I am pretty sure I was a caterer in a previous life. I love to bake and cook and feed loved ones, but one look at the mess in my kitchen after an ambitious culinary experiment, and reality sets in. Clearly, I am no reincarnation of Julia Child. While I’ll admit to toying with the idea of someday owning a small café, it takes only one large exhausting party to make me appreciate what it takes to run a restaurant. In this issue, Svetlana and Sky Schoggins, owners of Yellow Rose Steak and Chop House at Parker Square, share their inspirational story about following their dreams on page 20. After a move across the ocean and a leap of faith, they started a family and transformed a local steakhouse. Plus our featured restaurants will definitely whet your appetite for trying something new and tasty. If you have aspirations for forging a new path, like the Schoggins, you are fortunate to live in a town devoted to helping you succeed. We met with serial entrepreneur Jason Adams, who partnered with Flower Mound’s economic development office to launch INNOVATE, a remarkable center positioned to help area entrepreneurs birth and nurture their companies. Last year over three million jobs were created by companies less than a year old, according to the U.S. Bureau of Labor Statistics. So, not only do new business ventures bring exciting products and services to the community, they also contribute to the very fabric of our economy. Adams is uniquely qualified to not only mentor new business owners but also help them make valuable connections in the community. We can’t wait to hear about the new companies born out of INNOVATE. Read more about it on page 60. All this talk about food and ingenuity has me eager to open my Pinterest page and try a new recipe or craft. Wonder if anyone will offer to clean up after me …

The album is Meat Loaf’s fourth to feature tracks solely written by John Steinman, who said of the new album, “It’s one of the greatest works of art I’ve ever been involved in.”

Volunteers for the town cleanup and participants in the environmental fair are needed. The fall Trash Bash includes a town cleanup from 8:30 a.m. until noon. Volunteers will be assigned to local parks, trails and roadways across town and be provided with gloves, grabbers, protective vests and lunch by In-N-Out Burger. Special awards and door prizes will be awarded to the volunteers who gather the most trash and recyclables. This is a great bonding experience for church youth groups, school organizations and neighborhoods; the first 300 to register will be given freebies. The environmental fair booths promote healthy and sustainable lifestyles and feature great business in the area. LIBERTY CHRISTIAN VOLLEYBALL COACH OPTIMISTIC ABOUT UPCOMING SEASON Kim Grizzle admits it has been a few years since Liberty Christian was a force to be reckoned with in volleyball, but the secondyear coach feels she has the right pieces in place to change all that. That’s not to suggest the Lady Warriors, fresh off an 18-21 season, can nab their first TAPPS state title since 2006. But with a solid group of playmakers on tap, Grizzle is optimistic that an extended season is not out of the question. This year’s squad features three returning seniors: Dusti Scruggs (defensive specialist), Kaylee Tompkins (rightside) and setter Ashley Bostick. Their 2016 regular season play runs through October 27.

The outdoor concerts at The Shops at Lakeside have proved to be so popular, Jimmie Archie says they should be renamed. Archie, managing partner of Realty Capital, says, “These free concerts appeal to music lovers and to people who enjoy socializing outdoors on Friday evenings. So with the cooperation of our retailers and restauranteurs, we’re going to keep it going and keep the people coming to Lakeside.” Since kicking off July 8, the free concerts have brought droves of people to the Realty Capitalowned development for live music and plenty of food with restaurants open as well as food trucks on site. “We see the music series as one of a number of events that will attract people to Lakeside and familiarize them with our incredible owner operators, their products and services, and our distinctive environment,” Archie adds.

SPOTLIGHT community LISD PAIRS NEW TEACHERS WITH SEASONED EDUCATORS During Lewisville Independent School District's annual New Hire Orientation last month, first-year teachers were matched with a seasoned mentor teacher to plan, collaborate and assist them throughout the year. Each mentor possesses a wealth of teaching experience to help new educators navigate and answer questions inside and outside of the classroom. “You are joining a close family,” Dr. Rogers said to the new hires. “Not only in the school district, but the community as well. We are so fortunate to have incredible support from our business and community members. I truly believe our partnership with our community is important and that together we are what make LISD great.” Several businesses generously sponsored the week with breakfast, lunch and door prizes for new teachers: Denton Area Teachers Credit Union (DATCU), Champions School of Real Estate, CoServ and Credit Union of Texas. In addition, teachers spent the week visiting with the district’s department of learning and teaching, exploring programs offered in LISD and working in teams to design engaging lessons. The orientation ended with teachers spending time with model teachers on LISD campuses.

LOCAL AUTHOR TO HOST BOOK EVENT Flower Mound resident Weina Dai Randel, author of two critically acclaimed historical novels, “The Moon in the Palace” and “The Empress of Bright Moon,” will speak at The Colony Public Library, September 17, from 1 to 4 p.m. Randel was born and raised in China and moved to the United States when she was 24; English is her second language. PARKER SQUARE TO ADD A UNIVERSITY, MORE TENANTS

FITCH, S&P GLOBAL RATINGS REAFFIRMS TOWN OF FLOWER MOUND’S AAA BOND RATING

Curtis Shore, developer and owner of five buildings in Parker Square, confirms construction on a sixth building to begin soon. Midwestern State University, in Wichita Falls, Texas, partnered with North Central Texas College so students who begin their degrees at NCTC can complete them at MSU—with a short walk between the two campuses. Ideally, the new MSU campus at Parker Square will welcome students fall of 2017. The announcement comes as the development experiences a resurgence of late. With the recent opening of INNOVATE, an entrepreneur center, as well as a spa and hair salon, Shore says Parker Square has been redefined as a service retail/ professional business center. Several restaurants, including the soon-to-open Taco Brone, complete the tenant mix that’s currently about 85 percent occupied, up from the 50 percent vacancy rate five years ago. Shore says the addition of MSU adds, “another academic layer to the business and professional aspect here, and for students to be able to obtain their baccalaureate degree in Flower Mound is going to be huge.”

Due to sound tax base growth, strong financial management, as well as a stable and growing local economy, independent bond rating service Fitch recently reaffirmed Flower Mound’s AAA bond rating for General Obligation bonds. This is the highest rating an organization can receive by credit rating agencies. This is the third consecutive year Fitch has issued a bond rating for Flower Mound, noting that “Fitch expects Flower Mound to demonstrate financial resilience through a moderate economic downturn.” The entire rating report can be found at FitchRatings.com. The Town also received good news from independent bond rating service S&P Global Ratings (formerly Standard & Poor’s). S&P also reaffirmed its AAA rating of Flower Mound’s General Obligation bonds due to “very strong” fiscal policies, budgetary performance and a growing local economy. Flower Mound’s proximity to major airports, along with the diverse economy of the Dallas/Fort Worth Metroplex, has continued to fuel commercial and residential growth.

DATCU CELEBRATES 80 YEARS On August 7, 1936, professors at North Texas State Teachers College (now University of North Texas) pooled together $650 to charter the first Denton County Teachers Credit Union (now Denton Area Teachers Credit Union). Their desire was to form a stable financial cooperative for saving money and lending funds to their fellow educators at a fair rate. Today, as a community credit union, with 10 branches across North Texas, DATCU welcomes members in the area from all walks of life— membership is not restricted to teachers. FARMERS MARKET MOVES TO PARKER SQUARE After initially launching on the property of Flower Mound Town Hall, the Flower Mound farmers market has relocated to Parker Square. Due to overwhelming support from the community, the farmers market encountered parking access issues and faced limitations for accommodating new vendors. Thanks to council approval during the August 15 meeting, the outdoor European-style market, managed by Four Seasons Farmer’s Market, will enjoy greater freedom to expand, and customers will have more parking options at Parker Square. hen Yellow Rose Steak and Chop House at Parker Square went up for sale a few years ago, a young couple decided to take a chance on a business venture that has definitely paid off. The restaurant’s owners, Sky and Svetlana Schoggins, are young parents who take pride in owning a small business and being involved in their community. “We live here, we work here, we play here,” says Svetlana of her food-loving family. The Schoggins’ introduction to Flower Mound was brief, but impactful. “We came to Dallas for Svetlana’s first green card interview,” says Sky. When they visited here for a required medical exam, Svetlana fell in love with the town. “We looked at other communities for a house, but no matter where we went, Svetlana kept insisting we move to Flower Mound,” Sky adds. The couple met in Russia, where Sky, a Texas native, went to medical school, ran an English school and helped run a newspaper. Once he and Svetlana decided to start a family, they returned to America. “Life in Russia can be difficult,” he says. “It’s much easier to live here.”

Svetlana found work as a chief accountant for the Health Sciences Center at Texas Tech University in Lubbock while Sky completed his master’s degree in electrical engineering there. After graduating, he got a job with Texas Instruments and the couple finally moved to Flower Mound with their young daughter. Soon, they had a son as well. Svetlana stayed at home with their two children for two and a half years, but missed getting out and being around grownups. “No makeup, no high heels, no adult talk,” says Svetlana. “I love my kids and it was so, so nice to be home, but I was ready to get out.” Purchasing the restaurant became both an investment and a job for Svetlana; Sky kept his job initially, but now is also dedicated to Yellow Rose fulltime. A BUSINESS TAKES BLOOM Owning a business was Sky’s idea. Although Svetlana was hesitant at first, she warmed up to the idea and eventually embraced his dream as well. “I love how this is ours and we can do anything with it as long as we continue to make customers happy,” says Svetlana. “It’s scary at times but pretty amazing.” The steakhouse sports a rustic Texas theme accentuated by soft lighting, making it the perfect place for a romantic dinner or a relaxing respite from preparing a meal at home. Even if it’s not a special occasion, the Schoggins and their staff ensure their customers’ visits are memorable. “We trust our chef, who has been working in steakhouses for over 20 years,” says Svetlana. His extensive cooking experience is shown in every dish. No matter the time of day, deliciously fresh, soul-satisfying food is served up hot and flavorful. While it is rare to find a family-run, first-class steakhouse, Yellow Rose Steak and Chop House is the exception. The Schoggins are particular about what they serve, and Svetlana

trusts only two sources for their beef. While Sky loves his cooked medium rare, Svetlana admits it took her a while to eat any steak that wasn’t prepared well-done. “In Russia, it’s not safe to eat any meat unless it’s over-cooked,” she says. “Here in the United States, the meat is so much better quality.” Today she’s more likely to enjoy a steak prepared medium and has become an expert at prime cuts. “I’m extremely picky about the quality of meat we buy. It might cost a little more but it’s worth it.” If you crave a break from prime beef, ribeye, filet or bison, Yellow Rose offers a wide variety of seafood choices, including blackened ahi tuna, chargrilled salmon and wildcaught lobster tail. “We cook everything per-order and from scratch,” says Svetlana. For those in the mood for chicken or pork, try the belly-filling chicken fried chicken, French-cut pork chops or premium doublecut New Zealand lamb chops. What’s dinner without drinks? Yellow Rose is the home of Flower Mound’s largest whiskey collection—over 70 types—as well as numerous old-school martinis, wines and mixed drinks. “All our drinks are crafted from natural ingredients, including freshly squeezed juices and house-infused liquors,” says Svetlana. To finish off your surely fulfilling meal, try some devilishly good chocolate lava cake, crème brûlée, New York cheesecake, bread pudding or key lime pie. The Schoggins’ dedication to providing high-quality cuisine in a cozy environment is what truly makes Yellow Rose Steak and Chop House a unique restaurant right in the heart of Parker Square—a development that has seen its share of miscues. Svetlana has been a voracious champion for their unique location—both she and Sky love the architecture and charm of their restaurant but realize their lack of drive-by exposure poses challenges. So when nearby tenants come and go, the struggle to attract customers can be perpetual. When rumors of a local farmers market began earlier this year, Svetlana was the first to suggest Parker Square as the ideal location. Instead, the honors went to the Flower Mound Town Hall parking area. But she didn’t back down. When the market quickly outgrew the space, she once again championed Parker Square as the perfect host for the Saturday event and her efforts paid off. “We know that having traffic here is always good for business,” she says. “We are so excited to welcome new people to our restaurant.” From Russia to Flower Mound might have been an unexpected path, but no one could argue that the Schoggins are right where they belong.

Today’s technology allows us to manage our households as efficiently as we conduct business on our mobile devices. Smart tablets and phones can keep our home running smoothly, even when we’re thousands of miles away. Forgot to adjust the thermostat before leaving on vacation? Do that while waiting at the airport. Someone at your door? Answer as though you’re at home even when you’re dining out. Can’t remember if you closed the garage door? Consult your phone after you get to work. What does it take to live more intelligently? We asked area homeowners and industry professionals for their advice. DIY OR HIRE A PRO? Flower Mound resident Sam Sharma knows a thing or two about software, so adding smart features to his home is a project he’s not afraid to tackle. From installing a Nest Learning Thermostat and a NestCam (used to monitor the baby) to updating his sprinkler system with a Skydrop smart watering controller, so far no update has been beyond his skillset. “I used to repair computers and software in college,” Sharma says. But his home security system—which can be locked, unlocked and monitored remotely—was installed professionally. “I use my Apple watch to monitor everything, including my Apple router, so I can see who is logged onto my Wi-Fi. Plus I can limit who can connect and when, so my nieces and nephews can’t get on it at night when they visit.” When Jeff Hale moved to Flower Mound last year, his 20-yearold home had a decent audio system. With a few tweaks, he made it even better. “I can manage the music from my smart phone, even while we’re in the pool,” Hale says. “And I have two Amazon Echo systems I’ve connected to my audio system, so I can ask 26 • SEP 16

Alexa [an app companion] to play a certain type of music pretty much anywhere in the house.” Hale installed more features after moving in, including smart thermostats, a security system, remote garage door access, multi-unit video theater and a Smart Sprinkler Controller by Rachio that he added to his existing system. “Installation was a matter of moving wires from one unit to another,” Hale says. Like Sharma’s Skydrop, the Rachio extracts data from a nearby weather station and adjusts the amount and frequency it waters the landscaping based on rainfall levels and temperature, even calculating evaporation rates. Hale says the money he invested in the device he expects to earn back in savings on his water bill within the first year. “And it’s actually pretty fun to use,” he adds. THE INDUSTRY EXPLODES The global smart homes industry was valued at $20 billion in 2014 and is expected to reach $58 billion by 2020, according to Market and Markets, a worldwide market research firm. And while the market is growing and evolving, smart home technology is also becoming more mainstream and user-friendly. CEDIA, the global leader in the home technology industry, reports that last year, home theaters and media rooms remained at the top of homeowners’ most popular projects, followed by multi-room audio and home automation and control. The median home theater price systems integrators sold was $16,666, and the median home audio installation was $11,000, according to CEDIA. “Homeowners with a wide variety of budgets can turn to our members for help creating indoor and outdoor entertainment centers and to make their homes enjoyable, fmStyleMagazine.com


intelligent and more secure,” says Dave Pedigo, CEDIA's senior director of learning and emerging technologies. “They view these investments as not just ways to improve quality of life, but also to increase the value of their homes.” Local home audio and theater installer Charlie Brown, of Charlie Brown Sound in Flower Mound, says his home theater packages start at just under $5,700, with the most common one costing $7,000, which includes components and installation. “If you want a home theater plus a home audio system with about four zones—outdoor, master bed/bath, kitchen and office—expect to spend between $10,000 to $12,000,” Brown says. RAISING YOUR HOME’S IQ Even if your home has automated features, if they’re more than five years old, you might be surprised at what has changed. “The biggest game changer has been the ability to use a smart device and have full control of your home at your fingertips,” says Adrian Ballard, manager and system designer at Starpower in Southlake. “You can be halfway around the world and still control your security system, pool, audio/visual—anything you want to do.” Investing in an infrastructure that can handle the increased activity your smart devices will utilize is key. If you’re building a custom home, hire a licensed electrician, like Brown, who understands your goals for home automation and audio/visual components. While wiring can be upgraded after a home is complete, it’s more cost-effective to make that commitment before the drywall is finished out. “Because we’re a licensed electrical contractor, we can adapt any electrical system and make it work,” says Brown. “But the Wi-Fi router offered through your local internet provider just isn’t capable of handling a large system.” Brown says the typical executive home needs a stronger network, so his company often installs a wireless access point, indoors or out, to create a new Wi-Fi network to handle the increased activity. “There’s no monthly monitoring fee on our end,” he adds. “We provide the equipment and the installation.” SO WHERE TO START? Unless you have a technologically savvy family member—like Sharma or Hale—who can install the intelligent system you’ve always dreamed of, hire a pro. CEDIA.org is a great place to find qualified, professional teams to install a smart home system. Ask friends with systems about their automated home designers/technicians, check BBB ratings and read online reviews. You’ll also want to look for established companies that will be around to service and upgrade your system in the future. A visit to an installer’s showroom can allow you to view products, discuss options, ask questions and weigh pros and cons. If you have your home’s blueprints—especially if it’s fairly new or, better yet, under construction—those certainly help your technician ascertain his options. At the very least, bring photos of the rooms at various angles to determine equipment placement at your first meeting. Before investing in products you install or hiring professionals to design and install a system for you, be a smart homeowner and make informed choices. L

et’s raise a glass to beer: It’s America’s preferred alcoholic beverage. When Americans reach for alcohol, 43 percent prefer to sip a glass of suds over wine or liquor, according to a recent Gallup poll. It’s not hard to understand why. Beer is the start to so many good moments: a three-meat barbecue plate, an epic tailgate, the football game that follows and plenty others. But as every beer aficionado knows, there’s big beer (think factory-produced suds for the masses) and then there’s craft beer, a beverage that is lovingly and expertly handcrafted by brewmasters who put their heart and soul into each batch. These craft brews are shifting American beer culture, with tastes increasingly turning toward craft beer. We are undoubtedly in the middle of a craft beer renaissance. Craft breweries in the United States produced more than 24 million barrels in 2015, nearly triple the nine million barrels produced in 2009, according to Brewers Association, a nonprofit dedicated to protecting American craft brewers and their beers. The beer market in the U.S. is worth about $105.9 billion—and craft beer has a 12-percent share. Lucky for the beer hipster in every Texan, the Lone Star State happens to be a great spot for craft beer. Texas—specifically North Texas—is a haven for craft breweries. Five years ago, just a handful of establishments inhabited the Metroplex; today more than 40 bottle their brew here. We caught up with a couple local brewmasters to get their take on the buzz surrounding craft beer. SIGHTS SET ON SUDS Peticolas Brewing Company in Dallas was one of the earliest to arrive on the craft beer scene, turning out its first batch of beer on December 30, 2011. “What a day that was,” says Michael Peticolas, the attorney-turned-brewer who started the award-winning brewery. He has two main loves in life: beer and soccer. Peticolas wanted to make one of his passions his job, and needless to say, he didn’t lace up his cleats to hone his bicycle kick. “Some people open craft breweries to make money. I did it because I love beer,” he says. “For me, it’s about the beer first and foremost.” Peticolas’ passion for brewing has earned him some impressive hardware. He took home a gold medal for his Royal Scandal English Pale Ale at the Great American Beer Festival in 2012. The three-day event, hosted by the Brewers Association, is arguably one of the year’s biggest events for beer aficionados. But Peticolas doesn’t align himself with the beer industry; he considers his craft to be part of the entertainment industry. “I work to make my consumers my marketing stars,” he says. “I want them to go into bars and say, ‘Hey man, get some Peticolas beer in here!’” So what makes locals so devoted to his brews that they’ll ask for them by name? One word: Consistency. “When I was learning how to brew, a brewmaster told me, ‘The best thing is to make a great beer consistently. The next best thing is to make a bad beer consistently. The worst thing is to make a beer that’s sometimes good and sometimes bad,’” Peticolas recalls. “Consistency is massive to me. I care about the beer more than anything.”

While other craft breweries may experiment with questionable trends (“I’ve seen beers made from yeast on belly-button lint,” Peticolas says), his brewery steers clear from such kitschy gimmicks. “I’m all for innovation in craft beer, but there’s a line,” he says. Closer to home, Shannon Carter, brewmaster at Shannon Brewing Company in Keller, is excited about all the innovation of the craft beer craze. “I love the breweries that are pushing the envelope. As a beer consumer, it’s fantastic,” he says. “But as a brewery, it’s difficult to garner attention and keep yourself relevant. Celebrating its second anniversary this fall, Shannon Brewing Company is introducing a wave of new tastes. A few Carter is particularly enthused about? A grapefruit IPA and honey porter along with uniquely flavored brews such as hazelnut chocolate stout and a boysenberry blond, which Carter says is a cool shade of bluish purple. “We try to stay in our vein when we do something new,” Carter says, “and we always try to make it as natural as possible.” For Shannon Brewing Company, this means using whole grains, natural fermentation and fire. That’s right: All the beers are fire-brewed. “To our knowledge, we’re the only brewery that does the entire process with fire,” says Carter. “This caramelizes our sugars in a way that you can’t get with superheated steam or electricity, which are the alternatives.” And because the brewery is situated on Samantha Springs in the heart of Keller, the brews are made from good, ol’ Texan spring water. The beers are so pure and natural, one could almost call them wholesome. POUR ME A COLD ONE When it comes time to get that first taste of an ice-cold craft beer, Peticolas and Carter are adamant: Always enjoy it from a glass. “When someone gives me a bottle of beer, I’m doing everything I can to find a glass to pour it in,” says Peticolas. “When you pour the beer into a glass, you’re getting a fuller experience—something closer to what the brewer intended.” A curved glass is best, according to Peticolas, because the aromas of the beer will be more concentrated. At his brewery, beers are poured into a tilted and curved glass at a rate that allows carbonation to release from the beer and provide a half-inch head. “There’s an art to pouring a beer,” Carter says. “Getting that thick, half-inch head is the goal with most beers as the head releases aroma and gives a nice mouth feel.” Thirsty yet? The sky’s the limit when it comes to craft brews. But consider a bit of brewmaster advice as we launch into the season of pumpkin-flavored everything: Just say no to pumpkin beers. For Carter, it’s a trend that needs to stop. In the Lone Star State, it’s always a good time to sip a Lone Star or Shiner, but should you want to reach for a limitededition brew from your favorite North Texas craft brewery, go forth and drink. And by all means: Get a glass.

bout twice a month, Paul Dunklau gets a haircut along with a shampoo, conditioning and styling plus a paraffin hand dip, scalp massage and facial massage with a scented steamed towel. Dunklau doesn’t wait to be seen or wonder who might be cutting his hair each visit. He won’t even take out his wallet to pay for his services. Dunklau, 55, is part of a growing trend of guys who find memberships at local men’s salons the most efficient, relaxing way to stay well-groomed. Previously he went to a sportsthemed chain, which suited him fine, and then when a friend told Dunklau about the Boardroom Salon for Men, he gave it a go. “I use a mobile app to book ahead, I walk in, they give me a Diet Coke and, within moments, Cassie comes out and I’m in the chair,” Dunklau says. “The atmosphere is great. It’s very relaxing.” As a member, Dunklau pays an annual fee, which covers regular services and includes discounts on products he regularly purchases and other services he can add on such as hand and foot grooming. The Boardroom Salon for Men in The Shops at Highland Village was founded by Southlake resident Bruce Schultz. “We entered the market in 2004 after realizing a relaxed grooming experience for men was missing,” says Schultz. “Men typically get their hair cut every two to four weeks, and we felt they deserved a cool place for an experience rather than a commodity.” Schultz modeled his salons after 1920s gentlemen’s country clubs, with wood paneling and a pool table placed among the grooming stations. AN INDUSTRY ADVANCES Dunklau grew up in Fremont, Nebraska, and remembers his mom taking him to the downtown barbershop for his haircuts. “It was a little piece of Americana owned by a guy named Ralph

hen you visit Boulangerie by Village Baking Co. in Dallas, expect a first-class trip to Paris surrounded by delicious wafts of fresh-from-the-oven bread and mouthwatering pastries that will leave you craving seconds, thirds and more. Owned by Clint and Kim Cooper, the quaint bakery on Greenville Avenue in Dallas has hints of the French countryside intertwined with a homey, Texas-farm feel that is unrivaled by surrounding bread and pastry shops. Since opening in 2004, the charming eatery has seen a dramatic increase in Frenchfare-seeking patrons, but this has not distracted the Coopers from staying true to their mission: serving fresh and authentic French pastries and bread to the people of the Metroplex. A Texas boy, born and bred, Clint’s undeniable love for French culture has continu-

ously influenced the store’s unique bread, pastry and sandwich menu. “The name Boulangerie above our door means we are very focused on yeasted products,” he says. Searching for authentic brioches, fresh fruit pies, tarts, doughy baguettes and other addicting treats? Look no further than Boulangerie. In addition to its wide selection of breads and pastries, the bakery also serves rustic-style sandwiches that will make any lunch date memorable. If you need a base for your Goat Cheese and Egg Breakfast Crostini, we suggest Boulangerie’s signature Meyer Lemon Rosemary Boule. “It’s almost like an elevated garlic bread in the sense that it is enough on it’s own, but it also makes a wonderful dinner bread,” says Claire Carson, retail supervisor at Boulangerie. “It contains fresh rosemary, and a tablespoon of Meyer lemon-infused olive oil is folded throughout.”

Pair the too-goodto-be-true patisserie with the rosemary boule, and you’ll be sure to leave full, satisfied and daydreaming of Paris delights. What’s a typical day like for the Boulangerie crew? Busy is an understatement. The chefs start their day around 5 a.m. while retail employees open up shop. Pastries make their way out of the oven first, followed by the countless types of bread and sandwiches. From there, the chefs are grinding their gears until around 1 p.m. in preparation for the next business day. Customers are served until 7 p.m., and then the process starts all over again. The always-flavorful bread, pastries and sandwiches are a true reflection of the chefs’ hard work and dedication to creating crave-worthy menu items that many in the Metroplex have come to adore. But what truly sets Boulangerie apart from other local bakeries is the integrity of its ingredients, process and product, according to Carson. “We make our own yogurt and ricotta cheese. We get the freshest ingredients and carry French-style products that can’t be found anywhere else in the state,” she says. And that’s not even the best part—the menu also changes according to the season. Some creations, such as the Jambon Buerre (a simple ham baguette sandwich), Pain au Chocolat (chocolate bread) and Kouign Amann (a round, crusty cake), remain consistent year-round, but many offerings change seasonally. During the summer, you can expect seasonal jams, fruit tarts and eclairs. In the winter, Boulangerie sells pumpkin, maple bourbon and spiced-apple products as well as a variety of heavenly seasonal pies. No matter the season, the eatery offers a palate-pleasing variety of breads, pastries and sandwiches that stay true to the business’ French inspiration. If you’re eager to check out this highly regarded bread and pastry shop, make sure to avoid going Saturdays from 10 a.m. to noon—it’s the bakery’s busiest time. However, regardless of the crowd, the wait will undoubtedly be worth it. Not in the mood to drive to Dallas? Catch the Boulangerie team selling their French fare at local farmers’ markets in McKinney, Coppell, White Rock, St. Michael’s and Rockwall. Clearly, the European-inspired bakery has the right idea, and from the looks of it, the Coopers have no plan of slowing down. “For me, Boulangerie is an escape,” says Carson. “From the smells of fresh-baked bread and coffee, the simple and elegant decor, to the friendships made between our amazing customer base and staff, it’s just a lovely calm little refuge from the business of everyday life.” Grab a seat, and a sandwich or pastry. GET READY TO INNOVATE JASON ADAMS HELPS FLOWER MOUND LAUNCH ENTREPRENEUR CENTER How does a father of two, mentor, serial entrepreneur and former rodeo cowboy wind up at 650 Parker Square? Jason Adams has harnessed his special skillset to partner with our town to start INNOVATE Flower Mound, a nonprofit that fosters the entrepreneurial spirit. For a small monthly fee, area entrepreneurs can get full access to the 6,500-squarefoot space, as well as enhanced privileges. Before moving to Highland Village to be closer to his church, Adams created the Collide Center in McKinney. He also founded and currently runs Community Marketplaces, a technology company; DayOne Consulting, which helps municipalities understand, plan and implement entrepreneur centers; plus other companies he helped start. Q. Why are you the perfect person to launch INNOVATE? A: I’m really good at early stage business details. I can take people’s ideas and make them happen. I can tell you if they’re going to work or not and why. I built the [entrepreneur center] in McKinney and, during my time there, I hosted a lot of the city council from Denton. This was before the Dallas Entrepreneur Center had started up, so I met with Trey Bowles [CEO of DEC] and that group a lot before Addison launched [TreeHouse]. I have a lot of experience with the early stages of entrepreneur centers. I’m really the best guy to help the town understand its role and then help form the operations behind it. The community really takes care of itself. I’ll help establish INNOVATE and then push it into the operational hands of the community itself. I feel these programs should [eventually] fall under the chamber of commerce. Q. How did the partnership form between you and the Town of Flower Mound? A: I’m one of the few guys in the U.S. currently who has proved out a different model—not an incubator, an accelerator or a co-work—but a true entrepreneurial center. I know the value of an entrepreneurial center and want the city where I live to have one, so I called the Town of Flower Mound and asked, “Hey, do you guys have an entrepreneurial center?” They’d been trying to build one, so I offered to help. Mark [Wood, director of economic development] had been thinking about it for about three years, but a lot of people come with their hand out. I didn’t ask for a handout. I just came in and said, “If you’re going to do one, here’s the best way to do it.” Q. What is your role in getting the center started? A. I know entrepreneur centers work, and INNOVATE will really be the first one that has been super-centric on stating: We don’t do anything—the community solves its own problems. Our role is to foster and facilitate. Any community can do it. So let me look at your community and see where’s the best place. How big should it be? What will be the minimal

operational costs? How can we test it? How do we launch it? Who are your partners going to be? We did a 90-day study and then we created a partnership with the guys who had just purchased Parker Square. We identified the space and figured out what our lease was going to be. I anticipate Flower Mound will be very cutting-edge. Q. Who is INNOVATE designed to serve? A. The two statements we land on are: 1. We’re intentional about causing collisions by reducing friction. 2. We are here to foster and facilitate. In order for entreprenuers to better grow their businesses, they need a place to get good access to WiFi. Some will need a desk. Some will need a comfortable place to sit. Some will need a conference room and coffee—coffee for sure. They’re going to be desperately searching for resources, and they have to be able to run into other people—consumers, new ideas, investors or talent. An entrepreneur has to find all those components, and if we can create an environment to facilitate those interactions, we reduce the friction for that to happen. Q. How can our community help support the entrepreneur center? A. Hang out and experience it. You’ll see companies get birthed out of here and relationships formed. I encourage people who haven’t even thought they have an entrepreneurial spirit to come down and hang out. You don’t know what you don’t know. Just getting to bump into somebody with a totally different experience is the way problems get solved. Our goal here is to offset costs. When we look for sponsorships, I’m happy to show every operational cost. And if you want, offer to pick up a month’s utility costs or the internet bill. I’d like to get those costs committed so this can exist. But we want people to come and participate. Sit down, have some coffee, join in a conversation.
