October 2021

Hello Members, Here we are transitioning into the Fall season at Michigan Shores Club. It is my favorite season personally. Weather is becoming a bit crisper, leaves are turning, fire pits are ready to go, paddle season is starting, the MSC Dolphins Swim Team is already in full swing and loads of our traditional events are right upon us. I encourage you to check out The Club calendar online and take note of the twice weekly emails to be “in the know” about events around The Club. October at Michigan Shores Club would not be the same without our annual Oktoberfest celebration on October 1! See you there in your dirndl and lederhosen!

We have a diverse set of events that appeal to all members. Our families should not miss the MSC Pumpkin Patch on October 9th complete with face painting, hot cider, apples, kettle corn and more! Our home chefs need to check their recipes and sharpen their culinary skills for the 4th Annual Tailgate & Chili Cook-Off on October 17th. Remember the winner has bragging rights and The Club will put your chili on the menu. Our dining venues are also in transition with our beautifully elegant Oak Room resuming service on Thursday, October 7. As many of you already know and have tried, breakfast is now being served in the South End Café Tuesday-Friday from 8:00 am - 11:00 am. Yes, that is correct! We are serving an amazing selection of breakfast items. Stop by after your morning workout, host a business breakfast or stop for coffee and a treat after your morning walk.

Recipe Roundup

A look inside the kitchen Don’t you ever wonder what the go-to meal for a chef is when they are at home cooking? Well, we asked Sous Chef, Steven Singer, to provide us with exactly that. With a baby girl running around the house, it has to be quick, easy and filling, but as a chef it also has to be flavorful and plated beautifully, of course! Steven’s go-to at home is Ricotta Gnudi. Follow the recipe below and give it a try in your kitchen!

Ricotta Gnudi Yields: 2 Servings Ingredients • 1 c whole milk ricotta cheese • 1 lb frozen spinach, thawed and squeezed dry • 1 c grated Parmesan • 2 eggs • 2 egg yolks • 1/4 tsp freshly grated nutmeg • 1 tsp salt • 1 tsp freshly ground black pepper • 5 tbsp all-purpose flour, plus 1 cup for coating • 1 jar store bought marinara sauce Method • Bring a large pot of salted water to a boil. • In a large bowl, mix ricotta, spinach, Parmesan cheese, eggs, and yolks. Stir in nutmeg, salt, pepper, and flour. Form mixture into small, flattened balls. • Dredge the formed gnudi in flour to coat, tapping off the excess. Slide formed gnudi into the boiling water. Be careful not to overcrowd the pan; work in batches if necessary. Remove the gnudi using a slotted spoon after they float to the top and have cooked for about 4 minutes. • Arrange gnudi on a platter and lightly drizzle with marinara sauce.

From the Cellar

October is Bourbon Month! Bourbon was officially recognized as a distinctive product of the USA in 1964 with an act of Congress. Bourbon has taken over the market in recent years, from Jim Beam to brothers Stephen and Paul Beam of Limestone Branch Distillery with their Yellowstone Limited Kentucky Straight Bourbon Whiskey. What is Bourbon? Bourbon is a type of Whiskey just like Merlot is a type of wine. Bourbon can be made anywhere in the United States. Bourbon begins as a mash bill which is a mix of grains that are cooked in very hot water to create a sugary solution that is boiled, cooled, and fermented to make Whiskey. When it comes to bourbon, the three grains are always at least 51 percent corn, along with a percentage of malted barley, and then either wheat or rye. Corn is the leader in the mash bill for its sweetness, and it is what makes bourbon. Barley is there for its ability to convert starches to sugars. Wheat and rye are the flavor grains, with rye bringing spice and wheat providing more sweetness. The latter two grains, wheat and rye, are what set mash bills apart; consumers tend to like one of these flavoring grains to the other, and tend to buy bourbons made with that grain in the mash bill.

Eddie’s Favorite Bourbons Yellowstone Limited 2020 Hirsch “The Horizon” Basil Hayde Weller Special Reserve Belle Meade Reserve Blanton’s Woodford Reserve

Federal Requirements • Bourbon must be produced in the United States and Territories like Puerto Rico and the District of Columbia. • Made from a grain mixture that is at least 51% corn. • Aged in new, charred oak containers. • Distilled to no more than 160 U.S proof 80% alcohol by volume. • Entered into the container for aging at no more than 130 proof. • Bottled like other whiskeys at 80 proof or more 40% alcohol by volume. Bourbon has no minimum specified duration for its aging period. The exception is straight bourbon, which has a minimum aging requirement of two years. In addition, any bourbon aged less than four years must include an age statement on its label. Bourbon that is labeled as straight that has been aged under four years must be labeled with the duration of its aging.

Staff Interview

We sat down with MSC Director of Communications and Membership, Cody Czmyr, to learn a little more about him. Cody is no stranger to the private club industry and the MSC membership has enhanced his experience on the North Shore! MSC | Tell us about yourself.

MSC | Tell us about your time at MSC.

CC | I am a native of Connecticut, but as a

CC | Much to my surprise, I have already been

military brat, I was born in Greece. Don’t ask me if I remember any of it or speak any Greek because the answer is no. I studied hospitality at Eastern Illinois University (Go Panthers!) and have been working in membership and marketing since graduating in 2010. One of my personal passions is to give back to the community. I currently serve on the EIU Alumni Association Board of Directors as well as the Associate Board of the Chicago Literacy Alliance and the Porchlight (Music Theatre) Young Professionals. Last August, I celebrated a COVID wedding with 20 of our closest friends and family. My husband and I live in Lakeview with our pet lionhead bunny, Cadeau.

with MSC for nearly 4 years having started in January 2018. Time flies when you are busy! This experience has provided me with tremendous growth opportunities and I have really enjoyed getting to know the staff and membership. I am lucky that I love what I do and that each day brings something new and different. I have met so many wonderful people along my journey and MSC has been no different. My exposure to the North Shore was very limited prior to working at The Club and over the years I have fallen in love with the community and the people in it. I can see why so many Chicago residents are moving out of the city and up north.

When I am not at work, you’ll find me playing tennis or volleyball - both of which I am passionate about. I follow college volleyball (almost to a fault) and enjoy watching and playing the game whenever I can. Ask the staff and they will tell you just how competitive I am! My other passion is musical theatre. It’s been so unfortunate how much the theatre world was affected by the pandemic but I am hopeful that I will be back in the audience soon enough! I would be remiss to leave out my last (and some might argue most important interest) wine. I am a fan of a good red wine and am always looking for recommendations!

18

www.michiganshores.org 847-251-4100

I am currently the Vice President of the Western Great Lakes Chapter of PCMA, an association that provides events and learning opportunities for club membership and marketing professionals. MSC has also graciously played host to a few of our meetings and I always get great feedback from my peers about our Club.

MSC | What are your top 3 vacation

MSC | Do you have a favorite quote?

destinations (and why)?

CC | A while back, I came across this quote

CC | Of course I have to start with my favorite spot, Paris. There is truly something magical about that city and every time I go, I find more reasons to love it. The architecture, art and history of the city is unlike anything you can get in the states. My second destination would be Mystic, Connecticut. I absolutely love the East Coast and the nautical atmosphere it provides. Growing up, we lived in Mystic for some time and the beach was always a short distance away. I love the crisp, salt water air and the nostalgia that I feel anytime I visit. The views of the Block Island Sound aren’t bad either. Lastly, I would say that I haven’t been to Italy, but would love to go! While I am sure there is more to Italy than pizza, I must admit I am a glutton for pizza. Like Paris, the art and history of Italy, and all of Europe for that matter, make we want to visit more and more. Plus, wine is less expensive so of course I’m interested! A very close 4th is Greece, for obvious reasons.

MSC | If a movie were made about your life,

that sort of stopped me in my tracks to reframe the way I see my life. I use it as a reminder on bad days and as well as good days and it sort of recenters my train of thought. It especially resonates with me with where we are as a global community and the heartache so many have faced over the past 2 years.

“You think this is just another day? It’s not just another day. It is the one day that was given to you, today. It’s a gift. It’s the only gift you have right now and the only appropriate response is gratefulness.” - Br. David Steindl-Rast.

MSC | If you could witness any historical event, what would you want to see?

CC | I would say that I would love to have witnessed Rev. Martin Luther King, Jr. deliver his “I Have a Dream” speech during the civil rights march on Washington, DC on August 28, 1963. To be in the crowd of 200,000+ people hearing the voice of the civil right leader would be unforgettable.

who would you want to play you and why?

MSC | If you were stuck on an island what

CC | I would have to wonder how interesting

three things would you bring?

this movie would be but if I had to choose, I would say that I would want Steve Carell to play me. While I love The Office and admittedly see a bit of myself in the humor of Michael Scott, Steve is equally great at playing a more serious role which showcases the depth he can bring to life.

CC | I have to take a practical approach to this one. If I were to be stuck on an island, I would bring a tent, a water filtration system and a few extra sets of clothing. I think they are pretty self explanatory and perhaps shows that I am a little too literal when it comes to (hopefully) imaginary scenarios.
