Dear Providence Members, Summer is in full swing and patriotism reigns at PCC. Make sure to join us on Saturday, July 3rd for an amazing family centric evening filled with great food and beverage, entertainment and FIREWORKS!! This PCC tradition is spectacular and we are so excited to welcome all the new families who joined the Club over the last couple of years. We want you to know, this is one of our more exciting events every year, so don’t miss it. Ladies and gentlemen, we have had a few inquiries about lunch service in our restaurant, Table 16. Candidly speaking, even before the pandemic our indoor lunch dining was used sparingly and the demand was very inconsistent. This issue actually began when we built the West Pavilion back in 2014. So many of our members prefer the open air dining by the pool and with the extended Turnhouse menu offering a variety of healthy items, it is no longer a typical pool snack bar by any means. Furthermore, during the summer months with beautiful weather, Table 16 has been even slower. Regardless of the small turnout, we are absolutely sensitive to this issue and plan to re-engage our indoor lunch service in the fall of this year. Back in May we completed the renovation to the veranda on the backside of the clubhouse. This was an unexpected capital investment this year of well over $150,000. We are very grateful this was done, as eventually it could have become a safety issue. McConnell Golf continues to reinvest in our Club and we feel this is a big reason why we’ve become so desirable to join. Having said this, there will always be a list of desirable and or wish list items. We strategically plan multiple improvements over a period of years. Case in point, we have completed 2 of 3 sections for a new deck surface at our pool complex. The surface is beautiful and is more comfortable in high heat than the plain cement surface it used to be. Next year we plan to finish the deck around the kiddy pool and the locker rooms and hopefully, our capital improvements will include the resurfacing of the competition pool. Again, these are high ticket items and will be considered with all other golf course, tennis, clubhouse and fitness needs. We are so grateful to see the world slowly returning back to a new normal. Here at Providence, we are so proud of how our Members stuck with us throughout the pandemic and truly viewed the club as a safe haven and a place to have great and safe fun. I cannot say enough about the dedicated team of hardworking employees at Providence. The uncertainty of the Covid situation had a huge effect on all of us, yet the staff remained committed to our simple mission of genuine hospitality and to be there for our Members and our community. AGM MESSAGE & EVENTS DEAR MEMBERS, It is so great to finally get to see everyone’s smiles again!! We in the hospitality industry thrive off of seeing those beautiful smiles every day. I know most of us are very excited to be able to do many of the things that we love again that we were not able to do because of COVID. I cannot wait to be able to go to a Panther’s game this year and hopefully some concerts. There has been a sense of optimism, normalcy, and a feeling of “WE’RE BACK” lately. We have had some great, and very well attended events, and some have even been record breaking. It is so good to see people returning to the club. As many of you know we are doing our very best to run as normal as we possibly can. We have struggled, like the rest of the hospitality industry, to find staffing and supplies (food, wine, beer, liquor, paper products, etc.). I know I have fielded many questions over the last several months on club offerings, pricing, availability of menu items, and staffing. I promise that our Team will provide the best food and service we possibly can. I ask that you have patience as we all continue to work through these changes. I am very hopeful to be able to open lunch service back up in early fall inside the Club House. We have had some great participation in all of our summer camps this year and will continue those in both July and half of August as well. In regards to our Club Events the one I am most excited about is our annual Independence Day Firework Celebration which is on Saturday July 3 this year. This event will be held on the back lawn from 6:00pm-10:00pm. Please check out our schedule of events for that week/weekend as several of our operation hours and availabilities are different that week/ weekend. Congratulations to our Piranha’s swimmers this season as they brought home a 1st place trophy (again) this year and went undefeated against Myers Park CC, Carmel CC, and Charlotte CC! FROM THE LINKS What a great first half of the Golf season we’ve had. Congratulations to Jim Honeycutt and Patrick Carney on being “Crowned” Champions of the 2021 Crown Cup. It was a great finish as they held off Axel Vega and Bill Greco on the final hole of the shoot-out. The competition calendar slows down a bit before we hit the back half of the year. MISSING PUTTS Missing putts is ok! Look we aren’t all perfect, don’t putt like Tiger in his prime, or putt like Phil coming down the stretch at Kiawah to win the PGA. We’ll miss putts occasionally and so do the Pros. Missing putts in the correct spot will help lower your scores and reduce the dreaded 3-putt. Many students struggle with reading break or not missing on the high side of the hole enough. Adding break to your putts will allow the ball to get closer to the hole as it loses speed. A putt that is hit on the “low” side of the hole will continue to work away from the cup as it loses speed. A ball a played to the higher side will break closer to the hole as it loses pace.Remember this as you are lagging putts or have putts that you don’t expect to make….30 footers or so.Ideally you’ll have a mindset of trying to make EVERY putt you look at, but we all know missing putts is part of the game. So, hop on a practice green to roll some putts and pay attention to what the ball does as it loses pace. Feel free to stop by the Golf Shop and ask our Professionals about this mindset….We’re glad to help!

GREENS AND GROUNDS
PCC GOLF COURSE UPDATE It is hard to believe that we have already made it halfway through 2021. After a successful aerification process, the greens should heal quickly. We will continue to do monthly venting on greens for plant health going forward. It is during this time of the year that the plants are thriving in the heat. By venting, we are letting the soil breathe to make sure that the root zone is getting plenty of oxygen. As we move deeper into the summer, the biggest challenge for us will be staying on top of regular mowing and maintenance, especially the rough. The timing of our bulk spread fertilizer was earlier this year than it has been in the past, so I don’t expect the rough to get “out of control” due to added fertility during peak growth. Also the addition of a new rough mower should allow us to hopefully keep the height of cut the same all year. In addition to all of this, we are going to do a trial of a chemical herbicide, at very low rates, that would basically slow down or stop the growth of the rough for a few weeks to the point where we may be able to skip a week of mowing. If we like what we see with the chemical trial, this may become a valuable tool, and a labor saver, for keeping the rough under control. This is not to be confused with a Plant Growth Regulator (PGR). PGRs are critical in maintaining fine turf at a high level. PGRs alter the growth processes of the plants, thus slowing the growth or the way in which they grow. Different PGRs do different things, depending on the needs of your turf. They can suppress seedheads, change leaf texture, promote different growth habits, or reduce clippings to name a few. We use PGRs on our fairways (21 day interval) and our greens (weekly) mainly for clipping yield reduction and leaf texture. See you on the course, MARK SCOTT Golf Course Superintendent

The grape varietals were hand-picked, then destemmed and berry-sorted on the crush pad. The wine was aged in New 1/3 French oak barrels for 26 months. The primary blend was assembled at 12 months, with secondary blending at 18 months, and final blend-strokes being done at 26 months. This blend has dark, luscious aromas and flavors of blackberry, anise with undercurrents of lightly toasted oak and hints of vanilla. There is a hint of pepper, and nice waves of ripe dark berry fruit on the palate. 58% Merlot, 37% Cabernet Franc, 5% Cabernet Sauvignon

FROM THE BASELINE As summer is now upon us we are thankful to be going back to a little normalcy in not only our daily lives but our tennis lives as well! We plan on having a jam packed summer schedule with a ton of events and socials for you all. From tennis to pickle ball and everything in between our goal is to have something for everyone and keep these courts rocking! Along with that we plan on offering a multitude of different Adult Clinics. Whether you are new to the game, or you’re a seasoned veteran we plan on having options for every tennis player at the club! He spent his collegiate career at NC State and is an avid supporter of Wolf Pack Athletics! He was named to the All ACC team and was one of only three players in NC State history to appear in four consecutive NCAA tournaments. When he is not on the tennis court Beck and his fiancé Dea, enjoy hiking, traveling and spending time with their 3 dogs, Albert, Bruna, and Ziggy!

A traditional triathlon is a multi-sport event involving the completion of three continuous and sequential endurance events. PCC is having a Triathlon Challenge. Swim 80 laps, Run/Walk 24 Miles, and Bike 112 Miles, the equivalent of a traditional Triathlon, yet at your own pace. Come join the fitness fun! JULY COOKIE OF THE MONTH: THE ULTIMATE COOKIE Ron Gordils - Old North State Club This past summer while my wife was pregnant she had an occasional sweet tooth. I came across this fun and playful recipe to help fulfill the craving. From the crunch of the cornflake to the great balance of flavor I think it’s a great year-round cookie! I hope you all enjoy it! Cheers from my family to yours! INGREDIENTS 1 Cup Unsalted Butter, softened 1 Cup Granulated Sugar 1 Cup Brown sugar, packed 1 Cup Vegetable Oil 1 Large Egg 1 TSP Baking Soda 1 TSP Salt 1 TSP Vanilla 1 Cup Quick Cooking Oats 3 ½ Cups All-Purpose Flour 1/2 Cup Sweetened Shredded Coconut 1 Cup Lightly Crushed Cornflakes 1/2 Cup Chopped Pecans or Walnuts

DIRECTIONS Cream butter and sugars in the bowl of a stand mixer fitted with the paddle attachment. Cream until light and fluffy. You can also use a hand mixer. Add oil and stir until smooth. Add egg and vanilla, mix until smooth, then stir in the salt and baking soda. Mix in oats and flour until just mixed. Stir in coconut, nuts, and cornflakes. Scoop Tablespoon balls of cookie dough onto a cookie sheet covered in wax or parchment paper. No need to spread the balls out, you’re just going to chill them. Cover with plastic wrap and chill at least one hour. (If you chill longer than 4 hours you may need to let them warm up a few minutes on the counter before baking.) Preheat oven to 350°F. Line cookie sheets with parchment paper or silpat baking mats. Place cookies 2 inches apart on prepared cookie sheets. Lightly press down with the palm of your hand. Bake for 9 to 11 minutes or until the bottoms just start to turn golden brown. Cool at least 5 minutes on the cookie sheet before removing to rack to cool completely. Store in an airtight container for up to 5 days or freeze for up to 1 month.

AUGUST COOKIE OF THE MONTH: PEACH COBBLER COOKIE Dennis Freeland – Porters Neck Country Club When I first moved to Wilmington, I had a friend visiting family in town that I was going to help with a dinner for 15 people. I said I would pick up the produce and see what happens. I stopped at Port City Produce and was impressed with what I found. One of the items was local peaches from nearby Dowless Peach Orchard. We made a peach salsa that night that ended up being a big hit! So the local peaches here in Wilmington helped inspire this recipe for Peach Cobbler cookies. Enjoy! INGREDIENTS 1 Cup Unsalted Butter, softened 1 Cup Sugar 1/3 Cup Packed Brown Sugar 1 Large Egg, room temperature 1 TSP Vanilla Extract 1/4 TSP Almond Extract 3 Cups All-Purpose Flour 1 ½ TSP Ground Cinnamon 1 TSP Cream of Tartar 1 TSP Baking Soda 1/2 TSP Salt 1/4 TSP Ground Nutmeg 1 Cup Diced Peeled Fresh Peaches

DIRECTIONS Preheat oven to 350°F. In a large bowl, cream butter and sugar until light and fluffy for 5 to 7 minutes. Beat in egg and extracts. In another bowl, whisk flour, cinnamon, cream of tartar, baking soda, salt and nutmeg; gradually beat into creamed mixture. Stir in peaches. Drop dough by Tablespoonfuls 2 inches apart onto parchment lined baking sheets. Bake until set, 14 to 16 minutes. Cool on pans for 2 minutes. Remove to wire racks to cool. Store in an airtight container.
