Experience Landing on Moon Kerala Tourism Department joins TikTok To inform people about the tourism sector in God’s Own Country, Kerala Tourism Department has opened an account in the popular short-form mobile videos platform, TikTok. It has been done as part of the app’s global campaign called #TikTokTravel. With this, the Kerala Tourism Department becomes the first government department in India to join TikTok.
Washington’s Bloom Mount Rainier National Park in Washington is all set to put up a dazzling display of bloom from mid-July to the beginning of August. Early-season wildflowers like the avalanche lilies along the Stevens Canyon Road near Reflection Lakes are already in bloom. S
alem, located at the foothills of the Yercaud Hills in Tamil Nadu, is as dynamic as it is steeped in traditions. Lose yourself in the bustling streets of this idyllic and graceful city to soak the aura of divinity clubbed with nature’s bounty. The city is dotted with temples and has emerged as a popular tourist destination in South India.
History The name ‘Salem’ appears to have been derived from the word ‘Sela’ or ‘Shalya’ which refers to ‘the country around the hills’. In Salem, the existence of human civilisation can be traced back to the stone age. Touches of dung ash heap found are testament to the existence of the place since the Paleolithic Age. Later, Salem witnessed the rise and rule of several dynasties. The region was a part of the Chera Dynasty and was later governed by Poligars, who were responsible for several architectural wonders that exist till date in and around the city. It became a part of the Vijayanagara empire before being captured by Hyder Ali during the early 18th century, after the MysoreMadurai war. Salem was taken

from Hyder Ali by Colonel Wood in the beginning of 1768. But it was recaptured by Hyder Ali towards the end of the year 1772. Under Lord Clive in 1799, it was again occupied by a detachment of the residents stationed at Sankari Durg and remained a military station till 1861.
Places to visit Yercaud is an exquisitely picturesque summer resort in Salem. Situated at an altitude of 1515m above sea level, the natural beauty of the region is enhanced by the presence of dense forests surrounding the Yercaud Lake. Admire the natural beauty of the hills and verdure valleys at Yercaud or offer prayers at the numerous temples dotted all over the place – a trip of Salem is bound to make your feel more rejuvenated. Located 38 km from Salem, Sankagiri Fort is a historical fort maintained by the Archaeological Survey of India. It was built in the 15th Century by the Vijayanagar Empire. It has 12 fort walls built on and built by the British. The fort served as a British tax storage facility for Kongu Nadu. It was an important military base for Tipu Sultan and later for the British army.
Some other notable places to visit in Salem are Mettur Dam and a number of religious shrines that include the Kottai Mariamman Temple, Siddhar Temple and the famous ISKCON Temple.

Each terracotta horse is created individually. The city is also famous for glass painting, handmade handicraft, fabric painting which is exported all over the world. Coconut coir rope making is another major cottage industry of Salem. These ropes are known for its high strength and durability and Salem is the leading exporter and supplier of coir ropes.

ummer is all about mangoes. So much so that our culinary ledgers are full of dishes that can be made of mangoes – from chutneys to jams to beverages and even dishes. This perhaps is the reason why there are as many mango dishes available as there are varieties. Take for instance Ram Kela. This rotund variety of mango is a favourite across India for all things preserve, especially pickle. Says Chef Shantanu Mehrotra (Executive Chef, Indian Accent), “the reason we chose that variety is because it holds the robust flavours of a pickle masala well, while adding the sour-sweet note to the dish.” For Chef Vikas Seth (Culinary Director, Embassy Group), the choice was of course the Neelam, a type of mango known for its floral aroma. “The reason,” says Chef Seth, “for choosing the raw Neelam over the round Malgoa is the balance of the tartness and the brilliant shape and colour.” But appearance and aromas are not the only things that determine which duper is at play. A lot, says Chef Sabyasachi Gorai (Chefpreneur, Lavaash By Saby), “depends on the mangoes versatility as well, and of course longevity.”
Mangkay or Man-gay is a Tamil word from where the name mango has been derived. Later, the name was distorted to ‘manga’ by Portuguese traders who settled in western regions of India.

Chef Gorai, who has had a long association with mangoes, in fact, prefers the Palmer, Kesar or Mallika over alphonso when he creates dishes with mangoes. The idea, says the culinary wizard, “while using a mango in a dish is three prong: one to highlight the flavours of a mango; two, its versatility as to how it adds to a dish; and three, to do so while not tampering with the natural texture of the mangoes.” This is one of the reasons that chefs have to work with a variety of mangoes, since one variety, says Chef Dewan, “may not fit the bill.” An excellent example of this is the famous Alphonso. While the variety works brilliantly for an ice cream, says Chef Mehrotra, “a good choice for something like an aamraas will be the Mughal favourite, Hamam since its both fragrant and comes with the delicious taste.” But with change in cities, the preferences changes. Like for Chef Dewan, the variety that works is Himsagar, which is local, sweeter and comes with a better shelf life. In case of Chef Seth, who uses mangoes in his guacamole, it will be the mix of both the juicy, oval shaped Raspuri and the happily tart Malgoa, which is chopped into bite size cubes to add both texture and taste to the dish. Chefs going local with mangoes, explains Chef Gorai, “aspires not only from the need for freshness and longer shelf life, but also the taste. A local variety will hold much appeal to the local palate than one that

To cut down the sweetness, we needed an ingredient that provides acidity and balance the sweetness.” Another example is the Alleppy lobster curry, where instead of tamarind, the raw version of Totapuri is used to infuse the dish with that right amount of tartness and texture.” Choosing mangoes, says Chef Mir Zafar Ali (Executive Chef, The Leela Bengaluru), “is often determined

by what you want to extract from them. Primarily, most mangoes have two distinct flavour profiles – the sour and sweet. When it comes to making pachadi (a kind of chutney), I prefer the Gaddamar, which is the Ram Kela equivalent in down south. as in the form of a light coconut milk-based drink.” Of course, there are a few exceptions to this versatile rule of mango. For some dishes like Kerala’s Mambazha Kalan, says Chef Ajay Anand (Culinary Director, Pullman Aerocity), the best mangoes to work with is Nandan, which inherently has this sweeter nuance even when it is not ripened. And those are the flavour notes that work best for this Sadhya dish.” However, for most chefs, it is the versatility of the summer duper that makes it a fascinating pick. Masque), mangoes are all about a foreplay of three interesting local varieties: Alphonso, Kesar and Ratnagiri. “Our Kashmiri katlam bread is currently served with pickled mango and jackfruit, alongside a jamun ketchup; a hazelnut flour tart filled with hazelnut cream is topped with pickled cucumber and raw mango, “ says Chef Sandhu, whose next experiment on mangoes is fermentation. The plan, says the chef, “is to leave the mangoes for 6 to 8 weeks at a steady temperature of about 65 degrees, causing them to blacken in the process.” But Chef Sandhu isn’t the only

one pushing the envelope on mangoes versatility, Chef Abhishek Gupta (Executive Sous Chef, The Leela Ambience Gurugram) has created a summer menu for his experiential table, Epic, with ‘faces of mangoes’ as the theme. Explains Chef Gupta, “ The idea was to explore as many facet of mangoes. So with Biorythm, I have played with the different forms of mango starting with homemade mango leather cigars, stuffed with Safeda cubes, raw alphonso salsa, fresh mint, mango Jel, mango Salt and wafer, served on a Himalayan Salt Block. It is an ode to the simple treat of aampapad and chaat masala with its flavours deconstructed. Another treat is the Mango & Turmeric. Here I have used pickled turmeric with Safeda, which is moderately sweet and weds beautifully with Oilve water, fermented capers, burnt chilli, honey and gherkin. All this is combined with a semi-ripened mango salt.”
For Chef Heena Punwani (Pastry Chef, The Bombay Canteen), the experiment with local mangoes is inclined more towards keeping it as natural as possible. An excellent example of her experiment is the Kairi Meringue Tart. “Fashioned after a lemon tart, the shortcrust base is first lined with bruleed kairi slices sprinkled with chilli powder and topped with a kairi custard with the barest hint of black salt. The tart is served with torched meringue and kairi jujubes rolled in sugar,” says Chef Punwani, who experimented with at least a dozen raw and semi-ripened mangoes to get the childhood favourite right. Eventually, says

the pastry chef, “I had to choose a mix of mangoes to create the dessert, which turned out to be a summer bestseller.” Another of her brilliant creation is the Aamras Puri, which is an ode to the varieties of mangoes, and usually takes on the seasonal best. So, she adds, “we begin with Dussehri, then Kesar, then Chausa and then Langra towards the end of the season. Of course, with this time, we are trying to try the lesser known variety of Himayat and Imam Pasanda.” Much like Chef Gorai who would be debuting the sweeter, juicer, fleshier Palmer this season as part of their ‘fresh taste initiative’.

Someshwar After you’ve been to Batabady Beach (which you absolutely must go to early in the morning), you’ll find yourself a little peckish. Your first stop should be the Someshwar. As you drive along, you’ll find Tiffin joints opening up in the morning. We tried a few on the recommendations of locals and found that they’re all fairly homogenous. This is Udupi cuisine done really well. The small, yet diverse menus in these places include old favourites such as IdliVada, Dosas of all descriptions including, Benne (butter) Masala Dosa, Set Dosa, Onion Uttapam and other, lesser-known delights such as Bisi Belle Bhat, Khara Bhat, Chow Chow Bhat and

something you must try called Kesri Bhat, which is a Semolinabased sweet and a near cousin of the ubiquitous Halwa.

Mangaluru A breakfast like that should set you up for a couple of hours. That’s more than enough time for one to drive to Mangaluru for lunch. In fact, it’s just a half-an hour’s drive that’ll give you plenty of time to get acquainted with the city. Once you’ve done that, we’d recommend that you go to Machali in Kodailbail. This place is a favourite among locals and visitors alike and does Konkani style Tulu food. We’d recommend you keep it simple here and go straight for the Fish Thali. It comes with rice, vegetable curry, a broth made with

on and lots of other family-friendly things. But the reason we went to Malpe Beach was for the seafood. Tiny stalls dot the entrance to the beach. They all have freshly fired/ grilled fish, prawns, crab and other seafood. This is one of those gems that exist in few places around the world where fresh seafood is cooked simply and sold at very reasonable prices for everyone to enjoy right at the beach.
Udupi After having all the food you’ll need in a day, we set off for the Udupi town the next morning. From Malpe to the middle of Udupi takes no more than 20 minutes. At 8:00am, the restaurants were buzzing with activity; most of them packed completely. We went to Mitra Samaj which is near Sri Krishna Temple. Not that you’d need a landmark because any local you ask will be able to direct you right to your preferred table at this hugely popular restaurant. It’s a simple place with quick service and quicker churn of diners. We’d heartily recommend the Bullet Idlis, Medu Vada, Goli Bajje and the amazing Cold Badam Milk to cap your breakfast.

After a quick visit to the Murdeshwar Temple, we went to our hotel, had a quick freshen-up and went straight in search of dinner. As we walked towards we heard laughter, singing and caught a whiff of cooking fish. It

turned out to be a dinner party of a group of fishermen. The meal that followed consisted of simply grilled Mackerel, Sardines and Anchovies as snacks. They’d made a hearty fish stew and coconut rice for mains. But this meal wasn’t all about food (which was excellent), but rather more about conversation, having a few laughs, making new friends and taking back memories.
Gokarna We woke up late the next morning with decidedly heavy heads because of all that ‘fish’. We didn’t have time for breakfast. We had just enough time for a couple of glasses of Kokum Sherbet and away we went. We managed the 80km drive from Murdeshwar Beach to Gokarna in an hour and we got to our destination late by half an hour. Still, real French food on the Konkan coast? This was worth making a few apologies for. The place we’d chosen was called Chez Cristophe. This may seem strange but like Hampi, Gokarna is a very international part of Karnataka. It felt a lot like Goa from 20 years ago. On the menu for us was an excellent Charcuterie selection (in Gokarna) to start with. For mains, we had the rather brilliant Goose Pate which was served on toasted Baguette slices. We were recommended the Chocolate Mousse for dessert and gave in. That was the best decision we’d
made all day. Best Chocolate Mousse we’ve had? Check. Merci, Chez Cristophe.
Karwar This quaint little town (like the other quaint little towns on our way so far), is at the Northern end of Karnataka, on its border with Goa. By now, we’d eaten at great restaurants, we’d tried several local delicacies which affirmed our opinion that Karnataka’s coast is a mecca for food lovers. So we sat down at a local seaside restaurant and ordered

our dinner. We thought about the three days and thought about all the incredible things we’d eaten. And we realised that food can only ever be as good as the people that make it. And all the people we’d met really cared about food, about feeding people and making them happy. They took it as seriously as the French and had the warmth of the Italians. We can’t thank them enough. And then our order arrived. A simple Mackerel curry and steamed rice. And it was excellent as well.

smita Marwa, a Hyderabadbased designer has been creating and manufacturing garments in-house using ethical norms and practices. Her collections reflect her ideology as she takes tips from her trips and fuses traditional and global aesthetics to create the unconventional outfits. Asmita has been a part of Lakme Fashion Week since 2008 and Fashion Week in Goa since 2011. She was also invited to showcase her ‘Zero Waste’ collection at the Global Sustainable Fashion Week, Budapest, Hungary. The designer has been featured in Vogue as a ‘Promising Talent To Watch Out For’.

Asmita Marwa’s collection is about being bohemian at heart and dreaming of a world without boundaries
The designer began designing clothes in Hyderabad in the 1990s. She was the first Hyderabad designer to enter the Telugu film industry and is revered for styling celebrities including Nagarjuna, Balakrishna, Preity Zinta, Anjala Zaveri, Shriya, Mahesh Babu, Tabu, Asin, Charmy, and Anushka Shetty. Asmita’s sense of reinventing fashion and style is a favourite of many.
Sustainable Factor “We believe in ‘Cradle-to-Cradle’ design or re-generative design which is holistic. We create systems that are not only efficient but also essentially waste free,” says Asmita when asked about her fashion label. Asmita’s
clothes are like a free-spirited and bohemian world traveller who believes in dreaming of a world that is without any boundaries. “There is nothing more beautiful than a woman being unapologetically herself, comfortable in her perfect imperfection… that is the true essence of beauty. This label celebrates wanderlust and the eternal traveller, bringing together various cultures and heritage art forms to tell a story, season after season,” adds Asmita. For Asmita, sustainability is all about slow and timeless fashion. It is very close to her heart and one can clearly see it when she sits in her studio re-inventing and re-interpreting fashion over a few

seasons. When asked about her sustainable collections and what new it has to offer, she smiles and says, “Sustainable fashion does not believe in churning out collection after collection making the consumers feel that they are outdated because they don’t have the latest pieces. It is about adding separates to continue the evolution of a concept or design language.”

The bindu or the circular symbol is an integral part of my design philosophy. I consider it quite powerful like the beginning of the universe designed from different panels of upcycled fabrics. These jackets tell a story and when I was wearing them around Rome or wherever, I would get approached,” recalls the designer while talking about her trips. She also adds that she has made many friends around the world as a result. Her jackets are worn by people all across the world and in 2019 she looks forward to design more innovative designs such as Kalamkari designs sporting a trench-length but in the style of a kimono.
Patchwork Trends Asmita’s latest jackets are inspired by kimonos. In autumnal hues, these jackets can be paired with other separates from her collections. Talking about styling the jackets she says, “You can belt these up, pin them to the side or just have them undone,” Asmita points out, “and they’re ideal for a brunch, a dinner

or a stay at a resort.” These jackets reflect Indian aesthetics with traditional notes such as mirrorwork and embroidery. One of the dresses designed by her is an off-white dress made from a patchwork of reworked cotton khadi. It is clearly a chic bohemian outfit resonating traditional style with international buyers. When this dress was revealed on the ramp, it was paired with a dark blue poncho featuring a textured Bindu, which Asmita consistently uses in her design. “The bindu is a very powerful thing,” she starts, adding that the bindu is a central point of focus and origin of creative energy among other types of energy. The eye-catching bindu has been very popular with clients. “Since we literally do not let a single thread go to waste in our design process, the threads are placed in the bindu,” she adds. Her new collection of jackets is inspired by tribes from around the world — Myanmar, Afghanistan, Gujarat and the Banjaras. “I have ensured that no two pieces are alike as I have used embroidered patchwork which adds to the beauty of the pieces. I picked up inspiration along the way as I travelled and for me, these jackets are no less than art,” says the designer.

a client who’s aged upward of 80 and she’s wearing these designs fantastically,” she smiles, adding that various body types are able to rock her clothes too. “It’s not just for models, I’ve always encouraged both petite and fuller figures to wear these designs, and everyone who wears these designs shows off the garment in a special way and I love that.” She says that her collections are mostly inspired by meetings with real life gypsy women. “I had met a gypsy
woman, and there was something charming about her. She had put together a look of gypsy clothes and accessories sourced from different countries. Something about her appealed to me and inspired me,” said Marwa.
What’s New? The limited prêt collection has bindu motifs and tie-and-dye work at the centre. The designs transcend seasons, they are fluid and are light as feather.
