a moment on the lips…

From time to time, a sense of restaurant nostalgia hits me somewhere between finishing my plate and walking back to the car. When it does, I’ll turn to Nicole and reminisce on what used to be. In the course of two decades, we’ve seen, dined at and shared the news on just about every eatery in town.

We’ve been there as new chefs, decor and concepts have made their way into our local food scene. Sure, I miss helping myself to the pickle bar at the old Cafe Express, but who could deny the patio and drink selection at Moxies as being a step forward in our dining evolution?

This month, we share the art of the meal through our annual Dining Guide featuring everything from ever-changing food halls to West Lafavers’ third-generation takeover of a Southlake family favorite.

In keeping with sharing the stories of our friends and neighbors, we’re happy to bring the story of Scott McKinnon to the table. From learning the basics while home alone to firing up televised kitchens with the likes of Gordon Ramsay, this Southlake-based private chef is quickly making a name for himself.

In case you haven’t heard, the secret is out on local speakeasies. The password-protected 1920s drink tanks have become all the rage in the suburbs. Even the Texas Rangers have a speakeasy club at Globe Life Field. As Southlake welcomes its own prohibition-era bar, we couldn’t help but take a moment to enjoy some of the area’s more notable craft cocktail-forward concepts.

The Makings of a Master Chef

SOUTHLAKE PRIVATE CHEF

SERVES DELICACIES FROM TV TO TABLE

As the saying goes, if you can’t take the heat, stay out of the kitchen. No one understands that better than Scott McKinnon. Fresh off of launching his new private chef business, one of his first large-scale gigs was cooking for a big annual gala where he served over 320 plates to hungry patrons. To make it even harder for himself, two of those dishes were notoriously finicky handmade ravioli, one stuffed with brisket and the other stuffed with spinach ricotta.

By the end of the meal, the Southlake chef was sweaty and exhausted, but completely elated. With hundreds of visibly satisfied and happy diners, the effort ended up being well worth it.

“It was a lot of work, but I can say that we did that,” Scott states.

Every chef’s culinary journey starts somewhere. Whether it’s Emeril Lagasse at his neighborhood bakery, Bobby Flay at a local pizza parlor, or Gordon Ramsay washing dishes at an Indian restaurant, humble beginnings often foster a shared love of handmade cuisine. Scott’s upbringing is no different, first learning to cook in his parent’s kitchen during his teenage years.

But unlike many chefs who honed their skills at prestigious culinary schools, his education came from a different teacher — TV.

“It was a lot of trial and repeat, and quite a bit of ‘Food Network’ too,” he remarks.

Today, Scott has shifted from watching chefs on TV to competing alongside them on “MasterChef Generations.” Whether it’s his penchant for authentic flavors or his affinity for creating curated dining experiences at home, this self-made chef proves that passion is the secret ingredient behind every dish.

KEEPING IT IN THE FAMILY

Growing up as a latchkey kid in Dallas, Scott juggled multiple sports in high school and often came home hungry after practice. But with both of his parents busy working full-time, he frequently found himself alone at dinnertime.

“I always came home starving, so I quickly realized that I gotta figure this out and get functional, because nobody else was going to do this for me,” he says. “It kind of started out of necessity.”

Starting with simple recipes like grilled sandwiches and spaghetti and meatballs, Scott taught himself basic kitchen skills and started getting into a routine of cooking for one. As he continued to work on his palate and pan-frying, he soon discovered that his culinary roots ran deep — his great-grandfather, renowned restaurateur Billy McKinnon, ran five restaurants in Houston and Dallas in the 1920s. He even had a street named after him near Uptown Dallas for his contributions to the food service industry.

“It’s literally in my blood,” Scott says. “He had a highend, five-star champagne, orchestra, caviar-type venue for those fine dining enthusiasts, but he also had day buffets for the hard labor workers. He catered to every type of customer.”

Scott continued to build upon his culinary repertoire, even after graduating from Texas Christian University, starting a marketing career and marrying his college sweetheart, Kimberly. When kids came into the picture, it was a no-brainer that he would assume the role of family chef, indulging his two daughters with delightful delicacies such as hickory-smoked brisket and ribs, crispy quail breasts and veal caprese.

“Every holiday, every birthday, every event was always at our house,” he recalls. “Everyone always wanted me to cook.”

While he thrived in a 30-year sales career, Scott always felt a pull back toward the kitchen. His original recipes became so popular amongst family and friends that they encouraged him to open his own restaurant. But his business savvy told him that it wasn’t the right time to establish a new restaurant, especially with rising food and labor costs. So instead, he strategically spearheaded a private chef business, allowing him the freedom and flexibility to cook wherever and however he wanted.

“I wasn’t interested in being a caterer,” Scott clarifies. “I don’t want people serving my food out of a buffet. I wanted it to be a plated, seated thing. I wanted it to be an experience.”

COOKING FOR THE CAMERA

While Scott was excited to launch his private chef business in early 2023, it wasn’t without its challenges. Business started slow with only a handful of interested clients, and his time was split between his cooking and consulting enterprises.

“It wasn’t by any means paying the bills,” he says. “I was just getting started.”

“‘MasterChef’ gave me the confidence to keep going. The whole experience was amazing.
— Chef Scott McKinnon

That all changed just a month into his new culinary venture when he was watching “MasterChef” at home by himself. Debuting in 2010, this popular American reality competition has run for 14 seasons and features chefs participating in various cooking challenges. Their dishes are then reviewed by a handful of highly discerning judges who have already proven themselves in the restaurant industry. Winners of each challenge get to remain on the show in their pursuit of the title of master chef.

As a longtime fan of the show, Scott always wanted to test his skills against similarly talented chefs. With his wife and kids out of town for a vacation, he had the time to research the application process and film himself preparing a show-stopping horseradish-crusted salmon with cauliflower puree.

“I’ve always wanted to audition for ‘MasterChef,’ and this was really the only opportunity I had to do it,” he says. “I decided to just go ahead and do it and didn’t think anything about it.”

A few months later, Scott got a surprise call from the showrunners inviting him to be part of the show. Little did he know that was only the first step to his “MasterChef” journey, as the next several months would be filled with intensive cooking challenges that would continue to push him to the limit.

“From June until November, I was completely consumed,” Scott recalls. “I was just getting these constant phone calls. ‘We need you to cook this dish.’ ‘We need this video.’ ‘We need this picture.’ ‘Here are five ingredients, make something out of this.’ I did my day job, and I did my ‘MasterChef’ stuff at night. It was crazy.”

Out of 40,000 initial applicants, only 100 chefs, including Scott, were flown out to LA by the end of the year. But the group faced several more rounds of offscreen cooking challenges before the final 40 were selected to appear on the show.

“As we got to the studio, half of the group was motioned upstairs, while the other half was sent down,” he recollects. “You knew that one of those was the right room to be in.”

Thankfully, that was the room he found himself in when the producers told him he made it.

“I thought the floor was going to crash through the ceiling,” Scott expresses. “So many months of hard work went into this. To be finally told that you were going to be on ‘MasterChef’ — it was unreal.”

For the first time in the series, season 14 divided the contestants into four eras of cooking talent for “MasterChef: Generations” — Baby Boomers, Gen Z, Millennials and Scott’s group, Gen X. To advance past the televised audition round, contestants needed to prepare a dish of their choice for judging. If they secured three “yeses,” they earned an apron and got to advance further into the competition.

Scott was ready and eager to impress the judges, but as soon as he fired up his stove, he quickly realized cooking on a TV show was much different from cooking

“There were no less than 20 cameras on me at a time,” he says. “There were overhead cameras at my station, there were handhelds, there were story producers interrupting me while I was cooking. You had to think on

For his dish, Scott prepared his family-favorite mustard-fried venison backstrap with mashed potatoes and southern cream gravy. While a notoriously tough and lean cut of meat, the kitchen professional knew from experience that it would prove flavorful if properly tenderized and marinated.

His first “yes” came from Gordon Ramsay, who was particularly fond of the breading and texture. Aaron Sanchez gave the second “yes,” calling his venison a “pleasurable bite.” It all came down to Joe Bastianich, and while he complimented the dish, he felt it was underseasoned and gave a decisive “no” that unfortunately ended Scott’s “MasterChef” dreams early.

Despite his disappointment, the go-getter was welcomed by a supporting crowd cheering him on, as well as his family greeting him with open arms. Kimberly reassured an emotional Scott with her usual words of encouragement — “You’re our MVP.”

“The whole experience was amazing,” Scott says. “Even the six months pre-auditioning, all the cuts on the ground in LA, getting to cook alongside all of these amazing chefs — it really gave me the confidence that I was going in the right direction. It gave me the confidence to keep going.”

THE RECIPE FOR SUCCESS

Scott’s 15 minutes of fame didn’t end with “MasterChef.” Upon returning home, he had several new cli-

anything. I can count on one hand the number of times I’ve said ‘no.’”

Before he even puts a pan on the stove, the culinary expert begins with a one-on-one consultation to clarify what the client is looking for. And by partnering with local wine clubs in Southlake, the food aficionado is well prepared for any dining experience, be it Texas-Italian fusion, regional cuisine or thoughtfully prepared fivecourse meals.

“What I enjoy most about it is that we’re building a community of like-minded people that really appreciate high-end cuisine,” he says. “Food’s always been my passion, but I never thought about how rewarding the people side of the business would be too.”

Despite his dashed “MasterChef” hopes, the skilled chef maintains his competitive edge. Not only did he make it to the semifinals for Carla Hall’s Favorite Chef online cooking competition, but he was also selected to cook for the Dallas Cowboys’ main club level on Thanksgiving Day during their game against the New York Giants.

But whether he’s cooking for high-end business executives or a small and intimate engagement party, Scott is proud of every special cooking experience he gets to share with others.

“I’m part of some really important memories in people’s lives,” Scott says. “That’s part of what drew me into the private chef business. It’s more than just cooking.”

SPOTLIGHT community

One Southlake athlete raced towards the gold during the 2024 Paralympic Games in Paris earlier this month. Running track and field through middle and high school, Korban Best was born with an upper rightarm deviation called ulnar dysplasia, but he never let that slow him down. After graduating from Southlake Carroll in 2021, Korban was quick to burst onto the pro circuit scene, qualifying for the Paralympics after finishing first in the 100-meter race during the team trials. His hard work paid off when he was chosen as one of 54 athletes representing the U.S. in the 100-meter and universal relay. “Korban’s arm was our normal, but we never limited him because of it,” his mother Kimberly says. “We never called it a disability — just a difference.”

NORTH TEXAS PERFORMING ARTS HOSTING TALENT SHOW

Talent lives in Texas, and the North Texas Performing Arts Center knows it — that’s why they’re giving away $1,000 for their inaugural North Texas’ Got Talent Contest. Last month, the Southlake fine arts organization accepted entries for their first-ever talent show, which will feature a full lineup of singers, dancers, musicians, magicians and stage performers. All of the finalists will perform their talent in front of a panel of judges at the Shops at Willow Bend in Plano on Sept. 28, and the top three winners will win a cash prize ranging from $200 to $500. “We have such amazing performance talent across North Texas,” NTPA CEO Darrell Rodenbaugh says. “This is not just a high-stakes talent contest. It is a celebration of our region's incredible artistic diversity and exceptional talent.”

DRAGONS START FINANCIAL NONPROFIT

Founded by Carroll Senior High student Arjan Suri, Enrichify is a nonprofit that uses artificial intelligence tools to help users budget, strategize their investments and increase their financial literacy. Since its launch, Enrichify has recruited over 570 users and collected over $7,500 in donations. “Our core mission is to empower individuals of all ages to plan their financial future, whether it be in the form of learning about retirement accounts, understanding options for paying for college, or even learning the basics of investing in the stock market,” director of operations Anson Omar says.

WALNUT GROVE GETS NEW TURF FIELD

Gone are the days of muddy post-recess shoes and sticker-covered socks for Walnut Grove Elementary School students. Thanks to the tireless efforts of Walnut Grove’s Parent-Teacher Organization, these lucky kids returned to start the 2024-2025 school year with a brand-new turf field. Earlier this spring, the PTO hosted a casino-themed fundraiser that raised enough money to provide the school with an in-kind donation of $120,000 for the field. “When we set out to do something a little different for our spring auction, I never imagined how big it was going to be. Our committee was fully dedicated to raising the funds for a new field and truly knocked it out of the park,” commented Wendy Home, 2023-24 PTO President. “The kids and teachers have raved about it since! We are so lucky to have amazing parents who do so much to support our school and PTO.”

Flavour Of The Month

Bring the drama to your cocktail game with the Flavour Blaster Pro

If your social media feeds are anything like ours, you’ve seen at least one video of a professional bartender creating a show-stopping cocktail covered with a vapor-filled bubble perched atop the glass. Then poof! It dramatically bursts into a cloud of fragrant smoke, much to the delight of the crowd.

If you’re looking to recreate this at home, today is your lucky day. The Flavour Blaster Pro is the key to proving your mastery of mixology to friends and family. This professional tool encapsulates aromatic vapor into dramatic bubbles that infuse flavors into your fanciest libations.

As opposed to a classic smoke gun, which im-

parts a smoky hint using wood chips, the Flavour Blaster Pro uses a variety of aromatic essences. Just fill the tank with one of the five included aromas, place it into the Flavour Blaster liquid and pull the trigger. The kit comes with a smoke aroma, but it also has four other options, including citrus, mixed berry, rosemary and neutral, for when you want the dramatics without the aromatics.

While the infused flavor and scents are certainly unique, let’s be honest — we’re here for the drama. This is where the Flavour Blaster really shines. Get trigger-happy with your cocktails, and your bubblebursting concoctions are sure to be splashed across Instagram stories far and wide.

Winemaking Is A Family Affair For These Gold-Medal Winning Grapevine Vintners

It didn’t take long for Chuck and Cyndi Tordiglione to make a name for themselves in the wine world. In 2010, the owners of Bull Lion Ranch decided to try their hand at winemaking, expanding their cattle and horse ranch near Hico, Texas into a vineyard that now produces award-winning wine. After winning numerous medals at GrapeFest, they opened a tasting room on Grapevine’s Main Street, which proved so successful that they're moving next door to a larger space on College Street this fall. However, Cyndi and Chuck, president of the Cross Timbers Wine Trail Association, have an even bigger mission — to encourage people to support Texas agriculture and drink Texas wine.

Chuck: MY GREAT GRANDFATHER MADE… wine in his basement. All my uncles did, too. So in the ‘60s, when we'd have family dinners, my aunts would all bring their famous pasta dishes and all the uncles would bring their wines. Winemaking runs in the blood.

Cyndi: WHEN CHUCK TOLD ME HE WANTED TO… make wine, I said, ‘Well, you know, if no one else will drink it, I will!’

Chuck: IT REALLY IS A… family business. Our daughter Olivia works the tasting rooms, our son Tony handles the vineyard and the winery, and our daughter Alex does our marketing. My 97-year-old mother makes a cheesecake that we sell at the tasting room that people can’t get enough of.

Chuck: WE’RE 100% TEXAS… in our wines. We grow all of our reds, and we work with other local growers for our whites. We always stay local.

Cyndi: THE WHOLE WINEMAKING PROCESS… takes years. The first three years, you just throw out the grapes. In the fourth year, you produce wine, but it's not something you're going to serve to anybody else. But by the fifth year, we were ready to start distributing to restaurants, and they really liked it.

Chuck: WE HAVE A MASTER… winemaker. Patrick Johnson is known as one of the top five winemakers in Texas and a legend for his cabernets. He and I just clicked. Now, he’s taken my son under his wing and has been training him for nearly eight years.

Chuck: I’M A HUGE ADVOCATE FOR… Texas wines. I spent a lot of time in Austin fighting for rights with the Texas Department of Agriculture, working with them to help us with marketing and everything we needed to get the message out to the people.

Chuck: WE HAVE A CABERNET FRANC CALLED… Cabernet Frank. Ours has a picture of Frank Sinatra

on the bottle. But Cyndi’s favorite is our montepulciano, and mine is the Texianti, which is our family Chianti.

Chuck: THE SECRET TO OUR CHIANTI IS… just that it’s a true Italian-style Chianti. But, OK, we can't give out our percentages. Kind of like you don't give out your family’s secret spaghetti sauce recipe.

Chuck: WE ALWAYS HAVE THE LONGEST… line at GrapeFest. People tell me, ‘I really enjoy talking with you about wine.’ And I just think that’s cool. If they have 6,000 people at GrapeFest, I'll talk to all 6,000 of them if I can, because I want them all to have the experience.

Cyndi: WE HAVE GREAT CUSTOMERS… here in Grapevine. And the best part is that a lot of them even regularly visit our ranch.

Chuck: NOTHING BOTHERS ME MORE THAN… going into a Texas restaurant and the wine list is just full of California wines, but we’re working to change that.

Chuck: OUT OF 40 WINERIES IN OUR ORGANIZATION… only eight or 10 are large enough now to be able to distribute wine to restaurants. But they’re good wineries and they’re only getting better.

Chuck: WE GET A LOT OF… wine travelers in our region. There are 2 million wine travelers a year in the state of Texas — 49% of that 2 million are from the DFW Metroplex. They're heading down to Hill Country, but we're trying to get them to stay right here touring the Cross Timbers Trail.

Chuck: WE’VE BEEN VERY BLESSED… as a family because we’ve had lots of people who have loved our wines and supported us from day one. Grapevine has given us support like no other.

HIDDEN ENTRANCES, GATSBY-STYLE AMBIANCE AND CRAFT COCKTAILS ABOUND AT MODERN SPEAKEASIES

Luxe interiors, craft cocktails and unique touches are what you can expect at today's speakeasies. (Pictured the Rô on Oak)

Nestled between a coding school and a brunch restaurant in a mixed-use retail center lies the entrance to the space that Fish City Grill used to call home. The blacked-out windows that once looked into the restaurant sit below a bright neon sign that now reads Volstead: Prohibition Era Bar and Kitchen.

A secret entrance, it’s decidedly not. But once your eyes adjust to the dark interior, you'll find yourself immersed in a cozy, bustling establishment with craft cocktails and cheeky decor that harkens back to the Roaring ‘20s.

It’s official. The speakeasy trend that has been building momentum in the last few years has made it to Southlake.

Your first thought might be “What does this restaurant in the middle of a family-friendly suburb have to do with an actual speakeasy?” A good question, indeed!

Let’s go back a bit. It’s 1919, and the Volstead Act, which enacted Prohibition, has just been ratified. You want to get out and socialize with a lively libation in hand, but saloons have all been shut down. Where are you going to go?

For those in the know, a speakeasy, of course.

Speakeasies were secret, Prohibition-era bars that were often hidden inside buildings, nondescript alleyways or anywhere shielded from the public eye. The name itself comes from the fact that you had to be quiet, or “speak easy,” when giving the entry password, known only by word of mouth, to avoid attracting the attention of law enforcement.

Though the age of the speakeasy died with the end of Prohibition in 1933, it left more of a lasting mark on bar life than you might expect. Case in point, it ushered in a renaissance of cocktail culture.

Because speakeasies often served harsh, homemade alcohol (think hooch or bathtub gin), bartenders became flavor alchemists to mask the taste. They began using spices, juices, homemade flavored syrups and bitters to turn the strong spirits into palatable creations. You’ve probably heard of a bee’s knees, a mint julep or an orange fizz. Yes, indeed, all speakeasy-era hangovers.

Jumping forward a handful of decades, many argue that the spirit of the speakeasy was reincarnated with the Y2Keve opening of famed NYC bar Milk & Honey. It had no sign, no published phone number, no menu, a strict etiquette code and it quickly became the go-to for the uber-cool. It’s also widely credited with restarting the craft cocktail scene as a pushback on overly sweet concoctions like cosmopolitans, mai tais and Long Island iced teas that reigned at the time.

While some of today’s speakeasies might still have “hidden” entrances and “secret” codes, let’s be real - anyone with an internet connection can do a little light digging and easily find them. Heck, for most you even need a reservation.

That aside, there are a few common denominators between today’s speakeasies and those of the past. First, there’s the vibe. Though today’s speakeasies are anything but secret, they still have enough of the exclusive aspect to give people the sense that they know something their neighbors don’t.

While the first speakeasies were more akin to dive bars, later iterations went all-in on the opulence. Most speakeasies today pick up where the olden ones left off, giving design teams a veritable cornucopia of Gatsby-esque inspiration for their interior work. It’s also the kind of place where you might want to eschew the lulus in favor of fancier attire, which is a welcome change in this post-pandemic era.

However, perhaps the most important aspect is that the speakeasy is synonymous with solid cocktails. While you will undoubtedly find staples like sidecars, old fashioneds and good ol’ martinis, there’s a better-than-average chance you will find a menu of specialty sips made by the master mixologist behind the bar.

If you’re itching to try out a speakeasy for yourself, here are some local options where you can indulge in style.

Decorated with elegant but cheeky designs, like wallpaper depicting a bubble-gum chewing Ben Franklin, this newly-opened Southlake restaurant infuses elements of 1920s glam throughout the interior and menu. It even features personal liquor lockers where patrons can purchase and store their own stash at the restaurant. Open for lunch and dinner, it also has a formidable happy hour that’s worth a try.

2750 E. Southlake Blvd., Suite 130, Southlake

THE VIBE: Lively and welcoming with food ranging from hamburgers to a raw bar, its varied menu will appeal to a wide range of tastes.

HOW TO FIND IT: Hard to miss from the parking lot, look for the door between iCode and Mango’s Breakfast & Brunch.

KATE SMITH

WHAT TYPE OF LAW DOES YOUR FIRM PRACTICE?

We take all family law, estate planning and probate cases. My staff and I focus on keeping clients out of the courtroom as much as possible by utilizing alternative dispute resolution methods such as collaborative divorce.

WHAT SETS YOU APART FROM OTHER FIRMS?

I am board-certified in family law and hold a master of law in dispute resolution. I am also master credentialed in collaborative law. Litigation is sometimes necessary, and being board-certified means I have lots of courtroom experience.

WHAT SHOULD PEOPLE KEEP IN MIND WHEN SEEKING AN ATTORNEY?

Litigation is expensive and generally doesn’t result in a “win” for anyone. If you can resolve your dispute using collaborative divorce or mediation, it will save you time and money, and you can avoid the stress of being involved in the court system.

WHAT TYPE OF LAW DOES YOUR FIRM PRACTICE?

I focus on estate planning, but I also practice probate and business law. On a daily basis, I work on wills, trusts and asset protection to ensure my clients have tranquility.

HOW DID YOU GET INVOLVED WITH LAW?

As a small child, my parents took me to meet with their estate planning attorney, and he showed me the guardians I would have if something happened to them. I never forgot that meeting, because it showed me that even if the worst-case scenario happened, I wouldn’t be with a stranger. I strive to give that same peace to my clients.

WHAT AWARDS OR ACCOLADES HAS YOUR FIRM RECEIVED?

I have been named to Southlake Style’s Readers’ Choice and Top Attorneys list numerous times. I was also named to “D Magazine’s” Best Lawyers in DFW for 2023 and was nominated as Southlake’s Person of the Year in 2019.

local FLAVOR

Southlake welcomes new seafood offering

For the past decade, Pacific Table has been celebrating coastal cuisine with an emphasis on fresh ingredients, authentic flavors and classical cooking techniques. After expanding into Las Colinas in 2020, this fine dining restaurant has set its sights on Southlake.

Helmed by renowned restaurateur Felipe Armenta, Pacific Table is a seafood concept opening inside the former Redrock Canyon Grill. Offering a combination of oysters, sushi and signature seafood entrees, this elegant eatery originated from Far Out Hospitality, which manages several acclaimed restaurants throughout the

Metroplex including Cowboy Prime, F1 Smokehouse, the Press Cafe, Le Margot and Maria’s Mexican Kitchen.

“We have been counting down the days to unveil the newest Pacific Table experience to the Southlake community,” Felipe says. “Far Out Hospitality is committed to pushing the boundaries of culinary excellence, and the Pacific Table expansion represents an exciting new chapter in our journey.”

Beautifully designed by Cohesive Design director Michelle Bushey, this deep dive embraces oceanic aesthetics with walls emphasizing black wood panel stains and gold-framed mirrors, while

the dining room features rope and white tile column accents that is reminiscent of seafaring expeditions. The grand bar area also boasts a deep blue, black and white color scheme alongside a premium teak wood stain.

When you’re ready to dive into the cocktail program, there are plenty of bubbly and boozy beverages to choose from. The Pacific Gold Rush has an equally strong and sweet taste thanks to the Toki Japanese whisky and honey combination, while the Empress Sour leans into its zesty appeal with Empress 1908 Gin. Ladies Who Lunch is a fruity twist on the vodka cocktail with Deep Eddy Ruby Red and strawberries, and Armenta’s namesake margarita elevates the beloved libation with Socorro Blanco and Jalisco 1562. The bar also comes equipped with a variety of Japanese sakes such as Joto, Izumo Fuji and Watari Bune, not to mention the many wine, beer, champagne and cider options.

After you raise a toast to the occasion, dip into the diverse food menu, which is skillfully prepared by “MasterChef” judge and celebrity chef Graham Elliot. The starters all impart their own unique flavors whether it’s the woodgrilled edamame, the clam chowder, the poke, the crispy calamari or the jumbo shrimp cocktails. And when it’s time for the main course, Pacific Table has everything from sushi rolls to traditional fish plates.

The So Fire Roll delivers an impactful umami profile with blue crab and a butter truffle ponzu sauce, while the Margot Roll offers a refreshing bite of shrimp, jalapeno, cucumber and lemon zest. The roasted cedar plank Atlantic salmon is paired with a herbaceous rosemary dijon butter, while the San Francisco Cioppino sautees shellfish in an aromatic white wine tomato broth. For those craving handhelds, the California Burger packs its own kick with a helping of avocado and Anaheim peppers, as does the Korean chicken sandwich with its spicy coleslaw. Not to mention the featured fish and risotto du jour specials that are rotated in-house daily.

Your Pacific dining experience isn’t complete without dessert, and these sweet selections will satisfy anyone’s sweet tooth. You can’t go wrong with a classic favorite like the creme brulee or the ice cream sandwiches, but the yuzu lemon meringue imparts a strong tangy sensation that will have anyone wanting more. And if chocolate is more your fix, the s’mores pot de creme over-delivers with a heavenly combination of chocolate custard, graham cracker crumble and toasted marshmallow.

Whether you come for the coastal-inspired fare or the aquatic ambiance, Pacific Table is the catch you’ve been waiting for.

From beautifully marbled steaks and rib roasts to pork tenderloins and veal chops, a good butcher is always fully stocked with the most high-quality cuts available. Thankfully, New York Butcher Shoppe in Colleyville has it all with a variety of fresh meats, specialty sides, fine wine pairings and ready-to-go meals catering to the whole family.

From the East Coast to the South, New York Butcher Shoppe is one of the fastest-growing pre mier butcher franchises in the nation with over 30 stores in eight states. When Colleyville resident Ruth Nokes learned of the franchise, she wanted to bring the brand home and open the first New York Butcher Shoppe in Texas.

“We wanted a good quality market that we could offer to people,” Ruth says. “We have meat, wine and specialty grocery items all wrapped into one. We just fell in love with the whole concept.”

The savory shop takes pride in its first-rate selections, offering a variety of chicken, pork, veal and lamb options alongside prime and top-choice cuts of Certified Angus. But while the meats are all Agrade, the shop doesn’t skimp on the sides either, with indulgent offerings including gouda and lobster mac n’ cheese, goat cheese mashed potatoes, parmesan broccolini and creamed corn. Specialty sausages and cheeses can also be purchased on the grocery side, as well as a variety of gourmet pastas and international treats.

But if you’re looking to simplify mealtime and eliminate all of the prep work, New York Butcher has simple take-home meals you can heat and serve with ease. Comfort food classics like baked mani cotti, chicken pot pie and beef stroganoff are sure to delight even the pickiest eaters. Plus, with an exclu sive wine club that starts at $60 a month, every meal can be paired with an accompanying bottle that en hances the flavor and experience.

“You’re in and out in 10 minutes,” Ruth says. “It’s convenient and quality, and you’re not sacrificing one for the other. We look forward to being part of the community and becoming a brand that people know and recognize.”

Wine Down With Truluck’s

Sip Like A Sommelier At This Seafood Haven

Nestled in a cozy corner of Southlake Town Square, Truluck’s has been a local staple since 2008. With its wellcrafted, seafood-centric menu, intimate booths and selfie-perfect lighting, it’s the go-to for those wanting to infuse sophistication into special occasions, business dinners or a simple weeknight out on the town.

It is well established that this local gem shines when it comes to pairing show-stopping seafood and steaks with the wine that will take them to the next level. This is precisely why they were yet again recognized with a coveted 2024 “Wine Spectator” Restaurant Award.

Suffice it to say that we trust Truluck’s partner and beverage director Dave Mattern when it comes to choosing the perfect wine, and he was kind enough to share his current pairing picks with us.

If you’re tempted by the new Seared Scallop & Shrimp Sauté menu addition, he explains that sauvignon blanc is ideal. “We carry an iconic one from Merry Edwards, whose brightness and herbaceousness add a whole other gear to these dishes,” according to the oenophile. He adds that if reds are more your style, “Our Sesame Seared Tuna can hold up to big reds. But if you want the best pairing, the cool-weather, fresh, electric Hartford Court Pinot Noir will take you there.”

For fan favorites like lobster and stone crab, Dave recommends a crisp chardonnay. He’s currently enchanted with Atelier from Russian River, which drinks like a gorgeous white Burgundy for half the price.

And for those feeling a little more adventurous, Truluck’s launched two varieties of private-label caviar this month, giving you the perfect excuse to stray from the wine menu. To “make the caviar sing,” opt for an icecold glass of Beluga Gold Vodka.

“I’m a big believer that the right wine with the right food can take food from good to great, and the wine itself from average to spectacular,” Dave remarked. Whatever your choice, the key is to remember that if you like it, drink it. Especially with a wine menu as carefully curated as Truluck’s.

The State Fair of Texas is back

24 Days of Deep Fried Fun

Big Tex Is At It Again To Get Us To Loosen Our Belts

Ju st like clockwork, late September rolls around and the talk of the town once again turns to the State Fair of Texas. Attracting over 2.5 million visitors annually, this Fair Park staple is in its 138th year of livestock corrals, live music, rides, longstanding football rivalries and deep-fried delights.

Music is always center stage at the State Fair. This year is no exception with big acts including country crooner Jo Dee Messina, hip-hop legend Big Daddy Kane and Texas indie rock heroes Bowling For Soup. There’s also the rodeo, where you can take in unforgettable, high-energy events like bull riding and wild cow milking.

But really, what would the fair be without the food? For the 20th year in a row, the Big Tex Choice Awards are making the case that pretty much anything is better

when it’s deep-fried, sometimes more than once. Out of a record-breaking 65 entries vying for the top spots, three won over judges for their uniqueness, creativity, presentation and taste, including the Dominican Fritura Dog, Texas Sugar Rush Pickles and Cotton Candy Bacon on a stick.

The fair only comes around once a year, so dust off your elastic waistband pants and head down to Fair Park for some family-friendly fun.
