A Wonderful Easy Stir Fry This is like any other ordinary stir fry that needs a little commitment in its preparation, to do the dicing, chopping and slicing. But your labor would be worth it all the way. In stir frying, people just love the way ingredients unfold its fragrance in a strong bunch of aroma every time it hits the pan. The good whiff tells you it is going to be flavorful. Well this easy stir fry is about an ensemble of asparagus and tofu. The magic comes when these ingredients are blended with a bite of tang from lime, heat from the red chilies and fresh ginger, while the mint and basil leaves cools the heat down added with a touch of hoisin sauce that gives you just enough sweetness to keep its balance. Please prepare all of the ingredients before frying and keep them in separate piles close to your stove for easy reach. Cooking is very quick in this recipe so we advise everyone please cook them when the family is almost ready to eat. Served immediately while hot or the asparagus and greens will overcook while sitting around. This is the culinary magic. ASPARAGUS STIR-FRY FAVORITE: WHAT YOU NEED TO HAVE: • toasted sesame oil • 8 ounces extra-firm tofu, cut into slices thick as a pencil • 4 green onions, thinly sliced • 1 tablespoon freshly grated ginger (peeled) • 1/2 teaspoon red pepper flakes, please crush them • 1/2 a bunch of asparagus, trimmed and cut into 1-inch pieces • sea salt, just a pinch or two • 3 cloves garlic, chopped • toasted cashews, chop up a big handful • spinach, or chopped kale, pr chopped chard, a big handful too • zest and juice of one lime • 2 tablespoons hoisin sauce • 1 small handful fresh mint, slivered • 1 small handful fresh basil, slivered HOW TO MAKE IT:  As per instructions above, prepare all ingredients before frying. Place them near your stove for easy reach.  Begin frying by heating a wok or large skillet over medium high heat on your American stove. When it is hot, add one tablespoon of oil and the tofu, and cook until golden for a few minutes. Remove the tofu from the pan and reserve.  Add another splash of oil to the pan and as soon as it is hot add the onions, the ginger, the red pepper flakes, then the asparagus and salt. Stir fry for about a minute before adding the garlic, the cashews, and spinach and continue to stir fry for another minute until the spinach wilts.  Then add the tofu back to the pan. Then stir in the lime zest with its juice plus the hoisin sauce. Cook for another ten to twenty seconds but continue stirring all the way.  Finally remove the pan from the flame and sprinkle it with the mint and basil leaves. You can add a bit of salt if needed.  Serve this wonderful easy stir fry immediately while hot and could be great if paired with hot steaming rice.
