The humidity has dropped and the temperatures are a little cooler as we head into the holiday season. Gathering with friends and family is always a favorite activity this time of year. In this issue, METRO provides decorating ideas and inspiration from Krayl Funch, who also just released her first book. Two talented and celebrated chefs have joined forces to expand the culinary landscape in the Bay area. James Beard Award-winning Chef Michael Mina and Chef and Author, Don Pintabona, who has local ties to the area, will open a gourmet style market and a restaurant at Sundial plaza later this year. It’s a place where foodies will find high quality, locally sourced produce, meat and seafood. The LOCALE Market will offer ingredients so that home chefs can prepare their own meal, or choose from a haven of prepared and artisan products. “Being back in the Tampa Bay area has been very sweet,” Chef Pintabona said. “I was a student at USF in Tampa from 1977 to 1980, so this is something I’ve thought about doing for a long time. I’ve always had a great love of the Tampa Bay area, with relationships with friends here that extend back 30-plus years. I’ve been welcomed back like I’ve never left. It has been awesome.” Pintabona left Tampa after graduation from USF and headed to New York to

attend The Culinary Institute of America. He has an extensive culinary background and teamed with actor Robert De Niro to be the Executive Chef of the acclaimed Tribeca Grill in the 90s. Upon his recent return to the Bay area, Pintabona and his team have been visiting local farms, including Faithful Farms and Gamble Creek Farm, to source the market. “When we decided to call it Locale Market, Michael Mina and I hoped that there would be enough local product to support the name,” Chef Pintabona said. “I’ve been more than pleasantly surprised at not only how much there is, but also by the quality. I’ve been making weekly visits with Locale team members to local farms to establish relationships with growers and fishermen. It has been impressive how driven and passionate the farmers are. Pavilion XXIX Illuminates Tampa Museum of Art

Opulence returns to the Tampa Museum of Art on November 1 as the Museum unveils its signature fall fundraiser, Pavilion. Regarded as a hallmark in Tampa’s cultural and philanthropic calendar, Pavilion celebrates the 29 year old tradition that its founders envisioned: a spectacular night of fashion, food and entertainment amidst the beauties of the Museum, all benefiting the Museum’s education and exhibition programs. “We wanted this year’s Pavilion to literally be all about art. We were inspired by the City of Tampa Lights On Tampa project and their recommendation of Chicago-based artists Sean (Gallero) and Petra (Bachmaier) of Luftwerks,” said Anderson Wakefield, who is co-chairing the event along with her mother,

Tilda Brabson. “Pavilion guests will be immersed in an installation of light and video that has been created specifically for the museum lobby, and will cover all 48 panels of glass and be visible both inside and out day and night.” What to expect? Guests of Pavilion will enjoy a live auction of luxury items, decadent culinary creations by Mise en Place and Chocolate Pi, live entertainment, hours of dancing, flowing cocktails, stunning views, an eclectic crowd and the After Party, a late-night soirée, one that keeps the Pavilion celebration going until midnight. A Perfect Pairing at CRU Cellars

Cru has always been known for the best glass list in town, and now, with a new kitchen in back, Chef Brad Sobo (formerly of Sidebern’s for over six years), is carefully crafting delicious small plates and entrees to pair with Wine Director William Lucius’ stunning wine list. “Much of the inspiration from the menu came from dishes that I’ve always loved to eat when I go out, but can rarely find,” says Chef Sobo. A native of St. Louis, Chef Sobo plays on the traditional Toasted Ravioli his town is known for, by filling the house-made pastas with Meruez sausage. Another menu highlight is the Duck Confit, which is a two day process to make, and Sobo says, “When I walk in the building after letting it cook overnight, the smell is fantastic!” Wine Director William Lucius tastes more than 50 wines a week, and constantly tweaks the list in order to introduce the most delicious and compelling wines to guests. About Chef Sobo, Lucius notes “His talents and understanding of the delicate interplay of food and wine helps create a great synergy.” The Cru Wine Bar is open from 4:30 to 10pm Tuesday - Thursday, 4:30 to 11pm on Friday, and noon to 11pm on Saturdays. The Florida Aquarium officially opened the brand new Carol J. and Barney Barnett Learning Center with a VIP ribbon cutting ceremony. The Carol J. and Barney Barnett Learning Center is part of the second phase of the Aquarium’s Rising Tides Capital Campaign, and is the result of a $1 Million donation from the Barnett family in May 2012. 2014 Tuxes & Tails: The 12th Annual Tuxes & Tails Masquerade was a great success with 19 adoptable dogs and cats finding forever homes. Among those strutting the runway with an adoptable dog were Tampa Police Chief Jane Castor, County Commissioner Sandy Murman and Attorney General Pam Bondi. More than $143,000 was raised to benefit the Humane Society of Tampa Bay. Event Co-Chairs Meredith Haws Balasco and Letitia McKibbon helped to pack the Marriott Waterside with a sell-out crowd of 700 guests. Take a spirited journey back in time at Tampa’s Repeal Day Gala, that may be the closest you’ll ever get to time travel. The Gala celebrates December 5, 1933, the day that prohibition was repealed, after 13 long years. Then, as now, we’re ready to cheer and raise a glass. The Gala is part historic recreation, part modern celebration of the Cocktail Culture. The setting in Historic Ybor City at the Cuban Club, the attire period hipsters, the entertainment spirited, the drinks handcrafted by the areas very best bartenders, will be a party not to miss. Now in its fifth year, the local chapter of the United States Bartenders’ Guild Tampa Bay Chapter (USBGTB), has expanded what was once a one day celebration of the repeal of prohibition on December 5, 1933. “What started as a small party in 2010, has expanded to include four days of dinners, celebrations and educational seminars,” said Justin Gray, chairman of the Repeal Day Conference and Gala and vice president of the United States Bartenders’ Guild Tampa Bay Chapter. “Everyone in the city is invited to attend. We will have attendees from 43 chapters of Bartender Guilds across the states, brand ambassadors and even international guests.”

“Scheduled to lead the seminars and be in attendance will be the Michael Jordans of the spirit industry,” Gray said. “These are the Fathers and Godfathers of the industry.” Among the current list of attendees are Dale DeGroff, Ian Burrell, Phillip Duff, Elayne Duff, Doug Kragel, Gable Erenzo, Dushan Zaric and Elizabeth Pearce. The USBGTB’s inspiration for the Gala is to host the cocktail party of the year and comes from the cocktails, music and clothing of the era. On Friday, December 5, the Official Repeal Day Kick-Off Happy Hour will begin at exactly 5:32 pm, the time the Volstead Act was put to rest 81 years ago. Enjoy cocktails by Infinium Spirits and food by Melange from Sarasota, while bartenders will compete in a cocktail competition and guests will decide the winner, and the cocktail will be the featured drink at the Gala on Saturday. It is not just about cocktails, as the craft beer scene has boomed too. Coopertail Brewery will unveil the first Repeal Day beer. While Gray admits there are many different types of bars and places to grab a drink, a great bartender wants to bring an experience to the guest. “We are the Bar Chefs,” said Gray.

Decisions were made, the house was listed, belongings packed and the search for a permanent home in Tampa was under way. Determined to live in the Plant High School district, the family had to act quickly to be ready for the first day of the new school year. “We put our house on the market and it sold at the first showing,” said Patti. With the school enrollment deadline looming, there was no time to cull through the contents filling 11 rooms of their former home so everything was packed, moved and stored while the family rented a furnished home on Harbour Island for three months.

Dana Rollison, PhD A Potential Role for Viral Infections in the Development of Skin Cancer

Dana Rollison, PhD, plans to monitor 1,500 skin cancer screening patients over a five-year period to study risk factors for non-melanoma skins cancers (NMSC). Evidence suggests that certain viral infections, specifically cutaneous human papillomaviruses (HPV) and polyomaviruses (PyV), may play a role in the development of squamous cell or basal cell carcinomas. In theory, providing patients with yet-to-be-developed vaccines guarding against cutaneous HPV and PyV,

could also create a way to protect those diagnosed from developing certain types of skin cancer. “I am looking at how sun exposure interacts with viral infections to possibly lead to skin cancer. The goal is to find new risk factors for cancer that can lead to new ways to prevent cancers,” she said. “I don’t know if viruses cause skin cancer, but if enough evidence is generated to support that, then in theory, we could develop vaccines to potentially prevent skin cancer.”

Dr. Christine Laronga Impact of Nipple Sparing Mastectomy A breast surgical oncologist in the Comprehensive Breast Program at Moffitt’s Center for Women’s Oncology, Dr. Christine Laronga treats the full spectrum of breast diseases ranging from benign cysts to cancer. Breast cancer patients choosing to have their breasts removed due to the disease, may consider cosmetic reconstruction to replicate the breast mound and nipple-areola complex (NAC). Another option may be even more appealing. With advancements in early detection of breast cancer, patients may be able to retain their nipples. Advancements in surgical procedures (removing and rebuilding the breast), make it possible to displace less skin and leave nipples intact in select women. Confirming that a nipple sparing mastectomy can be done safely without leaving the patient at

risk from any lingering cancer cells, could radically change the way women look – and feel – post-surgery. Preserving the nipple may help women’s body image as well as their quality of life. Sensitivity of the nipple is also being addressed. If the nipple and surrounding area are spared, is sensitivity permanently damaged or will it eventually return? “It is important to have nipples and sensation. Recreating nipples is never as good as your natural nipple, due to lumpy bumpies and color variation. Hearing that from women led to this current research project,” Laronga said. “With this additional money we can accrue more women to the study. We want to follow these women to see if sensation comes back and how long it takes to rekindle.”


Dr. Heather Jim, PhD Cognitive Training to Improve Chemobrain: Does Lumosity Help? As cancer patients benefit from medical advancements enabling them to live longer, the need to reduce side effects from those treatments becomes increasingly important to their physical and emotional well-being. Cognitive impairment, commonly referred to as “chemobrain,” can disrupt a patient’s ability to concentrate, affect their memory and inhibit their ability to plan, multi-task or even recall words easily. Dr. Heather Jim, PhD, is researching ways to predict which patients may be most susceptible to “chemobrain” in hopes of finding a treatment that can be easily administered, as well as, immediately improve mental clarity. An associate member with

the Health Outcomes and Behavior Department at Moffitt, she specializes in psychosocial and behavioral aspects of cancer control. Because this side effect is common among breast cancer patients, Jim is using an online cognitive training program called Lumosity, to determine if it is a viable treatment for women to use to re-train their brains. "Chemobrain can be very distressing for some patients and can significantly interfere with their quality of life,” Jim said. “Cognitive training has been shown to improve cognitive functioning in patients with stroke and traumatic brain injury, so we are hopeful that it will help patients with chemobrain as well.”

Bo Crusoe, Owner & CEO and Jeff Glenn, Owner & GM, were responsible for the design and layout of the restaurant and Chef Narja “Slimm” Campbell, designed the kitchen and menus, just two blocks off the Howard Avenue bar strip of SoHo. Crusoe wanted to create a place for “thirty somethings” to meet, eat and hang out. Crusoe hails from Tallahassee, where he was the GM of AJ’s Sports Bar. He realized that his calling was “to throw a party every night” and dreamed of having a place of his own. The team spent nearly three years going through the design process, build and permitting. SoHo Backyard is one of the few bars with a kitchen that stays open until the 2 a.m. closing. The SoHo Backyard is open for lunch,

dinner, Sunday Brunch and a full bar. While the menu is continuously evolving, new additions to the Fall menu include The Scallop BLT – pan seared with special seasoning and topped with bacon, lettuce, tomatoes and a drizzle of Cajun mayo. There is reason to celebrate every night of the week with various special nights including Taco Thursday, that offers chicken, mahi, shrimp and lobster, along with the addition of a Gator taco and Braised Short Rib taco. Historic black & white photographs of Tampa line the back of the bar and give a sense of neighborhood. Friday Happy Hour is from 4 -7 p.m with half-off all drinks. Behind the bar, the friendly bartender serves up a menu filled with creative cocktails including The Backyard Old Fashion, made with black cherry and blood orange infused Woodford Reserve and “The Rye Mule,” a classic Moscow Mule with a traditional southern twist using Bullet Rye. The menu is filled with creative and unique offerings including World Famous

Duck Wings in Asian chili, honey garlic or orange habañero. The Duck Wings are certainly meaty and tender, with just the right amount of spice. Be sure to also try the Goat Cheese Stuffed Figs wrapped with crispy bacon. Large enough for two or three to share is the super-sized Truman Burger. Served on a pretzel bun, the double burgers are topped with blue cheese, avocado and apple wood bacon and a side of slaw or truffle fries. Another must try, the Thai Chili Gator Ribs, are slow cooked for 4 hours in-house daily and finished over an open flame with garlic Thai Chili sauce. As a Seminole fan, Crusoe invites all the Noles to come by on Saturday for the Seminoles Watch Party with wing and beer specials. Thanksgiving Wines Tips to selecting a great Thanksgiving dinner wine | By Kevin Pelley

E

very year I find myself thinking about what wines to serve on Thanksgiving, during the months leading up to the big day. Thanksgiving represents an interesting challenge for pairing wines. Of course it depends upon what you serve, but most traditional meals are comprised of a turkey, either roasted, grilled or the increasingly popular deep fried, along with all the fixings. The drippings are collected and transformed into rich gravy. Often mashed potatoes are served accompanied by butter, gravy and a variety of side dishes including stuffing and casseroles. All this translates into a pretty hefty amount of fat and richness. The average American will consume more than 4,500 calories

and 229 grams of fat on Thanksgiving Day, according to the Calorie Control Council. All this richness and unctuousness calls for wines high in acidity, low in tannins and that are made with a moderate amount of oak influence. A wine’s acidity cuts through the fat and helps balance the meal. Wines that are high in acid are ‘food wines’ or wines that are meant to be served with a meal, rather than easy-drinking ‘cocktail’ style wines, that are low in acid and easy to drink on their own. High acid wines usually come from cool growing regions, or are made from grapes that are naturally high in acid. These high acid wines also pair well with sweet dishes and are palate-cleansing and refreshing.

Examples of high acid wines include Champagne or sparkling wines, lightly oaked Chardonnay and Riesling. Another important characteristic of ideal Thanksgiving wines are those with low tannins. Tannins are the bitter, astringent compounds found in food and wine that dry out your palate, specifically on the middle of your tongue. Tannins in wine come mostly from the grape seeds, grape skins and oak barrels, and though high tannin wines are great for a steak dinner, they are not such great choices for your Thanksgiving table. So tannic grape varieties like Cabernet Sauvignon, Petite Sirah and Nebbiolo are not recommended, instead look for wines with continued on page 80

moderate to low tannins like Gamay (Beaujolais), Pinot Noir and Barbera. Turkey is unique in that it contains both white and dark meat, allowing for both white and red wines to be paired with the meal. Here are a few wines to try this Thanksgiving that are sure to delight and impress your friends and family. NV Albinea Canali Lambrusco $19.95 | Here is an exciting wine from Italy that has been relegated to Italian restaurants with red and white checkered tablecloths – Lambrusco! After a partial fermentation, the wine is bottled and undergoes a spontaneous secondary fermentation in the bottle, resulting in a bone dry style and leaving a deposit of spent yeast trapped inside the bottle. The light pink colored wine fools you upon first impression. The nose is fruity and juicy smelling, but the palate is bone dry with tart cranberry fruit flavors, aromas of bread crust and a crisp refreshing finish. Think of this as the cranberry sauce accompaniment to your Thanksgiving Dinner, but in liquid form. 2011 Shea Wine Cellars ‘Shea Vineyards’ Pinot Noir $42.95 | This might be the best Pinot Noir I have tasted all year. The 2011 vintage in Oregon was particularly cold resulting in challenges for winemakers, but Shea Wine Cellars nailed it with this wine. Elegant and restrained at 13 percent alcohol, yet it has ripe fruit flavors of black cherry, pomegranate and cranberry

with earthy notes of forest floor, and a touch of mint lingering on the finish. Delicious. 2012 Mouton Noir ‘Oregogne’ Chardonnay $44.95 | André Hueston Mack is the brainchild behind his whimsical label – Mouton Noir, which translates to black sheep. This wine is clearly a nod to Burgundy, not only in name but in the style of the wine. Crisp, clean and mineral driven, this Willamette Valley Chardonnay possesses flavors of lemon zest, tart pears, toasted hazelnuts and baking spices. Try pouring this for your Francophile friends in a blind tasting and they will surely be surprised. Just 200 cases of this stunner were produced. 2011 George Descombes Brouilly $34.95 | Brouilly is one of the ten Crus or single sites in Beaujolais that produce special wines. Do not confuse this with Beaujolais Nouveau, the young wine that is released the third Thursday of each November. George Descombes is one of the leading producers in the Beaujolais region and this wine is packed with tart, red fruit flavors and rocky, stony mineral notes. This wine is produced from 100 percent Gamay, a grape with relative high acidity and low tannins making it an ideal match for your Thanksgiving dinner.

2012 Vietti ‘Tre Vigne’ Barbera d’Alba $25.95 | Barbera is a favorite recommendation with turkey because of Barbera’s natural high acidity and low tannin profile. Hailing from Italy’s Piedmont region, Barbera is not only a great wine with turkey, but a great wine with any food. Barbera offers an easy drinking style that, seemingly, everyone loves with flavors of red cherry, strawberry, violets, nutmeg and subtle vanilla. Barbera is also an excellent value and Vietti is a reliable and respected producer. M
