“I read recipes the same way I read science fiction. I get to the end and say to myself ‘well, that's not going to happen’” – unknown

W

hen the stork dropped me off to my parents on Monday 7 April 1986 – all 7 pounds, 1 ounces of me – I’m pretty sure I came with a disclaimer – ‘do not leave alone in the kitchen to fend for herself – ever’. Yes, it’s true, despite all of my ambition, I can’t cook or bake to save myself – to that end, let’s spare a thought for my future husband and children. I’m not quite sure whether my lack of domestication owes to the culinary prowess of both my mother and father who came willingly to the task of preparing beautifully cooked meals for me and my siblings growing up. One thing’s for sure though – the signs of ineptitude were there from the very outset. There was that time I faced the wrath of my peers after ruining a recipe in our cooking class. I’d added copious amounts of salt instead of sugar into the mix and it wasn’t until we went to tuck into our treats that I was brought to account for my culinary crime. Needless to say, my report cards for home economics that term, and every term thereafter until I had discretion over which subjects I took at school, were hardly full of praise. I can recall comments from my teacher like, “Kate would see improvement in her baking skills if she actually paid attention to what she was doing”, and, “Kate may find herself better suited to other areas of the school curriculum.” Talk about stating the obvious! My ‘go to’ meal has long been pasta, cheese and sweet chilli sauce, which has provided a great deal of comic relief to my friends and family over the years. The extent of my love affair with the latter is exemplified by my closest friends keeping bottles of the stuff in their cupboards just for me. I even had my best friend post me some for my birthday while I was living in England - the distilled essence of loyalty. While I won’t be donning a Domestic Goddess crown any time soon, I’m proud to say, that I love food – from guilty pleasures through to organic recipes and everything in between. Post-earthquake, we’ve witnessed a delicious metamorphosis of our cuisine in Christchurch with all the flavours of the world ours for the taking. In this issue, our entire team’s appreciation of fine fare is woven through the pages. Ultimately, great food is right at the heart of bringing people together. On that note, perhaps a beautiful meal for Mum is on the cards this Mother’s Day? If she’s anything like me, food is definitely the key to her heart!

On Anzac Day, a huge crowd - estimated to be between 5000 and 7000 people - attended the rededication ceremony of Christchurch’s Bridge of Remembrance and Triumphal Arch, which had been damaged by the February 2011 earthquakes.

E

rected to honour those who fought in World War 1, the bridge was first opened on Anzac Day in 1923. The structure has now been so strongly reinforced and reconstructed that it has been guaranteed to continue as a war memorial for many generations to come. “It was amazing that the structure was still standing up after the earthquake. The builders found it to be completely hollow inside,” says Paul O’Connor, a representative

of the Christchurch Returned and Services’ Association (RSA) and the organiser of the bridge rededication. Originally, piles under the memorial were only four metres deep. As part of the reinforcement work, more expensive piles were driven down 27 metres. Even the badly damaged tails of the limestone lions on the sides of the 15-tonne arch were repaired by local stonemasons. “The workers put in a huge effort

over the weekend, working overtime, to complete everything and did a magnificent job,” Paul says of the lead up to the event. Speakers at the rededication were Christchurch RSA president, Peter Dawson; the Mayor of Christchurch, Lianne Dalziel, and Associate Canterbury Earthquake Recovery Minister, Nicky Wagner. The rededication was conducted by Christchurch Cathedral Dean, Lawrence Kimberley.

A REAL CONNECTION On Tuesday 12 April, a charity event for Endometriosis NZ supported by a grant from The Rata Foundation, celebrated partnerships between communities, corporates and the Government all in the name of achieving great things for those who suffer from endometriosis – a total of 120,000 women and girls in New Zealand. Much-loved Gary McCormick assumed the role of MC with ambassador Miriama Kamo delivering a speech. The continuing tale of a very sick pup

Richard Lucy, a Veterinarian and Ultrasonographer at Ourvets in St Albans, continues the tale of the recovery of Honey, a very sick little pup from Arrowtown…

B

y Saturday night Honey was well enough that I could take him home at night to care for. It’s not something that we do very often, but Honey had wriggled his way into everyone’s heart. We had been in daily contact with his very concerned Mum in Arrowtown, and she was thrilled that he was making such good progress. She was even more pleased that he may still be able to retrieve a duck for duck shooting Opening Day when he was older! But there were still the results from the lab to come. The results finally arrived - scanning through them, we let out a sigh of relief. The pathologist was happy there was no sign of cancer (unfortunately not unheard of even in young puppies) and that the cause of his problem was all due to infection. The original infection may have set up in the lung after he aspirated

something, or possibly from a blood borne infection. Either way, we could treat him successfully. By Wednesday he was a bouncy wee pup - full of the joys of life; eating the clinic out of puppy food, and enjoying a whole

medications and a couple of fluffy toys to keep him company. Later in the afternoon, we had a phone call from his Mum - Honey was home! He had jumped on the old Labrador; pulled his ears and then dragged one of Mum’s

collection of toys to play with. His chest drain was producing no more pus and a repeat scan revealed the abnormal area had virtually resolved. It was time to pull out his chest drain and fly him home. The nurses all had a final hug before putting him in his travelling crate and sending him off to the airport with a small pharmacy of

EVENTS EMERGING IN CHRISTCHURCH Confucius once said, “Our greatest glory is not in never falling, but in rising every time we fall”. By Melinda Collins

T

he philosopher’s truth resonates with powerful conviction in Christchurch following the earthquakes, as well as in other parts of the world where natural disaster has wreaked havoc. Take New Orleans for example – while it disappeared under the surging waters of Hurricane Katrina in 2005, it has returned with a vengeance as the creative core of the United States. An influx of upbeat newcomers; a burst of entrepreneurial vitality, and a renewed sense of civic engagement have primed the city for an era of greatness.

As many as 40,000 residents have arrived since the disaster, but it’s the burgeoning arts scene which has really set the scene. Revenue to arts and culture non-profits surged from $213 per capita before the storm to $428 per capita in 2014 – well ahead of the U.S. average of $103 per capita. Shortly after Katrina, Press Street – formed in 2005 to promote art and literature – started producing events in small businesses which had yet to reopen, including the Saturn Bar and Preservation Hall. Draw-A-Thon was one such event – a

24-hour drawing extravaganza where multiple forms of drawing are explored by artists and non-artists alike. New Orleans is also the birth place of ‘Paint ‘n’ Sip’ parties, which have since found their way to Christchurch through New Orleans expat, Amanda Anthony. Likewise, eclectic events are emerging in the Garden City, breaking new ground and passionately redefining entrepreneurialism in the most positive way. Well acquainted with the irrepressible desire to shop my way to happiness when I’m feeling blue, over the years I’ve picked apart how to quell this insatiable need. In turn I’ve come up with a plan that has led to longer lasting contentment and a more considered wardrobe.

T

he term ‘capsule wardrobe’ is certainly not a new idea. Coined in the 1970s by London boutique owner, Susie Faux, it may be just the answer to curb spontaneous shopping sprees and put more emphasis on quality not quantity. A capsule wardrobe is a collection of a few essential items that never go out of fashion. It creates a framework you can build on by adding and subtracting basic building blocks each season, keeping on trend with accessories to guard against looking like a fashion victim. Creating the ultimate capsule wardrobe will cull the clutter; save money and create more outfit options than you ever thought possible, so you’ve got nothing to lose. As a general rule of thumb, a capsule wardrobe can include around 30-40 items including clothes; shoes and outerwear, but

excludes accessories; nightwear; fitness gear and special occasion outfits. When I looked at the contents of my wardrobe, I quickly realised that I only wear a very small percentage of what I own and inevitably gravitate towards wearing pieces that are well made; fit me like a glove; suit my personality; are comfortable and made from beautiful fabrics - in other words, timeless pieces I never tire of. As the goal is to minimise, begin by taking stock of what you already have. Separate items into three piles - to keep, to donate (or sell and make a little money to invest in your new, edited wardrobe) or store. Set yourself the challenge of creating more outfits with less and it will be a fun exercise as opposed to feeling like you’re starving yourself of pleasure.

FOR THE FUTURE The Canterbury Medical Research Foundation (CMRF) has been Canterbury’s largest private funder of medical research since 1960.

T

he organisation has gained a loyal group of donors and supporters around it, to continue the important work started by its founder, Professor Don Beaven, all those years ago. CMRF has a broad fundraising programme, but one of their most valuable tools is their Bequest Programme. Many people would like to leave a gift to a charity in their will, or even to start up a charitable trust to manage their family’s giving to charity, but they do not know where to start.

“It’s surprising still, how many people pass away not having made a will, or not having kept it up to date,” CMRF CEO, Kate Russell, says. “We greatly appreciate people leaving a legacy gift to the Foundation because it’s such a great way for them to ensure that their support for our work lives on beyond their lifetime.” Some people may be concerned that they wish to adequately provide for their family first in their will. Providing the Foundation with a residue from their estate, however, can be a great way to still look after their family while making sure their chosen charity also receives something after all other distributions are made. “Legacies come in all shapes and sizes,” Kate says. “From small gifts in the hundreds of dollars to much larger, they are all valuable and help us to continue giving significant grants to Cantabrian medical researchers. “We know that many people have had particular experience with a specific health condition and may wish to tag their money to research in that area. We are always happy to tag money and provide it to specific types of research.” Creating and maintaining an up-to-date will is a way for people to relieve their

family of one of the major worries when a person passes away, and most legal firms and trustee companies have simple processes and forms for getting a will in place. In the past year, the Foundation has funded $1.6 million for a wide range of projects, spanning in-lab scientific research to translational and clinical studies, which will have an immediate impact on health practice and health infometrics. In turn this provides vital information for forward planning for Canterbury’s health services. CANTERBURY WINE AWARDS

Since the Canterbury Wine Awards began five years ago, 253 wines have been awarded medals. This year’s results saw 9 golds, 18 silver and 35 bronze medals awarded to Canterbury wines.

ach year these awards highlight not only that there are some fantastic wines made here in Canterbury, but also how food friendly the wines are. Canterbury has some superb talent both in the winemaking and viticulture areas and it’s the combined skill of these individuals that produces such fantastic wines. An average of 70percent of wines compete for the show medal each year, and with the number of entrants climbing each year, the results keep getting better and better.

What the show’s organisers would like to see is this success translating into more of a presence in Christchurch restaurant wine lists. With some outstanding local wines that match superbly with local produce and meats, the hope is that in time Canterbury will become as loyal to their wines and wine producing areas as they are about supporting their sports teams! Getting adventurous in the kitchen has taken on a whole new meaning with the latest trend to hit the global cuisine scene – waste-based cooking.

E

very year, consumers in rich countries waste almost as much food (222 million tonnes) as the entire net food production of sub-Saharan Africa (230 million tonnes). To combat the overwhelming stats, kitchen leftovers from vegetable peels to used coffee grinds, are being whipped into gourmet treats. The increasing popularity of this concept is inspiring a global uptake.

Waste-based cooking took off last year when American Chef, Dan Barber, hosted a pop-up event with the clever moniker ‘wastED’ at his celebrated Blue Hill restaurant in New York. After gathering discarded food stuffs from throughout the city, Barber invited a number of highprofile chefs to turn bones, trims and offcuts into $15 plates.

If you’re feeling a little more adventurous, the menu also features items made from seaweed; blood; skin and sea buckthorn. Whether the waste-based cooking concept will spread to New Zealand is yet to be seen, but why not try to invent some creative ideas yourself? After all, anyone can whip up a risotto, but it takes a special kind of clever to turn scraps into scrummy.

ork your magic on this recipe to create 15+ small macarons. These delicious treats need only a small investment of your time with 20 minutes preparation and around 12 minutes’ cooking time, depending on how many trays your oven fits. Ingredients 120g (4 ¼ oz) of icing sugar 60g (2 oz) of caster sugar 80g (2 ¾ oz) of ground almonds (also known as almond meal or almond flour) 2 egg whites (80g/2 ¾ oz) 1 pinch of powdered food colouring or a small drop of gel food colouring (get creative with your colours, which you can find in your favourite local baking/cake decorating stores) 1-2 tsp Fresh As Freeze Dried Powder of your choice (or a scant 1-2 drops of any liquid food flavouring)

Stand for one hour (at least) at room temperature. reheat the oven to 150°C (300°F) on fan bake and cook for 12 minutes, turning the tray around after 6 minutes to ensure an even cooking (this is purely aesthetic so don’t panic if you forget). et the macarons cool for ten minutes before gently releasing them from the baking paper, then finishing them with your filling of choice. Extraordinary eats in Christchurch By Nicholas Henare

In 1992, I remember introducing a new type of food to my friend, which I thought was really ‘out there’.

orianders’ latest venture, a glorious new restaurant in the rapidly growing hospitality hub that is Bush Inn, offers Christchurch’s finest Indian cuisine. With décor mirroring the beautiful interior of the flagship St Asaph Street restaurant, you’ll feel right at home. Corianders has highly - regarded staff, and on my recent visit they offered to take care of menu decisions for me. Fortunately, the house picked results were spectacular! The starters - succulent Chicken Tikka and juicy Tandoori Mushrooms - came on exciting, sizzling platters with refreshing, mint chutney. The chicken was bursting with flavour and if you’re a fan of mushrooms, try the Tandoori dish. The mango sorbet palate cleanser between courses was a great treat!For the main course, the table was presented with Lamb Madras and Prawn Handi Masala. The Madras was rich in flavour, with a spicy kick! The star of the show, however, was the Prawn Handi Masala. With fresh, juicy prawn meat, and the delicious Chef’s special sauce, it’s one of the most enjoyable curries I’ve ever had and has given me a new favourite at Corianders.This is a fantastic new restaurant and well worth the visit – so the question is… where to next?

The Tiger

A

t the time you could only get it in Queenstown – ‘it’ being sushi. In my opinion, this Sushi stuff tasted fantastic, but my friend’s reaction was less than positive - “Eww yuck, raw fish!” Oh how far we’ve come, Christchurch! There are restaurants serving up Chinese; Malaysian; Thai; Indian and a plethora of others. We have restaurants; markets with stalls – Riccarton Market; food halls and events targeted at every style of cooking you can think of for any palate – the Christchurch Food Show; dumpling cooking classes and The Night Noodle Markets. We had 59,600 people arrive in New Zealand last year from all over the world, bringing with them a different style of cooking with a wide range of tastes. We now have more restaurants in Christchurch than we did prior to the earthquake and a fair amount of them are ethnic. The new phrase seems to be “fusion” - Thai fused with Vietnamese fused with Chinese fused with New Zealand expectation. Thanks to the introduction of so many variations on curry; rice rolls; fish; teppenyaki; soups and salad, Kiwi Kai is changing. We had 59,600 people arrive in New Zealand last year from all over the world, bringing with them a different style of cooking with a wide range of tastes. It’s a symbol of our progressive culture and marvellous diversity. My own sons are growing up eating butter chicken or dumplings and now you can enjoy Yum Char from China; Chilli squid from Vietnam, or Sashimi from Japan any night of the week. I don’t think “Eww yuck, raw fish” cuts it anymore! Let’s embrace the change and celebrate the food together.

e’re sure like us, many of you are quite inquisitive when it comes to what’s on the culinary radar. We’ve done our research and identified the top three health food related trends making a positive song and dance around the world right now. Enjoy!

1. Chia Seed Pudding

T

he salmon fishing season is drawing to a close in the South Island this month. Some lucky anglers with time to spare and access to the local “X Spot” could be bringing home a healthy specimen destined for the table. Always delicious when filleted and seared with a crispy skin, hot, or cold and smoked, it always makes for a tasty bite to eat. Try this recipe from our lunch menu with your home smoked or locally sourced salmon.

Ingredients

The one instance where it’s acceptable to have pudding for breakfast! Pour 1/2 cup of Chia Seeds, 1 cup of coconut or almond milk plus 1 teaspoon of vanilla extract into a jar or glass container and refrigerate overnight or until the seeds have gelled. Before serving, top with fresh fruit of your choice and almonds

8 soft boiled eggs, halved 50g Hazelnut Dukkah (The Villas makes its own - head to the FB page for the recipe) Handful of coarsely chopped, flat leaf parsley 1kg of cooked and cubed Nadine potatoes (The Villas likes to use Nadine potatoes for their mild flavour and dense texture – they also retain their shape during cooking). 1/4 cup olive oil 150g cornichons Juice of half a lemon 500g of hot smoked salmon Salt and pepper to taste.

Method Take the parsley; dukkah; lemon juice; cornichons and olive oil and toss together in a large bowl Warm the pre-cooked & cubed potatoes in the oven for 4 to 5 mins then toss through the dukkah/cornichon dressing Gently fold through the smoked salmon pieces and season with salt and pepper Place soft boiled egg halves on top to garnish.

Inspiration can be found in the most unexpected places when it comes to art for your home. Open your eyes; your cupboards and your imagination to some unique objects you can transform into works of art that will create an abode that’s bursting with personality.

ummaging through your collection of family heirlooms can turn up the most extraordinary bits and bobs. While some may have a high financial value, most will have a value you can’t put a price on. This strong emotional connection we have with these pieces, and the memories they evoke, is what makes them truly prized and can have the power to create a truly personalised habitat. Bundles of vintage fabric hoarded by my seamstress Grandmother have given little pockets of character to my own apartment. Cushions and larger quantities of material with larger scale patterns or murals are ear-marked to be fashioned into screens or framed and hung as a focal piece for any room in the future. Collected ephemera you find in your family’s attic, or digging through your local junk shop, is the ideal thing for framed art. My personal penchant is for vintage maps, but anything from old cardboard milk bottle tops, to botanical book illustrations, can be grouped together to create mini works of art.

Think outside the frame; look at objects in a new light, and you will find a new purpose for them and inject a little soul into your home.

For stellar insider tips that address all your interior design conundrums, Australian Stylist and Interior Designer, Juliet Love, will help you transform your house into a home in her new book Love Style.

W

hen designing a house, Juliet strongly advises using a holistic approach by linking spaces together to create a fluid and harmonious aesthetic. Balance is especially important and revolves around the equal distribution of weight in a room. Balance can be either symmetrical - where one side of a vertical axis is a mirror image of the other side, or asymmetrical - where dissimilar objects of a similar weight are positioned each side of the vertical axis. While asymmetry is harder to achieve, the results are often far more visually interesting, Juliet says. A great tool to overcome issues of balance in a room is to take a photo of the room and divide it into four by placing a cross in the middle. In doing this, it should become obvious where items need to be added or taken away.

There should also be a focal point in a room - where your eye rests on one particular component after surveying the room in its entirety. A striking artwork; a fireplace, or a decorative item such as an interesting lamp, vase or light fitting, are good examples of points of emphasis in a room. Proportions in interior design should be approached in a similar way to dressing the body. If pieces of furniture are in proportion to each other and the scale of the room, a room is more harmonious. Contrast can be achieved by using different colour weights and is an important element to establish a strong look outside of the ordinary. Decorating your home can truly be a project from which you gain great satisfaction. By applying these design principles, you are much more likely to have a successful outcome and create a great base on which to build character and personality with the addition of decorative elements.

Less is more: sustainable furnishings By Melinda Collins

Sustainability; green; eco-friendly; responsibility; awareness - new buzzwords are emerging across all industries as we seek to become more environmentally aware consumers. The latest in the long line of lexicon is ‘peak stuff ’.

M

uch like the phrase ‘peak oil’ reflects the peak and decline of a drilling operation, ‘peak stuff ’ is the idea that the Western consumer appetite for home furnishings has reached its peak. This notion comes, rather paradoxically, from the world’s largest furniture retailer, Ikea. The Swedish company’s Chief Sustainability Officer, Steve Howard, told a Guardian Sustainable Business debate earlier this year that the consumption of many familiar goods has hit its limit. Although seemingly contradicting Ikea’s target of almost doubling sales by 2020, Howard says the company is working towards building a

“circular Ikea where you can repair and recycle products”. Sustainability today is not only limited to the adoption of environmentally friend technology, but extends to stepping away from the consumerism that continues to plague our societies and our land fill. The move to simplify our homes is gaining traction as we move away from the throw-away mentality we adopted in the early 21st century. For example, while replacing old appliances and lights with more energy-efficient models makes good eco-sense, questioning the necessity of the purchase before purchasing a better

quality item also makes financial sense. The Guardian recently described sustainability as the “geeky, pimply teenager who has come to our party; turned off the music, and told us that we would really be much happier if we stopped having so much darn fun!” As the value of consumer goods imported into New Zealand continues its upward trend - rising 12 percent in January 2016 compared with January 2015, and quantities of the largest consumer goods increase annually too, we think there’s nothing cooler than rocking the less is more approach in your home.

Real estate has its own annual rhythm and it’s about this time of year I start reacquainting myself with some of its finer points. It’s the end of the financial year, the commencement of business planning and, for the brand I’m associated with, conference time. It’s surreal, stressful and strategic all at once, with the pressure really being applied to enter the new financial year refreshed and refocused. Which after a year of long hours and big results is not easy. Remaining relevant to your marketplace, engaged and committed takes planning and the kind of thought processes that keep you awake at night.

Better people, realtors, partners, siblings, parents, etc. and putting time aside to determine how to do this makes us better human beings. So I always include this as one of my personal truths. 4. None of us has to be here Including me! So if we’re together, let’s bring our best selves. 5. Our dreams fuel our outcomes

Plans can be long, short, elaborate or simple. Over the years I’ve had to do some plans that were so complex you needed a PhD to navigate them (hopeless). But the main aim for me as I dealt with my large group of attendees was providing a framework that got most, if not everyone thinking. Any trainer will tell you it’s almost impossible to engage everyone every time. So I go for as much participation as possible and I did remind them that there were some good takehome points of value so it was best to be alert to them.

Having the right dreams, goals or purpose is like having rocket fuel in the tank. It’s just a matter of identifying them and for most people that’s one of the hardest things to do.

I run the business planning sessions for our large team of consultants and because I want to fill the box, not just tick it. I put serious amounts of time and thought into my delivery. This year I utilised a relatively creative approach to the session incorporating the following truths. There are five of them and they are my feelings and thoughts after many years at the helm.

1. Any plan is better than no plan at all We all know the statistics that sit behind this statement and these can be readily accessed using Google. Basically they establish that there is a wide gulf between having a formal written plan and no plan at all. Completing a plan and following it positively correlated with business success and for many this flows on to personal success too.

So there you are, that’s the framework. Now all I’m waiting for are the results! Enjoy this warm, lingering autumn as anyone who watches Game of Thrones will tell you – winter is coming.
