CLUB UPDATE A NOTE FROM YOUR TRIAD REGIONAL DIRECTOR GIVING BACK The desire to give back in our community is stronger than ever and while some know this story already, with over 60 new families having joined the club this year, it bears repeating. Sedgefield Country Club has long supported the Salvation Army's Angel Tree program. In 2016 that endeavor was taken to a whole new level when Bob Bruggeworth approached me about an idea for a golf tournament fundraiser (The Angel Tree Open) to buy gifts for the children on the Angel Tree. With a soft spot in his heart, he wanted to find a way to make sure that every single child on the Angel Tree had gifts to open on Christmas morning.

One beautiful fall evening over casual conversation on a mutual friend's porch, Bob and Kelli Young began discussing ways they could give back. That same casual conversation grew more serious and a group calling themselves the "Sedgefield Angel Tree Helpers" was born. It snowed the weekend of the 2016 tournament and golf was cancelled. However, that didn't stop the "after party" in the upstairs lounge and it didn't stop Sedgefield members from opening their hearts and their wallets to donate. The funds rolled in, the "shoppers" organized their lists, and off they went. That first year a little over $11,000 was raised and through 2019, Sedgefield members and guests have donated over $112,000, ensuring that Christmas is a little merrier for those in need in our community. With the financial challenges so many have faced in 2020, this year's need is greater than ever. If you would like to contribute or play in this year's tournament - or both - watch your emails for more information. There's also a short 60 second video included with the emails that shows the impact of your donation and it will surely pull at your heartstrings. A special thanks indeed to the "Sedgefield Angel Tree Helpers" who spearhead this effort each year: Bob Bruggeworth, Ellen Boyer, Will Gregory, Scott Hamilton, and Kelli Young.

This year has been different in so many ways and while there are many things about 2020 that we are ready to see in the rearview mirror, there are also lots of blessings for which to be grateful. Our staff has been resilient and innovative and our members have been supportive and encouraging. We have learned to get through unusual times and situations together. I am proud of the team we have at our clubs - they are dedicated and loyal beyond measure. I am thankful for our members - you make our careers in hospitality so very rewarding. MEMBERSHIP WELCOME NEW MEMBERS Ed Boiar & Allison Murphy Children Leighton (23) & Ashton (19) Ed recently moved to Greensboro from Raleigh via New Jersey, and transferred his membership from our reciprocal property, Raleigh Country Club. Allison and Ed are getting married in the spring. Allison has lived in Greensboro for 30 years via New York. They are both avid golfers and look forward to playing together at least once a week. Although they are not new to McConnell Golf, please join us in welcoming them to the Sedgefield family! Wesley Brewer Please join us in welcoming Wes Brewer as one of the newest members of Sedgefield Country Club. Wes currently lives in Burlington and is excited to be a part of the club for golfing at Sedgefield and throughout the McConnell Golf network of clubs. He works in Greensboro as a CPA for Price Waterhouse Coopers on Green Valley Road. We look forward to seeing him around the club! Josh & Jessica Carter Children Ashton (6), Haviland (4) & Mattison (2) Josh & the Carter family are no strangers to Sedgefield. As a former golf professional at Sedgefield CC as well as a former member, his career took him to Dallas, TX a few years ago. He and his family have relocated back to our area and are excited to be a part of the club again. Josh is the VP of Magnussen Home Furnishings in High Point and the family resides in Summerfield. Please join us in welcoming them back to Sedgefield! Mike & Natalie Smith Natalie, who is originally from Naperville, IL, is an MD Dermatopathologist, specializing in the diagnosis of skin cancer. She is also chief of GPA Sonic Laboratories, which runs COVID testing for the NCAA and NFL, among others. Mike, originally from Orlando, FL, is a CPA who works as a business consultant for medical and dental practices at DMJ & Co. Mike and Natalie met in graduate and medical school, respectively, at Vanderbilt University. After that, they spent some time in Chapel Hill where Natalie completed her residency (Go Heels!). Together, they enjoy international travel, sports cars, Formula 1 racing, and their Cavalier King Charles Spaniels. Mike also enjoys playing music, particularly the drums. Natalie says she has no time for hobbies, except she’s fluent in French and is attempting to learn golf. We wish her luck and welcome the Smiths to Sedgefield and the McConnell Golf family of clubs.

David Reid David grew up in Germanton and now lives in Winston-Salem. For the past 6 years he lived in New York City, where he completed his MBA at Columbia Business School. He is the CEO of a compression hosiery manufacturer, Carolon, based in Rural Hall. David has been an avid golfer since he was 10 years old. In addition to golf, he also loves to cook and travel. He joined Sedgefield because of his love of the classic golf course design. We welcome David to the Sedgefield and McConnell Golf family!

WELCOME NEW MEMBERS Brandon & Tricia Dembowiak Children: Ryan (7), Owen (4) & Ellie (1) The Dembowiaks left Wilmington and recently relocated to Oak Ridge. The move brings them closer to family, being the son and daughter-inlaw of current club members, Tom and Judy Dembowiak, as well as the business expansion of a new office for Brandon. Brandon is a Certified Financial Planner and the owner of Ascendor Wealth and Tricia stays home with their three children Ryan, Owen, and Ellison. They look forward to raising a family with the ability to enjoy all the club and what the affiliated properties have to offer, including newly acquired Porters Neck CC for when they are back in Wilmington for business or leisure.

Preston & Lillian Dembowiak Children: Braydon (6), Landon (3) & Kayson (4 months) The Dembowiaks recently relocated from Wisconsin and Brazil to a home in NC. With a family of 3 boys, they are looking forward to watching them grow their love of the game while enjoying all the benefits that come with playing a great set of courses in the area. Preston is the son of current club members Tom & Judy Dembowiak. They are excited to be new members and look forward to making some great friendships.

Gene & Shelley Rhodes Son: John (23) The Rhodes reside in High Point, NC where they own and operate two Chick-fil-As. Gene focuses on the operation while Shelley manages the accounting. Active within Emorywood & Willow Creek in High Point, the Rhodes also spend a lot of time at Badin Lake, making membership at Sedgefield and the reciprocity it affords to the Old North State Club all the more appealing. Please join us in welcoming them to the Sedgefield and McConnell Golf family!

Preston & Lillian Dembowiak Family Chris Hawthorne Chris has recently moved to the area as he is the new Associate Athletic Director for Development at Elon University. His duties at Elon include overseeing the athletic fundraising efforts including major gifts, endowments, facility campaigns and The Phoenix Club. Prior to Elon, he was at the University of Minnesota where he was the Director of Development. He also attended the University of Minnesota where he received a Bachelor of Science in Business and Marketing Education degree and a Master of Business Administration degree. He was a member of the Golden Gopher football team in the Big Ten Conference where he was ranked among the top 10 most accurate field goal kickers in program history. He was also a finalist for the 2013–14 Wuerffel Trophy, an award presented annually to the college football player who best combines community service with athletic and academic achievement. He is looking forward to playing lots of golf at Sedgefield and meeting many other members!

A NOTE FROM YOUR TRIAD MEMBERSHIP DIRECTOR 2020 will go down as a year unlike any other in history. Quarantine, home-school, and new terms such as ‘social distancing’ and ‘contact tracing’ are now a part of our everyday vocabulary. And who else amongst us wishes they had a little (or a lot) of Zoom stock? Let’s add in all of the other newsworthy items such as social unrest, and oh yeah, how could I forget politics? In this crazy world we live in with new challenges faced on a daily basis, there are some positive consistencies to help us get through, including the relationships we have with our friends and families. A lot of those relationships began and continue to grow and evolve at the club.

Sean Kelly Sean Kelly Sean was born and raised in western Massachusetts before moving to Cary with his family in 2008. Sean’s parents are members at Prestonwood Country Club where he was a member until 2016. He has two younger brothers, one who lives in Nashville and the other in the Raleigh area. He attended the University of Notre Dame and received a degree in Aerospace Engineering. Sean relocated to the Greensboro/High Point area after college and has been working at the Honda Aircraft Company as a propulsion and fuel system engineer for the last 5 years. Sean looks forward to being able to enjoy the excellent golf facilities and championship caliber course as well as the reciprocal clubs. John & Carly Jo Lewis Please join us in welcoming former members John & Carly Jo Lewis back to Sedgefield. Joining a growing trend of former members returning to membership over the past few years, John is looking forward to getting back into golf and seeing many old friends around the club. He works in electrical manufacturing while Carly Jo is retired. When not playing golf, John enjoys working out and hiking with their dogs. We look forward to seeing them around the club! Charles & LaTonya Penny Children: Hunter (13) & Taylor (13) An avid golfer, Charles is looking forward to playing lots of golf at Sedgefield and the other McConnell Golf properties. He is currently a player support specialist for golf club manufacturer PXG. Prior to joining the team at PXG he was a golf instructor at GOLFTEC in Cary. He and his family reside in Mebane. Please join us in welcoming the Penny family to Sedgefield & McConnell Golf! Ron & Teresa Peeples The Peeples family resides in Browns Summit and Mr. Peeples is the president of BMF Labs in Greensboro. He is an avid golfer and looks forward to utilizing Sedgefield and the reciprocity to other clubs that our members enjoy. As I write this, we are approaching Halloween. One of my fondest memories in my almost nine years at Sedgefield was a random Facebook post one Halloween evening a few years back. My wife and I had just returned from walking our two young sons through the neighborhood for trick or treating. As my wife was putting the boys to bed, I pulled out my phone and began scrolling Facebook. There were dozens if not hundreds of photos of young ghouls and goblins and super heroes, posing with all the treats they had worked so hard for that evening. One photo struck me and really made me think. It was of newer club members that I had signed up earlier that year, a few different families together, the kids all trick or treating together in the neighborhood. Knowing the history of these families and where they moved here from and where they lived, I knew that they did not know each other prior to joining Sedgefield. And here are their kids, on one of the ultimate kid-friendly holidays, making memories of a lifetime with new friends that they would have never met if not for the club. It is these intangibles that we cannot sell, we cannot market, nor can we put a value on. Club membership is so much more than golf, tennis, fitness, swimming and dining – it’s a culture, and more importantly it’s a family; the Sedgefield family. Our Sedgefield family has grown throughout 2020 as we have remained fortunate to be one of the few entities that could remain open. Of course we have had to shift some focuses and make some tough decisions on the fly sometimes (and move a LOT of tables and chairs!), but ‘our family’ is the reason we do so. We are here for you just as you are here for us. The next time I write we will be into 2021 – let’s make the best of what we have left of 2020 and enjoy the upcoming holiday season with friends and family.

The family is looking forward to playing golf together and utilizing the club. We welcome the Clayton family to The Cardinal! Keith & Megan Kepler Keith is an avid golfer and the CEO/owner of Kepler Insurance Agency Inc. in Greensboro. Raised in Greensboro, he enjoys the opportunity of giving back and being a positive influence on the area's growth and development through community involvement. The Keplers reside in the neighborhood just across Fleming Road from the club and look forward to using the club and meeting many other members! Steven Ralls Mr. Ralls has recently joined the club in an effort to play more golf! He resides on the golf course just off of Cardinal Way, making it quick and easy to head out to the range or to play a few holes when time allows. He is the operations manager with Sierra Software in Greensboro. In addition to golf, Mr. Ralls enjoys fishing in his free time. Please join us in welcoming him to The Cardinal!

Mr. Ratchford works in the area as a VP/GM of the USA region for Rechelieu Hardware. Their kids are very active in golf and the family enjoys playing together. Anthony & Sandra Robledo Mr. Robledo is a semi-retired CPA, managing his own accounting firm for 35 years in south Florida. He took up golf in 1990 and it rapidly became one of his favorite sports. He and his wife Sandra recently moved to Greensboro in June. They had been wanting to live in North Carolina for many years, after visiting Blowing Rock, Asheville and other areas since 2004. They have two daughters who also recently moved to Greensboro, and one granddaughter. They also have a son who lives in New York, which makes visiting a much closer commute. The Robledos look forward to meeting fellow club members and playing more golf! Chad & Candace Williams Sons: Trey (21), Rigdon (18), Rhodes (8) & Rhett (5) Chad is an inspector with Assurance Home Inspections in Greensboro and is both a licensed home inspector and a licensed general contractor. The family resides just north of the airport and not far from the club. They look forward to enjoying golf together as a family and meeting other members. CLUBHOUSE NEWS A NOTE FROM YOUR FOOD & BEVERAGE DIRECTOR What a doozy of a year! Wild, unpredictable, frantic and most certainly unforgettable. This year has been full of emotions. While we’ve experienced quite a few challenges this year, I am grateful to be a part of a wonderful team that made it all so easy. I am thankful for our amazing staff who, when called upon or not, consistently stepped up to the plate and got the job done without hesitation or reservation. It is their work ethic and integrity which drives our continued success. I am also thankful for our wonderful members who have supported us every step of the way! You really know how to make the club feel like home. Ah, the holiday season‌ Although I am definitely a summer type of girl, there's so much I love about the spirit that comes along with the winter holiday season. From Christmas movie marathons to ice skating with family and friends, there are so many reasons to love the holiday season. The decorations, the holiday cocktails, the delectable food and holiday cheer...no matter how hectic it gets, it really is the most wonderful time of the year.

A NOTE FROM YOUR DIRECTOR OF CATERING WE CAN! A phrase not overly used these days after the new normal has set in. It seems in today's world so many are telling us what we can't do. We can't gather, we can't socialize, we can't enjoy each other's company. But in the club business, it's about what we CAN do. Since March, it sure has been an interesting time for us all. So many hours spent evaluating, planning, restructuring and brain storming some new ideas so we can say YES, we can! We can... provide you with the same great club experience you have come to expect. We can provide you a gourmet meal, a family friendly dinner, or a causal snack. It's not about what we can't do, but what we CAN do! So many others are saying "we can't do this or we can't do that"... but at Sedgefield, WE CAN. We can provide you the same great service you are accustomed to, we can provide you an enjoyable night out, we can still celebrate those special moments in your life. it's all about what we CAN do! A NOTE FROM YOUR CARDINAL SUPERINTENDENT

Now that autumn is here, it brings with it cooler weather, falling leaves, and shorter days. This is also the time of year that we have already raised our mowing heights on the greens, tees, and fairways to prepare them for winter dormancy. Raising the mowing heights is a very important part of our program that aids in protecting the plants from winter injury and making sure there is enough leaf tissue to support a playable surface while the turf isn’t actively growing. It is also a time of year that we battle to keep the course clean from falling leaves. Please bear with us as we try daily to keep up with them using large vacuums and blowers.

I really hope you have been able to make it out this fall and enjoy the course. We have had beautiful weather! I was pleased by the rate at which the greens healed from our fall aerification. This has allowed us to provide a smooth and fast playing surface for most of the fall. The project on number two went as planned, with the stairs being removed, area regraded, and new sod on the ground. By the time you are reading this, the tree directly behind the green will have been removed, allowing for more sunlight in this area, which will finish off the project.

This is also the time of year that we must monitor the course for frost in the mornings and impose a delay on starting times if needed. We just had our first frost of the season on October 18th. It was all concentrated in the rough, but as we get colder temperatures in the future and as the ground temperature gets colder, we will begin to see it on the shorter cut turf like fairways and greens. Cart traffic and foot traffic on frosted turf can do irreversible damage to our bermuda grass and that damage will not be visible until the following spring when everything begins to break dormancy and turns green again. As you can tell delaying starting times when frost is present is a very vital part of our responsibility to safeguard the turf from injury and ensure we are doing everything possible to protect the health of the plants. On mornings when the air temperature is around 35 degrees or below, please check with the golf shop for the possibility of any delays.

This is still a great time of year to get out and enjoy some good conditions and nice golfing weather before we really get into the much colder weather in January and February. Get out and have some fun and I hope to see you out on the course.

As we look forward to the coming months, one thing we will focus on is keeping the course as clean as possible on a daily basis. Leaves are already starting to fall at a very fast pace, which we are able to clean up quickly when it’s dry. However, when we go through wet stretches, it can be difficult to get our equipment onto the course for daily leaf removal. Please be patient with us as we will be working hard every day to keep the course clean, but also minimize any damage to the turf from our equipment. Now that the grass has slowed down and the agronomy team is not mowing on a daily basis, we are able to tackle lots of course improvement projects. With the addition of our new wood chipper, you will notice lots of tree work in the coming months. One area of focus will be to work on trimming limbs on any trees that are hitting carts on the cart paths. We will also work on removing all the

dead trees on the course. I feel that we will be able to do most of this work in-house with our new equipment. I look forward to seeing you at the club. Ross Jernigan

Back to Basics With the winter time approaching, I feel it’s a great time to work on your fundamentals. Let’s talk about a few areas where I see most students need help.

22 NOVEMBER

1. Grip – If you are a hooker of the golf ball, your grip may be an issue. Check to see if your right palm is facing your nose. If so, your grip would be too strong causing the clubface to close too quickly through impact. On the opposite end of the spectrum, are you constantly fighting a slice? If you grip the club and see all 4 knuckles on your right hand, your grip is too weak. Having a weak grip will not allow the clubface to be square at impact resulting in a weak left to right shot. On another note, a weak grip also tends to be a fault in many players that come over the top. 2. Posture – Making a golf swing with poor posture is a recipe for an inconsistent shot. To start, your feet should be at least shoulder width apart. Weight should be equally distributed between the left and right foot. Next bend from the hip, allowing your back to remain straight with little to no curve. As you bend your chest forward, your rump should push back so you can balance yourself equally on your feet (back to front). To test this, set up in your posture and have someone lightly push you backward and forward. If you have a problem keeping your balance, work on moving your weight further to your toes or back towards your heels. 3. Backswing – Make a few practice swings and have a friend video them with your phone. Raise your hand if you’ve ever seen yourself swing the club. As you watch the video do you notice a good turn to your back leg or are you only using your arms to pick the club straight up? We need to make a turn with our core (chest and hips) to help keep the club in a better position. Do you notice your posture losing its definition? Meaning, do you stand straight up during the backswing? Keeping your posture throughout the swing is essential for more consistent contact. To practice this, setup in your posture and make a few backswings. Tie a ball and string to the bill of your cap. When you turn backwards the ball should continue to hang down away from your body. If your stand up, the ball will probably hit you in the chest. I would suggest doing this in the comfort of your own backyard. You don’t want your buddies seeing you on the range with a ball tied to your hat.

4. Follow-through - Does your belly button point towards your target? Do you finish flat footed? These two faults are all too familiar to teachers around the world. To understand this better, let’s try something a little different. Hold the club as if you were swinging a baseball bat. Now make a couple swings and feel how the weight moves from your back leg to the front foot through that swing. You almost feel the “bat” swing around you and your body wanting to rotate with it, correct? As you do this more, allow your body to move with the motion of the bat. You will eventually see yourself rotating and finishing more on your front foot with your belly button towards your target. Now, get into your golf posture and try swinging the “bat” again. This may take a little balance work at first but you’ll eventually feel how the club works around you and how your body works with the club. This will result in a much more balanced finish, belly button pointing towards the target, and no more flat footed finishes.

Give these tips a try this winter. Remember we all get a little sloppy with our fundamentals during the year. Good swings are built on good fundamentals, not on your buddy’s secret tip! TIPS FOR KEEPING OFF THOSE HOLIDAY POUNDS Holiday weight gain is a common concern for most adults. Between November and January the average weight gain is approximately one pound. This may not seem like a lot, unless you gain that extra pound year after year. Therefore, holidays — no matter the time of year — may be one of the biggest contributors to your total annual weight gain. Plan ahead to prevent unwanted weight gain during the holidays. One tip to avoid weight gain during the holidays is doing some type of physical activity with your family and friends that may prove beneficial for weight control. Even something as simple as a family walk can get your mind off food and allow you to bond with your loved ones. Try the holiday workouts included in this publication for November and December.

A NOTE FROM YOUR DIRECTOR OF FITNESS "New Normal” seems to be the popular phrase these days and it is no exception for the Fitness Center. Since closing the Fitness Center due to COVID-19 restrictions, it seems like we have changed our “new normal” every 30 days or so. We have been offering outdoor classes since late March and outdoor one-on-one personal training since April. We began with classes and personal training offered on the pool patio, but with the pool opening we moved our class times and personal training to the patio outside the ballroom.

Once the pool closed we moved back to the patio and continued offering outdoor fitness classes. We continue to offer outdoor fitness classes and have been allowed to offer indoor one-on-one training after the Wyndham Championship. The Fitness Center is now open at 30% capacity, by reservation only. Speaking of “new normal”, key fobs were deactivated and we had to adjust to making an online reservation to use the Fitness Center. As we have all experienced an ever-changing “new normal”, I want to thank you for your patience, understanding, and continued support of the Fitness program despite the many changes and restrictions. Studies have linked tennis to factors associated with better heart health, such as lower body-fat percentage, more favorable cholesterol levels and enhanced aerobic fitness. Tennis great Boris Becker described tennis as a “thousand tiny sprints." Pickleball clinics with match play will be offered Saturdays 12:00pm-1:00pm. Be on the lookout for the new Pickleball league we will be forming here at Sedgefield. Due to COVID-19 we postponed the building and resurfacing of the new Pickleball courts but we will resume where we left off early spring next year. Dress the Part Playing tennis in 40 degrees as opposed to 90 degrees is definitely a change. Most importantly, you have to dress accordingly. Wear several thin layers of clothing so you can take off small amounts as you warm up. If you have a large, warm sweatshirt on over a T-shirt, you will go from one extreme to the other once you remove the outer layer. Your muscles will be more tensed in cold weather when compared to warm weather.

This will have a negative impact both on the game and on your health when playing tennis. Start the game only after a few minutes of stretching. In fact, you will have to do warm-up exercises at least for 10 minutes before you are able to play comfortably. See you on the courts! COOKIES OF THE MONTH COOKIES OF THE MONTH

NOVEMBER: BOURBON CHOCOLATE SUGAR COOKIES

DECEMBER: HOLIDAY MERINGUE COOKIES

List of Ingredients: 1 ¾ Cup All-Purpose Flour ¾ Cup Dutch Process Cocoa Powder, sifted ½ TSP Baking Soda ¼ TSP Baking Powder ½ TSP Kosher Salt ½ Cup Unsalted Butter, room temperature ½ Cup (8 TBSP) Unflavored Vegetable Shortening, room temperature 1 Cup Granulated Sugar ¾ Cup Packed Light Brown Sugar 1 Large Egg 1 Large Egg Yolk 3 TBSP Bourbon (optional, replace with 1 TBSP Vanilla Extract) 3 OZ. grated or very finely chopped dark or Semisweet Chocolate 1 Cup Raw/Turbinado Sugar 2 TSP Bourbon

Directions: Preheat oven to 350° F. Line a baking sheet with parchment paper. In a bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt. Set aside. In a large mixing bowl or the bowl of a stand mixer, cream butter until no longer chunky. Add shortening and beat on medium-high speed until smooth and uniformly mixed. Add sugar and brown sugar and beat for 1 to 2 minutes until light and fluffy. Add egg and egg yolk; mix until incorporated; scrape down the sides of the bowl and the beater as necessary. Slowly mix in bourbon. Add dry ingredients in two additions, mixing on low speed until just incorporated. Mix in finely chopped chocolate. If your dough is particularly soft you can refrigerate it for 10 to 15 minutes or so to make it easier to roll. To make bourbon sugar, combine raw sugar and 2 teaspoons bourbon in a pintsized mason jar. Screw on lid and shake the heck out of it, until sugar is evenly moistened and looks something like wet sand. Pour into a shallow bowl or dish. Scoop dough into 1 3/4-inch balls (the size of a medium cookie scoop). Roll into a smooth ball, then roll into bourbon sugar until evenly coated (the moist sugar will clump, which is the effect we’re going for!). Arrange on parchment lined cookie sheets leaving approximately 2 inches of space between cookies. Bake for 12 to 14 minutes or until cookies have settled into shallow domes. They will be set around the edges but still puffed in the middle (they will flatten when they cool). Let cool on pan for 10 minutes, then transfer cookies to a wire rack to cool completely. To store, spread any leftover bourbon sugar in the bottom of an airtight storage container; arrange cookies in layers on top and tightly cover. Cookies will keep at room temperature for up to 5 days.

Chris Shaw looks forward to the holiday season every year, for a lot of reasons. One of those reasons that is close to his heart is his mother’s Meringue Cookies. Shaw says each time he has one it takes him back to being a child when he would make them with his mom. He knew right away what cookie he wanted to submit for the Cookie of the Month when asked. He wanted to share the cookie that means so much to him with his McConnell Golf Family. Yield: 4 dozen cookies List of Ingredients: 4 Each Egg Whites ½ TSP Cream of Tartar Pinch of Salt 1 Cup of Granulated Sugar (Superfine) Directions: Preheat oven to 225° F. Mix egg whites with whip attachment in mixer until frothy. Add Cream of Tartar and salt. Continue whipping until soft peaks form. While mixer is on low speed, slowly add sugar 1 tablespoon at a time until it has dissolved and stiff peaks are formed. Using a star tip in a piping bag, pipe out the meringue onto a parchment paper lined baking sheet, spaced 2 inches apart. Bake for 45 minutes and then turn off the oven. Without opening the door, let cookies stand in oven for 1 hour. Store in air tight container.
