Spring has sprung (kind of)
I hope everyone is getting ready for a great year at ONSC Justin and his team at the golf shop are planning some great member events this season and, as always, are ready to help improve your game Chris Callicutt is focusing on tennis & pickleball events and it should be a very busy year on the courts William and Skylar will be planning lots of events at the Clubhouse for 2025 I hope you will come out and support their creative ideas William & Chef Isaac are also continuing to make their specialty dinners better and better. William will have the winemaker from Siduri Vineyards out for a dinner and tasting, as well as other wine events. Our first bourbon dinner of the year will be in May with Angel’s Envy. This should be a fantastic evening with a great bourbon.
Finally, a big thank you to our members that attended the Kerr Cellars Wine Dinner The evening was full of Old North State camaraderie, great food, and fantastic wines

The magic of spring is here!
We have some exciting events planned for the next few months We are trying to get some additional entertainment options for members to experience in the coming year We have booked The Brian Saint, a magician that has had two appearances on Penn & Teller’s Fool Us, and fooled them both times! Tickets for this event are on sale now! We also have booked all the bands for the summer concert series We will start advertising those bands soon so you can make summer plans and make sure you don’t miss out In April, we have a DJ party after the one-day member guest at no charge! We also have Matt Revelette, the wine maker from Siduri coming to our club.

For those of you who may not know me, I’m MV Ridenhour, the new Office Manager/Accountant at Old North State Club. I spent nine years working in the kitchen at the club while obtaining a degree in accounting. I had the pleasure of training under Robin Bowers during the last quarter of the year, just before her retirement in December.

Johnny has been an essential member of our maintenance crew since 1995, initially joining as an equipment operator. His dedication and expertise led to his promotion to assistant mechanic in 1997, and in 2000, he became the head mechanic. Over the years, Johnny has played a crucial role in maintaining our large fleet of equipment, ensuring it receives the necessary preventative care, precise sharpening, and proper setup.
Johnny’s commitment extends beyond his technical skills He is always willing to go the extra mile, whether it's assisting stranded motorists or supporting his colleagues He has worked on nearly every piece of equipment within the community and is an invaluable team player
Given his exceptional work ethic and dedication, Johnny is truly deserving of the Employee of the Year award It is with great pride that I present this honor to him

I hope everyone had the opportunity to savor our winter selections, and the periodic rotation of the menu the last couple of months I’m thrilled to announce that we are ready to introduce the flavors of spring. Spring dining at the country club here by the lake is a celebration of vibrant flavors and picturesque views. As the season awakens, our culinary team draws inspiration from fresh, seasonal ingredients to craft menus that highlight the best of spring think crisp salads, herb-infused entrees, and refreshing desserts. Members and guests can dine on our terrace, soaking in the warm breezes and breathtaking lake views, or enjoy the cozy ambiance of the sunporch and The Fazio Lounge as they savor our culinary team’s prepared dishes Whether it’s a casual lunch with friends or a special evening under the stars, spring dining at the club is the perfect way to embrace the season’s renewal and indulge in unforgettable culinary experiences.

Instructions
Servings: 8
Time: 2 hours, plus cooling
Source: Smitten Kitchen
Crust
1 cup plus 2 tablespoons (150 grams) all-purpose flour
1/2 teaspoon kosher salt
1/3 cup (40 grams) powdered sugar or 1/4 cup (50 grams) granulated sugar
1/2 cup (4 ounces or 115 grams) unsalted butter, cold is fine, diced
Filling
1 cup plus 2 tablespoons (225 grams) granulated sugar
1/4 teaspoon kosher salt
4 large or 5 medium-large lemons
5 large eggs
1/2 cup (4 ounces or 115 grams) unsalted butter, cold, cut into pieces
Whipped cream and berries, to serve (optional)
Heat oven: To 350°F (175°C)
Make the crust: Combine the flour, salt, and sugar in the bowl of a food processor. Add butter and blend until the mixture forms large clumps just keep running it; it might take another full minute for it to come together, but it will. Set a marble or two of dough aside, and transfer the rest of it to a 9-inch round tart pan with a removable bottom [I’m using this one] set on a large baking sheet (for drips and stability) Press the dough evenly across the bottom and up the sides Transfer to the freezer for 15 minutes, until solid
Parbake crust: Once firm, prick all over with a fork Coat a piece of foil with nonstick spray and press it oiled-side-down tightly against the frozen crust, so it is tightly molded to the shape Bake tart with foil (no pie weights needed) for 20 minutes, then carefully, gently, a little at a time, peel back foil and discard. If cracks have formed, use the marbles of dough you set aside to patch it. Return the crust to the oven for 5 minutes, until golden at edges and dry to the touch Set the crust aside
Meanwhile, make the filling: Place sugar and salt in a medium-sized pot and fine grate the zest of four lemons over it. Use your fingertips to rub the zest into the sugar and salt, releasing as much flavor as you can and breaking up the zest strips a little. Add eggs and whisk until evenly combined. Squeeze the lemons to make a strained 2/3 cup of juice and whisk juice into egg-sugar-zest mixture
Transfer the saucepan to the stove and heat over low-medium, stirring constantly once the mixture begins to warm, until thickened, about 5 to 10 minutes [It will thicken at about 175°F, or just below a simmer, but it should both look thicker and feel thicker, as your whisk will drag a little ] Add butter, a piece or two at a time, and stir until melted Remove from heat and pour into the tart crust (It’s fine if the crust is still hot from the oven )
Bake the tart: For 15 minutes or until the filling is mostly set Chill the tart completely in the fridge; it will finish setting once cool
Serve: Gently push up on the bottom of the tart pan to pull down the sides of the pan. Transfer the tart to serving plate and cut into wedges. Serve with dollops of whipped cream and fresh berries

We are excited to host the 22nd Annual Hospice & Palliative Care Dinner on April 26, 2025, continuing a more than 20-year tradition between Tillery Compassionate Care (TCC) and our Old North State community Since ONS first partnered with Hospice of Stanly in 2004, this event has become a beloved fundraiser.
Over the years, this event has raised over $410,000 for TCC, making it their top fundraiser. The funds support vital services like bereavement care, which Medicare does not fully cover, and ensures no one is turned away due to lack of income or insurance

I love this time of year! The days are getting longer, the sun is more intense, and the birds are preparing nests for their spring hatchlings. We are also preparing our TifEagle greens to transition from dormancy to actively growing in March and April Unfortunately, I can’t give exact dates; the weather will determine when and at what pace the transition occurs As the days get longer and the temperatures steadily rise, we will start fertilizing and lightly sand topdressing the greens to promote new growth and a smooth putting surface When I feel confident that all the cold nights (below 25) are behind us, we will increase the fertility and amount of sand topdressing Once we have established consistent growth, we will use a small solid tine to promote water/nutrient and root movement through the soil profile. The solid tinning will not interrupt ball roll but will set us up for vertical mowing once the greens really start growing laterally. I’m looking forward to our first full year post-renovation; see you on the course

Our clay courts are scheduled to be reconditioned in early to mid March, which means a short closure will take place to get us back looking brand new for the 2025 season You’ll also see other improvements around the courts this season. We have been approved to get new LED lighting on the pickleball courts and top tennis courts
