From MeSee As I write this, I’m staring out my front door into a snowy abyss. My kitchen table is covered in board games, Lego pieces, and food crumbs. After 5 snow days in a row, I’ll snap if I hear the words “I’M BORED” one more time. The last few days of blizzards, power outages, and limited travel have really put our patience to the test. Scrolling through social media and listening to my fellow parents’ stories of survival have kept me entertained and reminded me that we’re all in this together. Parenting is HARD and there is no truer test than being locked in your house with any amount of kids without heat, power, cable, or Internet. But we made it! Now, as you read this, I hope you’re enjoying warmer temperatures and relishing in the fact that spring is here! In this issue of MeSee, we’re getting to know parents and preparing for the summer months ahead. I had the chance to learn about ESU for Kids, which is an awesome summer program, and I have Spruce Lake’s Open House marked on my calendar. The issue contains spring recipes and crafts, a playground roundup, and other great local items. You won’t want to miss the Greater Pocono Kids Expo being held at Camelback Resort on April 28th. This is a perfect opportunity to learn more about all the local businesses in our area that support parents and kids. You can find extra curricular activities, like dance studios and karate instruction. Learn about the camps and summer programs in our area. I grew up in the Lehigh Valley and still currently reside there. I attended Drexel University in Philadelphia and completed my Dietetic Internship with Sodexo Health Care Services, spending the majority of my intern year at St. Luke’s Hospital in Bethlehem. I have been the Retail Dietitian at Kinsley’s ShopRite since December 2014. I am a Registered Dietitian, Licensed Dietitian-Nutritionist for the state of Pennsylvania. At ShopRite, I also help coordinate our Annual Golf Invitation, and all of our fundraising efforts, to benefit the ShopRite Partners in Caring Foundation to help fight

I feel that most people are not aware of how much an unbalanced diet negatively affects them, until they start living a healthier lifestyle. I have many shoppers tell me they feel more energized after starting a more balanced diet,

Yes, this free service is available to anyone. Individualized nutrition counseling depends all on what each person wants out of a session. Some people like to walk the aisles and want my input on specific products, while others need more detailed information about a new
In the store I help run monthly Culinary Workshops alongside a Chef, as well as a free monthly Kids Cooking Class. I also host other in-store food demonstrations, either with a new product or a healthy recipe that I want to share. I often hold nutrition classes for small groups (such as Boy Scouts, Girl Scouts, special needs groups, or homeschooled classes). In the community I have been visiting some weight loss groups and Anytime Fitness on a monthly basis, as well as hosting Field

For example, you may not know where to start if you have high blood pressure and want to lower your salt intake, or if you are newly diabetic and need some guidance on carbohydrates and sugar. I always like to start the session by getting some background information so I can make the best recommendations possible. Almost nothing is free anymore, so, as you can imagine, my schedule fills up pretty quickly! I recommend calling to make an appointment.

Are people able to contact you with general diet-related questions and concerns?
Absolutely! Some shoppers like to knock on my office door, but I can also be contacted over the phone or by email. I am always available to answer a general diet-related question or concern. However, if I receive a call from someone asking what foods are safe for diabetics, then it would be safe to say an appointment with me would work better. I can then give a more in-depth explanation. With nutrition, there is often not just a “yes” or “no” answer.

Are you able to help parents come up with creative ways to get their children to make better food choices?
I do like to help parents encourage their children to make better food choices, because

healthy eating is a lifelong habit that they should start to develop early. The funniest thing is when a child in my cooking class will try a new food that they previously refused to try at home – it is a pure look of shock for parents, but sometimes a new environment or a different person asking them to try something new is all it takes. I also recommend including kids in cooking at home or helping with grocery shopping. Ask for their

My services are FREE*! Store tours, community presentations, nutrition classes – you name it and we can do it! From pre-school and kindergarten age to high school and senior citizen groups. Also, if a child does not like a vegetable, like carrots for example, we show that there are multiple ways to eat carrots. Have your child try carrots raw plain, raw in a dip, boiled, roasted, shredded, cooked in a soup, etc. There are many ways to expose children to those flavors so they will continue to be more accepting of those vegetables in the future. Yes, I am! Monthly, I visit Anytime Fitness in Brodheadsville and multiple weight loss groups at the library and local churches. I have gone out in the community to speak with senior groups, teach HeadStart classrooms, hold informational tables at health fairs, and more!
What is your favorite piece of healthy eating advice?
I am a strong believer in “everything in moderation” and that you can fit any food into a healthy lifestyle. My favorite food is...drum roll please...macaroni and cheese. I would never give it up, but I have found ways to make it lighter and use small portions to include it in my diet. The biggest misconception is that you need to give up every food you like and only eat salads for the rest of your life. I want everyone to know that is not true! If you have an open mind and simply lighten-up a few of your favorite meals, then anything is possible.

The ‘rock and wave’ is a rocker which is designed for wheelchair access and seating for the respective caregiver. The ‘turn across’ is an element which provide upper-body strength conditioning as they use a hand peddler to move a platform back and forth. The ‘parallel play’ aspect will allow for side-by-side play

“This project is near and dear to our company’s core values of integrity, respect, growth and community,” said Pocono Raceway CEO and Mattioli Foundation Director, Nick Igdalsky. “People who have known about the project prior to today’s announcement have asked us, ‘Why an inclusive playground?’ Our response was ‘Why not?’ We chose to build and open a playground for kids of all ability levels.” The playground is scheduled to be open to the public prior to the June NASCAR race weekend. TIPS FOR A CHOCO-LOT FUN @

After more trips to Hersheypark than I can count, I’ve learned a bit along the way. I'm about to impart some of that hard-earned wisdom to you. Don’t worry, I’m going to try my best to stay away from the worn-out tips like “start at the back of the park” or “get there early”. Wait, I lied. I’m going to start with “get there early”. It’s actually the most important tip which will save you time and get you in the seat of more rides, more often. That’s just the beginning of your day. Shortcuts, discounts, and recommendations will follow.

Get there early. This goes for pretty much every amusement park and many other popular places that get crowded. Someone once told me that on a busy day at an amusement park, for every minute you get there after the gates open, you’ll spend an additional five minutes waiting in line. Using that theory, arriving 30 minutes after opening would equal an extra two and a half hours in line during your day. Wow!
Take the secret shortcut. This “secret” path is actually on the park map, though it seems hidden and infrequently used. Taking this path can save a bunch of time and avoids a couple of those Hersheypark hills (aka my summer cardio workout). After entering through the front gate, hang a right at the stroller rental. You’ll be rewarded by a beautiful view of Spring Creek and Skyrush. This path is essential at park opening, as you quickly part from the crowd walking to Founder’s Way and arrive in The Hollow by Skyrush and sooperdooperLooper much faster.
Avoid the lines. Some rides seem to rarely have wait times, so save them to ride when the park is busy. First and foremost, Lightning Racer. A great roller coaster, but high capacity (two trains run at the same time!) and at the back of the park. Ride this coaster when the queues for the others are long. More rides that don’t have a line unless the park is swamped: Kissing Tower, pretty much any kiddie ride, Reese’s Xtreme Cup Challenge, and the monorail. In contrast, these rides usually have a wait: Fahrenheit, Laff Trakk,
Use the Mobile App. Not only are the ride wait times listed and updated frequently, but you can also set alerts through the app for when wait times go under a certain threshold. The app also has a list of rides filtered by height category, park and Chocolate World hours, and a list of any rides that may be closed on that particular day.
Comet, The Claw, and Great Bear. If you see these queues empty or the app (see the next tip) has a short wait time listed for one of these, head there, quickly!
Get to the Boardwalk early. If you’re planning to go to the Boardwalk (water park) on a hot day, go there first. In previous years, I’ve found that the water ride lines tend to be much shorter or nonexistent during the first hour or two of the day. Note that Hersheypark’s two new attractions for the 2018 season are water

Consider purchasing a dining or drink program. If you’re a season passholder, you can add a one-time fee dining plan to your pass and use it during the entire summer season for two meals a day. If you’re a once-a-year visitor, an allday dining or drink deal may save you money.
Pick the best day to go. As far as I know, crowd prediction calendars like there are for Disney, do not exist for Hersheypark. So, with no official data to support this, here are your best bets for lower crowds: choose cloudy days over sunny days, watch the Hersheypark Stadium and Giant Center schedules for events which can increase attendance. Sundays are better than Saturdays, though the middle of the week is the best time to go. May and June are great months to visit, however kids’ field trips will be in full swing. If you’re not tied to a school schedule, the best bet is the last week or so in August, after schools start for

Ojo de Dios (God's Eye)
Commonly found in Mexican culture, the Ojos de Dios is thought by some believers to have the power to see and understand things unknown to the physical eye. Today, artisans weave complicated versions for decoration or kids can do them for simple crafting. Supplies:
• Popsicle Sticks • Yarn in assorted colors • Scissors

Cut a long piece of yarn for the center of your

a cross and place the end of the yarn under your thumb.

then again around the other two sticks to form an X. After securing the popsicle sticks, begin to wrap

I’ll admit, I was a little nervous about trying Algerian food, but I’m sure glad I did! What I didn’t know is that Algerian food is a fusion between North African and French cuisines, and, most importantly, is always fresh and incredibly tasty. Lamb and chicken dishes, enhanced with spices like coriander and cumin, are popular among Algerians, along with breads with butter and homemade jams. (Carb lovers, rejoice!) I’m now totally hooked on the Grilled Chicken & Chimichurri Sandwich. Keep in mind, I had no idea what chimichurri sauce was before I tried this sandwich. (How embarrassing, because it’s ridiculously good!) And let’s not forget about the
