In a state of evolution, the Garden City’s architectural typology is nothing short of distinct. New building façades play with eye catching angles, colours and materials – a welcome addition to the archetypal concrete and stone buildings known to the city, as we usher in a new era of forward-thinking urban architecture which pays homage to the past.

NATIONAL MULTI-AWARD WINNERS
2013 - 2019
There is no denying our homes have taken on new meaning in the last 13 months. While always places of sanctuary and shelter, we had no choice but to reassess our relationships with these habitats while being contained inside them during alert level 4 lockdown. In the months that followed, we may have been less restricted in our movements outside the home, but we were hyper aware that that could – and did – change at any moment, seeing many people choose not to stray too far from their local territory. This close proximity to home has influenced a surge in renovations around New Zealand; from large scale remodels and extensions to lowerlevel licks of paint, appliance upgrades and furnishing replacements. The upcoming Christchurch Home Show pays homage to this phenomenon, with the annual show featuring more exhibitors and seminars than ever before when it takes place on April 16 to 18 at Christchurch Arena. It really is a great opportunity to pick the brains of local experts – and those from further afield – and see how you can make those much-anticipated changes at your place. In this issue, we offer a sneak peek into the show from page 47, right next to our regular programming of Home trends and the latest and greatest architecture projects in our Build section. Also in this issue, we catch up with hometown sporting hero, mountain biking champion Anton Cooper, and learn about Canterbury cook Sarah Burtscher’s noble quest to reduce Kiwi’s food waste via delicious, fridge cleaning recipes. Not to mention our fashion, health, beauty and cuisine coverage, too. Wherever you happen to be reading this from - perhaps at home - I hope you enjoy your latest issue of Metropol.

Street art brings depth
In a city resplendent with street art, the newest mural adorning the back of Riverside Market rises to the challenge of bringing something new. This depiction of a row of heritage shops is painted onto a flat façade, yet tricks the eyes into seeing a multi-dimensional historical scene.
T
he project was produced by George Shaw of Oi YOU! and painted in six weeks by local graffiti art collective, DTR Crew - Dcypher, Ikarus, Jacob Yikes & Wongi Wilson. The mural was co-funded by Riverside Market and ChristchurchNZ, and is the largest and most complex ever delivered in the city.

Waste not, want not WORDS MORGAN TAIT
Canterbury cook Sarah Burtscher is on a mission to tastefully reduce food waste. Every year, more than 150,000 tonnes of food is thrown away by Kiwis, but her new cookbook provides ample inspiration to turn that stat around – and create delicious, nutritious food for the whole family in the process.
Happy pets, happy vets Ourvets understand the special role your pet plays in your family and we are dedicated to providing them with excellent care.

Sarah hopes her book will teach people new, delicious and easy ways to use leftovers and food scraps.
hen an eight-year-old tells you your soup made from leftovers is, “so good you need to do a cookbook” - you know you’re onto something. And so, Christchurch cook Sarah Burtscher’s book, Fridge Cleaner Cooking: Waste Not Want Not, was born. “I don’t think he realises how healthy it is,” laughs Sarah. Growing up on a high-country station near Tekapo, Sarah absorbed her mother’s approach to food which ensured nothing was wasted. “She was of that generation where nothing was wasted, but also being quite remote we just had to make do.” This philosophy has underpinned Sarah’s lifelong career in the food industry. Starting as a waitress at the legendary Dux de Lux as a 15-year-old, she has worked in cafés and restaurants ever since. “I am very much a home cook,” she says. “I’m not professionally trained but I love cooking and have been in the industry since I was at school.” Upon returning from her OE, Sarah bought a café on Victoria Street and later headed up and sold two establishments in Tekapo, too. “I love what food represents, it gets people around a table talking and sharing - sharing food, sharing conversations - and it’s a way to express how you care about people. “I love entertaining. Some people can play music or express themselves in other ways, but I do it by putting food on the table and seeing people enjoy it.” Now living in Christchurch with husband Michael, and children Louis, 15, Phoebe, 12, and Nick, 11, she has spent the last year working on the book which chronicles her food journey - including recipes created over lockdown. “With each recipe in the book there is a personal connection, it reminds me of a family celebration or friends’ get together, its parts of your life in a book, really.” Those recipes chosen for the book include popular items from her cafés,
but the main thread tying it all together is sustainability. Kiwis throw away 157,389 tonnes of food each year, according to international organisation Love Food Hate Waste. That equates to about $1.17billion in perfectly edible food being left to rot, which is not only fiscally wasteful – but produces more than 400,000 tonnes of harmful carbon emissions. Sarah says people are not intentionally throwing away food (and their money), but she hopes to share the art of cooking with leftovers. “I’m hoping people will connect with the sustainability angle,” says Sarah. “I hope it helps people learn how to not waste food and be greener with fridge cleaner.” The recipes in her book are based on the top ten wasted food items in New Zealand (bread, leftovers, oranges and mandarins, apples, bananas, potatoes, poultry, rice, lettuce and beef). And also contains tips for reusing offcuts and scraps. For example, banana peels soaked in water can double as plant feed, aging potatoes can be cut up to bulk up a soup, the remains of jam in a jar can be thrown into a smoothie and cheese scraps can go onto a pizza. Standout recipes include the original endorsed-by-an-eight-year-old fridge cleaner soup, Grain It Up; a Basque Burnt Cheesecake “so delicious you don’t want it in the fridge for long because you will keep going back for it”; the easy to make Fast Ice Cream; and a kid approved blue cheese, spinach and pear calzone. Publishing a cookbook is a feat in itself, but the fact Sarah is dyslexic adds another dimension to the achievement. The book is dedicated to like-minded people. “I’ve always shied away from writing anything down for the fear of writing it wrong or misreading it. “So I am really proud that I [have written a book], and that’s why I dedicated it to all dyslexics, because if I can write a book, anyone can.”

parts about have consistently strong performances at the world cups,” he says. So, what happens when someone who is so used to being on the move was forced to press pause with a global pandemic cancelling or postponing races? “It was great! I hadn’t been at home during April, May or June for over 10 years. I really enjoyed laying low for a bit, spending more time with my family and just taking life day by day.” In fact, it’s far from the first time something outside of his control has derailed his sport. In 2016, he missed out on his shot at the Summer Olympics at Rio de Janeiro due to a diagnosis of chronic fatigue. “I had my adenoids removed as they were constantly inflamed and causing me to have a lot of upper respiratory infections.” Now more in tune with how much his body can handle, he’s hungrier than ever and has sights set on the rescheduled 2020 Tokyo Summer Olympics in July. A training schedule which involves a lot of time on the bike and in the gym. “I’m on the bike six times a week and in the gym twice a week,” he says. “An average of around 18 hours per week on the bike and about three hours per week in the gym. A big week for me might see me close to 25 hours on the bike and a light week around 14 or 15. It all depends on the intensity of my training and time of year.” While the sport does require a lot of hard work and determination; being the fastest and the fittest isn’t what’s going to get you to the finish line. “Being mentally strong kind of goes hand in hand with that,” says Anton. “You also need a good combination of natural talent and a huge will to succeed and work ethic. “But, purely having that is not enough to become the best in the world. You need a good amount of everything.” And that is something he says he learnt at a young age. The Christchurch Boys’ High School alumnus competed in various sports as a teen and after some encouragement from his parents, he gave competitive mountain biking a go. “From there I climbed through the national ranks and then went on to compete internationally.” There’s not many teens who had to balance NCEA with a professional sporting career! “My parents were the ones who fought hard to create opportunities for me to succeed and I had a lot of support from generous sponsors and financial backing from some very kind people along the way,” he says.

School holiday heroes Keeping the kids entertained can be a trying task at the best of times – let alone when the school holidays roll around with a two-plus week stretch of entertaining to be done. Here are Metropol’s pick of ideas for things to do with your school-aged sweethearts these upcoming school holidays.
LOCAL LIBRARIES Every parent knows public libraries are a magical place full of free events, activities and excitement (and not just for kids, actually). Beyond the plethora of fantastic books, there is music, live storytelling, holiday programmes and games at most libraries – just waiting to be discovered. Check out christchurchlibraries.com for your local options.
HOLIDAY PROGRAMMES There is an array of school holiday programmes on offer. Perhaps your young one has a hobby they would like to finesse, or an older teen/young adult has some career aspirations they want to gain some insight into. From mountain biking to graphic design, photography and adventure activities – a quick Google reveals options a-plenty (but you might want to get in quick).
ACTIVITY CALENDARS
HOME HOBBIES
Why not get the kids on board to help plan out the break? Ask them what they would like to do these holidays, and then work out what ideas are achievable and when they can happen. Then, list them on a calendar so they can see what is on the agenda. They could even earn the more special occasions like a tram ride or trip to Orana Wildlife Park by doing extra chores, or modelling certain behaviours.
There is plenty of fun to be had at home. From baking to playing games, doing puzzles and getting creative with arts and crafts – the options are as endless as your child’s imagination. Why not build a hut to watch a movie in, turn the recycling into a new invention or get messy with some paint? If you’re stuck for ideas, Pinterest has you well and truly covered!
SHARING THE LOVE
Why not teach your child about community by signing up to volunteer at local organisations – this could be helping out at an animal shelter, cleaning up at an early childcare centre or park, or simply helping out neighbours with household chores and tasks. This not only keeps them busy, but gives them the gift of giving back, too.
Arrange play dates for your kids, and host their friends in return. This way, you can share the childcare with other parents, while also outsourcing the entertainment to the littlies themselves. Kids can play for hours, using just their imaginations – so with their powers combined, they have the fun all covered off!

Just boot it! WORDS CÉLINE GIBSON
Ask any self-proclaimed fashion follower to name their most cherished wardrobe item and it’s highly likely the answer will be “boots”, followed by a detailed description of the cut, colour and style of the favourite pair and why they’re so revered.
Camilla & Marc Jane Combat Boot
f this year’s autumn through winter trends are anything to go by, 2021 is shaping up to be the Year of the Boot, and no matter your preference – onthe-knee, below-the-knee, midcalf or Chelsea style – there’s a boot with your name on it. With the rule book thrown out the window, boots this year are all about attitude, yet there’s no compromising on comfort. Grunge is back, and it’s drop-dead cool in colours such as bone, butter, chocolate and black, and in styles such as the pull-on ankle or below-theknee lace-up with inside zips. Lug soles are ideal for serious striding. White is white-hot this winter, for boots both long and short, and it’s coming corsetlaced, buckled, gem-studded, patented and socked. Boots in off-cream, neutral, sepia and birch provide off-white alternatives that marry the sensational with the subtle. Cowboy, or western, boots never go out of style and they’re everywhere this year, in both knee and ankle versions; name any colour and you’ll find it. Animal print fetishists can flaunt the look in crocodile, snake, leopard, tiger and zebra, and with heels ranging from lugs, flats and Cubans through to kittens, stacks and stilettos, it’s promising to be fun times out and aboot in the concrete jungle this winter.

Adieu to the flu
Beachy keen
We are sick (get it?) of hearing about viruses! There is nothing worse than having or hearing a runny nose. But according to the Ministry of Health, the time to get ahead of it is now as peak influenza season usually begins in late May or early June. The vaccine is available from your family GP, accident and medical clinic or workplace occupational health service.
Autumn may not be providing those over 30-degree days, but it is still sending a bit of sunshine our way. Don’t shy away from your summer spots just because the season has changed, plus there are fewer beachgoers than those scorching summer days. So, whether you’re there for a swim, sprint or scenic views; make full use of the natural anti-depressant. Ease your mind, take that extra breath and just pause for a moment.
It’s hibernation season
No “I” in team
No one needs telling twice how important a good night’s sleep is. Science has proven time and again it is an essential function that allows your body and mind to recharge, leaving you refreshed and alert. This transitional season is the best time to clock in your seven to nine hours of shut eye; it’s cooler but not cold and it gets darker earlier.
But there is a me… and that’s okay. Joining a team sport is a great way to stay on top of your mental and physical wellbeing. It holds you accountable and sparks new friendships, says exercise physiologist Franci Cohen. Pre-season training for winter sports often starts in autumn, acclimatise to those chillier mornings now.

The seasonal shift to autumn is in full swing, and with it brings chillier mornings, darker evenings, and the looming flu season. What’s breast for you? If you’ve recently been thinking about getting a breast reduction, it’s important to do your research to find the best - or breast - option for you. Metropol catches up with Dr Grant Bellaney from Encorė Cosmetic Clinic, to discuss breast reduction by Tumescent Liposuction.
What are the ‘breast’ reduction options?
Either the breast reduction by Tumescent Liposuction (BRTL) performed by Dermatological surgeons such as Dr Bellaney, or the breast reduction by surgery (SBR) typically performed by general or plastic surgeons.
able to be reduced by BRTL but the technique’s success is definitely less predictable in women under 40. Most practitioners proficient in this technique believe that BRTL is the procedure of choice for most women seeking a breast reduction – particularly if they are over 40.
Why opt for the alternative BRTL option over surgery?
What is the recovery time like?
It can give a significant reduction and comes with a much lower complication rate than traditional SBR. It’s also a form of keyhole surgery so leaves very little visible scars.
Is there an age restriction?
Over the age of 40 most women will have at least 40 to 60 percent or more of their breast tissue composed of fat and significant reduction by BRTL is almost always possible. That said, they have found that younger women’s breasts are still
Apart from heavy lifting, most normal duties can be resumed within a week for most people. There is usually a ‘bruise like’ discomfort for two to three weeks after the procedure and temporary lumpiness of the breast can persist for two to three months. Other side effects are either mild or rare and will be discussed during any consultation. For more information, consult the table on the Encorė Health website below. The pros of probiotic skincare WORDS MORGAN TAIT
Gut-loving probiotics are a science-backed hit with the health conscious. And now it seems our fermented friends are making their way into skincare, too. Because, the same way our insides need good bacteria, so does our skin. BETTER BUGS
BUILDING A BARRIER
The sound of skin bacteria may not spark the most luxurious of thoughts, but experts assure these microscopic members of our body’s ecosystem are good news for achieving a muchcoveted plump, dewy and healthy look.
Probiotic skincare is said to help keep a diverse collection of bacteria living and metabolising on your skin, which in turn helps your skin protect itself from bacteria which can cause inflammation, dryness, itching, irritation and premature ageing.
QUITE A STRAIN It appears there is a popular threesome of probiotics to note when it comes to skincare: lactic acid and the less-easy-to-say, Bifidabacterium and Vitreoscilla. Each has its own benefits, and the more diversity of strains on your skin – the better.
PRO-PROBIOTICS Brands around the globe have embraced the organisms into their offerings, from face masks to mists, moisturisers, serums and oils. Of note is New Zealand’s Tailor skincare, and others include Paula’s Choice, Clinique and Estee Lauder.

Building stronger, Dynamic Spines Whether back pain strikes after a sports game where you took one for the team, whether it has crept up on you with the passing years, or whether you simply reached for the can opener in your own kitchen and something went pop, you’ll know that back pain is debilitating - casting a cloud over every aspect of daily life.
T
he team of physiotherapists at Muscle People can help by working with you to create the core strength that is the foundation of fitness without injury, and a pain-free back. To strengthen the core,
which in turn supports the strength and healing of the spine, the team has developed a programme of therapeutic exercise called Dynamic Spines. Neck, upper and lower back pain as well as core and postural
weaknesses are all addressed within the programme. The length of the programme is bespoke to you, specifically tailored to ensure that you reach your back health goals. Before enrolling you will be assessed by one of the physiotherapists to ensure that the classes are going to be the best approach for your issues. Limited numbers mean you receive higher oneon-one attention from the physiotherapist instructors within each class as you work to your individual diagnosis and ability, but you also get to share the challenges and fun within a group setting. As well as the medical and wellbeing benefits,
there is an enjoyable social aspect to Dynamic Spines. Classes can include pilates-focused exercises and working out on the Oov – a fun, odd looking piece of equipment that activates core stabilising muscles while gently extending the spine. You’ll also receive exercises to do at home. Because the courses are designed and instructed by physiotherapists, they are available as treatment through the ACC system. Muscle People receive referrals from back specialists where core strengthening is required, and for postoperative rehabilitation as well as private clients who want to address pain, mobility and reverse a gradual decline in core strength. The classes are available at Muscle People’s three clinics in the city, at Bishopdale and at Wigram Skies, and they also run at different times throughout the day so there is a location and time to suit. To find out more about Dynamic Spines or for everything else physio, phone Muscle People on 0800 027 194 or visit the website below. www.musclepeople.co.nz Metropol 1 April, 2021 31

Fashion & eco - conscious As we all become more aware of the footprint we are making, our purchasing choices are being influenced by product sustainability, says Kjole Style owner Stephanie Suckling. The Hanmer Springs boutique exclusively imports Danish designed clothing labels such as Dranella, Kaffe and Fransa, which is complemented nicely with other brands from a little closer to home.
A
nd just because the brands are on the other side of the world does not mean they are held any less accountable than beloved local labels. “Our Danish suppliers are very aware of their footprint and put a lot of work into ethical supply chains and sustainability,” says Stephanie. The Danish suppliers are all members of The Better Cotton Initiative, which is committed to developing cotton into a sustainable mainstream commodity. The initiative seeks to reduce the stress on

Choc-tail masterclass WORDS JESS MURRAY
While the Easter holiday means different things to everyone, there’s no doubt the long weekend as we know it is about indulging with loved ones. So, Metropol has gone on an Easter egg hunt for the chocolatey cocktails to try this long weekend.
SHOOT THE EGG, NOT THE BUNNY
A DREAMY CHOCOLATINI
HOT AND CROSSED
The ultimate adult chocolate egg is here, thanks to culinary writer Sara McCleary’s Easter egg shots. All you need is 30ml Kahlúa, 30ml vodka, 30ml Irish cream liqueur, 30ml full cream milk, one cup of ice. Blend ingredients until smooth and serve immediately in hollow Easter eggs with the tops sliced off.
Put that chocolatey spin on a cocktail classic. Add 60ml vanilla vodka and 30ml crème de cacao into a cocktail shaker half filled with ice. Shake in a Bond-like fashion (not stirred) and serve in a chilled martini glass. Garnish with an Easter egg, and “salt” the rim with sugar and cinnamon (or chilli for an extra kick).
If you’re not so chocolate inclined, try a tipple inspired by the other Easter treat, a hot cross bun. Shake 40ml spiced gin, 15ml cinnamon and saffron spiced syrup, 60ml pressed apple and a lemon twist together. Pour into a martini or rock glass, leaving the lemon twist in, and garnish with star anise.

Quintessential quiche WORDS TRACEY EDWARDS
Quiche, whether served hot or room temperature, is a versatile vessel for abundant autumnal fillings. Packed for a picnic, prepared for a party or famished family, local seasonal ingredients come alive when encased in a flaky or buttery shell.
ith origins in Germany and France, it’s the Kiwi-as ingredients that have revitalised the classic quiche. Think a juxtaposition of at least three, for texture and taste, with these autumnal pairing partners. Butternut pumpkin, sage or fennel, with roasted pinenuts or hazelnuts, are synonymous with falling leaves. Ripened pears are eagerly awaited this time of year. A local blue cheese becomes their ultimate bed partner atop pastry sheets and toasted walnuts complete the romance. Whether you call them zucchini or courgettes, they make a fine filler in an autumn quiche. Mild in taste, yet adding zing with the likes of feta, mint, parmesan, and sweet little cherry tomatoes. Autumn hails the arrival of foraged fungi, whether plucked from the woodlands, farmers markets or local deli. Mealy field mushrooms, Italian porcini, paler-fleshed delicate oyster mushrooms, and meaty shiitake all add their magic. Quiches are a wonderful way to sneak in the health benefits of April’s flourishing super greens, such as kale, parsley or even nasturtium leaves. And laden with the piquancy of local cheeses, they will rival the South of France - banishing any preconception of eggy blandness. Even the burgeoning vegan versions are divine. Go generous on fillings and flavours. Aotearoa’s autumn harvest is abundant. And thanks to the inspirations of our artisan foodies, a quiche is an epicurean open book to go wild with.

From its new home on candy-coloured New Regent Street, the local favourite’s intriguing and delectable menu compliments its playful and fun interiors, and extensive drink selection.
W
hen the popular bar began to outgrow its former Victoria Street home, Luke Dawkins, moved the operation to iconic New Regent Street with his business partner, Brett Giddens, and transformed it into a hospitality hot spot! Spread across two storeys, marshmallow pink and forest green walls lead from room to plantfilled room. Through each arched doorway lies another seating area; a pink leather booth with a matching fringed light hanging above; low and curvy green velvet benches and pouffes; a marble topped bar with velvet stools, and sunny outdoor picnic tables.
“We want to give an experience and help people make memories,” says Luke. “We’ve tried to create a space where people feel super relaxed and have a nice time with nice food and nice drinks.” And the experimental yet well thought out, seasonal menu certainly reflects this aim. Head chef Jackson Mehlhopt selects ingredients not only for the impact on the plate, but for their impact on the environment. “We have some amazing produce and local suppliers we work with,” he says. “All of the fish we have is Gravity Fishing from Bluff. Nate, and everything is delivered the next day. “He catches only what is in season, which guarantees that there is no overfishing but also that the fish is guaranteed to be used.” This results in fresh, sustainably caught Albacore tuna, native blackfoot paua, deepsea scampi appearing on Gin Gin’s menu. “A lot of our food matches with gin,” says Luke. “A lot of our gin reflects the ocean, with sea kelp gin from Scotland, and Dancing Sands from Golden Bay uses sea kelp, too.” Jackson uses Black Origin Wagyu, which combines ancient Japanese breeding genetics and techniques with New Zealand’s incredible grass, grain, water and air. “The combination of traditional techniques used to raise the beef and so much care being taken to ensure they get the right nutrition, combined with New Zealand grain and New Zealand pastures, it creates a really unique to New Zealand product that we haven’t necessarily seen before,” says Jackson. While the ingredients might sound exotic and intrepid, the dishes are not intimidating. “The menu is approachable,” says Luke. “It’s not too out there or gastronomic, we want people to feel like they are trying something new, but we’re not pretentious or intimidating about it.” In the kitchen, the carefully selected ingredients are transformed into seasonal dishes using zero waste principles. “Zero waste means maximising the product and giving the product the most respect we can,” says Jackson. For example, beautiful stocks are created from leftovers likes fish heads and bones, which is in turn used for sauces. Foraged flowers and herbs are used for garnishes, and in-house fermentation makes perfect pickles. The result? A beautifully unique seasonal
menu which, for autumn, features sharing plates and standalone mains like scampi donuts, burrata, fried paua bites, red wine poached octopus, hand stretched pizzas and a sweet Weet-Bix slice. When it comes to a drink match, options really do seem endless. Over 120 gins from every corner of the world are complemented by local tap beers and a wine list peppered with the best of
North Canterbury drops, as well as those from farther afield, and its own house red, too. The gin renaissance of recent years means Gin Gin’s offerings are popular with a wide demographic, something Luke attributes to what started as a pop up concept in 2018, becoming a now permanent fixture in the city.

Ingredients 4 hot cross buns, cutting tops from bottoms 50g butter, softened ½ cup chocolate chips/leftover chocolate Easter Eggs (yeah right!) 4 eggs 2 egg yolks (save your whites) 60g caster sugar 250ml milk 350ml cream Icing sugar for dusting
Method 1
Preheat the oven to bake 180C
2
Roughly coat the hot cross buns with the softened butter, I use my fingers to smear it over.
3
Place the bottom half of the hot cross buns in the dish, squishing them in, snug is best.
4
Scatter most of the chocolate over them, then put the tops on with the rest of the chocolate scattered over the top.
5
Whisk the eggs, yolks and caster sugar together, then add the milk and cream, mix, then pour over the buns. Wait for about 10-minutes for it to settle.
6
Pop in oven for 20-minutes, or until tops are browned.
7
Take out, cover with foil (recycled if possible) and put back in oven for another 20-minutes: you are making a custard as such, and it should be set.

Washing up on produce As tempting as it may be to bite into a freshly bought apple straight from the bag, it’s long been known produce should be rinsed before consumption. But, just how much washing is required?
V
isible dirt on your potatoes, the thought of all the hands that have touched your tomatoes and the various sprays used for growing healthy, delicious produce – the reasons for washing before eating seem obvious. While New Zealand’s strict food safety rules ensure our produce is safe to eat, if you’re not convinced running under water alone will get your goods quite clean enough – you may wish to consider a fruit and vege wash. These can be purchased at the supermarket, perhaps at the same time you stock up on fresh fruit and veges, or, you can channel Martha Stewart and make your own at home. Most recipes for a homemade fruit and vege wash use one
cup of vinegar and three cups of water in a spray bottle with 1 Tbsp of lemon juice. Or, 1 Tbsp of lemon juice and baking soda with one cup of water. Spray fruit and veges, rinse under cold water, using a soft bristled scrubbing brush to remove any dirt and dry off with paper towels. For extra Martha points, do this before loading the goods into the fridge and fruit bowl. For leafy greens, wait until just before you plan to use them as extra moisture can speed up decay. Fill a bowl with one cup of vinegar to four parts water and 1 tsp of salt, add the greens and let soak for five minutes. Rinse thoroughly and dry using a paper towel or the salad spinner.

A kelping hand WORDS MORGAN TAIT
The age-old wisdom of eating your vegetables is showing no sign of subsiding, but what appears to be trending is the advice to also eat your sea vegetables. Enter - kelp. A superfood seaweed those in the know are predicting to be a standout ingredient in western cuisine this year. TRADITIONAL TASTE
SUSTAINABLY SALTY
FUNCTIONAL FORMS
Seaweed as a dietary staple is nothing new; it has been used in Japanese, Korean and Chinese food for thousands of years. Now, it’s breaking through into western cuisines beyond sushi and miso soup. You might have seen dried nori snacks at the supermarket, but gastronomical gurus are predicting this superstar ingredients is about to be big.
The sustainability factor of kelp is a big part of its predicted popularity, it can grow from a seedling to five metres full size in a season, doesn’t need fertiliser and actually helps keep the water clean. And that’s just the environmental pros, it is also nutrient dense and packed with calcium and B vitamins.
So how can we expect to see kelp on our plates? Pundits suggest looking out for kimchi made from kelp, a kelp cube for your next smoothie, kelp-based broths and soups, and even kelp-centric salsas. And, as kelp becomes more mainstream, who knows what form this functional food may take.

Zesty Ziggurat If you have a long span of wall, such as in an open plan living/dining room or hallway, you might be at a loss for how to make it interesting. While adding artwork is one option, it could be difficult to find enough pieces – or the right mix of pieces – to fill the space and also create the right balance.
A
nother option is to add tongue-and-groove panelling or wainscotting, which have both recently resurfaced as trends. Be it timber or MDF, this option adds to the natural shape of a room, and it can even help protect your walls from the wear and tear that comes with more time spent indoors. However, traditional wainscotting can be pricey and time consuming to install. Plus, the look might not be the right fit for newer homes, and being sensitive to the period of your home is key when you’re looking to make changes to your interior. One idea is to put a unique and contemporary twist on it by
creating ‘reversed’ panelling. In this look, the often ornate nature of wainscotting has been pared down and simplified to straight squared edges, and elements that would normally be inset have been given protruding dimension. The walls and panelling are painted in Resene Ziggurat, a soft and warm blue with a subtle grey undertone, and floor in Resene Mountain Mist, a soft cloudy grey. However, you could choose to paint your panelling in a contrasting colour. To finish the look, layer in some other tonal Resene blues and greys, with painted plant pots, bowls and trays.

O
ne of the biggest mistakes buyers can make, is to assume that all builders build the same. Shopping around based on price as your main priority, could be a recipe for disaster. Of course, it is important, but so is the quality, the contract, and the inclusions. Ask questions that look beyond price alone and
examine how the house is actually constructed; what are the bones of the house, what’s behind the walls, and what quality of products are being used to construct your new home; do your research. Stone age WORDS MORGAN TAIT
Stone in the home is a design trend that just won’t quit. Inside and out, the natural material projects character, opulence and moodiness which is starting to go beyond benchtops and bathroom tiling.
Brabbu Design Forces
nterior experts are predicting stone – and stone-look - to be big in home design this year, as the appeal of biophilic design (things which imitate nature) and textured materials continues to take hold. Stone is popularly used in kitchens and bathrooms, for counter tops and floor and wall tiling. Marble and granite are especially prevalent, as the dense and hardwearing materials resist stains, withstand heat and refuse to lose lustre over time. However, the material is also starting to be used in flooring in living areas – and especially to seamlessly integrate indoor and outdoor living spaces. Stone splashbacks, basins and sinks are also having a moment, as are stone homewares like serving and ornamental plates, vases, ornaments and candleholders. Outside, stone is of course universally applied as paving, or when broken up, as garden fill. Some designers are even creating modern takes on mosaic designs by breaking up slabs and laying the pieces in haphazard patterns. Not only does stone look fantastic, but according to the psychology of interior design (which looks at how our subconscious reacts to our surroundings), experts say stone represents stability. And after recent times, it’s not hard to see the appeal of that.

Just about everything you need to know about Ngātahi Real Estate is in their name, according to Hayden McKenzie, the company’s managing director. “Ngātahi means together and that’s what we’re striving for with our vendors, it’s a partnership from the moment you list with us.”

hey’re a small, local firm that’s big on what matters to you - having an agency that treats your listing with the kind of attention that reflects how selling your property is the most important thing on your mind. “It’s very easy to get swallowed up by the big corporate agencies where you’re treated as a number. The good news is
that you do have choice and it doesn’t have to be with the biggest.” Being in it together also means treating you fairly with vendor commission rates capped at 2.5 percent. Having agents who share Ngātahi’s core values is at the centre of their approach. Hayden says they’re always on the look-out for agents to join them.
“The big corporates certainly aren’t for everybody with a career in real estate.” Get in touch and get together with Ngātahi Real Estate. For selling your property, property management, or a fruitful career call 0800 4 NGATAHI (0800 464 282) or visit the website below. www.ngatahirealestate.nz

Moving from seaside to city was smooth sailing for a retired Christchurch couple, who had DJ Hewitt Builders at the helm the whole way through. When Marilyn and Neville Tiller’s Redcliffs home was earthquake damaged, Daryl Hewitt was the well-respected builder chosen to create their sanctuary on Carlton Mill Road. “His work was perfection, the mastermind of building!”, says Marilyn.“Daryl showed us ideas for various design styles, ideal for the chosen site. Then with O’Neill Architecture we pored over the plans together, working out exactly what we needed and wanted, such as plenty of room in the bathroom as Neville is now in a wheelchair.” The couple have always had black and white homes. Striking in black, the simple design resides on the iconic riverside spot. The brief was for simple and easy living for the two-bedroom home, on one level with access to decks on all sides. “Neville loved looking out at the
boats on the estuary, but now it’s the ducks on the river. He says he’s now the Mayor of the Avon!” Daryl would always listen to us and then deliver and keep us informed of the progress. With attention to detail, he never forgot an item. Neville wanted an outdoor shower, and we got it. Daryl’s wife and interior consultant Tara was really good, she shared so much of her knowledge and advice. Marilyn acknowledged all the wonderful consultants and subtrades that were fully managed throughout the project. “The site was always left tidy. Everything was just top notch. He had the whole process covered – from A to Z.” “The Hewitts have made the whole process very, very simple for us. We have had no problems. I can’t praise them enough. We are very proud and happy to be in a DJ Hewitt home, now we are experiencing the joy of living here.”

Prioritising sleep We’ve all had a lot of time to reflect over this last year and consider what’s really important. Without the ability to plan for traditional luxuries like international holidays, instead many of us have focused our attention on the quieter luxuries of home.
A
ll the stress and the uncertainty of the pandemic have really highlighted the need to reassess our priorities,” says David from Dreamwool Beds. “We invest so much in our diet and our exercise, and then undo all that good work by neglecting our sleep.” It can be challenging to encourage people to invest in getting the best sleep because, unlike your newly remodelled kitchen, your bed is a luxury that only you know about.
But, as David says, it could be the most important investment you make in your health and well-being. “Getting a deep and restful sleep is what enables us to make the most of our waking hours.” With nearly a century in the market, Dreamwool’s incomparable New Zealand craftsmanship focuses on allnatural materials for optimum comfort and luxury. Layers of breathable, South Island Merino wool are complemented
We invest so much in our diet and our exercise, and then undo all that good work by neglecting our sleep
with 100 percent natural, conforming charcoal-infused latex, customisable pocket springs and delicate micro coils for the perfect firmness and fit. While the rest of us were losing sleep over the pandemic, David and his team have been busy upgrading the entire Dreamwool range to include 25 percent more Merino wool, 30 percent more natural latex in the Pocketspring range and double the number of micro coils. “The pandemic has allowed us all to refocus on what’s really important and change our spending habits accordingly. For many of us, that has meant a realisation that the easiest way to positively impact our quality of life is the best night’s sleep.” Invest in the most luxurious sleep of a lifetime with the quality and craftsmanship of Dreamwool. As David says: “It’s an investment that will pay off every morning of your life.” Visit Dreamwool Beds at 96 Disraeli Street, Sydenham, phone (03) 343 5105 or check them out online.

BANK OF
Every week in our auction rooms I get to see a huge range of emotions playing out. I’m often very moved by the drama that a competitive process can create for attendees and my heart goes out to them. There are tears about missing a muchwanted but very sought-after property, there’s elation at successfully purchasing, there’s a genuine pride at finally getting on the property ladder and, for some parents, there’s the realisation that without them the purchase would not have been possible. These are tears that I can definitely relate to. It seems more and more parents are seeing withdrawals from the trusty, rusty or even crusty ‘Bank of Mum and Dad’ and as we personally get a little bit nearer to that time ourselves, I thought I’d take a closer look. Obtaining funds from family is not a new phenomenon, but it is a very important one for some first-home buyers – and with lofty deposits often required, it can involve big numbers. It’s essential parents are aware of this and that’s why we will often see parents not just on auction day but throughout the whole process, including open home attendances, and second and third visits. Being part of a very close family, I imagine that I’d want to do this as well and whilst some real estate professionals struggle with large family viewings – and
even larger post-visit family debates – best you get used to it! During my research, I’ve also discovered that providing funds is not as straightforward as it once was. Originally the main means of assisting were, firstly, contributing to the deposit, to a level the lender was happy with, and, secondly, supplementing additional funds to ensure the debt-servicing criteria were met. It’s often referred to as a guarantee. This second method needs to be carefully thought through by parents, as a default by their son or daughter (and much as we don’t like to imagine it, this can happen) could see them shouldering the responsibility for the loan themselves. This can become extremely uncomfortable, especially if they have their own financial commitments and pending retirement. To address this, there have been changes to the legislation deeming that any and all guarantors to a loan need to demonstrate the ability to meet the required loan payments to avoid the worst from happening. As much as we all love our families, if you are considering helping in this particular way it’s essential to get independent advice. So, what are these purchasers buying? It seems they are trying everything.
First-home buyers with limited budgets are thinking outside the square and in some cases the market is giving them a robust education in looking at properties that buyers might have had the luxury of excluding in the past. Varied locations, new subdivisions made infinitely more desirable due to improved motorway access, new schools and communities, are all hugely popular. We are also encountering parents looking on behalf of overseas offspring with British Pounds and American Dollars burning a hole in their pockets and those budgets are extraordinary when compared with what was once considered necessary for making a purchase in our local market. So much of what we achieve as human beings relates to how we have helped or been helped by others, and I imagine one day I’ll be in an auction room helping one of our family members make a withdrawal from the trusty bank of Mum and Dad too! So, to all those parents in the same position, well done, without you a whole generation wouldn’t get to enjoy what we thought of as a right – and that’s home ownership.

What to do for winter WORDS CHERYL COLLEY
April is when autumn really gets going. The days are noticeably shorter and night temperatures cooler, so we need to be preparing the garden for winter. Here are Metropol’s tips for what to focus on in your mid-autumn garden.
Blooming bulbs
Vege versions
Leaves and lawns
Spring bulbs may still be planted now, if space is lacking plant them in containers and pack them in. Bulbs in pots can be planted much closer than those in the garden to achieve a full display when flowering.
Tomato plants will be getting to the end of their season so remove the old plants and dispose of the vines especially if they have had any disease. Best not to compost them. Dig potatoes if the ground is likely to get water-logged and store them in a cool dark place.
Fallen leaves literally smother lawns, preventing light and oxygen from penetrating. If you don’t want patchy lawns this spring, collect the leaves and pop them in your compost bin or in a separate bin to make leaf mould.
Flowering and fruity
In general
Cut back perennials. Prune berry fruits. Do clean up spraying on fruit trees so that any pest or disease will not be carried over to the next season. Any frost tender plants need to be moved inside if in containers or else covered for protection once the harder frosts start.
It is important to cut back any over-hanging branches on trees or shrubs near pathways and to treat paths for moss so that we are safe when the weather is wet and cold.

Relaxation stations WORDS MORGAN TAIT
Outdoor living spaces that extend entertaining outdoors have surpassed trend and entered necessity territory in home design. And in 2021, landscape designers are predicting this will go one step further with a rise in relaxation areas - garden escapes which create a feeling of holiday without leaving your property.
OZ Design Furniture
merging overseas where people have less travel freedom than fortunate New Zealanders, these areas are being seen as an antidote to travel restrictions as well as providing wellbeing benefits, too. And as with many global ideas, we can expect to see garden relaxation areas emerge in some way, shape or form here; whether in the same format, or just slight adaptations to already popular outdoor living zones. If you do feel inspired to create your own outdoor nook, it doesn’t need to be large, expensive or extravagant; it could involve a seat in a secluded area, a small pergola or making space for a brazier away from your current outdoor entertaining space. Some relaxation zones, though, go all out. In-ground fire pits, architectural shade and rain covers protecting seating areas on paved courtyards. Or, what about an outdoor bath or hot pool, strings of fairy lights or in-ground fire torches? Perhaps add some decking, some paving stones or a water feature, or plant your relaxation space with your favourite flowers, or more low maintenance greenery if gardening is not your bag.

Supply chain issues a perfect storm
Bridging the education workplace gap
Over a year after the first cases of Covid-19 hit our shores, we continue to see considerable strain on our global supply chain, which could have significant long-term repercussions for both businesses and consumers.
For as long as I can remember, the need to improve the interface between education and the workplace has been an issue. How can we better equip those in education to be as well prepared as possible for life beyond the classroom?
T
G
he concern around freight is a “perfect storm” of supply chain challenges. The global surge in demand for goods teamed with factory supply issues has seen shipping lines changing tack – putting containers geographically out of balance around the world. National ports too are struggling with issues around skills shortages and infrastructure. This has caused cargo operators to re-think their services to Aotearoa. So how does this impact us? The products we see on shop shelves and the price we pay for them; our agriculture, manufacturing and construction sectors, and exporters who need certainty around delivery. It also
puts strain on the transport industry – costing everybody more to do the same job. That increase will need to be passed on to the consumer. As a small nation reliant on international trade for our way of life and to help turn the cogs of our economy, we need to ensure everything is being done to provide a long-term, resilient supply network. The key will be taking a more collaborative approach between businesses and government to ensure our location doesn’t put us in the too hard basket, impacting our country’s trade competitiveness and consumers’ pockets long-term if left unchecked.
iven its unique grouping of key stakeholders, (Canterbury District Health Board, Ara, Otago University, University of Canterbury, supported by Ngāi Tahu) Te Papa Hauora is well predisposed to address that interface. In May, Te Papa Hauora is hosting The Future Leaders programme. This involves health students who are advanced in their training, being exposed to a wide range of topics and engaging with a variety of leading health professionals. The students will be exposed to challenges they will face in leadership roles in their future work. The week long programme is about gaining a better understanding of the
Canterbury Health System, its key drivers, and how it compares to other health offerings in New Zealand and beyond. There is strong emphasis on future scenarios and how to engage in new ways of working to shape our health system. The students are challenged to consider patient demographics, culture, equity, funding models, infrastructure and politics, amongst other things. We know from past experience that participants are better equipped to adopt leaderships roles, and we would like to see more of this type of bridge building in our community.

Finding women founders
Time to act
At Ministry of Awesome, we are completely focused on growing NZ’s future high-value companies. One of the most exciting projects we are working on right now is how we can encourage more women founders into the start-up pipeline.
We are now well and truly into autumn. Maybe the odd chilly day will give you a chance to have your say on a range of plans that represent significant investments in our city.
N
ot only do we want to encourage diversity in our start-up ecosystem we also know that the women of Aotearoa are one of our special Kiwi superpowers. According to the Index of Women Entrepreneurs, NZ ranks as the second most femaleentrepreneur-friendly country in the world just after the US. At Te Ōhaka, our start-up incubator reflects this trend with 13 female founders out of 23 start-ups. Elsewhere in the world, according to Silicon Valley Bank, only one out of four start-ups even have women on their founding team. Diversity brings stronger innovative capability, builds healthier cultures, and broadens impact. But female
founders significantly outperform their male counterparts. According to Boston Consulting Group, for every $1 of funding, female founded start-ups generated an additional 78 cents versus the 31 cents of their male start-up founders. Furthermore, 2020 was the year of female unicorns (billion dollar start-ups) achieving a new record of 21 female founded start-ups compared to only four in 2013. At Ministry of Awesome, we are seeing increasing numbers of female founders with side hustles and bold ambition to take on the world. This is an excellent sign for the future of Aotearoa.
I
have referred to the LongTerm Plan as investing in the future. I am aware of calls for austerity in the wake of Covid-19. However, under-investment in our key infrastructure simply passes on the problems and costs to future generations. We need a balanced approach. And that’s why we are asking for feedback on a draft Climate Change Strategy at the same time. We need to act together. These two documents are critically important; they will help shape how our city grows and develops in the next decade and how we respond to the challenges and opportunities of climate change. We know from our
experience over the past decade that we need to plan for the unexpected. We have established a good track record of building on what we know and adapting to challenges we face. In many respects we are a new city with new infrastructure and community facilities that exceed what a city our size would expect. That is the legacy of investment decisions made in the wake of a crisis. The legacy of the investment in relationships has also paid off. We are at a turning point and we need your feedback to help us invest wisely. Visit ccc.govt.nz to have your say.

Much of the lower South Island is known for extremes of climate – scorching hot over 30-degree days in the summer and temperatures plummeting well below zero in the winter. Creating culturally inclusive architecture As architects we have a unique opportunity to imagine an architectural tapestry weaving together thousands of threads required. To create a built environment that reinforces rich memories, stories and values while also creating spaces to embrace our dynamic multicultural community relationships is particularly reflective of our Te Tiriti o Waitangi partnership.
T
he rebuild of Christchurch following the 2011 earthquakes has been a huge catalyst in advancing a more bi-culturally inclusive design process. Historically, the city layout and its architecture reflects a strong monocultural English influence with minimal
consideration of our local Māori Treaty partners Ngāi Tūāhuriri who have long dwelt on the Canterbury plains. We need to listen to their rich stories and values, weaving these intrinsically into the deepest fabric of our built environment. As principal architects on the Justice and Emergency Services Precinct we spent four years engaging with the Ministry of Justice, Ngāi Tūāhuriri and their appointed artists developing integrated designs, a unique visual identity founded on their values, narratives and aspirations that endeavor to create a deep resonance and inclusiveness. Te Omeka, the name gifted to the precinct, reflects Tahu Potiki Ratana’s vision that, “The treaty will be realised when the hearts and minds of all peoples speak as one.” Architects can champion Te Ratana’s vision, and with our clients, foster multicultural engagement so the projects we create will provide a rich and inclusive city-wide tapestry. www.wsp.com

Buying or selling a home?
Don’t let the dream vanish down the drain
hen it comes to buying or selling a home, drains are not necessarily something many of us consider. However, as Josh Mackey, owner of MHR Drainage, explains—damaged drains are a constant problem for both buyers and sellers in the greater Christchurch area. “Following the earthquakes, we were flat out doing emergency drainage repairs,” he says. “These repairs — which were only ever designed to be temporary — may well be failing now. Combine this with the fact that thousands of homes in Christchurch still have undiagnosed problems with drains, creates a big red flag for buyers. “Our team carry out diagnostic tests daily and about half the homes we visit show earthquake related damage to the drains.” Josh points out there is good news: “Damaged drains are covered by the EQC, even if your 2010 or 2011 claim has been settled. Plus, there is no cut-off date for lodging a claim relating to drainage. “So, the best solution for vendors is to have an inspection done prior to listing your home on the market. Then if there are problems these can be rectified through the EQC system. Similarly, for a home buyer, a simple drain inspection as part of your due diligence provides peace of mind and helps avoid costly complications down the line.” For more information on drain inspections — call the team at MHR Drainage on 0800 356 946. www.mhrdrainage.co.nz

Putting the health in homes
The goal of a healthy home is everywhere these days, and it’s both an essential and admirable one for the building industry. But what does it really mean? Usually, boxes are considered ticked by stepping up energy efficiency through insulation, and reducing moisture in the home, often through heat exchange systems. At Health
Based Building, Director Robin Curtis takes the concept exponentially further towards true sustainable development in home building. Using the Foreverbreathe Specification, Health Based Building helps people to design healthier homes with the right products, achieving a new standard in high performance building. “As well as combining highperformance vapour-permeable
building materials which migrate moisture away from the indoor space with minimum energy use and loss, the specification goes further to ensure materials do not contain harmful chemicals or potential to release harmful chemicals,” says Robin. “It’s the external objects within the space around us that shape our health - the walls, floors, doors, paint, soft furnishings, fittings and substructure. And most of the products and materials used to build new homes are chemically advanced, synthetic, processed or treated. This can have a direct impact on human health. “For example, health organisations have identified many substances that can cause the onset of asthma and many of these are common ingredients of building products,” he says. The Foreverbreathe Specification doesn’t have to cost more than a typical new home build. The team can help people assess what makes up their space, “we have done it all for them and have a multitude of great products on our website, whether you are building, renovating, or simply changing around a few things,” says Robin. They even have a Foreverbreathe Specification demonstration home located at 1062 Colombo Street, Christchurch, so people can get a feel and access to data to confirm how it all works in real life. Call them on 0800 611 711, or check out Foreverbreathe Specification at the website below.

am Fleetwood has over 27 years of building experience, so it should come as no surprise that Fleetwood Construction,
which celebrates its 18th birthday this year, has garnered an impressive tally of awards in the prestigious Registered Master
Builder House of the Year (HOTY) Awards for projects in Governors Bay, Strowan and Papanui. But for Sam and his trusted team, the biggest accolade, to date, has been taking out four HOTY awards in 2020 for a build in Merivale. The build won a Gold Award in its category, plus the Bathroom Excellence, the Kitchen Excellence and the Outdoor Living Excellence Awards for Canterbury. Fleetwood Construction Director, Sam Fleetwood, worked with Darren O’Neil from O’Neil Architecture, and the clients throughout the design process, advising on how to best achieve their vision for the property. “We have admired Darren’s work for many years,” says Sam. “Darren opted for a ‘less is more’ approach and a very clean colour palette, the result is a home that
looks striking and simple but, in fact, hides its complexity, both of layout and build difficulty.” Sam and the Fleetwood Construction team worked closely with the clients throughout the build to make sure every detail was just as they had imagined it to be. “Everyone worked so passionately and efficiently on this build. We all thoroughly enjoyed watching the home take shape and seeing the end product with the client’s smiling from ear to ear on move in day.” The resounding success of the Merivale build may signal the beginning of many more grand designs from this award-winning construction company. If so, Christchurch has much look to forward to. Contact Fleetwood Construction on 0800 381381 or visit the website below. www.fleetwoodconstruction.co.nz
