MANAGER'S MESSAGE Dear Members, I am very excited to join the team at PCC and lead our club into the future. My first week was quite eventful with the storm rolling through late on Thursday and leaving a trail of downed trees, debris and other damage behind. I am grateful to our exceptional team, which made every effort to clean things up quickly, so you could enjoy the golf course, tennis and pickle ball courts and pools the next day again. It has been a great pleasure meeting so many of you over the last couple of weeks and I thoroughly enjoy our conversations. Your insights help me better understand the Club and its operations and how we can move forward. We have an exciting summer planned for you. Chef and his team are preparing several epicurean events, and we would like to encourage all of you to enjoy all our amenities. Our Tennis and Golf Pros are available to you if you wish to work on your game. The golf course is in magnificent shape, thanks to our Golf Course Superintendent and his team, especially after the aerification. Or you can just take a refreshing dip in the pool and enjoy some relaxation around the West Pavilion. On a personal note, I would like to introduce my family to you. My wife Jennifer and I have two children. Charlotte, 11 ½ years old, who loves horseback riding and sewing. Maximilian, 14 years old, is a Boy Scout and already achieved the rank of “Life Scout”. He is striving to be an Eagle Scout next year. As a family we enjoy hiking, playing golf and many watersports like wake surfing and waterskiing or just lounging at the beach. However, you choose to make use of our amazing amenities, I sincerely hope you enjoy your summer at PCC, ROLF ECKERT General Manager

Golf Course Update The first six months of the year have been a rollercoaster ride to say the least. From a few false springs and a second or third winter, to what seemed like an eternity for warm temps to stick around, it was probably the most challenging spring transition I’ve had to navigate through since the “year of winter kill” back in 2018. Things like late frosts, back to back 40 degree nights the week of Crown Cup, and slow-to-warm-up soil temperatures, to name a few, all contributed to a slow transition and some very confused bermudagrass plants. It truly took until the week after Memorial Day for things to really get going and the golf course to respond to our inputs. On a positive note, we are now in the thick of summer where the heat is cranking and the grass is growing. I’m sure that any doubters have been silenced given the current condition of the golf course. Hats off to my staff for grinding day in and day out to get to this point. Over the past 12 months, through shortages and delays, we have been in the process of reviving our well and pond systems on holes 15 and 16. During the span of this project we have rehabilitated the riser for the spillway on 15 and elevated the pond level six inches, had our well completely rebuilt with new pump, motor, and wiring to get it back to functioning status, and re-routed the piping system that carries the water down to 16 pond which was disrupted during the Providence Road widening project. We now have the capability to control the pond levels of both of these ponds from the same well. In case you didn’t know, there is only 90 feet of elevation change across the property. The lowest point is 3 approach, and the highest point is obviously 16 tee. Gaining functionality of the well behind 15 green enables us to control the flow of water throughout the property, especially in a drought situation which we saw last fall. Everything from 15 pond goes to 14, then down 9, across the range, 1, 2, 3, and makes it to 4 (irrigation pond). Everything from 16 pond goes down 17, under the road then down 12, and into the big pond behind the clubhouse. I would consider this project to be a wise investment and I hope a very noticeable change for our golfing members. After a successful course aerification, we can now shift our focus to some area renovations and projects while we still have some grass growing weather ahead of us for establishment purposes. We will continue along the same lines as the changes that have been made over the last two years (e.g., roadside at 9 green, right side of 12 fairway, bathroom at 14). The goal is to get rid of some of the eyesores around the course that have been ever-present since I stepped foot on the property 6 years ago, with “in-play” areas being priority. With this, I need a favor. With the increased rounds of golf since the infamous March of 2020, I can honestly say that we are starting to see effects of increased wear and tear on the golf course. A simple way we can all help the cause is to avoid using the same traffic patterns as we go about traveling the course. Please scatter your golf cart travel and push cart travel and avoid using the same paths as everyone else (path of least resistance). I can assure you that the morale of my staff is at an all-time high. I am privileged to have a great group of guys. As their leader, I promise you that they are trying to make a difference and are on board with my philosophies. Please do not hesitate to thank the crew when you see them. From The Baseline The dog days of summer are finally here but we are not cooling down in the tennis realm! Following a successful Spring Season with a record number of USTA teams, to Interclub, to Junior Team Tennis, it is unbelievable to see the participation in tennis here at PCC. Some of our favorite memories from the spring season were our beat the Pro Pickleball event, when the Special Olympics came out for a day of tennis, and our Men’s appreciation night! We look forward to a great summer packed full of fun events in both the tennis and pickleball arenas! Our continued goal is to have something for everyone and keep these courts rocking. Whether you are new to the game, or you’re a seasoned veteran we plan on having options for every tennis player at the club. PCC FITNESS KEYLESS ENTRY BY PAXTON - GOING LIVE JULY 12TH We are pleased to let you know that we have installed a new keyless entry system at the Providence Fitness Center. The old key fobs that you were using prior to COVID-19 restrictions will no longer work. The new system will operate via an app called Paxton Key on your mobile device/cell phone. Once we go live with the keyless entry system, you will simply open the Paxton app and the door locks will disengage. Or you can keep the app running in the background and you will not have to open it each time. If you have utilized the fitness center over the last 60 days, you should receive an email from Paxton (support@paxton10portal.com) with a link to download the Paxton app to your mobile device along with instructions to register the app using your individual registration code which will be included in the email. If you did not receive an email from Paxton and you wish to use the fitness center, please check your spam folder first to make sure it didn’t make its way there. If you don’t find the Paxton email in your spam folder, please contact Kym Reed, the Fitness Director at kreed@providencecc.com 704 846 5485 for assistance. PATTERSON III, EXECUTIVE CHEF AT PN 1 TSP Baking Soda This is a cookie for folks of all ages, as a child Oreos ½ TSP Kosher Salt was a favorite treat of mine, now I find myself with the 4 Ounces Cream Cheese, room temperature desire of Classics with Simple Twists. Here we have a ¾ Cup Unsalted Butter, room temperature Traditional Butter Cookie Recipe with the addition of ½ Cup Sugar ½ Cup packed Dark Brown Sugar Cream Cheese and Oreos. Have a Glass of Milk or 1 Large Egg, at room temperature Scoop of Vanilla Ice Cream to further enhance this 2 TSP Pure Vanilla Extract Sweet Treat! 1 Cup White Chocolate Chips 1¼ Cups roughly chopped Oreos
JULY COOKIE OF THE MONTH: COOKIES AND CRÈME COOKIES
DIRECTIONS Whisk the flour, cornstarch, baking soda, and salt together in a medium bowl. Set aside. In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the cream cheese on medium-high speed until completely smooth and creamy. Add the butter and beat until combined, scraping down the sides and up the bottom of the bowl as needed. Add granulated sugar and brown sugar, and beat on medium-high speed until smooth and creamy, about two minutes. Add the egg and vanilla, and beat on high speed until combined, about one minute. Scrape down the sides and up the bottom of the bowl, and beat again as needed to combine. Add the dry ingredients to the wet ingredients and mix on low speed until combined. With the mixer running on low speed, beat in the white chocolate chips. Add the Oreos and beat on low speed or gently fold in with a rubber spatula or wooden spoon (dough is heavy) until combined. Cover and chill the dough for at least two hours in the refrigerator (and up to four days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking because the dough will be quite hard. Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mats. Set aside. Roll cookie dough, a heaping 1½ tablespoons of dough per cookie, and place three inches apart on the baking sheets. Bake for 12-13 minutes or until lightly browned on the sides. The centers will look very soft. Remove from the oven and allow cookies to cool on the baking sheet for five minutes before transferring to a wire rack to cool completely. THE PROVIDENCE PRESS

AUGUST COOKIE OF THE MONTH: BLUEBERRY CREAM CHEESE COOKIES BY MICHAEL DONTIGNEY, EXECUTIVE CHEF AT WE When I first became Chef at the Water’s Edge, I had no idea the talents that were hidden inside one of the ladies that cleaned the club. I slowly noticed all these wonderful and delicious desserts randomly appear around the club. I soon found out the hidden secret of who was creating these amazing desserts. Mrs. Mary Moore is a beloved staff member here at the club and makes some of the best down home cooked desserts I have ever had. These blueberry cookies are a monster hit when she makes them for the members. I hope that everyone enjoys them as much as we do here. COOKIE INGREDIENTS ½ Cup Unsalted Butter, softened ¾ Cup Sugar 1 Large Egg, room temperature 1 TSP Vanilla Extract 1 TSP Corn Starch 1½ Cups All-Purpose Flour ¾ TSP Baking Powder ¼ TSP Salt 4 Ounces of White Chocolate Chips ¾ Cups Fresh Blueberries FILLING INGREDIENTS 2½ Ounce Cream Cheese, softened 1 TBSP Powdered Sugar ½ TSP Vanilla Extract 4 TBSP Blueberry Jam

DIRECTIONS Preheat oven to 350°F. Parchment cover baking sheets. In a small bowl, mix together the dry ingredients; flour, corn starch, salt and baking powder. In a mixer bowl, cream butter and sugar on high for two minutes until light and creamy. Beat in egg and vanilla extract. On lowspeed, mix in dry ingredients. Fold in ¾ of the white chocolate chips and reserve rest for topping the cookies. Fold in blueberries very gently with a rubber spatula. Dough will be thick and sticky. Cover and refrigerate for two hours. For filling, mix cream cheese, vanilla extract and powdered sugar just to combine and place in fridge. Once the dough is chilled, scoop one tablespoon of cookie drops on cookie sheets. Make a deep bowl in middle. Fill with one teaspoon of cream cheese, mix in ¾ teaspoon of blueberry jam. Top with ½ tablespoon of cookie dough and seal roll gently into a ball. Press white chocolate chips on top and sides of cookie ball. Put in freezer for 10 minutes before baking. Bake 16-18 minutes. Cool on sheet pan for 10 minutes before removing then transfer to a cooling rack.

I have been at Providence almost a year. My hobbies are Golf, Hiking, Biking, Basketball, and Church Activities. Something you might be surprised to know about me; I spent 6 years as a "Tour Caddy". Five of those years on the LPGA traveling all over the world. I love to have dinner with my dad, he is my favorite person to talk to and be around.
I have been at PCC for five months. I quickly moved up from a runner in the dining room to a Supervisor at the Turnhouse. I enjoy all types of sports and my favorite is basketball. My hobbies are shooting, the gym and fishing. I would love to have dinner with Gordon Ramsey. I love working with food and he's super famous and I could learn a lot from him.
