News updates A NEW BUDDHIST PILGRIMAGE SITE The pilgrim site at Pelling in West Sikkim, will have the tallest Chenrezig statue in the world at an elevation of 7200 mts. Avalokiteshvara or Chenrezig is the earthly manifestation of the self-born, eternal Buddha, Amitabha. A destination park has been built at Sangha Choeling in Pelling at a cost of `46.65 crore to promote Sikkim as a Buddhist Pilgrimage Tourism Circuit.

PURI BEACH FESTIVAL The 7-day beach festival is marked by an exhibition of handicrafts, handloom and sand art. A Goan Christmas is a must-experience for all those who love Goa, and Christmas. The Anjuna Flea Market with its maze of lanes has stalls selling trinkets, handicrafts, clothes and a variety of other items.

To get a taste of the traditional Christmas meal, try the traditional Goan curry, Sorpatel, Chicken Carfeal and Bebinca, the quintessential Goan dessert, at any of the restaurants or beach shacks. A Portuguese special dish called Bacalhau da Consoada is traditionally prepared on Christmas eve. Also known for its party scene, Goa hosts all-night-long parties on the beaches like Anjuna, Mapusa and Candolim during Christmas.

ubballi has always been known for its bustling trade and commercial activity. While the name literally translates in Kannada to ‘flower creeper’, the industrial town has always been a business hub and a centre of active commodity trade. The second largest city in the state, the transformation of Hubballi into an industrial town can be traced to the days of the Vijayanagara Empire, when cotton, iron ore and other metals were traded here in abundance. Even today, the city is synonymous with textile, cotton, groundnut and chilli trade. Several musical legends and stage artists including Pandit Bhimsen Joshi, Dr. Gangubai Hangal and Pandit Mallikarjun Mansur hail from here. It is a hub of education, with three universities that are based here.
Architectural gem in the City Located close to the Unkal Lake in the city, is the Chandramouleshwara Temple dedicated to Lord Shiva. On reaching the temple, one is sure to be mesmerised by architectural brilliance of the monument. The temple is believed to have been built by the Chalukyas in the 11th and 12th century. Lingas (main deities) with one of them being Chaturmukha or four-faced. A unique feature of the temple is the presence of four doors in all four directions and the absence of a temple tower or Gopura. The temple is a rectangular structure with a flat top and according to legend, it was supposed to be built overnight, but as the sculptors could not finish it, they left it incomplete. In typical Chalukyan style, the faรงade and the exteriors of the temple, done in stone have some exquisite carvings and sculptures, reveal volumes of the superior craftsmanship of the sculptors. The red and green hues of the stone only complement the beauty of the intricate columns and panels on the walls of the temple. It attracts huge crowds on Mondays as it is a day that is auspicious to Lord Shiva.

f there is one temple in the world that attracts the most number of devotees and visitors it has to be the Venkateswara Swamy Temple at Tirumala, Tirupati. Said to be the richest temple in the world, there is a sense of power and faith that permeates through the serpentine queues that give you a fleeting glimpse of the Lord. Tirupati, however, is home to many other temples and sights as well which must be on your itinerary the next time you are in this pilgrim town.
Sri Padmavathi Ammavari Temple Also called the Alamelu Mangapuram Temple, this place is located 5 km away from Tirupati and is dedicated to Goddess Padmavathi, the wife of Sri Venkateswara Swamy. It is widely believed that you must visit this temple before you head to the temple atop Tirumala. This place is also extremely crowded and it is advisable that you get a special darshan ticket which will also include a small pooja and allow you some time near the sanctorum. The idol of the Goddess is magnificent, in the form of a bride. There are special poojas held during the days of the Navarathri Festival. Another important festival associated with this temple is the boat festival locally called Theppotsavam, which happens for five days during the month of Jyeshtha in June.

The museum has a huge collection of stone, wood and metal images, as well as pottery, coins, inscriptions and articles used for poojas.

ne of nature’s most endearing sights is of a bird flying with food in its beak for its chicks, and then carefully and gently placing that food in the opened mouths of the waiting brood. Never mind the size or shape of the beak, the parent bird carries out its task with utmost care that keeps the chicks well fed, growing and thus the species thriving. And in a marvel of nature, over millennia, bird beaks have evolved in different shapes and sizes from the tiny bill of a flowerpecker to the large beak with casque of the Great Hornbill, apart from colour and texture, to help birds source the food they eat, feed their young ones, and divide nature’s

Like the Human Hand While we initially think of a bird’s beak as its mouth, it actually is akin to a hand for the functions it carries out! For a beak, comprising an upper and lower mandible connected by bones and soft tissues, helps a bird source its food, carry it, eat it as well as feed its companion (the most endearing example being of hornbills) and its young ones. Further, beaks also help birds in carrying out a variety of tasks from preening their feathers to releasing excess body heat in the summer (called panting), courtship rituals, building nests, defending themselves or fighting those who attack them with their bills. Birds preen their feathers to keep them in good condition for health reasons and ease of flying. They do this by using their beaks to smoothen and align the feathers, as well as remove dust and any mites. Some birds have a preen gland at the base of the tail that produces an oily substance, and they use it to preen the feathers thus making them healthy, flexible and strong. While preening makes a bird healthy and attractive, interestingly it also forms part of courtship for some bird. Beaks also help birds build their homes which range from the woodpecker incessantly banging its chisel-like beak into a tree trunk

Bills for Food Type Some birds consume a variety of food, while most birds have very specific food preferences and their beaks have evolved to help them source and consume the particular food(s). So though some birds may look different, their beaks are of a similar shape as they eat the same food, and some birds appear similar to look at yet their beaks are of a different shape as they eat different food. A generalist like a crow will eat a variety of food from fruit to cooked rice and small birds/animals and its large stout beak helps it in doing just that. However, other birds are very specific about their food choices and their beaks are
shaped just for that. Thus, there are seed-eating birds like munias and sparrows with tough triangular-shaped beaks which give them power to break the outer casing of seeds; nectar-drinking birds like sunbirds who hover over flowers and draw the sweet liquid from deep inside a flower courtesy their long curved beaks that helps them probe flowers; fruit eating birds with small beaks like bulbuls; and fruit eating birds with larger longer beaks like parakeets. Insects, widely available, are eaten by a variety of birds including some that eat other foods. Insect eating birds have slightly longer, thinner beaks that

Adds Chef Mir Zafar Ali (Executive Chef, The Leela Palace, Bengaluru), “The taste and the fact that it is extremely filling comes as an added bonus.” Chef Ali, who uses kodo millet across different restaurant menus in the hotel, first discovered millet during a family trip to Nagore. “I was introduced not only to Kodo millet (which is an all-season millet in the south) but to another super-ingredient called Mudakattan Keerai, a Balloon Vine Leaf that adds a different dimension to food, especially millet.” While dining there, at a small restaurant that transformed these
two ingredients into a feast, Chef Ali decided to explore kodo millet, not only as an alternative ingredient but also an interesting dish. Today, adds the innovative mind, “it is offered as a new dish that weaves together ancient wisdom with new techniques.” One of the most amazing ways to have millets, says Chef Anand Panwar (Executive Pastry Chef, Roseate Hotel & Resort), “is in salad. In fact, it goes great with fresh, parboiled seasonal vegetables especially greens with a honey, tamarind dressing.” Chef Vikas Seth’s (Culinary Director, Sanchez) tryst with millet much like Culinary Custodian Chef Sabyasachi Gorai (Owner, Fabrica By Saby) began as a search for healthier alternatives for guests looking for conditionconducive ingredients. For diabetes and allergies, says the multi-cuisine expert, “it was more of a replacement for a certain rice, wheat and allpurpose flour in a dish.”

A fine example is the tacos that the chefs prepare using ragi, amaranth and barnyard millet. Fascinatingly, it isn’t just the base that is changed but also the filling. Chef Seth, for instance, serves his tacos with a dressing made of yam and sour cream; while Chef Gorai’s version is stuffed with millet falafels and hummus. Another interesting way of having millets is with traditional curries, says Chef Akshraj Jodha (Executive Chef, ITC Windsor, Bengaluru), who uses millets to introduce a rustic taste when he recreates some of the old Rajasthani recipes like Hara Maas or even Khad Gosht. “Millets hold moisture much better and make for an interesting pair with thick curried meat dishes. ” Chef Kinny (Culinary Director, St Regis, Mumbai), another advocate
of clean eating has used millets to un-junk quite a few dishes so that people can have healthier burgers. Says Chef Kinny, “Air popped millets are great for texture, they also make a lighter indulgence yet satiating.”
Here to Stay Thankfully what has helped most chefs create so many versions of the superfood is the understanding of how each millet works in different region. Chef Gorai adds, “chefs are now using it to create dishes rather than just using it as a healthier alternative to popular ingredients like wheat and rice.” An excellent example of this is Chef Gorai’s signature yellow pumpkinmillet porridge, which is a great option for those with diabetes and dairy allergy. Clearly millets are no more the fad, but the future of culinary sustainability that must be constantly revived and reinvented.

Mesopotamian Fringes The trend of fringes originated in 3000 BC and is believed to have been worn widely in many

Although there is no physical evidence of these fringes but the people of this period left behind sculptures, statues and written accounts that tell what the ancient fringes looked like. In fact, the excess material was not discarded but was tuned into an embellishment for the outfit. There was also a trend to decorate the fringes with beads.

From an employee in a supermarket to hosting events to becoming an actress, Aishwarya Rajesh has come a long way. Words: KOMAL MEHTA

he was neither spotted in a coffee shop by any director, nor was her first film a blockbuster. Unlike
most known names in the industry, Aishwarya Rajesh did not have a fairy tale beginning in her career. As a teenager she started working in a supermarket as a part-time employee. She also distributed pamphlets of new products at Tidal Park. Aishwarya liked multi-tasking and managed to do all this even while she was in school. “But the desire to earn more, say, something like `25,000 per month, kept haunting me. So, when someone told me that serial artistes were paid well, I wanted to try it out. But when I got an opportunity, finally, I was paid only `1,000-`2,000, whereas a few

Aishwarya is the winner of dance reality show Maanada Mayilada Season 3, which aired on Kalaignar TV. She is also a playback singer and has sung several songs in popular films like Love Chesthe (Telugu, 2012), Majhya Navaryachi Bayko (Marathi, 2013), etc. She started her career as an anchor in a comedy show called Asathapovadhu on Sun TV.
other artistes were given up to `20,000. Later, I realised that only film actresses, who turned into serial artistes, were paid huge sums. That’s when I seriously started thinking about becoming a film actress. I felt that I should become a film actress first, and then come back to serials and earn good remuneration from it,” she adds.
Her Diligence Aishwarya recalls how she auditioned for almost every production house before her debut. She adds, “The funniest part was that after every audition, the production house people would tell me, ‘You are the heroine’. Overwhelmed by their words, I would come home and tell my mom that, I’m going to be the heroine of some four or five films. But during the film’s puja, someone else would be announced as the heroine.” While she was struggling to be a part of the industry, she passed in one of the auditions and got her debut film, Avargalum Ivargalum.
She even managed to get a small role in Attakathi and these were the films after which her career began taking shape. In 2014, she was seen in Rummy, and Pannaiyarum Padminiyum where her acting skills were highly appreciated.
The Struggle Continues Aishwarya Rajesh also acted in critically acclaimed projects, Manikandan’s 2015 film Kaaka Muttai. Though the film shattered box-office records, she did not get offers for more than a year. She muses, “That one year, without any job, was the toughest time of all my trials so far. I decided to be patient and strong. Once again, I started waiting for good roles to come my way. Then, my period of waiting was over, and I again started getting challenging character roles.”
Tide Turned Towards Her In 2016, she had eight film releases. Out of these, Manithan, Dharmadurai, and Kuttrame Thandanai did extremely well at the box office. From here, she
started trying different genres and won many hearts. In 2017, she stepped into Mollywood and Bollywood as well. Her career took a new turn when she was chosen as the pair for Nivin Pauly in Sakhhavu. She was also paired opposite Dulquer Salmaan for Jomonte Suvisheshangal. Her Bollywood flick, Daddy marked her debut in Hindi Cinema. “In Daddy, my character arc spreads over almost 40 years. I’ve used prosthetic make-up with the guidance of an Italian make-up artiste. I feel very confident and empowered before the camera, after working with Arjun Rampal,” she adds. The achievement is something she is really proud off. The critics also appreciated her performance. The year 2018 has been a busy one for Aishwarya. Two of her big films due for release are Mani Ratnam’s Chekka Chivantha Vaanam and Vetrimaaran’s Vada Chennai. She will also be seen in Raja Kamraj’s sports drama Kanaa. She shares, “Kanaa is a rare opportunity; it’s about women’s cricket and they’ve trusted me with this film. I trained for nearly four hours every day with three coaches. And yes, I can now play a decent game of cricket.” She won praises not only for her acting skills, she even voiced her concern on matters like industry salary disparity and other pressing issues.
