It is our home; it is the home of all of us and it is the responsibility of each and every one of us to ensure this home remains safe for everyone, because the fact that some of us do not feel safe in this home is not a new phenomenon. There have been people within our society that haven’t felt safe for a very long time now. The uncomfortable truth is that there is a ‘them’ and ‘us’ discourse that is prevalent in our society. While we’ve been saying all the right things for the past fortnight, that they are us, that we are them, that your sons and daughters are my sons and daughters, that you are my brother and my sister, that your family is my family, it is time to start living ABCthe AUDITED truth of those sentiments. It is no longer enough to be a bystander. If they are our children, our sisters and our brothers, it is our place to speak up; it is our place to protect them; it is our place to ensure each one of us is safe here. The Canterbury Employers Chamber of Commerce held an exclusive luncheon with Prime Minister Jacinda Ardern earlier this month.
T
his was the third luncheon of its kind for The Chamber, with previous
events fronted by Winston Peters and John Key. It was fitting the event was held
the day before International Women’s Day. Jacinda captured the attention of around 660 members and non-members of The Chamber at the Air Force Museum in Wigram. “What a crowd,” Jacinda said as she commenced her speech, commending Christchurch’s growth and spirit “in spite of the hurdles”. Being so motivated and successful, how do you prevent yourself from burning out? I live a very simple life – love of self and others, great connection with other people, simple diet and living in alignment with what it means to be human.
What are some of your favourite healthy recipes? I can’t go past simple ingredients such as seafood and meat and then team them with some organic vegetables either in a soup, a roast, a barbecue, salad or a curry.
Why do you think people have connected so strongly with you and what you do? Truth always resonates with people and I always speak my truth and then it is up to someone how they interpret that for themselves.
How would you sum up your food philosophy? Simple and nourishing.
What is the most fulfilling or enjoyable aspect of what you do? I would say living each day to the fullest in the moment and expressing myself creatively and having loving relationships is very fulfilling.
What are some of the key things you do to keep healthy and well during the year? Mainly a species specific diet is key for optimal health. I also focus on emotional wellbeing and removing negative patterns and beliefs and creating greater awareness about self.
What attracted you to cooking? It was a life skill that I believe everyone should have the ability to learn. What are you looking forward to in the tenth season of My Kitchen Rules? Some more great cooking and entertainment.
What do the next 12 months have in store for you? More breathing, more sleeping, more eating, more loving, more learning, more teaching, more movement, more play and more fun!

nown affectionately as Paleo Pete, the Australian chef, author and television personality most recently headed the award-winning documentary film The Magic Pill which shows the impact food can have on people’s health, now streaming globally on Netflix. While he’s courted controversy for his mission to cheerlead the caveman diet into the mainstream, at the heart of Pete’s philosophy is a desire to encourage others to embrace a happier and healthier lifestyle. We caught up with Pete about his food and life philosophies.

I had the opportunity to sit down at Sugarhorse on Moorhouse Avenue with the star of TV’s The Chase, the one and only Dark Destroyer himself, Mr Shaun Wallace.
S
haun was in New Zealand with Believe it or Not Quizz nights thanks to Brendan Lochead. “All he did for eight days whilst here was give his time, energy and passion. He must be mentally exhausted. We’d be late for events because he’d be signing every piece of scrap paper offered by every school kid so nobody left disappointed. “He is a true gentleman; never failed to put others first and genuinely delighted in people and the energy he drew from them. It’s a week of my life I’ll never forget.” After waiting patiently at Sugar Horse for a gap in the crowd I sat down with the man himself. How have you enjoyed New Zealand so far Shaun? It’s been fantastic; just been down in Queenstown Bungy Jumping with my tour manager Brendan. One of the reasons I came to New Zealand was to say thank you to all the wonderful people in New Zealand for making The Chase so successful. I’ve been blown away by the way I’ve been treated here. It’s been a wonderful adventure. How’s The Chase? Still enjoying it? Loving it. We celebrate our tenth anniversary this year and I’m the world’s first chaser, so love every minute of it. It’s a joy and a privilege to part of it.

Where to in the future for The Dark Destroyer? Chase will go on, but I never take that for granted. Everything has a shelf life and until that day comes, I’ll just keep being the best chaser I can be. How do you retain so much knowledge? I’m a trained barrister. I’m trained to react under pressure, think under pressure, think calmly, think quickly and to research so I have all those key skills. Crucial skills in the final chase. How do you find out all the information needed for the show? We keep ourselves contemporary. We already know the basics… newspapers, films, music, awards – no information is useless information; you never know when you could be asked it. What’s after New Zealand? Well this is the second leg of my world tour and I’m going back to England for a day’s rest then doing a cruise ship in the Caribbean. It’s not hard work, I’m just thanking the people for putting me in the position I am today. I’m truly grateful. Your book, Chasing the Dream, tell us about it? Well the story started and ended when I lost

I want people to realise that everybody’s story is not plain sailing. I’ve had my share of disappointments. You can overcome them with a focus and determination and support but it’s the reflection in the mirror that determines where you go in life. I had an ambition as an 11-year-old that I wanted to be a lawyer. It’s about setting goals and challenges and all that does is bring you to the start line of another challenge. What challenges do you want to achieve? With fame comes responsibility, I want to use my fame to inspire the next generation of people. I’m no different to anybody else. I don’t want to be better than anybody else. I want to see myself as a goal model rather than a role model. My feet are firmly on the ground. If you look at my life and try to follow my philosophy that would be the greatest complement somebody could pay me. You can earn millions and millions of dollars, but mortality is the great leveller. When you’re dead you can’t take it with you but if you can use your name as a legacy down the years and say, that man stood for good things, then that’s what I want to achieve. I left Sugar Horse with a new appreciation for a gentleman who is not only someone with great knowledge but a great entertainer who is truly, and I mean truly, grateful for his life. children haven’t, so we give to them as much as we can.” Fiona’s English born husband, Ian Tilley, has produced for Deutsche Grammophon, EMI, Universal, Classic FM, and BMG. Fiona works with Ian on these albums and writes many of the orchestral arrangements. Ian then heads to the UK to finish them. “When it comes to my stuff, it’s Ian who does everything – from production to media to posters. I get the praise for my concerts, but really, a lot of the legwork is down to him.” The Gift of Music is Fiona’s next big gig and she’s thrilled to be part of it. “I remember walking down London’s Oxford Street with Ian literally dragging me, because I was crying; then homelessness came to Christchurch and I was crying walking the streets of my own city. How can there be such a divide? Nobody wakes up and says ‘Hey, I want to be a homeless person!” All the money raised from The Gift of Music goes to registered charity Street Wise to help pay medical expenses for the homeless. “The cynics will have their say, but I don’t think about them,” Fiona says. “This is about helping people – trying to bridge that gap between the Great Divide.” The Gift of Music will be held at the Transitional Cathedral on Saturday 30 March. t 12 years of age, Fiona was leading the Christchurch Youth Orchestra and, at 14, she joined the Christchurch Symphony Orchestra. It was due to hearing beautiful Spanish and jazz melodies in her late teens that Fiona began to explore other music styles, such as Latin, Celtic, gypsy and jazz. By the time she hit her 20s, she’d found her niche. Fiona also began composing music around this time, with much inspiration coming from overseas backpacking experiences. “I got locked out of a backpackers one night because I’d returned late from playing in a blues bar in Belgium. I ended up sleeping on the concrete outside, with my arms wrapped round my violin. I was a bit of a wild child!” She recalls seeing both Nigel Kennedy and Hungarian musician, Roby Lakatos, at Ronnie Scots. “About a month later I was asked to play at Ronnie Scots. I remember standing on the stage doing a sound check and thinking, ‘This is ridiculous – I’m standing where Roby Lakatos did!’” Conversation turns to how Fiona’s life has evolved since her 2014 album Swing Driven Thing came out. Ice Skating is not a well-known sport in New Zealand, but a Christchurch teenager is carving out an exciting career on ice.
– choreographed jumps and spins, “which is like a cross between ballet and gymnastics”. She competed at the Nationals in 2017 and 2018, winning silver, as well as in last year’s South Island Figure Skating Championships. “I get up at 5:15am and train mornings or afternoons every week day, to qualify for this year’s nationals,” Milla says. “I now find it easier than walking! The ice kind of feels like my home.” A dedicated student, she often takes her homework to the rink. Skating all week, she tries to keep the weekend free and also enjoys hip hop dance. The busy Year 10 student is also a Junior Associate at The Ballet Academy at St Andrew’s College, which similarly requires flexibility and strength. At 178cm tall, she’s also in development training with Portfolio Model Agency, with an ARA fashion show already under her professional belt. This year she is expecting her sporting career to really take off and now has more comfortable, perfectly fitting ice-skating shoes. Miranda recently learnt the technique to mould them to fit and now does the same for other skaters in the club. Milla has skated at the Grand Palais in Paris, Dubai Mall and The Hague, and says the bullet spin is her favourite element. “My goal is to travel the world and to skate everywhere, and either teach or coach,” she says. “I want to keep skating forever – but for now I’m focusing on getting through my next grade test this month.”

illa Newbury “was born to move,” her mum Miranda says. “At four she loved ballet and dressing up – a wee showgirl.” Miranda, who grew up in the Netherlands skating to school in winter along the canal, took five-year-old Milla to Alpine Ice rink two weeks after the February 2011 earthquake. Milla fell over, someone skated over her fingers and it was a quick trip to A&E. But a fortnight later she wanted to go back to the rink and joined the KiwiSkate programme, which quickly progressed to two sessions a week – “absolutely loving it”. Then at the rink’s Christmas on Ice performance, coach and former international competitive skater Liz O’Neill picked her out of the crowd. “The now seven-year-long relationship between us has been amazing,” Liz says. “It’s a very expensive sport, and there’s no funding. Ice-skating teaches focus and hard work. It’s not just pretty spins and dresses – it’s skating on knives. Milla might have to repeat a certain thing 100 times, but she never gives up. You have to have passion to do this sport.” Milla was a cute Olaf and Liz was Elsa in the 2016 performance of Frozen. She combined her private coaching with group sessions – a great way to connect with other skaters in which can otherwise be quite a lonely sport. Now 13, Milla competes in freestyle ice-skating

Their EP We Can Only Laugh is so titled because, “We take our music seriously, but we don’t take ourselves too seriously. How can we, we’re only 17 and 18 years old,” Nat Hutton says. “We have known each other since preschool – he’s my best friend. Our first song together was actually written in tribute to the Christchurch Earthquakes, in 2011.” Jono Stewart came from a choral background and, with his uncle James Reid the lead singer for The Feelers, was surrounded by music. “I get inspiration from whatever I’m listening to.” Crumbs is the duo’s personal favourite track – “It includes a lot of elements.” They’ve been highly involved in productions with producer Will McGillivray from NOMAD – “a big inspiration”, as is their mentor Sacha Vee from SOLE Music Academy. Finalists in the past two NZ Rock Quests, they made the top five in 2017. They opened for Jed Parsons here last year and will open for Australian indie folk singer, Michael Dunstan, who plays on 11 April at Blue Smoke in The Tannery. “There will be at least another single out this year – there’s lots we haven’t released yet! In the city Four Ave Festivities A beer-y good spot There’s a new brewery that’s opened its doors at 8 Bath Street with some great history and a stunning pilsner. Lighthouse Brewery was started in Nelson by Dick Tout 21 years ago before he retired from the brewery business and listed the business for sale after finishing his last brew in July 2017. Jason Revell relocated the brewery to Christchurch on Labour weekend in 2018 where he has been brewing for Ferrymead Night Markets, private weddings and now for the bar at the brewery site. Beers from Lighthouse Brewing Company will soon be available at bars, restaurants and sports clubs. The brewery site will continue with events and is available for private functions, special brew days and off licence will be available soon.
Dog-gone it! William Wegman: Being Human is on display at Christchurch Art Gallery Te Puna o Waiwhetū from 6 April to 28 July 2019. William Wegman: Being Human, is the artist’s first and only New Zealand exhibition and tracks three decades of relationships between the enigmatic American artist and his iconic dogs. Man Ray, Fay Ray and her offspring are collaborators in Wegman’s photographic and video projects, which focus upon what it is to be human in the most enduring and deadpan way. It’s a little bit different and a whole lot of fun so check it out at our local gallery soon.
Monkey-ing around On 8 June at the Isaac Theatre Royal, The Monkees Present: The Mike & Micky Show. It’s a unique concert experience with two of the stars of the hit TV show The Monkees, Michael Nesmith and Micky Dolenz. Times may change but infectious pop hits and wonderfully charismatic characters stay in our hearts and memories forever. Anyone born in the 60s would have grown up with these tunes so it’s going to be a real flashback. This will be the first time Mike has appeared in New Zealand since 1977, so be assured the shows will highlight many of his compositions, including some that have never been performed live.
Culinary collaboration A culinary collaboration is coming to town! The Pescatore collaboration dinner will be two dinners in Pescatore on 10 May and a second dinner on 11 May, featuring some of Australasia’s best chefs – Cory Campbell, head chef at Vue de Monde in Melbourne, and Peter Gunn from Ides in Melbourne who was a sous chef at Attica in Melbourne and, of course, Ryan Henley from The George.

raeme Walcott speaks from the heart. He founded Paragon Computers in the mid-1990s and built it up from a one-man enterprise to become a trusted IT support company specialising in looking after the IT requirements of customers across a wide range of industries. Graeme has now decided it is time for him to retire and to leave the company’s future growth in the hands of his partner of ten years – Riki Browning. Graeme will be filling his future days, not with internet systems, VoIP services and Cloud Migration, but also with family, golf, travelling and spending time at his holiday home on the West Coast. “I began my own computing company at just the right time. It was when IBM PC compatible computers were becoming affordable and available to small businesses. I had completed a computer programming course while working in the UK – back in the days of huge mainframes and punch cards being fed into the machines. That was all to change dramatically with the introduction of the PC.” At first, Graeme’s focus with Paragon Computers was on building home and business computer systems and selling PCs – the 286, the 386 and the 486 – very familiar numbers to people who developed their computers skills on those early Intel processors. “Over the years we have supplied most Canterbury high schools with
computers. At one stage we supplied an order for 140 PCs from Cashmere High School and Burnside High was another major client, but businesses are our main market.” Competition soon became fierce in the PC market, with large appliance stores being able to supply cut cost computers. That challenged Graeme to expand and evolve the services offered by Paragon into IT support which is the emphasis of the company today. “We now have a team of eight highly trained technicians who can provide a tailor-made solution that’s exactly right for a business. Our people have accounted for our success in still being around after twenty-five years and over that time we have fostered great working relationships with our customers. I am very proud of what we have achieved in such a challenging and competitive industry. Other companies that started out simply selling computers and then didn’t diversify have disappeared. We are still here.” Riki Browning, now the sole owner of Paragon Computers, says the company is in good shape thanks very much to Graeme’s innovative approach and committed customer service. “We have some very loyal customers and I intend to both cement Graeme’s legacy and further develop the company. I am sure Graeme will always be interested in what we do. After all it was his baby in the beginning.” Metropol March 28, 2019 25

Wigram Primary School’s new campus is open and exciting. New restaurants, retail outlets and community services are operating and new housing is popping up everywhere.
T
he Ngāi Tahu vision for Wigram was that it be ‘more than a residential subdivision’; the idea that it be a vibrant community, including the social infrastructure required to create it, is being fulfilled. Wigram is a sophisticated confluence of old and new. While reinvigorating the area with lots of sparkly new things, the designers were careful to respect the deep history that dates back over a hundred years
in the modern era and for more than a millennium of indigenous activity. On the relatively ‘new’ side of the slate (it’s been open a year and a half) is The Good Home, a gastropub that tries hard to provide the feeling of home for diners – and succeeds. With spaces to feel at ease in – whether bar leaners to watch the footy with friends, booths for the family, or comfy leather chairs upstairs with a book – and
a menu to suit everyone, The Good Home really does feel like home. On the ‘old’ side is Wigram Base Hotel, a wedding, conference and event venue. Built in 1938 to be the RNZAF Base Wigram Officer’s Mess, today it maintains much of the original décor. You can literally smell the history in the walls of the ballroom, the billiard room, or the anteroom. With a selection of venues for weddings, including the quaint St. Mark’s Chapel, and conferences, Wigram Base Hotel is tucked into pretty gardens on Henry Wigram Drive. The Harvard Bar and Café, on the same site, is a quiet, comfortable local with an all-day menu and indoor and outdoor dining. Many local initiatives foster the community spirit intended in the original vision. Language classes, recreational activities, fundraisers and more. The
Food Resilience Network, in conjunction with the CCC, will host a screening of locally made documentary Edible Paradise. On April 10 at the Air Force Museum, it is for residents who are keen on creating an edible component to the local landscape. See the FRN Facebook page for more details. The Air Force Museum of New Zealand is a spectacular resource that, despite a high ranking on TripAdvisor’s ‘Things to do in Christchurch’ (#3!), many locals do not take advantage of. It is an excellent record of NZ’s military aviation history. There is so much to see and do; it’s a great afternoon, or a day, for the kids and grownups. It’s open from 10am until 5pm daily and it’s free! Late last year (officially October 2018), Archives NZ opened its new Christchurch Regional Office on Harvard Avenue in Wigram. The new facility is “designed to place primary attention on the secure storage and environmental protection of valuable archives”, including government documents, maps, paintings, photographs and more.

Can you tell us a bit about the story behind the Harris Tapper brand? I have had over 10 years experience in the industry working across buying, marketing and brand management in London for Urban Outfitters and in New Zealand for Topshop Topman. Lauren, my business partner, has worked in retail across top NZ brands and more recently in PR managing the account for Topshop Topman, which is how we met. We started to notice a gap in the market. We wanted to go against industry norms and create a brand with a ‘see-now buynow’ business model. It was important to us that our brand was inclusive and all about celebrating strong, independent women.

Who is the Harris Tapper woman? I suppose she’s globally aware and respected in her field, whatever that may be. The Harris Tapper woman is intelligent, inclusive, refined and independent. She leads a fast-paced, experiential life and isn’t afraid to push boundaries. She recognises quality and knows what she wants. She commands respect through what she stands for and what she achieves but she also instills this in others. What’s your design philosophy? We try to keep all of our designs uncomplicated. We want everything to be wearable, with an easy elegance. We have a strong idea of who our woman is so we design around her and what we believe she would want in her wardrobe. Where do you draw your inspiration from? Our main source of inspiration would have to be from other women. We try to surround ourselves with inspiring women and this really plays into our designs. What does she read? What are her values? What does she do? Where does she eat? What does the rest of 2019 have in store for you? Lauren will be taking our next collection over to Paris in June; I will be at home having a baby! This will be our second time this year in Paris. Our long-term goal is to become a global brand and use that platform to create a strong community and shine a light on women who inspire and uplift one another.

As we increasingly recognise the importance of emotional and spiritual health in the age of digital distractions, we’re faced with the task of climbing out of the mindless trap of scrolling through newsfeeds and into the mindful haven of mental wellness.

istraction will forever be the enemy of productivity and in a perpetually connected world where we arguably communicate more through the internet than we do in person, it’s quite easy to give into distractions while carrying out dayto-day duties such as work and exercise. If you’re depending on willpower, rather than designing an environment conducive to productivity, you’re bound to have a hard time resisting temptation. By allowing mindfulness a place in our busy lives, we’re reminded to be present, to take time for ourselves and our bodies, and to prohibit ourselves from doing mindnumbing tasks such as scrolling mindlessly through our social media accounts.
Everyone knows that regular exercise has been shown to boost both mood and concentration, so cultivating mind-body integration via exercise is a powerful way to increase emotional and spiritual wellness, while promoting mindfulness. This can be as easy as focusing on your breath or listening to classical music (which has been proven to promote concentration) or a podcast rather than your playlist while you go for a run or use the gym. Mindfulness apps have become a growing trend of 2019. We’ve checked out some of our faves. Limit your technology overload with Forest, a neat little app that can give you extra motivation for being present and

Nelson Mandela once said, ‘It always seems impossible until it’s done,’ and next year the Canterbury Medical Research Foundation will have been doing the impossible for 60 years.
E
stablished in 1960 by Professor Don Beaven, the foundation has contributed $27 million and counting towards medical research. Put simply, a significant number of Canterbury’s 300 medical researchers working within the health and education sectors would not be able to undertake the ground-breaking medical research they are today, without the sustained and rigorous efforts of the the foundation. The medical research funded by the foundation makes a real difference in the short, medium and long term, not just to the
health of Cantabrians, but to health globally. General Manager Colin McDougall says, “lifting the bar for health is relevant to everyone,” and if the point needs illustrating, we only need look as far as Martin Than’s 2018 study on improving outcomes within the public healthcare system. Martin Than and a Christchurch team studied and applied nationwide changes for the assessment of suspected heart attack patients in the Emergency Department at Christchurch Public Hospital and throughout New Zealand. His research combined a wide
range of the essential indicators and tests for suspected heart attacks. The care pathway developed and implemented has reduced previously 24hour hospital admissions to under six hours in up to 50 percent of cases. The results have been outstanding, with good outcomes for patients and savings of $11 million dollars and 200,000 doctors’ hours per annum nationally. The Canterbury Medical Research Foundation raises funds through donations, bequests and public events. The black-tie annual Wine and Art Auction is a sell-out each year, and held its 25th anniversary in 2018. Proceeds from the event go directly to a pre-approved research project. Events planned for 2019 include Opera Meets Art at Christchurch Art Gallery on 30 March which raises funds for neurological research
undertaken by subsidiary company New Zealand Brain Research Institute. “More fun and incredibly worthwhile events are planned, where you’ll hear from the researchers themselves,” Colin says. Board Chair Geoff Cranko says the foundation is very focused on supporting emerging talent, as well as retaining experienced researchers. “It is critical to retain talent in Canterbury for health outcomes, as well as for the sustainability of our community.” Your donation or bequest can be tagged to particular research that interests you. cuisine Raw Potential They’re a dynamic duo – Rosa and Margo Flanagan and, while the incredibly successful business headed by these young visionaries came together with a pinch of luck, a dash of coincidence and a dollop of chance, it’s been a recipe for success.

nown as Two Raw Sisters, the pair are pushing plant-based foods into the mainstream, making it accessible, affordable and importantly – delicious. And yes, they laugh, they are actually sisters! Rosa was an elite middle-distance runner studying nutrition, while Margo was in her final year at Rangi Ruru Girls’ School when they discovered California’s raw plant-based culinary school – PlantLab, where together they studied culinary nutrition, sports nutrition and advanced raw cuisine. On their way back home, they messaged their mum to get a group of friends together for a cooking workshop and the

rest, as they say, is culinary history. “Nothing was cooked over 46 degrees, it took 12-24 hours to cook and used expensive ingredients such as nuts, seeds, coconut oil or superfoods that aren’t as abundantly available as we were used to in America,” Margo explains. “We soon realised the average Kiwi woman doesn’t have the time to start Thursday dinner on Monday.” When it comes to the terms ‘raw’ and ‘plant-based’, it’s about eating a balanced diet with as much whole, unprocessed food as possible. This doesn’t mean you have to cut out meat, dairy, fish or poultry.
Next on the culinary cards is a 90-recipe cookbook and the opening of a cooking school in central city health and wellbeing complex The Welder later in the year, enabling the pair to provide hands-on teaching, along with corporate team building events. “New Zealand is such a big meat and dairy orientated country. Most people know how to cook meat but not so much fruits and vegetables in a fun, exciting, inventive way,” Rosa says. “People don’t realise what it feels like to be at their peak of wellness. Change doesn’t happen if you don’t make changes.”

Two Raw Sisters Recipe Dukkha roasted cauliower, paprika carrots & chickpea bowl + herb yoghurt

his would have to be our favourite salad in our cookbook coming out July in all Paper Plus and Scorpio book stores. This salad has all the textures; tender softness
from the roasted cauliflower, carrots and chickpeas, creamy smooth dressing, crunch from the walnuts and pomegranate flavour bombs. What’s not to love?
Ingredients
To Serve:
1/2 head of cauliflower, sliced 1 red onion, cut into wedges 2 Tbsp dukkha Coconut oil, melted Sea salt 4 spring carrots, halved lengthways 1 can of chickpeas, rinsed and patted dry Coconut oil, melted Sea salt 1 tsp smoked paprika 1 tsp cumin 1/2 cup uncooked freekeh (or brown rice)
Pomegranate seeds (or goji berries) Roasted walnuts Fresh basil Rocket
Herb Yoghurt 1/2 avocado 1/4 cup coconut yoghurt 1/2 cup basil leaves Zest + juice of 1/2 lemon 1 clove garlic Pinch of sea salt Pepper

Method
1.
Preheat the oven to 200 degrees C. On one baking tray place the cauliflower and red onion. Drizzle over coconut oil, sea salt and dukkha. Combine well.

For the freekah, place in a small pot and add 1 cup of water. Bring to the boil then reduce to a simmer. Cook for a further 12 minutes. Set aside.

On another baking tray place carrots and chickpeas. Add coconut oil, sea salt, smoked paprika and cumin then combine well. Place both trays in the oven.
Cook for 10 minutes on fanbake. Change oven function to grill and grill carrots and chickpeas for 5 minutes before removing from oven. Continue grilling the cauliflower and onion for another 10 minutes.

For the yoghurt dressing, place all ingredients in the blender and blend until smooth and creamy. Set aside.
To serve, layer all components in two bowls. Dollop on the dressing, scatter with walnuts, pomegranate seeds and fresh basil and continue layering until all ingredients are used up.

o, without further ado, let us meet the Trust the Chef(s) conjuring their culinary magic in this wonderland restaurant. Head Chef Eeva Torvinen and Sous Chef Annika Kiviniemi both hail from Finland, and it’s thanks to this dynamic duo, with their youth and passion for creating

dishes that shake us out of our dining complacency, that we’re finally getting to experience food that excites and astounds. Torvinen says it was due to foraging in the forest for berries and mushrooms, and fishing with her father and grandfather that set her on her cooking career.
A word Torvinen frequently uses is ‘technique’, such as in the techniques of curing, brining, pickling, smoking and sous vide (low temperature cooking, container cooking and pressurised enclosure cooking). “We seldom use spices other than salt because we believe the techniques we use add more flavour into ingredients.” Torvinen’s desire is to make The Monday Room the best eating establishment that she can; beyond that her want is simple: “I want to cook, create, learn more and explore, and maybe one day have a restaurant of my own.” Now we turn to greet our Trust the Somm. Malaysian-born Kiwi, Stephen Wong, was reading law at the University of Otago and, while working part time in cafés and as a DJ, was introduced to New Zealand wines. A move to Central Otago in 2000 found Stephen working in vineyards and rapidly progressing into hospitality. He began his first sommelier
role after qualifying as a barrister and learnt on the job. Seven years on and Stephen had moved into consulting; Wine Sentience is his wine education and support business – it has been instrumental in keeping Wellington wine lists at the top of their game. Stephen was recently made a Master of Wine, taking the number of MW’s in New Zealand to 12. When not educating or judging wine shows throughout Australasia, Stephen tutors Master of Wine students in the IMW Australasian Educational Seminar. Stephen says his greatest passion will always be around wine communication and training our future sommeliers to be the best they can possibly be. They may describe themselves as ‘accidental winegrowers’, but Natalie and Warrick Edwards, of Cross Hares Winery, have certainly proved that where there’s a will, there’s a way.
A
fter the September 2010 earthquake saw the Edwards’ family having to farewell their irreparable home forever, Natalie and Warrick had to seriously rethink their lives. “So, we bought a rundown vineyard, as you do,” Natalie laughs. “We knew nothing about growing grapes, but we’re not afraid of hard work, so we rolled up our sleeves and got busy.” Fast forward to 2014 and our stalwart couple found themselves doing the hard slog of tightening wires, mending broken poles, lifting irrigation lines and repairing irrigation leaks – all 100 of them! Next step was to get expert advice. Lincoln University lecturer and vineyard owner Glen Creasy was the man who helped
regenerate and restore the neglected vines to their former glory; so much so that Natalie and Warrick felt confident to approach The Crater Rim Winery and reestablish a former connection whereby they would sell their fruit to them. Their vintage 2016 saw a bumper yield of 6.9 tonnes of Pinot Noir and 7.1 tonnes of Pinot Gris harvested for The Crater Rim while later, another 3.5 tonnes of Pinot Gris were picked for themselves. ‘Ahuriri Run’ (named in tribute to the vineyard being formerly part of the Rhodes’ brothers Ahuriri Run) produced 2,800 bottles. Torrential rain in February 2017 drastically cut their expected fruit yield, but taking it on the chin, as all good farmers must, they harvested the 4.0 tonnes in total that
remained and produced their 2017 ‘Ahuriri Run’ Pinot Gris and 2017 ‘Greenman’ Pinot Noir. In September, the vintage 2018 Pinot Noir will be bottled. Natalie says they can’t wait, but in the meantime, the very important decision of what to call it has to be made. Cross Hares may well be Banks Peninsula’s best kept secret, but with an increasing remote online sales presence, plus the projected launch of an onsite cellar door at year’s end, expect the name, just like those hares, to be crossing your path very soon. remember when Totally Gluten Free was located at our original Worcester Street premises, seeing this elderly Merivale lady chatting away to this biker looking guy with full face tattoos; they were comparing notes on the various breads – talk about surreal!” The Totally Gluten Free Bakery, now located at 290b Colombo Street, is a bright, airy space with funky retro décor and lovely staff who’ve been with Wendy for years. he shop has been providing more than 15 kinds of exquisite desserts since it opened. Although the offerings in the cabinet have changed frequently to match the seasons, some products have remained in the line-up for ten years because of devoted fans. I had intended to start writing this article on Friday. Friday March 15th – yes, that Friday – and I had it in my mind to summarize the financial year, including the current marketplace. All of this felt like familiar territory, able to be constructed in a light and engaging manner, neither difficult nor challenging. But that article never got written because the world changed for our city in a horrific and deeply disturbing way on that day. Our beautiful city and a large congregation of fellow citizens became the victims of a terror attack. 50 people lost their lives and many more were injured, including women and children, whilst they worshipped at their local mosques. In the shell-shocked days that followed, and as the community came together in grief and kindness, many questions were asked. How best to help the victims and their families, and everyone connected to the tragedy? What to do? What does it mean for Christchurch? How do we move forward as a united group? How do we foster tolerance and acceptance of all creeds and cultures? How does this happen
in a city as safe as we believed ourselves to be? Nationally and internationally, the fabric of our city and our sense of peace and safety was shattered. As it happened, I was at Christchurch Hospital at the time and throughout the lockdown period that followed, when the Armed Offenders Squad stood around the hospital with large guns at the ready, leaving the enormity of everything that occurred ingrained in my psyche. It was surreal, incredibly scary and most of the information we got about what was happening was streaming from the internet. On reflection, all of us are now wondering: where to next? I don’t have all the answers, although I do know that because of this deep tragedy Cantabrians everywhere have gathered as a committed force to embrace everyone that needs help. It’s said that the quakes hardened our resolve and opened our hearts, and it seems they left memories which came to the fore when the attack happened. We reached out to each other, neighbours checked in on one another, flowers, mountains of flowers, were left in commemoration, good deeds were done … Givealittle pages, food drives … it’s all happening.
As a Cantabrian I’ve felt proud of us. I know our hearts are in the right place. I know our city is evolving and emerging from the kinds of stress you associate with other countries and not ours. We will continue to move gently forward. I’ll keep thinking and working and writing, but hopefully never in a manner such as this. We live in a very special city.

Alex and Andrea say their favourite designs change daily, but they would happily have all of them in their own homes. “Each design comes in a broad variety of colourways, so it’s very versatile,” Andrea says. “We stock a lot of the samples in our showroom, so clients should come in for a browse.” “Colour is now really popular in homes,” Alex says. “It is having a renaissance – people are no longer afraid of introducing colour.” They always begin with the
premise that it’s essential that people create a home with things they love. “Home is a reflection of personality; you don’t want it being anonymous,” Alex says. In her address, the Prime Minister shared the Government’s main economic objectives for 2019, which included strengthening the export base, trade training, a review of the tax system, and investing in wellbeing ahead of the Budget. As an Employers’ Chamber, we have been very active in working with the Government and advocating around these issues and others that affect local business, such as skills shortages, which continue to be a challenge for business (and even more so in a rapidly evolving world of technology, AI and automation). The recent announcement on vocational educational reform is another topic we are taking an active interest in, to ensure our future education system is fit-for-purpose for a rapidly changing future, and to provide training for young people and those already in employment. We also need immigration policy that supports economic growth and accommodates regional differences. Investment in our transport networks and infrastructure, particularly regional areas, is becoming increasingly important for business to move their goods and deal with increasing tourism numbers. We will also be closely watching upcoming employment legislation changes, particularly in relation to the fair pay agreements, which we don’t believe will contribute to a future focused, productive economy. In the Canterbury region, we are all too aware of the need to build resilience in our economy and key to this is having a Government that acts as an enabler for business.

ecently we reached a major milestone in the Canterbury recovery, with Christchurch City Council being given back control over their district planning process years ahead of schedule. I’m a strong believer that the best future for Christchurch is one where we return to local leadership over the future of our city and that’s why I was incredibly proud to announce the return of the planning powers to the council. Following the earthquakes, special emergency planning processes were implemented that suspended certain RMA processes in the interest of speed and certainty during the rebuild. Eight years on, we are now able to return to the same planning processes that other cities use. It’s a powerful signal that Christchurch is moving out of its rebuild phase and looking to its future as New Zealand’s thriving second city. Putting this change in place meant revocation of the Canterbury Earthquake (Christchurch Replacement District Plan) Order 2014 which took effect from 18 March 2019. The council can now revert to normal planning processes to manage its District Plan and it also means that the people of Christchurch, along with the council, will be able to initiate changes to the District Plan. They’ll be able to submit on proposed changes, attend hearings and participate in proposing amendments. I’m delighted that we have been able to meet this milestone more than two years ahead of schedule. It’s a significant step in the transition back to local leadership and a great sign of momentum in our regeneration.

ast month, I borrowed from our Prime Minister’s recent remarks where she spoke of how important innovation is for NZ’s future as a thriving nation. In short, she said that innovation must be cultivated throughout the country. Ministry of Awesome (MoA) is working hard alongside everyone else in our Canterbury startup and innovation community to ensure that our region’s talent and bold thinking are actively nurtured and supported. Cantabrians are great innovators – our tech sector is the second largest in NZ and our engineering and manufacturing sectors also punch above their weight. But, regardless of our pedigree, it frequently feels like our South Island startup and innovation ecosystem still lack the confidence, the central government support and the national recognition that there is a growing volume of talent from here (and arriving here!) who have the bold ambition to create great things. Out at Lincoln University, Blinc Innovation is on fire, facilitating and growing an innovation ecosystem focused on agriculture and food. At UC, every year’s Summer Startup programme shows our city has a rich seam of talented young student entrepreneurs. And, following their excellent example, the Ara/MoA partnership has just begun to do the same with Ara’s 19,000 strong learning community. Our first Summer Sprint Programme produced its first winner a few weeks ago – Sukhdeep Singh, a mechanical engineer who took top prize with his winning MedTech innovation. It is critical for the future of our region that we continue to retain and nurture these early stage entrepreneurs. They are the seeds of our future city of opportunity and exploration.

BD retail has enjoyed a positive start to 2019, with a very definite lift in interest from retailers eyeing Christchurch. It’s been a waiting game up until now, with many of the larger players wanting to see the shape of the new CBD. But they’re clearly encouraged by what’s happening. Among recent retailers to sign in the city centre are Mi Piaci and Vodafone in Cashel Mall who will join Moochi and Nespresso in the new Guthrey Centre development; and Decjuba, Oobe and KFC in Colombo Street. Progress on Riverside Retail & Farmers Market is well advanced with Ben & Jerry’s one of the latest signings. They will join homegrown brands Sergios Menswear, Alchemy and Cosmic. In total, there will be 30 independent food outlets, 40 fresh produce stalls and 15 retail boutiques. Due to open in September, this will be a fantastic boost to the western end of Cashel Mall. Other exciting developments to come onstream towards the end of 2019 include Spark House at 2 Cathedral Square that incorporates dramatic retail space at ground level with a designated rooftop bar/restaurant. Work is already well advanced with completion due in October. Directly opposite, work has recently begun on world renowned architect Shigeru Ban’s Braided Rivers project for Aotea Gifts, which will be an architectural gem on the Christchurch landscape. Both sites enjoy high profile on the corner of Cathedral Square, Colombo and Herford Streets. Hopefully a sign of good things to come with the much needed revitalisation of Cathedral Square.

e already have 65 events on the books for the first two years at Te Pae, Christchurch’s new convention and exhibition centre, but you will see the marketing and promotion of this facility go up another gear with AEG Ogden now in town to provide day to day management of the centre. Put simply, the more effective the operator - the more events Christchurch attracts - the greater the boost for the hotels, bars, shops, restaurants and tourism ventures around the region. The events already booked come from the health, science, education and professional services sectors and will bring 54,000 delegates to Christchurch from around New Zealand and the world. We expect the economic benefit of these visitors to Christchurch and Canterbury to be around $60 million, much of it in the traditionally quieter ‘shoulder season’, either side of summer. Te Pae will host its first event in the latter part of 2020, so the level of interest we’re already experiencing is not only encouraging but reminds us why a worldclass convention centre was identified early on as an Anchor Project that could make a significant contribution to the regeneration of Christchurch.

e will all have noticed that it’s dark later in the mornings and earlier in the evenings now that autumn is taking hold and the winter months are on the way. While this can be a positive thing for winter sports enthusiasts and those who like to spend time at the numerous ski areas on Christchurch’s doorstep, it represents the beginning of what we know will be a challenging period for some businesses in the central city. A lot has been said about the increased activity that has been visible over summer and I share that enthusiasm. I will always be a champion for Christchurch and the commitment our private and public sectors have made to its regeneration. But we, as a community, cannot sit back and think the job is done. We are already seeing signs that some businesses in the central city have struggled – even during the busier summer season – with a small number of closures recently in the retail and hospitality sectors. Pre-earthquake, these may have been seen as demonstrations of the risk associated with individual commercial ventures. But, in the current environment, they represent a broader challenge – for which there is no single remedy. A component of our work this year is identifying opportunities for Christchurch to maximise the return on investment in anchor projects and other private sector developments. For example, what unintended consequences of current planning regulations could easily be addressed to leverage the investment over and above the immediate benefits of a new amenity? The project approved by Crown development company Ōtākaro, is a really exciting, innovative prospect. This is the tip of the city’s burgeoning culinary iceberg. New Regent Street continues to offer more and more eating and drinking options, and the Street Food Market in Cathedral Square every Friday is very popular. With food stalls such as Nanny’s Food Truck, Kung-Fu Dumpling, and the Vagabond Chefs, one can only hope the food is as good as the names (hint: it is!). North of the CBD, at 76 Victoria Street, is the home of Craigs Investment Partners. On the corner of Cashel and Oxford, under the Westpac logo, is Hawker & Roll, Malaysian inspired street food with “vibrant and authentic flavours”. Next door to that is Amazonita, a “refreshing gastronomic paradise” with a dash of Mediterranean influence.

he latest way is an initiative by bffs Julia Malley and Julia Strelou. Friends, work colleagues, and now tourism entrepreneurs, they have teamed up to provide guided tours of some of the spots of interest in the CBD. The twist: they and their guests are all riding Lime scooters. It’s guaranteed to be an adrenaline-filled, exciting rush of full on entertainment, a thrill such as you have never before experienced. And that’s just the first 60 seconds of meeting the two Julias, long before you get anywhere near a scooter. Young, hip, articulate, passionate, bubbly, engaging and super funny, both the Julias are witty, cheeky and fun to be around. Their energy is infectious, and that’s the spirit they bring to their tours of the city. Julia M is a Christchurch girl. She lived here through the quakes and knows the city, pre and post-earthquake, well. She works in media and is worldfamous in Christchurch for being one of the city’s brides in the NZ version of Married at First Sight. She is an Airbnb Superhost, and that’s what led her to establish the ‘Rebuild Tour’. Julia S hails from Australia, but is also now a Christchurch denizen. She is in the media business too and, if it’s possible to quantify, is the more reserved of the two. But not by much. “Julia and I are relationship builders,” she says. “If you are going to hang out with us you will have a laugh and a good time.”

As an Airbnb Superhost, Julia M added the Rebuild Tour as an Airbnb Experience – activities for Airbnb guests designed by hosts aimed at immersing guests in their unique world. “Guests love the Lime scooters,” she says, “so why not use them to do guided tours? There’s nothing like that in New Zealand.” The two take up to ten guests (non-Airbnb guests, too), each on their own scooter, to various spots around the CBD, and offer some behind the scenes information. While having fun, they are mindful of the respect needed at places such as the CTV site, 185 Chairs (a particular favourite site of guests), and other post-quake landmarks. Guests are reminded of the devastation, to both landscape and life, the city suffered. “We focus on what happened after the quakes, but we also have a positive spin because it’s also about the regeneration of the city,” Julia S says. They also visit Margaret Mahy
playground to play, various street art projects and have an interactive experience painting their own street art at the Giant Spray Cans on the corner of Manchester and Lichfield streets. Some of the city’s ‘darker’ spots get a mention too, and perhaps a visit. ‘Dark tourism’ ventures are popular worldwide and the Julias offer some insights to visitors into a little bit of Christchurch’s underbelly (when it’s appropriate), such as the city’s red light district and McLean’s Mansion on Manchester street. They may even venture some speculation about whether or not it is haunted. along the hallway,” Hollander says. “We wanted separate spaces where our agents could be private, but we also required linkages for networking which is so vital to a real estate company.” It was also important for the new office still to be firmly anchored in the community where it has been for so many years. “We love this location and know all the businesses and many of the residents,” Hollander says. “To pay homage to the locale we have named the individual offices after local streets – Penhelig Place, Gleneagles Terrace, Chateau Drive and Chepstow Avenue for example. he building replaces our current office we’ve been in for nearly 25 years,” Branch Manager Simon Hollander says. “We had rather outgrown the space, so when the Clyde Road site became available, it looked like we might have a real shot at getting the work space we had dreamed of.” The new building is a work of team collaboration – Aaron Jewell, architectural draughtsperson, builder Hamish Neave and Davinia Sutton of Detail, spatial designers – with more than a little input from Simon himself. “Aaron, Hamish and Davinia had worked with me on previous residential projects and I was sure they would be perfect for this commercial build,” Hollander says. The 235sq metre building has a central hallway filled with natural light from overhead windows. Glass fronted offices spill off both sides of the central thoroughfare, giving good connection between everyone working there. “You can’t miss seeing your colleagues and bumping into them as you walk

Safety was at the top of the list when it came to plans for the new Harcourts Holmwood Ilam premises. Externally, the building on Clyde Road is predominantly clad with an aerated autoclaved concrete panel on cavity baton supplied by CLAD X NZ, Harcourts Holmwood Branch Manager Simon Hollander says. “These AAC panels have proved themselves safe and durable in all extremes, even through the Canterbury earthquakes, so we can rest easy in our new premises.” Giving a stylish finish to the exterior are vertical cedar weather boards lovingly painted in Resene Uluru by Hollander’s three daughters for pocket money. The natural timber theme is carried into the interior with blond American oak slats giving a Scandinavian crisp minimalist appearance to the décor. Alabaster white walls and push-to-open concealed storage cupboards add to that concept. “We do of course have splashes of our Harcourts blue throughout the building as well,” Hollander says. Every up to date construction innovation is incorporated into the offices – from solar panels and LED strip lighting, to high spec insulation and acoustic sound proofing. “We have achieved a sustainable and future-proofed building. NEW CENTRAL CITY ASSET Waka tours on the Avon River are set to become a new central city attraction with Ōtākaro Limited divesting the site at 794 Colombo Street to Ko Tāne, for the development of a $3.5m riverside cultural centre.

tākaro Chief Executive John Bridgman says it’s an ideal site for the Ko Tāne venture given how close it is to known visitor destinations like the City Promenade, Te Pae, Victoria Square and the Town Hall.
“The City Promenade has proved a hit since we opened it in November but it’s the private developments like this that sit alongside it, that will make it a true asset for Christchurch.” Ko Tāne has been providing
interactive wildlife and Māori cultural experiences to local and international visitors for the past 13 years at Willowbank Wildlife Reserve. Ko Tāne Director, David Brennan, says the design of the 250m2 Puari Village is inspired by a voyaging waka and will feature exhibitions, art and contemporary Māori cuisine, and be the base for city and waka tours.

oft grey-green is a palette that combines the best of nature. It is this season’s ‘new neutral’. Pairing well with dusky pinks, olives, rich deep blue-greens and ochre, it creates a sumptuous, but grounded, indoor natural autumn haven. Four colour palettes from Dulux this year reflect on the societal trends of wellness, rejuvenation, environmental awareness and mindful consumption. ‘Repair’ is one of these key palettes – which includes rich green with accents of burnished gold - that draws from nature to comfort and uplift, while allowing us to slow down and reconnect with the natural world, says Dulux Colour Specialist Davina Harper. This perfect autumn palette beautifully offsets interesting spaces and décor pieces that tell a story. She says striking combinations, such as verdant green, chocolate, umber and sienna set a playful, optimistic tone, while the soft, green-based grey is the neutral pairing with these nature-based hues. This autumn will see layering of natural colours and textures such as richly grained warm timber, time-worn buttery leather, cork and tactile velvets. They go well with handcrafted and vintage simple pieces. On the other end of the autumnal colour spectrum, rich green or blue-green is fabulous for feature walls – creating a bold look. Concrete effect paints, for table tops to planters, also add a natural organic rawness to the muted autumnal tones.
