Banishing the winter blues, the vivid tones of lavender are set to brighten your winter wardrobe and soon the shops will be full of it. Tops, bottoms, shoes, boots, coats: whatever you’re wearing, get ready to feel the lavender. And to complement your new colour you’ll defi nitely need a hat. But not any old hat, oh no. Th is year, the beret makes a comeback. Although never truly out of style, this French favourite is in line to become the must-have headwear for 2018. There’ll be a beret to suit everyone. Easy to pack, easy to wash, easy to wear.

We should by now be aware of the value of our own consumer data to companies and corporations. They all want us to buy their stuff - be it shoes, insurance, champagne - in 2018 it’s predicted that data reaping will become an even higher priority to big business. If you use smart speakers and/or rely on digital devices for some of your daily tasks - operating your home heating for example - companies will soon be able to access and use almost unlimited amounts of your personal data. Scary? Useful? Unprecedented, certainly. Paying for that coffee with your phone? Then don’t be surprised to receive all sorts of coffee/tea/milk/sugar related advertising persuading you to buy stuff you didn’t even know existed.

Every year sees new foods and styles of eating having its fi fteen minutes of fame. 2018 is set to feature Hawaiian cuisine. Don’t be offended if someone tells you to Poke it – poke bowls are in! Curiously named (for those in the west) this is what everyday food looks like in Hawaii and has done for hundreds of years. Poke is essentially down -to-earth sushi. Like a dinosaur burger, poke bowls (pronounced Poh-Keh) are still hard to fi nd in the UK, but in 2018 their popularity is set to expand. In Hawaii, poke is a convenient, nutritious staple, traditionally made using marinated raw fish, rice and spices but can of course be customised to suit your diet, so vegans and vegetarians won’t miss out. Create a fish-free poke bowl using poke salad over a bed of brown rice, zucchini noodles, seaweed salad, shredded cabbage, and topping with marinated tofu. Or anything else that takes your fancy. But don’t forget those all-important spices !

A virtual world we thrive your followers to like and tag. But what about the printed version? Before social media taking photos upon. Could you imagine a world without it? with a camera and putting them into an album for faCe to faCe Do you remember the last time you had a face to face conversation with a friend? Being glued to social media prevents you from doing just that. It’s all very well liking friends pictures. But ask yourself this, when was the last time you actually caught up with your online friends for a coffee and a chat? A conversation face to face does wonders for the body and mind and is more social than social media.

BirthdayS and eVentS Putting pen to paper sadly seems a thing of the past. For many it’s easier to use your fi ngertips than pick up a pen and write. Social media has made it easy for us to remember significant dates, such as birthdays and anniversaries. However, receiving a card can be so much more memorable than an online post. Choosing a card that fi ts the qualities of the person you are sending it to says a lot. From a birthday, anniversary, thank you or invitation card, it’s these keepsake memories that will always be remembered.

GET UP AND RUN FOR CHARITY Portsmouth Hospitals Charity based at Queen Alexandra Hospital, Cosham are looking for fundraisers to take part in the Southampton Marathon on Sunday 22 April 2018.

The race starts and finishes in Southampton city centre with the run course passing iconic local landmarks such as the Bargate, QE2 Anchor, Itchen Bridge and The Common. The registration fee for the Southampton Marathon is just £30 and the minimum sponsorship amount is £300. Funds raised will be donated to a Ward or Department of your choice within Portsmouth Hospitals NHS Trust or The Rocky Appeal. If you would love to take part in a run event, but feel you aren’t quite ready for a Marathon just yet, the charity are also looking for fundraisers to take part in the Southampton Half Marathon or 10K run. The registration fee for the Half Marathon is £20, with a minimum

sponsorship amount of £200 and the registration fee for the 10K run is just £15 with a minimum sponsorship amount of £150. Portsmouth Hospitals Charity aims to support the patients of Portsmouth Hospitals NHS Trust by improving existing facilities and by providing additional equipment, supporting research programmes and innovation in the development of services and education to both patients and staff. Care and Diligence Bring Luck When things are going wrong, it’s easy to blame it on bad luck and assume that people doing better only do so because of a helping hand. But a positive outlook on life can bring around better fortune. A happier, more open-minded person sees opportunities where others see adversity. If you are looking for the best, you will find it and even if you find something below par, you turn it into a blessing.

A Self-Fulfilling Prophecy By believing what you do creates luck, you will begin to feel luckier. If you have expectations of a behaviour causing luck, you believe that doing it again will create more luck. Such an outlook reinforces a positive mindset and things you wouldn’t normally do become routine; just to get the lucky feeling. So, pick everyday actions which you feel bring you luck and you might just see it.

This ‘diet’ involves living off of baby food, although you can enjoy a variety of flavours and ingredients. If you’re partial to cold thick soup every meal time, this one could be for you.

The Paleo Diet focusses on eating natural unprocessed foods including; meats, fish, nuts, leafy greens, regional veggies and seeds. Man made foods like pastas, cereal and sweets are not allowed. This has been proved an extremely healthy way to eat.

The Cookie Diet involves consuming a range 4–6 flavoured cookies per day, restricting calorie intake to around 500. The type of calories being ingested are often referred to as ‘empty calories’ as they don’t provide healthy calorific content and this is considered hazardous by doctors. You’ll achieve nothing if you go for the ultimate dream straight away. You have to take steps to get to where you want to be. Set yourself a number of realistic goals, start small then build up. There will be work involved, remember you’re working towards your dream so it’ll be worth it in the end, stick with it and with realistic aims they’ll be less room for disappointment.

Motivation and determination go hand in hand and neither will work without the other when it comes to achieving your dreams. You need to make sure you’re motivated to stay on track. Once you’ve found your motivation, next comes the determination to achieve it. The most important thing is not giving up, stay motivated and determined and the process will feel easier.

Lastly but probably most importantly, you need to embark on this mission to fulfil your dreams for you and you alone. You shouldn’t be crumbling to the pressures of others or letting other people influence you too much. It’s great to have support from family and friends but ultimately you have to do it for yourself and you have to want to do it for you to be successful.

HOW TO… COOK DINNER THIS VALENTINE’S DAY WITHOUT THE HASSLE OR STRESS!

Why stress out about buying the perfect Valentine’s gift when you can cook a romantic dinner and impress your other half with your culinary skills? “But I haven’t got any culinary skills”, I hear you cry! As already claimed by many chefs, cooking impressive dishes at home, within a reasonable time, is not mission impossible. It does, however, take organisation, focus and, at times, some simple kitchen gadgets. 24 | Winter 2018

deSign a Menu Try and fi nd recipes that both of you will enjoy; sometimes it’s easier to think about the types of food you feel most at ease cooking: what type of meat, perhaps a pasta dish, or a vegetarian option. Deconstruct the menu, it’ll make it less challenging and easier to organise. Look at recipes – they’re everywhere: the internet (BBC Good Food website is particularly good), your family’s recipe book collection, your local library, etc. Following a recipe will particularly help when it comes to buying ingredients and getting the timings right. Don’t worry if you can’t seem to find the perfect recipe, just focus on the main cooking instructions and adapt the rest to your taste. For instance, if the recipe calls for lots of coriander but you are not keen, just replace with a different herb and tweak the seasoning to taste. You can also mix and match bits of different recipes by pairing the main meal from one with the side from another.

First option, vegetarian or meat dish. If you choose meat, the next option would be poultry, red meat or fish. Don’t feel afraid of vegetarian meals, even if they require a bit more imagination and a bigger array of ingredients, they can be just as filling and really tasty, and you can get to the dessert guilt-free! Choose a seasonal starter (seafood and sprouts are at their best in February). Soups are also great at this time of year but avoid anything overly rich. Dessert is the indulgent bit, so choose something especially for your guest. Chocolate is always a winner, and don’t forget the extra bits to accompany, like cream, ice cream or custard!

Be PrePared Part of making this hassle-free is being as organised as possible when it comes to cooking. If you tend to get

easily distracted, make a note of the order in which things need to be cooked. Write an ingredients list and don’t forget to include any herbs or spices that you might need and don’t forget to dress the table with flowers and candles. You might need to borrow a food processor or an electric whip, but nothing that a friendly neighbour wouldn’t have! With some recipes you can do all the chopping before hand, or you can also buy prechopped vegetables. Also take into consideration many desserts need to be chilled or thawed overnight and the same goes for marinated meats.

Within the deepest recesses of your stomach and small intestine are enzymes that break down simple carbohydrates – fruit for example. Baked beans, however, contain rather more obstinate carbohydrates that aren’t broken down so easily – so they travel further down into your gut, semidigested, until they’re eventually consumed by bacteria. That bacteria exudes gas as a by-product... which your body disperses as...yes, you’ve got it!

Why do We Cry When We are ChoPPing onionS? It’s down to enzymes again! Onions contain an enzyme that produces a gas called Propanethial Sulfoxide. Th is gas escapes into the air when you brutally murder the onion with your knife where, eventually, it reaches the eyes. When it does that, the chemical reaction causes a mild sulphuric acid to be produced – which your brain instantly sees as an aggressive invader. It responds by releasing excess tears – the aim being to dilute and nullify the effects of the acid on your peepers.

Why do We get ‘PinS and needleS’? Pins and needles is called Parasthesia. It happens when there is a blockage of blood flow to a pressed nerve. So, for example – sitting in the same position for too long might cut off the circulation to a certain part of your body. That part of the body will eventually become numb. Pins and needles is the tingly feeling that occurs when the blood returns and nerves are restored.

What CauSeS gooSe BuMPS? Goose bumps can break out as a consequence of cold, fear – or, if you’re lucky, sexual excitement. The scientific word for goose bumps is Piolerection – and yes, that’s basically what they are, loads and loads of little skin erections. These are caused when the tiny muscles at the base of each and every body hair contract in response to those outside stimuli... causing the consequent ‘bumps’, or erections on the surface of your skin.

Why do My fingerS Wrinkly after a long Bath? Horrors! You’re soaking in the tub, a hot date is pending – and your fingers have gone pale, wrinkled and aged about 50 years – and there’s no way you’re going out looking like that! But of course, they do go back to normal – eventually. The reason they take on this look is all to do with the outer layer of oil on your skin which is called sebum. It’s there to protect and lubricate our skin, as well as keep water out – so if you didn’t have any, your skin would go pale and soggy every time you as much as washed your hands. However, we only have a limited amount of sebum on our hands at any one time – and, once your indulgent soak has washed it all away, water gets in and your skin becomes waterlogged – more in some parts than others, hence the wrinkles. Th is excess water eventually dissipates and the sebum levels return to normal, along with your fi ngers.

At dinner

A mobile phone is essential on a night out and can ensure that you get home safely after a few drinks. Take as many photos as you like, but save posting them until the next day. No-one wants to wait for their tequila slammer while you try to think of a decent hashtag.

You need to sell yourself and your skills. Take time to write it; don’t stress out trying to get it done in one sitting. It takes time to get it how you want or think it should be. You’ll go through plenty of drafts to get it perfect!

Open Days Found the course you like the sound of? Want to double check it’s the one for you? Attend the university’s open day to get a taste of what it is like and then you can finally decide if it’s for you or not. On an open day you’ll get to know more about what the course entails, the enrichment and facilities available, and of course the fees and accommodation. You can go to as many as you want. If you can’t go to an open day on a certain day find out if the university will let you look around on a day when you are free.

Going to university to study is a very real option for many people for various reasons. You may be at college or sixth form wanting to go on to higher education, or you may already be working but wish to gain qualifications to improve your job prospects. All of this comes with many new and unfamiliar tasks to complete, so how do you handle them? 36 | Winter 2018

Before you finally submit your application through UCAS (Universities and Colleges Admission Service) you need to make sure you have the following things included; your personal details, personal statement, the courses you’re applying for and your previous qualifications. Once you’ve filled out your application form online, it’s sent off to UCAS who will then forward your details on to your chosen universities. The universities will contact you, usually by May, with offers of a place on the course which you have chosen to study. It’s then down to you to make the decision on whether to accept or refuse placements. Whether you’ve taken exams recently or some time ago, you will still need to comply with the UCAS points requirements for the individual course. The points required vary depending on the course and the university, but most are well into the 200/250 points mark. It’s under very exceptional circumstances that you would be offered a place with below target points. Your time is now, so good luck!

As for having one that’s deep fried – don’t even think about it. One deep fried Mars bar contains around 640 calories – and that’s a modest estimate. In fact the whole thing is considered such a health hazard that the Mars Company have recommended consumers NOT to eat them!

Smoothies can have as much as 650 to 1,000 calories in them due to the extreme portions of fruit, vegetables and added sugars.

OK, so there is less saturated fat in your frozen yoghurt, but when it comes to calories and the sugar content in them – then you might as well have the ice cream anyway.

Many commercially sold muffi ns contain about 800 calories of pure sugar and fat, well above the calorie count of a doughnut!

So What Can i SnaCk on that iS healthy? Rule of thumb is keep it simple. If it’s processed or preprepared then it probably isn’t as healthy as it could, or should be. Th us fresh fruit and vegetables, either eaten off the branch or, in the case of most veg, after steaming – don’t boil them! And a glass of water is so much better for you than any one of the overpriced and overhyped bottled drinks that are currently available. It’s so often the case that what we think is healthy is sometimes far worse for us than foods we know are NOT healthy. A simple fi x: read the nutritional information! It may stop you from making a huge diet mistake.

That’s great. But don’t go overboard. It just means you’re the ‘standard’ as far as your sight is concerned. Th e important thing is not that you have 20:20 vision – but that you keep it!

Try the 20:20:20 rule – every 20 minutes focus on something 20 feet away for about 20 seconds. Th is little exercise can help reduce eye strain.

Whether you know it as Pancake Day, Shrove Tuesday, Mardi Gras or Fat Tuesday, it’s that one day where, traditionally, households grab all the fat left in their cupboards and make delicious crepes or pancakes before lent begins. Whether you enjoy yours with sugar, chocolate, syrup or lemon, you usually consume more than you intended, but what do the rest of the world do on this day?

• The world record for cooking the biggest pancake was in yorkshire in 1994! The huge battery cake measured 15 metres in diameter and weighed three tons!

• The word ‘shrove’ is not used in any other context. its origins derive from the verb shrive which means absolution, basically, the consumption of luxury food!

• The world’s best tosser was Ralf Laue from Germany who broke the world record in 1997 by tossing a pancake 416 times in two minutes!

• Auzzie chef, Andy Wrobel built the tallest Pancake Stack made from a tower of 60 pancakes, standing 29 inches high.

• Health and safety rules were pushed to the limit when ripon’s historic Pancake Day race was scrapped two years ago. Schoolchildren used to run down a cobbled street fl ipping pancakes following the ringing of the cathedral’s ancient ‘pancake bell’ at 11am. However, organisers cancelled the event following hefty policing costs.

Denmark

France

Pancake Day in Denmark is celebrated on the last Sunday before Lent, rather than the traditional Tuesday. The day is called ‘Fastelavn’ and it is customary to eat Danish buns. The middle of these is removed and filled with whipped cream and jam. Children are encouraged to play ‘hit the cat out of the barrel’. While in olden times this was literally as it is called whereby kids bashed a barrel with a bat while a live cat sat frightened inside, traditions have now changed to include sweets rather than a kitty.

The French celebrate Pancake Day as Mardi Gras, which translated means ‘Fat Tuesday’. This name originates from the ancient custom of parading a fat ox through Paris to remind people they were not allowed to eat meat during Lent. A carnival is held and people disguise themselves and put on crazy masks. The festival lasts in Nice for 10 days, with daily parades, concerts, street theatre and giant masks. Breaking tradition, the main pancake day in France is Candlemas on 2nd February. This holy day is six weeks after Christmas and is the day that Christ was presented at the temple by his mother. Pancakes at this time must be tossed with a coin in the hand to ensure prosperity throughout the year.

Sweden Known as ‘Fettisdagen’ which translates to Fat Tuesday, the Swedish eat Semlors which, similarly to Denmark, are round buns with the centre removed, but this country fill theirs with marzipan and cream. The top of the bun is replaced and then sprinkled with icing sugar. Another tradition is to eat pea soup with pancakes. The Swedes approach the making and eating of these buns very seriously, and many newspapers hold competitions to find the best ones in town.

Canada The Canadians add things to their pancakes including, coins, nails, rings and buttons. Yes, that’s right; they place (clean) inedible goods into their battery cakes for lucky finders. Of course they have meanings, the one who discovers the coins will be rich, whoever chomps on the ring will be the first to marry, the finder of the nail will be destined to become a carpenter and buttons or thimbles in your crepe symbolise a new career as a seamstress or tailor. These unusual pancakes are served with syrup, partridge jam and…sausages!

Australia The Australians make and share pancakes on Shrove Tuesday. They sell pancakes to raise money for charity and proceeds often go towards support for low-income families who are experiencing tough times. Pancake tossing races are also often held by neighbours and families. Australia now holds a Sydney Gay and Lesbian Mardi Gras, where international celebrities fly out to sing at the event. A parade is also held featuring elaborate costumes and dance music.

Brazil Known as ‘Fatty’ the Brazilians refrain from pancakes but go all out and celebrate with a carnival lasting for three whole days; ending on Shrove Tuesday. Due to the long deprivation of Lent, this country decided to hold meetings of various festivities marking enjoyment of pleasures. Large parties were held in previous times, where people ate, drank and enjoyed carnivals in streets, squares and houses.

WHEN THE CHIPS ARE DOWN gruB’S uP The chip shop originated in 1860, when Joseph Malin opened the fi rst such outlet in Britain in London. Adding fish to the menu soon followed, in the early 19th Century, as the rapidly developing railway network and spread of trawl fishing allowed for vast quantities of the citizens of the briny deep to be transported at speed across the country. But the facilities in which all this was cooked were drastically more basic than what we’re used to today while we wait in line for our share of the fun. Most accounts suggest that the principal method

of cooking in the early days was a large cauldron of cooking fat, heated by a coal fi re – which makes it all sound a bit like Mrs Lovett’s shop in Sweeney Todd, no? If nothing else that mental image could have you humming a note- perfect realisation of Stephen Sondheim’s original score while you eye up that mouth-watering cod and chips, dancing on the counters optional (though you’ll probably be told to clear off if you try).

his fi rst restaurant in Guiseley, North Yorkshire, in 1928. And here’s a fun fact – did you know his nephew Harry Corbett (later to create Sooty) played the piano there to entertain customers while they waited? We at Mayhem! think this is a great idea, and would urge any local chippy owners reading this to bring it back immediately! Sadly Harry sold his business in 1954, and it’s now in the hands of Associated Fisheries. But don’t let it put you off, as there are many great similar outlets in Portsmouth and beyond, the city’s prime position as a port, making sure the best grub is available!
