1/2 cup (110g) unsalted butter, melted
1/2 cup (110g) dark brown sugar, packed
1/2 cup (100g) granulated sugar
1 teaspoon vanilla bean paste (or 2 tsp vanilla extract)
1 large egg + 1 egg yolk
1 cup + 1 tablespoon (150g) gluten-free all-purpose flour with xanthan gum (I recommend this one)
Thank you to Kenric Hunt, Executive Chef at Brook Valley Country Club for sharing his recipe. This is what he had to say. “You would never guess that these chocolate chip cookies are gluten free They’re soft and chewy on the inside, crispy on the outside, and loaded with chocolate chips!”
1/2 cup (60g) oat flour* SEE NOTES
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (80g) bittersweet chocolate, chopped
1 cup (160g) semisweet chocolate chips + a handful more for sprinkling
Flaky sea salt for sprinkling
Whisk together the
Cream together the melted butter and sugars until it turns into a paste-like consistency (mix on medium-high speed with the paddle attachment for 3-5 minutes)

in the center
Right when you take them out of the oven, quickly push in the sides of the cookies using the inside curve of a fork (see picture in post) They’ll spread quite a bit, so pushing in the sides to form perfectly round cookies gives you wrinkly and crispy edges

Allow them to cool for about 15 minutes, then dig in! Yields 15-16 cookies
Oat flour is preferred, but almond flour can also be used Add an additional tablespoon of the all-purpose gluten-free flour when using almond flour

FRIDAY, FEBRUARY 14TH | 3:00 PM SHOTGUN
Sport- Golf Waiting members are invited to join us for this golf event. To sign up, please call the Pro Shop at 910-686-1177. Golf members are welcome to register online. Golf will begin with a 3pm Shotgun. Format is 2 person teams playing 9 holes using 9 different fun formats for each hole.
HOLE 1: Regular scramble play
HOLE 2: Team must use their worst drive (i e farthest from the green).
HOLE 3: Irons only! All team members are allowed to use only irons/wedges for the play of this hole. This includes putting!
HOLE 4: Must use the ball farthest from the hole when the team reaches the green and on every set of putts thereafter
HOLE 5: Must use your shortest 2nd shot (Drive is 1st shot, next shot is 2nd shot- use 2nd shot farthest from the green)
HOLE 6: Alternate shot Team determines order and each shot is made by one player only. Once your ball is on the green, both team members may attempt the putt(s).
HOLE 7: Regular Scramble, but once you reach the green, you must putt with your driver.
HOLE 8: Regular Scramble Play
HOLE 9: Regular Scramble If both player's tee shots land in fairway, players may play 2nd shot from the 100 yard marker

As a member and a golfer, we have certain responsibilities that can help preserve the course for all that follow One example of caring for the course is to repair your ball marks – the depression made when your ball hits the green When an individual repairs his or her ball marks, the result is a better conditioned golf course All golfers are responsible for repairing their marks, no matter what level of play, and it only takes a few seconds.
Every player should fill in their divots in the fairway. This time of year when the grass is dormant is a time that is really important to fill in your divots. When the grass begins to grow, the grass will fill in the sanded divots and create a smoother more consistent surface
Here are some general rules of thumb for golfers on how to correctly repair a ball mark.
Use a pronged ball mark repair tool or tee.
Insert at the edges of the mark – not the middle of the depression
Bring the edges together, trying not to tear the grass, and then loosen the underlying soil so that the turf is able to root easily
Smooth the surface with a club or foot You’re done when it’s a surface you would putt over
There are a few rules that need to be followed that are important to the condition of the course and enjoyment of the game. As golfers and members of PNCC, it is your responsibility to follow these rules. Here is a list of the most commonly broken:

The Spring League for the Cape Fear Intercommunity League, ages 55+ begins March 10, 2025 Exact match and practice dates will be published in the next few weeks There are four divisions:
1 Instructional Social Division (DUPR 3 0 or less) This division is made up of beginner/novice players wanting to play in a social environment Matches will be scheduled every two weeks A DUPR account is mandatory and uploading individual game scores to DUPR is recommended Play will consist of 30 minutes of instruction and drills followed by 1 5 hours of play Sharon Hyland Brown is the coach
2 Upper Intermediate Division (DUPR 3 0 - 3 49) This division requires a DUPR rating from a minimum of 30 games Individual game scores will be loaded to DUPR by coaches or individuals. Patty Dowd and Elizabeth Newber are the coaches.
3. Upper Intermediate Division (DUPR 3.5 - 3.99) This division requires a DUPR rating from a minimum of 30 games. Individual game scores will be loaded to DUPR. The coaches are Dave Nelson and Dave Ryan.
4 Advanced Open Division No minimum DUPR rating required but must posses advanced skills (4 0 or higher) This is a social division played in round robin tournament style against multiple community teams during each week’s event Individual game scores will be uploaded to DUPR

MONDAY - SATURDAY | 9:30 - 11:00 AM: Open Play means that all players, of any skill level, are invited to play Members can register for open pickleball via the club calendar When attending open pickleball it is recommended that winning teams split up after they play If waiting to play all players should place their paddles on the paddle holders in order to determine who is next to play This will allow for a fair order of play and same playing experience for everyone

A typical SHiNE™ class is approximately 55minutes long and incorporates 16 routines. Class is started with a signature SHiNE™ warm-up and then increase intensity as the class progresses The class alternates the complexity and intensity of the routines to ensure the students’ safety and success during a SHiNE™ class The SHiNE™ dance floor is open to EVERY BODY No dance experience necessary… come as you are! Foam rolling is a type of self-myofascial release (or self-massage) that eases muscle tension Painful trigger points or “knots” lead to muscle tension and dysfunction in the body Foam rolling is the perfect complement to stretching and deep tissue massages, providing improvements in range of motion and flexibility Foam rolling allows the practitioner to use his/her own body weight to apply pressure to the knots to facilitate relaxation. This workshop is for beginners as well as participants who already practice foam-rolling and would like to learn new techniques. In this 45-min workshop, you'll learn:
Foam rolling best practices to get the most out of your rolling (spoiler alert: slower is better!)
Foam rolling exercises for your entire upper body, targeting your lower back, mid and upper back, lats, shoulders (rhomboids & delts), chest, biceps, triceps, forearms, and neck
Foam rolling exercises for your entire lower body, hitting your hips, thighs, calves, and even feet from multiple angles We'll be targeting glutes, hamstrings, hip flexors, abductors (inner thighs), IT band, quads, calves, shins, and ankles/feet

We will include fun drills and games to practice and improve their putting, chipping and full swing. There will also be etiquette and rules instruction using the Par 3 short course during the week.
