From MeSee By the time you read this it will be October. The kids will be into the swing of school, and we’ll all be back on track with our various schedules. Schedules can be hard, and they can make us all feel like we’re spinning our wheels. But not today! Today, as I write this, ALL of my kids are in school for the first time this year! I’m sitting here in peace, able to carry a single thought from my brain to the computer. It feels amazing. So when you’re reading this, think back to that first day of school when you regained that very small sliver of freedom. Maybe your kids are too young to head off to school, or maybe they are too old for your to truly appreciate this phenomenon - whatever the case, enjoy every ounce of freedom you get today, because you certainly deserve it! I think I have said this before, and it’s likely an unfavorable opinion, but why do we all look forward to summer so much? Fall is the BEST! There’s so much to do and see during the next few months, and I’m excited to get out with my family and enjoy. Get ready, because we’re bringing you all the fall fun! In this issue, you’ll learn about some amazing restaurants in our area that are great spots to take your entire family. You’ll find features on Pocono Soaps, the Pocono Indian Museum, The Stourbridge Line, Country Junction’s fall festivities, and more. We’ll also round up all the pumpkin picking, apple gathering, Halloween scaring fun. Be sure to check out our delicious, seasonal treats and goodies - all things you can whip up at home. As always, we love to hear from you! Share your stories and ideas, pictures of your family, and more. You can find us on Facebook, or email us anytime at info@meseemag.com. We know that moms and dads have all the secrets and know all the tricks to entertaining kids, so tell us what we need to know. We hope you enjoy this issue as much as we’ve enjoyed putting it together. Thanks for reading and being part of our MeSee community.

ALL ABOARD! By Allison Mowatt
The Stourbridge Line train excursions in the historic town of Honesdale are fun for the entire family. This fall, ride the rails and take in the scenic foliage along the Lackawaxen river and through the woods as many tree species pop with bright, vibrant colors. There are a wide variety of different rides to choose from, with some ongoing through the autumn.

MeSee Magazine • 15
The train’s history is interesting, the town is unique, and people young and young-at-heart will enjoy their Stourbridge Line train experience. I spoke with Excursion Manager Tim Wright about what makes this a must see attraction, how it all started, and what people can expect.
How have the Stourbridge Line rail excursions grown over the years? TW: The Stourbridge Line has grown tremendously, especially since we re-opened the railroad on May 9th, 2015. We’ve added newly restored coaches and several events. One recent event that was very popular was our weekly Ice Cream Express. We teamed up with a local dairy farm whose farmers make homemade ice cream.
What do children and adults love about it? TW: Children love the train itself. It seems most children are fascinated by trains (I know I was). I enjoy seeing the kids’ faces light up when we come into the station and blow the whistle. I think adults like how peaceful the ride is along the Lackawaxen River. Our vintage coaches have been lovingly restored to give a comfortable and relaxing ride.
What makes the Stourbridge Line unique? TW: Definitely our history. Honesdale is the birthplace of the American Railroad and the first commercial steam locomotive to run on rails in the western hemisphere. What better way to celebrate our transportation history than by taking a ride on the train?
What are some of the favorite excursions? TW: There are several that seem to be very popular. Our Santa Express is a great family tradition during the holiday season along with other event trains, such as the Lackawaxen Firecracker. With this, we take the train to Lackawaxen for the fire department field day and fireworks show. Then, we come back to Hawley and Honesdale in the dark. Other widely attended excursions are the Pocono Express and the Glen Eyre Limited.
What can people expect from an excursion on the Stourbridge Line? TW: A relaxing ride in clean, restored vintage coaches, friendly staff, and a great family experience.
What is new this fall? TW: We’ve added the Pumpkin Patch Express. *For more details, see below. 16 • MeSee Magazine

A LOCAL SPOT FOR FRESHLY UNIQUE PARTIES AND GIFTS.
I
t’s no surprise that when you step through the doors of Pocono Soap you’re immediately welcomed with
the most warm, refreshing scents to ever tickle your nose. Not only will you wish your home smelled half as inviting as this perfectly arranged shop, but your body and clothing as well. From handcrafted bath and body products, essential oils, natural oils and butters for soap making, and an assortment of other home/body care items, you’ll want to soak yourself in your favorite scents. And while the delicious scents might draw you in, the gifts, crafts, jewelry, and other thoughtful items will keep you coming back for more. Since August 2014, mother/daughter duo Lisa Diemer and Amanda Beam have worked to fill their store with a large selection of awesomely unique products and gifts while simultaneously offering DIY classes and coordinating parties of all kind. It’s hard to believe that it all began with the perfect honey lip balm. As beekeepers, Lisa and Amanda were always dreaming up fun things to do with the honey that their hives produced. After crafting their signature honey lip balm recipe, they began to sell it at their bakery, Kitchen Chemistry, where the lip balm grew in popularity. It didn’t take long for their lip balm to start selling out, inspiring them to experiment with new flavors and start expanding their offering of products. It was then that Pocono Soap was born, right off of Main Street in Stroudsburg.

Homegrown honey is just one of the natural ingredients used in many of the Pocono Soap goods. All-natural soaps, lotions, and body scrubs are available in a wide variety of scents, including classics like lavender and vanilla. You can also find some truly unique scents, like Adventurer Soap, Beach Soap, Barber Shoppe Soap, Flannel Sheet Soap, Volcano Soap…even Monkey Farts Soap (the preferred scent of all kids). The famous honey lip balm is available in a number of flavors and in the form of lotion bars, bath bombs. Body and home sprays are available in this amazing scent as well. In addition to their homemade items, you can find plenty of unique and thoughtful gifts from local and international crafters, like comical signs for your home, soy candles, jewelry, and seasonal favorites like scarves, totes, and fall decor. Interested in learning how to make some of Pocono Soap’s awesome products yourself? Most weekends you can join them in their classroom to learn about topics like lip balm tin making, cold process soap making, advanced soap making, body spray and body scrub making, and more. In each of these classes you’ll learn to make a product and will get to take the final product home with you to enjoy! For a complete list of classes and other upcoming events, visit the Pocono Soap Facebook page or call for the schedule. Not only are the classes informative, they’re also lots of fun!

Looking for a unique birthday party or celebration? No matter what the age, parties at Pocono Soap are always a memorable experience. MeSee had the opportunity to have a bath bomb making party of our own for six lucky kids. The kids were fully engaged and enjoyed picking their delicious smells (Monkey Farts, of course), mixing their ingredients, and selecting their bath bomb shapes. The bombs didn’t last very long; tubs were drawn as soon as the kids got home and they jumped into their brightly colored, Monkey Fart smelling tubs! Bath bomb parties aren’t the only parties available. Interested in body scrubs or soaps? Whatever your preference, Pocono Soap can accommodate any group. There are so many smells and sights to experience at Pocono Soap, so stop in to see (and smell) for yourself. Whether you’re looking for the perfect gift for a friend or family member, some new products to add to your beauty regime, or are interested in an upcoming class, just follow the amazing aroma to Pocono Soap, located right off of Main Street in Stroudsburg.

the quality of life for veterans, military, and their families. The organization acts as an advocate for veterans, educates citizens, mentors youth, and promotes patriotism, good citizenship, peace, and security. On November 10th, the ALA celebrates a remarkable 100 years of service. The ALA was established to help widows and orphans who suffered loss. Today, many service members survive their war injuries but must face living with new challenges. The ALA strives to help these individuals. Because of the ALA,
Women veterans are a fast-growing demographic serving in the U.S. military, and they are six-times more likely to die by suicide than non-servicewomen. To help combat these issues, the American Legion Auxiliary National Executive Committee passed a resolution in 2018 to partner with U.S. VETS for the Women Vets on Point project. The goal of the project is to bridge the gap in effective care and support for women veterans.

Employment of Veterans and Military Spouses Employment is among the many key areas in which the American Legion Auxiliary and the American Legion try to help military heroes and their families. The nation’s veterans and service members often experience difficulty finding jobs in the civilian world — and so do many of their spouses. According to Blue Star Families and Military Officers Association, the military spouse unemployment rates range from 20% to 25%. Under-employment rates may be as high as 35% to 40% among military spouses. The American Legion Auxiliary is in the early stages of creating an employment toolkit. This toolkit will assist American Legion Auxiliary units in creating local job fairs and providing employment resources in communities.
American Legion Auxiliary Girls State & A L A Girls Nation American Legion Auxiliary Girls State is among the most respected and selective educational programs of government instruction for U.S. high school students. The Girls State program is a fictional, self-governing state where young women elect their own leaders, write bills for debate, and run a legislative session. In the process, these leaders meet with State Representatives and Senators. The American Legion Auxiliary Hoosier Girls State is June 23-29, 2019 at Trine University. Following American Legion Auxiliary Girls State programs, two girls are selected from each state to advance to the national program. American Legion Auxiliary Girls Nation is a weeklong event in Washington, D.C. that gives participants a firsthand experience of how the federal government works. Each participant is called a senator. While in D.C., the senators visit Capitol Hill and meet with their state Senators and Representatives. More: www.ALAforVeterans.org/ALA-Girls-State

extracurricular activities, making healthy food choices is essential to keep everyone energized and engaged. When it comes to selecting snacks and preparing meals, keep it simple and stock up on foods that are easy to prep and can be used in more than one way. One such food: fresh California grapes, which are abundant throughout the fall and into January. Crisp, juicy grapes can be eaten nearly anytime and anywhere, including school, the office and during afterschool activities, at home or away. Whether eaten fresh or frozen for a cool treat, grapes are a healthy, hydrating alternative to highly processed and calorie-rich foods. They can also be used as an ingredient in easy weeknight meals like California-Style Pizza, cousin to Hawaiian pizza, where fresh grapes star instead of pineapple and prepared pizza dough gives the cook a head start. Frozen Yogurt-Dipped Grapes are an easy, fun snack or dessert that kids can help prepare.

60 California grapes, any color, rinsed and patted dry 3/4 cup 2% vanilla Greek yogurt 1/2 cup graham cracker flour or almond flour

Dip each grape into yogurt, coating two-thirds of grape, then dip yogurt-covered grape into desired flour to coat bottom. Place each dipped grape on baking dish; repeat until all grapes are yogurt-covered and dipped in flour. Freeze at least two hours, or until grapes are frozen solid.

hen it comes to Halloween, carving the same pumpkin designs each year can become routine. This year, save a
pumpkin and carve your spooky masterpiece into a watermelon instead. Nutrient-rich watermelon can be a healthy alternative to other sweet treats full of added sugar during Halloween festivities as it's a source of vitamins A and C as well as the antioxidant lycopene and the amino acid citrulline. Because they are made up of 92% water, watermelons can be an effective way to stay hydrated during trick-or-treating, and creations like a Mummy or Jack O'Melon can help satisfy

sweet cravings while keeping friends and family members frightfully delighted. To get started, consider these carving tips and tricks:
• To make cutting and slicing easier, the
watermelon should be at room temperate when carving.
• Cut a small, thin, flat piece from the bottom
of the watermelon to provide a stable base for carving.
• Draw the design on the watermelon rind with
a dry-erase marker before cutting. If you make a mistake, this can make it easier to wipe off.
• Use a sharp knife with a pointed tip for
easier, cleaner cuts. Consider a paring knife with a smaller tip for ease of detail.
•
Blend scraps of watermelon that are too
messy for dicing or slicing to create an easy juice. For more watermelon carving ideas, visit watermelon.org.
DIRECTIONS: Wash watermelon under cool running water and pat dry. On cutting board, place watermelon on its side and use kitchen knife to cut off 1/4-1/2-inch of rind from bottom to provide sturdy base, being careful not to cut too deep into white part of rind. Cut 1-2 inches from stem end to create opening for bowl to be added. Using dry-erase marker, draw eyes, nose and mouth, along with wavy slits around carving. Use paring knife to cut them out, being sure to cut through to red flesh to let more light flow through. Use melon baller to hollow out inside of watermelon. Reserve watermelon balls. Use scoop to remove remaining watermelon. Using vegetable peeler, remove green skin off outside of watermelon, similar to peeling cucumber. Wrap thin strips cheesecloth or gauze around mummy carving and secure with straight pin, if needed. Place battery-operated candle or light inside carving and fit small bowl into top of carving. Trim away excess rind to make bowl fit securely. Fill bowl with melon balls. Attach candy eyes or blueberries using a toothpicks, pins or glue.
