LETTER FROM CHEF

We are entering what is, I believe the best time of the year Football kicks-off, the weather gets cooler, the leaves start to change and the fall flavors of food are my absolute favorite! We have a busy upcoming two months planned here at the club, with events, new dinner specials and tasty cookies of the month It’s a great time to be here at Holston Hills Country Club!

Our annual Member Social might sound and be held at a different time of the year, then in years past, but we are excited to put a new spin on a member favorite. If you don’t already have reservations, join us on Sunday, September 3rd from 6:00-9:00pm, for a “Brews & BBQ” themed night. With LIVE music from the Tennessee Sheiks. We will be pouring local Knoxville Craft Beer including offerings from Next Level and Xul Brewing Co. One of the beers we were able to get is the 2022 World Beer Cup winning Juicy IPA, Rhymes Like Dimes. I believe, Knoxville has some of the best beers in the world and I’m excited about having the opportunity to share some with you.

Looking ahead to October, we will be offering our last Friday Night LIVE Music on the patio on October 6th We are also finalizing plans for a NEW event, called the Masquerade Ball, on Friday, October 20th It’s a sophisticated black-tie attire with a festive costume twist! Look for a menu posted towards the end of September

Keeping in the theme of our featured September event, this month’s recipe is a Stout BBQ Sauce. This sauce will go great on BBQ ribs, grilled chicken or a base for a flatbread ENJOY!

INGREDIENTS:

1TBSPOliveOil(orneutralflavored oil)

6ozTomatoPaste

2TBSPAppleCiderVinegar

4Each(Minced)GarlicCloves

¼CupSoySauce

2TBSPWorcestershireSauce

2TSPSrirachaSauce

METHOD OF PREPARATION:

2 TSP Smoked Paprika

1/3 Cup Light Brown Sugar

2 TBSP (minced) Yellow Onion

1 Cup Stout (Guinness)

*If you don’t like stout try a Brown ale

1 TSP Granulated Onion

½ TSP Kosher salt

¼ TSP Ground Black Pepper

In a heavy bottomed, medium sized sauce pot heat the oil over medium-low heat

Add the onion and sweat to soften but not add color. After 3 min add garlic and stir and cook for 3 more minutes

Add remaining ingredients and bring to simmer, stirring frequently Once at a simmer cook until thickened, stirring occasionally. Should be about 10 min

Cool and store in refrigerator in air tight container for up to 7 days

MCG RYDER CUP I NOVEMBER 16-18

Looking to defend their 2022 McConnell Golf Ryder Cup title, The Reserve Golf Club plays host to this year's event in Pawleys Island, South Carolina from November 16th through the 18th The inaugural McConnell Golf Ryder Cup event was played in 2008 at Musgrove Mill Golf Club between the four McConnell Golf clubs at that time Musgrove Mill, Raleigh Country Club, The Cardinal by Pete Dye, and Treyburn

As much as I rake and repair bunkers on a daily basis, I can assure you that I, just like you, know they need a lot of work. My staff and I spend more time working in bunkers than we do in any other area of the course Heavy rains are the number one enemy as they will commonly wash and flood the bunkers erasing days of work in minutes A heavy rainstorm which washes the bunkers will also require multiple days for the staff to repair Repairing over one hundred bunkers is no easy task and very time-consuming. Currently we find ourselves with bunkers that are continuing to deteriorate, and we are starting to see more and more bunker faces collapse When this happens the sand slowly changes from the original bright white color to the brown colors you see today As silt and mud wash into the bunkers the sand also becomes contaminated This causes the sand to hold moisture longer and longer and greatly reduces the drainage capacity of the sand. As the faces erode, we are also forced to push more and more sand to the perimeter of the bunker causing the bunker floor to become very shallow in sand depth It is just a natural weathering process that happens over the years. The question we face now is how do we repair the bunkers? To better understand everything that is involved in a project of this magnitude we just need to look back to 2006 when we last rebuilt all the course bunkers

In 2006 all the course bunkers were rebuilt over a three-month prior in the months of May, June, and July This three-month long project was completed while keeping the course open for play by closing a couple holes each day when we were working. This was a large undertaking involving an outside contractor along with a course architect We worked 7 days a week during the project The project Architect was Bruce Hepner with Renaissance Design, Tom Doak’s Design company at the time Our contractor was McCurrach Golf Construction out of Jacksonville Florida All 103 bunkers were dug out and the faces were reshaped. New drain lines were installed, and new sod was laid around each bunker. At the time hard liners had yet to be introduced to the market and fabric liners were just becoming popular A liner is a material installed between the soil base of the bunker and the sand to help with drainage and prevent soil contamination of the sand Our bunkers were built as a basic hole in the ground with the sand added on top of the soil. For the sand we chose a very expensive sand for the time, SP-55 sand from Spruce Pine North Carolina. This sand was picked due to its angular make up giving it a high capability to pack extremely firmly It was also bright white with a very high percolation rate allowing for very fast drainage This sand is still the sand that Augusta National uses in their bunkers and is made by crushing felspar rock When completed the grass faces came all the way to bunker floors and the sand was deliberately designed to be perfectly flat in the bunkers. For years we had no issues with sand moving in the bunker floors or with any type of sand wash from rain events The total cost at the time was close to $750,000 spent on the project when it was all completed.

Our bunkers are now 17 years old and in need of complete renovation. We have been working on a project to renovate the course bunkers, but this is no easy process In today's market, with the cost of everything continuing to rise, we project the cost of the project to be in the $1 5 to $2 million dollar range to fully renovate the bunkers to today's players’ standards. I am not sure when we will be able to complete such a project, but I can assure you the subject is constantly discussed Over the past few years, the same type of bunker renovation projects have been completed at Raleigh CC, Old North State, Wakefield Plantation, Country Club of Asheville, Providence, Porters Neck, and the Cardinal Club There is no easy fix to properly repair our bunkers and I assure you my staff and I are doing all we can to maintain the bunkers daily. I want to start by saying what an awesome Summer we have had here on the courts at Holston Hills CC. We had a fantastic camp season, some great events, and a lot of new faces joining in our tennis group! I would like to give a special shout out to Paul Michael Peeler, and Lauren Huston These individuals came out and played some great tennis and were named our 2023 club champions. We had our first annual Breakfast at Wimbledon with everyone dressed in all white! The breakfast was tasty, the tennis play was fun and the champagne toast was definitely a bonus. I look forward to having it again next year.

Pizza With the Pro has been another great event. I love having the kids out for some fun tennis and lots of pizza. These will continue year-round!

Lastly, our Ladies' Nights on the courts have been well received. I have seen more and more faces at each event, and we are continuing to grow this program in the best way possible Of course the WINE might be the true reason why the ladies are coming out!

Fall is just around the corner! I look forward to a great Fall tennis season We have some upcoming events for September and October, that I hope I will see you on the courts! Explore all the wonderful ways to use this fascia-breaking tool for back pain, shoulder opening and an overall body workout The class is good for everyone whether you're new to yoga or have been practicing for years Students have commented on how great they felt after class, especially the next day, and how they noticed marked improvement in their golf swing!

*You can find several choices of yoga wheels on Amazon or Dick's Sporting Goods. The most important feature is that it has a 500 lb. weight limit so you can trust that it is super strong and sturdy Also, a 12" diameter seems to be the best size for most everyone We do use our blocks and straps as well so you'll want to bring them and your mat

An introductory yoga class that is accessible to most people, this class follows an Iyenger-style format which is focused on form, detail, precision, and alignment

Suzanne teaches basic postures to help strengthen muscle and bone, improve balance and promote flexibility in the body. The class generally moves at a slower pace with controlled movements and stretches that align with the breath. You can expect an emphasis on simplicity, repetition, and ease of movement This is a foundational class that will help develop any beginner’s yoga practice while pose modifications can be instructed to create a more challenging practice for intermediate yogis Every class is different and we will sometimes explore intermediate poses when students are ready
