MANAGER'S MESSAGE Dear Providence Members, What a start to the year – Mother Nature has had us on a roller coaster ride! Alas, Spring is on the horizon, the season of rebirth and rejuvenation. I would have to say that 2022 is quickly becoming the year of Rejuvenation for Providence Country Club. Our team has been immersed in maintenance projects throughout the property. I would like to thank the membership for allowing us to close the Clubhouse the first week of the year. This allowed us to give the Clubhouse a thorough deep cleaning from top to bottom. Furthermore, it gave us an opportunity to evaluate all of our supplies and reorganize in an efficient manner. Finally, we were able to properly assess all of the Club’s equipment from HVAC to kitchen. Since then, our priority has been refreshing the look of your Club. Some smaller projects include, but are not limited to, fresh paint throughout the Clubhouse, matching electrical fixtures, updated LED lighting in all the sconces on main level, carpet cleaning in Table 16, recalking all seems between beams and cathedral ceiling in Table 16, clean and oiled all hardwood flooring leading up to and in Preston’s dining room, cleaning of all ceiling vents, matching bulbs on light posts at bottom of stairs in back of Clubhouse and freshly painted light posts around the front lawn. Some of our more indepth projects include the resurfacing and repainting of the Veranda tables, scrape and paint of all wrought iron railing around Clubhouse and a complete “floor to ceiling” shoe shine room renovation. Members can also look forward to matching carpet throughout the main level of the Clubhouse, and a cosmetic overhaul of the Women’s Card Room by the end of May. We also have some capital projects planned this year, some of which we have already begun. Instead of phasing out the replastering of our three pools, we have decided to complete all of them this year! In addition to the replastering, they will have a new look with “PCC blue” tile instead of black. The pool complex will also have matching deck surface throughout including the both sets of restrooms. To cap it off we will be replacing the sand in the filtration system. The pool complex will truly look amazing. I also am excited to announce we have hired a new Executive Chef! Brandon Mullis recently joined the PCC team and he has hit the ground running. Even though he has already begun, March 29th will play a significant role in the beginning of his era as our culinary leader as we are reopening Table 16 for lunch service and offering brand new lunch and dinner menus. Chef Brandon’s talent will be on display for our March 11 wine dinner as his dish showcases the 2nd course. This dinner is going to be one of the best food & beverage experiences of the year! Dear Members, I’d like to introduce myself as your new Executive Chef. I am very excited to begin my tenure with McConnell Golf and more specifically, Providence Country Club. I am a Charlotte native, born and raised, with both my parents from North Carolina, so my roots run South. My family background definitely plays a part in my culinary creativity. I enjoy cooking simplistic food with modern techniques to bring the best out of any type of cuisine.

Bryan was born and raised in Jacksonville, Florida where he has spent his entire 16year career. Over that span, Bryan has maintained facilities ranging from country clubs to five diamond resorts. He also met his wife Brooke, of 15 years, in Jacksonville and they moved up to Charlotte with their 11-month old daughter, Olivia, on Christmas Day! Bryan looks forward to working for McConnell Golf with his ultimate goal being to make Providence Country Club better each day. THE PROVIDENCE PRESS

I attended the culinary program at CPCC graduating in 2012. Shortly after, I began my career at Carmel Country Club starting at the Pool and rising through the ranks all the way to Chef de Cuisine. After a decade of preparation and tutelage, I am ready to broaden my horizons and manage my own culinary operation. I look forward to building upon and mentoring the team at Providence, passing along the invaluable lessons that helped shape me. In addition to coaching, one of my immediate priorities is to provide the membership with more consistency regarding the menu and quality. GREENS AND GROUNDS

PCC GOLF COURSE UPDATE We often wonder why we do what we do, outdoors, in the elements, battling Mother Nature, especially during the cold spells wrestling greens covers. Then spring arrives and we are reminded of the pride and joy we take into molding and improving the golf course conditions throughout the growing season. The plants are waking up and the trees are budding. Color slowly makes its way back into the natural landscape. One of our goals this year much like last year, is to continue to enhance the landscaping around the club and the golf course. Back in January, we completed our bulk spread application. In this application was our wall-to-wall spring fertility, along with our pre-emergence herbicide for summer annual weeds such as goosegrass and crabgrass. Studies have shown that earlier is better for this application because although it may seem early, the product is just sitting there until soil temps warm up enough for the microbial breakdown of the controlled release fertilizer to start happening. Also, after being watered in, the herbicide has formed its barrier against weed germination in the event of a quick or slow soil temperature rise. When the bermudagrass wakes up, it’s time to get the mowers ready to go. You will see marking paint on the golf course indicating fairway and approach lines. This paint is there so we can get grassing lines dialed in until there is enough definition of the turf that we can see our lines without paint. Also as the bermudagrass is waking up, sometime over the next few weeks, we will begin to heavily fertilize the areas that have been overseeded in preparations to spray out the ryegrass for a smooth transition into bermudagrass. This fertility not only helps to jump start the growth of the bermudagrass, but also makes the ryegrass very succulent and easy to kill. As the growing season starts and plant processes begin, we also implement the agronomic plans which we have been developing during the offseason. These plans are similar year-to-year, but never the same as the variables that we deal with from year to year are never the same. Small adjustments to where resources are allocated can go a long way. This year, high traffic areas and greens surrounds will get extra fertility to combat traffic wear. Our greens fertility program started back in February with a few important soil spray applications. These applications make sure that there are nutrients readily available for the plant to take up once the plants wake up. Remember, during the winter the plants use and survive off of the nutrients/carbohydrates which are stored in the fall. Going forward, we will be applying foliar fertility, plant growth regulators (PGRs), and plant protectants on a weekly basis. We have switched wetting agent chemistries for this year with the goal being downward water movement and firmer surfaces. We have also filled a few “gaps” in our disease prevention program. First held in 1972 by the Autism Society, Autism Awareness Month emphasizes the need for public awareness to promote acceptance, celebrate differences and be more inclusive towards autistic individuals around us. Join McConnell Golf and each of our properties as we raise awareness about autism and donate to support this cause. The ACC Women’s Golf Championship returns to The Reserve Golf Club! This makes it the ACC’s third trip to Pawleys Island for the tournament.

FROM THE BASELINE I think I speak for us all when I say we are thankful for warmer temperatures on our horizon. As we emerge from the harshest winter I’ve been a part of, I know we are all chomping at the bit to get back out onto the courts in a more consistent manner. This spring season is going to be jam packed with tennis. From 14 different USTA leagues, to interclub tennis, to many planned events we can’t wait to get the ball rolling and our racquets swinging! Our continued goal is to have something for everyone and keep these courts rocking. Whether you are new to the game, or you’re a seasoned veteran we plan on having options for every tennis player at the club. Ages 4-12 are welcomed to participate on our five full-days of self-discovery.

MARCH COOKIE OF THE MONTH: OLD FASHION OATMEAL COOKIES BY RHETT SORG, EXECUTIVE CHEF AT RES

When I was little, my mother use to make this cookie along with one that was my brother's favorite. It started to become a comfort food for me. As time passed and family started going their own way, I didn’t get a chance to have this cookie very often. Even though I had the recipe, it never turned out the way mom made it. Now, when family gets together my mother has a batch of these sitting on the counter when I get there. Boy are they good! Not very healthy, but I’ll make the sacrifice. INGREDIENTS ¾ Cup Canola Oil ¼ Cup Brown Sugar, packed 2 Large Eggs, room temperature ½ Cup Milk 1 Package Spice Cake Mix 2 Cups Old Fashion Oats 2½ Cups Raisins 1 cup Pecans, chopped

DIRECTIONS In a large mixing bowl, beat oil and brown sugar until blended. Beat in eggs, then milk. Combine cake mix and oats, gradually add to brown sugar mixture and mix well. Fold in raisins and pecans. Drop by tablespoon two inches apart onto greased baking sheets. Bake at 350°F until golden brown, 10-12 minutes. Cool for one minute before removing to wire racks.

APRIL COOKIE OF THE MONTH: GREEK ALMOND COOKIES Providence Country Club Delicious cookies and used during Greek Festivals. INGREDIENTS 5 Cups AP Flour 1½ Cup of Blanched Almonds 2 Cups Extra Virgin Olive Oil 2 TSP Vanilla Extract 2 TBSP Brandy (optional) 2 Cups Confectioners’ Sugar (divided)

DIRECTIONS Place the toasted almonds in a food processor and grind until finely chopped. In a large bowl, combine the flour, chopped almonds, one cup confectioner's sugar and stir. Sprinkle the vanilla extract and brandy over the dry ingredients. Add the olive oil and knead into a dough. The dough should stick together when pressed but have a slight crumbly feeling, which is characteristic of a shortbread dough. If too crumbly, add olive oil one tablespoon at a time until the right consistency is achieved. These traditional cookies are often shaped into crescents, buttons or balls. An easy trick is to shape them into buttons using a tablespoon measure. If you want to do the same, fill a tablespoon measure with some dough, pressing the dough to give it the rounded shape of the measure. Once shaped, place the cookies on a baking tray covered with parchment paper or a silicon baking sheet. While shaping the cookies, preheat the oven to 325°F. Bake the cookies in the oven at 325°F for 20 minutes or until they begin to turn a very slight sandy color. Once cooled, place the cookies in a pan with the remaining confectioner's sugar and coat

I have been at PCC for 6 months. You would be surprised to know that I have a bucket list that I try to tick off something every year. Examples: Live out of the United States, Bungie Jump, Sky Dive, Scuba Dive the Great Barrier Reef, have teal colored book shelves from the floor to the ceiling. I enjoy reading and working out at the Gym. My favorite meal is blackened chicken, veggies and grains. If I could have dinner with anyone it would be with my Grandfather Adams, he was a Bio Chemist and worked for the Government, after serving in World War II. I would love to know his thoughts on today's issues.
