Christmas Edition Welcome to another bumper issue of the iShop E-Magazine. What a year 2013 has been. I have released four digital magazines, created a website dedicated to the iShop Magazine, as well as run two home business, work part time at the kids school canteen, and be a mum, housewife, cook, chauffeur and gymnastics assistant coach...Phew!!! All in a day’s work for us mum’s hey?? I hope you enjoy this issue as it is the last for 2013. Christmas Recipes Here are some scrumptious recipes to keep your guests full this Christmas.
Prep Time 30 minutes Cook Time 25 minutes Serves 12
FRUIT MINCE PIES INGREDIENTS 175 g Coles Butter, softened 1/2 cup Icing Sugar 1 Egg, plus 1 extra Egg, beaten 2 cups Plain Flour 410 g Fruit Mince 1 small Green Apple, peeled, grated 1/4 tsp Ground Cinnamon 2 tsp Cinnamon Sugar
TIP
Work quickly with the pastry so it doesn’t become soft and hard to handle. If the weather is warm, chill the pastry for 10 mins before rolling it out.
METHOD
1. Preheat oven to 180°C or 160°C fan. 2. Grease a 12-hole mini muffin pan. Place butter and icing sugar in a food processor and process for 2–3 mins, until combined. Add egg and process for 30 seconds. Add flour and process in short bursts until mixture comes together, scraping down the sides of the bowl. Turn out onto a lightly floured surface and bring together, kneading lightly. 3. Divide pastry into two. Roll out one portion of dough on a lightly floured surface till 3mm thick, cut 12 x 7½ cm circles. Ease into muffin pan
4. In a medium bowl combine fruit mince with apple and cinnamon. Fill each pastry case with fruit mince mixture, piling it high. 5. Roll out remaining pastry on a lightly floured surface until 3mm thick. Cut out 12 x 6cm rounds. Place the rounds onto the filled tarts, securing the edges. Chill for 10 mins. Brush tops with extra beaten egg, sprinkle with cinnamon sugar, then bake for 25 mins until tops are golden.

CHRISTMAS HAM WITH RHUBARB-GINGER GLAZE INGREDIENTS For the Ham
2 Rosemary Sprigs 4-5.5 kg Coles Finest Free Range Half Leg Ham
Rhubarb-Ginger Relish
1 cup Coles Brand White Sugar 3/4 cup Coles Brand Italian Red Wine Vinegar 4 cm piece (20g) Fresh Ginger, peeled, very thinly sliced 2 Cinnamon Sticks 2 whole Star Anise 1 Rosemary Sprig 340 g Fresh Rhubarb, trimmed, cut into 1.5cm-thick slices
METHOD
1. To make the rhubarb-ginger relish, sprinkle the sugar over the bottom of a heavy large frying pan over medium heat. Cook, without stirring, for about 9 mins, or until the sugar melts and then turns a deep golden brown colour. As the sugar browns, tilt the frying pan to distribute the melted sugar, but do not stir. 2. Gradually add the vinegar (the mixture will harden). Stir until the caramel begins to melt, about 1 min. Add the ginger, cinnamon, star anise, and rosemary sprig and stir for about 2 mins, or until the caramel is mostly melted. Add the rhubarb and 1/4 cup of water and cook for about 10 mins, or until the rhubarb falls apart and the mixture is jammy. 3. Meanwhile, to prepare the ham, position the oven rack on the bottom rung of the oven and preheat the oven to 180°C or 160°C fan. 4. Place rosemary sprigs in the base of the Curtis Stone Everyday Turkey Roaster (optional – see Notes. For details, see p53). Set roasting rack in the pan. Remove the skin from the ham, leaving the fat intact. Run a small dull knife over the fat to lightly score it all over. Place the ham on the rack in the roasting pan, cover, and bake for about 1 hr and 10 mins, or until a meat thermometer inserted into the thickest part of the ham registers 40°C. 5. Brush the ham with some of the liquid from the rhubarb-ginger relish. Continue to bake, uncovered, for another 25 mins, brushing the ham with the rhubarb liquid every 5 mins. The liquid should form a glaze over the ham and the ham should register at least 48ºC on the thermometer. Transfer the ham to a carving board and rest for 10 mins.

6. Transfer remaining rhubarb-ginger relish to a small serving bowl. Carve the ham and serve hot or warm with the rhubarb-ginger relish.

PRAWN, PESTO AND ROAST POTATO SALAD INGREDIENTS
1 bunch Basil, leaves picked 2 Garlic Cloves 1/4 cup Pine Nuts, toasted 1/4 cup Freshly Grated Parmesan 1/3 cup Extra Virgin Olive Oil about 4 cups Leftover Roast Potatoes (see tip) Spray Olive Oil 450 g Cooked Prawns, peeled, tails on 1 cup Semi-dried Tomatoes, roughly chopped
METHOD
1. Process the basil, garlic, pine nuts and parmesan in a food processor until finely chopped. With the motor running, gradually add the oil until well combined. Season with salt. 2. Place the potatoes into a large deep frying pan and spray with oil. Toss to coat. Heat over medium heat, turning occasionally, for about 5 mins or until warmed through. 3. Combine the potatoes, prawns and tomatoes in a large bowl. Add half the pesto and toss to combine. Add a little more pesto to taste. Serve with remaining pesto, if desired.
TIP
Don’t have leftover potatoes? Cut 1kg potatoes into 4cm pieces, par-boil for 5 mins, then drain. Place on an oven tray, spray with oil and roast at 200°C or 180°C fan for 30 mins or until golden. 12

PLUM PUDDING POPS INGREDIENTS
470 g pkt Coles Brand Chocolate Cake with Icing Baking Mix 1/2 cup Milk, plus extra 1 tbs for the icing 2 Eggs 80 g Butter, plus extra 30g for the icing 200 g Dark Chocolate Melts 150 g White Chocolate Melts 30 Red M&M’S Minis, plus 30 Green M&M’S Minis, halved
METHOD
1. Preheat oven to 180°C. Grease and line the base and side of a 20cm round cake pan. 2. Make cake with milk, eggs and butter following packet directions. Spoon into prepared pan. Bake for 40 mins or until a skewer inserted in centre comes out clean. Cool in pan for 5 mins before turning onto a wire rack to cool completely. 3. Make icing with extra butter and milk following packet directions. Break up cake and process in a food processor until fine crumbs form. Transfer to a bowl. Stir in icing. 4. Line a baking tray with baking paper. Roll tablespoons of mixture into balls and place on the lined tray. Cover with plastic wrap and place in fridge for 3 hrs or until firm. 5. Place dark chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until chocolate melts. Dip end of 1 lollypop stick in chocolate. Insert into a ball. Return to the tray. Repeat with remaining balls. 6. Dip 1 cake ball in the chocolate, turning to coat. Stand upright in polystyrene. Repeat with remaining cake balls and chocolate. Set aside for 30 mins to set. 7. Place white chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until chocolate melts. Set aside for 5 mins to cool slightly. Spoon a little chocolate onto top of each cake pop. Decorate with red and green M&M’S. Set aside to set completely.
TIP
13 For best results, stand your cake pops upright in polystyrene or florist’s oasis to set. Or try making holes in an upside-down shoebox.

Leia is a mum of 2 gorgeous boys, 4 and 5months. Prior to starting Elle J, she worked in the Banking industry for 11 years in home finance. Elle J started out as a hobby business almost 4 years ago, making handmade clothing for babies and kids. Due to the lack of such products locally, this took off quite quickly, and the business has grown immensely to a point where Leia now has her own e-commerce site and stock a range of babies and kids products. The Elle J handmade label is currently going through a transition phase to have the sewing side of things outsourced which will allow it to be developed even further.
Elle J offers mums a special collection of gorgeous quality made products which are unique in their designs and will fit all budgets. Leia has learnt that the hardest part of running her own business is to wear multiple hats at once - such as bookkeeper, marketing, web design, administration, customer service, warehouse etc... and then try and balance this with keeping a happy family life and spending quality time with her husband and 2 boys. Leia has the support of her husband and parents. They all have contributed a lot of time either helping me directly with the business or helping with the kids to allow me to get work completed or attend sales events. As my business is going through some small changes and a growth period I have started working with a business coach/mentor to help keep me focused and on track with my goals.

For small businesses wanting to start out, especially in the babies and kids industry 1. is to really think hard and be realistic as to what you want your business to be and what you want to get out of it. This industry is flooded with thousands of little businesses and many whom are closing down as there is just too much competition. 2. Don't just think once you have a website it will all be rosy and the sales will start coming in. If no one knows your website exists you will get nothing. Be prepared to have to spend money on developing a good website and invest in SEO. And remember that SEO isn't a onetime thing, it is on-going. You can purchase their products via the website, or at some local Townsville Markets, such as Cotters Markets, Willows Markets, Strand Night Markets and the North Queensland Babies and Kids Market (Townsville).

Christmas Traditions I have found some other great traditions that you can start with your family. Check them out below.
Written by Mel Smith What is your Christmas tradition? Christmas is a time of togetherness, family, joy and we can’t forget the presents. But amongst all of that lie traditions. The word tradition means "something that is handed down." So whether its baking cookies, decorating the tree or making holiday crafts, remember that the traditions you create for your family should be truly special so that your children will want to share them with their own families one day. Starting new traditions can really unite a family. We have TONS of Christmas traditions in our family; some that were started back with my grandparents and parents, and quite a few my husband and I have created with our own children. Ask your children for their ideas too. Remember, you'll need to be sure everyone is on board because if only one of you wants to do it, the tradition won't be enjoyed much less continued. So try something this year and if everyone enjoys it, repeat it next year. Before you know it, you'll have a newfound family tradition.
1 Santa Photo A yearly photo of your kids with the man in the red suit is not only a special Christmas tradition, it’s also a snapshot of your little darlings in time - their first Christmas, the toddler stage, the year they first started school etc - and these are the photos you’ll treasure forever.

Christmas Lights Visit the Christmas lights around the neighbourhood. You can find a list of houses with lights every year on the internet. 23
3 Christmas Carols Christmas carols were also a big Christmas tradition of my childhood. You can make them a part of your Kids' too by putting on some Christmas music for a sing along at home. Who cares if it's the Wiggles singing "Here comes Santa Claus", it might not be carolling in the traditional sense, but your kids will sure have fun.
4 Make magic reindeer food Guide Rudolph and his team of reindeer to your house on Christmas Eve. Sprinkle some Magic reindeer food outside and recite the special poem that makes sure all good children get their annual visit from Santa. This mix of porridge oats and edible glitter will glimmer in the dark while little ones snuggle down in bed (hopefully!) hoping to hear the distant jingle of sleigh bells in the night sky.
5 Cookies and Milk Give Santa a pick me up in between delivering presents to every child in the world by leaving him cookies and milk. He always runs out of time to finish them but really appreciates the thought and will put a big tick next to your name on the ‘nice’ list.
