CHICKEN STIRFRY on SOY-APRICOT SAUCE: This is a healthy chicken and vegetable stir fry with a slightly spicy glaze that hints of sweetness blending with a little saltiness. It can be prepared in ten minutes while actual cooking is twenty minutes. The recipe can make four servings. Enjoy and have fun in your kitchen. INGREDIENTS: • ONE HALF cup sugar-free apricot preserves • THREE TABELSPOON soy sauce, please choose the low sodium type • One fourth teaspoon garlic powder • One teaspoon dehydrated onion • One teaspoon Sriracha chili sauce, or to taste (leave it out if you don't like any heat) • Two tablespoon canola oil • One pound chicken breasts, please debone and remove skins • Five cups frozen stir fry vegetables PROCEDURE: • In preparing this recipe, the ingredients are expected to yield four servings at one and a half cup per serving. This means you have to measure the ingredients according to the list above to yield the estimated number of servings. If you want to double or add more servings, you can adjust the ingredients accordingly. • In preparing your sauce, place the apricot preserves with the soy sauce, the garlic powder and onion plus the chili sauce in blender. Blend everything together until smooth. Please do not add water or anything else. Transfer to a bowl and reserve. • Slice the chicken breasts into strips to about one half inch wide and two inches long. • Begin frying by heating one tablespoon of the oil in a skillet or wok over high heat on your American stove. • Then add the chicken slices. Stir fry until cooked through and lightly browned on the outside or no longer pink. Remove chicken to a plate and reserve. • Reheat your wok or skillet and add one tablespoon of oil over high heat. • Add the frozen vegetables and stir-fry until tender but still crisp for about five to eight minutes. • Put the chicken back into the pan and then pour the apricot-soy mixture over. • Reduce heat to medium and cook, stirring, for about one minute. • Serve immediately while hot.
