With temporary nets strewn in places where other sports are regularly played, it’s safe to say Southlake has dabbled in the sport of pickleball in recent years. According to the Sports and Fitness Industry Association, the sport is a hybrid of ping-pong, tennis and badminton. With nearly 5 million players, it has become the fastest-growing sport in the country.
Like so many other athletic endeavors in this city, the time for dabbling is done. We’ve collectively decided to add to the racket of dedicated courts, leagues and restaurants now dotting the North Texas landscape. This year, pickleball is coming to Southlake — and I mean really coming to Southlake. Not a makeshift tennis court makeover or a portable net dragged out after a dodgeball session either.
Across from the Southlake Tennis Center in Bicentennial Park, construction will begin on a $3.4-million facility dedicated to Southlake’s latest hybrid craze. The facility will include eight dedicated courts and one championship court with appropriate spectator seating. Since the sport can be played by people of all skill and fitness levels, I’m certain the courts will fill up quickly.
If you’re counting at home, nine new kitchens will be installed in Southlake’s multi-sport facility, and you shouldn’t set foot in any one of them. If you’re not sure what I’m referencing, then it’s more than time for you to get in the game and read this month’s issue.

SOUTHLAKE COURTS THE HOTTEST SPORT IN THE COUNTRY

With games popping up everywhere from middle schools and gyms to sports clubs and public parks, pickleball seems to have taken over the Metroplex. That’s as much the case nationally as it is locally, with over 4.9 million players joining just this year, according to the Sports & Fitness Industry Association. Even sports legends like Drew Brees, Tom Brady, Kevin Durant, LeBron James and Kim Clijsters have taken notice, going as far as investing in their own professional pickleball teams.
With new developments coming to the area like Southlake’s upcoming pickleball complex or Grapevine’s new Chicken N Pickle restaurant opening this month, anyone can see that the fastest-growing sport in America is only going to get bigger from here. And because it’s inexpensive, fun and easy to learn, it isn’t hard to see why.
SMALL COURT, MASS APPEAL
A hybrid of tennis, ping-pong and badminton, pickleball was created in 1965 by Washington Lt. Gov. and businessman Joel Pritchard. The game came together one lazy summer afternoon on Bainbridge Island when Joel and his family were trying to think up something to do. Their home had an old badminton court, but Joel couldn’t find enough rackets, so he came up with four wooden ping-pong paddles and a whiffle ball instead.
Together with his friends Bill Bell and Barney McCallum, the creative fathers made up some rules, lowered the net and taught their families how to play what is known today as the game of pickleball.
From the very start, fun and accessibility were at the heart of the game. Played on a miniature 44-foot-long court, the goal is to hit a perforated plastic ball over the 3-foothigh net with a paddle that’s about twice the size of a table tennis racket. And since the court is smaller than your standard 78-foot tennis court, there’s less running involved and less pressure on your joints.
So where did the name “pickleball” come from? One theory claims the game was named after the Pritchards’ dog, Pickles. Another account claims the name was loosely derived from the term “pickle boat,” which is the pickup boat that follows rowing teams.
In either case, pickleball became one of the fastest-growing sports in the U.S. Not only is it easy to play (all you need is a court, four players, a paddle and ball), but just about everyone can participate — kids and grandparents included.
COME ONE, COME ALL
Before it became a national phenomenon, pickleball first rose to prominence in tennis-centric states like Virginia, Florida and Minnesota. For Allison McKnight, she discovered the sport while vacationing with her family in Colorado.
“We saw people practicing in their driveways learning how to play and keep score,” Allison says. “That’s when we decided to pick it up ourselves.”
A longtime tennis player with a 4.5 rating, Allison was quickly drawn to pickleball for its ease and being able to play with others regardless of their skill level.
“You can’t play tennis with just everybody, but with pickleball, you can,” Allison expresses. “You can play with your kids, you can play with your parents. It’s a little bit of an equalizer, and a lot more fun and social.”
But while more and more players were joining pickleball across the country, it didn’t become popular in Texas until 2020 when people were looking for sociallydistanced activities to participate in. Since then, courts have been packed at venues such as Champions Club and Dove Park in Grapevine.
“The popularity of pickleball has grown significantly since Champions Club opened in 2019,” community service deputy director David Miller says. “We always have players waiting to play during peak times of court rotation. It’s pretty common to see entire families coming together to rent a pickleball court as a way to bond over some fun and games.”
One of the reasons why it has grown so rapidly is because of its barrier of entry. Since matches are played on a smaller court, players can run shorter distances with lower impact.
That accessibility is especially helpful in Becky Hibbard’s case, who couldn’t play tennis anymore after three knee replacements.
“Pickleball is like if ping-pong and tennis had a baby,” Becky says. “It’s not as hard on your body as tennis is, and you can have fun or be as competitive as you want. I play everywhere now.”
But while tennis and pickleball share many similarities, there are some key differences between the two. For one thing, pickleball serves are underhanded, while tennis serves are overhanded. In pickleball, games are played to 11 points, while tennis is a little more complicated with terms like “deuce” and “love.” And in pickleball, you can’t play within 7 feet from the net, or what players call “The Kitchen,” while in tennis, the best players are known to have a strong net game.
Regardless of whether you’re a pro or a novice, it's a simple game to pick up. David says that’s helped tremendously with boosting pickleball’s popularity right here in Southlake.
“It’s a very easy sport to learn and improve at a much more rapid pace than tennis and other paddle sports,” David says. “Many players catch on and can play competitively very quickly, and that’s played a large role in the explosive growth of the sport.”
WHERE TO GET SERVED
Today, more pickleball-playing opportunities exist in the Metroplex than ever before. One of the newest attractions in Grapevine is Chicken N Pickle, an entertainment complex that houses both pickleball courts and a casual chef-driven restaurant that serves rotisserie chicken, wings and craft beer.
“It just goes hand in hand,” public relations director Rachel Santschi says. “Sometimes people will come to play pickleball, but the next time they come in, they’ll try our food. People come in for one thing and often stay for the other.”
But Chicken N Pickle isn’t the only pickleball-themed restaurant in the area. In Fort Worth, Allison opened her own business last year called Courtside Kitchen, which serves its own salads, sandwiches and specialty cocktails alongside nine pickleball courts, which are usually packed all week long.
“It was an easy decision because it’s so appealing to so many different age groups and ability levels,” Allison explains. “The courts are packed and full all the time. We’ll have players come in and compete in a serious league one day, but then come back and have drinks on another. It’s such a social experience for everyone.”
And if Allison isn't hearing the pop of the paddles at Courtside Kitchen, she’s hearing it at her second business at Texas Christian University's tennis pro shop, where the pickleball program went from 20 signups last year to over 600 this year.
“My son started the pickleball club at his high school, and it had such a big demand in the first year that they had to split it up between freshmen and sophomores playing
one day and juniors and seniors playing another,” Allison says. “I think it’s only going to keep moving younger and younger and be viewed as a more competitive sport.”
The city of Southlake is increasing its investment into pickleball as well. Last year, the city council approved a $3.4-million pickleball complex to be developed opposite of the Southlake Tennis Center at Bicentennial Park, which will include one championship court and eight lighted courts for open play. The complex is expected to make its debut later this year.
“The interest in pickleball across the city is already at a high level, and the announcement of the complex has helped the city further understand just how deep the pickleball roots already are,” David says.
So don't be surprised if you start playing and soon have a new, healthy addiction. You'll wake up in the morning, immediately racking your brain for when you can get some play time in during the day. Later, you'll schedule some games, get some outdoor exercise and laugh a lot with your new pickleball besties.
“Pickleball has become a true social activity not only in the city, but across the region as well,” David says. “2023 is going to be an exciting year for the sport of pickleball in Southlake.”

To Guinness World Record-breaking Book
Four young Dragons can now call themselves Guinness World Record holders. P u blished by the iWRITE organization and “The New York Times” writer Brad Meltzer and illustrator Christopher Eliopoulos, “I Am Texas” is a 7-foot-tall, 11-foot-wide book featuring over 400 pages of stories, poetry and artwork made by kids across the state of Texas. The massive effort took over two years to complete, with 1,000 kids participating in the endeavor. Weighing 496 pounds, the book broke the Guinness World Record for the largest published book in the world.

DAWSON MIDDLE SCHOOL TEACHER WINS 2022
HUMANITIES TEXAS AWARD
One of Dawson Middle School’s educators is filled with humanity. Earlier last fall, Humanities Texas unveiled its Outstanding Teaching Awards for 2022. Over 600 teachers from across the state were nominated for this year’s awards, but only 15 of them became recipients, including Carroll’s very own Ginny Wenger. To celebrate her accomplishment, the school held a special pep rally for Ginny on campus. Humanities Texas board member Tom DiPiero and state representative Giovanni Capriglione presented Ginny with the honor, along with a $6,000 cash award.
DRAGON FOOTBALL FINISHES SEASON 13-1
The Southlake Carroll Dragons accomplished much during its 2022 football season. This fall, the Dragons posted an impressive 13-1 record and remained undefeated throughout the regular season, facing a competitive schedule that included Keller, McKinney and Byron Nelson amongst others. Their success took them deep into the playoffs, further securing victories against Crowley and Frenship. It wasn’t until the quarterfinals where Southlake Carroll finally found their match in a 45-21 loss to the No. 10 nationally-ranked Denton Guyer Wildcats. Under head coach Riley Dodge, the Dragons have posted an impressive 65-6 (.923) record over his first five seasons.
SOUTHLAKE AUTHOR PUBLISHING FIRST BOOK
Leanne Berthiaume always wanted to call herself a published author — and now she can. A 2001 Southlake Carroll graduate and former Emerald Belle officer, Leanne recently finished her debut novel “Defining Me,” a drama about a woman coming to a crossroads in her life. With the book being published through New Degree Press, Leanne says she pulled from her childhood experiences growing up in Southlake and Texas. “I wrote it because it’s always been a dream of mine, but also because I wanted to tell a story about the struggles many women face but hardly talk about,” Leanne says. DRAGON CROSS-COUNTRY EXCELS AT 2023 NIKE NATIONALS
The Dragons boys and girls teams each made their 14th appearance at the Nike Cross Nationals in Portland, Oregon last month. Competing against 21 other teams from across the U.S., the Nike Cross Nationals is a highly-acclaimed invitational that features the most competitive runners in the nation. Led by Jude Alvarez and Ava Bushaw, the Dragons placed 20th and 11th for both the boys and girls teams, finishing with a final score of 56 and 57 points respectively. “We are extremely proud of all of the runners in our program for their continued dedication,” coach Justin Leonard says. “Having the opportunity to represent our school and community on a national stage is indescribable and the perfect way to cap off a season.”
GEORGE DAWSON TEACHER WINS LONE STAR EMMY
Only a handful of people can call themselves Lone Star Emmy Award winners — and one of them teaches at George Dawson Middle School. A history and journalism teacher, Josh Ault was previously nominated at the Lone Star Emmy Awards for his story on George Dawson’s legacy, interviewing people such as his co-author Richard Glaubman, his granddaughter Mashelle and his great-grandson Christopher Irvin. Not only was he nominated in the Texas Heritage - Short Form or Long Form Content category, but he ended up winning the award as well. “I am so excited to receive this honor and keep George Dawson’s legacy alive,” Josh says. “I hope more people will read his book and our students will know how important it is to have such an amazing man be named for our school.”
DRAGON BARBECUE TEAM COMPETES IN REGIONAL QUALIFIERS
The Dragons made a strong showing at the Texas High School BBQ League regional qualifiers last month. On Dec. 3, 21 high school barbecue teams came to Carroll High School to compete for a spot at the state championship, which is being held in May at Round Rock. The Dragon barbecue team was among the competitors and went home with a slew of team awards. According to the results, Smoke & Co. was named secondplace reserve champions, winning first place for their chicken, second place for their beans, seventh place for their ribs and brisket and ninth place for their dessert. Meanwhile, team DragonFire BBQ finished in 12th place, winning second place for their chicken, 12th place for their ribs, brisket and beans and 13th place for their dessert.
OWEN ALLEN SETS CAREER RUSHING RECORD, NAMED DISTRICT 4-6A MVP
Owen Allen finished his high school football career with a bang. When all was said and done, the record-breaking running back averaged over 150 yards per game, totaling for 2,226 yards and 37 touchdowns during his senior season. This brought his all-time rushing record to 7,600 yards, which is 2,805 yards greater than Tre Newton’s previous all-time record of 4,795 yards. Not only was the senior captain named a finalist for the highly-coveted Landry Award, but he was also named District 4-6A’s most valuable player for the second year in a row.
DRAGON BASEBALL HOLDS RING CEREMONY FOR 2022 STATE CHAMPIONS
Dragon baseball players were commemorated for becoming state champions during a special ring ceremony at the Carroll Senior High School baseball complex last month. On Dec. 8, the baseball team came together to recognize their state win by presenting the championship rings to their players. Not only did they enjoy a special presentation, eat donuts and relish in the company of family and friends, but they also got a sneak peek at what’s ahead for 2023. According to the 2023 schedule, the defending state champions’ new season kicks off on Feb. 23 with back-to-back games against Highland Park and Rock Hill High School and will end on April 28 with a home game against Fossil Ridge.
COMMUNITY SERVICES AQUATICS TEAM WINS GOLD MEMBER CITY AWARD
The city of Southlake’s aquatics team keeps on swimming to success. Last summer, the community services aquatics team helped plan and organize the Texas Amateur Athletic Federation’s Region 4 swim meet at the Carroll ISD Aquatics Center. The meet was a resounding success, with over 100 swimmers coming from nearby cities to participate. Not only did everyone have fun swimming and diving in the contest, but the aquatics team was also recognized with the Gold Member City Award for their contributions and support for TAAF’s programming.
CITY INVESTS IN PUBLIC SAFETY EQUIPMENT
Southlake Police and Fire is getting an upgrade for the new year. Last fall, the Southlake city council approved the purchase of new radio equipment for the city’s public safety officers. According to the city council agenda, the purchase included 82 portable Motorola radios that cost $750,068 total, along with a $65,800 purchase of body-worn camera storage. An additional $78,000 contract was approved with computer and software company CDW-G, which will provide WiFi inside police vehicles. The total cost will be less than $900,000 overall.
CARROLL ISD ADMINISTRATOR WINS SCHOOL SAFETY AWARD
Dr. Tamy Smalskas goes above and beyond for school safety, so much so that her training program has attracted the attention of the Texas School Safety Center. Hired as the executive director of policy and student services in May 2022, Dr. Smalskas delivered an intricate professional training series designed to enhance safety on all campuses, focusing on topics such as bullying, harassment, discrimination and active shooter events. Not only did her program help better prepare students, teachers and staff, but it also earned her the Texas School Safety Award for excellence in staff development and training. “It is a great honor to be involved with a tremendous team that prioritizes the physical safety and security of all Dragons in Carroll ISD on a daily basis,” Dr. Smalskas says.

A new women’s fashion boutique will be making its way into Southlake later this year. THE GOLF STATION OPENING IN GRAPEVINE
A new sports recreation store will be opening next to Hotel Vin. Established in Hurst, The Golf Station is a sports shop that helps improve the golfing experience for its clientele. Named America’s Best Clubfitters by “Golf Digest” magazine, The Golf Station has a variety of golf balls, drivers, putters and clubs that prepare you for any type of game. The new store will open at 243 E. Dallas Road later this month.
PARK PLACE JAGUAR LAND ROVER DFW DONATES AMTRYKES
Local children received a special gift from Park Place Jaguar Land Rover DFW last month. During the second annual Park Place Dealerships Season of Giving campaign, 23 nonprofits in the Metroplex received a total of $100,000 for their philanthropic efforts. Grapevine AMBUCS was one of them, and in addition to their grants, they also received AmTrykes to give to children experiencing mobility issues. “Children with disabilities often feel left out,” general manager Matt Woolsey says. “With the AmTryke, kids with disabilities can have freedom of movement just like family and friends.”

A Little Bit Of Chicken Fried Hoffbrau Steak & Grill House Brings Country Comforts To Grapevine
When people want some downhome Texas flavor, they often head to Grapevine. Now when the mood strikes, we can head to a new family-owned restaurant along Route 114 in Grapevine’s restaurant row. At the newest Hoffbrau Steak & Grill House, owners and founders Rainey Fogiel and her husband Aron continue to share their Texas pride through mouth-watering steaks and made-from-scratch, Hill Countryinspired dishes.
The Hoffbrau concept started in 1978 in Austin, and with the doors now open in Grapevine, the couple has five locations in Texas with more in the works.
“Grapevine is just such a beautiful, tight-knit community,” Rainey says. “We have been blown away by how welcoming everyone has been. We have a beautiful building in a great town and we feel fortunate to be here.”
The concept may be over 40 years old, but upon entering the restaurant housed in the former Brick House Tavern, you aren’t bombarded with too much kitsch or memorabilia. On the contrary, this new and improved family restaurant has a clean and minimalist yet retro-rustic decor, emphasized by a large format Marlboro Man portrait and weathered windmill ceiling light fixtures.
The environment is friendly and welcoming, but there’s no question about what has patrons
coming back for more than four decades — it’s the steaks.
“Our customers love our steaks,” Rainey says. “We’re really well known for [them]. Our chicken-fried steaks are really popular too.”
Hoffbrau is proud to serve certified Angus Beef, which are much more consistent, tender and flavorful. The prize offering of the menu has to be the 16-oz. bonein cowboy ribeye. Those looking for a little extra flavor might choose the coffee-rubbed ribeye or the smoked sirloin, which is pepper crusted, slow-cooked and served sliced with your choice of homestyle sides.
In true Texas fashion, Hoffbrau also serves up a complete line of chicken-fried steaks, each served with savory mashed potatoes, Texas toast and a house salad. The Traditional comes topped with a creamy peppered gravy, while The Revolver spices things up with jalapeno gravy. For the ultimate smothered experience, try the aptly-named Cowtown that adds a kick of heat with pepper jack cheese and pico de gallo to their traditional gravy.
Now adults, the Fogiels’ children are getting involved in the family business as well. Their daughter joined the ranks a few years ago as the chief financial officer, and their son has gotten involved on the real estate brokerage side. Together, they are a great mix of history and the future, taking advantage of Hoffbrau’s heritage yet also keeping an eye out for what’s to come.
One part of the future is to build upon Hoffbrau’s traditional drink offerings. Starting with the Grapevine location, Hoffbrau is investing in building an upscale bar that serves more than just domestic beers.
“We have expanded our bar menu greatly at this location,” Rainey says. “My son said we’ve got to punch up the bar menu, so we now have a lot of new craft cocktails and spirits.”
At Hoffbrau, the bar menu has a full breadth of margaritas. The house margarita is priced to please and comes frozen or on the rocks in a variety of flavors like mango, peach and raspberry. Purists will be happy to know they also have more elevated options like The Rodeo ‘Rita that includes Jose Cuervo 1800 Silver and the Perfect ‘Rita which stars Patron Silver.
For any bar worth its salt, executing top-shelf margaritas is a given. Now Hoffbrau’s bar is also primed and ready with elevated wine, craft whiskey and gin offerings. Whistlepig rye and Fort Worth’s own TX Whiskey are both utilized in tasty old-fashioned forms. Those looking for more floral notes will enjoy The East Texas Garden Smash, a gin-based delight with fresh cucumber, mint and basil for a light, refreshing afternoon sipper.
Cuervo Silver has a second act at Hoffbrau as part of the ever-popular ranch water craze. Theirs is served with Jalapeno infused Jose Cuervo Silver, lime juice and soda water for a refreshing sip for any meal.

Scout’s Honor It’s All Fun And Games At This Flower Mound Outpost
Refined Hospitality opened the first location of their popular gaming lounge Scout inside The Statler Hotel in Dallas in 2018. Highlighted by four reservable bowling lanes, pool tables, foosball and ping-pong tables and an extensive bar menu, the concept quickly became a go-to place for Dallas’ after-work crowd.
In May of last year, Scout opened a second location at Flower Mound’s River Walk development — over 158 acres of retail, dining and residential spaces that surround a waterfront shopping and entertainment district. While five new restaurants are being added later this year, river walkers still have some time to grab a drink or two at this lively venue.

Its Small-Batch Delights To Southlake
When you think of a doughnut, you traditionally think of the soft yeast and cake variety topped or filled with creamy, sweet and fruity flavors. But Parlor Doughnuts is reinventing how people enjoy the beloved breakfast treat.
Founded in Evansville, Indiana in 2019, Parlor Doughnuts is a rapidly growing chain that has expanded to 50 shops across the nation, including its most recent one opening on Southlake Boulevard near Bicentennial Park. Embodying a nostalgic Americana aesthetic complete with black-checker flooring, a vintage RCA radio and an American flag proudly draped in the entryway, the shop has built up a reputation for continuously baking small-batch doughnuts all day long — sometimes up until the last half-hour of service.
But these aren’t your typical doughnuts. Rather than mixing and kneading the dough as many other shops do, Parlor Doughnuts instead stacks layers of butter dough on top of each other before deep frying it, resulting in a texture that’s flaky and crispy on the outside like a croissant but with the same soft and airy doughnut texture on the inside that you know and love.
Parlor’s original Plain Jane doughnut isn’t as sweet as others are, but this allows customers to be as decadent with the toppings as they wish. Their most popular flavor is the French Toast doughnut, which is glazed and drizzled in maple syrup and dusted with powdered cinnamon sugar.
