good dads are all the same This month we enjoy getting better acquainted with features on three special Southlake dads. Shawn McCaskill, Gavin Tade and Kyle Clark are all fine examples of men who make the most of their days and nights in the name of all they love most. However different their paths may be, I agree with the sentiments from second-term City Councilman McCaskill — at the core, dads are pretty much all the same. We want to do our best every day, for our families, for our careers and for our community. But after the last report is filed, carpools and coaching complete and the last child is tucked in — it’s time to recharge in our favorite spaces. If Southlake dads are so similar, maybe the contents of our man caves could give a glimpse of what sets us apart? Mine? Well, since you asked, it is pretty simple and it’s a space all my own. So much so, no one except for my dogs has ever set foot in it. No $50,000 Ford Mustang Shelby pool tables yet (see page 45). Just some well-worn gym equipment, a freshly mounted television and a small writing desk to keep me busy. Add in the few books I couldn’t part with and some pictures of the family enjoying our favorite activities, and you’ve got a ten-by-ten foot snapshot of yours truly. Truth be told — usually by my youngest — I have also been known to catch a nap by the pool in my free time. Then again — maybe we are all the same? Cheers to that.

TOP GUN

“I watched Top Gun, and that was it. I came out of the theater, and [Flying fighter jets] was all I wanted to do.” - Col. Gavin Tade, 944th Mission Support Group Commander

GIANT

“Epic story of the battle between wealthy Texas rancher Bick Benedict and upstart Jett Rink who discovers oil on his small piece of land beside Bick’s Reata Ranch, which is based on King Ranch. FAIL UNTIL YOU DON’T BOBBY BONES JUNE 19 His Mantra? Fight. Grind. Repeat. It takes a special kind of person to wear their mistakes on their sleeves. Comedian and host of the national radio show “The Bobby Bones Show,” Bobby Bones is doing just that through his new book, “Fall Until You Don’t.” In it, he shares some of his biggest misses and how he worked to not only fix fails but also make them work for him. While he wasn’t the most welcomed character in Nashville when his show moved there, he is now the youngest ever inductee into the National Radio Hall of Fame. If you’re looking for motivation and tips on turning lemons into lemonade, this is your autobiography for the summer.

GORDON RAMSAY’S 24 HOURS TO HELL AND BACK FOX JUNE 13 Your Favorite Foul-Mouthed Chef is Back

THE INCREDIBLES 2 IN THEATERS JUNE 15 The Ultimate Father’s Day Flick It’s no accident that this film hits theaters on Father’s Day weekend. If Disney Pixar’s Mr. Incredible isn’t an American icon of fatherhood, we don’t know who is. And while the last film featured him and his family destroying massive robotic nemeses, his greatest challenge is yet to come – being a stay-at-home dad. Elastigirl is called out on assignment, leaving her husband to manage the household and their three kids – Violet, Dash and Jack Jack, all of whom have unique super powers of their own. The sequel promises all of the adventure and action of the first film, paired with tongue-in-cheek relatable family moments. Grab the whole family, and reintroduce them to the characters we fell in love with over a decade ago.

18 • JUN 18

If you thought he was intimidating on Fox’s “MasterChef” series, just wait until you see Gordon Ramsay in action on his latest show, “Gordon Ramsay’s 24 Hours to Hell and Back.” It will feature the talented, albeit sometimes abrasive chef visiting run-down restaurants in an effort to fix them up. He starts out undercover, surveying and taking notes of pitfalls. He travels to each place in his 70-foot-long “Hell On Wheels” semi-truck that unfolds into a high-tech mobile kitchen. If anyone has the tools to restore an eatery, it is definitely Ramsay. Watch as he refreshes the menu and gets fellow culinary enthusiasts back on their feet.

HOME BASE Tade has a calculated 1,900 people under his umbrella of leadership. His main squad, however, is here in Southlake and consists of his wife, Angie, and their four kids: Camryn (13), Trevor (11), Dalton (10) and Messina (7). “Camryn is very much a free spirit. Trevor is pretty intense and locked into what he is doing,” Tade says. “Dalton is really into airplanes. Angie calls him little Gavin. He’s somewhere in between the older two. Messina is our wild child. She’s just a mixture of all of them.” And, as most Carroll students are, the Tade children are actively involved in extracurriculars. With kids on three different campuses – Old Union, Eubanks and Dawson – the whole family stays busy. So busy, in fact, that their after-school commute has been dubbed “The Tade 500.”

F

lying fighter jets was all he ever wanted to do in life. And that’s exactly what Col. Gavin Tade did for 14 years. But what do you do when your life’s passion is simply not feasible anymore? Tade’s time as a fighter pilot ended due to back trouble, leaving him with that question. “I had a really good mentor named Keith Knudson,” Tade says. “He told me, ‘Gavin, you’re a born leader. Instead of walking around feeling sorry for yourself because you can’t fly anymore, you need to go lead airmen.’” This advice (and a lot of work) led Tade to become a group commander of the 944th Mission Support Group. He currently oversees two detached groups at Davis– Monthan Air Force Base in Arizona and Seymour Johnson Air Force Base in North Carolina. When he isn’t working for the military, he is flying the Boeing 777 for American Airlines out of DFW Airport.

FORMER FIGHTER PILOT NAVIGATES BEING FATHER OF FOUR

It’s my duty to protect and defend the Constitution... Your duty is to Protect the Tradition! - Col. Gavin Tade

“The events don’t stop until about 8 p.m.,” the father of four explains. “Then you get them home, get them fed, talk about how their day went and get them to bed. Then the next day is lather, rinse, repeat. It’s just around the clock.” That is enough to exhaust anyone. Tack on frequent flights across the globe, jetlag and commanding the 944th, and it’s hard to imagine how Tade stays on his feet. And you can add “football coach” to his many existing titles. “That’s how I spend time with my sons,” he says. “I’ve done that since they were little boys.” When given the chance, Tade gladly gives teachers a break by speaking to their classes. Both of his parents taught for a combined 64 years, so he has a soft spot for educators. When he talks to students, he dresses in a flight suit with a Dragon T-shirt concealed underneath.

22 • JUN 18

SOUTHLAKESTYLE MAGAZINE

“I tell them that it is my duty to protect and defend the Constitution of the United States and then I unzip my flight suit, revealing the T-shirt, and I say, ‘Your duty is to protect the tradition,’” Tade says. “They just cheer and go nuts.”

A SECOND FAMILY When Tade talks about the airmen under his command, it’s not uncommon to hear him talk like they are his own children. When you do the math, his youngest airmen are only five years older than his oldest daughter. “At 46, I’m one of the old guys now,” he chuckles. “I really take my responsibilities as a commander seriously and taking care of my airmen is the most important part of my job.” The mission support group, the 944th, is made up of four squadrons that each serve unique purposes to keep the bases running. In Tade’s words, the Logistics Squadron is like the FedEx of the Air Force, while the Security Forces are similar to a police force. The Civil Engineers build the infrastructure of the base and the Force Support Squadron takes care of all of the paperwork. Bases function like small towns, and Tade has two under his command. “My job is to organize, train and equip combatready airmen,” he says. “That’s what we as commanders do, but 100 percent of the credit goes to

SOUTHLAKESTYLE.COM

the airmen. All we do is provide the vision and direction and desire. The airmen do the heavy lifting.” “Combat-ready” isn’t just a fancy qualifier for the 944th. The group recently finished the largest combat deployment of airmen throughout the world in the unit’s history. When the airmen get back, there is a huge welcome party on base. They open up the hangars, grill and invite families of the returning men and women. Even just talking about the raw emotion of the reunion gives Tade chills. “We have several hundred deployed and what’s so special about these airmen is they write a blank check to the United States government for up to and including the amount of their life,” he says. “It’s a pretty serious deal. They are willing to give their lives to protect and defend the Constitution of the United States.”

SOARING ABOVE SETBACKS While he endlessly praises his airmen, what Tade won’t immediately tell you is the incredible amount of grit and tenacity it took him to get where he is today. While he and Angie are raising four Texan children, they themselves are Iowa transplants. But from looking at childhood pictures of Tade, you would think the Dallas Cowboys jersey-clad kid was raised right here in the Metroplex. JUN 18 • 23

“I’ve been a Cowboys fan since I was born,” he laughs. “In my town, you were either a Cowboys fan or a Steelers fan.” So, sure enough, the Bloomfield, Iowa native is a huge Troy Aikman fan. He even cites the famed quarterback whenever he gives pep talks about preparedness. His childhood fantasy was to play for the Cowboys, but he figured the Air Force was a more realistic goal. Plus, he was given a little extra inspiration from a 1986 blockbuster. “I watched Top Gun and that was it,” he says. “I came out of the theater and that’s all I wanted to do.” As is the case for any dream worth chasing, this aspiration wasn’t going to be fulfilled overnight. In 1992, Tade earned an associate of science degree in aviation pilot training from Indian Hills Community College in Ottumwa, Iowa. Two years later, he completed his bachelor of science degree in aviation technology from the University of Central Missouri in Warrensburg, Missouri. It was there that he served as a flight instructor at only 19 years old. Armed with flight experience and two degrees, Tade applied to work for a regional airline in 1994. He admits that the planes he would have flown there were far from the F-16s he had dreamed of. Even so, he was turned down for the job. “I got turned down to fly puddle jumpers,” he says. “And then the next week I went back up to the Iowa Air National Guard and I interviewed with the F-16 unit. And I was humbled. I had just been turned down the week before.” But he got hired. The F-16 unit took him on and started a chapter of his life that would continue for 14 years. During that time, Tade flew with the 124th Fighter Squadron, Iowa Air National Guard Base in Des Moines, Iowa. Six years into his assignment there, he met his wife. “I was home on a two-day break,” Tade says. “My brother said ‘change your clothes, we’re going out.’ We went to this outdoor festival and that’s where I met my wife.” Fast forward two years to 2002, and the happy couple started their lives as newlyweds. She worked – and still works – as a certified public accountant. Due to the multitude of CPA job opportunities in the Metroplex and the fact that Tade was already flying out of DFW for American Airlines, the couple moved to the Dallas area and have been here ever since. However, the happy story took a turn in 2009, when Tade started experiencing substantial lower back problems. “When you’re pulling nine g’s that’s nine times the gravity of Earth,” he explains. “So if I weighed SOUTHLAKESTYLE.COM

200 pounds, that’s 1800 pounds of pressure every time. And I flew for 1500 hours in the F-16. That’s a lot of g’s.” Despite back surgeries, his time as a fighter pilot came to a close. Tade describes the time from 2009 to 2012 as a “lost era.” His No. 1 aspiration in life was to fly fighter jets, but it was now being ripped away from him. “In 2009 when that dream ended, I was really lost,” Tade says. “I was questioning myself.” Enter his mentor, Col. Keith Knudson. A squadron commander himself, Knudson knew this level of leadership would be perfect for Tade. That is how Tade got connected with the 73rd Aerial Port Squadron. The squadron wasn’t in the best shape when Tade arrived, but he was able to quickly turn things around. As always, he credits this to his airmen. “We got this thing turned around and became the military unit of the year twice,” Tade says. “It was the airmen. All I did was provide the motivation and desire.” Now, as a colonel and group commander, Tade has entered the less than one percent of the Air Force. The way he talks about his airmen, you would think being group commander was his plan all along. “I joined the Air Force to fly fighters,” he says. “I stay in the Air Force because I love the airmen. It’s just taking care of people, leading people, working through issues, watching them have success and watching them defend our nation.” JUN 18 • 25

WALNUT GROVE ELEMENTARY RAISES MONEY FOR MAKE-A-WISH Last month, students at Walnut Grove Elementary raised over $2,400 benefitting Make-A-Wish North Texas. Inspired by a Walnut Grove student who was recently granted a wish through Make-A-Wish North Texas, students worked hard to collect coins throughout the week in efforts to “give a wish back” from the community in which a wish was granted. Each day, students learned about how wishes bring hope, strength, and joy to families of children with critical illnesses. Not only did they raise $2,400 but also they far surpassed their initial goal of $1000. “The best part about this fundraiser,” says Lori Gannon, Walnut Grove parent, “was how there was no incentive. Students brought in money from their heart, not to win an award. The reward for them was knowing that they are contributing to children who have spent more time in a hospital than school. It was a really heartwarming week.”

MID-CITIES SOS TENNIS BENEFIT RAISES FUNDS FOR SAFEHAVEN The 26th annual Mid-Cities Supporters of SafeHaven Tennis Benefit took place May 15 – 17 at the newly renovated Southlake Tennis Center. Local women competed in a round-robin doubles tournament and enjoyed a light breakfast, boxed lunch and gift raffle. The event raised funds for SafeHaven of Tarrant County, and it’s the longest-running fundraiser for the nonprofit. The Mid-Cities SOS was founded in 1985, and has been working tirelessly to bring attention to safety and support services provided by this domestic violence agency. APEX ARTS LEAGUE PRESENTS IN MEMORIAM: A MEMORIAL DAY DEDICATION The volunteer nonprofit arts organization headed over to White’s Chapel United Methodist Church’s Grace Chapel on May 27 for their “In Memoriam: A Memorial Day Dedication” performance featuring The New American Quartet. The group performed works by Barber, Gershwin and Porter to honor those who died defending the country. The concert was one of the organization’s Chamber Series, a sequence of performances to bring more performances to local intimate venues.

CARROLL ROBOTICS TEAM WINS WORLD CHAMPIONSHIP Carroll Robotics teams have been dominant all year, but toward the end of April, three teams represented Southlake on the world stage. Teams 7110A, 7110Y and 7110Z traveled to Louisville, Kentucky, where team 7110Z walked away with the trophy. Over 600 teams attended the VEX Robotics World Championship, and this figure represents the top seven percent of teams in the world. To have one team competing at this tier is a huge accomplishment, and Carroll had three. At the culmination of the event, Team 7110Z was named the World Champion in the Robot Virtual Worlds Online Challenge when Sriram Avirneni achieved the highest score in the world by programming a virtual robot to play the game.

THE LIBRARY RECRUITS SECRET AGENTS THROUGH SOUTHLAKE SPY ACADEMY The Southlake Library is recruiting secret agents this summer to participate in this year’s Southlake Spy Academy, a summer reading program where kids venture out on intelligence gathering missions to pick up the skills to become a master spy. On June 2, kids came out to Bicentennial Park for their first mission. Recruits picked up their Spy Field Guide, which gives kids the missions they need to complete to get a higher spy ranking and create a log of all their reading. The day also brought out the Blackland Prairie Raptor Center who shared knowledge on rescued birds. And after a hard day of spying, guests were able to snack on free hot dogs, chips and treats from Rita’s Italian Ice. Spies were also able to show off their skills in the day’s dance and hula-hoop challenges. KELLER WILLIAMS SOUTHLAKE SERVES THROUGH ‘RED DAY’ Keller Williams Realty associates spent a hot May day in the office parking lot, tirelessly assembling bikes. These bikes were then donated to Spokes 4 Hope, a local nonprofit founded by retired Southlake Police officer Alton Wells. The organization aims to brighten the lives of children going through difficult times. Keller Williams Realty chose the project for the company’s RED Day. Short for “Renew, Energize and Donate,” RED Day was introduced in 2009, to unite Keller Williams Realty offices and associates in an international day of service. Through the annual Keller Williams Realty Golf Tournament, the company had already raised $30,000 to buy 300 bikes.

At Advanced Vein Care, the philosophy isn’t just treatment, but restoration. Whether it’s function, comfort or appearance, Dr. Philip Moore strives to help patients move toward improvement with an emphasis on options. When patients seek to understand the treatment, Dr. Moore reassures them that only abnormal veins are removed because they’re not functioning properly. The veins treated at Advanced Vein Care are technically superficial; the staff preserves and protects the important deeper system. Dr. Moore is a fellow of the American College of Surgeons and he is board certified by the American Board of Surgery and the American Board of Venous and Lymphatic Medicine. His specialties include radio-frequency catheter ablation as an alternative to stripping surgery for treatment of underlying vein reflux. Compared to the LASER fiber technique, radio-frequency has shown to be reliable with less pain and bruising. If you’re struggling with varicose vein and leg vein problems, don’t go it alone; let the trained professionals at Advanced Vein Care provide truly expert care.

SOUTHLAKE DERMATOLOGY Continuing to Expand its Services

S

outhlake Dermatology was founded in 1999 and continues to do what it set out to do almost two decades ago: provide area residents with the highest level of patient service and most advanced dermatology care. The team at Southlake Dermatology treats medical, surgical and cosmetic dermatology needs. Founder Angela Bowers, M.D. is a testament to the quality of care that patients receive at her practice. She is a board certified dermatologist and past president of Dallas Dermatology Society. Becoming board certified alone takes four additional years of school and training. Dr. Bowers is committed to providing the best medicine and most current technology to ensure that patients are treated with excellent care. She gives credit to her intelligent and friendly staff for helping make Southlake Dermatology successful. “The biggest thing that our patients notice is that our staff is smart and caring,” Dr. Bowers says. The practice is taking on another dermatologist this summer and increasing staff. The goal is to improve accessibility and service for their patients. Anyone unfamiliar with the quality of care Southlake Dermatology offers is sure to notice from the moment they walk through the door. “We have a state-of-the-art facility,” Dr. Bowers says. “When you walk in, you just know that you’re in a place where we care about our patients.” The practice offers advanced technology in and out of the office. For example, Southlake Dermatology’s website allows patients to access their patient portal as well as shop online for various skin care products. Patients can submit their paperwork before they even get to the office, increasing efficiency while 34 • JUN 18

Additionally, patients are able to be a part of the rewards program on Southlake Dermatology’s online store. In office, the practice is well equipped to provide medical, surgical and cosmetic procedures, including skin cancer treatment, mole removal, injectable fillers and chemical peels. Providers at Southlake Dermatology also specialize in services such as Fraxel laser, CoolSculpting fat reduction and Blue Light Phototherapy for precancerous lesions. As with any practice, growth is an obvious sign of success. This is especially true for Southlake Dermatology. The practice was originally located in Town Square and even featured furniture in the waiting room from Dr. Bower’s years in medical school. ustang maniacs will recognize the name Carroll Shelby as quickly as the infamous logo sitting above the chrome bumper. Now, car lovers can have a remembrance of the late car designer in their man cave by investing in the Limited Edition 1965 Shelby GT 350 Autographed Pool Table. Directly modeled from the body of an original 1965 GT 350, this bad boy puts game night on a whole new level. With working front and rear lights, polished chrome bumpers, alloy rims and rubber tires, this legendary model can now be your new favorite collectable. Its original Wimbledon White and Guardsman Blue paint scheme gives the table a highperformance racing feel, and its wet sanded finish leaves the piece with a mirror-like finish. And, with the autograph from the late Carroll Shelby, this luxury find is one of only 50 tables like it out there.

Pool and car fans alike will get a kick out of playing a round on this unique table. Its premium three-piece slate tabletop and hardwood frame with cherry-finished rails adds a classic finish to an already classic design. While the playing surface falls in line with traditional pool regulation, the table’s surface is actually two inches taller than regulation height, which shouldn’t be a problem for your friendly games of pool. For all the fun of a table without the 50 grand price point, Frontgate has tables sans signature, but this distinctive billiards table includes free delivery and installation to those in the United States. So their team of professionals will drive this quintessential car over to you. Also, purchasing this lavish item helps give back. A portion of the proceeds of this collectors item goes to the Carroll Shelby Foundation, an organization dedicated to providing medical assistance, educational opportunities and training programs to those in need.

Darling Dumplings CANNON CHINESE KITCHEN CRAFTS A DISTINCT DINING EXPERIENCE

A CANNON CHINESE KITCHEN 304 W. Cannon Street Fort Worth 817.238.3726 CannonChineseKitchen.com

66 • JUN 18

stroll down Magnolia Avenue in Fort Worth’s most eclectic district, Near Southside, lends to exploring a diverse set of exceptional culinary ventures. But off the beaten path lies the quaint Cannon Chinese Kitchen, a true hole-in-thewall dining experience. Created inside a 1930s restored house, Cannon is filled with this sense of warmth with their plush furniture, bold wallpaper and phenomenal Guangdong-inspired dishes that stand apart from other Chinese restaurants. After executive chef Marcus Kopplin, who is also the executive chef at their sister restaurant Shinjuku Station, took on Cannon’s culinary leadership position, he started playing around with new flavors.

“It amazes me sometimes what you can achieve with the products that are used in the Asian culture,” Kopplin says. “It can be so simple, but the flavors that are created are so complex, dynamic and interesting.” Even though Kopplin is now the executive chef at two thriving restaurants in Fort Worth just at 30, he never thought of cooking as a career path. “I just kind of stumbled into it. I started cooking at home just for fun, and I really enjoyed it,” Kopplin explains. “I didn’t know much about it, so I decided to go into culinary school so I could learn all the different techniques and cuisines. Out of all the cultures and cuisines I learned and got introduced to in culinary school, I was really interested in Asian food.”

LOCALFLAVOR review

But these are not your typical heavy Asian-fusion dishes. Their light flavors and new ingredient blends on cultural favorites keep locals coming back and firsttimers venturing across town to try their dishes. Diners can try these flavors thanks to select, bright Chinese ingredients. “We focus on using the freshest ingredients that we can find and use some local farms to source our produce,” executive chef Marcus Kopplin says. So rest assured that their appetizers – like their Smashed Cucumber Salad, a traditional Chinese starter that pairs well with hotter foods – come out fresh. With unique offerings like Mushrooms in Soy Paper sautéed in a truffle broth and Fried Shrimp Balls served with Chinese cabbage, diners will want to grab a few plates for the table. Their more intricate shared plates, like the Sweet & Sour Pork Ribs – St. Louis cut pork ribs in a char siu marinate – are cooked in house from scratch. The result is good home cooking made in a family kitchen that’s meant to be shared…even if you may not want to. “Our owner chose to restore a 1930s house, so that you would feel like you are over at your grandmother’s house about to eat some traditional Cantonese food,” Kopplin says. “We focus on large plates that are intended to be shared with a group of people.” To get a feel for their distinct take on Chinese cuisine, their dumplings are a must. Their Pork & Leek Dumplings in Red Oil, four dumplings made with rice wine vinegar, dried Serrano peppers and rock candy served with sweet and sour red oil, are a staple. But their Beef Dumplings – seasoned with cumin, ginger and cilantro – and their Lamb Dumplings – seasoned with green onions, ginger and fennel – are just as savory. Since Kopplin stepped into his role at Cannon, he’s put his own spin on the menu by slowly adding some new dishes – like their Shrimp Toast, which combines Chinese savory sausage, shrimp mousse, ginger, green onion and garlic and is served up on a slice of Texas toast. To try out some of Kopplin’s new creations, ask about Cannon’s bar bites. These small servings paired with their specialty cocktails are often where the executive chef is trying out ideas he plans on adding to their menu. And one sip of the Lychee Martini, made with a lychee puree, lemon and vodka, will have you relaxing into your chair like you would do in the comfort of your own home. Everything about Cannon is bold – from their mismatched chairs to their colorful plates to their pronounced flavors, making it truly different than anything else in the Metroplex. It’s definitely worth making your way down to Near Southside for a quiet walk and a fantastic meal.

MASON & DIXIE 603 S. Main Street, Suite 303 Grapevine 817.707.2111 MasonAndDixieTx.com

Life’s sweeter when served with succulent sandwiches, delect-able desserts and a mason jar full of tea, all of which can be found at Mason & Dixie. Located on Main Street in Historic Downtown Grapevine, this charming bistro, created by a Southlake single mom and mother of four, is known for their homey interior and delicious casual dishes made from scratch from handpicked ingredients. “We’re not a grab and go restaurant,” owner and chef Beth Newman explains. “We want people to come in and make people happy with our food. I just want everyone to feel like they are eating at my house.” It’s easy to feel comfortable when you walk into the farmhouse décor-inspired space and grab a seat at one of their rustic tables. The room is filled with quaint, old-fashioned accent pieces that have been picked up over the years at local antique markets, which is fitting because their first location was found inside one. But since Mason & Dixie moved into this location last July, Newman has created a unique character that resonates with their diners even before they have a chance to glance at their menu. While the quantity of food the eatery serves each day has grown exponentially since the move, their quality has continued to match the needs of their customers. After several requests and lots of demand, Mason & Dixie launched a breakfast and brunch menu. Newman spent years finding the right recipe for biscuits and creating new spins on her favorite dishes, like her Brown Sugar Pecan Bread Pudding with Butter Bourbon Sauce that will become the Ryse and Shine featuring a whiskey and rye drizzle. Regulars know that their lunch and dinner menus are full of hidden gems. Their Brisket Grilled Cheese, served with chopped brisket, homemade blueberry chipotle, jalapeno-tomatillo or barbecue sauce, is packed with enough cheese to give guests that perfect pull once they break apart their sandwich. “I’m very cheese oriented,” Newman laughs. And their Artichoke and Goat Cheese Panini, made with goat cheese, Havarti cheese, artichoke tapenade, organic spinach and balsamic glaze, is more than enough food for vegetarians. Gluten-free diners can rest assured they can get in on the sandwich action by swapping their typical bread with a gluten-free option. But the real winner comes down to their sweets. On top of their Coconut Crème Cake, Newman serves up a fresh dessert each week. Everything from Strawberry Shortcake with goat cheese biscuits to Creamy Cheesecake with a lavender lemon blackberry sauce is served up in their ornate glass dishware. They go great with one of their tea lattes that are made with in-house syrups with unexpected flavors, like orange blossom and rosewater. Whether you come for breakfast, brunch, lunch or dinner, it’ll feel like you’re coming home for the first time in a long time.

This Vodka Cocktail Screams Voilá! There’s nothing like a little dry ice to amp up your cocktail game. After this vodka martini is placed on the bar, its name just comes to life: Voliá. With a floral accent – that is edible – and a smoking finish, this vibrant drink turns heads as it’s carried from the bar to diners’ tables. Its sugar rim may have you thinking this is a sweeter drink, but the tart fruit juices creates a nice balance. It’s easy to sip on, whether you enjoy it by Trulucks’ beautiful bay windows or grab a seat next to their grand piano to take in some live music.

INSTRUCTIONS: Add sugar to the rim of a martini glass. Add a knuckle-size piece of dry ice to the bottom of the glass after tamping it down with the back of a muddler. You don’t want to break it – you just want to make sure it’s stuck on the bottom. Combine vodka, Chamboard, pineapple juice and lime juice in a shaker, and mix vigorously. Gently pour over the dry ice. Add raspberries and cava into a carafe. Then, gently pour the cava with the berries to fill the martini glass.

he week of his sixth birthday, Weston Clark was diagnosed with Type 1 Diabetes. This diagnosis was preceded by a traumatic episode of being rushed to the hospital because his pancreas was failing. Several nights in the hospital is rough on anyone, but the six-year-old handled it with courage that inspired his parents. “Over the course of several days he really just came to accept it,” says his father, Kyle Clark. “It wasn’t a month or two later he was giving himself shots. He has been extremely responsible and on top of it.” Three years later, Weston’s bravery in the face of adversity became a driving force for Kyle to turn his involvement in the Texas Water Safari into a fundraising opportunity for diabetes research.

‘WORLD’S TOUGHEST CANOE RACE’ Last summer, a fellow Southlake dad, Jeff Ferguson, found himself roped into an event that would bring friends together, challenge their physicality and ultimately raise money for the Junior Diabetes Research Foundation. He and a high school friend from Austin, Tom Hallberg, regularly sign up for events that will keep them fit and keep them in touch. Last year, the friends competed in two Spartan Races – races that involve a series of obstacles and can range from three miles to a marathon. But this year, Tom had something else in mind. “I had never heard of the Texas Water Safari, so he briefly described it me and I agreed. I kind of wish I had looked it up more before I agreed,” Jeff chuckles. Later that summer at the Clark’s Fourth of July party, Jeff told Kyle about the race. Kyle was onboard immediately, and soon the teams grew. Now, six men and two canoes are involved. That includes Jeff and Tom on one boat and Kyle with Haslet resident Brian Smith on the other. The team captains – an essential on-land position – are Southlake dads Glenn Holland and Mike Blumberg. “All of our kids have grown up together,” Jeff says of the teams. “So we’ve all been friends for 10 to 12 years.” Heralded on its website as the “toughest canoe race in the world,” the Texas Water Safari starts at the headwaters of the San Marcos River and ends in Seadrift – roughly 260 miles later. Contestants have 100 hours to finish the course, or they are disqualified. “It’s not a canoe trip with a case of beer and a picnic basket,” Kyle says. “It’s a very difficult trip. No sleep, heat, alligators, rapids.” Yes, you read that right: alligators. However, as the event is held annually on the second Saturday of June, the heat is likely the larger threat. Contestants have

reported hallucinating toward the end due to high temperatures and sleep deprivation, Jeff reports. “It’s a lot. We started thinking, ‘Ok, we’ve probably bit off more than we can chew,’” Jeff says. “When you read all of that, you realize you’re really in for it.” Contestants are required to have all the supplies they need on the boat with them. They may only receive food, water and ice along the way. These items are provided by team captains – in this case, Mike and Glenn – who are tracking them and driving through the Hill Country, ensuring their teammates hit every checkpoint. “We’re going to be relying on these guys to keep us headed in the right direction,” Jeff says. Even so, those in boats are not allowed to have radio devises or cellphones. Instead, team captains are tracking the boats with a GPS device called a Spot Tracker. Teams can even be tracked on computers at home for any family and friends who stay behind. “We won’t have any contact with the outside world until we’re done,” Kyle says. And if they finish in time? Well, the Texas Water Safari officials will give them a patch. But the six men all know: they are racing for far more than a patch.

THE DRIVING FORCE Among a list of team names such as “Ignorance is Blisters” and “Team Beeracuda,” a team of three called “The Finger Prickers,” makes its mark. The team is comprised of Kyle, Brian and Glenn. The name was suggested by Weston, who has to use a device called a lancet up to six times everyday to test his blood. The Clark family appropriately calls the lancet a “finger pricker.” It’s not easy, but Weston says, “I’m used to it.” Weston is now in third grade at Old Union. Despite some intense challenges, he lives a relatively normal life. That was his parents’ goal: to have him live normally with

it and not let diabetes define him. And that’s exactly how Weston goes about his day. He played basketball for a while and has now moved onto drums. His favorite subject is math. He is your typical eight-year-old boy, with the exception that he has to regularly give himself shots, finger pricks and be very careful about what he eats. “I really don’t mind,” Weston says of going to the doctor every three months. “As long as it gets me out of school, I’m ok with it.” For Kyle and those that know Weston, his bravery is inspiring. “It takes a lot of toughness to deal with this disease,” Kyle says. “It’s not fun and he has done such a good job of handling it. Watching him taking it face on was really my motivation to do this race.” And while the canoe team has several things in honor of Weston – his birthday is 6/14 and the canoe is numbered 614 – their biggest effort is to raise money that goes directly to researching diabetes. “Our families are all pretty close,” Jeff says. “We watched them go through the diagnosis with Weston as a family. So, earlier this year, the teams made the decision to turn the race into a fundraising opportunity. “It became more serious,” Jeff says. “It went from getting into to shape to doing it for a good cause. If we’re going to ask people to donate the money they’ve earned, then we’ve got to take this seriously and we’ve got to finish this race.” The team certainly is taking it seriously. They have been heading to the Hill Country about two weekends out of each month to train. The group takes lessons from a guide who has personally been through the race. When they aren’t familiarizing themselves with the San Marcos river, the teams practice paddling on Lake Grapevine. The generous community around them is taking is seriously as well: within the first three days of starting the online campaign, they had raised almost $6,000 for the Junior Diabetes Research Fund. With the goal to raise $15,000 and finish the race, the group still has a long way to go. But they are determined to make it happen. “We’re trying everything we can to make sure we finish the race,” Kyle says. The race starts on June 9, and Kyle is hoping to finish on June 12 – exactly two years from the date that Weston was diagnosed. To donate to the team’s cause, go to jdrf.com and search “Texas Water Safari.”

Hear the Lion Sing! Experience the award-winning musical, Disney’s ‘The Lion King’, this summer

I

t isn’t billed “The World’s No. 1 Musical” for nothing. Disney’s “The Lion King” pulls you from your seat, straight into the heart of the Serengeti. Giraffes, cheetahs, gazelles, birds and, obviously, lions fill the stage, dancing, leaping, soaring and singing to the delight of audiences young and old. The performers’ elaborate costumes and detailed makeup add to the effect — and leave you wondering if you are watching a musical or seeing a beautiful painting come to life. For those who somehow haven’t heard the story, “The Lion King” (based on the 1994 animated film of the same name) starts with King Mufasa and Queen Sarabi presenting their new lion cub, Simba, to be king, leaving Mufasa’s brother, Scar, bitter about losing his spot on the throne. The story follows Simba as he grows up and faces trials before he can become king, with bravery, deception, death and love along the way. Of course, the music by Elton John is what

brings the show together. Audiences can sing along to “Circle of Life,” “I Just Can’t Wait to be King,” “Hakuna Matata,” “Can You Feel the Love Tonight?” and more. The worldwide love of “The Lion King” is shown through the numbers: the show has reached more than 90 million audience members around the world, received 70 major theatre awards internationally, won six Tony Awards (including best musical), has had 25 global productions around the world and is the third longest-running Broadway show! But don’t take our word for it — the only way to truly appreciate “The Lion King” is by seeing it yourself.

A Solo Act in Style See former One Directioner Harry Styles on his solo world tour!

T

ears were shed, angry words were spoken (and tweeted about) and girls everywhere mourned the ending of one of America’s most iconic boy bands. But the break up of One Direction, which happened more than two years ago, proved to be a successful career move for all five singers including Harry Styles. Known for his sexy curly hair and even sexier voice, Styles went from singing catchy pop hits to relatable soft rock ballads. His debut album, “Harry Styles,” set a record for best-selling first week by a British male artist when it sold 230,000 albums and hit number one on the Billboard 200 charts. And singles, “Sign of the Times,” “Two Ghosts,” “Sweet Creature” and “Ever Since New York,” showed the world that this 24-year-old’s voice is just as raw, beautiful and talented as it always was. Before pre-teen girls had posters of Styles and his 1D band mates plastered all over their walls, Styles was just a regular boy from England. He was paired with Zayn Malik, Niall Horan, Louis Tomlinson and Liam Payne on “The X Factor” in 2010 and received a recording contract despite finishing third in the competition. The band went on to release five studio albums (including the last one, “Made in the A.M.,” without Malik, who left in 2015), win many awards and record many hit singles. Fans who miss the group can get a small taste of the former band during Styles’ concert, when he performs some One Direction songs like “What Makes You Beautiful.” If you grew up in the boy band era, his concert will be a treat for your adult self — complete with laidback melodies, an intimate setting, a fantastic performance and a few surprises the 15-year-old inside you will appreciate. For everyone else, treat this show like what it is: a concert by an experienced musician who is serious about what he does and knows what he wants.

Watch the artists create amazing landscape scenes, portraits and more on the street, then admire the finished works all weekend long. Stay cool during the event by stopping by the craft beer pavilion and eating at the restaurants on site. It’s an experience you’ll want to sing and dance about (no judgments here!)

SOUTHLAKE PD’S PUBLIC INFORMATION OFFICER PUTS HIS SILLY SPIN ON THE DEPARTMENT’S SOCIAL MEDIA ACCOUNTS

W

hether you check Facebook for traffic updates or have push notifications for your friends’ latest Instagram photos, social media is an instrumental part of our community’s day to day. And for staying up-to-date on what’s happening around town, following @SouthlakePublicSafety on Facebook is a must. The man behind the page, SPD’s Public Information Officer Brad Uptmore, has already made a splash since taking the reins in January. He’s adding a sense of style to their daily posts by integrating eye-catching media like comical videos and trending memes. He may be most wellknown for asking Crystal Ladawn Finley to, “GURL, CALL ME!” in his digital open letter to the person of interest that brought 9,700 new Facebook followers to the page within 24 hours. But the man behind the screen knows his sassy comments are doing some good for Southlake citizens. I DON’T HAVE THE BEST SUPERHERO ORIGIN STORY … but back in 2006, I was obsessed with Jack Bauer and “24.” I had just moved back from Illinois after an ill-fated romance and a job refinancing subprime mortgages, which left me feeling not so good about myself. I felt like I needed to find a satisfying career in which I could help people and feel good about myself when I looked in the mirror each night. One day during a “24” marathon – delivered by Netflix Mail back in the day, I found a full-page hiring ad for DPD on the table. I figured I was in the best shape of my life, and there was no better time than then to help people and get back in karma’s good graces. I HAD WORKED 10 YEARS AND ONE DAY… at the Dallas Police Department and saw that the Southlake Police Department had opened up a lateral program. My family and I have ties in Westlake, and we did most of our shopping and eating in Southlake, so we knew the area well. We always marveled at how well the city was run and how everyone (police and citizens) just seemed so content and happy. Plus, the drive from my home in Roanoke to Northwest Dallas was killing me (pre-express lanes, thank you), so I put in an application. Over the course of the next few months, I became Southlake’s first lateral hire and have now been here almost two years. I WAS A FILM AND PUBLIC RELATIONS MAJOR AT BAYLOR UNIVERSITY … so I have always enjoyed being creative. I mean, to be fair, I WAS Baylor’s 2003 ‘Actor of the Year,’ and I’m not sad at all to be bragging about something that happened 15 years ago. WORKING AS A COP IN A BIG CITY … like Dallas, I always worried that being a police officer would change me. You don’t exactly deal with the cream of the crop on a daily basis. So when I was younger and more rookie, I made a very wise decision to make sure there was two sides of me: the cop side and the regular creative guy. Since being a police officer, I have also written three novels, been a paid blogger and an abstract video game artist. While at DPD, I also worked in their media department for a bit updating their old training videos, so telling tales about Southlake PD seemed like a natural fit.

SOUTHLAKE POLICE CHIEF BRANDON INVITED ME … in his office one day and made it very clear that he wanted our communication to the public to be more candid. He believes in transparency in the police department, as well as humanizing the badge. I settled on a tone, made the focus on the great work of our officers, and tried to paint a picture of the excellent work they do on a daily basis, being as detailed as possible. I obviously try to look for humorous things that stand out in each case, but humor can sometimes be a tightrope act. WE LIVE IN SUCH A FAST-PACED WORLD … that if you want your message read, it has to have something else other than the message – whether that something else is a graphic, a meme, a video, a quip, a whatever. It has to be something that people will pay attention to. If we want to put out a BOLO (Be On the Lookout) on a thief, I personally don’t want a reader to gloss over the description or the crime because I literally want them to be on the lookout for that person so we can find them and bring them in. BY WRITING THESE BLURBS … with certain hooks and details, we gain more readership. We get more shares. And more people see our bad guys. That only helps our detectives, our officers, our city and our citizens more. WHILE POLICE WORK IS DANGEROUS AND DAUNTING … it is also hilarious. The news, movies and television may seem to portray us in a certain light, but there’s a regular person under this uniform as well who loves, cares, feels and laughs. And I want to make sure our public is aware of that. There is so much that happens in the police and fire world that the public isn’t normally privy to, so with Chief Brandon’s vision and the miracle of social networks, we are able to disperse those situations to the public. WHEN I’M NOT ON THE JOB… I’m a father of two young, Pokémon-crazed boys. So most nights are spent walking around still playing Pokémon GO like a lunatic. I’m also a huge baseball fan and a fierce fantasy baseball contender, so other nights are spent writing and watching the Rangers or the Diamondbacks.
