The addition of the 114-suite Scenic Eclipse II to the fleet is a milestone moment for Scenic, effectively doubling its capacity in the exclusive exploration cruise market. The 550ft vessel is a near-identical sister-ship to Scenic Eclipse, which set the benchmark for ultra-luxury cruising when it launched in
2019. For the first two months of operations, Scenic Eclipse II will spend its time exploring the picturesque coastal waters and coves of Italy, Croatia, Montenegro, Spain and France before heading north towards Norway for a series of Arctic expeditions.

Among the design enhancements to the 550ft-long Scenic Eclipse II are the new Sky Deck, which now features 270-degree views and a brand-new Sky Bar with indoor and outdoor seating including six private cabanas allowing guests to enjoy the stunning views with their favourite drink in hand.
Another new feature is the large, oval shaped pool, complete with comfortable furniture by Italian design house Paola Lenti. A perfect venue for sail-away deck parties, the pool now incorporates special jets allowing guests to swim ‘laps’.
Elsewhere on board, guests on the inaugural sailing will be able to truly immerse themselves in the ship’s eclectic art collection. In a rare exclusive, Britishborn artist Carl Hush will be on board for a live installation of his new feature artwork inside Koko’s Asian Fusion restaurant.

The acclaimed creator, whose work encompasses street art, collage and painting, draws heavily on Japanese culture to explore representations and constructions of women. Hush previously created a bespoke piece in a similar vein for Scenic Eclipse, and this is a rare opportunity for guests to see an artist at work.

Scenic Eclipse II’s upcoming voyages have already attracted much interest, with an exciting array of itineraries through 2023 and 2024 now available. From the Arctic in the summer – exploring Norway, Greenland, Iceland and Canada – the Yacht tours the British Isles before heading across the Atlantic to the Caribbean, through the Panama Canal to South America, and eventually down to Chile, Argentina, and Antarctica for the Winter.
In March 2024, it then takes a turn across the Pacific towards French Polynesia, Tahiti and Fiji, before a series of cruises exploring the Kimberley coastline during Australia’s winter. New Zealand, Indonesia and the Solomon Islands are among more Pacific options up until October 2024.

FIRST LOOK AT PROJECT 710
NO DRIVE SHAFTS
One of the most technically advanced and dynamically designed Feadships of recent years has slipped out of her construction hall at the Feadship yard in Aalsmeer for final outfitting in advance of sea trials. Project 710, as she is known at the yard, extends to 84 metres. According to the design team, the brief called for every yacht design norm to be questioned and challenged, both in terms of architecture and engineering, to create a next generation project. Her length is optically stretched by a low profile, horizontal styling features, and very clean shapes flowing aft from a strong bow showcasing strength and seaworthiness.
For the first time in years, Feadship has launched a yacht with a single level engine room, affording considerably more room for creativity with accommodation, in a layout as bold and modern as the exterior profile suggests. Both the exterior design and interior architecture and design are by the British firm RWD in collaboration with MONK design.
There are surprising destination spaces, such as an asymmetrical atrium staircase
leading to a lower deck dining saloon, where an entire wall opens to reveal a terrace view just above sea level. Near the stern is an Aqua Lounge with massive windows below water level. In place of a mooring deck forward there is a revelatory bow observation lounge with doublecurved glass floor-to-ceiling windows. Terraced aft decks float without pillars, while glass balustrades allow unobstructed views from both aft deck and fully glazed aft interior spaces, creating a vital connection to the natural environment.
Striving for innovation and first-class engineering, Project 710 is the perfect next step on Feadship’s path toward building zero-emission superyachts by 2030. It is the first of the new generation of large yachts furthering carbon reduction through hulls optimised at cruising speed instead of top speed, weight control, advancements in electric propulsion, and the ability to run her generators on HVO, a secondgeneration biodiesel, a so-called net zero CO2 fuel. Sea trials and delivery fill will be HVO, reducing total CO2 emissions by about 90%
Using Feadship’s Advanced Electrical Drive (FAED) program for diesel-electric hybrid power, Project 710 has 4.5 times more electrical storage capacity than our first hybrid yacht, Savannah. She has no drive shafts, and no rudders. Electric drive and steering are through a pair of electric Veth contra-rotating thrusters. Feadship and Veth collaborated on computational fluid dynamics (CFD) analysis of the drive legs and propellors’ shapes to maximize efficiency and minimize vibration. Providing energy for the luxury hotel load accounts for much of a yacht’s fuel consumption. For Project 710, the engineering team took a deep dive into capturing waste heat from the custom variable speed generators and air conditioner chiller to supply heat to the AC system, pool water, domestic water, engine preheating, and more. An innovative heat pump system allows the yacht to draw heat from seawater.
All these features (and more) were developed to connect to the surrounding environment within a next gen yachting platform that leaves minimal trace within that environment. Watch this space for more details soon!

Synonymous with lazy days and the pop of champagne corks, taking a trip on an elegant slipper launch is the perfect way to enjoy the river
Andrews Boathouses build new slipper launches to the original design, handcrafted and customised to the customer’s specification. We carefully select and acquire old slipper launches that we then put through our rigorous restoration process. We strip away the damaged and unsound planking and replace it with selected timbers that have been aged for at least two-years.
From the keel up we restore the hull using the best woods and modern caulking to ensure the integrity of the hull. The hull is made sound and painted in the
new owner’s choice of colour and, of course, the trademark blue and gold pinstripe is always added before finally finished.
For the interior trim the new owner can select from a wide range of specialist marine facings, up to and including, leather trimmed bench seats with contrasting piping to match the colour of the hull. Even the name of the boat can be laser etched onto the upholstery.
With all of our boats we add the feel of power steering and all the petrol engines have the
reliability of electronic ignition secreted onto the unit which is invisible to the new owner. The whole boat is rewired with marine grade components and finished to an excellent standard which enhances the look as well as the reliability of the boat. We even colour code the new Smiths dials to match the colour of the hull.
For the deck we can either restore it to its original design, or we can introduce beautiful alternatives for the new owner, such as a Pale Yellow Obeche or a Golden Iroko to partner with the traditional Mahogany or Sapele to create the
classic ‘strawberries and cream’ look. The new owner has the opportunity to create something truly unique and outstanding to match their personal taste and character.
Once fully restored we spend over a month applying up to 16 coats of Awlwood varnish to the deck to ensure that its preserved against the rigors of exposure to the elements. Each coat is applied
then sanded smooth before the next coat is applied to get that deep lustrous look that defines boats of this era.

Andrews built 493 boats in total until they stopped in 1973. Of this total it is reckoned that only 150-200 were Slipper launches, there were 50x30 foot slippers and it is estimated that only 47 have possibly survived. Also 2 x 50 foot and 3 x 20 foot.

The Ferrari Purosangue has won the Production Car category of the prestigious Car Design Award, which was launched in 1984 by the Italian magazine, Auto&Design. The prize-giving ceremony took place yesterday at the ADI Design Museum as part of Milan Design Week.
The Car Design Award is presented to projects that have made a significant contribution to the evolution of car design. The winners are selected by a jury of 11 expert journalists from leading international motoring publications, including Auto&Design itself. Citing its reason for awarding the Ferrari Purosangue the top plaudit in the Production Car category, the jury declared: “Extraordinary proportions that make the car look more compact than it actually is. Its accessibility and occupant space and comfort are category-topping, thanks to an elaborate and aesthetically captivating door-opening system. Unmistakably a Ferrari, it stands out from all of the other high-end cars of similar dimensions”.
The Ferrari Styling Centre team, headed by Flavio Manzoni, also won the Brand Design Language category at the 2023 edition of the Car Design Award. This particular plaudit highlights the work of the team of designers that has delivered the best consistency and transversality in their brand’s formal language across its entire product range.

GARDEN ART INSTALLATION
Squire & Partners worked in close collaboration with Based Upon, a collective of artists and creators who designed a number of bespoke pieces for Lancer Square. Commissions include three courtyard sculptures inspired by children’s story tales of Alice in Wonderland and Peter Pan, set within Kensington gardens. There has been a long association with JM Barrie’s eternal boy and Kensington Gardens. The infamous character of Peter Pan appears in Kensington Gardens in the original version of the story.
APARTMENTS
The entrance experience of the apartments was an important element of the layout design, with feature entrances flooded with daylight. Squire & Partners have introduced an opulent palette of luxurious finishes for the residences, including walnut timber veneer and oak floors. To enhance the development’s level of luxury, bespoke ironmongery in champagne gold complements Calacatto Oro marble in the
master bathrooms and silk georgette in the secondary bedrooms. Bespoke kitchens have been created with contrasting dark bronze slim panels for doors and Calacatto Oro splashbacks. Views out of the apartments are expanded upon with loggias that offer discreet but generous inside-outside living.

The studio takes the discerning client on a journey, heightening their senses through the impressive design detail. “We were inspired by the location of Lancer Square surrounded by historical Georgian and Victorian architecture and proximity to Kensington Gardens, and infused with art and design. The strong architecture with grand proportions and fluid sequence of spaces opening into light filled rooms, seemed to call for purity of form and material, and the use of natural materials. In the apartment at Lancer Square, we did not have an actual end client, but we created a persona to help us guide decisions, as every decision is influenced by the end user. We played quite a lot with shades and textures of white, and crafted details.”

It’s for this reason that American news site CNBC recently tipped Dubai as the best place for wealthy investors to purchase in 2023, predicting luxury property prices to increase by 13.5%. This comes to no shock to those residing in the city already.
More wealthy individuals are also looking for luxury rentals both short and long term, encouraged by the last 12 months seeing the highest growth in rentals on record. This in turn generates greater returns for investors driving both property prices and rental returns on an upward trajectory. This trend is set to continue in 2023.
“Dubai rents increased at a record rate over the past 12 months, according to data published by global real estate analysts at CBRE. Rents in both the apartment and villa sectors surged, making it Dubai’s highest rental growth on record. Average rents increased by 28.5% in the 12 months to January 2023.”

With each glass tread finished in sandblasted glass to create a non-slip surface and illuminated with LED lights for style and safety Ion Glass created a striking staircase, descending to an outside terrace in a villa on the Cote D’Azur. The client, who owns several properties in stunning locations around the world, was delighted!

AN INTERVIEW WITH ROSAMUND MUIR ON THE TRUE CRAFT OF SUSTAINABLE SHOEMAKING
1. Making the move from working in Design and Advertising to then creating your own brand must have been a hard decision to make, especially while being a mum of three so what was the main reason for making the move?
I worked in Design and Advertising in London after studying at university in Leeds. When my husband and I moved abroad in 2007, I had a break from work, welcomed our three children into our family and set up a charity meals program for elderly hospice outpatients and rescued women in a refuge. When my youngest child started school, I decided to follow my passion for shoes and trained in Shoe Design and Pattern Making at London College of Footwear. I have always been such a shoe lover and supported by my great family and friends. I wanted to use my own experiences to
design beautiful yet practical heels that women could enjoy. Creating my own brand has been a thoroughly enjoyable experience and thoroughly challenging! There are so many moving parts to having your own brand in fashion.
2. What is your main inspiration for creating luxury footwear for women?
My inspiration comes from my own experience of wearing heels, what has worked for my feet, what has not and speaking to other women about their requirements in heeled footwear. Like many other women, I have always loved heels and how I feel feminine in them but often found many brands’ heels uncomfortable for work or events when I was working in London and then going to events such as weddings with young children, where you are on your feet all the time. I was inspired to create my
own collections offering different heels for many requirements for those women who love heels.
3. How important is the fact that the shoes you design are then handmade using traditional practices?
It is extremely important for me to bring back the handmade practices into making our footwear. Our ethos at Rosamund Muir is slow fashion and every aspect of making our footwear is slowed right down compared to the fast fashion practices of many other shoe brands who fast bulk produce footwear in large quantities in factories. Our traditional methods of handcrafting ensure much higher levels of quality which we have been consistently recognised for. It is wonderful to see our expert artisans make our footwear and keeping these traditional practices alive.

4. Sustainability is something that you are very passionate about, how do you implement this into your brand?
Sustainability is hugely important in our brand, and we are proud to speak about our genuine sustainability actions. There are so many fashion brands who state that they are sustainable when they are not or do very little and this ‘greenwashing’ is having a very negative impact on those brands who really are doing what they can to be responsible to the planet.
To be honest, how to be a sustainable brand wasn’t something I knew absolutely 100% about when I launched Rosamund Muir. Knowledge grew with experience over the first six months of the brand. For example, I didn’t plan at first to use only surplus stock leathers as I didn’t know so much excess leather stock existed. Surplus stock leathers are leathers which have been overproduced for other brands, and at Rosamund Muir, we source the most premium of these surplus stock leathers from Italy. It was on my first visit to a tannery in Italy where I saw huge piles of skins in all colours and patterns. I knew then that I didn’t want to add to this huge excess nor contribute to water consumption, energy consumption or chemical pollution through the tanning process. We only source by product leathers too which are waste from the meat industry and totally disagree with animals being bred only for their skins (for example, crocodile, snake, lizard).
As a result of sourcing only surplus stock leathers, it means we only produce our footwear in small batches as we have low quantities of leather. We love this as it means our footwear is more exclusive for our customers. We have a zero-waste policy too and any off cuts of leather which are too small for us to use, are given to local schools for art and craft purposes.
All our boxes are strong, sturdy recyclable boxes, designed to last and for our customers to always keep their footwear protected in. We use only organic cotton bags and there is no plastic in our packaging.
5. Have you always had a passion for footwear or was it something you discovered whilst studying?
Yes, absolutely, I have always been a total shoeaholic. My mum and grandmother were too, and the apple definitely didn’t fall far from the tree! My first memory of loving shoes was walking around in my grandmother’s block heel loafers from a young age. I loved the sound of them on the stone floor! I used to save my pocket money and Christmas money gifts and buy shoes. There was a fabulous old style shoe shop in my local town, and I loved the smell of the leather walking in. My love for shoes never faded and I was known for my love of heels at university, often being the only one in heels in lectures! My friends used to tease me thinking that they were impractical but that didn’t faze me. In fact, throughout
my twenties, thirties and forties, there have been many times when my choice in footwear has received negative reactions for apparently being impractical for day to day wear. I remember another mum calling me out publicly in front of the primary school my boys attended when I was pregnant with my daughter. I felt mortified as if I was being called out for being a bad mum. I have never forgotten that particular experience and only served as a catalyst for me to start my own brand with its strong ethos’.
6. What is the best way to describe the brand Rosamund Muir?
Rosamund Muir is a genuinely sustainable luxury heeled women’s footwear brand handcrafting footwear filled with spirit and designed to empower women to embrace how they feel feminine in their own style and individuality.

7. If you had to put your success down to one thing, what would it be?
Determination! I never really realised how determined a person I was until I started my own brand. When you run your own company, risking your own finances too, determination is really very important. You also live and breathe what your brand does and strongly visualise where you see the brand and its future. You can never really take a holiday from your own business so it’s really important to love what you do too.
8. Where does your drive come from, living a busy life alongside the company you must have a huge amount of drive and ambition but where does it all come from?
I think it’s really important to have a great work / life balance. My family is the most important and cherished part of my life, and that love comes before anything else. I spend as much time as possible away from work to be with my family. They give me drive and ambition. I lost my mother to cancer when I was young, and I lost my father to cancer when I was pregnant with my youngest child. I attribute a lot of my drive to the memory of them too.
9. What is the most important lesson you have learned in the past three years?
That you must learn to be flexible and adapt.
10. Where do you see the brand in five years time?
I hope to see the brand as a leading, respected brand in luxury footwear and in sustainability ethos, well known in the industry and to our customers for its quality and empowering footwear. I would love see our beautiful quality footwear in more shops and boutiques, as buyers and consumers start to understand what sustainable fashion really means and reject non sustainable brands.

1. Going back to 2002 what made you decide to launch Apollo Event Consultants and how long before this did you decide this is what you wanted to do? It was actually circumstantial. I had always wanted to do my own thing, but never brave enough to do it. Then I was made redundant in 2001 and wrote to all the clients I was working with and they said If I did my own thing, they would come with me. So, it was a no brainer really. The rest is history!!
2. When planning an event whether it is a wedding, birthday party or corporate event do you have a required time period that you like to work with ensuring you have plenty of time to work with the client to create the best possible event?
Realistically yes! 6 Months is a good time, however with preferred dates getting
booked up quicker and quicker we’re finding a year is quite normal. However, that’s not always the case and we can usually turn things around in 3 months if suppliers are free and the client is good at making decisions!!
3. With the event planning business being rather competitive what would you say has set APOLLO apart from the competition and been key to your success? I’ve been in the business for over 35 years, so well established. We have a vast experience in all areas of the business. Whether its talking marquees, generators, lighting and sound or catering, we’ve pretty much seen it all. So, we can talk with real confidence with our clients about the planning, looking at the bigger picture, not just the fun colourful bit!! We decided to concentrate on country weddings and
parties at guests’ private family homes, rather than venues, as it gives us so much more scope. We not restricted in what we do, by too many rules and regulations, that London venues can have. We have a very calm approach to everything we do, and I over see every event to make sure its perfect. We will only take on one party a weekend, unless it’s an old client that we need to fit in. We have a small team of staff throughout the year and an extremely professional network of free lancers who help out when required.
4. If you could offer some advice to our readers before they start to think about choosing a planner for their event what would you say? Always call Apollo first!! Seriously though, I would look for some recommendations, word of mouth is so powerful these days. You have to

remember in most instances you’ve never got married before, so how on earth are you going to know what to look out for?
It’s a stressful time and to have someone to go to, who knows the answers, makes it so much easier and more importantly fun! Remember you only have one chance at it, and you want it to be perfect. You can always ask for some testimonials from your planner. Always meet your planner before making a decision. What you want is a planner who listens, has a good track record, been in the business for a while and has organised a good variety of wedding /parties. You should also have a good idea of what you want! How many guests, marquee or venue, home or away and most importantly your budget!! We’re not here to tell you what to do, but advise you on the best way to do it.
5. Have you seen any specific trends in the industry over the past year that are becoming more and more popular that perhaps once was deemed to be a rarity?
I think the vintage style wedding is still really popular with a “less is more” feel. Bringing in Street food trucks seems to be a real trend currently as food is getting so expensive. Plastic glasses are a big thing now. Especially Reusable for 18th and 21st birthday parties and better for the environment too.
6. What would you say is APOLLO’S main ethos? “We never promise anything we can’t deliver but rather deliver more than we promise” Our attention to detail.
7. It is hard to think of a business that is more personal than an event planner so how do you make sure you tailor your service to each specific client. That’s easy – I will know within the first meeting if we’re going to get on. I’ve been doing this long enough to see the signs. We only have to ask a few questions and we’ll know. There is also another little trick of the trade that
I use. On arrival at a first meeting, I’ll often ask to use the downstairs loo. This is often decorated simply with kids first pictures, School team photographs, holiday snaps and country sport kit hanging on the back of the door. All little tells as to the way they run their lives.
8. What would you say has been the highlight event for you that you have worked on and why? It has to be the 800th anniversary of “The Sealing of the Magna Carter” back in 2015. 4,500 privately invited guests including the Queen, Prince Philip, Prince William, The Princess Royal, The Prime Minister. We built a sound stage for the London Philharmonic Orchestra to perform. The 3-armed forces were in attendance and the Red Arrows flew over at the end. 9. Does the wedding sector take up the majority of your work or have you seen a different kind of event increase in popularity? It really depends from year to year. Our main business is private parties and weddings with a bit of corporate thrown in. I like it being that way as it adds variety and never becomes boring.
10. What type of client do you cater to? To be honest – High net worth clients who
have little time on their hands – our job is to make sue we make the organising process as seamless as possible and the event as fun as possible.
11. Could you tell us a little bit about any events you have coming up over the summer months? We have a lovely lunch party for a very well known sculptor in June. We have worked for him in the past and he enjoys the finer things in life. Very laid back and down to earth but loves things to be done properly.
Then we’re putting on a festival for 250 guests. 3 birthdays all in one. Lots of festival flags, street food stalls, two stages and a few bands. It will be a late one!! We’ve also been asked to organise a wedding in about 12 weeks’ time.
12. Lastly, could you let our readers know why having an event planner such as APOLLO is key to helping with the success of their event? Its simple really. We have done this so many times that we really do know what’s required. We run a very personal service and you’ll always get to work with the same planner throughout the journey and on the day itself. We will know the answers to a vast majority of your questions, and be able to give you peace of mind at all times so that your day is perfect and a total reflection of you and your fiancé.

maverick as the watch’s design: launching a Hollywood action-comedy.
Starring TAG Heuer brand ambassador Ryan Gosling (Drive, The Gray Man) and Vanessa Bayer (I Love That For You, Saturday Night Live), the offbeat chase thriller sees Gosling on the run from Bayer’s Prop Master as she attempts to take his beloved TAG Heuer Carrera off his wrist – something he doesn’t plan on letting her do.
Produced by David Leitch’s 87 North –responsible for some of the most iconic action films of the last decade, from John Wick to Deadpool 2 to last year’s Bullet Train – and directed by Nash Edgerton (Mr Inbetween), Gosling shot The Chase for Carrera while working with Leitch on feature The Fall Guy in Australia. Both Gosling and Leitch contributed to The Chase for Carrera’s creative and the result is pure box-office.
The film sees Gosling and Bayer battle it out in high-octane style, as everything from iconic sports cars to heavy-duty trucks to electric production buggies are raced through various movie sets in a spectacle of blockbuster proportions. In a knowing nod to its film-within-a-film set-up, Leitch plays himself as the on-screen director.
It’s a fitting celebration of an iconic timepiece that was born of the racetrack when it was first created in 1963 by TAG Heuer’s legendary former CEO Jack Heuer.
Named after the notoriously dangerous Carrera Panamericana race, it was designed with readability and simplicity in mind, vital for drivers navigating high-speed bends. The result was an icon – elegant and uncluttered, sporty and daring – that spoke to Heuer’s love of mid-century design yet remains timeless six decades on.

What better way, then, to celebrate its 60th year than with a world-first action extravaganza that few would even think possible? The film even comes with its own Hollywood posters and timeless taglines. “How bad does he want that watch?” reads one. Answer: badly.
Yet it’s not just the special effects that make the film so spectacular. Gosling first worked with Bayer when he hosted US comedy institution Saturday Night Live in 2015 and the two found they had an instant comic connection. The duo’s duel is as hilarious as it is dramatic, with both actors improvising many of the film’s best lines.
“Prop Master?” Gosling asks her when they come face-to-face. “How did you get that? Did you get a bachelor’s first and work your way up to the masters?”
Just as the word “Carrera” itself doesn’t have a single meaning – along with “race”, it can also be translated as “career” or simply “path”, the perfect name not just for the daring, but simply for those with independent spirits – so the film, too, contains multitudes.
Not only does it manage to be many movies in one – going from adrenaline-fueled chase film to slapstick comedy to mob drama to Western parody and back again – this mini blockbuster contains a range of easter eggs, each one a nod to the Carrera’s illustrious past.
It opens in an art-deco hotel corridor as Gosling finds himself chased by swordwielding gang-sters. But the first person we see is an old lady about to enter one of the doors.
Eagle-eyed fans of racing history will notice that she is dressed in the distinctive white sunglass-es of the legendary Jacqueline Evans de López, the British-born Mexican TV and film actress who was not only the first woman to compete in the infamous Panamericana race, but did so five years in a row, between 1950-1954, in her own Porsche.
She was truly a trailblazer that embodies the spirit of the TAG Heuer Carrera: someone, like the Carrera itself, who refused to go with the status quo.

It may be a Prop Master in the film who is desperately attempting to get the Carrera back, but in truth TAG Heuer’s most iconic chronograph is anything but a prop: it is the film’s headline star… along with TAG Heuer’s brand ambassador, of course.
“Okay, now tilt the watch to the light!” shouts Leitch, playing the director, at one point.
The iteration of the Carrera that Gosling is desperate to keep hold of is the new TAG Heuer Carrera Chronograph. Topped with a “glassbox”, a sapphire crystal dome that flows seamlessly over the tachymeter scale that runs around the dial edge and into the case, it comes in a stunning signature blue dial on a blue calfskin leather strap. An icon never looked so modern – and no wonder Gosling is not about to give it up easily. This is one timepiece worth putting your foot down for – literally. Bayer’s Prop Master, meanwhile, is wearing the new TAG Heuer Carrera 36mm in pink.
It won’t be a one off for that iconic double-act – Gosling and his Carrera – as they will also be seen co-starring in director Leitch’s next major feature, The Fall Guy. Q. What was your inspiration for creating such a unique venue?
This new Carousel on Charlotte Street is the natural evolution of everything we were doing at the original site for seven years. The wine bar was the missing piece - a platform for us to connect the different strands of the business and to showcase our own creativity - but the idea of inviting chefs from around the world to cook with us has been the same since day one, and it still feels as fresh as ever. We wanted to give Londoners a new and exciting dining experience every single week that they wouldn’t find anywhere else in the
capital, and in doing so, create a thriving community of chefs and restaurants who share the same values.
Q. Carousel has guest residences from some of the world’s leading chefs, how important is it that each chef brings their own creative flair, ideas and concept to the venue for their residence?
That’s the whole idea of Carousel. No two weeks here are ever the same and that’s how we like it. As the residencies are always a collaboration with our team - both in the kitchen and front of house - there are, however, only so many variables. The
restaurant has its own identity and its own regulars, so the set-up and style of service remain pretty much the same, irrespective of who’s cooking. As do the suppliers. We source the ingredients for our guest chefs, so there’s always a focus on ethical produce from farmers, foragers and fishermen around the UK. But as for the flavours, the ideas and the techniques, that’s all down to our guest chefs.
Q. Having an ever-changing lineup of chef residences means that there is always a new experience to enjoy at Carousel do you feel that this is one of the main reasons for your success?

Absolutely. We were among the first but we’re by no means the only people doing the guest chef thing. As far as I am aware though, we are the only ones hosting back to back chefs, week after week. We’ve hosted 300 chefs and counting in our nearly nine years, working with some absolutely incredible people along the way. The mix of rising stars and more established names keep things fresh and it also creates a special bond with our diners. Our regulars trust us to bring exciting people to the table, even if they might not be house hold names (yet). It’s their chance to say that they were there at Ikoyi’s first ever dinner or when Santi Lastra debuted the ideas behind Kol, which is pretty cool.
Q. Carousel also offers a lot of other experiences for the customer to enjoy
such as workshops, exhibitions and award-winning events making Carousel a very adaptable venue. Do you feel that offering such a variety is something you have had to do to survive in the hospitality sector or is it something that you always wanted to add?
The multifaceted nature of Carousel has been there since day one. We always saw ourselves more as a gallery than a restaurant, where people can go beyond a conventional seated dinner and explore their passion for food and drink in different ways, whether that’s a food photography masterclass with David Loftus, miso making with Nancy Singleton Hachisu or a shojin ryori workshop with Toshio Tanahashi. With the events, we work with some fantastic brands. Our ethos for these is to create
an experience for our guests that’s on a par with what they’d expect from a top restaurant. There’s a frustrating trend in the events world of people paying a similar price (if not more) for a lesser experience, so we wanted to fix that. It’s a key part of our business and one we’re really proud of.
Q. Have you got a dream Chef that you would like to take a residency at Carousel?
Where do I start? The beauty of having an international reach is that there‘s a never ending stream of exciting talent emerging. The landscape is constantly shifting so we’re never short of great people to invite. That said, top of our list right now has to be Josh Niland. Our dream is to host Josh for a week of dinners, with fish butchery masterclasses and other cool events happening around it. Josh, if you’re reading this…
Q. Have you seen a change in the type of cuisine or experience that guests are looking for more now than previously when you first opened?
Yes and no. Japanese and Latin American residencies remain as popular as ever but I would say there’s been a shift away from the New Nordic obsession of our earlier years to more relaxed cross-over cuisines (eg Korean street food meets French néo bistronomy). Whereas a sustainable approach and reverence for provenance were a selling point in their own right four or five years ago, I would say they’re now seen as a given for the diners that we attract. Our guests are looking to be entertained as well as educated, which is only right.
Q. What is the process around choosing the next Chef to take a residency and how long in advance do you plan this, It must be hard working with one chef to get the creative juices flowing and the hype of service but then also be planning the next.

We’re working about six months out which means we can programme the line-up on the front foot. It took us a while to get here post-Covid, when travel restrictions would come and go with little to no warning, so it’s great to have a bit more control (even if things can - and do - change, often with very little notice). The process is pretty simple as we all know the criteria. Is it the kind of place that we’d take friends to if we were living in that city? Will our guests be as excited as we are about the chef? Is the menu going to bring something different to the table? The chefs that we talk to are a mix of people that we approach (because we love the sound of what they’re doing), recommendations from our existing community and people who approach us, although we are quite selective about who we say yes to. In terms of keeping the energy high, we rotate the Carousel chefs that the guest chef will be working with so it’s not always the same team planning every menu and making sure that we bring our A-game to every service. That said, people choose to work at Carousel because of what we do, so it’s self-selecting. The motivation to work with different people each week is high.
Q. Do you see anything changing for Carousel this year or is there anything you would like to see happening at the venue?
We are looking for more opportunities where we can use the building to its full potential. We have five different spaces which are each operating more or less independently on any given day (the guest chef restaurant, the wine bar, our pop-up incubator No. 23 and the two event spaces upstairs). We love the idea of one-off concepts and collaborations where we can have different connected experiences happening all at the same time. We’re actually working on a series of events with the organisers of the AVA dance music festival that brings together top chefs and DJs. Each {PAIRED} takes place across the whole of Carousel, with simultaneous chef x DJ collaborations happening on different floors. The two artists work together to create a unique menu and soundtrack that weave together each other’s influences. Each pairing is a one-off, never to be repeated. There’s then a big party downstairs after the dinners with the DJs playing back to back sets, so it’s a kind of
turbo version of what we do here normally. We’d love to create more multidisciplinary experiences like that, combining food and drink with music, art, technology - you name it - to keep pushing the boundaries.
Q. Do you have any ideas on any new expansions for the brand?

This is an elegant take on a pub classic. These Scotch eggs feature a spicy prawn mixture and are served with a fragrant lobster satay sauce and pickled mooli garnish. This dish features on the menu at Kerridge’s Bar & Grill in London and will make an impressive starter at dinner parties. The lobster aioli component is optional, but it adds a lovely touch while helping the Scotch Egg stand upright when plated.
For the Scotch Egg Prawn Mixture

Start by making the prawn mixture for the Scotch eggs as they require 24 hours in the fridge for the transglutaminase to work. Combine the prawns and salt in a bowl and leave for 30 minutes. Pat dry, then mince in a food processor. Add the egg white and blend to a smooth paste. Stir through the second batch of minced prawns along with the chilli and transglutaminase. One well combined, cover and leave in the fridge for 24 hours.
For the lobster stock, bring the lobster shells and water to the boil in a large pan over high heat. Reduce the heat to medium and cover with a lid. Simmer for 3 hours, then pass through a fine mesh sieve lined with cheesecloth or food-grade muslin. You will only use 600ml of this stock in the Lobster Satay Sauce, but the remaining stock can be frozen.
To make the lobster oil, fry the shells in the oil over high heat until golden and fragrant. Add the fennel seeds and cook for 10 more minutes. Remove the pan from the heat and stir in the lemon zest. Set aside to infuse for 2 hours, then strain and reserve the oil, discarding the shells and fennel seeds. Leave the oil to cool to room temperature before using in the satay sauce and the aioli (if you choose to make the aioli).
For the lobster satay sauce, heat a drizzle of olive oil in a large pan over low heat
and add the onion, fennel, garlic, ginger, lemongrass, lime leaf, fennel seeds and coriander seeds, cooking until the vegetables are translucent. Pour in the coconut mill, lobster stock, tomato puree, tamarind paste, palm sugar and salt. Cover with a lid and leave to cook gently for 2-3 hours. Once cooked, strain the mixture through a fine mesh sieve, reserving all the liquid and discarding the contents of the sieve. Place the mixture into a blender (preferably a Vita Prep) and add the lobster oil, chilli oil and peanut butter. Blend until completely smooth, then add the xanthan gum and blend once again on high speed. Strain the mixture a second time. Set aside until needed and gently reheat in a pan before serving.
If you choose to make the aioli, blend all the ingredients (apart from the lobster oil) in a mini food processor or blender. Slowly drizzle in the oil until the mixture has emulsified like a mayonnaise. Transfer the mixture to a piping bag and set aside until ready to serve.
For the pickle liquor, bring all ingredients to the boil over high heat. Once the sugar has dissolved, remove the pan from the heat and cover, leaving to cool completely. Strain well, discarding all the spices and use the liquor in the pickled mooli.
To make the pickled mooli garnish, run the peeled mooli through a Japanese turning slicer to create thin sheets. Alternatively, use a mandolin on a 1mm setting. Place the sheets inside a large sous-vide bag ensuring they lie in a flat, single layer. Add some pickle liquor and compress using a vacuum sealer. Once done, remove from the bag and lay out half the pickled mooli sheets on a clean work surface. Scatter over the viola flowers, and place the remaining mooli sheets on top, so the flowers are sandwiched in-between. Use a 5cm round cutter to press out discs. Set aside to use as a garnish.
For the Scotch eggs, start by boiling the quail’s eggs. Bring a large pan of water to the boil over high heat and have a large bowl of iced water at hand. Gently lower all the eggs into the boiling water and cook for exactly 2 minutes 10 seconds. Remove the eggs using a slotted spoon and plunge them immediately into the bowl of iced water. Once cooled, carefully peel all the eggs.
Divide the prawn mixture into twelve portions of 75g each and gently wrap the prawn mixture around each egg, ensuring the eggs are completely enclosed.
Place the flour in one bowl, the beaten eggs in another and the breadcrumbs in a third. Dip each wrapped egg first in the flour, then the egg and finally coat with the breadcrumbs.
When ready to cook, heat enough oil to 170°C in a large pan or deep fat fryer. Working in batches, carefully lower the Scotch eggs into the hot oil and fry for 4 minutes. Remove with a slotted spoon and place them on a tray lined with kitchen paper to drain.
To plate and serve, pipe a generous dot of the lobster aioli in the centre of 12 small bowls. Place the Scotch egg on top of the aioli and drizzle a little lobster satay sauce around the bowl. Place the pickled mooli on top of the Scotch egg and if you have any lobster oil remaining, you can finish with a few dots of oil around the sauce.

The COLLEZIONE VINCENT DARRÉ includes four decorations in glass mosaic –Caryatides, Calliope, Erato and Thalia.
Caryatides, inspired by Neoclassicism, is a pattern composed of six modules featuring three mythological subjects in the form of caryatids - the Deer, the Unicorn, and the Lyre - alternating with architectural elements that resemble the columns of a classical temple.
Available in three color variants - Bleues, Grises and Vertes - Caryatides is crafted using careful and precise handwork. For the background and architectural elements, a digital technique with regular square tiles is employed, while the caryatid figures are brought to life using an artistic “ad andamento” process, in which every single tessera is cut and laid by hand to follow the flow of the design.
The Calliope, Erato and Thalia decorations are inspired by Darré’s love of Surrealism. Created using Bisazza’s digital technique, the three patterns are almost like paintings where the tiles are combined according to the same chromatic tone of green, baby blue, yellow, grey, and orange, creating figures which overlap in an unusual way, allowing the imagination to run free. EXPLORING THE RELATIONSHIP BETWEEN LIGHT AND STONE
Using everyday objects such as vases and bowls as a starting point, his work explores the relationship between light and the translucent properties of the stone. This interplay between light and form, surface, and texture, explores the notion of movement within his work. When creating a piece, he often has a specific time of day in mind. It could be when the sun falls in a certain corner of the house or a place that always gets first light in the morning. Cook’s technique and process is self-taught and has developed organically, drawing upon traditional carving techniques and skills learned in ceramics. Oliver graduated with a BSc in Design Ergonomics at Loughborough
University in 2016 and it was a trip to Kettle’s Yard in 2019, where he was struck by an exhibition on stoneware, that led him to experiment in alabaster.
‘I’ve always made things – I was creating wooden furniture for a long time before I was working with stone – but I wanted to try something new. In September 2019, I visited Kettle’s Yard in Cambridge, where I was living at the time. There was an exhibition on the ceramicist Jennifer Lee, showcasing all her vases. It got me thinking. I had also just come across the work of Isamu Noguchi and Hanna Eshel and, while neither of them work in alabaster, I was really drawn to the nature of their sculptures.

I began to search for a stone yard. I found one relatively nearby and decided to buy a block of stone and go from there. They had all kinds for sale: soapstone, marble, alabaster. The place was amazing. I went with alabaster as I was told how easy it is to work with. Because there’s no grain, you can work it in any direction and it won’t crack.
Compared to wood, which was the main material I’d worked with until that point, alabaster is so soft. It’s so enjoyable –especially when you reach the final stages of carving. As the sides of the vases and bowls become thinner and the surface becomes more and more polished, it allows even more light to pass through. People have been to my shows and not known what the material is. It’s so shiny and smooth that some think it’s glass. With future work I plan to explore lighting and want to really push myself with how thin I can make each piece.’
Cook has recently been working on a new series for an exhibition Momentary Flow on display in The Scottish Gallery this June, which will be Oliver Cook’s second solo presentation with The Scottish Gallery in Edinburgh following his eagerly anticipated Form & Light in September 2021. In his new exhibition, he will continue to explore the properties of alabaster whilst introducing new sculptural pieces in both Carrara marble and Egyptian marble.
‘Momentary Flow encompasses an interplay between three areas of my practice, light, movement and most recently texture. Previously my work has focused on the interplay between the translucent properties
of alabaster and the action of movement. This latest collection continues with those themes, exploring how pieces can represent movement in different ways.
Movement is the central theme that is present in each piece, from pieces balanced appearing almost on the verge of falling, to ripples and waves mimicking the flow of water or patterns made by the erosion from the surface of a rock face.’
‘The material I use is ancient – people have been working with stone for thousands and thousands of years – but I think the way I’m using it is modern. I’ve not come across anyone else making alabaster objects inspired by wicker baskets, for instance, or other everyday objects. I think designing alabaster pieces that people can interact with sets my work apart.’
THE PROCESS:
‘My creative process always starts with the concept. Each piece is individual. I sketch out the design and dimensions then draw the design on the block of stone, taking into account any quarry marks or other inclusions. I then rough out the form using an angle grinder and chisels. Once I have the rough shape, I refine it using rasps – a coarse file. Then I can start polishing. It’s a slow process because you need to be really careful not to take out chunks of the material with the tools. It’s completely different to working with something like clay, for example, which is an additive process.
Where I work, there’s a lot of outdoor space. Carving stone and using power tools creates so much dust that you have to do it outside, unless you have a professional dust-extraction system.’
