DEAR PROVIDENCE MEMBERS, It’s hard to believe the holiday season is right around the corner, especially with all the distractions and concerns everyone has experienced this year! I don’t know a person who isn’t excited for New Year’s Eve to come end 2020!! The PCC Staff has done an amazing job caring for our Members and I could not be more grateful and proud of their professional efforts. Speaking of the professional team, I am thrilled to announce the acquisition of a new Executive Chef for Providence Country Club, Chef John Crawford. John is truly a rising star and has worked with McConnell Golf since joining the team in Raleigh, back in 2008. He was their Executive Sous Chef for more than six years before stepping out for a couple of years to continue to refine his leadership and culinary skills. Additionally, John has also been the “Go To” person for important McConnell Golf events over the last several years. Chef Crawford brings renewed energy and creativity to Providence with a proven track record of consistency and culinary imagination. We look forward to years of his masterful skills and sharing those skills as he elevates our team here at PCC. Providence is where you come to relax, have fun socializing, dining and playing sports. In other words, we hope you come here only to have fun and leave your troubles behind. We employ a diverse staff and yet we all enjoy working together as a team with Member Satisfaction being Goal One! CLUBHOUSE MANAGER'S MESSAGE AND EVENTS HOLIDAY SEASON! I know this has not been the year that any of us had in mind, when we started our 2020. However, I am still very grateful for all of the blessings that have come my family’s way this year. With the cooler weather upon us, falling leaves and shorter days, we can all feel the holiday season approaching. It is a time to give thanks and celebrate the season with family and friends (COVID style). It is also the opportunity for us to look back on the year and remember all of the good times and fun we have had and to appreciate all the loved ones in our lives. With all this year has brought us, I am proud of the strides our PCC Team has made in order to ensure Providence remained a safe haven for its Members. With this in mind we will be making adjustments to all of our upcoming annual holiday events. We will be offering limited seating for all events, stationed attended buffets, and strict sanitation protocols for all activities. We have a very full calendar of upcoming events for all of our Members to enjoy. FROM THE LINKS As we begin to close the book on 2020 we want to thank the Members of Providence Country Club for continuing to support the game of golf. We’ve been lucky to have this avenue to escape the majority of a chaotic year. We were able to host Crown Cup and other fall events safely with record participation. Congratulations to all our winners but especially Kevin Koonts and Steve Arnall for being “Crowned” champions. As we begin to work on the calendar for 2021 we’re optimistic that we can begin to return to a normal golf calendar. Hosting Crown Cup in the spring, The Cates Invitational in the fall, and other big events in prime golf months will be a priority. Again, thank you all for your support during the past year. FINDING THE CENTER Finding the center of the clubface is a problem many of us struggle with. Working on your short game and hitting chips/pitches will greatly increase your chances of finding the center of the club more often. I suggest starting with a chipping net 8-10 yards away from you. Go through your pre-shot routine and set-up to hit shots into the net. I suggest keeping more weight forward on your left foot and the ball slightly back in your stance. Take short swings with little body movement on the way back. Hit shots where you do everything you can to keep your left wrist flat at impact (for right handed players) but transfer your weight to your left foot. When hitting these shots you should strike the ball first then brush the turf. Really shouldn’t be much of a divot, if there is it should be after you impact the golf ball. Hitting short shots will greatly improve your ball striking as you move into hitting longer golf shots. Stop by the Golf Shop with any questions you may have.

GREENS AND GROUNDS PCC GOLF COURSE It is a pleasure to have the opportunity to become your new Golf Course Superintendent. I am excited for what the future holds here at Providence. I’m sure you all are glad the rough is done growing. Bear with us as we try to keep the golf course as clean as possible through the remainder of leaf season. The winter time is thought to be the “off season” or the “slow” time of the year, however, that is not the case at all. During the winter, we are just as busy as any other time of year. The bermudagrass greens require special attention during the cold months, much like bentgrass greens require attention during the heat. Our greens thrive in the heat because bermudagrass is a warmseason turfgrass. Our main goal is to keep them alive through the winter. Winter survival of bermudagrass greens requires extra care, input, and attention. It starts with a raised height of cut to act as extra insulation, or a buffer from the cold. We also focus on moisture and nutrient management to get us through the cold. We are fortunate enough to be able to cover greens to maintain tolerable soil temperatures when the air temperatures drop drastically. Covering greens takes place when the temperature is 25 degrees Fahrenheit or lower. Lastly, fungicides are used to protect the plants from disease during their most vulnerable time period
One major piece of the puzzle for winter survival of greens is moisture. Because the greens are not actively taking up water through the roots, we have to make sure the plants stay hydrated. Desiccation will occur if the plants dry out. We have to watch humidity levels, air temperature and soil temperature, wind speeds, and also monitor the moisture in the top three inches of the greens using our moisture meters. It is important to water the greens before and after covers are used. We also continue to use wetting agents in the dormant season. These chemicals help with penetration, holding, and moving water into and throughout the subsurface of the greens. It is always important to never stop feeding the plants even though they might not be growing. If we were to have a warm spell in the middle of winter, the plants would actually wake up from dormancy and use some of the nutrients that they have stored. We do not want the nutrient supply to ever run out, so we spoon feed the plants either from foliar sprays, or granular applications so that there are always available nutrients. Recent research has shown that feeding the greens while they are dormant is crucial in the winter survival of ultradwarf bermudagrass putting surfaces. When the greens are dormant, the chlorophyll exits the leaves and nutrients are stored in the roots and stolons. This is why the rest of the golf course turns brown. In order for the greens to remain green throughout the winter, we use pigments to give them their color. Pigment is different than paint in that the pigment program is started while the plants are still actively growing. The plants actually take in the pigment, unlike paint which is just that, paint on top of the leaves. The pigment also helps with heat retention, much like wearing a black shirt in the middle of July. See you on the course, Mark Scott Golf Course Superintendent

FROM THE BASELINE To say it has been a crazy year would be an understatement. We have been through some unprecedented times this year with many ups and downs. I would like to thank you all for being so understanding and supportive during these times. Tennis has been the busiest I have ever seen it here in my almost 3 years as it is one of the few things we were able to do for a while and it seems like things are going to continue to stay active at the courts!! We have some great events coming up over the next couple of months and we hope you will join us on the courts. We have some of the best members around and I look forward to finishing 2020 strong and to an awesome 2021!!! This is a team-based event and is open to players of all ability levels. There are all-morning mimosas, lots of great tennis to be played, and lunch to follow. NOVEMBER COOKIE OF THE MONTH: BOURBON CHOCOLATE SUGAR COOKIES Bruce McIntosh - Country Club of Asheville INGREDIENTS 1 ¾ Cup All-Purpose Flour ¾ Cup Dutch Process Cocoa Powder, sifted ½ TSP Baking Soda ¼ TSP Baking Powder ½ TSP Kosher Salt ½ Cup Unsalted Butter, room temperature ½ Cup (8 tablespoons) Unflavored Vegetable Shortening, room temperature 1 Cup Granulated Sugar
¾ Cup Packed Light Brown Sugar 1 Large Egg 1 Large Egg Yolk 3 TBSP Bourbon (optional, replace with 1 TBSP Vanilla Extract) 3 OZ. grated or very finely chopped dark or Semisweet Chocolate 1 Cup Raw/Turbinado Sugar 2 TSP Bourbon
DIRECTIONS Preheat oven to 350 degrees F. Line a baking sheet with parchment paper In a bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In a large mixing bowl or the bowl of a stand mixer, cream butter until no longer chunky. Add shortening and beat on medium-high speed until smooth and uniformly mixed. Add sugar and brown sugar and beat for 1 to 2 minutes until light and fluffy. Add egg and egg yolk and mix until incorporated; scrape down the sides of the bowl and the beater as necessary. Slowly mix in bourbon. Add dry ingredients in two additions, mixing on low speed until just incorporated. Mix in finely chopped chocolate. If your dough is particularly soft you can refrigerate it for 10 to15 minutes or so to make it easier to roll. To make bourbon sugar, combine raw sugar and 2 teaspoons bourbon in a pint-sized mason jar. Screw on lid and shake the heck out of it, until sugar is evenly moistened and looks something like wet sand. Pour into a shallow bowl or dish. Scoop dough into 1 3/4-inch balls (the size of a medium cookie scoop). Roll into a smooth ball, then roll into bourbon sugar until evenly coated (the moist sugar will clump, but that’s the effect we’re going for!) Arrange on parchment lined cookie sheets leaving approximately 2 inches of space between cookies. Bake for 12 to 14 minutes or until cookies have settled into shallow domes. They will be set around the edges but still puffed in the middle (they will flatten when they cool). Let cool on pan for 10 minutes, then transfer cookies to a wire rack to cool completely. To store, spread any leftover bourbon sugar in the bottom of an airtight storage container; arrange cookies in layers on top and tightly cover. Cookies will keep at room temperature for up to 5 days.

DECEMBER COOKIE OF THE MONTH: HOLIDAY MERINGUE COOKIES Holston Hills Country Club Chris Shaw (one of our cooks) looks forward to the holiday season each and every year for a lot of reasons but one of those that is close to his heart is his mother’s Meringue Cookies. Chris says each time he has one it takes him back to being a child when he would make them with his mom. He knew right away what cookie he wanted to submit for the Cookie of the Month when asked. He wanted to share with his McConnell Family the cookie that means so much to him. INGREDIENTS 4 Each Egg White ½ TSP Cream of Tartar Pinch of Salt 1 Cup of Granulated Sugar (Superfine) DIRECTIONS Preheat oven to 225 degrees. Mix Egg whites with whip attachment in mixer until frothy. Add Cream of Tartar and salt. Continue whipping until soft peaks form. While mixer is on low speed, slowly add sugar 1 Tablespoon at a time until sugar is dissolved and stiff peaks are formed. Using a star tip in a piping bag, pipe out the meringue onto a parchment paper lined baking sheet, spaced 2 inches apart. Bake for 45 min and then turn off the oven. Without opening the door let cookies stand in oven for 1 hour. Store in air tight container. Yields 4 dozen cookies
