Publisher’s Notes Celebrate the Season.
The slightly cooler temperatures bring a festive feel to Tampa Bay as the holidays are approaching. Halloween, Thanksgiving and Christmas, are times to celebrate with family and friends. The social season still offers plenty of charities to support for various causes, including the arts, animals and of course, the Junior League of Tampa’s Holiday Gift Market. As the largest fundraiser for JLT, the Holiday Gift Market supports education, child welfare programs and community projects of the League. Women’s Health is always an important topic with October being Breast Cancer Awareness month and Domestic Violence Awareness month. METRO has a feature on taking charge of your breast health with a message of early detection and new techniques to relax in Meditative Medicine. The ancient practice of Qi Gong has been reported to increase the sense of well-being, improving balance and flexibility and reducing stress. We could all probably benefit from that. Take a peek inside the newly transformed historic Hyde Park home’s interior, designed by Enrique Crespo of Crespo Design Group. Through the use of color, texture and design, Crespo created a modern look and relaxing vibe in the 1920s home. For a weekend escape, take a trip to Key West and relax in New Town at The Gates Hotel Key West. The vibe is easy and you’ll come home with a new attitude. For wine lovers, a trip to Paso Robles in California will create a new appreciation for the wines and vineyards. The area is ideal for a girls’ trip or a romantic getaway. In Foodie, meet Chef Matthew Rainey, Executive Chef for Caledon Concepts and discover his passion and philosophy as a chef. Finally, we have a special section filled with Inspiring Women in Business. These women are all business leaders, who support the Tampa Bay community generously with their time and talent.

Celebrating Cuban Culture At Pavilion XXXI Two dynamic and art loving couples are the co-chairs for Pavilion XXXI, the premier fundraising gala for the Tampa Museum of Art. This year, Stacie and Sam Linsky and Susie and Mitchell Rice, will be the force behind the black tie gala. The museum will also honor the support of generous donors, Maureen and Doug Cohn. Presented by PNC Bank, the theme for Pavilion this year is Tampa / Havana. The theme is drawn in part by the current exhibition, Complicated Beauty: Contemporary Cuban Art, that will be on display through January 22, 2017. The legacy of Pavilion always allows fresh and innovative ideas for the theme and décor. “Co-chairing Pavilion provides an opportunity for us to share our passion of Cuban art and culture with the community, while being a part of a historical event that benefits art education,” said Susie Rice. Guests will sip creative cocktails, dine on delicious cuisine, and dance the night away, with a performance by two-time Grammy Award Winner, Marlow Rosado and his Band. The co-chairs and the committee have been working very hard to create a sensational evening. Proceeds from Pavilion benefit the Museum’s exhibition and educational programs. With three young children, co-chair Stacie Linsky believes in arts education. “By co-hosting, I am showing my kids the importance of art in our community and helping to foster the next generation of art lovers and supporters,” said Stacie Linsky.

Coach Jon Cooper signs autographs for Lightning fans
“Get to the Dance” Tampa Bay Lightning Coach Jon Cooper By Ronda M. Parag
Fans, along with the entire team, have high hopes for a winning hockey season. Hired as the Tampa Bay Lightning Head Coach three years ago, Jon Cooper has the dedication and passion for winning. With a law degree and plans to become a sports agent, Jon Cooper is not your typical coach. He never played professional hockey, in fact, he played lacrosse in college. His coaching career started with junior hockey, then minor leagues and the Tampa Bay’s American Hockey League, before he became the National Hockey League’s Lightning Coach in 2013. METRO had a chance to catch up with Coach Cooper, to find out about his charity fishing tournament and his goals for the season.

Leading the Army and Doing the Most Good Captains Andy Miller, III and his wife, Abby, relocated to Tampa earlier this summer and are the Area Commanders for Tampa. Moving and learning your way around a new city can be a challenge, but the Millers are quick to learn the area and discover its needs. “In the second month we lived here, I was essentially lost and while on a detour ended up on beautiful Bayshore Blvd,” said Miller. “What a wonderful detour! I grew up with Lakeshore Drive in Chicago, but was delighted to find this scenic road.” Miller also discovered Tampa’s iconic sandwich – The Cuban. “To be honest, I never had a Cuban sandwich until I moved here,” said Miller. “I love them!” The holidays are approaching and the Millers are leading the Salvation Army and celebrating the holiday season with The Tree of Lights Breakfast. “Tree of Lights is our biggest fundraising event, it kicks off our Christmas season,” said Miller. “It is a time for us to raise support and communicate what we are doing in Tampa, for those in the most need.”

Berkeley Tops $50 million in Capital Campaign
Since its launch in 2010, the Above & Beyond campaign for Berkeley Preparatory has raised millions of dollars in an effort to make Berkeley’s Board-approved Master Plan a reality. These gifts have resulted in the completion of the Straz Family Field House, the Touchton Family Clock Tower and the Quad, the Berkeley Café, the Doyle Technology Commons, and the Gries Center for the Arts and Sciences. The school intends to renovate tens of thousands of square feet, including its Middle and Upper Division Library. Berkeley continues to fundraise for the campaign to complete the Master Plan, which includes significant additional renovation efforts and the construction of an Early Childhood Education Center, as well as a chapel and alumni center. Bob
Gries, Jr., a Berkeley parent and trustee, who had previously provided the inspirational lead gift for Berkeley’s leading-edge arts and sciences building, challenged the Berkeley community to again step forward to support the campaign, agreeing to match dollar-for-dollar all new pledges up to $2 million. “Bob has played an integral part in generously supporting Berkeley Preparatory School during this campaign. He is a true leader who sets the bar high for others to follow, which can be seen through the challenge he put forth to our community and in his game-changing support of the Gries Center for the Arts and Sciences,” said Berkeley’s Headmaster Joseph Seivold. For more information, visit www.berkeleyprep.org.

Fried Baby Back Ribs
Southwestern Taco and the Crispy Salmon Taco
The SoHo Backyard, located at 610 S. Armenia, was named South Tampa’s “BEST PUB WITH A PALATE” after it opened three years ago. Today, the gastropub continues to be not only popular, but considered “THE” South Tampa neighborhood place to “meet and eat” and showcases the Chef “SLIMM” style of cuisine. Locals and visitors alike know the famous Steak Au Poirve and Duck Wings are there to stay. Locals embrace the hidden alternative to the crowds along Howard Avenue. You’ll find high top tables, lots of bar space, a relaxed atmosphere and a full dinner menu served until 1:30 am, offering South Tampa a fresh alternative to late night dining. The Backyard is excited to announce the launch of their new revamped menu with 15 new items featuring Fried Baby Back Ribs, Gator Poppers, Chicken Kabobs, Honey Siracha Salmon and The Easy SoHo Skillet for brunch. Two new additions to the Taco Thursday Menu include the Crispy Salmon Taco and the Southwestern Beef Taco. Pair your choice of 7 tacos with the new Avocado and Pineapple salsa and a $5 Don Julio Margarita, and you quickly realize why Taco Thursday at the Backyard is a local favorite. The popular Saturday and Sunday SOHO BACKYARD BRUNCH is offered from 11am-2pm featuring bottomless Mimosas and the Backyard Bloody. You’ll find delicious homemade Salmon cakes ladled with the house hollandaise sauce, as well as home-style Biscuits and gravy. Another reason to linger: your doggie’s are encouraged to join in on the beautiful outside patio 7 days a week. Celebrate mid-week year round with the Backyard’s $5 Wine Wednesdays. As the Soho Backyard’s Head Chef, Narja “Slimm” Campbell started his career 19 years ago in San Antonio, Texas. Most recently from Tallahassee, he worked for the well known Silver Slipper and worked in the Governor’s Mansion. Owner Bo Crusoe was originally from Tallahassee (you can bet the TVs are tuned to Seminole football games) and said he has been “very pleased with the outpouring of rave reviews.” Florida Trend Food Critic Chris Sherman raved: “Darn Good Food” and “Very Impressed with the Crab Cake’s and Lobster Tacos,” on his last visit. The SoHo Backyard is located behind CVS between Howard and Armenia across from Moody Avenue. 813-284-5924. Also find them on Uber Eats serving until 1am! Coming soon: keep a look out for their new UBER Eats late night menu served from 1 am - 4:20 am for your late night dining needs.

METROHome Tour
Contemporary Design within a historic setting By Mary Lou Janson
nce the decision was made to hire a professional to help improve their home’s interior, the first move made by the owners was to set up a meeting with Enrique Crespo of Tampa’s, Crespo Design Group. The owners described their preferred color scheme as comprised of taupes, creams and grays. They reviewed images of rooms that appealed to their aesthetic, defined their lifestyle and accompanied Crespo on shopping trips to South Florida’s design district, to find furnishings suitable for their space and in sync with their tastes.
“They had never really done anything like this before when they decided they were ready to have their home designed,” said Crespo, referring to the local residents who requested anonymity. “They had some nice pieces, but those pieces did not really look put together. So we started fresh and bought all new.”
The couple’s next move? They bought a new home. A nearly century-old residence that the pair had long admired, unexpectedly became available, motivating them to quickly decide to make historic Hyde Park their new neighborhood. Instead of arranging the new purchases in the existing home as originally planned, everything was readied for moving and reconfigured to fit an entirely different floor plan. Fortunately, rather than starting from scratch, Crespo was able to seamlessly integrate all of the acquired elements into the alternate space. He incorporated the same agreed upon neutral color palette, custom-made contemporary furnishings and exotically textured surfaces, to create a serene environment conducive to what was originally envisioned for the family. Final touches have now been artfully applied to the five bedrooms, five-and-a-half bathrooms and more than 5,000 square feet of living space, that became a design focal point for Crespo, following that initial meeting that occurred nearly a year ago. Clean lines, cooling colors and open views imbue the 1902s era home a modern look and relaxing vibe.
“I really like the warm, organic, contemporary look it has. It feels very natural, not cluttered,” said Crespo. “It’s sleek but not with a hard edge.”
The light shades applied to the walls provide a perfect backdrop for displaying original artwork from the owners’ private collection. Hand crafted woolen silk rugs and patchwork rugs resembling vintage pieces, add soft splashes of colors that contrast with the hardwood floors. Two cerused oak chairs and accompanying leather footstools, are perfectly positioned to take advantage of the home’s abundance of natural light and create an idyllic reading nook. With 10-foot-high ceilings and full-frame windows and glass doors, the interior is flooded with light, that brings brightness to every room and gives each area a luxurious sense of lots and lots of space. No built-in shelves packed with knickknacks or entertainment centers featuring flat screen TVs have a place here, instead, stately armoires and stylish end tables with striking finishes made from in-laid bone or horn and goat skin, vellum covered door fronts and other esoteric elements, add interest and artistry to each room. “I tried to create a designed interior that would be family friendly and luxurious,” said Crespo. “I wanted it to feel like a place that could be comfortably lived in and not just a space to be looked at.” M

Detect to Protect
to
Battle Breast Cancer By Mary Lou Janson
From the “In Our Hands” campaign: (L-R): Paula Zitzelberger (Shawn’s mother), Shawn Becklund, Avalon Becklund (Shawn’s daughter)
A lifetime of healthy habits, including a vegetarian diet dating back to her pre-teen days and a longstanding career as a personal trainer and group fitness leader, helped Shawn Becklund feel worry-free about her well being; that all changed when she felt a suspicious lump in her right breast during a self examination. What she thought might be a mass of harmless fibrous tissue gradually grew. That’s when Becklund knew what she had to do. An overdue mammogram that had been put on hold, while the mother of two worked through a difficult divorce, confirmed three lumps in her breast. “It came as a shock,” said the Oldsmar resident, whose family’s health history had been cancer-free for two generations. “They were all malignant and two were invasive.” Aggressive radiation and chemotherapy treatments administered at St. Joseph’s Women’s Hospital followed, before Becklund opted to undergo a double mastectomy. “You have to be familiar with your own breasts and how they should feel, so that you know when there is a change,” she insists. “Don’t stop getting mammograms or wait too long. Do a breast self-exam monthly.” Recommendations regarding what age women should start getting mammograms and how often they need to be screened, can be conflicting and confusing. Deciding whether to
undergo surgery to further minimize future risks can be overwhelming, adding to an already stressful scenario. “My best advice to any woman is to become familiar with her own body and her family history, so that she can talk with her physician about what makes sense for her situation,” said Robert Gabordi II, MD, Breast Surgical Oncology at St. Joseph’s Women’s Hospital. “Even with a diagnosis, surgical treatments and technologies have come a long way, including nipple-sparing and hidden-scar procedures, as well as SAVI SCOUT, an FDA-approved device for localizing and directing the removal of non-palpable breast lesions.” With one in eight women diagnosed with invasive breast cancer in their lifetime, the risks are high. “That’s why it is so important to encourage women to get mammograms, so we can detect the cancer while it is small,” said Gabordi. “We know breast cancer has an excellent prognosis when caught early.” Those who locate a suspicious lump during its early stages report a 98 percent, five-year survival rate. BayCare Health System’s “In Our Hands” awareness-building campaign, notes 40 percent of diagnosed breast cancers were discovered during self-checks by women. “Be your own advocate, especially if everything seems fine, but your gut tells you otherwise,” Becklund urged. Meditative Medicine
for
Body, Mind & Soul By Mary Lou Janson
Healthcare doesn’t have to come in a bottle, be administered by injection, or involve invasive surgery. Sometimes it can be disguised as a discipline incorporating muscle movement, deep breathing, specific poses and mental focus that collectively deliver healthful benefits to the body. Class offerings based on Chinese practices dating back thousands of years, are increasingly showing up at Tampa Bay area fitness facilities, community centers and hospital campuses, where instructors guide groups through a series of movements. John Llauget has facilitated Qi Gong (pronounced chee-gong), classes for cancer patients at Morton Plant Hospital in Clearwater, for more than 12 years. Llauget, who has a masters degree in clinical psychology and a background as a martial arts instructor and holds a fifth-degree black belt, initially became interested in Qi Gong for its emphasis on improving health and its accessibility to people of all fitness levels. “One of the beauties of Qi Gong is that, regardless of age or even with limitations, people can learn to do this. I had read and learned about its use in China as a means of helping cancer patients. I teach it as a stress reduction program,” he said. The gentle, flowing nature of the movements allow for students to remain standing or be
seated, as they follow along through a series of gradual gestures and proper alignment. “I try to give them a good foundation and teach them the basics. They can build from there,” Llauget added. Through this practice participants can achieve, among other benefits, a sense of well-being, improve balance, increased flexibility and enhanced strength, using only their bodies. There are no balls, bands or weights incorporated into the activity. National Qi Gong Association reports that the “gentle, rhythmic movements of Qi Gong reduce stress, build stamina, increase vitality, and enhance the immune system. It has also been found to improve cardiovascular, respiratory, circulatory, lymphatic and digestive functions.” For cancer patients in particular, Qi Gong can impart a sense of empowerment that may have eroded while they were undergoing treatment. “You feel in control of yourself,” Llauget said, citing the mind and body connection, relaxation responses and overall sense of calmness brought out by the practice. “Research shows relaxation responses give health benefits that can help with side effects of cancer treatment, such as anger, anxiety and depression.” M

ocated halfway between San Francisco and Los Angeles along California’s famed Central Coast, Paso Robles is a place where wine critics become wine lovers and where visitors come as guests, and leave as friends. Paso Robles’ wines are meant to be enjoyed, shared, celebrated and inspired for a perfect visit. With over 200+ wineries producing wines that boast profiles that impress even the harshest critics and new wine lovers alike, Paso Robles’ wines are made by some of the most talented winemakers in the world. To begin the wine experience, choose a centrally located hotel – LaBellasera Hotel & Suites, a boutique style hotel, nestled in the heart of Paso Robles wine country, boasts 60 oversized rooms and suites, with the option of having a private whirlpool spa or fireplace in the room; and just a short, 30 minute drive from San Luis Obispo Airport. The close proximity of the vineyards in Paso Robles allows for multiple stops when creating your wine tour. Uncorked Wine Tours, is a great (and safe) way to get around. at their family farm. Known for sustainable vineyards, winemaking and ranching, guests will enjoy tastings of Cabernet Sauvigon, Primitivo/Zinfandel and more. Jada Vineyard & Winery is a small, 3,000 case winery that was quietly converted to biodynamic farming and closely follows the biodynamic calendar. With Rhone and Bordeaux style wines, Jada now has over 2,000 members actively enrolled in their wine club. Not only one of the oldest wineries in Paso Robles, but one of the oldest wineries in the state of California, San Antonio Winery encompasses close to 400 acres with five vineyards. Continue on to Pendray’s Distillery. Founders, Steve and Lola Glossner, create still wine with their Per Cazo brand and dessert wines with PasoPort. Now in their third year of distilling, they are in full production of spirits for sipping, mixing and fortifying their port wines. After visiting even a few of these exceptional wineries in the Paso Robles area, guests need to eat, and there is no shortage of local restaurants, with wine pairings, to choose from. America, and offers culture specific, specialized Latin flavors. Villa Creek Restaurant, opened in 1998, boasts farm to table cuisine, with ingredients sourced from local farmers. One restaurant not to be missed is Refugio; located on two and a half acres in the heart of California’s Central Coast wine country, Refugio is a contemporary Spanish style guesthouse with two luxurious, completely separate suites, and a dream kitchen for entertainment. Owners, Brigit Binns, a nationally known author of 28 best-selling cookbooks and her husband, Casey Biggs, serve their guests delectable dinners paired perfectly with their wines. No matter what your level of wine knowledge, the local wineries will help educate guests on the various nuances of their varietals. Cheers! Philosophy: Fresh, Clean, and Simple Ingredients Meet Matthew Rainey, Executive Chef of Caledon Concepts By Ronda M. Parag

October|November 2016
A recent promotion to Executive Chef of Caledon Concepts for Matthew Rainey, has him overseeing the culinary operations for all three locations of Ceviche Tapas Bar & Restaurant, Rococo Steak and other future culinary projects. Rainey is an Atlanta native and worked with his friend and mentor, Panos Karatassos, where he was instrumental in opening restaurants Pano’s & Paul’s, Chops Lobster Bar and Bistro Niko, a French bistro in Atlanta’s Historic Buckhead neighborhood. Rainey was voted Best New Chef of 2014 by Jezebel Magazine. “The Tampa/St. Pete area has some of the most talented chefs and the local food scene is evolving every day,” says Rainey. “It keeps everyone on their toes and constantly pushes chefs to be better.” Between all his new responsibilities, METRO had a chance to chat with Rainey to find out what inspired him to become a Chef and plans for the holidays.
www.TampaBayMetro.com
METRO: What inspired you to become a Chef? Rainey: When I was young my dad took me to a culinary school. At that moment after seeing the kitchen and watching the Chefs, I knew that is what I wanted to do. I was immediately inspired and captivated. Life inspires me, as well as, past experiences. I like the ability to be creative and innovative. I love being in the dining room and talking with guests about food and watching them get excited about what they are eating. M: What will your day to day be like now that you are the new Executive Corporate Chef? R: In this new position, my priority will shift more toward education of our culinary teams. I will be working very closely with all our chefs to ensure we are providing the best experience possible. I will also be working with purveyors to ensure we are providing the freshest, seasonal ingredients. Something that has always been very important to me is getting deeply involved within the community by giving back and
Metro Dining Guide working closely with charities. Caledon Concepts has deep roots in the community and is constantly hosting or sponsoring local charity events. That is very important to me. M: Ceviche recently changed up the menus. Were you involved and what was the inspiration behind the changes? R: Yes, I wanted to go back to more traditional Spanish Tapas with a modern look. I have upped the game by bringing more classical techniques into the kitchens. The inspiration for the new menu and the changes was to reignite the Ceviche brand. Ceviche has been around for almost 19 years and basically untouched. The challenge was to blend the history of Ceviche into new modern tapas. I wanted to bring in new, higher quality, seasonal ingredients that would really make an impact on the guest. M: What hobbies do you have outside of the kitchen? R: My two young children keep my wife, Alice, and me very busy. As a family, we enjoy the outdoors; paddle boarding and kayaking are great family days. I also spearfish, whenever possible. I love going to farmer’s markets and foraging for new ingredients. M: When you go out to eat, what are a few of your favorite places? R: With the food scene in Tampa and St. Pete constantly changing, I enjoy trying anything new to the area. With two young kids, it’s not always easy to get out to eat, but I have had the pleasure of meeting and spending time with some amazing local chefs; Ferrell Alvarez, Jason Ruhe, Noel Cruz, Marty Blitz, just to name a few. M: With the holidays approaching, do you have any fun tips or ideas for entertaining? Do you host the family dinner? R: Holidays for me are all about family. We usually go to my mom’s house where she doesn’t allow me to cook. After hanging over her shoulder and whispering “that’s not how I would do it,” we usually wind up cooking together. Cooking with us is a family affair.” M
