In Seminole Heights, Noel Cruz and his team have taken Ramen to a whole new level at Ichicoro and in downtown St. Petersburg, Managing Partner Ted Dorsey and Jason Griffin opened The Mill last year. In Behind the Bar, Dean Hurst, Director of Spirits for Bern’s Steak House & Haven, tells of his passion for spirits and love of the tiki culture. Hurst even has a tiki bar in his backyard, along with a recipe for a great spring tiki cocktail. Changing South Tampa One Sweet Bite At A Time By Ronda M. Parag

10

April|May 2016

Patrick Ruddell and his wife, Zezura, have created a frenzy of sweet lovers in a small strip center across from Plant High School in South Tampa. On weekends, the line extends out the door and a wait up to 45 minutes for the custom-flavored mini-doughnuts. Opening only four months ago, the Ruddell’s latest business venture has been a sweet success. So far, Patrick estimates they have sold over a quarter million mini doughnuts and goes through over 100’s of pounds of toppings per week. During the week, the hot, made-to-order mini’s are vanilla flavored, but on weekends there is more staff to have additional seasonal flavors and chocolate doughnuts. Creating the made-to-order mini doughnuts requires customers to wait, and they most certainly don’t seem to mind. Many of the toppings mimic ice cream flavors including sprinkles, candy pop rocks, peanut butter cups and more. Ordering is an easy 4 step process, step 1 select the cake doughnut, step 2 select the icing or coating, step 3 select the creative toppings and step 4 select a yummy drizzle. Currently there are 16

www.TampaBayMetro.com

Favorite Combos, but creativity and originality are encouraged for endless options. Patrick’s favorite is a customized Peanut Butter Cup with a vanilla cake doughnut with peanut butter icing, peanut butter cups and Reese’s drizzle, however, the number one seller is Sweet Pig — a vanilla cake doughnut with maple icing and bacon. Patrick says they go through roughly between 100 lbs of bacon per week. Serial entrepreneurs, the Ruddells opened Mini Doughnut Factory to teach their children how to operate a business. Daughter, Aryanna, 12, works at honing her customer service, sales and decorating skills and son Jordyn, 14, is learning about the baking and business operations. “We’ve never worked so hard, but had so much fun,” said Patrick and Zezura.

There is still time to visit the Museum of Fine Arts’ exhibition Contemplating Character: Portrait Drawings & Oil Sketches from Jacques-Louis David to Lucian Freud, that will be on display at the museum through May 29, 2016. The exhibition features 152 rare portrait drawings and oil sketches from the late eighteenth into the twenty-first century, drawn from the remarkable collection of Robert Flynn Johnson. Lucian Freud, one of our time’s most provocative portrait painters and the grandson of the pioneering psychoanalyst Sigmund Freud, once noted: “I’ve always wanted to create drama in my pictures, which is why I paint people. It’s people who have brought drama to pictures from the beginning. The simplest human gestures tell stories.” In addition to David and Freud, other works by selected such artists include: Théodore Rousseau, Edgar Degas, Édouard Vuillard, Pierre Bonnard, Elie Nadelman, Frank Stella, and George Bellows. Four drawings are by Adolf von Menzel, whose name may be unfamiliar to many Americans. He was one of Germany’s most admired artists working in the nineteenth century. Degas called him “the greatest living master.” There are two portraits of Jacques-Louis David, one while he was in prison. A supporter of the French Revolution, David was imprisoned after the fall of Robespierre and later found favor with Napoleon. There are others of the English Romantic poet-artist William Blake, American author Washington Irving, influential British critic-artist John Ruskin, French symbolist Odilon Redon, and the great American realist Thomas Eakins in silhouette. The exhibition has many other gems, including a miniature portrait of George Washington (around 1795), by an anonymous artist and Bonnard’s Crying Woman (about 1890-1895), created in a flowing, seemingly spontaneous line. Contemplating Character was organized by Robert Flynn Johnson with Landau Traveling Exhibitions, Los Angeles, California, in association with Denenberg Fine Arts, West Hollywood, California.

Hillel Academy’s Gift of Gold 2016 More than 225 people gathered at The Ritz Ybor to enjoy an evening of socializing, dining and shopping, at an over-sized silent auction with an event theme of the Roaring Twenties, to benefit Hillel Academy. Mobile bidding was used by the silent auction shoppers for the first time; it added elements of ease and fun to the shopping and bidding. Hillel Academy parents Carolyn Fink and Bonnie Amsterdam-Miele were the event chairs. Both serve on the school’s Board of Trustees. Most guests chose to dress in flapper dresses and headbands and newsboy hats, fedoras and vests, although many came to the event donned in cocktail attire. The décor in the Ritz Ybor mimicked an old time speakeasy. Tables were bedecked with black, red, silver and pearl centerpieces on black table cloths with black and white seat covers on the chairs. This year’s honorees, Rabbi Richard Birmholz and Nat and Debbie Doliner, are not only important to the Hillel Academy family, but very important people in the Jewish community. Their recognition by Hillel brought many people to the event. Neal Honeycutt, Board President, thanked the event attendees and offered his congratulations to the honorees.

Charity Polo Classic When: Saturday, February 27, 2016 Where: Di Polo Tour, Plant City Presented by the Morgan Auto Group, this year’s Charity Polo Classic benefitted four important charities: The Children’s Cancer Center, Big Brothers Big Sisters of Tampa Bay, Hands Across the Bay and Helping Hand Fund. Over the past four years, this sold out event — over 900 guests this year — has helped to raise over $350,000. The sport of polo offers a great combination of strategy, speed and endurance, along with plenty of incredible athletes — both human and equine. This unique combination of exciting elements makes polo a great game for spectators. From the worldly to the wealthy enclaves, polo has quickly gained popularity in the US leaving people flocking to their local polo clubs to watch this ancient game come to life in the modern world. Guests enjoyed a beautiful day on the fields with specialty cocktails, food samplings from various Bay area restaurants, and live music by Thanecha, Statler & The Waldorfs, and Gloria West & The Gents. During half time, guests took part in the time honored tradition of the stomping of the divots. Four polo matches were played, along with winners of the Best Hat and Sharpest Dressed Man. Silent auctions and 50/50 raffle winners were announced, as well as a presentation of an MVP Award and Best Playing Pony Award. Tampa Bay METRO was a proud sponsor. Photography: Dennis Akers

True Colors Tampa Resident Reveals True Colors in Newly Designed L.A. Townhouse By Mary Lou Janson

B

right, bold and a bit unconventional. What describes a newly decorated, vibrantly designed, Los Angeles townhouse owned by a prominent Tampa family, applies to more than just the stylish space; it’s also an apt description of homeowner Candy DeBartolo, who collaborated with Tampa Bay design professional Enrique Crespo, to furnish and finish rooms to reflect her fashion sense, fearlessness and individuality. Moving from a cozy L.A. condo that formerly served as Candy’s home-awayfrom-her-Tampa-home, to the larger, three-level townhouse, offered lots of opportunities to add her signature flair throughout the living and dining areas, outdoor patio, third floor bedrooms and three-and-a-half bathrooms.

TBM_AM16(40-49)4_HOME.qxp_Home 4/11/16 2:59 PM Page 41

TBM_AM16(40-49)4_HOME.qxp_Home 4/11/16 3:00 PM Page 42

“I just wanted this to be different from my house in Tampa,” DeBartolo said. “I wanted a space to call my own. I have great friends out there and I want them to enjoy my surroundings. I love it in L.A. and so do my daughters. It’s such a different experience there. I love people watching. I love the fashions, the restaurants, the shopping, the weather and I love the people.” That point-of-view, and some of the dwelling’s accompanying views, are apparently shared by her neighbors that include Candy Spelling, Paula Abdul and Ralph Lauren’s nephew. Hoping to entertain guests at the new address by the first of this year, Candy knew just who to call to fast track making her home move-in ready. Crespo, principal at the Tampa-based Crespo DesignGroup, impressed Candy with the inspired ideas he introduced to the South Tampa homes of her daughters, Nikki DeBartolo and Lisa DeBartolo Miggs, as well as, areas of her own Tampa residence.

Another family-owned property, a new Carrollwood restaurant named Sacred Pepper, has also been entrusted to Crespo’s eye for design. “Enrique is such a master of space,” Candy said referring to her L.A. home. “We have some curved walls, but he found a wonderful curved couch. It all just works. I think we complement each other’s tastes. Enrique is so fun to work with. We had lots of laughs together. And we are both on the same page. That makes for a very fun time.” What began with a flurry of fabric, color and wallpaper selections at the Pacific Design Center in West Hollywood last July, continued with monthly meetings and shopping trips in California and finally wound down when Crespo spent all of December getting everything placed, painted and papered. “I absolutely want to entertain here,” said DeBartolo. “My friends and I just love chilling and talking. This space is a place to accomplish that and have fun.” The open floor plan creates a light and airy environment on the main living level that flows to an outdoor area, accessed by floor-to-ceiling glass sliding doors. Furniture is free of the confines and constrictions of walls. Vivid colors and various prints co-exist in harmony. “This is how I dress. I never dress safe,” said DeBartolo about her non-traditional tastes. “I don’t follow all the rules. I have short platinum hair and love beautiful clothes. I don’t like looking like everyone else.”

TBM_AM16(40-49)4_HOME.qxp_Home 4/11/16 3:03 PM Page 46

A woven silk floor rug boasting whimsical swirls, colors similar to paint splatters, creates a welcome focal point on the wooden floor. A bright pink portrait of Marilyn Monroe coated in diamond dust sparkles and shimmers. The long, narrow upstairs hallway is buffered by a runner made from an Indian sari. Handblown mercury glass plates wall-mounted at the top of the stairs add depth, dimension and drama. “I love wallpaper and try to always use it in my designs,” said Crespo. “People still think of wallpaper as the dated floral you might find at your grandmother’s house. Wall coverings have come a long way. I feel they add another layer of texture to the space you can not achieve with painting. The paper in the guest room is silk, the paper in Candy’s office (aqua colored room) is murano glass beads and the paper in her master bath portrays falling flowers (peonies).” A mother of three and wife of commercial real estate developer, and former owner of the San Francisco 49ers NFL team, Edward DeBartolo Jr., Candy admits to an affinity for cosmopolitan destinations. “My husband loves Montana and he’ll spend months there,” said DeBartolo. “It’s not enough for me. I am not very outdoorsy. I spend maybe a month per year in Montana. I need more stimulation!” M

“Jake and I are working with artists to infuse the Tampa scene with muralists from around the world. This movement takes buildings and makes them prettier,” said Cassie Greatens. “The process involves more than finding an ideal site and surface. The accomplished artist selected to paint that space has to have a suitable vision and voice to ensure their work is timeless and everlasting,” she explained. Tristan Eaton was commissioned to create a mural commemorating the 60-year anniversary of Bern’s Steak House. Among Eaton’s achievements are a permanent collection at the New York

Museum of Modern Art and a growing list of global destinations hosting his murals. “Tristan takes street murals to another level,” said Cassie. “Bern’s wall is a prime wall. The mural tells a story about an iconic family in Tampa who has helped to put Tampa on the map. It was the best wall for Tristan.” Murals, not to be confused with graffiti, are becoming a popular platform for renowned, professional artists whose works are coveted by private collectors and featured at world class museums. John Collins, executive director of the St. Petersburg Arts Alliance,

has an increase in businesses interested in partnering with artists for this year’s SHINE event, as well as inquiries about muralists. The arts alliance web site now includes a dedicated directory of muralists. The listing includes local artists instrumental in organizing SHINE, Tes One, Bask and Pale Horse, among others. “We now have 50 murals in St. Petersburg and that number is growing,” Collins said. “What we hope happens with the mural movement is that we find ways for local and international artists to collaborate. What we see happening is that neighborhoods where there are murals, take more pride in their communities.”

Among the esteemed artists featured at the 2015 SHINE festival were: • Michael Vasquez, a St. Petersburg native, now based in Miami, whose works have been shown in galleries around the world, including a recent exhibit at the Smithsonian National Portrait Gallery in Washington, D.C. • 123Klan, a French graffiti crew who have dominated the street art scene for more than 20 years. Now living in Montreal, Canada, the husband and wife known for bold character design and iconography, have attracted clients such as Sony to Scion to KidRobot. • Ya La’Ford is a professor, visual painter, installation artist and muralist with an MFA from The Art Institute of Boston and a Juris Doctor law degree from the University of Florida. With studios in Tampa Bay and New York, her work can be seen across the country from the Boston Public Library to the Dr. Carter G. A Legendary Getaway Wisconsin’s Elkhart Lake | By Patricia A. Vorbrich

ocated in the beautifully, glacially formed hills of Wisconsin’s Kettle Moraine area, Elkhart Lake is a 286 acre, 120 foot deep lake. Just 2 1/2 hours north of Chicago, and an hour north of Milwaukee, this charming village of 2 B&Bs and 3 distinctive resorts, welcomes visitors from around the country and the world with its warmth, natural beauty and hospitality. Elkhart Lake has grown from a summer resort town to a year round destination for couples, families, businesses, groups and wedding parties. There’s plenty to explore in this quaint town, and easy choices for accommodations with 2 B&Bs: Christi’s Inn and the Jay Lee Inn, and 3 beautiful resorts: The Osthoff Resort, The Siebkens Resort and the Victorian Village Resort. The Osthoff Resort was named in Travel & Leisure’s 500 World’s Best Hotels. With 245 spacious suites, each with a kitchenette, dining, living room, fireplace and private balcony, the accommodations provide plenty of room to feel right at home. The Osthoff is also home to two lakeside restaurants, Otto’s

All About the Spirits Dean Hurst, Director of Spirits for Bern’s Steak House & Haven By Ronda M. Parag

R

ecently celebrating his 16 year anniversary with Bern’s, Dean Hurst, while never actually tending bar, is responsible for ordering all the spirits and training the bartenders. Hurst has a deep appreciation for the bartenders skill set, while creating a niche within the industry as a Spirits Specialist. Hurst served as the General Manager at SideBern’s, (now Haven) for over 10 years and developed an ability to create cocktails. “I got pretty good at developing craft cocktails,” said Hurst. Now he spends lots of time talking with bartenders to improve the quality of cocktails. “Many bartenders are great at replicating recipes, but actually developing signature cocktails can be daunting,” adds Hurst. He uses the analogy of cook vs. chef. A cook can execute, but a chef drives the creativity of the menu and the kitchen. In addition, Hurst is involved in spirits acquisition, helping new spirits gain

access to the booming Florida market. Hurst’s spirit of choice is whiskey and Haven has one of the largest selections around with 570 whiskey selections available. “It’s not about the brand so much, I’m not a whiskey snob, I like a balance of flavors and the whiskey shouldn’t burn,” said Hurst. “A particular favorite is a locally made whiskey from Weeki Wachee – Wild Buck.” Deeply committed to his craft, Hurst has been involved for four years with Tales of the Cocktail® and the Cocktail Appreciation Program, mentoring young talent. Tales of the Cocktail is an annual cocktail festival event that is held in New Orleans with seminars, tastings, competitions, networking and other events that bring out the industries best and brightest. Hurst bears a tattoo that signifies his involvement with a Kappa symbol in the center of a pineapple and stars for each year. Pineapple is the ultimate symbol of

hospitality. Hurst has also been heavily involved in Hukilau held in Ft. Lauderdale, June 8 - 12, 2016, to celebrate the Tiki Culture. This year, Hukilau celebrates the 15th Anniversary with many activities including hula lessons, craft cocktail presentations, Polynesian and fire knife dances and more, drawing over 1,500 attendees. M

In true cocktail fashion, Hurst created a signature cocktail, “Stolen Idol.” 1½ oz ¼ oz ½ oz ¼ oz ¾ oz ¾ oz 8 drops

1. Combine Ingredients and shake with ice 2. Strain into a Hurricane style glass and top with crushed ice (used shaker ice will do) 3. Garnish with an orange slice dusted with fresh grated nutmeg (cocoa nibs were nice, too) Notes: It was a cool, rainy night at a retro spot on the beach. I was making drinks for a small group of Tiki fans with the ‘Bum.’ A mutual friend challenges me to create a drink named after his band, Stolen Idols. I said, “only if you write a song called Jet Pilots in the rain.” I’m still waiting.

Hurst won’t be in attendance at Tales of the Cocktail or Hukilau this year, as he is about to embark on a new adventure, fatherhood, in May. To keep the spirit and fun of the Tiki culture, Hurst designed and built his own Tiki Bar last summer at his home. Using mainly re-purposed wood and materials, Hurst has created his own tropical paradise to relax and escape.

Coffee Syrup: At home, strong brewed coffee works great and is easy to make. The pour over method gives you the most control with extraction, yielding the best results. Cold brew coffee has a cleaner profile with less bitter notes than hot brewed coffee. It is also much more stable and can last for weeks when properly stored.

The Noodle Craze

Food Photography: Seamus Payne

Ichicoro Ramen | By Ronda M. Parag

W

e all remember the ramen noodles that we ate in college for about 25 cents a pack; those noodles offered a great value and filled the hungry belly of students everywhere; but times have changed, and now Ramen and Noodle bars have become so popular and trendy, that Noel Cruz and his team decided the time was right to open Ichicoro Ramen in Seminole Heights almost six months ago. “We had an entire team of six relocate from New York,” said Cruz. “Seminole Heights felt to be the right vibe. I’m friends with other restauranteurs in the area, the neighborhood is good and I felt like it would be accepted.” True Ramen is a labor of love with creating the broth that can take up to 20 hours to complete. “With the exception of the noodles, everything is made onsite and from scratch,” said Cruz. “Our noodles are a custom recipe made by Sun Noodle, and we source as much locally as possible and

78

April|May 2016

that is indigenous to the area.” “Ramen is identifiable to nearly everyone,” said Cruz. “It’s been a learning curve for the broth and accompaniments. Noodles are number one, but the broth is of equal importance. Everything else enhances the dish.” The menu offers about five broths on the lunch and dinner menus. The best seller is the Champon Ramen that is pork/chicken broth, grilled gulf shrimp, chasyu asado (braised pork), ginger tempura, scallion, corn, shiitake, and sesame. The Shoyu Ramen is also popular with a chicken broth, chasuya asado (braised pork), ajitama (seasoned egg), menma (bamboo shoots), scallion, and nori. The open concept kitchen allows diners to view the activity in the kitchen with a full team of five people on the line. “We have a grill that allows us to add a smokey element to the pork and we char-grill the vegetables,” said Cruz. Lunch offers Rice Bowls and Snacks

in the bar from 4 - 5 pm. For dinner, the Pork Steam Bun and the Smoked Brisket Steam Bun are perfect to share as each are served with 2 buns. “Right now, Ichicoro is the only one pushing the diversity in Ramen,” said Cruz. “We are trying to get more focused and just have fun.” The interior of the restaurant is sophisticated, yet casual with a lot of design elements. The bar offers a perfect perch to grab a drink while waiting for a table. “We did put a lot of thought into the bar menu,” said Cruz. “It’s small, but mighty.” No reservations accepted, but by using the DineTime app, diners can hold a spot in line and receive a text message when a table is ready. Pushing Culinary Boundaries The Mill in St. Pete By Ronda M. Parag

T

he dining scene in downtown St. Petersburg is exploding and the timing is right for the culinary movement. “With the addition of great new restaurants, we are starting to see the revolution take place,” said Managing Partner, Ted Dorsey of The Mill. “It’s partially due to the unique arts movement that is taking place. People are beginning to seek out restaurants that push the boundaries.” Chef Dorsey says the menu at The Mill has a well-balanced “Rustic Americana” feel. “It’s a combination of my southern roots, as well as, my classic French training,” said Dorsey. “We try to allow the food to be the star by not over manipulating the product. Cooking for me comes from the heart, with love.” Cheese and charcuterie can be a meal in itself and the options at The Mill are quite unique. “We wanted to do cheese and charcuterie a little bit different,” said Dorsey. “We wanted to incorporate

seafood, as well as, proteins. What sets us apart, from others, is we make all of our charcuterie in-house from our lamb bacon, duck bacon, octopus bacon, smoked salmon, pickled shrimp, lengua rillettes and foie gras torchon. Then, we pair those with amazing cheeses and our signature marmalade, mustardo and rye whiskey mustard.” Open for lunch and dinner, The Mill has a few menu items that are diners’ favorites. “Our watermelon bruschetta, sweet pea hummus, lamb shank pot pie and wild boar ribs, are a few of the most popular,” said Dorsey. The menu rotates seasonally, with the best sourced local and regional products, and May 1 will see a new menu change. Chef Ted Dorsey has a stellar culinary background having graduated from Le Cordon Blue and worked with award winning chefs such as Marty Blitz and Bryce Wittlesy. Dorsey also worked on Tampa

concepts Ciro’s Speakeasy & Supper Club, and Boca Kitchen Bar and Market. He was also responsible for opening and creating the menus and supervising all dining and bar operations, at The Castile Restaurant inside Hotel Zamora. The drink and bar menu offers twists on classic style cocktails. Dorsey says that Gin will be a hot spirit for summer, along with a resurgence of Rum and sipping rums. “For spring and summer we will be featuring more tiki like cocktails like the classic Zombie, with more than one style of Rum in one cocktail,” said Dorsey. “We will also see an increase in lighter wines such as Rosé, and crisper whites that pair well with the sweet summer heat of Tampa Bay.” M 200 Central Avenue St. Petersburg, FL 33701 727.317.3930 www.themilldtsp.com
