CLUB NEWS If you ever stop by my office, you will find The United States Flag represented in seven different ways. Eight if you count the head cover on my three wood. The Ryder Cup is my favorite sporting event of all time. I have been fortunate to attend a Ryder Cup in person. I cannot imagine what the players feel like while representing their country. Davis Wotnosky, a 14- year- old whose family is a member at the club, had a chance to represent Team USA at The Evian Juniors Cup in Evian-les-Bains, France in September. The experience alone representing your country would be awesome in itself. Davis fired rounds of 72-69-72 closing with an eagle on eighteen to win the individual championship. It got even better as Team USA led by Davis’ stellar play, won the team event as well. Well done and congratulations to Davis and the Wotnosky family. A few weeks later, our WSMGA hosted their annual WE CARE Golf Tournament. This group continues to push the envelope to help raise important and much needed funds for our local military community. Over 1.1 million has been raised since the tournament started back in 2013. Each of the twenty six groups had a member of the military playing. An incredible cause and purpose from an incredible group of members. As we close out the year, we look forward to seeing everyone around the club. MEMBERSHIP I think everyone would agree how hard it is to believe 2023 is already coming to a close. What is even harder for me to believe is how we are officially celebrating the 20th anniversary of McConnell Golf this December. The first McConnell Golf property, Raleigh Country Club, was acquired in December of 2003. 8 years later, then known as TPC at Wakefield Plantation became the 8th McConnell Golf property in 2011. The club came equipped with great employees who are still here today such as Chef Todd Jackson, Sous Chef Greg Lyons, Tavern Manager Tommy Kohfler, Superintendent Todd Lawrence and our current General Manager Michael Thomas. Within the next few years Erica Britt, Natalie Clemens and Kyle Thortsen would also join the team who we are thankful are all here today. With this great team we have earned The Country Club at Wakefield Plantation the award of “Club of the Year” at McConnell Golf for 2022 while we are still in the hunt to retain the title for 2023. In February, The Country Club at Wakefield Plantation gets to host the annual McConnell Golf Symposium when the award is revealed in front of the entire company. This is always an exciting time as you never know what my dad, John McConnell, is going to say or what picture he may have displayed on the next slide of his presentation. Most of the time he is entertaining the room with some jokes or photoshopped images of employees. However one serious question he asked the entire company one year I will never forget was “who in this room has the hardest job at McConnell Golf?” A few guesses were made but the room was inaccurate. During this moment of silence as usual I’m thinking “we need to brace ourselves for whatever the correct answer dad is about to reveal.”

“The person who has the hardest job in the room is Michael Thomas and you want to know why?” Again another moment of silence where I am bracing for what dad is about to say. “Michael Thomas has the hardest job because he has to work with my son Matthew and daughter Kasey.” A positive laugh was made at the true comment. I am so thankful for our entire team here but especially for Michael Thomas. Not only for what he has done for the Wakefield Plantation members & community but also for how much he has done for me personally. Please make sure to join us for our great holiday events such as Thanksgiving, Polar Express, Santa Brunch and our New Years Eve Dinner to name a few. DINING EVENTS & INFORMATION It’s hard to believe fall is here and we are about to kick off the Holiday Season. I’m looking forward to all the events we have coming up at Wakefield Plantation. Everything from Thanksgiving Brunch, Wine Expo to having Santa stop by the Club 4 times this season for Santa Breakfast, Santa Brunch and for two “Polar Express” nights. Things were great at the Breaker Bar and Grille September and October with

our daily features and Trivia Nights. That being said please know we are available to host a private party for you, your family and friends. The boat curtains can close around the bar area, the heaters turned on and the game room open to have your special event. DINING EVENTS & INFORMATION Firstly, I would like to thank everyone for all the cards, all the hugs, and all of the love and support I have received from everyone regarding the passing of my father. It means more than you could ever know, and I am so grateful for all of the kindness I have received. Football season sure hasn’t been the same without you dad! GO TARHEELS! Although I do love the fall, the winter time is my most favorite time of the year! Here at Wakefield, we are a family, and there is nothing more that reminds me of family than the holidays that are upon us. We will of course be hosting our always popular Thanksgiving Day buffet on Thursday November 23rd for those that just want to enjoy delicious food and quality time with family without all the hassle of cooking at home. Seating will be limited, so be sure to make your reservations no later than Friday, November 17th. We will of course be hosting Santa again, so be ready with your Christmas wish lists for our annual Santa Breakfast and Santa Brunch on December 2nd and 3rd. To ring in the New Year, we will be hosting a reservation only dinner on New Year’s Eve, so be sure and look out for more details. DECEMBER COOKIE OF THE MONTH I ITALIAN RICOTTA COOKIE RECIPE I EMILY MONTIMURRO, PASTRY CHEF AT PORTERS NECK COUNTRY CLUB

“My mother makes these cookies every Holiday season and it is just one of those things I look forward to each year. They are so tasty and are one of my absolute favorite things about the Holidays”.

This is my version of the Italian wedding/holiday cookie called “Tadal” which is traditionally flavored with Anisette and has a drier, crumbly texture. My Noni always made them, to the adoration and praise of family

INGREDIENTS: 2 Cups Butter, softened 1 Cup Powdered Sugar 2 TSP Vanilla 4 1/2 Cups Gold Medal™ All-Purpose Flour 1 1/2 Cups Pecans, finely chopped 1/2 TSP Salt Powdered Sugar for Tossing DIRECTIONS: Mix vanilla, 1 cup of powdered sugar and butter in a large bowl until combined. Stir in flour, nuts and salt and continue mixing until soft dough is formed. Preheat oven to 400°F. Roll dough into 1/2 inch balls and place on ungreased baking pan lined with parchment paper 1-inch apart. Bake for 10 min until cookies are set, but not browned. Transfer to a wire rack to cool slightly. While cookies are still slightly warm toss in powdered sugar. *Notes I Walnuts may be replaced for Pecans.

and friends.My grandmother was a painfully humble woman who shied away from any sort of compliment. Whenever she’d receive praise for these confections, she just shook her head and mumbled that they were just “stupid cookies.” Our family now refers to them exclusively as “stupid cookies” to this day. So as a pastry chef, this is my personal interpretation of them. I make them on holidays in reverence to that modest, selfless lady who was the first chef I ever idolized. To make them more shelf-stable and palate-friendly to adults and children alike, I created a recipe where ricotta cheese keeps them soft and chewy, and flavored them with vanilla. They lend themselves to any holiday, happy occasion, or cup of coffee. INGREDIENTS: 1 Pound Butter 3 1/2 Cups Sugar 4 Eggs 30oz Ricotta Cheese 4 TBSP Vanilla 8 Cups All-Purpose Flour 2 TSP Baking Powder 2 TSP Baking Soda Glaze Ingredients: 8 TBSP Milk 3 Cups 10x Confectioners Sugar 1 TSP Almond Extract (optional) DIRECTIONS : Cream butter and sugar. Add eggs, ricotta and vanilla. In a separate bowl, combine flour, baking powder and baking soda. Add dry ingredients to the ricotta mixture until fully incorporated. Chill & scoop; Bake for 12-15 minutes at 350°F depending on size. Allow to cool on sheets before transferring. Mix glaze, making sure it’s not too drippy. Spoon glaze over each cookie and don’t forget to add desired sprinkles or décor before it dries!

Don’t miss out on all of our festive events from the Thanksgiving Buffet to gingerbread houses, to not one, but two Polar Express Events this year. Santa will be making all the stops this season and will be joining us for Santa Breakfast, Santa Brunch and both Polar Express nights. In addition we will have kids camps, Sunday Funday’s and so much more to keep the holiday spirit alive!

MAHJONG COMING TO WAKEFIELD!! MAHJ Series: Learn to Get Your Mahj ON! Mahjong (also known as Mah Jongg, Maahj, or Mahj) originated in 19th century China, and has since spread the globe! Mahjong is a popular tile-based game, typically played with 4 players, in which each receives, discards and exchanges tiles in effort to be the first to match their “hand” to a specific pattern as seen in the Official National Mahj Jong League Playing Card. Mahj games are fastpaced, exciting, and require equal amounts of skill and good luck! MAHJ Club 1 Lesson: (Thursday PM class - 6:00pm-8:00pm) This is a beginner’s class, designed for first time players, new to the game. We will teach the tiles, the 2023 National Mahj Jong League Card & how to play the game. This class is a true beginner class and cannot accommodate advanced levels of play instruction.

CANDY CORN BINGO When: Sunday, November 12th I 2:00pm-3:00pm Ages: Anyone I Location: Game Room Fee: Complimentary Join us for a few games of Candy Corn Bingo! We will be playing a few rounds, but your markers will be candy corn! Each round will get a prize for the winning card! Please RSVP by Thursday, November 9th.

TWEEN FALL MINUTE TO WIN IT When: Saturday, November 18th I 5:30pm-9:30pm Ages: 10-15 I Location: Sports Club Fee: $25 per child (includes dinner & snack) While your parents enjoy a night at the clubhouse, come hang out with the Activities Team as we have a wild, challenging night of team minute to win it games! We have compiled all our fall/Thanksgiving games into one night! You will test out your luck with games such as a bit corny, Elephant March, haunted hay ride obstacle course and so much more! Which team has what it takes to bring home the prize? Don’t miss out on this evening of laughs and RSVP by Wednesday, November 15th.

MAHJ Club 2 Lesson: (Friday AM class - 10:00am-12:00pm) This is a beginner’s class, BUT it is designed for both first time players, and those who have had limited exposure to the game (perhaps taken only one or 2 lessons, played once or twice, or have not played in a long time). We will review the tiles, the 2022 National Mahj Jong League Card & focus on how to play the game.

Ashley & Leigh will be joining us for a two session workshop to teach you all that you need to know about this exciting game! They will bring all supplies, but if you have your own, you are welcomed to bring it! Our goal is to hold Mahjong on Thursday evenings from 6-8pm in the game room after the lessons are complete, based on participation and interest! FLAG FOOTBALL SUNDY FUNDAY When: Sunday, November 26th I 2:00pm-3:30pm Ages: 6-10 I Location: Poolside Fee: $5 per person Come burn off some calories as we have a Sunday Funday Flag football game!! To start we will be designing our own bandanna to wear during the game. From there we will have a friendly game of flag football between the teams! Buffet Fee: $24.95++ For Adults, $16.95++ For Children 6 to 12, 5 and under free We are very excited to be bringing back the Polar Express to Wakefield this holiday season, and this year Santa will be stopping by to join the fun! We will be offering two nights this holiday season to make sure that everyone can get a spot! The train will pull up by the clubhouse and take you on a 10-12 minute ride to get you into the holiday spirit! With snow and a polar express ticket, this is the real deal! Reservations for the train will be in 15 minute increments and are required.

WINTER MOVIE WONDERLAND When: December 26th - December 29th I 9:00am-3:00pm Ages: 5-10 I Location: Sports Club Fee: $60 per day I $230 for the week (lunch & snack included) *Sibling discount available Each day we are going to explore a different magical winter movie. Each day will be filled with themed activities, games and crafts based on that movie. TENNIS TIME It’s hard to believe that 2023 is coming to an end. From opening the new pickleball facility to the incredible growth and success of the Adult tennis program. This is truly a year that we can look back on and be proud of. What’s even more exciting is that this year is not over, we still have some tennis to play and some champions to crown! The weekend of December 8-10th the member-member, member-guest tennis doubles championships will take place for both the men and ladies divisions. Friday the 8th will be the player’s party at the breaker bar. This party will be Holiday themed and will be open for everyone to attend. Also coming up are our end of the year pickleball socials. The men will take the courts on Thursday evening November 2nd and the ladies social will take place on Thursday evening November 9th. Both socials will include food drinks and round-robin play. To register please check the clubs online event calendar. To close, the Wakefield Professional Staff would like to thank the membership for another incredible year down at the courts.
