Thank you to everyone for the warm welcome to the Old North State Club The first several weeks have been great I am enjoying meeting all the members and listening to any concerns or answering any questions that you may have The transition should be a relatively short one. I am prioritizing items that need to be addressed and will be doing so relatively soon. My first priority was to find an experienced Food and Beverage Manager; so I would like to introduce William Davis as our newest addition in that role. Will brings many years of experience as a Chef and front of the house manager with Levy Restaurants and has worked with the Charlotte Bobcats, Charlotte Knights and at the Charlotte Motor Speedway.
I would also like to invite you to a General Managers Reception on Saturday, September 23 We will have complimentary hors d’oeuvres and the bar will be available during this time You will be able to meet many of our newer staff and managers Please call and let us know if you plan on attending, and also if you will be dining with us that evening as well

OCTOBER PUMPKIN ORANGE COOKIE
BY SEAN O'NEIL EXECUTIVE CHEF AT TREYBURN COUNTRY CLUBThis cookie is my great-grandmother's fruit and nut cookie that my mother loved growing up. It's and "old school" recipe, which, probably came from her family. My mother remembers her Pappy cracking and picking the walnuts, and remembers that her Gram would put the cookies in a lard can, covered with a cloth soaked in cheap wine to keep the cookies moist, and also to keep my mother out of the cookies, because the lard cans were too hard to open.
Filled with pecans, candied fruit, and dates, these cookies can take on any add-ons you'd like, from red and green cherries or dates to chopped dried apricots, tart cherries, and/or currants.
Growing up around the Pennsylvania Dutch area, there was a lot of German style recipes that I got to try. During the autumn time when pumpkins came into season, there was a lot of pumpkin food going around. One place I worked at, my coworker would bring in two of my favorites; pumpkin rolls and pumpkin orange cookies I made sure to get both recipes from her before I moved down south Here is the cookie!

A NOTE FROM YOUR EXECUTIVE CHEF
Hello Everyone,
I hope everyone has been enjoying something delicious from our summer menu The peach season was shorter this year from Barbee Farms, but the tomatoes, okra, bell peppers, and some of the sweetest corn from Seven Sisters Farm was in abundance. I hope those who try the scallop dish enjoyed the pickled corn. That was one of the most surprising creations we came up with this summer. I believe the Chef’s Feature menu during dinner service offered a nice change during the golf course closure It gave the culinary team a chance to explore and express their talents and skills with a menu with more frequent menu changes then we normally do here at ONSC
We are preparing to present the fall menu with some tasty dishes and a few classics, mid-September. Even though we will still be working with some late summer harvest, we are looking forward to the fall harvest of beets, cabbage, collard greens, swiss chard, butternut squash, apples, sweet potatoes, cranberries, duck, lamb, persimmons, and turnips I really hope you all are enjoying the hard work of Seven Sisters Farm and other local farms from around the Triad surrounding area
We appreciate every member and guest that has a bite to eat by the lake. We are trying are best to grow as chefs and I hope it shows.
BLT Pasta
Ingredients
1 tbsp Olive Oil
1/2 lb Bacon, cut crosswise into 1-inch pieces
2 cloves Garlic, minced
2 tsp Lemon Zest
1/4 cup Vegetable or Chicken Stock
1/4 cup White Wine
1 lb Linguini
2 cups chopped whole or halved Cherry Tomatoes
4 cups Baby Arugula, coarsely chopped Salt and Ground Black Pepper to taste
1 tbsp freshly shredded Parmesan cheese, or to taste (optional)
Directions
Pour olive oil into a heavy skillet over medium heat, add bacon, and cook until almost crisp, 5 to 8 minutes. Turn off heat. Hold a paper towel with tongs and mop up excess bacon grease with the paper towel, leave about 2 teaspoons bacon grease in the skillet.

Bring a large pot of salted water to a boil and stir in linguini Cook till tender, about 8 minutes Drain and add pasta to the skillet. Stir pasta thoroughly into bacon mixture.
Return skillet to medium heat. Add tomatoes; cook and stir until slightly softened, about 2 minutes. Mix in arugula, stirring until wilted, about 30 seconds, and turn off heat

Looking to defend their 2022 McConnell Golf Ryder Cup title, The Reserve Golf Club plays host to this year's event in Pawleys Island, South Carolina from November 16th through the 18th The inaugural McConnell Golf Ryder Cup event was played in 2008 at Musgrove Mill Golf Club between the four McConnell Golf clubs at that time Musgrove Mill, Raleigh Country Club, The Cardinal by Pete Dye, and Treyburn

A NOTE FROM YOUR COURSE SUPERINTENDENT
Most of you know about the premium putting surface of the tifEagle greens and the consistency of the capillary concrete bunkers but there is more We improved the aesthetics and playability while lowering maintenance cost on almost every hole by reducing the size of our formal mulch beds Over the last thirty years many of the trees in our formal beds have grown into other trees creating health issues for the trees and the surrounding turf We removed trees that did not impact a hole’s strategic
integrity and then reshaped the mulch bed around the remaining trees. We have been reducing our mulch bed areas over the years but being closed gave us the opportunity to do more than usual The wait is almost over and I’m confident you're gonna love the golf course!

To help keep our courts in pristine condition, please wear court specific shoes when playing tennis and pickleball. Running shoes, while comfy, tear up our courts worse than court shoes
The bocce courts are open for play. Equipment can be checked out at the Tennis Shop during business hours or inside the Activity Center after business hours.
There's now a Keurig coffee pot in the Tennis Shop Stop by and get that last pep in your step before you step on court.

As summer is fading and fall approaching, the air is a little less humid and a little crisper. The busy lake calms to a more peaceful and tranquil scene Fall boating is probably the most enjoyable boating time of the year The days aren’t as hot, but the water is still warm enough to enjoy swimming and wake surfing and the fishing gets better.
Also, fall gives a great opportunity to correct any issues with your trailer you may have. We have already begun doing some trailer repairs If you need any work done on your trailers from new wood and carpet, to new winch straps, or wheel bearing, please contact the marina (336-461-4456) so we can schedule it Our hours of operation will change as we enter the fall, I will list them below Get out there and enjoy the lake during this amazing time. Before you know it, winter will be here! We will also start winterizing after Labor Day, so if you don’t plan to use your boat or Jet Ski during the fall and winter months, give us a call and we will schedule it to be winterized for the season Thank you hope everyone has a great rest of the summer and early fall!

Today, many Montgomery County organizations partner with Communities in Schools. Among them, the ONSC & the Uwharrie Point Community proudly align with CIS as partners in more ways than one
FUNDRAISING: The ONSC has generously hosted an annual golf tournament for 12 years. For the past 10 years, the ONS WGA also hosts a smaller golf day/ luncheon to help with Back to School supplies and needs The UP community partners with The Blood Connection to raise $20 per blood donation and the UP Men’s Bible Study hosts snack drives for the CIS Backpack Pals to assist students with food insecurity
COMMUNITY OUTREACH: CIS collaborates with Partnership for Children and the Montgomery County Food Distribution Center The Uwharrie Point community adopts families during the holidays with Partnership’s Tree of Hope campaign There are many volunteer opportunities during this campaign and also helping with food sorting and distribution at the MC Food Distribution Center.
MENTORING PROGRAMS: The UP Community has many volunteer opportunities within the schools An ounce of prevention goes a long way on a child who needs a little extra attention There are mentor groups that carpool to specific schools and spend quality time with students who can benefit from a little one on one or group time with someone who cares. There are opportunities to assist with programs like Real World Real Money, an annual program that places students in the reality of daily expenses and the value of a good education Through CIS, we strive for each child to realize their potential in school and beyond There are various opportunities to help students attain success so consider jumping in!
