LETTER FROM CHEF Here we are again, about to go into our end-of-Spring to the beginningof-Summer season here at Holston Hills Country Club. This is the start our busiest time of the year, and we honestly love it. There is so much going on around the club, it’s a great time to be a member. Speaking of what’s going on at the club, we will be kicking off Couples Golf on Friday, May 5th with a Cinco de Mayo theme. Come out for our Cinco de Mayo taco themed buffet. We will have Chicken, Steak and Beef taco’s, Tequila Lime Corn Salad, Pozole and much more. Live music on the patio, will also be kicking off that night. On May 14th, we will have our annual Mother’s Day Brunch, reservations are open and space fills up fast so please make your reservations as soon as possible. The full menu will be released at the beginning of May. I want to thank those that have come out for our Family Buffet’s the last two months. Due to the Korn Ferry Tour – Visit Knoxville Open, we will be skipping May, but the Family Buffet will be back in June. Mark your calendar now for June 29th, which is on the last Thursday of the month. The June’s Family Buffet Night will be a ‘Southern’ inspired theme. Which will feature Chef Frankie’s Meatloaf, Smoked Turkey Collard Greens, Baked Mac n’ Cheese, Live action station with Shrimp & Grit and more. On Monday, May 29th, Memorial Day, we will be hosting a Cookout on the Stone Terrace. The kitchen will only be open for the cookout as we will be working to put everything back to normal after the Visit Knoxville Open tournament. Make a reservation online and come on out as we will have something for everyone. The cookout will be 12:00 to 4:00pm. Summer also means the opening of the Pool. With the change of dates for the Visit Knoxville Open we have pushed the official Pool Opening to Saturday, June 3rd. We will be having a FUN family Pool Party on Friday, June 2nd from 4:00-8:00pm. More details to come. Look for a new poolside menu to be released in May. The recipe I wanted to include in this edition of our Newsletter is perhaps the most popular soup we serve here at Holston Hills Country Club. Chef Frankie’s Famous Cheeseburger Soup. This recipe has been requested many times, so we’re finally going to share it for everyone. But this doesn’t mean we will stop making it at the club because it’s also a staff favorite too.
