This recipe THE CHINESE STIR FRY BEEF RECIPE, can serves four persons. It can be prepared in fifteen minutes and cooked in just seven minutes. Let us do the cooking then. INGREDIENTS: • One pound beef steak, round or flank • The marinade: • One and a half tablespoons dark soy sauce • One tablespoon dry sherry or best if Chinese rice wine • Two teaspoons cornstarch • One and a half tablespoons water • One tablespoon vegetable oil • The other ingredients: • One fourth inch slice ginger, chopped • Three fourth cup sliced mushrooms • One small carrot, peeled and cut diagonally into thin slices • Two and a half tablespoons oyster sauce • One half teaspoon granulated or soft brown sugar • One fourth cup water or low-sodium chicken broth • Four tablespoons of vegetable oil, or more if you require • Salt and pepper, to taste THE PROCEDURE: • Cut the beef across the grain into thin slices, two to three inches long and into one fourth inch thick. • Then mixed the marinade ingredients in the order given above and mixed it with the beef strips and let it stand for fifteen minutes at room temperature. • Next, in a small bowl you can now mix the water or chicken broth, the sugar and the oyster sauce together and stir till smooth and reserve for frying. This is your sauce. • To begin frying, heat a wok or a large skillet over medium high heat on your American stove. Add two tablespoons of oil and wait till it gets hot. Then sauté the ginger quickly until fragrant. • Then add the beef carefully in a single layer and cook to brown the beef for a minute. Then stir-fry the strips until it changes color totally and is nearly cooked through. (You can cook the beef in two batches if it is too crowded in your pan to make sure that they are evenly cooked through). • Remove the beef slices from the wok and drain. • Wipe clean the wok and reheat it in your American stove. • Heat two tablespoons of oil again in the wok. • Add the sliced carrot and stir-fry briefly before adding the mushrooms. • Push the vegetables to the side and add the sauce in the middle. • Bring the sauce to a boil before adding the beef back into the wok. • Stir and mix everything together. Taste-test and adjust the seasoning according to your desired taste. • Transfer the dish to a serving platter and served hot. • This beef stir fry is great with hot steaming rice to go with it.
