A

s the days are lengthening, hopefully without the cold strengthening as the old adage suggests, the e ect it has on most of us is almost instant. As a sunny day in the middle of winter can transform our mood and lift our spirits, so too can the regular extra hour or so of daylight we are getting each day as we march towards spring. Add to a longer day some sun and temperatures above 14 degrees and most of us are practically humming. In this issue, 'Walk it Up' on page 39 has inspired me to make the most of the next sunny weekend and get out walking. Climbing to a peak with an amazing ocean view is exhilarating, especially when you have been cooped up inside for too long coping with depleting Vitamin D levels. Read about ve beautiful local walks, don your walking shoes next sunshiny day and enjoy roaming the well maintained tracks around the Port Hills and Peninsula. It's not just natural light either that sets our spirits soaring or dipping. Consider walking into a darkened room where gloomy shadows eerily lurk, and compare that to a room that is your subconscious favourite perhaps it's a room that is beautifully lit with chandeliers re ected in elegant mirrors which in turn refract a soft, romantic hue. Well lit rooms make us feel good, comfortable, relaxed, happy. We feature a few ways to achieve this desired e ect in our home section this issue both with the use of mirrors (page 54) and the use of varying types of light ttings (page 58). Other ways to bring a little light into your life is via socialising, creativity and entertainment. There is plenty on around the city that will have you mixing and mingling and sparking your imagination with creative ideas. Check out Paint 'n' Sip the ideal place to try your hand at painting whilst enjoying a glass of wine in the company of like-minded others. The NZ International Film Festival kicks o in the beautiful Isaac Theatre Royal from 7-23 August and then the Christchurch Arts Festival runs from 27 August 20 September book your tickets soon as there are a few shows that are already sold out.

hef, author and outdoorsman Tony Smith made a name for himself hunting, fishing cooking and writing about his catches from the Canterbury wilds, and as executive chef at the former Christchurch Crowne Plaza. He was instrumental in opening and establishing a five-star Crowne Plaza Hotel in India, then worked in Melbourne before returning home last year to become The Tannery Group’s executive chef. Tireless in his endeavours to create unique culinary innovations Tony’s current challenge has been the expansion of one of The Tannery’s beloved eateries, the Woolston Store. This sees him offering diners the chance to try novel dishes then buy the ingredients used in them so they can replicate them in their own homes…

You have been instrumental in The Woolston Store’s expansion – what does the store now include? We’ve had a roughly 10-fold increase in the quantity of food offerings available, while maintaining the highest levels of quality. We’ve also really boosted the ambience – people can now sit inside the store itself and enjoy a much wider range of food at a very affordable price.

What food style/focus do you encourage in The Woolston Store? Fresh and local is key. The tearooms has always been renowned for the cakes and pastries baked right here, plus we’ve got cheese rolls made to a recipe from our Otago shop manager Annie, pies made on site at Cassels & Sons Brewery, plus smoothies made from nectars produced by Christchurch’s beloved C1 Espresso. We’ll have rustic pastas alongside expertly made sushi, and a really lovely shakshuka – a Tunisian dish of eggs poached in a sauce of tomatoes, chili peppers and onions. Plus you’ll always be able to buy a fresh ham, cheese and tomato sandwich. What dishes are on the menu at present and how often do they change? The pastas, shakshuka and sushi are our opening signature dishes, others will evolve and change with seasons and customer demand. To enhance that milk bar feel we purchased a retro milkshake maker, and are restoring two antique ones from a local milk bar.


Q&A Your recipes are very appealing and original – where do you get your inspiration from? I really like to make a product fit an occasion – you want a cold refreshing beer if you’re sitting on a beach, not a heavy, room temperature stout, so you tailor things to fit the mood or experience. The Tannery is modelled off a classic old arcade so we keep everything classic. But at the same time we want to create a buzzy atmosphere, so we add a modern twist, hire great innovative staff and ensure our coffee quality stays exquisitely high. Japanese sushi chef Masahiro Ito will be based in the Store – what is his role and what input does he have in the endeavour? He’s got a total free hand because he’s amazing at what he does. It’s early days for Masa’s involvement, so we’ll use our heads and our instinct, but come back to customer guidance to help us find where we’ll ultimately end up. What type of foodies will enjoy The Store’s experience most? All kinds – it’s not a restaurant, so you can graze and enjoy all we have to offer. We’ve got a great selection of French, Italian, Spanish and New Zealand cheeses, all available as cheese boards to eat here. That means you can try whatever you might suspect you like, and buy the ones you really love. What is your best food memory? More recently, eating paratha – Indian pancakes in a broken down Indian village two hours north of Delhi in mid-winter. Most people associate India with heat, but it can get freezing cold. Those spiced potato stuffed paratha, with fresh coriander and curd tasted great and warmed me up from the inside, so it was a very visceral food experience. You are author of the recipe book A River Rules My Kitchen which saw you travel from NZ’s high country to the coast – what type of foods did you hunt and gather and how did you prepare them? Venison, hare, rabbit, eel, trout, and salmon. I cook them simply and develop the recipe by taking notes as I cook. My favourite dish is still probably a wild hare fillet with a glass of pinot noir. On a more personal note, what is your proudest achievement? Becoming executive chef of Christchurch’s Park Royal Hotel at a time when hotels were dominated by international chefs, plus opening the restaurant of a new Grand Plaza Hotel in India.

If you could go back and tell your teenage self something what would it be? Find a good mentor quicker. I was always a hard worker, but it wasn’t until I found someone I could latch onto and emulate, that things really started working out. What is your favourite drink? I love a good beer, and the craft brewing movement has transformed everything beer-related in recent years. The Cassels & Sons brews are fabulous. My favourite drink would be a good Central Otago Pinot Noir though – I don’t imbibe too often so it keeps its edge.

My favourite dish is still probably a wild hare fillet with a glass of pinot noir.

What were you doing the last time the thought went through your mind, “I shouldn’t be doing this?” When I’m in day three of a sequence of 14 hour work days I think, “I’m getting way too old for this” – but it comes with the territory. What is one thing Metropol readers would be surprised to know about you? I loved riding a Royal Enfield motorbike during my time in India and am on the lookout to replace it, because I couldn’t bring my Indian model home. What do you love to do on a Sunday afternoon? I can never get enough gardening or trout fishing in, plus spending time with friends. What is next on the wish list? I’ve got five grandchildren in the North Island, so spending more time with them there would be nice.

World premiere screening in Christchurch There's a positive side to everything, even the Christchurch earthquakes, and awardwinning documentary-maker Peter Young certainly brings this to the fore in his featurelength film, The Art of Recovery, which captures creative revival in the centre of our city.

nd there is no time and place better for the film's first screenings than on August 13 and 18 at the New Zealand International Film Festival, at the beautifully renovated Isaac Theatre Royal. “It's about bringing creative art back to the CBD and the film focuses on half a dozen passionate artists and entrepreneurs over the four-year period since the February 22 quake,” says Peter. These include Coralie Winn and Ryan Reynolds of Gapfiller, street artist Wongi Wilson and his wife Emma, Sam Crofskey of C1 Espresso, Johnny Moore of Smash Palace, and artist Peter Majendie, who created the 185 Empty Chairs memorial.

“Their stories reveal the power of the human spirit. What they have achieved in post-quake Christchurch is really quite remarkable. They responded quickly and creatively to the earthquakes, bringing life back to the ruins of the central city by creating welcoming places for people to be,” says Peter. “Sam, of the C1 café, at the corner of High and Tuam Streets, is a courageous entrepreneur who went back to near where he was before the quake – opening in the middle of a desert.” The C1, located in the same building as Alice in Videoland and the Alice Cinematheque, is now a popular place for the community – for the people who want to get back into the centre of the city.

Street artists have also been valuable contributors to the revival of the CBD. “The walls of the ruined streets needed brightening up. All of a sudden, there were huge canvasses all over town. These artists understand the nature of this transitional city and can be quite philosophical about the tombing effect,” says Peter. By “tombing effect” Peter means the inevitable destruction or cover-up of street art when the walls that have been painted on are demolished or built over as part of the city's reconstruction. The documentary also deals with the restitution being led by the Canterbury Earthquake Recovery Authority (CERA) and the blueprint put together by the Christchurch Central Development Unit (CCDU) in 100 days. “In contrast to the artists, the Government-led recovery hinges around a local precinct-based

blueprint for the city, which they hope will attract big business and private investment,” says Peter. “I touch on the conflicting approaches of the big and little businesses. Christchurch is now at a crucial crossroad. As the city rises, it will be interesting to see how much of this dynamic transitional movement will remain in the fabric of the city's future.” The Art of Recovery was made with funding from New Zealand on Air and the New Zealand Film Commission, and has been constructed for international audiences.

Makeup’s transforming magic Makeup is part of a daily routine for most. For myself it is something I quickly apply for work, using just the very basics.

TRANS-SEASONAL: Annah Stretton tells us a little about 'All is Pretty'... Where has the inspiration come from? Andy Warhol and the pop art culture of the 1960s. What was the significance behind the name of the collection - All is Pretty? 'All is Pretty' is the title of one of his artworks and hence the relevance and fit. Why was Andy Warhol and the '60s pop culture fascinating/inspiring to you? I guess because I started life as an art school student and I was exposed to many of the influential artists of the time, and Warhol has always been one of my favourites. How would you describe the collection? Graphically strong, with large blocks of colour, big spots and colour pops in orange and hot pink. What are you trying to achieve with this collection? A focus on simple shapes that can be worn trans-seasonally. Layering is key to the versatility, and it has a wonderfully 'fashion forward' edge and a 'wearability' that will appeal to many.

What sort of target market did you have in mind when you were designing it? The 35 year old woman (don't we all aspire to this age!) who has a very clear focus on who she is, and what she needs to achieve in her day. She is aware it's all about the packaging, but the clothes cannot wear her – she wears the clothes. The collection was rather eclectic - block colour, polka dots, geometric patterns, amazing make up - what was the design thread that held it together for you? Make up was for the show only and show looks will always be about the drama. If you remove the make-up you have a cohesive and very classic look that has been styled up, so each garment on its own is relatively simplistic and hopefully trans-seasonal. Who doesn't want that? The styling and the colour pops were the threads that united the collection.

ENJOY THE OUTDOORS THE CRATER RIM The Crater Rim walk runs the length of the Port Hills from Godley Head to Gebbies Pass. You can do the whole track in a day if your fitness is up to it, but most people opt for just a section. The midsection of the track goes from the top of Rapaki Track east to Mt Cavendish Saddle. You'll walk through tussock grasslands and volcanic outcrops, and you may even share the track with some native skinks and geckos. Expect to see (and hear) plenty of bellbirds and kereru (wood pigeons), as well as grey warblers and fantails. with a twist Christchurch residents have not only been rebuilding their lives and homes, they have been seeking increasingly inventive ways to express themselves while doing so, according to the New York Times, which recently described the city as experiencing “a rebirth with creativity and wit – thanks to the ingenuity of its hardy residents”.

manda Anthony is one of the clever locals leading the charge with Paint 'n' Sip Studio – an art studio with a twist. Painting and enjoying a wine is a new social experience which is taking the world by storm and Louisiana native Amanda set up the Christchurch operation after experiencing the concept in her home town of New Orleans. “The concept took off after Hurricane Katrina, where people were looking for something fun and creative to do,” Amanda explains. “Post-quake I wanted to bring something fun and unique to Christchurch that gets people out of their comfort zones trying something new.” The concept is simple – browse their online calendar and book a seat for the painting you want to paint (each session has a different featured painting). The e-bike phenomenon

Christchurch is the city of cycling, with more people biking here than any other city in New Zealand. Not only are attitudes toward cycling changing, but so are the bikes themselves.

Electronic bicycles — also known as ebikes — have hit the local scene and are making a major impression. While they look like normal two-wheelers, they have a built-in electric motor to assist the rider for propulsion; some kick in automatically with pedalling and others have a throttle. A cycling enthusiast himself, Techbikes owner Alex Kendon admits he never thought he would see the day where he got on an electric bike. And, although it took an operation that saw him unable to ride his traditional cycle to work for a long period to push him into it, he hasn't looked back. “I didn't have to worry about headwinds, hills, long trips and it's just heaps of fun,” he says. “There's a perception that it's the lazy person's bike, but you can get as much exercise as you want. his wonderful creamy soup recipe by Ant and Lou Bentley of The Akaroa Cooking School is lovely in the depths of winter. They explain that parsnips, like most root veges, are at their best after they have had a frost as the cold causes their starches to convert into sugars making them sweet and nutty. “When the garlic is slowly roasted the flesh goes all gooey and gives a lovely sweetness to the soup. This soup freezes really well so pop any leftovers into the freezer.”

Parsnip and Roasted Garlic Soup with Crème Fraiche and Lemon Oil INGREDIENTS Serves 6 3 whole heads of garlic 1/4 cup olive oil 20g butter 1 onion, finely chopped 6 cups chicken or vegetable stock 1.2 kg parsnips coarsely chopped (woody centres removed) 1 cup cream Lemon juice to taste Crème fraiche Freshly snipped chives Lemon infused olive oil METHOD Preheat oven to 180°C. Place garlic on a large sheet of foil, drizzle with 1 Tbsp olive oil and wrap to enclose. Place on an oven tray and roast until very tender (approx 40 – 45 minutes). Set aside to cool. When cool enough to handle, squeeze garlic from skin (discard skin) and set aside. Meanwhile, heat butter and remaining olive oil in a large saucepan over a medium heat, add the onion and stir occasionally until tender (6 – 8 minutes). Add the stock and parsnips and bring to the boil. Cover and then turn down to a simmer and cook until the parsnip is very tender (45 minutes - 1 hour). Add the roasted garlic and cream and then puree with a hand blender until smooth (add a little water if necessary to reach required consistency). Season to taste with sea salt, freshly ground black pepper and a little lemon juice. Serve in warmed bowls with a dollop of crème fraiche, chives and a drizzle of lemon infused olive oil.

SPICY BEEF NOODLES INGREDIENTS: 300g beef (schnitzel cut) 250g udon noodles Make a paste with 1 tbsp sweet soy sauce, 1 tbsp grain mustard, 1 tbsp wasabi paste, 1 tbsp sambal oelek*, 1 tbsp vegetable oil 2 spring onions, 1 stick of celery, 1 medium carrot, 1 red pepper, 4 button mushrooms (all sliced into thin strips) 2 baby pak choi (each cut in four pieces lengthwise) 1 tbsp of cornflour mixed with 2 tbsp of water Chopped coriander Vegetable oil 1 fresh lime (for garnish) Salt and pepper *Available from Asian supermarkets

METHOD: Ÿ Cut beef into thin strips (stir fry size) Ÿ Using the paste you've created,

smother it on both sides of the beef. Then leave in a bowl to marinate for at least 30 minutes at room temperature Ÿ Cook udon noodles as directed on pack and set aside Ÿ Heat a heavy-based pan until it's very hot. Sear the beef for five minutes (keep turning to make sure you've spread the remaining marinade) Ÿ Set the cooked beef aside and let it rest (cover to keep warm) Ÿ In the same pan add 1 tbsp of vegetable oil. Once oil is heated, add all the vegetables and toss as you would a stir fry Ÿ Once vegetables have softened, add the cornflour and water - then toss and cook altogether for a few more minutes Ÿ Season with salt and pepper SERVE: Serve the noodles into four serving bowls Divide the vegetables and serve on top of the noodles Place the beef strips on the top of the vegetables and garnish with chopped herbs and a wedge of lime

Famous & fabulous: Now into its tenth year, Sumner's Salt Bar Cafe is a local institution. Open seven days, from breakfast till late, locals meet to chat over morning coffee and the paper or dine out when they can't be bothered cooking. And being a friendly village, anyone from further afield is warmly welcomed.

hose who do visit discover that, along with European style fare, this is a place that serves tasty Japanese fusion cuisine. It's no surprise when you discover that owner Carolyn Hereora (a passionate Sumner local) was manager of the former Sala Sala Japanese restaurant for eight years. “We have Japanese staff members and I have also had Japanese chefs,” she says. “When I took over Salt it was pizza and pasta, and for a point of difference we introduced Japanese fusion style, mixing both Kiwi and Japanese cuisine,” says Carolyn. Salt has two menus plus a kids' menu and gluten-free and vegetarian dishes. The daytime menu, available from 8.30am weekdays, 8am weekends until 5pm, caters for every taste and appetite. House made breads, soup of the day, burgers, salads, breakfast and lunch dishes, pizzas and sides see traditional favourites side by side with Japanese fusion. The beef burger was so popular Salt has now added tatsutage chicken (marinated, coated and fried) burgers and Japanese vege burgers to the menu. Chris's wedges, which are served with bacon, sour cream and cheese, are

named after a local who always request this sinfully rich dish. French toast uses Salt's own eggy bread. “We make our own white, focaccia and curry bread,” Carolyn says. And if that menu doesn't offer enough choice, the cabinet contains homemade carrot cake, muffins, quiches, and paninis and toasties are also available. Evening dining starts at 5.30pm. With a dedicated menu and a cosy little upstairs area, the cafe takes on a snug, relaxing ambience. A new head chef, Zach Wallace-Bell (also a local) has a fine dining background as well as an interest in Asian food, and will be adding his personal touch to both menus in the near future. Architect Cymon Allfrey asks us to experience our city by foot in order to gain a new understanding and perspective on the progress of the rebuild…

ith the Architectural Designers New Zealand (ADNZ) national conference to be held in Christchurch in October, I have been engaged to assist in the incorporation of a four kilometre walk around the city. A walk that will allow early attendees the opportunity to be guided around the inner city by local designers, and experience our city at a more intimate level. Beginning at Latimer Square and ending at the Re:Start Mall the walk encompasses Victoria Square and the top of High Street, as it snakes its way through the city in a Z like shape. So far, in preparation, I have done the walk twice. The first time to determine the route and a second accompanied by some 'guinea-pigs', offering me a gauge into the timeframe and the questions that might emerge. When we live in a city, we know the layout and we experience what is on

offer often without engagement. However when you walk through the city you start to see and experience things you wouldn't unless you are on foot. Living in a city, our experience of our surroundings can be described as snapshots. We drive in, and drive out, only seeing and engaging with the destination. However on foot, your journey is an experience of engagement from beginning to end. In a recent opinion piece in The Press by Auckland-based Urban Designer Garth Falconer entitled 'Let's talk about the Christchurch rebuild', I was pleased to discover his position on our city was different from many other urban designers across the country. He stated, “the future of our second biggest city and the one with the greatest design tradition needs to be back on the national radar”. Rather than focus on what Christchurch should be doing in order to achieve

Falconer's article about engaging with the rest of the country was refreshing, it was like walking around the city and experiencing it in a dierent way. City Councilor, Jamie Gough recently commented that the Cathedral has “become a symbol of everything the Christchurch rebuild should not be aboutâ€?. For those visiting, or watching from outside, it is our icons which continue to be at the centre of debates and disputes. And our icons which continue to stand in states of disrepair. What my recent walks around the city have highlighted is that we are living and working within a massive building site. There is progress being made around

every corner, activity and development on every inner city street. My walks have also highlighted that our architectural community is deserving of acknowledgement in their approach to overcoming the constraints and restrictions placed on the development of sites by the likes of CERA and The Resource Management Act. Rather than squarely designing buildings to height limits, we are seeing a delineation of facades crafting exciting edges and lines designed to create interest. Design responses which should be celebrated and applauded. We are dealing with the gaps in a relatively well-considered way. For me the city and its people can be safe in the knowledge that the architectural community is showing its ability to be creative within prescriptive and often limiting boundaries. We are moving forward. Walk through the city, stop, engage and listen to what is going on. There is no need to get bogged down by the icons of dispute, be refreshed by the fact our city is making progress. www.caarc.co.nz
