about 5-10 mins • Add the milk, mix well and take the pan off the flame. Add rose water and vanilla essence • Fill moulds with the mix and leave to cool • To garnish, add almond flakes and chironji seeds • Serve cold

August is the month of Navroz, the beginning of the Parsi New Year. It is celebrated for health, wealth and prosperity. And along with prayers, Parsis also celebrate it with a lavish feast, which includes mutton pilaf (fragrant rice cooked with mutton), masala ni dal (a delicious and spicy pulse dish) served with kachumbar (cucumber, tomato, onion, green chilli and coriander salad) and chicken or mutton kebabs. Also served are patra ni macchi (pomfret coated with green coconut chutney, wrapped in banana leaves and steamed), ravo (sweet milk and semolina pudding) and falooda (rose-flavoured milk with vermicelli, basil seeds and ice cream). This year, the festival will be celebrated on August 17.

A taste of

DIJON Known for its world-famous mustard and wine, this medieval city, the erstwhile capital of Burgundy, is one of France’s best-kept secrets, say Gustasp and Jeroo Irani Falling in love with Dijon is a matter of refined taste - the sharp tang of Dijon mustard and its gourmet flavours; the pungent local Epoisses cheese, France’s most delicious; aromatic gingerbread whose recipe comes from ancient China; escargots or snails in creamy sauce… Dijon had us salivating for more; more of its epicurean offerings, its wondrous charms and its honey-coloured buildings that have witnessed history. To get a feel of the city, we strolled around the narrow cobble-stone alleys that criss-crossed each other in its medieval old town, and ambled down the broad boulevards of its classical section, where sleek new trams and cars purred like satisfied felines around 17th and 18th-century mansions. Carved into one of the buttresses outside the Notre Dame Church is the image of an owl, one of Dijon’s three emblems (the splendid ducal palace, once home to the dukes), which showcases the city’s rich past. There, along with our loquacious guide, we peeled back layers of this city’s history, focussing on the dukes with their evocative names Philip the Bold, John the Fearless, Philip the Good and Charles the Rash, after whose reign, the power of the dukes waned. A part of the ducal palace is now the Museum of Fine Arts, which forms the backdrop of the17th-century square, Place de la Libération. Fountains play in its midst and tourists sit at outdoor cafés to watch the languid ebb and flow of life in the city.

This grand ensemble is rivalled by the Notre Dame Church (a Gothic building built between 1220 and 1240), with its remarkable facade of false gargoyles (false, as they do not dispense water). tells an unbelievable story’ Ranbir Kapoor, fresh from the release of Sanju, a film based on the life of actor Sanjay Dutt, says he is fascinated with biopics and that he would want to portray Raj Kapoor one day. He speaks to Aarti Kapur Singh What does Sanju mean to you, personally and as an actor? Sanjay Dutt has been my idol for as long as I can remember. He is one of the most misunderstood people I know – or at least claimed to know before I did the film. It’s an honest portrayal of a very flawed man who has fallen down many times, but has also picked himself up. It is also about the complex relationship between him and his father; his relationship with women; his best friend; and his tryst with the law.

But didn’t you turn down the film initially? Not the film! I didn’t have the confidence to portray the lead character. When Raju sir (director Raju Hirani) told me about this film, I told him ‘Aur kuch bhi de do sir, bas Dutt nahin (ask me to do anything sir, but not Dutt)’. What convinced you to accept it? When I read the film’s script, I realised that the character it depicted was very different from the Sanjay Dutt I was

familiar with. It was an unbelievable story! There was so much drama and such a multitude of emotions in this film that it seemed daunting, but these complexities also challenged me as an actor. Sanjay Dutt has been my neighbour (at Pali Hill, Mumbai) and was like a doting elder brother. But the script revealed the real person, and I started respecting him all the more, not just for the life he has lived but also for the fact that he was not scared about it being portrayed so honestly on screen.

Sanjay Dutt has the legacy of Sunil Dutt and Nargis behind him. Your family is regarded as the first family of Bollywood. What else is similar? For me, the father-son story in Sanju struck a chord. My own relationship with my father was a frame of reference, if not exactly a common thread. Sanju sir’s (Sanjay Dutt) relationship with his father was one of immense love and, even more, respect. There was a considerable amount of formality and, therefore, a lot of complexities. I share a similar relationship with my father. When I was reading the script, I could relate to those emotions. My dad, even if he likes my performance in a film, will say, ‘Kasar reh gayi (it could have been better)’. But when he saw the trailer of Sanju, he said: ‘I am proud of you!’ That was my reward! How hard was it as an actor to step into Sanjay Dutt’s shoes? The first year of preparing for the role was spent in training the body, experimenting with prosthetics and makeup. But the tough part was understanding his soul. I even borrowed his perfume so I could smell like him!

“The next couple of years are very important for my career. I am working again with my best friend Ayaan Mukherjee, for Brahmastra, which is a part of a trilogy.”

“I really want to portray Raj Kapoor and Kishore Kumar on screen. It would be an honour to play them both. I would be thrilled to play my grandfather. I hope my family permits me to portray the real Raj Kapoor and tell the world about his life beyond movies.”

In fact, I always use one perfume while shooting a movie. Very often, when I shoot intermittently for a film over a long period of time, a particular fragrance helps me stay connected to my character through its making. Sanju sir uses a strong perfume called Tom Ford Oud. I borrowed his boots too, but he wears two sizes smaller than me. So I asked the costume designer of Sanju to make similar boots in my size. Even the jeans he wears are boot-cut and his kurta-pyjama too has a ‘Sanjay Dutt’ style. It may sound silly, but these things help me get into the skin and mind of the character - otherwise the portrayal becomes a caricature and performance is reduced to mimicry.
